The Associated Press CHICAGO – After people were horrified by video of a passenger getting dragged off a full United Express flight by airport police, the head of United’s parent company said the airline was reaching out to the man to “resolve this situation.”

Hours later on Monday, his tone turned more defensive. He described the man as “disruptive and belligerent.”

By Tuesday afternoon, almost two days after the Sunday evening confrontation in Chicago, CEO Oscar Munoz issued his most contrite apology yet as details emerged about the man seen on cellphone videos recorded by other passengers at O’Hare Airport.

“No one should ever be mistreated this way,” Munoz said.

The passenger was identified as physician David Dao, 69, of Elizabethtown, Kentucky, who was convicted more than a decade ago of felony charges involving his prescribing of drugs and spent years trying to regain his medical license.

But while Dao’s history quickly became a focus of attention, there’s no indication that his past influenced how he was treated or that the airline or police were aware of his background. And it’s unlikely that officials would have known anything about him other than basic information such as his name and address, if that.

Screaming can be heard on the videos, but nowhere is Dao seen attacking the officers. In fact, he appears relatively passive both when he was dragged down the aisle of the jet and when he is seen standing in the aisle later saying quietly, “I want to go home, I want to go home.”

Munoz’s latest statement described the removal as “truly horrific.” He said the company would review policies for seeking volunteers to give up their seats, for handling oversold situations and for partnering with airport authorities and local law enforcement.

for injuries he suffered in the incident and that the family would not comment.

According to records from the Kentucky Board of Medical Licensure, Dao went to medical school at the University of Medicine of Ho Chi Minh City in Vietnam, graduating in 1974.

He was licensed in Kentucky with a specialty in pulmonary disease.

His legal troubles started in 2003, when his medical license was suspended after an undercover sting operation at a Louisville motel for allegedly writing fraudulent prescriptions.

According to the documents, the licensing board had learned that Dao had become sexually interested in a patient and hired the patient as his office manager. That man later said he quit his job because Dao “pursued him aggressively” and arranged to provide him with prescription drugs in exchange for sex.

Dao was ultimately convicted in late 2004 of several counts of obtaining drugs by fraud or deceit and was placed on five years of supervised probation and surrendered his medical license.

His longtime effort to get his license back finally succeeded in 2015, when the licensing board allowed him to practice medicine again.

About a year after his medical license was suspended, Dao joined the professional poker circuit, according to his World Series of Poker profile. His biggest competitive win came in 2009, when he took home more than $117,000 from a tournament in Mississippi.

Airport officials have said little about Sunday’s events and nothing about Dao’s behavior before he was pulled from the jet that was bound for Louisville, Kentucky. Likewise, the Chicago Aviation Department has said only that one of its employees who removed Dao did not follow proper procedures and has been placed on leave.

No passengers on the plane have mentioned that Dao did anything but refuse to leave the plane when he was ordered to do so.

Also Tuesday, Chicago Mayor Rahm Emanuel called the altercation “completely unacceptable” and praised Aviation Commissioner Ginger Evans for taking “swift action.” He promised that a city investigation would “ensure nothing like this ever happens again.”

The event stemmed from a common air travel issue – a full flight. United was trying to make room for four employees of a partner airline, meaning four people had to get off.

Parents learn safety steps in monitoring kids’ phone app, online use

SYCAMORE – It happens to everyone during adolescence – peer pressure sets in and self-esteem is fragile, but modern technology means parents need to be more vigilant than ever in making sure their children are safe, Sycamore Police Detective Joe Meeks said.

Meeks spoke with local parents during a seminar Tuesday evening about the problems and pressures children run into when using mobile applications, such as Snapchat or Meet Me, or interacting online through video games.

“I try not to terrify everybody, because truly the internet is a fantastic place, but you have to remember that people who are out there looking to harm children are using every access possible,” he said. “So it comes down to us, and it comes down to education, because the technology is not going away.”

“What is My Child Doing Online?” was the first in a series of six public seminars on law enforcement topics as part of a community outreach initiative for the department.

Meeks said he recently spoke with area middle schoolers about online dangers as well, because education for both children and parents is the only way to make sure the positives associated with technology are not overtaken by the negative possibilities.

“I told the kids yesterday, no one cares about your bathroom shower curtain, so I don’t know why we keep taking selfies in the bathroom,” he said.

Children and teens are not equipped to make logical decisions because their prefrontal cortex is not fully developed, which is why parents should arm themselves with knowledge about modern technology to help keep them from making serious mistakes, Meeks said.

“I’m extremely tech savvy, but I am even behind my own 9-yearold,” he said. “They are leaps and bounds ahead of us in this stuff.”

Meeks gave examples of ways parents can monitor and set restrictions on their children’s phones.

For example, some mobile applications known as “photo vault apps” are designed to hide content

under the guise of an inconspicuous feature such as a calculator.

Meeks said these are often used to hide nude photos or other sexual content.

“When I was younger and you

found the old man’s stash of dirty magazines, you took those and you hid those up in the ceiling, under a mattress, you hid them somewhere,” he said. “Now we do it with an app.”

Pastor in child porn case mulls plea deal

SYCAMORE – A DeKalb pastor facing child pornography charges must decide by May 2 whether to accept a plea deal or face trial.

Corey Butler, 36, pastor at Jesus is the Way Christian Center in DeKalb and a former mentor for DeKalb School District 428, is charged with possessing and disseminating child pornography.

He was freed after posting $1,000 bail shortly after his arrest in April 2015.

He appeared in DeKalb County court Tuesday morning, where his lawyer, Tom Benno, said his client and the state are working toward a plea deal.

Prosecutor Alicia Kaplan said details of the state’s offer would not be revealed unless it is accepted.

Should the case go to trial and Butler be convicted, he could face six to 30 years in prison if convicted of the most serious charge.

“When you’re talking about child pornography in this state, unfortunately, the way the laws are codified is very archaic, and there’s very little wiggle room,” Benno said. “So if you get caught looking at one picture, you could get the same sentence as someone who raped a 5-year-old.

“Consequently, a settlement would make sure justice is served.”

At the time of Butler’s arrest, he was mentoring students at DeKalb High School and the district’s middle schools. He has been barred from any involvement with children as a condition of his bond.

In an interview with DeKalb police after his arrest, Butler admitted to possessing the material and letting others view and download it, according

to court records, but later denied ever possessing or distributing child pornography.

He admitted he’d visited an adult porn site and blamed internet pop-up ads for the child pornography being on his computer.

