HOW DID YOU GET INTO THIS LINE OF WORK, AND WHY ARE YOU SO PASSIONATE ABOUT IT?
I grew up in a very academic family and, at age 9 or 10, would volunteer to help throw dinner parties for my parents and their guests. This blossomed into a career. I love the drive for perfection in hospitality and the relationships I try to build with our Hosts (employees) at The St. Regis Bal Harbour Resort. After all, our Hosts are the magic behind our service, and if they feel engaged and appreciated, our guests will feel the same.

WHAT DO YOU STRIVE TO BRING TO THE ST. REGIS BAL HARBOUR RESORT AS GENERAL MANAGER?
As General Manager, my goal is to solidify our position as the premier luxury resort in Miami. We focus on creating memorable experiences that exceed our guests’ expectations by providing the highest level of personalised service that St. Regis is known for. After working in the hospitality industry for over 20 years, I strive to pass along the lessons I have learned throughout my career and to foster a community of individuals who share a genuine passion for hospitality.

Guest service is paramount, and this is where all good hospitality begins. A prime example is our legendary St. Regis Butler service, available 24 hours a day. Additionally, I’ve found that leading by example and embracing change is essential in fostering a dynamic and successful team.

I joined The St. Regis Bal Harbour Resort as General Manager in the fall of 2023, bringing extensive experience from luxury hotels across Marriott International’s portfolio. However, this marked my first time taking the helm of a St. Regis property. I had long admired St. Regis’s singular legacy, commitment to upholding timeless rituals and traditions, and the unparalleled service that has come to define St. Regis. The St. Regis Bal Harbour Resort is an incredible representation of the brand’s resort portfolio.
WHAT IS IT YOU ENJOY MOST ABOUT YOUR ROLE?
I just returned from 2 weeks in Europe, and I missed the energy, the staff, and the general thrill of running such an iconic hotel. I am probably one of the most competitive people you will ever meet, so I always enjoy improving guest satisfaction, ensuring our guests are thoroughly engaged throughout their stay.

Instead, luggage disappeared discreetly to the suite, a glass of chilled champagne swiftly appeared in hand, and warm, sincere greetings from the crew were accompanied by an uncanny familiarity — they knew your name before you’d even introduced yourself. It’s the kind of personalised welcome that leaves a lasting impression. This was our first glimpse into what quickly became abundantly clear about the hospitality aboard Seabourn: everything is done quietly and thoughtfully, with a softness to every interaction, an unspoken assurance that all was taken care of before we even knew to ask.

