At The Skinny Food Co., we’ve put a lot of care into making this cookbook a resource you can turn to, regardless of the type of air fryer you own or how experienced you are with it. We’ve designed this as your all-in-one guide, with everything you need for healthy, tasty, and satisfying meals at home.

We’ve included loads of Skinny Food Co. favorites throughout the recipes — from our low-calorie sauces and spreads to highprotein pasta and rice and more — helping you keep things delicious and light. Here Are Some Useful Tips

Please refer to your Air Fryer manual for full instructions.

Smaller ingredients usually require a slightly shorter preparation time than larger ingredients.

A larger amount of ingredients only requires a slightly longer preparation time, a smaller amount of ingredients only requires a slightly shorter preparation time.

Shaking smaller ingredients halfway through the preparation time optimizes the end result and can help prevent unevenly fried ingredients.

Add some oil to fresh potatoes for a crispy result. Fry your ingredients in the air fryer within a few minutes after you added the oil.

Do not prepare extremely greasy ingredients such as sausages in the air fryer.

Snacks that can be prepared in an oven can also be prepared in the air fryer.

The optimal amount for preparing crispy fries is 500 grams.

Use pre-made dough to prepare filled snacks quickly and easily. Pre-made dough also requires a shorter preparation time than home-made dough.

Add 3 minutes to the preparation time when you start frying while the air fryer is still cold.

Turn or shake function once during baking.

Place a baking tin or oven dish in the air fryer rack if you want to bake a cake or quiche or if you want to fry fragile ingredients or filled ingredients.

You can also use the air fryer to reheat ingredients. To reheat ingredients, set the temperature to 150°C for up to 10 minutes.

PULLED AUBERGINE & CHICKPEA CURRY

INGREDIENTS

2 aubergines

Cooking oil spray

1 large onion, finely chopped

1 red pepper, diced

1 tbsp medium curry powder

1 tsp ground turmeric

2 tsp ground cumin

1 tsp garlic paste

1 tsp ginger paste

2 tbsp tomato puree, plus 3 tbsp water

1 can chopped tomatoes

300ml vegetable stock

1 can chickpeas, drained and rinsed

DIRECTIONS

STEP 1

Top Tip

Serve this dish with Skinny Rice, naan bread, and a small bunch of fresh coriander leaves.

Spray the aubergines with cooking spray, set the temperature to 180°C and roast for 30 minutes, until the aubergines feel soft. Set aside to cool slightly.

STEP 2

Meanwhile, add onion, pepper and remaining oil to a roasting tray and cook for 5 minutes at 180°C. Sprinkle over the dried spices, stir into the onion mixture and cook for a further minute.

STEP 3

Add the garlic, ginger paste, tomato puree and 3 tbsp water, then return the roasting tray to the air-fryer and cook for a minute. Pour over the canned tomatoes and hot stock and increase the temperature to 200°C for 15 minutes.

STEP 4

Meanwhile, cut the aubergine in half and use a fork to pull out and shred the aubergine. Add the shredded aubergine and chickpeas to the curry and heat for 10 minutes, stirring halfway through.

STEP 5

Serve in bowls with rice, garnished with coriander leaves.

GOAT’S CHEESE & CARAMELISED ONION FLATBREAD PIZZA

MAKES 4 PORTIONS 5 MINUTES AIR-FRY

INGREDIENTS

4 Greek style flatbreads

125g caramelised onion chutney

handful baby spinach, finely chopped

1 medium red onion, peeled, and finely sliced

125g soft goat’s cheese

4 tsp olive oil

Black pepper

DIRECTIONS

STEP 1

Preheat the air-fryer to 200°C.

STEP 2

Top Tip

Time to up your pizza game. This caramelized onion & goat cheese pizza is worthy of red wine and fine dining. For the dipping sauce we recommend Skinny Hot Chilli or Smokey Baconnaise sauce.

Place the flatbreads on a board and divide the caramelised onion chutney evenly, spreading the chutney across the flatbreads in a thin layer; leaving 1cm edge.

STEP 3

Divide the spinach over the flatbreads, followed by the onion. Finally, break up the goat’s cheese into bite sized pieces and place evenly over the flatbreads.

STEP 4

Season with black pepper and finish with a drizzle of oil.

STEP 5

Cook each flatbread for 4-5 minutes, until the cheese is bubbling and the toppings are hot. Continue until all of the pizzas are cooked.