Benno said Tuesday that if the state

has established a burden of proof, it would behoove Butler to take a plea deal during his 9 a.m. May 2 hearing at the courthouse, 133 W. State St. “We have a very good judge and a very good state’s attorney who understand the laws are rigid, but we can get a fair result,” he said.

County Board to vote on buying new bus for VAC use

dzimmerman@shawmedia.com DeKALB – During its Monday meeting, the DeKalb County Board’s Health and Human Services Committee recommended buying a heavy-duty bus to be used by the Voluntary Action Center of DeKalb County.

Paul LaLonde, the center’s executive director, said the $331,000 purchase, which will be funded en-

tirely with federal dollars, has been considered for years.

“Several years ago, DeKalb County received Federal Transportation Authority grant money for a new vehicle, but after getting put on the back burner, we’re finally getting our ducks in a row to purchase the vehicle,” LaLonde said. “We’re hoping it will be here by the end of summer.”

He said the bus will be used for flexible route services and routes to

Kishwaukee College.

“It’s going to be helpful to have another vehicle, especially as we’re planning to expand DeKalb’s Green Line,” LaLonde said. “This bus will help supplement service and can fill in the need for transportation, such as when the Green Line bus is out of service for maintenance.”

The County Board will vote on buying the bus at its April 19 meeting.

She was born on August 2, 1939, in Mt. Vernon, IL to Willis and Wilma Maxine (Daniels) Hicks. On November 16, 1957, she married Walter “Tub” Bacon in Anna, IL. She is survived by her children, Kevin Bacon, Steven (Eileen) Bacon, David Bacon, Rebecca (Gary) Greer, Randy Bacon and Gerald Bacon; grandchildren, Jeremy (Rachel) Bacon, Andrew Suftin, Andrea Greer, Diedra Greer, Jessica Bacon, Ben (Michelle) Bacon and Daniel Bacon; great-grandchildren, Naomi Bacon, Wyatt Bacon and Ellie Bacon, Mackenzie Sutfin and Charlet Sutfin; brothers, Willis (Connie) Hicks and Glenn Lowery; five sisters, Betty Callanan, Rose Boswell, Hallie (Terry) Hatfield, Marilyn (Adrian) Griffiths and Robin Lowery.

Online video game interactions also can be dangerous, as predators can create fake accounts, talk with children, play games with them and gain their trust, Meeks said.

“They are going to look where kids are,” he said. “They are going to the digital playground.”

The seminars all will be held at the Sycamore Police Department, 535 DeKalb Ave., from April through October.

The seminars are free and open to the public, but an RSVP is requested.

Commission seeks to manage $15M expansion of county nursing center

dzimmerman@shawmedia.com SYCAMORE – The DeKalb County Public Building Commission would oversee the proposed $15 million expansion project to the DeKalb County Rehab and Nursing Center on Annie Glidden Road.

According to a resolution adopted by the commission Tuesday morning, the Finance Committee recommended the project be managed by an oversight authority with expertise in construction projects to ensure that the project meets cost estimates and construction standards.

The commission’s role would be similar to the one it has played in the $35 million DeKalb County Jail expansion, much of which is on schedule to be finished in January.

DeKalb County Administrator Gary Hanson said the project will require a $13 million bond issuance, but the debt would be covered over the years by the nursing center’s operat-

ing revenues.

“For 20 years, the nursing center has already operated without property tax revenues,” he said.

The expansion plan includes more private rooms for Medicare patients, a new kitchen, a private dining room with extended corridors for efficient food service, a large activity area in the central courtyard and increased lounge space for residents.

The Rehab and Nursing Center Operating Board proposed the expansion last year and set the initial parameters, Hanson said.

Missouri-based Management Performance Associates, which regulates the nursing center, presented the project to the Public Building Commission and County Board in January.

The board is expected to vote on passing management of the project to the Public Building Commission during its April 19 meeting.

“Should the project move forward in 2018, the County Board would have to issue the bonds for it,” Hanson said.

Rauner on campaign-style tour of state

The schedule was announced from a Citizens for Rauner-affiliated email account. And moments after the first event started, supporters received a fundraising email from “Team Rauner Volunteer HQ” – another account affiliated with Citizens for Rauner – asking them to donate money “to directly help our grass-roots team as we

prep for this trip.”

Several of his potential Democratic rivals said Tuesday the two-day trip was the latest example of Rauner’s misguided priorities. They argue that his focus on keeping or gaining power has prevented lawmakers from reaching a deal on a state budget for nearly two years, leading to serious cuts to higher education, social services and other programs.

“Bruce Rauner is once again choosing to put politics over doing his job as governor,” Pritzker said in an email.

Pawar noted the events were occurring the same day he joined protesters at Northeastern Illinois University to rally against billions of dollars in cuts to colleges and to tuition grants for students.

“It’s past time for Gov. Rauner to put politics aside and govern,” he said. “Our state can’t afford to wait any longer.”

Rauner said the roadblock to changes he’s seeking, such as term limits for lawmakers and a property tax freeze, has been House Speaker Michael Madigan and other Democrats. During Tuesday’s stops and in TV ads that an arm of the Republican Governors Association began airing last month, he’s criticized Democrats who control the General Assembly for trying to “duct tape over” Illinois’ problems and said he’s the person trying to truly fix Illinois.

CHICAGO – Republican Gov. Bruce Rauner launched a two-day tour paid for by his campaign fund Tuesday, insisting the statewide fly around “has nothing to do with the election” even as Democrats line up to unseat him in 2018 and his approval ratings sag.

The first-term governor started the day touring a Bloomingdale factory, where he told employees “we’re working for you every day to try to help you have a better life.” He then flew to Rockford and several other stops before an evening rally in Springfield. He also has five scheduled events Wednesday in southern Illinois, Quincy and Champaign.

The tour comes as Rauner’s Democratic rivals already have been stumping across Illinois, blasting him as a failure and as more interested in politicking than governing. Among the candidates are billionaire J.B. Pritzker, businessman Chris Kennedy, state Sen. Daniel Biss and Chicago Alderman Ameya Pawar.

Rauner, who put $50 million into his campaign fund in December, said Tuesday he wanted media to cover the events as “communication with the people of Illinois.” He also refused to say he’s seek-

LINCOLNWOOD – Officials said a member of Northwestern University’s crew team has been found dead after falling overboard while practicing in Lincolnwood.

