Gardening enthusiasts recognize that fall is not a time to rest on their laurels. In fact, fall is a great season to spend time in the yard. The Center for Agriculture, Food and the Environment at the University of Massachusetts Amherst indi-
cates fall is the ideal time to improve the soil for next season.
Amending the soil in the fall allows it to react accordingly over time and reap the benefits in spring. UMass suggests getting an accurate soil test to see what is needed in the garden.
Samples should be taken from various areas. Avoid doing so
when the soil is very wet. Athome kits can test for nitrogen, potassium and phosphorous and determine the soil’s pH. Gardeners should till the soil and add compost or manure, which will counteract many nutritional deficiencies. Worm castings also are good to add, particularly for summer veg -
etable gardens. The gardening company Park Seed says that worm castings are high in minerals and effective at holding water — so much so that they even can be used alone in place of potting soil. Crushed egg shells, coffee grounds and banana peels also can be added in the fall, even if they
are not part of a compost pile. The nutrients will break down throughout the fall and winter,
and be available just in time for summer plantings.

How golf got its start
Many people cannot think of a better place to spend an afternoon than out on the links. From prestigious and private country clubs to public courses, more than 15,000 golf courses dot the American landscape, while there are 2,298 golf courses in Canada.
The early days of golf
The modern game of golf is believed to have origins in Scotland, although ball-and-stick games are attributed to other areas as well. For example, in the 13th century, the Dutch played a game with a leather ball being hit to reach a target. According to The Golf Historian, others trace the roots of golf as far back as 100 BCE in Rome and a game called “pagancia.”
Golf was played for some time in Scotland, but in 1457 King James II prohibited the game because he saw it as a distraction from archery practice and other training required for defense of the country. By 1500, golf bans were lifted and even royalty were playing — helping to spread golf’s popularity throughout Europe, according to the history resource Historic UK. In fact, Mary, Queen of Scots was believed to have played the game and brought it to France when she studied there, while King Charles I brought the game to England.
Golf officially became a sport in 1744 when the first club was formed by the Gentlemen Golfers of Leith. Later, the St. Andrews Society of Golfers was formed to compete in its own annual competition, using Leith’s rules. St. Andrews in Scotland is often recognized as the historic hometown of golf.
Golf equipment
The earliest golf clubs were made mostly from apple, beach, holly, and pear wood. The balls were made of wood or hard leather. Other historic documents reference balls stuffed with feathers.
North American golf
While many other parts of the world took to golf very early, the United States was late to the game, with only a smattering of people playing during the 18th century. The oldest permanent golf club in North America was not an American creation; the first club was established in Montreal in 1873. It was not until 1894 that the United States Golf Association was formed, according to the Keiser University College of Golf.
Professional golf recognition
The Professional Golfers’ Association (PGA) was established in 1916 after a meeting of golf professionals and several leading amateur golfers at Taplow Club in New York City. Its purpose was to raise the status of people earning their living from playing the game, according to the PGA. Today, there are more than 8,000 members in 80 countries. PGA professionals learn the latest skills and participate in annual PGA Tour competitions testing their prowess. The top five winningest PGA Tour players are:

1⁄2 cup extra virgin olive oil
1 yellow onion, diced
4 cloves garlic, slivered
1⁄2 cup finely diced jamón serrano
4 cups diced mushrooms
2 tablespoons chopped parsley
1 tablespoon chopped sage
1⁄2 cup Spanish white wine
Heat the oven to 350 F. Open the tenderloins with a full-length cut that goes about 3⁄4 of the way through the meat. Flatten out the tenderloin and season it on both sides with salt and pepper. Set aside.
Heat the olive oil in a skillet, and sauté the onion and garlic on medium heat for 12 minutes. Add the jamón, mushrooms, parsley, and sage; continue cooking for 20 minutes. Add the wine and cook for 5 more minutes. Remove from heat and allow to cool. Spread the mixture over the flattened tenderloin. Roll the tenderloin around the filling and set it on a sheet pan with the seam side down. Roast in the oven for 25 minutes. Remove from the oven and cut into 1-inch slices. Serve 2 slices per plate.

This recipe for “Philly Cheesesteak Dumplings” from “Judy Joo’s Korean Soul Food” (White Lion Publishing) makes for a great addition to any game watch party table. These crispy appetizers meld Korean and American flavors together for a truly unique offering.
Philly Cheesesteak Dumplings
Makes about 45
50 thin square eggless wonton wrappers (around 4 inches in size)
Vegetable oil, for frying
Filling:
5 ounces shiitake mushrooms, stems removed and finely chopped
1 tablespoon roasted sesame oil
1 pound, 2 ounces cooked, shredded beef short ribs
11 ounces cabbage kimchi, drained and finely chopped
31⁄2 ounces spring onions, finely chopped
3 ounces pickled jalapeños, finely chopped
For the filling, first sauté the mushrooms in the sesame oil in a large nonstick frying pan over medium-low heat until just softened. Remove from the heat and set aside. In a large bowl, combine the rest of the filling ingredients with the mushrooms. Mix together using your hands, really breaking up the short rib meat to make a uniform texture. For the dumplings, line a couple of baking sheets with parchment and set aside. Fill a small bowl with water. Unwrap the wonton wrappers and cover lightly with a piece of clingfilm to keep them moist. Lay a wrapper on a clean work surface and put 1 ounce of the meat filling in the center. Dip a forefinger into the water and run it along the edges of the wrapper to moisten the surface. Now bring the open edges to the center, and pinch where the edges meet each other, creating four seams in a cross shape. Set aside and cover with clingfilm or a damp tea towel while you shape the rest. Repeat with the remaining wrappers and filling, making sure the dumplings are not touching on the baking sheets.
To a medium saucepan, add the vegetable oil and heat to 340 F (170 C). Working in batches, place the dumplings on their sides in the pan in a single layer without crowding. Cook for 3 to 4 minutes until golden brown. Transfer the fried dumplings to a wire rack or kitchen paper-lined plate to drain. Repeat with the remaining dumplings. If you don’t plan on cooking them straight away, you can freeze them on the baking sheets, then bag them up and store in the freezer. Top with some of the silgochu and curly spring onion and serve immediately with the sriracha.