We arrive at our suite just in time to take in the panorama from our private veranda — a view of Piraeus fading into the distance as Seabourn Encore glides out to sea, her movement so smooth it barely registers beneath my feet. Inside, soft neutral tones and rich navy accents mimic the sea and sky beyond the glass, while deep mahogany finishes lend a sense of warmth and grandeur. Stocked with plush towels, Molton Brown amenities and a curated selection of fragrant soaps, hand-chosen by our Personal Suite Host and gifted upon arrival — it’s the little, personalised things, repeated consistently, that elevate luxury on board Seabourn.
Quickly, habits start to form as life at sea unfolds at its own, unrushed pace. Mornings might begin on a plump armchair at Seabourn Square with a crispy, sweet macaroon and handcrafted cappuccino — the barista already remembers how you like it — made with beans freshly roasted in-house a few hours earlier. Breakfast, with all the trimmings, could be a white-glove affair delivered in your suite or a leisurely spread at The Colonnade, where fresh-sliced fruit, eggs made to order and still-warm pastries fuel you for the day. By night, that same space transforms like a chameleon, serving themed menus spanning Italian favourites to French classics and Asian fusion. For something more elegant, head to The Restaurant, where the ship’s talented culinary team whips up an ever-changing selection of delicious internationally inspired dishes.
Meanwhile, at Earth & Ocean, grilled specialities are served just steps from the pool and sea — the kind of carefree, alfresco dining that pairs perfectly with a golden sunset and the hush of waves lapping against the hull at dusk. For something equally light but a touch more refined, the ship’s Sushi restaurant offers a curated array of raw fish and sushi delicacies, expertly prepared before your eyes at an intimate open counter.
Then there’s Solis — the newest jewel in the ship’s culinary crown. Inspired by the Mediterranean and its glamorous rivieras, this stylish dining room is wrapped in floor-to-ceiling windows that frame the ever-changing sea, while dishes arrive like edible postcards from coastal villages bathed in sun and salt air. Starters include roasted shrimp crostini, tzatziki with crisp fried zucchini and eggplant, and a panzanella salad assembled tableside with sun-ripened Umbrian tomatoes and warm, just-baked bread. For those craving something from the land, Senior Corporate Chef Franck Salein pays homage to his grandmother’s cocotte-baked chicken, scented with tarragon, while a Tuscan-style Snake River Farms Porterhouse proves a popular choice. The confit of lamb, served with boquerones and a bright green herb coulis, finds its perfect match in a bold red, expertly chosen by the ship’s discerning sommelier. For a sweet finale, there’s a tiramisu — assembled with flair at the table — or a speciality affogato named after the iconic women who defined Hollywood’s Golden Age. And to linger a little longer, a nightcap at the Solis Bar is a must, where the mood is elevated by a gifted pianist, Deborah Dyer, playing softly into the night.
After dinner, evening entertainment abounds — but don’t worry, Seabourn avoids the cruise clichés. There are no cavernous theatres or overstated productions. Instead, performances feel tailored and thoughtful. A stunning display of singing and dancing from the Seabourn Six ensues an encore at The Grand Salon, and after, a jazz quartet sets the mood with smooth tunes, inspiring smiles and one last drink at The Club. One evening, a globally known comedian, John Martin, keeps the audience in stitches long after the curtain call; on another, a talented country singer, Laura Evans, has the crowd on their feet, clapping to every beat of her soulful ballads. Elsewhere, the Observation Bar hosts live music by a husband-and-wife duo, Adam and Lee, in a setting that feels like a refined 1930s cocktail lounge — it’s also the setting for a delightful afternoon tea, complemented with sea views as far as the eye can see.
Days are equally full, or free, depending on your mood. Some guests lean into enrichment, attending dance classes or team trivia. Others find serenity in the thermal spa, where eucalyptus steam and masterful masseuses melt tension away. The gym, with its sea-facing windows, draws in early risers; the infinity-style aft pool becomes the perfect perch to watch the horizon dissolve into sea and sky. The pool deck is also a favourite lunch spot — fresh salads, grilled seafood,
cold rosé — all delivered with easy charm by a crew who seem to genuinely enjoy being there. The ship hums with life but never feels crowded. Even at full capacity, there’s always a quiet corner to be found — a sun-dappled chair on the spacious pool deck, a shaded seat at the café, or a plush banquette in The Club, where cocktails are mixed with precision and conversation drifts naturally between strangers who’ve just met.

On Crete, myth and memory intertwine at Knossos, while Aghios Nikolaos offers the perfect coda — a leisurely seaside meal that captures the island’s soul. On the last evening, as Seabourn Encore makes her way back toward Athens, guests gather on the pool deck for a convivial goodbye soirée, complete with Seabourn’s signature caviar service. For Atherton, the act of dining is one of the purest forms of enjoyment, and he believes that creating memorable meals is as much about the flavours on the plate as it is about the feelings they evoke after the dining experience is over. “Delicious food is almost like a drug. If you go to a beautiful restaurant with absolutely delicious food, you’ll sit two or three days later and say, ‘I can’t wait to go back’. You don’t sit there talking about the smoke on your onion. That stays with you for maybe an hour, but the body remembers the good food for much longer.”