The school said in a statement authorities recovered the body of 19-year-old Mohammed Ramzan on Monday from the North Shore Channel in Lincolnwood.

Officials said a coach in a separate boat and a fellow team member went into the water in an unsuccessful rescue attempt.

Catholic Charities of Chicago marks 100 years

CHICAGO – Catholic Charities of the Archdiocese of Chicago has turned 100.

The largest Catholic Charities outpost in the country celebrated a century of service Monday. The organization said it helps nearly 1 million people in Cook and Lake counties each year.

The agency began April 10, 1917. Cardinal Mundelein called together a group of prominent businessmen to raise money for the church.

It was only days after America’s entry into World War I. Women were left caring for families. And a burgeoning flu pandemic would orphan thousands.

The organization has expanded to 150 locations across the archdiocese.

Man gets 6 years in prison for fondling women’s feet

WHEATON – An Illinois man has received a six-year prison sentence for fondling women’s feet last year at two public libraries.

Omar Carlton of Aurora pleaded guilty in October to two counts of aggravated battery in a public place in connection with touching the feet of the women in separate incidents. He was sentenced Monday.

DuPage County prosecutors said in April 2016, a woman was working at a cubicle at the Warrenville Public Library when she felt something brush up against her feet several times.

She reported the incident. An investigation by Warrenville police identified the 45-year-old Carlton as a suspect.

Carlton was arrested in May and was out on bond when he was charged in a similar incident at the North Central College library in Naperville.

He was in custody until his guilty plea.

Motorcyclists urged to take steps to improve safety

SPRINGFIELD – Illinois officials are urging motorcyclists to brush up on their skills and use proper equipment as they take to the roadways.

The Illinois Department of Transportation and Illinois State Police said more motorcycles will be on the road as the weather improves. They’re launching a joint safety campaign aimed at reducing crashes and deaths.

Illinois Transportation Secretary Randy Blankenhorn said although motorcycles are only on the roads for part of each year, they account for nearly 14 percent of all traffic fatalities.

He said riders should do pre-ride safety inspections and wear high-visibility clothing and a U.S. Department of Transportation-approved helmet.

Illinois also offers a free Cycle Rider Safety Training Program to licensed residents.

Tillerson in Moscow, takes hard line on Syria

MOSCOW – The Trump administration veered toward deeper conflict with Russia on Tuesday as Secretary of State Rex Tillerson arrived in Moscow, gambling that an unpredictable new president armed with the willingness to threaten military action gives the U.S. much-needed leverage to end Syria’s carnage.

Yet there were no guarantees Tillerson’s arguments would prove any more successful than the Obama administration’s failed effort to peel Russia away from its Syrian ally. Tillerson’s mission, coming days after 59 Tomahawk missiles struck a Syrian air base, also carries serious risks: If Russia brushes off the warnings, President Donald Trump could be forced into another show of force in Syria or see his credibility wane.

“I hope that what the Russian government concludes is that they have aligned themselves with an unreliable partner in Bashar al-Assad,” Tillerson said before flying to the Russian capital, referring to Syria’s embattled leader.

“The reign of the Assad family is coming to an end,” he confidently predicted.

But Tillerson’s claim is one President Barack Obama, too, argued for years, only to see Assad outlast his own term in office. And the Trump administration’s nascent Syria policy seems to be increasingly centering on the same tactic Obama unsuccessfully employed: persuading Russia, Assad’s staunchest ally, to abandon him.

Calling for a U.N. investigation, Putin held to his claim that it was actually Assad opponents who introduced chemical weapons into Syria’s harrowing civil war.

“We have seen it all already,” Putin said. Jabbing at U.S. credibility, the Russian leader reminded reporters about unfounded U.S. claims of Iraqi weapons of mass destruction, used to justify America’s 2003 invasion.

The escalating dispute over last week’s events in the Syrian town of Khan Sheikhoun has thrust Washington and Moscow into a level of tension rarely seen since the end of the Cold War. The animosity is especially striking given widespread speculation that Trump, who lavishly praised Putin during his campaign, would pursue rapprochement with Moscow.

Even on Syria, the positions appeared to be hardening. Only a week ago, top Trump officials had spoken off deprioritizing past U.S. efforts to remove Assad from office and accepting the “reality” that 18 months of Russian military intervention had secured him in power.

Since last Thursday’s cruise missile strike, Tillerson and

other U.S. officials appear to have reverted to the past administration’s rhetoric of insisting that Assad is on the way out, without outlining any strategy for making that happen.

The Trump administration’s change of heart, apparently spurred in part by the president’s emotional response to the images of chemical weapons victims, also is serving another purpose: defanging the perception of coziness between Trump and Moscow. As the FBI and multiple congressional committees investigate potential collusion between Russia and Trump’s campaign, the president can point to his hard-line stance on Assad as fresh evidence he’s willing to stand up to Putin.

Asked about Putin possibly skipping a meeting with Tillerson, White House press secretary Sean Spicer said, “There is a bit of irony that for all of these talks that have been perpetuated about back channels and direct links, that now it’s they won’t meet with you.” At a minimum, Tillerson will meet Wednesday with Russian Foreign Minister Sergey Lavrov, and the two are expected to take questions from reporters.

The proposals were for reasonable and necessary public functions – maintaining ambulance service in Kirkland, maintaining public health services across DeKalb County, life-safety improvements for Sandwich schools and a retirement fund for Genoa Township employees.

It should be clear by now, if it wasn’t before, that local homeowners simply are not willing to shoulder any additional tax burden, no matter how small it’s made out to be.

A proposed increase might be the cost of a fastfood meal every month – but who has an appetite after paying what it would cost to gorge themselves at a fancy restaurant?

There lies the shame in the ever-growing property tax burden Illinois homeowners face: Important causes get the thumbs-down because people are concerned they’ll be taxed out of their homes.

We are certain that people in the Kirkland Fire Protection District want an ambulance available to respond if they have a heart attack on a Tuesday afternoon.

We know people in DeKalb County want to be protected against communicable diseases and want restaurants to be inspected for safe food-handling practices.

Of course voters in Sandwich want schools to be safe places for children.

But with DeKalb County homeowners already paying some of the highest property taxes in the country, who can blame them for asking that these services be provided with what they already pay?

Those bills will be hitting mailboxes again around May 1, driving home this painful reality once again.

It’s true that the majority of every property owner’s tax bill goes to fund local schools, while other governments take relatively little.

That fact made no difference this election, and in all likelihood, it will not matter next time.

