Mediterranean flavors shine through in salad

People often turn to lighter fare when the weather warms because a dense, hot meal can contribute to feeling sluggish or overheated when the mercury has risen. In addition to sandwiches and platters of finger foods, salads can be refreshing on warm days. They also tend to be less calorie-dense and healthier than other offerings.

This recipe for “Mediterranean Salad,” courtesy of The American

Heart Association, is full of vegetables and beans and fits with a heartfriendly diet. It’s filling and delicious any time of the day or year.

Mediterranean Salad

Serves 4

1 medium head lettuce (green leaf, red leaf or romaine), cut into thin strips

1 medium cucumber, chopped

1⁄2 cup tomatoes, chopped

1 15.5-ounce can no-salt-added chickpeas, rinsed and drained

1⁄2 medium red onion, finely sliced

1⁄2 cup crumbled fat-free or low-

fat feta cheese, or 1⁄2 cup shredded

Parmesan cheese

2 tablespoons red wine vinegar or 2 tablespoons cider vinegar

1⁄2 teaspoon garlic powder

1⁄2 teaspoon pepper

In a large bowl, gently toss the lettuce, cucumber, tomatoes, chickpeas, onion, and feta.

In a small bowl, whisk together the oil, vinegar, garlic powder, and pepper.

Pour the dressing over the salad, tossing to combine.

Mississippi Mud Baby Cakes

Yield: 24

Cooking spray

113.7-ounce package fat-free brownie mix

16-ounce carton French vanilla low-fat yogurt

3tablespoons finely chopped pecans

3⁄4cup miniature marshmallows

24chocolate kiss candies

Preheat oven to 350 F. Place 24 paper miniature muffin cup liners in miniature muffin cups; coat with cooking spray. Prepare brownie mix according to the package directions, using French vanilla yogurt. Spoon batter evenly into prepared

muffin cups. Sprinkle evenly with pecans. Bake at 350 F for 19 minutes.

Remove cakes from oven. Place 3 marshmallows on top of each baby cake; place 1 chocolate kiss in center of marshmallows.

Bake an additional 1 minute. Gently swirl melted chocolate kiss to “frost” each cake and hold marshmallows in place. Cool in pans on wire racks 10 minutes; remove from pans. Cool completely on wire racks.

Spaghetti with Shrimp, Feta and Dill

Serves 4

12 ounces spaghetti (3⁄4 box) 1⁄4cup plus 1 tablespoon olive oil

1pound peeled and deveined large shrimp

Kosher salt and black pepper

2 tablespoons fresh lemon juice

1 teaspoon grated lemon zest

3 ounces feta, crumbled (3⁄4 cup)

2 tablespoons coarsely chopped fresh dill

Cook the pasta according to the package directions, drain and return it to the pot.

Meanwhile, heat 1 tablespoon of the oil in a large skillet over medium-high heat. Season the shrimp with 1⁄2 teaspoon salt and 1⁄4 teaspoon pepper and cook, tossing occasionally, until opaque throughout, 3 to 4 minutes. Stir in the lemon juice and zest.

Add the shrimp mixture to the pasta, along with the feta, dill, the remaining 1⁄4 cup of oil, and 1⁄4 teaspoon each salt and pepper. Toss to combine.

ENJOY A TASTY, EGG-BASED HOT BREAKFAST

Breakfast is often described as the most important meal of the day. After a period of sleep when nothing is consumed, breakfast does just what its name implies: breaks the fast. While many people are content to grab something fast from the pantry each morning, every now and again a hot breakfast can really hit the spot. Whether feeding a family or a crowd, this “Egg in a Hole Bagel” recipe can be prepared quickly and assembled on one baking sheet. Try this eggceptional meal, courtesy of The Incredible Egg and the Egg Nutrition Center. It can be enjoyed for breakfast, brunch — or at any time of day.

Egg in a Hole Bagel

8 servings

4 whole wheat bagels, halved 8 large eggs

4 tablespoons mayonnaise

1 cup baby spinach, thinly sliced, divided

Kosher salt and black pepper, to taste

1 tablespoon capers, rinsed

1⁄2 cup jarred roasted red peppers, finely chopped Chopped parsley (optional garnish)

Lemon zest (optional garnish)

Lemon juice (optional garnish)

1. Preheat oven to 375 F and line a large baking sheet with parchment paper.

2. Use a 2- or 21⁄2-inch round cookie or biscuit cutter to create a larger hole (it should be just big enough for an egg to fit). Spread mayonnaise over cut sides of bagel halves and press firmly, mayo side down, onto the baking sheet.

3. Stuff a little spinach in the bottom of each hole (this will help hold the egg in) then crack an egg into each center. Season with salt and pepper then top each egg with remaining spinach, capers and roasted red peppers. Bake until egg whites are set and yolk is cooked to preferred doneness, about 12 to 15 minutes.

4. For optional garnish: Toss parsley with lemon zest and lemon juice in a small bowl. Use as a garnish just before serving. Note: Save bagel cutouts and toast to enjoy alongside bagels.

Seasoned Spinach

Serves

1 pound mature spinach with stem and roots

Sea salt

Dressing

2 tablespoons roasted sesame oil

1 tablespoon soy sauce

1 teaspoon spring onion, finely chopped

1 teaspoon roasted sesame seeds, crushed

1 teaspoon sagwa-shikcho (Korean apple vinegar)

1 teaspoon brown sugar

1 garlic clove, grated or finely chopped

Black pepper, freshly ground

Fill a large saucepan with water, salt well and bring to a boil.

In a large bowl, prepare an ice bath.

Rinse the spinach with cold water to remove any dirt, especially around the roots. Remove any hairs from the roots.

Cut the spinach into 13⁄4-inchlong pieces, keeping the purple roots intact. Split the roots in half horizontally and keep separately.

In a medium bowl, combine the dressing ingredients and stir until the sugar has dissolved. Set aside.

Blanch the spinach in two separate batches. In the boiling salt water, blanch the spinach stems with leaves until just wilted, about 1 minute, remove the spinach from the water and plunge in the ice bath. Repeat with the spinach stems with roots, but cook for 1 to 2 minutes before plunging into the ice bath. Remove from the ice bath, drain well and gently squeeze out any excess water. Gently loosen the clumps of spinach with your fingers and transfer to a bowl. Toss well with the dressing. Cover and chill for about an hour to allow the flavors to mellow before serving.

Once a novelty in select stores, rotisserie chicken is now ubiquitous in supermarkets and other food centers. People are drawn to rotisserie chickens by flavor and convenience. Hot and ready to serve, rotisserie chicken makes for a quick and easy meal when time is of the essence and people don’t want to spend on dining out at a nearby restaurant.

Rotisserie chicken can be served right out of the container just like a traditional roasted chicken. It also can be a component in many different meals. Consider these 10 ideas for putting rotisserie chicken to use.

1. After most of the meat from the chicken is eaten, boil the carcass with sliced onion, parsnips, carrots, turnips, and your preferred herbs to make a soup stock. Add bits of leftover

2. Purchase premade pie crust and use it to line small ramekins. Mix chopped rotisserie chicken with a can of cream of chicken soup and thawed frozen mixed vegetables.