So, I act a bit like a chameleon,” he admits. Only then will you feel confident enough to do a good job with any ingredient and menu you’re given.” Building flavour profiles, he explains, is an art that goes beyond culinary theory — it’s a process that evolves from observing other chefs and experimenting with ingredients until flavour combinations are second nature. “Of course, you’ll occasionally have flashes of brilliance, but you need the skill foundation first,” he adds. Dubai has granted him a golden visa, a gesture he views as an honour and a testament to the city’s burgeoning culinary scene. To him, Dubai represents a “safe, blooming economy” that’s constantly evolving, with a focus on quality over quantity, which aligns perfectly with his vision. At his Dubai locations, Atherton creates spaces that reflect the city’s cultural diversity and appetite for innovation, and he’s quick to adapt his menus to the international audience they attract.
“A lot of my international brands represent everything from French bistros to modern British restaurants, and in Dubai, because we get ingredients from all over the world, there is a lot of potential to expand, evolve and incorporate international flavours. We are always trying to make sure the product is good, bringing an international cuisine to an international product,” he explains. His Dubai establishments are particularly notable for their use of Japanese ingredients, an approach he believes adds depth and intrigue to his European-inspired menu. “With our Dubai venues like City Social and 7Tales, we say we have modern European cuisine interrupted by familiar Japanese flavours. We are the leaders in using Japanese products to enhance the flavours of European cuisine; we were certainly one of the first to do that.”
Sustainability is another cornerstone of Atherton’s culinary ethos, though he approaches it with pragmatism.
His belief is that sustainability should enhance, rather than overshadow, the dining experience. “Our chefs always work on the basic human emotion food evokes. The food has to be delicious first; that’s where we always start. And then, from there, we work as hard as humanly possible to make sure we’re sustainable,” he says.
With an eye on the future, Atherton reflects on the next generation of chefs entering the industry. Patience and a deep appreciation of the craft are key to succeeding — he believes that only those who find meaning beyond financial rewards will thrive in this demanding profession. “Life can be very tough if you don’t enjoy the process. Even when things are going right, life is still very tough. If you just do things for the money, you get to a point where money doesn’t equate to anything meaningful.” Instead, he encourages new chefs to take pleasure in their vocation and focus on working with people who share their values. Authenticity is also essential — both in the food you serve and how you present yourself. Success, as he sees it, requires resilience and a thick skin, especially as one’s brand gains visibility. “When things are going right, you get a lot of people jumping on the success. But when things are not going well, you have to dig deep because then you get the haters and criticism. The more successful you become, the easier it will be for people to criticise you. You have to learn to be very careful how you project your voice, and you have to use your voice to project your choices. You have to think about what you’re doing and why, and ask yourself how it enhances your brand and your life in general,” he concludes.