Unless Illinois gets its fiscal house in order and finds alternative ways to fund local education – including taking a hard look at the bargaining power of its teachers unions – almost all tax increase referendums will fail.

While we wait for lawmakers in Springfield – a wait that could last years – it will be incumbent upon local officials to find alternative means for financing projects.

Property taxes already are too high. Voters are sending the clear message that they’ve had enough.

Schools should release immunization rates It’s troubling enough that Texas still allows parents to opt out of vaccinating their school-age children with alarming ease.

Almost as stunning is how hard it is for parents to get information on the number of kids claiming exemptions at individual schools, so they can make smart decisions about their risk of exposure.

The way Texas releases records – at the district level instead of the school level – keeps most parents in the dark until it’s too late. Parents have to file tedious and time-consuming open records requests to get school rates.

Meanwhile, clusters of unvaccinated children can form at a school without being reflected in the data or released to the public.

This is leading to the emergence of childhood diseases that had all but disappeared because of advances in medicine and kids

on vaccination schedules. In December, a mumps outbreak in Johnson County infected almost 30 people. Dallas County had a mumps outbreak last month, with nearly 60 cases.

That does no one any good.

And it’s a danger to the health of all of us.

We applaud two bills – SB 1010 from Amarillo Republican Kel Seliger, and HB 2249 from J.D. Sheffield, R-Gatesville – that aim to fix this and require the government to release school immunization rates.

Consider that nearly 45,000 Texas students in grades K-12 claimed nonmedical exemptions in 2016. That’s a 1,700 percent increase from 2004. Stunningly, parents can opt out with little more than a name, age and an address.

This has been allowed since vaccination skeptics got Texas law changed in 2003 to allow

exemptions for philosophical reasons. Fearful and misinformed parents continue to cite discredited research linking vaccines to autism.

It’s mind-boggling that Texas allows this to continue. A bill by Dallas Rep. Jason Villalba to curb these exemptions for nonmedical reasons died during the last session. At the very least, lawmakers should now make sure parents are armed with exemption rates at their schools.

“Parents have a right not to get their kids vaccinated, but the kids don’t have an individual right to expose other kids whose parents don’t want to assume that level of risk,” Seliger told The Dallas Morning News.

He’s right.

This information should be as easy to get as STAAR or SAT scores, and it could save kids’ lives.

So anyway, Jenner approaches a police line and hands the pop to a cop. He takes a long swig. The crowd cheers. Understanding and tolerance ensue.

It was a naked attempt to co-opt the methods and message of Black Lives Matter to sell carbonated sugar water and the internet, predictably, went guano. “If only daddy would have known about the power of (hashtag) Pepsi,” tweeted Martin Luther King’s daughter, Bernice.

Pepsi was forced to yank the ad and apologize. But if many of us were angered and energized by that, comparatively few noticed as, at about the same time, Attorney General Jeff Sessions ordered a sweeping review of consent decrees reached by the Obama Department of Justice with police departments around the country.

These decrees are agreements for federally monitored reform of training, policy and procedure of troubled cop shops. They are in effect in 14 cities, including Ferguson and Cleveland. Four other cities – Miami is one – made agreements to reform without federal oversight.

In a memo released last week, Sessions worries about tarring police with the actions of a few “bad actors.”

Yet DOJ investigations repeatedly found that, far from being isolated events, police abuse – unlawful stops, searches, harassment and beatings targeting African-American citizens – were endemic to the very culture of these departments. They were not flaws in the system. They were the system.

Sessions also frets over how consent decrees affect the “morale” of these departments. The morale of African-American people goes unmentioned.

It is unclear what, if anything, he can do to reverse the agreements. But the very fact that he has placed them under review is an ominous sign that, henceforth, protecting black folks

from police excesses will not be a priority.

That sobering truth makes even more jarring the sight of Jenner flouncing up to a cop with a Pepsi in hand. Did the last three years not actually happen? Did the primal scream rising from the streets of Baltimore, Ferguson and Any Black Neighborhood, USA, reach human ears or was it just flung into the indifferent ether?

The words of 17th-century theologian Matthew Henry seem apropos: “They know not because they will not understand,” he wrote. “None so blind as those that will not see.”

He could have been speaking about Sessions or Pepsi. Once again, in response to black folks’ fears, people choose to be ignorant. They choose to be blind.

Now African-Americans must make some choices of their own.

Gauger a reminder of Illinois death penalty’s demise SPRINGFIELD – “These are halls of justice – not mercy,” the prosecutor bellowed before the jury as I wiggled uncomfortably in the back of the courtroom, notebook in hand I was fresh out of college and covering courts in Texas when I first wrestled with the notion of justice vs. mercy.

Justice is when society gives someone a punishment it thinks a defendant deserves. Mercy, on the other hand, is when it extends a hand of compassion.

We are all for compassion when it is we who are standing before the judgment seat. But we aren’t so much for it when it is someone who has wronged us.

I just finished reading “Just Mercy” by Bryan Stevenson. He’s a Harvard-educated lawyer who has devoted his life to representing those

He famously was able to prove one of his clients was factually innocent and have the conviction thrown out.

Sometimes, our society makes mistakes.

And the death penalty is something that makes me uneasy.

It has since I met a man named Gary Gauger. He was wrongly convicted of murdering his parents in rural McHenry County.

He served two years on Illinois’ death row before his conviction was thrown out.

I met Gauger back in 1990 when he dropped by my office, which was then

in the Illinois statehouse. He told his tale of wrongful conviction and left me speechless.

I’m libertarian in my philosophy, which means I support limited government. And, let’s face it, there is no greater intrusion of government than when it chooses to kill one of its citizens.

And after 30 years of covering government, I’ve come to the conclusion that it does very little very well.

Even when it comes to the death penalty, in recent decades, Illinois managed to sentence 13 men to die who were factually innocent.

For this reason, I’m glad Illinois no longer has capital punishment.

While Gov. Pat Quinn signed the legislation outlawing the death penalty, it is really Gov. George Ryan who deserves the credit.

During his four years in office, he

moved from being a supporter of the death penalty to being the nation’s most vocal opponent of capital punishment. He is the man who emptied Illinois’ death row.

I used to say, “I support the death penalty because some people don’t deserve to live.”

And, no, I haven’t become naïve. I know there still are bad people among us who should be banished to be forever away from society.

But what does society gain by killing? Retribution?

Well, perhaps it’s time to temper our justice with a bit of mercy.

