Ganache, an indulgent chocolate creation, may seem like it requires a master class in chocolate making to create. However, ganache is simpler to create than chocolate lovers may think.

According to the chocolate experts at Coeur de Xocolat, there are various origin stories for ganache. In one such story, French chef Georges Auguste Escoffier, who would become the cre-

ator of chocolate truffles, had his apprentice making pastry cream. That apprentice accidentally spilled hot cream into a bowl of expensive chopped chocolate. Escoffier yelled “ganache,” a derogatory term meaning “fool,” at the apprentice. But when Escoffier grabbed the bowl and began to stir it, he noticed an emulsion started to form and the cream and chocolate created a silky sauce that could be used for coating or glazing. When the mixture cooled and hardened, it had a paste-like texture that could form balls. Escoffier coated the balls in cocoa powder and noticed they resembled mushroom truffles. Hence, chocolate truffles were born, as was delicious ganache.

Ganache is relatively easy to make. Enjoy this version, courtesy of Martha Stewart kitchens.

Ganache Makes 1 1⁄2 cups 8 ounces semisweet or bitters cup heavy cream 1⁄8 teaspoon coarse salt Coarsely chop the chocolate and place in a heat-proof bowl.

Bring cream just to a boil over medium-high heat. Pour over the chocolate, and add salt. Let stand for 10 minutes (don’t stir — doing so will cool the ganache too quickly, making it grainy). Stir with a whisk until smooth

and shiny to break up any pieces and emulsify the cream and chocolate. Chocolate will often settle on the bottom or sides of the bowl. Scrape the dish with a rubber spatula to incorporate all of it.

To make a whipped filling or

frosting with the ganache, let it cool to room temperature, stirring often, 45 minutes to 1 hour. Beat the ganache with a mixer on medium-high speed until paler and fluffy, 2 to 4 minutes. This will yield about 2 cups. Use it as a filling or spread it over cakes.

2. Garlic can have a positive effect on blood pressure. According to the Cleveland Clinic, researchers believe that red blood cells turn the sulfur in garlic into hydrogen sulfide gas that expands the blood vessels. 3. Garlic can benefit the skin. Allicin is a compound that is produced when garlic is crushed or chopped. According to the online health and wellness resource MedLife, allicin benefits the body in various ways, including killing the bacteria that causes acne.

4. Garlic may help reduce lead levels in the body. A 2012 study published in the journal Basic & Clinical Pharmacology & Toxicology studied the potentially therapeutic effects of garlic on 117 workers in the car battery industry. The clinical signs and symptoms of lead poisoning were significantly higher among workers who were not treated with garlic compared to those who were. Authors of the study concluded that garlic can be recommended for the treatment of mild-tomoderate lead poisoning.

Sweet Sunday Rolls

Serves 4

1⁄2 cup desiccated (shredded) coconut

1⁄2 cup lightly packed soft light brown sugar

1 teaspoon ground cinnamon

101⁄2 ounces all-purpose or whole-wheat flour, plus extra for dusting your work surface

2 teaspoons baking soda

1 teaspoon cream of tartar

23⁄4 ounces coconut oil, plus a little extra for greasing the dish

5 ounces plant milk

2⁄3 cup raisins

2 tablespoons extra virgin olive oil

3 ounces maple or barley malt syrup

Preheat the oven to 425 F, and grease an 111⁄4 inch round baking dish or similar ovenproof dish with a gener-

ous coating of coconut oil. Sprinkle the shredded coconut over the greased dish, jostling it a little to distribute evenly.

Combine the sugar and cinnamon in a small bowl. Sprinkle half of the cinnamon sugar over the coconut-coated baking dish.

In a separate bowl, mix the flour, baking soda and cream of tartar. Add the coconut oil and use a table knife to “cut” it into the dry ingredients until the mixture resembles fine breadcrumbs. Add the plant milk and stir well, then knead to a firm dough using your hands.

Lightly flour a work surface. Turn out the dough and shape it into a rough rectangle. Use a rolling pin (or simply press with your hands) to flatten

it into a bigger rectangle of about 8 by 12 inches, with a thickness of about 5⁄8 inch. With the long edge closest to you, spread the raisins over the dough, leaving a gap of about 11⁄4 inches all around the edges. Lightly press the raisins into the dough. Sprinkle the remaining cinnamon sugar over the raisins, and drizzle with the olive oil and half of the syrup.

Roll the dough into a log from the long edge, working away from you. Press firmly as you roll to ensure the filling is properly embedded. Check that the ends and the long edge are closed — if necessary, dampen those edges and press together to seal.

Using a serrated bread knife, cut the roll into slices about 11⁄4 inches thick. Lay the

slices flat in the prepared baking dish, leaving a little room between each slice.

Bake in the oven for 15 minutes.

While the rolls are baking, cut a piece of baking paper large enough to cover the baking dish. When the rolls are cooked, set the dish on a wire rack or trivet. Lay the baking paper over the dish and put a large plate or tray upside down on top of the paper, with the baking dish centered underneath. Using oven gloves, carefully lift the dish and plate, holding them firmly together as you turn them over.

Leave the baking dish upside down on the plate for 2 to 3 minutes, then carefully lift off. Collect and spread any coconut mixture left in the dish over the rolls, which are now upside down. Drizzle the remaining syrup over the rolls while they are still hot. Cool for 10 to 15 minutes before gently pulling them away from each other. Eat while still warm.

Dental health is important when caring for pets. Many pet health experts say that a pet’s first professional dental examination and cleaning should occur at around age two or three. Ideally, pet parents should brush their pets’ teeth daily to ensure that plaque and tartar does not accumulate and lead to significant periodontal issues. Older pets tend to require more frequent brushings, while younger pets and small dog breeds may not need daily brushing. There are plenty of pet-safe toothpastes available; do not use a human toothpaste, as such products contain ingredients that are not safe for pets.
