A handheld favorite fit for a crowd

Slow-cooked foods seem tailor-made when the mercury is low. Stews, soups and casseroles can simmer and gain great flavor through slow-cooking methods. But slow cooker appliances don’t

need to be stored away when spring flowers start to bud. In fact, this method of cooking can bridge the gap between cold weather cuisine and the grilled and chilled fare of summer days to come.

Rely on a slow cooker for potluck dinners or when you have to feed a crowd. “Suzie’s Sloppy Joes” is a reinvented take on the traditional Sloppy Joe, and can feed the soccer team after practice or a busy family that has been on the go all day. This recipe, courtesy of “Crock•Pot® 365 Year-Round Recipes” (Publications International, Ltd.) from the Crock•Pot Kitchens, simmers for several hours and dishes up delectable flavor for an easy comfort meal.

Suzie’s Sloppy Joes

Makes 8 servings

3 pounds 95 percent lean ground beef

1 cup chopped onion

3 cloves garlic, minced

11⁄4cups ketchup

1 cup chopped red bell pepper

1⁄4cup plus 1 tablespoon

Worcestershire sauce

1⁄4cup packed dark brown sugar

3 tablespoons prepared mustard

3tablespoons vinegar

2teaspoons chili powder

Toasted hamburger buns

1. Cook and stir ground beef, onion and garlic in large nonstick skillet over medium-high heat until beef is browned and onion is tender. Drain and discard fat.

2. Combine ketchup, bell pepper, Worcestershire sauce, brown sugar, mustard, vinegar and chili powder in a slow cooker. Stir in beef mixture. Cover; cook on low 6 to 8 hours. To serve, spoon mixture onto hamburger buns. Did you know? Many recipes include Worcestershire sauce to add a tangy bite to the dish known as unami, or the savory fifth flavor. Worcestershire sauce contains vinegars, molasses anchovies, and tamarind extract to give it that specialty flavor. This fermented liquid condiment was created in the city of Worcester in Worcestershire, England during the first half of the 19th century. Creators John Wheeley Lea and William Henry Perrins were chemists, and they would later go on to form the food company Lea & Perrins. Because Worcestershire sauce contains anchovies, it is not suitable for those who have fish allergies.

Tip: To make Sloppy Joes slightly less sloppy, serve on bite-sized slider rolls.

The Buzz about Bees

Warm weather and extra hours of sunlight spark flowering trees and plants to bloom anew. This is the time of year when the air is sweet with the aroma of blossoms and the familiar hum of insects can be heard all around. Not all “bugs” are the same this time of year. While you probably won’t want ants invading your backyard grill fest, the presence of bees nearby can be a good thing — even if those curious yellowand-black critters get a little close for comfort from time to time. That’s because almost 90 percent of wild plants and 75 percent of the leading global crops depend on animal pollination, indicates the World Wildlife Federation. Bees are remarkable creatures in small packages. The following are some bee facts to buzz about, courtesy of the WWF, Save the Bees™, NASA, and the Texas A&M University Honey Bee In-

• There are roughly 20,000 species of bees around the world. Most of them are solitary bees.

• Bees have five eyes. Two of the eyes are large compound eyes with hexagonal facets. The other three are small, simple eyes.

• Honeybees have a move called the “waggle dance.” It is a clever way of communicating to tell them where to go to find the best sources of food.

• Bees can carry up to 122 times their body weight in pollen and nectar.

• Bumblebees leave footprint scents behind. They are able to distinguish between their own scents, the scent of a relative and the scent of a stranger as they look for food. They also can avoid flowers already visited.

• Should a queen bee perish, the hive workers will select a new young larva and feed it a special food called “royal jelly.” The larva will develop into a fertile queen.

• Bees flap their wings 190 to 200 times per second. They can fly up to 15 miles per hour.

• Female bees can sting; males do not. Losing the singer will cause

the bee to die. The honeybee only can sting once because its stinger is barbed. Bumblebees and hornets can sting multiple times because they have smooth stingers.

• It can require nectar from two million flowers to make one pound of honey.

• Many bees are not aggressive. Simply moving away from them can prevent a person from being stung. Generally, bumblebees and honey bees will only sting by

accident or if a nest is being disrupted.

• Wasps are different from bees in that they are mostly known to be predators. They eat other insects and often food that people eat, which is why wasps are more likely to be found around your cookout. Bees tend to be covered in hair, while wasps (which include yellow jackets) are smooth. Bees are remarkable creatures and should be celebrated as the weather warms up.

Exercising to promote healthier bones

Osteoporosis is a condition that affects both men and women, but aging women are notably more susceptible than men. The Mayo Clinic says while bone tissue is constantly being broken down and replaced, osteoporosis occurs when the creation of bone does not keep up with the loss of old bone. This makes bones susceptible to fractures and breaks more readily, particularly in the event of a fall or injury. Good nutrition that includes calcium and vitamin D intake through natural foods and sometimes supplementation may help alleviate osteoporosis risk. But exercise is a key component, too.

