Blueberry pie wins raves every time

Everyone amateur baker needs a go-to pie recipe in his or her repertoire. While apple may get much of the fanfare, blueberries pack that perfect punch of sweet but tart flavor that just bursts in the mouth with every bite.

“Ginger n’ Spice Bubbling Blueberry Pie” is not only the official pie of the U.S. Highbush Blueberry Council, but also a winner of America’s Best Blueberry Pie Contest. This recipe, courtesy of Barbara Estabrook and the U.S. Highbush Blueberry Council, is a sweet way to celebrate National Blueberry Pie Day or enjoy dessert any time of the year.

Ginger n’ Spice Bubbling Blueberry Pie

Serves 8

Crust

21⁄2 cups all-purpose flour

1⁄2 teaspoon salt

10 tablespoons cold unsalted butter, cubed (1⁄4-inch-thick cubes)

1⁄2 cup chilled all-vegetable shortening

31⁄2 tablespoons ice water

1⁄2 tablespoon fresh lemon juice

1 egg white, whisked to foamy (divided use)

Filling

41⁄2 cups fresh blueberries

(room temperature)

1 tablespoon fresh lemon juice

3⁄4 cup granulated sugar

1⁄4 cup instant or quickcooking tapioca, ground

2 tablespoons finely minced crystallized ginger

3⁄4 teaspoon ground cinnamon

1⁄8 scant teaspoon ground allspice

2 tablespoons melted butter

3 tablespoons orange marmalade

1⁄2 tablespoon raw turbinado cane sugar

Crust

1. Combine lemon juice and ice water and set aside.

2. In a medium bowl, whisk flour and salt. Cut in butter and shortening with a pastry blender until coarse meal forms. Sprinkle half the water/lemon mix over flour mixture; toss with a fork. Add remaining half, tossing until dough begins to form a ball.

3. Divide dough in half, flatten it into 1⁄2-inch-thick discs. Wrap each disc in plastic wrap. Chill 30 minutes.

Filling

1. In a large bowl, toss blueberries with lemon juice.

2. In a separate mediumsized bowl, stir sugar, tapioca, ginger, cinnamon, and

allspice together until combined. Gently fold into blueberries until well coated.

3. Melt butter, stir in marmalade, then fold into blueberry mixture. Let set.

Pie Assembly

1. Heat oven to 425 F. Line a baking sheet with parchment paper.

2. On a lightly floured surface, roll one chilled dough disc into a 13-inch circle. Fit dough in a 9-inch pie plate. Trim overhang to 3⁄4-inch of edge. Brush egg white over bottom and sides of dough. Reserve remaining egg white. Set the lined plate in the freezer.

3. Roll second chilled disc on a lightly floured surface into a 13-inch circle, then cut into 1-inch-wide strips with a pastry wheel.

4. Retrieve pie plate and pour in filling, mounding slightly toward center. Weave strips of dough over filling to form a lattice top. Seal, trim and crimp edge. Brush reserved egg white over dough. Sprinkle evenly with sugar.

5. Set pie on lined sheet. Bake 18 minutes at 425 F. Reduce heat to 375 F. Bake 50 minutes or until pie is bubbling. Cool on a wire rack. Top with vanilla ice cream.

Fall begins slightly after the midpoint of September. The arrival of fall may be met with joy that cooler temperatures and vividly colored leaves will soon be the norm. For others, the arrival of fall is met with some trepidation that shorter days will soon pave the way for less sunlight and the inevitable arrival of winter.

Fall begins on Saturday, September 23, 2023, in the Northern Hemisphere on what is known as the autumnal equinox. The National Weather Service reports that the 2023 autumnal equinox will arrive at 2:50 a.m. EDT on September 23. Those who are especially anxious for fall to begin can wake up in the wee hours of the morning and enjoy their first comforting spiced treat of the season. Equinoxes are days during the year when the hours of sunlight and darkness are just about equal, or lasting 12 hours each. At the moment the equinox occurs, the sun will be directly over the Earth’s equator, which contributes to this even distribution of day and nighttime hours. National Geographic describes the equinox as “the event in which a planet’s subsolar point passes through its Equator. It is when solar declination is 0 degrees.” Solar declination refers to the latitude of Earth where the sun is directly overhead at noon. The equinoxes are the only times when both the northern and southern hemispheres experience roughly equal amounts of daytime and nighttime.

After the autumnal equinox, the subsolar point continues to move south as the southern hemisphere tilts toward the sun. Around December 21, the subsolar point hits the Tropic of Capricorn (23.5 degrees S), which marks the winter (December) solstice, or the day with the fewest hours of daylight during the year in the northern hemisphere.

It’s important to note that the equinoxes and solstices are opposite in the hemispheres. The northern hemisphere’s fall equinox occurs on the same day as the southern hemisphere’s vernal (spring) equinox.

The autumnal equinox is a time when hours of daylight and nighttime are equal, something that will not occur again until the arrival of spring.

Chase away chills with a thick, filling stew

Slow cookers can be unsung kitchen heroes any time of the year, but particularly during the colder seasons. That’s because slow cookers take on one-pot meals with ease. A person simply places all the ingredients inside the crock, then returns in 8 hours or so to a completely cooked meal.

Certain recipes, including stews, lend themselves well to the slow-cooking method. While beef is often associated with stew, plenty of proteins can take the place of beef, including pork. This recipe for “Golden Harvest Pork Stew” from “Crock•Pot® 365 YearRound Recipes” (Publications International, Ltd.) by the Crock•Pot Kitchens utilizes pork and combines it with potatoes, carrots and corn for a stew that some may even mistake for a chowder.

Golden Harvest Pork Stew

Makes 4 servings

1 pound boneless pork cutlets,

cut into 1-inch pieces

2 tablespoons all-purpose flour, divided

1 tablespoon vegetable oil

2 medium Yukon gold potatoes, unpeeled and cut into

1-inch cubes

1 large sweet potato, peeled and cut into 1-inch cubes

1 cup chopped carrots

1 ear corn, broken into 4 pieces, or 1⁄2 cup corn

1⁄2 cup chicken broth

1 jalapeño pepper, seeded and finely chopped

1 clove garlic, minced

1 teaspoon salt

1⁄4 teaspoon black pepper

1⁄4 teaspoon dried thyme

Chopped parsley

1. Toss pork pieces with 1 tablespoon flour; set aside. Heat oil in large skillet over medium-high heat until hot. Add pork; cook until browned on all sides. Transfer to Crock•Pot® slow cooker.

2. Add remaining ingredients, except parsley and 1 tablespoon flour. Cover; cook on low 5 to 6 hours.

3. Stir 1⁄4 cup cooking liquid into remaining 1 tablespoon flour in small bowl. Stir flour mixture into stew. Turn Crock•Pot slow cooker to high. Cook 10 minutes or until thickened. Adjust seasonings, if desired. To serve, sprinkle with parsley.