Yes, that Pepsi ad was an insult.

But if you think it was the worst insult Black Lives Matter suffered last week, then you weren’t paying attention.

Not that the ad wasn’t revolting.

Imagine that, three years after the police shooting of a black teenager in Ferguson, Missouri, ignited protests by African-Americans sick of seeing their sons and daughters killed without cause or consequence, you turn on the TV and see a protest march. Except, it’s a curiously color-coordinated crowd carrying curiously color-coordinated signs that say almost literally nothing. “Join the conversation!?” What does that even mean?

Then Kendall Jenner, a junior member of the famously vapid Kardashian clan, joins in.

She plucks a Pepsi from a convenient cooler. (Because, yeah, they have Pepsi coolers at all the great protests. If you look closely, you can even see one in footage from the Edmund Pettus Bridge – an Alabama state trooper knocks it over while clubbing an old woman who wants the right to

Taylor Meier’s goal came midway through the first half, with her shot from about 25 yards out just over the outstretched hands of DeKalb goalkeeper Avery Mertz, who deflected the ball, but it bounced into the goal.

Holland’s goal came with less than three minutes remaining after sophomore Savannah Burns hit her overthe-top and Holland tapped it past a charging Mertz for the goal.

With less than 10 minutes remaining in the game, Kierah Meier dribbled up the left side of the field before going toward the middle for a long goal past Mertz with 7:26 left.

“I like the fact that we came out

with a 3-1 win,” Sycamore coach Dave Lichamer said. “I don’t think it was a particularly well-played 3-1 win, but we’ll certainly take the goals and the W, but we need to clean up some of our work on the field a little bit. ... We need to be a bit more convincing in our wins. We’ve let a couple of teams score late. ... We need to make sure we’re putting a complete game together.”

By the numbers: The Spartans finished with 10 shots on goal, including four from Kierah Meier, while the Barbs had four shots on goal – three of which were saved by Schwartz. Sycamore also had the only corner kick of the game.

Beyond the stats: Midway through the second half, DeKalb’s Hanna Hickey delivered a cross that was punched away by Schwartz, and Barbs’ sophomore Christina Ryzhov got the rebound, but her shot missed to the right.

They said it: “We didn’t play our best technical match, which, against a good team, it didn’t help us keep the ball,” DeKalb coach PJ Hamilton said. “I thought we improved on our style of play, but we got a few things to clean up.”

Up next: The Spartans play at Morris at 4:30 p.m. Thursday, and the Barbs host Yorkville at 6 p.m. Thursday.

SYCAMORE – Sycamore senior defenders Taryn Mathey and Emma Stice never lost to DeKalb heading into the season.

The Spartans’ defense made sure to keep it that way.

Sycamore got goals from three players, and its defense only allowed a late goal in its 3-1 victory over the Barbs on Tuesday night in Sycamore for the Spartans’ fifth consecutive victory over their rivals.

“I haven’t lost a conference game either, so I think finishing all four years without a loss is something to be motivated for,” Stice said. “I didn’t really think about not having lost one since the beginning of the year.”

Sycamore won both meetings last year – 3-0, 3-0 – and both meetings in 2015 – 4-0, 3-1 – and the two teams recorded a pair of 0-0 draws in 2014.

The defense has been stellar for the Spartans (6-0-3, 2-0 in Northern Illinois Big 12) this season, only allowing four goals in nine games and never surrendering more than one in a game.

The lone goal for the Barbs (2-4 overall, 1-1 in Northern Illinois Big 12) came with 2:22 left in the game, when sophomore Siobhan Gallagher looped a shot from the left side that landed in front of Sycamore goalkeeper Maegan Schwartz and took a funky hop to bounce over Schwartz and into the goal.

It’s the second time in four days that the Spartans have allowed a late goal, however.

While the goal by the Barbs didn’t affect the outcome, the Spartans also allowed a goal with 43 seconds left to Burlington Central that turned a win into a draw.

Mathey said that while the Spartans still are undefeated this season, they’ve been far from perfect.

“We definitely haven’t been playing to our full potential,” Mathey said. “We have a lot of talent on this team. I think once we start clicking and start playing together as a team, we can just be thriving – so much better than we are right now.”

DeKalb was entering Tuesday’s game having won two straight by a combined score of 8-0.

The Spartans scored twice in the first half – once by Taylor Meier and another by Saydie Holland – and Kierah Meier added the third goal in the second half.

sports@daily-chronicle.com SYCAMORE – The Sycamore and Morris softball teams played a tight game until the final inning, when Morris exploded for eight runs to beat the Spartans, 13-4, on Tuesday.

Morris (14-1, 2-1 in Northern Illinois Big 12) made the most of its extra chances in the seventh inning as it loaded the bases thanks in part to two errors by the Spartans. Ryan Friend then blasted a two-run double, and the rout was on. Morris batted through its order, scoring eight runs and putting the game away.

Friend knocked in three runs for Morris, going 2 for 4 with two doubles, while teammate Olivia Schultz, who went 1 for 4, also had a two-run hit in the final inning.

“Offensively, we had plenty of opportunities. We had a runner on base every inning, so it’s not like we didn’t give ourselves chances.

We found a way to put the ball in play.”

The Spartans (3-6-1, 1-2 in Northern Illinois Big 12) had their chances to

win as they had runners on in every inning, including having the bases loaded with no outs in the sixth, but could only manage one run in that inning.

They said it: “You can make something happen with your speed or the defense can have a miscue and you give yourself a chance,” said Carpenter.

With the game tied in the bottom of the seventh and the winning run on second base, Sycamore’s senior clean-up hitter James Marcinkowski hit a walk-off single up the middle in the Spartans’ dramatic 4-3 win over Yorkville on Tuesday night in Sycamore.

“We had the game tied with two guys on and one out and the two hitters coming up were Jack Mizgalski and James Marcinkowski, one of those guys is getting a hit,” Cavanaugh said of the Spartans’ No. 3 and No. 4 hitters.

After Mizgalski, who had a walk-off grand slam in the playoffs last year, struck out with one out, Marcinkowski – who had a walk-off hit in the sectional championship last year – hit a single up the middle to score Jarod Montavon for the win.

Mizgalski earned the win on the mound, pitching a complete game on 84 pitches – including a quick seventh inning after the Spartans scored three in the bottom of the sixth to tie it. Trailing 3-0 heading into the frame, Marcinkowski hit a two-run triple and Tyler Didio

capped a long at-bat with an RBI single to score Marcinkowski and tie it 3-3.