CLEMENTINE & CHILLI HALLOUMI SKEWERS

GREAT PARTY FOOD THAT YOUR GUESTS WILL ENJOY! MAKES 10 SKEWERS 8 MINUTES AIR-FRY

INGREDIENTS

Top Tip

3 tbsp Skinny Orange Marmalade

chilli flakes, to taste

2 tsp vegetable oil

2 x 250g cpacks halloumi

1 clementine, zested and juiced pinch of salt and pepper

2 courgettes cut into small chunks

20-30 cherry tomatoes

Use Skinny Orange Marmalade for marinade. Serve with Sweet Chilli sauce or Sriracha Mayo.

DIRECTIONS

STEP 1

Put clementine, marmalade, chilli flakes, oil, salt and pepper in a bowl, mix together, then set aside.

STEP 2

Cut both of the halloumi blocks down the centre through the natural split, then cut each half into eight cubes (you’ll have about 32 in total). Put the halloumi in the bowl with the clementine marinade, stir to coat, then cover and chill for at least 3 hrs, or overnight.

STEP 3

Coat the courgette chunks and cherry tomatoes with the remaining marinade just before cooking.

STEP 4

Remove the halloumi from the marinade, then thread onto a skewer mixing with courgette and cherry tomatoes. Heat the airfryer to 200C. Cook the skewers in a single layer for 6-8 mins until golden, turning halfway. Serve with your choice of dip.

AUBERGINE SCHNITZEL

MAKES 2 PORTIONS 8 MINUTES AIR-FRY

INGREDIENTS

1 aubergine

1 tbsp dairy-free milk

1 cup Italian style breadcrumbs

1/2 tsp salt flakes

1/4 tsp black ground pepper

1 egg

1/2 cup all-purpose flour

Cooking spray

DIRECTIONS

STEP 1

Preheat the air-fryer to 200°C.

STEP 2

Top Tip

Best served hot with a good dollop of Skinny Garlic and Herb Sauce, vibrant salad and a squeeze of lemon to add the right balance of flavor and freshness.

Whisk together the egg and milk in a shallow dish. Combine the breadcrumbs, salt, and black pepper in a separate dish.

STEP 3

Cut the aubergine into ½-inch-thick slices.

STEP 4

Coat the aubergine slices with flour, then dip in egg, then roll in breadcrumbs. Dip in egg and breadcrumbs again.

STEP 5

Spray each side of the aubergine slices with cooking spray. Place the breaded aubergine into the preheated air-fryer in a single layer.

STEP 6

Cook for 8 minutes, shake and flip halfway through the cooking. Remove when done, then serve.

JACKET POTATO

Top Tip

If you haven’t tried a jacket potato in the air-fryer, this is your sign! It is such a great way to enjoy a classic dinner. It’s very hands-off and leaves you with a perfectly soft inside and a nice crisp skin. Why not try these toppings:

Tuna Mayo, Cheese and Beans, Chili Con Carne, Pulled Pork, Chicken and Bacon, Roasted Veggies and Hummus, Spinach and Feta, Mac and Cheese, Blue Cheese and Mushrooms, Smoked Salmon and Cream Cheese, Avocado and Cottage Cheese Smoky BBQ Sauce

MAKES 4 PORTIONS 45 MINUTES AIR-FRY

INGREDIENTS

4 large baking potatoes

1 pinch of salt for each potato

2 tbsp of olive oil

Topping of your choice

DIRECTIONS

STEP 1

Poke some holes in the potato with a fork or skewer. Rub the olive oil onto the potato and sprinkle over the salt.

STEP 2

Place 2 potatoes in each drawer of the air-fryer at 200°C for 45-55 minutes. The time will depend on the size of the potatoes. Turn over halfway through to ensure an even crisp on the skin

STEP 3

Poke a skewer through the potato to check it is soft throughout before removing it.

STEP 4

Once ready, remove from air-fryer. Cut open and serve with toppings of choice while hot.

CRISPY TOFU

MAKES 2 PORTIONS 18 MINUTES AIR-FRY

INGREDIENTS

220g firm tofu, cut into cubes

2 tbsp soy sauce

2 tsp rice vinegar

2 tsp sesame oil

3 tbsp cornstarch

Cooking spray

Small bunch of fresh basil (optional)

Pinch of sesame seeds (oprional)

DIRECTIONS

STEP 1

Crispy tofu goes brilliantly together with the creamy vegan Skinny Peanut Butter sauce that packs a lot of flavours as well as our authentic Chip Shop Curry sauce! So delicious!

Top Tip

Tofu contains a large amount of water when it comes out of the package. Press out as much water as possible before cooking for a nice and crispy texture.

Toss the tofu, soy sauce, rice vinegar, and sesame oil together in a shallow bowl. Marinate for 10 minutes. Meanwhile preheat air-fryer to 190°C.