His is a cuisine that speaks in fluent French yet listens to the languages of the world — one that’s firmly grounded in tradition but not bound by it.
Born in Paris into a family where cooking was a central part of daily life, Yannis grew up exposed to two very different but deeply influential cultures. “My father, a French butcher, and my mother, Moroccan, provided me with a unique blend of cultural influences that sparked my culinary passion,” he recalls. “Every weekend, I would work alongside my father, learning the intricacies of traditional French cooking. This hands-on experience deepened my understanding of flavour and technique. My brother, a three-Michelin-star chef, also played a significant role in shaping my love for food. Conversations at home often revolved around cuisine, which fuelled my desire to perfect my craft. My early experiences, combined with my determination to work hard and learn, set me on the path to becoming a chef.”
That path would lead him through the hallowed kitchens of Le Cinq at the Four Seasons George V in Paris, where he trained under Christian Le Squer, and later into
the orbit of Frédéric Anton, whose meticulous approach to technique and presentation made a lasting impression. “Chef Christian Le Squer instilled in me the importance of looking ahead, staying attuned to emerging culinary trends, and striving for excellence in every aspect of my work,” says Sgard. “Frédéric Anton, who feels like family to me, taught me the art of precision and the importance of craftsmanship in the kitchen. His distinctive approach to cooking has deeply shaped my techniques, and I have always held him in the highest esteem for his expertise and guidance.”
Armed with these invaluable lessons, Sgard ventured to Dubai to hone his skills even further. He made his first mark at Al Muntaha, the Michelin-starred restaurant at Burj Al Arab, before taking the reins as Head Chef at Eugène, a modern brasserie that earned a Gault&Millau toque under his leadership. Another key factor in the success of his dishes is teamwork, and Sgard places great pride in the unity of his kitchen brigade. “I work closely with my team to ensure we balance flavours, textures and presentation to create a truly memorable experience. It’s important to ensure that the dish represents both my culinary style and the unique dining experience At.mosphere offers. The process involves collaboration, creativity and constant refinement to bring a dish to life. The message I hope to convey through my restaurant and cuisine is one of passion and collaboration. The living room, featuring made-to-measure black velvet Pamela sofas and a Stuart coffee table from the Lori Morris furniture collection, offers a first taste of the home’s seductive ambience. Two crystal starburst chandeliers hang from the ceiling, bathing the room in a lush golden hue. Above, intricate plaster ceiling mouldings in high-contrast black and white make a bold statement, while the designer’s signature “pillow party” — an eclectic mix of rich-textured throw pillows — adds warmth and playful sophistication. From collaborations with icons like Madonna and Marc Jacobs to new projects in Bali, Jonathan Rachman discusses how staying true to himself and honouring his family’s unselfish spirit informs his ‘currently classic’ approach to interior design.
YOU HAVE AN INCREDIBLE LIFE STORY, FROM GROWING UP IN INDONESIA TO STUDYING IN SWITZERLAND AND THEN MOVING TO SAN FRANCISCO. HOW HAS EACH CHAPTER OF YOUR LIFE SHAPED YOUR DESIGN AESTHETIC?
I always tell people that each city, country, continent and part of the world does not only shape me but I was literally marinated, macerated, simmered, pickled and aged in them. Indonesia is such a rich, complex and beautiful country with so many natural resources, as well as human talent — its culture, craftsmanship, architecture, patterns and colours are the root of my aesthetic, while Switzerland and Western Europe raised me to appreciate the classic architecture and art which became my solid style foundation. At the same time, San Francisco and America taught me to adapt, adjust, branch out and think outside the box. They say it takes a village to raise a child. I say it takes the world to shape my design aesthetics!

WHAT INITIALLY DREW YOU TO INTERIOR DESIGN, GIVEN YOUR BACKGROUND IN HOSPITALITY MANAGEMENT?
I never, ever planned to be an interior designer. After my hospitality management education, I paid my dues in corporate America but was not happy. I did my graduate studies in Fashion Design but was unwilling to be separated from my then-partner (now husband). I decided to open my own humble flower shop. In short, thanks to individuals and companies like Marc Jacobs, Oprah, Sarah Jessica Parker, Matthew Broderick, Madonna, VH1 and the Four Seasons Hotel, they opened doors for me in floral and event design. The United Nations was also crucial in contributing to my design career. Some attendants of the events I designed became my diehard fans and asked me to “decorate” their homes! It took one client, word of mouth, perseverance and being at the right place at the right time; the rest is history! However, I believe there »

WHY DO YOU THINK YOU ARE SO PASSIONATE ABOUT INTERIOR DESIGN?
My parents encouraged me to appreciate all kinds of beauty and be my own person — which was so unusual and forward-thinking in their time and culture. I believe I am passionate about design because I am a self-proclaimed romantic and sentimental person. Interior design allows me to reminisce, create and recreate as well as preserve and reinvent not only objects, décors and spaces but myself — not one day, corner, room, or project is ever the same. I cannot be static, and this allows me to constantly evolve, grow and travel the world, which my parents also encouraged.
When I started to be part of the interior design industry, I honestly had no clear vision, hope or goal. 22 years later, I am convinced that my work is a reflection of not only me as an individual and designer but also of my parent’s legacy. For each project that I am commissioned to do, I always design it for my clients. I want my clients to feel at home. It is not about me but about them. My work elevates and enhances their quality of life, and as such, it is my way of carrying my parents’ legacy: they were always so unselfish and humble, and they continued to spread the love in their own way to everyone they encountered. They were such a great example, and I hope to do the same with my design work.