Kaneland blows game open late: After DeKalb tied it in the top of the sixth, the Knights scored five in the bottom half of the inning for a 7-2 win in Maple Park.

Reece Sowell picked up the win for the Knights, allowing just two unearned runs on two hits and striking out five in a complete game victory.

Luke Calabrese went 2 for 3 with a double, and Robbie Dudinski was 2 for 3 with an RBI for Kaneland in the win.

Bryce Wheeler went 1 for 3 with an RBI, Derek Kyler added an RBI and Eric Nelson hit a double for the Barbs.

IC wins at home: The Timberwolves notched an 8-6 win against Earlville-Leland.

Griffin Rissman and RJ McCoy each had two hits and Olin Simpson went 1 for 2 with three RBIs for the Timberwolves, who improved to 2-5 overall and 2-3 in Little Ten Conference.

The Nashville Predators aren’t your typical eighth seed. With the addition of top center Ryan Johansen last season and No. 1 defenseman P.K. Subban last summer, the Predators were a trendy pick to reach the Stanley Cup Final this season. And for good reason. They have high-end scorers up front and one of the best and most aggressive blue lines in the league, led by Subban, Roman Josi, Ryan Ellis and Mattias Ekholm.

In fact, if not for a dreadful 6-12 record in overtime and shootouts, the Predators easily could have been a 100-point team. And there are no 3-on3 overtimes or shootouts to worry about in the playoffs.

“It’s a tough team to play against, no doubt,” said Patrick Kane, who didn’t sound as if he was simply blowing smoke. “I think it’s one of the tougher teams in the league.”

Holland intrigued by chance to work with Coop White Sox fall in 10

CLEVELAND – Left-hander Derek Holland said he was intrigued by the prospect of working with Don Cooper when he decided to sign a one-year deal with the White Sox during the offseason, and after going through his first spring training with the Sox pitching coach, he’s convinced he made a good career move.

“I really have to give a lot of credit to Coop,’’ Holland said Tuesday. “For getting me in the right position. I’m back to where I feel comfortable, putting less stress on the shoulder. I feel very good out there on the mound.’’

The Rangers declined an $11 million club option in the offseason on Holland, who is attempting to put a difficult three-year period marked by injury behind him. The Sox signed “The Dutch Oven” for $6 million, and he can earn an additional $1 million if he pitches 150 innings and another $1 million if he hits 200. Fighting shoulder and knee injuries, Holland hasn’t topped 200 since 2013 when he went 10-9 with a 3.42 ERA over a career-high 213 innings.

CLEVELAND – Michael Brantley doubled home Francisco Lindor with two outs in the 10th inning as the Cleveland Indians celebrated their 2016 AL championship and then beat the White Sox, 2-1, on Tuesday in their home opener.

Brantley could only watch and cheer for his teammates last October during their postseason run after undergoing two surgeries on his right shoulder. But he’s healthy now, and after playing in just 11 games last season, Brantley made the most of his first home game since May 10 with his game-winning hit.

Lindor walked with two outs off Tommy Kahnle (0-1) before Brantley sliced a 3-2 pitch down the left-field line. Lindor was running on the pitch and scored easily while Brantley danced around second base before being mobbed by his teammates.

It was the dramatic ending the Indians didn’t get in their last home game, a 10-inning loss to the Cubs in Game 7 of the World Series. Cleveland led the majors with 11 walkoff wins last season.

Bryan Shaw (1-0), who took the loss when the Cubs won their first title in 108 years, got the win.

Lindor homered in the first and the Indians missed a couple late scoring chances as newly signed slugger Edwin Encarnacion twice grounded into inning-ending double plays with the bases loaded.

Despite rain delay, home opener impresses players, fans

bmiles@dailyherald.com CHICAGO – The Cubs hit no home runs Monday night in their 3-2 victory over the Los Angeles Dodgers in the Wrigley Field opener.

As far as the rest of the night went, they knocked pretty much everything else out of the park.

The outdoor plaza on the west side of Wrigley Field has given the entire area a new look, and it seemed to be a big hit with fans.

And the rain-delayed banner-raising ceremony left more than a few people reaching for a tissue, and not because of the rain.

“It was pretty cool,” said pitcher Jon Lester, who started the game.

“It’s nice. It was, I think, better than

what we expected. Obviously, when the crowd sticks around for a two-hour rain delay that’s always nice. The team going out there and raising the flag and some, I don’t want to say old guys, but some old guys coming back and doing the same thing.

“It was special night, something that will go down in my book as something that I’ll remember for a long, long time. I now look forward to Wednesday and getting the fun stuff, getting the ring. So that will be good.”

Lester meant no disrespect to those “old guys,” who happened to be Cubs Hall of Famers Ryne Sandberg, Billy Williams and Fergie Jenkins, who raised three of the four banners the Cubs put up as they commemorated the 1907 and 1908 world championships, the 2016 National League pen-

nant and, of course, the World Series title from last year.

As Lester mentioned, there’s more.

The Cubs will receive their World Series rings before Wednesday night’s game as a group of fans will do the presentation.

The Cubs could have done it all Monday – present the rings and unfurl the banners.

But when it’s 108 years between titles, it’s hard not to want the celebration to last.

“I think so that fans can enjoy them each on their own,” said team president Theo Epstein. “That’s a lot to put into one night, not that you couldn’t do it, but something might get lost. I can understand doing it on two separate nights. I think it will prove to be a nice benefit to the fans.

“First of all, more people can say

they were there for one of the ceremonies. Hopefully they’re special moments. By the first pitch on Wednesday we can turn the page.”

It was even more special for Anthony Rizzo, the team leader who led the Cubs in raising the 2016 world championship banner and then capped the night (into the early hours of Tuesday morning) with a game-winning RBI single.

“I’ll remember this day for as long as I play baseball,” he said. “The walkoff caps it off. That pregame ceremony, I really, honestly didn’t think it would be that amazing a job the Cubs did. The videos, the tribute, it’s amazing.

“The fans, just how amazing they were, we had this whole offseason to dissect it and realize how much it meant to so many people from all over the world, all over the country.”

Quoteworthy: “We know their ‘D’ like to get into the play a lot, so finishing checks is big,” Tootoo said. “That means putting pucks in areas where we’ve got to make sure their ‘D’ turn, and not necessarily crush guys, but make sure you finish on every opportunity.”

Who’s on fourth?