STEP 2

Drain the tofu of the marinade, then toss the tofu in cornstarch until evenly coated.

STEP 3

Allow the cornstarch to absorb the marinade still remaining on the tofu until there is no dry cornstarch on the surface of the tofu.

STEP 4

Place the tofu into the preheated air-fryer and spray lightly with cooking spray. Cook for 18 minutes.

STEP 5

Shake the tofu halfway through cooking. Remove when done and serve with fresh chopped basil leaves and a sprinkle of sesame seeds.

BUTTERNUT SQUASH FRITTERS

INGREDIENTS

6 cups butternut squash peeled, seeded and grated

1 small red onion, thinly sliced

2 cloves garlic, minced

1 cup chickpea flour

1 egg, whisked

1 cup flat-leaf Italian parsley, chopped

1 tsp ground cumin

2 tsp salt

1 tsp ground black pepper

Cooking spray

DIRECTIONS

STEP 1

Top Tip

Serve them with a dollop of sour cream or Skinny Garlic and Herb sauce, or Smokey Baconaise, garnished with spring onions or fresh herbs. They go well with a meal like roast chicken, grilled salmon, chicken salad, or just a big portion of fresh salad!

Place the grated squash in a bowl and add egg, onion, flour, salt, cumin, garlic, parsley and black pepper. Mix everything.

STEP 2

Preheat the air-fryer for 5 minutes at 180°C.

STEP 3

Make patties out of the mixture. It is easiest to roll the fritter batter into a ball, then flatten the ball on a cutting board.

STEP 4

Place the patties in the air-fryer basket and spray some oil on top. Use parchment paper or foil in the basket to make cleanup easier.

STEP 5

Air-fry the patties for 10 minutes. Flip and then cook for another 5 minutes or until lightly browned. Serve with a dipping sauce or a dollop of sour cream!

Fish & Shellfish

THAI GREEN FISH CURRY

INGREDIENTS

400g white fish of your choice

Marinade

1 tbsp vegetable oil

3 tbsp Thai green curry paste

1 tbsp Korma paste

Sauce Top Tip

1 large onion, peeled and chopped

1 red pepper, deseeded and thinly sliced

2 garlic cloves, peeled and minced

2 tsp freshly grated ginger

1 tsp turmeric

1 tin (400ml) coconut milk

Handful sugar snaps, halved lengthways

Cooking spray

Small bunch fresh basil, chopped

Small bunch fresh coriander, chopped

DIRECTIONS

STEP 1

Serve this fragrant curry with Skinny Rice or Skinny Noodles, along with lime wedges to squeeze over the curry.

Cut the fish into large chunks then mix the marinade ingredients together in a bowl, add the fish and toss gently until the fish is coated.

STEP 2

Next, place the onion in an air-fryer tray, spray with oil, set the air-fryer temperature to 180°C and cook for 5 minutes until the onion has softened.

STEP 3

Add the garlic, ginger, turmeric, and a drizzle of oil to the air-fryer tray, then cook for another 3 minutes. Remove the dish from the air-fryer and put the onion mixture into a large jug with the coconut milk, basil and coriander. Blitz with a hand blender until smooth.

STEP 4

Place the pepper and sugar snaps in the bottom of the dish, followed by a layer of fish. Then, pour over the sauce and gently stir to combine.. Set the air fryer temperature to 180°C and cook for 20 minutes or until the sauce is piping hot and the fish is cooked.

CRISPY FRIED FISH NUGGETS

MAKES 4 PORTIONS 6 MINUTES AIR-FRY super easy

INGREDIENTS

400g white fish of your choice

1/4 cup all-purpose flour

5 tablespoons all-purpose seasoning

2 eggs, beaten

2 cups panko breadcrumbs

Cooking spray

Tartar sauce for serving

Top Tip

Try one of our sauces instead of tartar sauce. Choose from Original Mayo or Chip Shop Curry!

DIRECTIONS

STEP 1

Cut fish into small chunks.

STEP 2

Mix the flour and all-purpose seasoning in a bowl.

STEP 3

Coat each fish strip in the seasoned flour, dip in the beaten eggs, and roll in breadcrumbs.

STEP 4

Spray the coated fish on both sides with cooking spray, then place into the preheated air-fryer at 180°C for 3 min.

STEP 5

Shake the fish nuggets and cook for an additional 3 minutes.

STEP 6

Serve with tartar sauce or any sauce of your choice, along with your favorite side dish.

TERIYAKI SALMON

INGREDIENTS

1/2 cup soy sauce

1/4 cup sugar

1 tsp grated ginger

1 garlic clove, crushed

1/4 cup orange juice

2 salmon fillets

Cooking spray

Salt to taste

White pepper to taste

DIRECTIONS

STEP 1

Top Tip

Serve with Skinny Rice or Skinny Noodles. Each is only 4 calories!

