



Dear Whitetail Club Members,
October is a perfect time to relax before the holiday season begins, from squeezing in the last few weeks of golf and lake activities to taking hikes in the fall colors and watching football. At Whitetail Club, this is also the time our culinary team gets creative in developing curated menus and hosting exciting events. Starting with the (sold out) Progressive Dinner on October 5, to the Gusto d'Italia Wine Dinner at Shore Lodge on October 19, Wine Tasting with L'Etole on October 26, and then the Members Only Cooking Class on November 9. Plus, we welcome back weekly specials at The Cutwater at Payette Lake and fall's new cocktail menu later this month. Take advantage of October's events; the wine and dine season is just getting underway. And if you are hosting at home, our main story offers tips for your next gathering.
After a successful golf season, we close with the Fall Classic on October 12. Sign up with a partner, or we'll pair you up. Whether you participate or not, all are welcome at the Member Mixer at the Golf Grill following the tournament. After the course closes, the Golf Studio is ready for you to take your game indoors. Remember that you can book your slot on the Whitetail Club app or through the online portal. Andrew, Kevin, and Patty will be available for opportunities to continue to hone your swing.
All members received an email in late September about the new Member Guide, which will be available in January 2025. This new format combines the Calendar of Events and Member Directory into one go-to piece. We need your help to ensure we have your most up-to-date information and a clear photo of the people in your membership. Thanks in advance for your help in getting this submitted by October 11.
Earlier this summer, we announced the launch of Legacy Ranch, which caught the attention and interest of current members and new buyers alike. We have already had closings on homesites in Phase 3. The momentum was evident in the community's new builds and sales. Our popular Fairways Townhomes unveiled a more prominent option to the Pencross model, called the Pencross Plus, giving buyers an opportunity for a fourth bedroom. See page 11 for renderings and contact the real estate office for more information.

But we love our homes; with the incredible views and living spaces, indoors and out, our spaces are made for entertaining!
Hosting a gathering can be a joy. Whether it's a game night, weekend brunch, or dinner (pro tip: call the Club Concierge to learn about our catering services). This month, we share a few go-to elements that will always be welcome at your next gathering!
Perfection without cooking, baking, or fussing. A charcuterie board is a work of art with its colorful arrangement of textures and flavors that is a perfect spread for game night, cocktail hour, or to serve as an appetizer before dinner. To create a charcuterie board, you'll want to purchase selections in the categories below and place them atop a beautiful cutting board or favorite serving dish. Guests can then select their favorites to enjoy. Pickles and salami, brie and baguette, apricots and salted almonds, you get the idea. Below is a guideline of popular categories to choose from:
These can be found pre-sliced and packaged, making for easy placement on the board. Selections like prosciutto, salami, chorizo, and soppressata add a savory and salty element.
Say Cheese:
Cheese is a central element of the artful spread. Be sure to include a range of textures, like hard, soft, and spreadable cheeses. Popular choices include sharp cheddar, brie, gouda, blue, and goat cheese.
Crackers and Bread:
Crackers and bread can give a nice crunch to the bite and serve as a ‘foundation’ to pile other delicious bits on top. Include different textures with options like baguette slices, assorted crackers, and even breadsticks add a nice touch.
Add color while adding contrast to the savory flavors with the sweetness of both fresh and dried fruit. Easy-to-pick-up fresh fruits like berries, figs, grapes, and apple slices are excellent options and dried fruits like apricots and dates provide a chewy sweetness.
Go Nuts:
Nuts add richness and crunch that provide a great balance. For the healthiest and best quality, opt for nuts like almonds, cashews, and pistachios that are dry roasted.
Olive Bar:
Any of the items found at the Olive Bar at the grocery store will add tang and saltiness to the spread. We recommend a mix of gherkins, olives, and pickled vegetables.
For the finishing touch, offer spreads and dips in dishes on the side. Think hummus, tapenade, fancy mustard, and honey.
Serve with small dishes and ensure plenty of serving utensils so guests can pick and choose the items from your board. If you have extra, the ingredients can be easily refreshed throughout an event, as there is no right or wrong way to display them. Be artful and have fun arranging.
Party games have come a long what from charades and trivia pursuit. And although the classics still make for a fun time, there are some newcomers on the scene that may be worth trying at your next gathering. We liked this line-up of card and board games from Martha Stewart.
PICTURED DRINK: BOURBON SOUR
Cocktails, mocktails, shaken or stirred, straight-up or with a twist. We have a drink recipe and wine recommendations that will ensure your reputation as ‘Host/Hostess with the Most/Mostest.’
Add all the ingredients, except bitters, to a mixing tin without ice and dry shake for 10 seconds. Add ice to the tin and shake for another 10 seconds.
Bourbon Sour
2 ounces of Eagle Rare Bourbon
1 ounce of lemon juice
¾ ounce of simple syrup
1 egg white
3 dashes of orange bitters
Double strain into a coup or martini glass. Garnish with bitters and an orange twist.
Serving wine? Trying to figure out what to choose? The answer lies in knowing the underlying flavors of the wine you're drinking. Thick and sweet wines go well with pungent and crumbly cheeses, while a bright and acidic wine will pair better with soft and sweet cheese. Becoming familiar with distinguished wines and tasting different varietals is key to being a wine pairing master. Here's a quick guide on our most notable pairings:

Dear Whitetail Members,
Reflecting on the incredible golf season at Whitetail Club, I'm filled with gratitude and excitement. The course has been in pristine condition, our events have been well-attended and enjoyable, and the camaraderie among our members has been truly inspiring.
This year, we've seen strong participation in our tournaments, from the thrilling Ladies Member Guest and Men's Invitational to our inaugural Season Long Match Play. The 9 & Dine events have become a beloved tradition, creating the demand for another one to have been added to the calendar last month. Your enthusiasm and support have made each event a resounding success.
We are already looking toward the 2025 golf season, exploring new tournament formats, and developing innovative programs to cater to golfers of all skill levels. Your feedback has been invaluable in shaping these initiatives, and we'll continue to consider your input as we move forward.
Please note that the course will close for the season on October 13th. We encourage you to make the most of these final weeks of play, including participating in the Fall Classic on October 12th, followed by a member mixer at Golf Grille.

Whitetail Club Members,
As the season ends, we want to thank you all for a fantastic season. This is the busiest I've seen the golf course.
We will shift our focus to winter prep and putting the golf course to bed. Us turf junkies refer to this as the "fun stuff." Here are a few things we will be working on before the snow flies.

Pencross Plus is a limited-edition version of the Pencross model that adds an additional bedroom to the upper level, creating a four-bedroom, three-and-a-half bath offering. Incorporating this fourth bedroom increases the total interior square feet to 3,174. Living alongside Idaho’s preeminent golf course just became a bit grander.