Like muscle, bone is living tissue, so it can be strengthened with exercise. Here’s a look at the best bone-building techniques through exercise.

• Weight-bearing exercises: While swimming and cycling can build strong muscles and offer cardiovascular benefits, they don’t do as much for the bones because these activities don’t involve weight-bearing. Weight-bearing exercises force a person to work against gravity, and include walking, jogging, climbing stairs, dancing, and more, says the NIH Osteoporosis and Related Bone Diseases National Resource Center.

• Muscle-strengthening exercises: Harvard Medical School suggests using the body’s own resistance to work against gravity and to build muscle strength. Using weight machines, free weights, resistance bands, and lifting one’s own body weight are some ways to do so.

How to care for perennials

Perennials can add color and vibrancy to any garden. One of the more desirable components of perennials is that they come back year after year, meaning homeowners do not have to invest in a gardenful of new flowers every year. That can add up to considerable savings. Perennials often form the foundation of beautiful gardens. Annuals only grow for one season, produce seeds and then die. However, perennials die back to the ground every autumn and their roots survive the winter. So the plants reemerge in the spring, according to The Farmer’s Almanac. Some perennials are short-lived, meaning they will come back a few consecutive years; others will last for decades. Though planted perennials require less maintenance than annuals, they are not completely maintenancefree. Certain care is needed to help perennials thrive, and that starts with the soil.

In fact, soil is the single most important factor for growing healthy plants. Penn State Extension says most perennials grow ideally in well drained, fertile soil with a pH of 6.0 to 7.0. In addition, organic matter can improve soil texture and water-holding ability. When including perennials in the garden, make sure you wait for the right time to plant them. The ideal time is during the spring or fall. Perennials come as containergrown perennials, which already have been established in the soil. Bare-root perennials are just roots that are often packed in peat moss. In order to plant bare-root perennials, soak the roots in water for several minutes before gently planting in the ground, indicates the how-to resource Tip Bulletin. Perennials should be watered deeply, especially during the first growing season. However, the soil should never be overly dry or wet.

Most perennials do not need to be fertilized heavily. A single application in the spring typically is all that’s needed. Care along the way can include deadheading spent flowers so that plants can use their energy on seed production and reblooming. Perennials should be divided when they grow large, every three to four years when the plants are not in bloom. Perennials produce fewer flowers or may look sickly when the time has passed to divide them. Early spring often is a good time to divide perennials, advises The Farmer’s Almanac.

A thick layer of mulch can help perennials to overwinter successfully. Perennials planted in containers will need to be transplanted into the garden before it gets cold because most containers cannot thoroughly insulate perennial roots. Apart from these strategies, perennials pretty much take care of themselves. As long as sunlight requirements match plant needs, the perennials should thrive.

Gluten-free bagels for breakfast or anytime

A warm bagel for breakfast or brunch can be a real treat. Bagels can be slathered in butter or cream cheese, or topped with lox. Some people even enjoy bagels as the “bread” in breakfast sandwiches or as hearty sandwiches filled with cold cuts later in the day. Individuals who have to avoid gluten may miss the delicious, authentic taste of bagels.

When cravings crop up, these “Everything Bagels” from “Danielle Walker’s Eat What You Love” (Ten Speed Press) are the ideal substitute.

Everything Bagels

Makes 6

1⁄2 cup full-fat coconut milk

2 tablespoons finely ground golden flaxseeds

1 tablespoon light-colored raw honey

11⁄2 tablespoons gluten-free active dry yeast

4 eggs

1⁄4 cup melted ghee or virgin coconut oil

1 teaspoon apple cider vinegar

11⁄2 cups arrowroot powder

1⁄3 cup coconut flour

11⁄2 teaspoons grain-free baking powder

1 teaspoon fine sea salt

Everything seasoning

1 teaspoon dried minced garlic

1 teaspoon dried minced onion

1⁄2 teaspoon white sesame seeds

1⁄2 teaspoon black sesame seeds

1⁄2 teaspoon coarse sea salt

Pour the coconut milk into a small saucepan and heat it over low heat to 110 F. Place the warmed coconut milk, the flaxseeds, honey, and yeast in the bowl of a stand mixer fitted with the beater attachment and mix on low speed to combine. Let the mixture sit for 4 to 5 minutes, until it begins to foam.

Add the eggs, ghee, and vinegar to the bowl and mix on medium speed to combine.

Add the arrowroot, coconut flour, baking powder, and salt and mix again until fully incorporated. Cover the bowl with a kitchen towel and let it sit for 1 hour at room temperature.

To make the everything seasoning, combine all of the ingredients in a small bowl and stir to combine.

Preheat the oven to 350 F.

Scoop the batter into a 31⁄2inch silicone doughnut pan, filling each cavity two-thirds full. Sprinkle the tops with the seasoning and bake for 20 to 25 minutes, until the bagels are golden brown and a toothpick inserted into the center comes out clean. Cool the bagels in the pan on a wire rack for 20 minutes, then remove them from the pan and cool completely on the rack.

Store in an airtight container in the refrigerator for 1 week, or in the freezer for 6 months.