Combine all teriyaki sauce ingredients in a small saucepan. Bring the sauce to a boil, reduce by half, then let cool.

STEP 2

Preheat the air-fryer to 180°C. Coat the salmon with oil and season with salt and white pepper.

STEP 3

Place the salmon into the preheated air-fryer tray, skin-side down and cook for 8 minutes.

STEP 4

Remove the salmon from the air-fryer when finished. Let rest for 5 minutes, then glaze with teriyaki sauce. Serve over a bed of white rice with a sprinkle of sesame seeds.

FISH TACOS

MAKES 4

PORTIONS 8 MINUTES AIR-FRY

INGREDIENTS

1/2 cup yellow cornmeal

1/2 tsp ground cumin

1/2 tsp chili powder

1/2 tsp garlic powder

1/2 tsp onion powder

1/2 tsp salt

1/4 tsp black pepper

400g any white fish cut into strips

Cooking spray

Corn tortillas

Small bowl of your favourite salad

Lime wedges

Top Tip

Use your favourite Skinny Sauce, we recommend prawn cocktail flavour Sexy Sauce, Garlic & Herb, or Lemon & Garlic.

Salad Suggestions:

Shredded Red Cabbage Herbs such as Parsley or Coriander Iceberg Lettuce

DIRECTIONS

STEP 1

Mix the cornmeal and seasonings together in a shallow dish. Coat the fish strips with the seasoned cornmeal.

STEP 2

Preheat the air-fryer to 180°C. Spray the coated fish liberally with cooking spray, and place into the preheated air-fryer.

STEP 3

Gently shake and flip the fish after 4 minutes, then cook for remaining 4 minutes.

STEP 4

Serve the fish on corn tortillas with your favourite salad, sauce, and a squeeze of lime.

COCONUT KING PRAWNS

MAKES 3 SERVINGS 8 MINUTES AIR-FRY

INGREDIENTS

1/4 cup all-purpose flour

1 tsp salt, divided

1/2 tsp black pepper, divided

1/2 tsp garlic powder, divided

2 large eggs

1 tbsp milk

1/4 cup panko breadcrumbs

1/2 cup unsweetened flaked coconut

250g large shrimp, peeled with tails left on and deveined

Cooking spray

Top Tip

This crowd-favourite finger food always flies off the serving platter, especially when served with a dipping sauce like Skinny Garlic Mayo or Sweet & Sour.

DIRECTIONS

STEP 1

Mix the flour and half of the seasonings and spices in one bowl. Whisk together the eggs and milk in a separate bowl.

STEP 2

Combine the panko breadcrumbs, coconut, and the other half of the seasonings and spices in an additional bowl.

STEP 3

Coat each shrimp in the flour, then dip in the egg, and roll in the breadcrumbs and coconut mixture. Dip in egg and crumbs again. Set aside.

STEP 4

Preheat the air-fryer to 180°C. Arrange the shrimp evenly in the preheated air-fryer and spray with cooking spray.

STEP 5

Cook for 8 minutes and shake the shrimp halfway through cooking. Serve with dipping sauce of your choice.

TUNA PASTA BAKE

Top Tip

You can use any shape of pasta you like! If you have a double air-fryer make this pasta bake using two baking dishes and cooking them one in each of the airfryer baskets at the same time.

DIRECTIONS

STEP 1

MAKES 4 SERVINGS 10 MINUTES AIR-FRY

INGREDIENTS

150g Skinny High Protein Pasta, cooked

1 can of chopped tomatoes or pasta sauce

1 can tuna, drained

50g grated mozzarella cheese pinch of salt and pepper

Start by cooking the pasta following instructions until just al dente, as it will continue to cook in the air-fryer.

STEP 2

Once cooked, drain the pasta using the colander and set to one side. super easy

STEP 3

Tip the tuna and tomatoes or sauce into the pan with the cooked pasta. Season with salt and pepper and mix all together.

STEP 4

Transfer the mixture into a baking tray that fits in the air-fryer drawer or use a silicone tray.. Then top with the grated Mozzarella cheese.

STEP 5

Air-fry at 180°C for around 8-10 minutes until the cheese is melted and turning golden brown on top. Enjoy!

Meat

TEX MEX STEAK

MAKES 4 SERVINGS 10 MINUTES AIR-FRY

INGREDIENTS

500g beef steak

1 finely minced chilli pepper

2 tbsp Skinny South West Sauce

1/2 tsp salt flakes

1/4 tsp black ground pepper

1/4 tsp crushed chilli flakes

Top Tip

Try Skinny Smokey BBQ, South West Sauce, or Tennessee Style BBQ Sauce with this steak.

