Authentic Greek Salad

Serves 4 to 6

4 medium tomatoes, cut into 1⁄2inch chunks

1seedless English cucumber, cut into 1⁄2-inch chunks

1small red onion, diced

1⁄3 cup Zorba the Greek Dressing (see below)

4ounces feta cheese, crumbled (about 1 cup)

1⁄2 cup black olives (kalamata or other brine-cured ones are best) Salt and black pepper, to taste

In a large bowl, toss together the tomatoes, cucumber and onion. Add the dressing and toss to mix. Sprinkle in the feta cheese and olives, and toss gently.

Taste the salad, adjust the seasoning with additional salt and pepper if you think it needs it and serve immediately.

Zorba the Greek Dressing

1⁄2cup olive oil

3tablespoons lemon juice

1teaspoon crumbled dried oregano 1⁄2teaspoon salt

1⁄4teaspoon black pepper

In a small bowl, whisk together all the ingredients until combined. Makes 3⁄4 cup dressing — enough for a couple of bowls of Greek salad. You can keep any leftover dressing in the fridge for about a week.

Many variables contribute to a thriving garden, and perhaps none is more important than bees. North America is home to thousands of species of beers, but many of those species are experiencing dwindling populations. According to Scott McArt, an assistant professor of pollinator health in the Department of Entomology at Cornell University, 53 bee species have experienced population declines or range contractions over the last several decades. Individuals accustomed to seeing bees as unwanted guests may wonder why that’s a problem. Though declining bee populations pose a number of problems, perhaps none is more relatable than the link between bees and food production. A recent study published in the journal Proceedings of the Royal Society B: Biological Sciences noted that declines in both managed and wild bee populations raise significant concerns about long-term food security. Authors of the study noted that crop production would be higher if crop flowers received more pollination. That’s a significant benefit as the global population continues to increase, but it’s also a notable benefit in the present-day from both a food security and economic perspective. In fact, the U.S. Food and Drug Administration reports that commercial production of more than 90 crops relies on roughly 3,600 bee species. Declining bee populations could put that production in serious jeopardy and create a domino effect that impacts food security and individuals’ livelihoods.

But all is not lost in the fight to restore bee populations. In fact, McArt indicated in a 2019 report that bee populations are thriving in agricultural and natural areas. But bee populations also must thrive in suburban and urban areas. Planting a pollinator-friendly garden is one step McArt suggested gardening hobbyists can take to help restore bee populations. When planting to combat declining bee populations, homeowners should always look for native plants, as they are well-adapted to local climates and unlikely to upset local ecosystems. What do pets see in color?

The popular notion that pets see in black and white, notably dogs, is false. People once thought that their furry companions couldn’t see the color spectrum. However, the American Kennel Club reports that new research and conclusions about canine anatomy point to dogs having color vision, after all — it’s just a bit more muted than their human friends.

According to Dr. Jerry Klein, AKC’s chief veterinary officer, dogs have more rods than cones in their eyes, which improves low-light vision. Cones are responsible for controlling color perception. Due to these anatomical differences, it is believed dogs’s vision mimics that of a person with red/green color blindness. Color is perceptible for dogs, but not in the spectrum enjoyed by humans with healthy vision.

Cats also can see in color, but similarly not with the same level of detail as people. Furthermore, their vision is much more attuned to upclose sight than to focusing on objects that are far away.

According to Birdfact, an online resource about birds, birds have arguably the best eyesight and ability to detect color of any member of the animal kingdom. Birds can see more color than humans because they have a fourth type of light-receiving cone in their retinas (humans have three). Therefore, a pet bird will be in tune with vibrantly colored items in and around his environment.