Noteworthy: These are two of the deepest teams in the league. The Hawks have a league-high six 20-goal scorers (and another, Ryan Hartman, with 19). Nashville only has three (Forsberg and Arvidsson with 31 each, and James Neal with 23), but might actually be deeper up front. The Predators have 12 10-goal scorers and 13 players with at least 20 points. The Hawks have a solid top three lines that are set, but other than Tanner Kero at center, the fourth line remains in flux, with

six different wingers in the mix. The Hawks won their three Stanley Cups on the strength of their four-line rotation, and will have to find it quickly in order to make another run. John Hayden and Jordin Tootoo will get the first crack at flanking Tanner Kero on the fourth line. It’ll likely fall on either Toews’ line or Marcus Kruger’s line to slow down Nashville’s superb trio of Forsberg, Ryan Johansen and Arvidsson.

Quoteworthy: “On every shift, we want to make sure we have a four-line rotation,” Joel Quenneville said. “Everybody has to be able to play against anybody in the game.”

Pekka Rinne

Noteworthy: Where the Predators fall short is in goal. Pekka Rinne and Corey Crawford both had a .918 save percentage this season, and Rinne actually was excellent down the stretch, with a .932 save percentage and 1.98 goals-against average in his final 13 starts. That’s the Rinne of old. If he can keep playing like that, rather than the way he’s played for most of the previous two seasons, Nashville can steal this series. But history suggests he can’t. In the postseason, Rinne has posted a pedestrian .912 save percentage and 2.51 GAA in his career.

Tanner Kero has been a surprising stalwart, reliable and responsible. John Hayden has the look of a Joel Quenneville favorite, physical and hardworking. But none of them has ever played in a Stanley Cup playoff game. And none of them has ever played a season this long, this taxing. How the rookies hold up under the unrelenting pressure and grind of the playoffs will go a long way toward determining the Hawks’ fate. Of course, with six three-time champs to lean on, that burden is eased a bit.

Quoteworthy: “When you show that nothing really fazes you regardless of what the other team throws at you, it’s kind of an intimidating thing,” Toews said. “So that experience is obvious-

Orlando] with the double-double [17 points] and the 11 assists. That was the best thing about his game. He played simple, easy basketball. Defensively, he did a good job of getting his hands on balls.’’

But now, it all comes down to one game that could determine if the Bulls play in the postseason.

Center of attention

Noteworthy: Artem Anisimov hasn’t played since suffering a leg injury on March 14 in Montreal, but is expected to play in Game 1 on Thursday, returning to his usual spot between Panarin and Kane. After skating for a week in Chicago during the Hawks’ recent road trip, his conditioning should be fine, but how about his timing? Few players can do what Kane did two years ago, when he returned from a broken clavicle and stepped in for Game 1 without missing a beat. Anisimov matched a career-high with 22 goals before the injury, and his excellent all-around play – while overshadowed by his flashier linemates – is critical to the Hawks’ success. Anisimov plays a significant role at even strength, on the power play and on the penalty kill. But only if he’s 100 percent.

Quoteworthy: “I’m going to continue to go to the net and play hard every shift and do all my stuff,” Anisimov said.

Prediction: It’s anything but an ideal first-round cakewalk for the Hawks, but the edges in goaltending and experience are big ones. Hawks in 6.

Eighty-one was not enough. But if the Bulls can win Game No. 82 Wednesday vs. the Nets, they can assure themselves a playoff slot.

If not, they could still sneak in with a loss by Miami.

But they’re embracing the opportunity rather than feeling the pressure, coach Fred Hoiberg said after practice Tuesday.

“The mood is good,’’ Hoiberg said.

“You have to play your game. You can’t play tight. We have to do what has made us a successful team. We’ve won six of eight. We need to do the things that have helped us along in this stretch.’’

Hoiberg said Rajon Rondo, who has missed the last three games with a sprained right wrist, is day-to-day. But the veteran point guard said he’s making strides.

“My health is fine,’’ Rondo said.

“I played some one-on-one [Monday] and I fell pretty hard. But I was able to come out this morning and shoot some basketballs. I might [play].’’

Rondo participated in most of the Bulls’ contact drills in practice, Hoiberg

said.

If he does play, Rondo said he doesn’t expect to be limited.

“Not really. It’s not as painful as it was two days ago,’’ he said. “I’m confident in my team, but I do want to play. I miss playing the game. I miss getting up and down. But I’m going to try to do the right thing for myself and for the team.’’

Although the Nets are last in the Eastern Conference, they have won four of their past six, including Saturday’s 107-106 win in Brooklyn over the Bulls, who blew a nine-point lead with 4:24 to go.

“We need to go out there with unbelievable focus,’ ’’ Hoiberg said. “They’re playing their best basketball of the season right now when you look at their recent stretch. They’re [the] fastest paced team in the league. We have to get back in transition. We need to do a good job like last night of getting off to a good start and sustain it over 48 minutes.’’

Based on their 122-75 rout of the Magic on Monday, the Bulls’ chances would seem good. But the Bulls have been full of surprises, from unexpected wins to startling stumbles.

NIU baseball: Huskies on wrong end of lopsided loss

The Northern Illinois baseball team struggled all day to get UIC catcher Rob Calabrese out.

Calabrese had a monster game and the Flames cruised to a 17-3 win over Huskies in a nonconference game Tuesday at Ralph McKinzie Field in DeKalb.

Calabrese finished the day 5 for 6 with two home runs and eight RBIs for the Flames, who improved to 21-8 on the year. The Flames scored three runs in the first, along with five runs in both the second and eighth innings.

Mike Robinson went 3 for 4 with an RBI for the Huskies (9-23) in the loss, and Joe Jumonville was 2 for 3 and an RBI. Northern Illinois starts a home series against Kent State, starting at 3:05 p.m. Friday.

The explosions happened as the team was departing its hotel for a first-leg match against Monaco. The game was called off shortly before kickoff and rescheduled for Wednesday.

A letter claiming responsibility was found near the site of the blasts, prosecutor Sandra Luecke told a late evening news conference. She said investigators are examining the authenticity of what was written in the letter, but wouldn’t reveal more about its contents, citing the ongoing investigation.

The Easter table’s main attractions – lamb by the leg, ham bigger than a diver’s helmet – are built to feed a crowd. But options for a modest holiday gathering can be rustled up more easily these days, thanks to the availability of tidy lamb roasts in netting and an up-and-coming fresh ham alternative.