Serving Suggestions:

DIRECTIONS

STEP 1

In a small bowl, combine the minced chilli pepper, salt, pepper, South West Sauce, and crushed chilli flakes.

STEP 2

Brush the sauce mix over the steak on both sides.

STEP 3

Let the steak stand at room temperature for at least 20 minutes, or refrigerate for up to 12 hours.

STEP 4

Grill the steak in the air-fryer basket for 10 minutes, until the steak registers an internal temperature of at least 60°C.

STEP 5

Cover the steak with foil and leave to rest for 10 minutes, then slice thinly across the grain to serve.

CORIANDER BEEF KOFTAS

Top Tip

Serve it with Skinny Mint Sauce or Garlic Mayo Sauce, a side of fresh salad, and fries. You can also air-fry some sliced bell peppers in the other section of the air-fryer for an additional side!

DIRECTIONS

STEP 1

MAKES 6 PORTIONS 8 MINUTES AIR-FRY

INGREDIENTS

550g minced beef

2 tbsp chopped shallots

2 tbsp chopped coriander

1 tbsp ras-el-hanout spice

1 tsp cumin

Cooking spray

salt and pepper

In a frying pan, brown the shallots using cooking spray.

STEP 2

Combine the minced beef, spices, coriander and cooked shallots. Season with salt and pepper. Shape into 18 even, oval-shaped patties, each approximately 30g.

STEP 3

Place the patties in the air-fryer basket, squashing them down a little, and cook for 7-8 minutes at 180°C. You can stack the patties on top of each other in the basket. Serve when ready.

PARMESAN CHICKEN

INGREDIENTS

1/2 cup Italian-style breadcrumbs

1/2 cup Parmesan cheese, grated

2 chicken breast fillets

1/2 cup all-purpose flour

2 eggs, beaten

2 slices mozzarella cheese

Small bunch of herbs, freshly chopped

Cooking spray

DIRECTIONS

STEP 1

Preheat air-fryer to 180°C.

STEP 2

Top Tip

Try this dish with Skinny Burger Relish, a sweet-tasting tomato-based sauce with flavours of peppers, hints of chili, and onion. Skinny Garlic Ketchup will work really well too!

Mix the breadcrumbs and Parmesan cheese in a bowl. Coat each chicken breast in flour, then dip in beaten eggs, then roll in breadcrumb mixture.

STEP 3

Spray the preheated air-fryer basket with cooking spray, place the chicken breasts inside, and spray the tops as well.

STEP 4

Cook for 10 minutes, then place 1 slice of mozzarella cheese on top of each breast, and cook for an additional 2 minutes.

STEP 5

Remove the chicken when done, then top with sauce and garnish with freshly chopped herbs

GOURMET BURGER

MAKES 6 BURGERS 11 MINUTES AIR-FRY

INGREDIENTS

900g minced beef

Top Tip

1 garlic clove

3 tsp soy sauce

2 beef tomatoes lettuce leaves

2 tbsp olive oil salt and pepper to taste

2 gherkins (optional)

6 hamburger buns coleslaw (optional)

DIRECTIONS

STEP 1

Preheat air-fryer to 180°C.

STEP 2

Use Skinny Keto Gluten-Free Hamburger Buns and choose your favourite sauce to top this gourmet burger! We would recommend Skinny Burger Relish, Hot Chilli Sriracha or Garlic Mayo!

Combine the beef, crushed garlic, soy sauce and olive oil. Season. Use your hands to shape into 6 burgers

STEP 3

Place burgers into air-fryer basket and cook on grill mode for 8 minutes, or depending on how you like your meat cooked.

STEP 4

Remove the burgers from air-fryer and keep them warm. Slide the 6 hamburger buns into the basket, pressing down slightly if needed, and cook for 3 minutes on grill mode.. Then put the burgers together, garnishing with the salad leaves and tomatoes, gherkins, coleslaw, if using, and serve.

MINI SALAMI PIZZAS

This is such an easy recipe and is sure to be a family favourite. This is also a fun way of doing pizza night. The whole family can get involved and everyone can choose their own favourite toppings.

DIRECTIONS

MAKES 8 MINI PIZZAS 5 MINUTES AIR-FRY

INGREDIENTS

1 pack Skinny High Protein Bread Thins

8 tbsp Skinny Garlic Ketchup

Handful of grated mozzarella

24 or more slices of salami

Take the bread thins out of the packaging and lay them with the middle side up.