YOU’RE KNOWN FOR MIXING JAVANESE INFLUENCES WITH WESTERN DESIGN ELEMENTS. HOW DO YOU APPROACH BLENDING THESE DIVERSE STYLES INTO A COHESIVE INTERIOR?
The human race has been known to be nomadic from the beginning of time. This means humans eventually travelled and mingled and mixed their cultures. I was born in a country with over 1,000 languages and ethnicities and have travelled around the world from a very young age. Mixing Javanese, or Indonesian, and Western design elements comes to me so naturally — as naturally as I walk and talk. In principle, I stay true to myself and am very comfortable mixing patterns and colours and various periods from different parts of the world. It goes back to the human factors to me: to respect and listen to my clients and fully understand each project’s nature. I don’t overthink it; I simply do it! We’ve all heard the expression, “People eat with their eyes.” In my design process, I always follow my gut feeling, I design with my gut (of course, I need my eyes), but if my gut tells me this feels great, I go for it.
CAN YOU TELL US ABOUT A PARTICULAR PROJECT WHERE YOUR INDONESIAN
I was once asked by de Gournay, the London-based bespoke wallpaper company, to collaborate with them for a show. At the time, the theme was Animalia. I instantly thought about the Balinese monkeys in Ubud and Bali, which is not only one of our favourite spots on Earth but also pivotal in our family’s life — we have a lot of history and a lifelong infatuation with the island. I am a sentimental person, so I represented my parents as these Balinese monkeys holding hands, as that was what I witnessed all my life since I was a little boy. Until the recent end of my father’s life, my parents affectionately held each other’s hands whenever they walked or were together. I created a scene inspired by my parents as the “Loro Blonyo”, which means the “inseparable couple” in Javanese. Symbolically, a pair of sculptures were given to newlyweds. In my rendition of the inseparable couple for de Gournay’s bespoke hand-painted wallpaper, I dressed my “monkey parents” in Balinese pattern sarongs. « landscape filled with traditional temples, beautiful ladies, flora and fauna, as well as the mythical eternal love of Rama and Shinta from the Indonesian Ramayana version. The show received accolades and a warm reception from various media. The wallpaper was used in some fashion shoots in Europe, and in the end, the Cecil-Gurney family gifted it to my husband and me. Part of it is installed in our bedroom in California, while another part will be installed in our restaurant and home in Bali.
YOU’RE DUE TO OPEN A SHOP AND A RESTAURANT IN BALI SOON. CAN YOU SHARE MORE ABOUT WHAT WE CAN EXPECT FROM THESE NEW VENTURES?
Yet another emotional and sentimental venture. It is called DI SINI DI SANA (HERE and THERE) by Rachman and Sons. I had a clear vision of doing this after my father passed away, leaving my mother brokenhearted. I want to continue the legacy of my parents, the Loro Blonyo, the inseparable couple. Throughout their lives, my parents were so kind, compassionate and generous to everyone they encountered. They put their love for each other, their family, their country and the island of Bali into action, be it by starting a school, adopting a child or simply spreading love in their daily lives. My mother (and sister) are amazing cooks, and growing up, we always had guests, literally daily, be it one person or 300 or more… my parents were the ultimate hosts! I am opening this venture as an homage to them, as well as sharing my blessings as a citizen of the world — having lived in the East and the West all my life.
My husband and I decided to finally live in Bali and pour our hearts into this project to share our life story, along with my parents and family’s story, in the form of a restaurant (DI SINI, HERE) and the store (DI SANA, THERE). It is perfectly me — and us! The restaurant is currently being built based on my memory of my childhood: a Joglo
structure that is a combination of traditional Javanese and Balinese structures. I found an antique centre for the structure from Java: an architectural artefact once owned by the royal family. The interior is a mixture of colonial “Peranakan” style, which evokes the romance of the Indonesian era during my grandma’s and parents’ lifetime, with current elements mixed in. I want guests and visitors to feel they are entering a romantic, warm home to enjoy a meal with my parents and family in an elevated hospitality style I enjoy. It will be elegant, warm and welcoming, without the arrogance of a fine establishment. The food will consist mostly of family recipes as well as traditional Southeast Asian dishes. We will also serve Continental and American cuisine based on my preferences and life experiences.
For DI SANA, the store aesthetics will also tell a story based on the Western part of my life. It will be something you may encounter in Paris, London or New York. Besides home décor, antiques and vintage, I am developing our own personal fragrance, home fragrance and porcelain line. I am collaborating with BIKA Living to create a furniture line, as well as with my fellow expat and designer in New Zealand, Patricia Nurchandra. This collaboration with her will include a fabric and wallpaper line based on my life story, which will be available globally. Besides the bells and whistles, together with our fairy godsons, my nephews Ivan and Alain, we have one more important mission: to improve the quality of life of the local Balinese by using DI SINI DI SANA by Rachman and Sons as a vehicle for change. Our employees, purveyors, neighbours and those who enter our doors — we want to elevate everyone. I also want to showcase our Indonesian craftsmanship and sources, as I believe my home country has been underappreciated for many centuries. I want to change that, one human and one product at a time.