STEP 2

Spread a tablespoon of garlic ketchup on each bread thin.

STEP 3

Sprinkle the cheese on each mini pizza and add salami topping.

STEP 4

Air fry at 200°C for 5 minutes or until the cheese is melted and bubbling.

STEP 5

Take them out of the air-fryer and enjoy once they have cooled down.

CHICKEN SATAY SKEWERS

INGREDIENTS

500g chicken thigh fillets, cut into 2cm pieces

Cooking spray

Satay Sauce

1/3 cup Skinny Peanut Butter

1/4 cup coconut milk

1 tbsp kecap manis

1 tbsp fresh lime juice

Chopped chilli, to taste (optional)

Marinade

1 ime, rind finely grated

1 garlic clove, grated

1 tsp finely grated fresh ginger

1 tsp brown sugar

1/2 tsp ground turmeric

1 tbsp vegetable oil

1 tsp soy sauce

Use nation’s favourite Skinny Peanut Butter!

MAKES 8 PORTIONS 10 MINUTES AIR-FRY

EXTRA Top Tip

To make your own kecap manis, simply combine 1/2 tablespoon of soy sauce and 1/2 tablespoon of sugar, and mix well.l.

DIRECTIONS

STEP 1

To make the marinade, combine grated lime rind, garlic, fresh ginger, brown sugar, ground turmeric, vegetable oil, and soy sauce in a shallow glass or ceramic baking dish.

STEP 2

Add the 500g chicken thigh fillets, cut into 2cm pieces, to the marinade and turn to coat. Cover and place in the fridge for at least 1 hour or up to 8 hours to marinate.

STEP 3

To make the satay sauce, combine the peanut butter, coconut milk, kecap manis, fresh lime juice and chilli (if using), in a bowl. Add 2 tbsp water and stir until well combined. If you want to drizzle the satay sauce over the chicken, rather than use it as a dipping sauce, add an additional 1 tbsp water and stir until well combined. This will give it a thinner consistency that is easier to drizzle.

STEP 4

Thread the chicken onto eight 20cm presoaked bamboo skewers. Spray an air-fryer basket with oil. Place half the skewers into the preheated air-fryer basket and cook at 180°C for 5 minutes. Turn the skewers and cook for a further 5 minutes or until cooked through. Repeat with remaining skewers. Serve with the satay sauce.

LEMON AND THYME CHICKEN

MAKES 4

PORTIONS 40 MINUTES AIR-FRY

INGREDIENTS

1.3kg whole chicken

1/2 tsp sea salt

1 small bunch of thyme

1 lemon

25g butter

2 cloves garlic, crushed

DIRECTIONS

STEP 1

Preheat air-fryer to 180°C.

STEP 2

Top Tip

Carve the chicken and serve with roast potatoes, seasonal vegetables and your favourite homemade gravy. We also recommend trying Skinny Garlic and Mushroom Sauce with your roast dinner to give the dish an extra umph.

Place the chicken on a tray, pat it dry with kitchen paper, and sprinkle over the salt. Pick the thyme leaves, and roughly chop them. Zest the lemon and cut it in half. Add the lemon zest, thyme leaves, butter, and garlic to a bowl, and mix well until combined.

STEP 3

Push the lemon-thyme butter under the chicken skin, and use your hands to rub it evenly over the flesh. Place the lemon halves in the cavity of the chicken. Roast for 40 minutes.

STEP 4

To check that the chicken is cooked, pierce the thigh with a skewer and the juices should run clear. Transfer to a warm plate and cover with foil to rest for about 20 minutes.

HOMEMADE FRENCH FRIES

Top Tip

Potato obsessed? Us too! French fries are quite possibly the most perfect side dish, they go with absolutely everything and are so satisfying to eat. Add a good dollop of Skinny Ketchup or Mayo and enjoy as a snack, why not!

DIRECTIONS

STEP 1

MAKES 4 PORTIONS 28 MINUTES AIR-FRY

INGREDIENTS

2 large Maris Piper potatoes, peeled and cut into strips

1 litre cold water, for soaking

1 tsp garlic powder

1 tsp paprika

Salt and pepper to taste

1 tsp vegetable oil

Soak the potato strips in the cold water for 15 minutes. Drain the potatoes, rinse with cold water, and pat dry with a paper towel.

STEP 2

Preheat the air-fryer to 190°C.

STEP 3

Add the vegetable oil and spices to the potatoes, tossing until they are coated evenly.

STEP 4

Add the potatoes to the preheated air-fryer. Cook for 28 minutes, shaking fries halfway through cooking.

STEP 5

Remove the basket from the air-fryer when done cooking, and season the fries with salt and pepper. Serve while hot.

SWEET POTATO FRIES

MAKES 2 PORTIONS 20 MINUTES AIR-FRY

INGREDIENTS

1 large sweet potato, peeled and cut into 1⁄2-inch-thick strips

3 tbsp cornstarch

1 tsp salt

1 tsp black pepper

1/2 tsp paprika

1/2 tsp garlic powder

1/2 tsp onion powder

Cooking spray

DIRECTIONS

STEP 1

Preheat the air-fryer to 180°C.

STEP 2

These will be a big hit in your household, perfect lunchtime or dinner side dish, as a snack, or a savoury treat! Try these sweet potato fries with Skinny Honey BBQ sauce or BBQ Ketchup!

Mix the cornstarch and seasonings in a resealable bag until well combined.

STEP 3

Place the sweet potato strips into the resealable bag and shake until all the fries are evenly coated with the cornstarch seasoning mix. Shake off any excess seasoning mix from the fries.

STEP 4

Spray the fries liberally with cooking spray. Toss until no dry cornstarch is visible on the sweet potatoes.

STEP 5

Place fries in the preheated air-fryer, making sure not to overcrowd the inner basket.

STEP 6

Shake fries halfway through cooking. Enjoy with your favourite condiment.

These Salt and Pepper Chips are a delicious twist on a classic takeaway dish. Thick cut chips tossed in an aromatic homemade salt and pepper spice mix. Why not try Skinny Chip Shop Curry Sauce for dipping?

DIRECTIONS

STEP 1

INGREDIENTS

400g oven chips

1 tsp vegetable oil

1/2 white onion sliced

1/2 red bell pepper sliced

1/2 green pepper sliced

2 cloves garlic, minced

1 1/2 tsp Chinese five spice powder

1 tsp sea salt

1/2 tsp black pepper

1 red or green chilli sliced

3 spring onions sliced

In a bowl, place the frozen chips, then add salt, black pepper, Chinese five spice, onion, red and green peppers, and oil. Mix well. Make sure all vegetables are coated in some oil.

STEP 2

Preheat your air-fryer to 200°C and place the chips in the basket. Cook for 15 minutes. Shake half way through.

STEP 3

Add the chopped chilli to the air fryer basket. Continue to cook for 2-3 minutes.

STEP 4

Once ready, take the chips out of the air-fryer, sprinkle some spring onions on top, and voilà, you are in for a treat!

BUFFALO CAULIFLOWER WINGS

MAKES 4 PORTIONS 15 MINUTES AIR-FRY

INGREDIENTS

1 head of cauliflower

1/2 cup chickpea flour

1/4 dairy-free milk

1/4 cup Skinny Sriracha Hot Sauce

1 tsp onion powder

1 tsp garlic powder

1/2 tsp sea salt

Cooking spray

Skinny Ketchup to brush

Skinny Ranch dressing to dip

DIRECTIONS

STEP 1

These vegan cauliflower wings are glutenfree, dairy-free, and egg-free for a healthy yet delicious Super Bowl appetizer, finger food snack, or side dish!

Top Tip

For extra crunch, coat the florets with breadcrumbs before cooking.

Cut the cauliflower into florets and transfer them to a bowl.

Add chickpea flour, dairy-free milk, hot sauce, salt, onion powder, and garlic powder to a medium bowl. Whisk to combine. Pour the batter over the cauliflower florets and toss thoroughly to combine.

Spray the bottom of your air-fryer basket with cooking spray and add the coated cauliflower florets. Spread them evenly in a single layer.

STEP 4

Cook at 180°C for 15 minutes. Transfer the cauliflower florets to a plate, then brush each one with more hot sauce (for added spice) or ketchup.

STEP 5

Serve with your favourite sauce and enjoy!

PESTO, SPINACH & MOZZARELLA PINWHEELS

INGREDIENTS

1 sheet of ready rolled puff pastry

3 tbsp green pesto

handful of fresh spinach, finely chopped

20g grated Parmesan

50g hard mozzarella, grated

1 egg, beaten

DIRECTIONS

STEP 1

Unroll the pastry, then spread the pesto across, leaving approximately a 1cm edge around the pastry.

STEP 2

Place the spinach evenly across the pesto, then top with a sprinkling of Parmesan and mozzarella.

STEP 3

Brush the edge of the pastry with beaten egg, roll up from the side, like a Swiss roll.

STEP 4

Press firmly to seal, then slice into 12 equal-sized pieces and lay flat in the air-fryer drawer lined with parchment paper.

STEP 5

Set the air fryer temperature to 190°C and preheat for 3 minutes.