the company’s centennial, Kvalheim has commemorated this special occasion by publishing Splendid Settings: 100 Years of Mottahedeh Design, a book that not only honours the company’s distinct style —characterised by pristine porcelain bodies, delicate and brilliant colours, and complex curvy shapes — but also forecasts its future directions. This is accompanied by a fascinating story detailing the origin of the objects in their respective time periods.
The lavishly illustrated book takes the reader through the history of porcelain development, which began with the Chinese several centuries before porcelain-making formulas were uncovered in Europe. After the discovery of porcelain in China, Korea was the next region to develop it, followed by Japan. It wasn’t until 1708 that Europeans successfully produced what we now call China. We may barely look at the porcelain we use today, as it has become


« commonplace and can be acquired all over the globe, but imagine what was used in its place before this invention: pewter and other metals, animal horns and parts, and terracotta bowls and plates.
Mildred and Rafi Mottahedeh were not only luxury dealers but also avid collectors who aimed to document porcelain’s evolution. They collaborated with a team of well-regarded art historians, David Howard and John Ayers, to publish China for the West, a seminal work that deepened the bond between Mottahedeh and various museums. As is showcased in this wonderfully illustrated book, the process of crafting high-quality porcelain remains the same today as it has been for centuries. Ceramic must be baked at a very high temperature — greater than that required to melt metal — so that the stone clay will transform into a glass-like material. After this, colour is added using metallic oxides fused into the plate’s surface.
Beyond its rich history, porcelain remains an integral part of our daily lives, gracing our tables as both functional vessels for serving food and decorative art pieces in the form of flower pots and figurines. Herein lies its true power — it transforms a basic human necessity like eating into an act of aesthetic and communal engagement. We all need to eat. It is a fact that is essential to our material existence. Humans are essentially different from animals in that we have a rational soul capable of imagining and acquiring non-physical knowledge. Eating can be filling your mouth, or eating can be elevated to something extraordinary and

uplifting. It can be good conversation at the point of the day when family or friends congregate. It can be putting food on the table that reflects a tradition of your family or faith. It can be pleasing someone you love by doing something they like. It can be adorning the table with lovely objects of colour and shape for a visual presentation. It can be imparting knowledge at a time when people are relaxed and receptive.

Beauty is the other reason for collecting, using and appreciating objects. They reflect qualities that give us a window into the mind of the artist or creator. The goal is to make something with a level of perfection that gives the viewer an “aha” moment. These examples of flawless design perpetuate through the ages, continuing to remain as relevant and cherished in the future as they have been through the past centuries. Thus, through its work, Mottahedeh continues to be not just a keeper of history but a creator of heirlooms that will enchant and inspire for generations to come.