STEP 6

Brush the pinwheels with beaten egg and cook for 20 minutes, or until golden and well risen.

Skinny Muffin Mix

2 large eggs

25 ml oil 85 ml water

Add muffin mix, 2 large eggs, 25 ml oil, and 85 ml water to a bowl. Mix the ingredients together until well blended.

STEP 3

Spoon the mixture evenly into 9 muffin cases.

STEP 4

Bake in the air-fryer for 12-13 minutes or until a toothpick inserted in the center comes out clean.

SKINNY CHOCOLATE BROWNIES

INGREDIENTS

Skinny Brownie mix

110ml water

1 egg

20ml oil

1/2 cup roasted hazelnuts

DIRECTIONS

STEP 1

The Brownies are only 97 calories per slice. They are a fantastic source of protein and fibre, making them a satisfying snack. Made with 100% natural flavours and free from palm oil, these brownies are a guilt-free indulgence. For an added treat, top with Skinny Hazelnut Praline Syrup, a zero-calorie addition that enhances flavour without any extra guilt.

Preheat the air-fryer to 160°C. Line air-fryer basket with parchment paper.

STEP 2

Add brownie mix, 1 egg, 110 ml water, and 20 ml oil to a bowl. Mix the ingredients together until well blended, then fold in the hazelnuts. Spread evenly on lined air-fryer basket.

STEP 3

Bake for 8-10 minutes or until a toothpick inserted in the centre comes out with moist crumbs attached.

BLACKBERRY & APPLE CRUMBLE

DIRECTIONS

STEP 1

Preheat the air-fryer to 180°C.

INGREDIENTS

150g blackberries

2 Bramley apples, peeled, cored, and sliced

2 tbsp golden caster sugar

Crumble topping

170g plain flour

85g unsalted butter, diced

85g demerara sugar

Skinny Custard or ice cream, for serving

Arrange the blackberries and apples in a pie tin that fits in your air-fryer and sprinkle over the sugar.

STEP 3

Put the flour into a small mixing bowl and rub in the butter with your fingertips until the mixture resembles fine breadcrumbs.

STEP 4

Sprinkle the crumble topping over the fruit, then place the tin in the air-fryer. Bake for 25 minutes, or until the crumble is golden and the fruit is bubbling.

STEP 5

Allow to cool slightly before serving with custard or ice cream.

STICKY TOFFEE PUDDING

Top Tip

This sticky toffee pudding is an absolute classic, one we’d eat every single day if we could. Always serve it with Skinny Sticky Toffee sauce and a scoop of scrumptious vanilla ice cream. Pure heaven!

DIRECTIONS

STEP 1

INGREDIENTS

MAKES 8 PORTIONS 35 MINUTES AIR-FRY

150g pitted dates, chopped

150ml hot water

1 tsp bicarbonate of soda

50g unsalted butter

50g white sugar

50g dark muscovado sugar

1 large egg, beaten

150g self-raising flour

1 tsp ground ginger

Pinch of sea salt

Preheat the air-fryer to 170°C. Grease a small cake tin that fits in the air-fryer, and set aside.

STEP 2

Place dates in hot water with bicarbonate of soda and soak for 10 minutes. Once softened, purée the dates in food processor and set aside.

STEP 3

Meanwhile, cream butter and sugars together until combined. Add the egg and mix until incorporated, then add the flour, ginger, and a pinch of salt. Add the dates and mix until incorporated.

STEP 4

Pour into the tin and smooth out with a spatula. Place onto the air-fryer and bake for 35min.

STEP 5

Check if the pudding is cooked by inserting a wooden toothpick into the center. If the toothpick comes out clean, the cake is ready. If not, bake for an additional 5-10 minutes. If needed, cover with foil so as not to burn the surface. When cooking is complete, carefully remove and set aside. Serve warm with sauce and a scoop of vanilla ice cream.

CHOCOLATE SPREAD SWIRLS

DIRECTIONS

STEP 1

Unroll a sheet of ready-made puff pastry.

STEP 2

MAKES 12 PASTRIES 10 MINUTES AIR-FRY

INGREDIENTS

1 pack ready-made puff pastry

1/2 jar Skinny Chocaholic Spread

Icing sugar

Spread a layer of chocolate spread on top of the pastry.

STEP 3

Roll up the pastry and cut into even slices. Place 6 pastries on a sheet of baking parchment into air-fryer in a single layer.

STEP 4

Air fry at 200°C for 8-10 minutes or until golden. Repeat with the rest of the pastries.

STEP 5

Once ready, take the pastries out of the air-fryer, dust with icing sugar once cooled, and enjoy.