Spring is the season to buy fresh lamb, as you’ll be rewarded with more flavor than a frozen cut yields.

The shoulder is a juicier and chewier cut than the leg, so slow-roasting and braising are the optimal ways to cook it. A rolled-and-tied boneless leg needs to spend less time in the oven per pound than a shoulder, and it cooks more evenly than a butterflied leg with its thick and thin sections of meat.

It can be trimmed to fit almost any appetite, but via your butcher or local farmers market purveyor, you’ll find a less expensive alternative in the lamb breast – the flat and fatty cut atop lamb ribs. It can be rolled as well, and is even more receptive to developing flavor through spices and stuffing.

Ham, the huge cut from the pig’s hind leg, became an Easter tradition because the legs that were hung in the fall to cure in smokehouses would be ready by spring. Fresh hams are more available but still are a rare find in grocery stores because they are more perishable than other large cuts of pork. Their size is the main drawback; at 20 to 25 pounds, fresh ham is a tough choice for a smaller crowd.

Butterflied and rolled front-leg sections of pork are a fresh ham alternative. They have less girth and more flavor than what comes from the back leg. You can call it a ham roast and excuse any nitpicky terminology types from the table.

A benefit of this cut is the fat cap and skin, which keeps the meat moist as it cooks and, treated to high heat at the end, is rendered crispy enough to cut into bits and make one decadent garnish.

So place your orders with producers and butchers, and explore ways to use smaller cuts. Here are two ways to go for small lamb and ham roasts.

Ham Roast With Leeks 6 to 8 servings

For the meat: 4 to 6 limes 1 cup olive oil

For the lamb: 8 cloves garlic, coarsely chopped 2 ounces fresh mint leaves Leaves from 1 sprig rosemary, coarsely chopped Finely grated zest of 2 lemons (about 1 tablespoon) Kosher salt Freshly ground black pepper 1/4 cup olive oil One 4-pound boneless leg of lamb roast, tied or in cotton netting For the jus: 2 teaspoons olive oil 1 medium carrot, scrubbed well and coarsely chopped 1/2 medium onion, coarsely chopped 1 rib celery, coarsely chopped 1 cup dry red wine 3/4 cup no-salt-added chicken broth Kosher salt Freshly ground black pepper Combine the garlic, mint, rosemary, lemon zest and a generous pinch each of salt and pepper in the bowl of a mortar and pestle or in a food processor; grind or pulse for 20 seconds, then add the oil.

Grind or pulse to form a paste.

Lay the roast on a platter lined with plastic wrap, fat side down. Rub all the paste into the meat all over; let it rest at a cool room temperature for 2 hours.

Preheat the oven to 325 degrees F. Heat a stove-top-safe roasting pan over medium-high heat. Once it’s quite hot, add the lamb, fat side down first; sear until golden all over, turning as needed. Transfer to the oven; slow-roast for 2½ hours, or until the internal temperature reaches 140 to 145 degrees (medium-rare). Carefully pour the pan juices into a large liquid (heatproof) measuring cup.

Let the meat rest for 30 to 45 minutes; meanwhile, make the jus: Combine the oil, carrot, onion and celery in medium sauté pan over medium-high heat. Cook for 8 to 10 minutes, or until softened.

Add the wine and stir with a spatula, dislodging any browned bits. Cook for 10 minutes, or until the wine has reduced by half. Stir in the reserved pan juices and the broth. Reduce the heat to medium; cook for 10 to 20 minutes, or to the desired consistency (the longer you cook the jus, the more concentrated its flavor will be but there will be less of it). Strain, if desired, discarding the solids. Taste and season with salt and/or pepper, as needed.

Transfer the lamb to a cutting board; discard the netting or twine. Cut crosswise into thin slices and serve warm, with the jus.

Nutrition information per serving (based on 8): 420 calories, 47 g protein, 5 g carbohydrates, 20 g fat, 6 g saturated fat, 145 mg cholesterol, 270 mg sodium, 1 g dietary fiber, 1 g sugar.

For the stuffing: 1 large or 2 small leeks (trimmed), white and light-green parts 2 ribs celery, coarsely chopped 2 teaspoons fresh thyme leaves 1 tablespoon olive oil For the meat: Cut the limes in half and squeeze their juice (to taste) into a mixing bowl. Toss in the spent lime halves, then add oil, sage, cumin, thyme, salt and pepper, whisking to incorporate.

Invert the ham roast so it’s skin side down, on a platter. Use a knife to slash sections of meat, to help even out the surface. Pour the marinade evenly over. Then make small cuts for inserting all the thin slices of garlic, if using. Lay the spent lime halves so their pulp is touching the meat. Cover with plastic wrap and refrigerate for 8 hours, or up to overnight.

For the stuffing: Cut the leeks in half lengthwise and rinse thoroughly to remove any grit.

Pat dry and cut crosswise into 1/2-inch slices, placing them in a mixing bowl as you work.

Add the celery and thyme, then drizzle with the oil, tossing to coat.

Preheat the oven to 375 degrees F. Spread a large sheet of plastic wrap on a clean counter top.

Place the pork on the plastic wrap, skin side down, with a short side parallel to the edge of the counter. Distribute the leek mixture evenly over the meat. Carefully roll the farther, short edge tightly toward the center, then fold the near short edge over the first roll, so the skin shows on top. Some of the leeks may fall out the ends; either push them back in or add to the roasting pan.

Use kitchen twine to tie the meat at 2-inch intervals (a total of about 6); start the first tie just off-center, and work out toward the edges on both sides. Pull and knot as tightly as possible, a few times for each one. The knots should line up on the side. Do not score the skin.

Transfer to a roasting pan, placing 3 of the spent lime halves and 1/4 cup of the marinade in the pan as well (discard the rest of it).

Roast for 1 ½ to 2 hours, or until the internal temperature registers 140 degrees F. on an instant-read thermometer.

Increase the oven temperature to 475 degrees F.; continue to roast for 20 minutes, or until the skin is nicely crisped and the internal temperature of the meat is 150 to 155 degrees F. Strain and reserve the pan juices in a fat separator cup, if desired, for serving. Let the roast rest for at least 30 minutes.

When you’re ready to carve, discard the twine. Make a horizontal cut to slice off the skin and its fat, which should come away in a single piece. If desired, cut this up into small bits and gather in a bowl, to use as a garnish.

Slice the roast thinly. Serve warm.

Put a little spring in your hummus with carrots

Hummus generally contains five basic ingredients; chickpeas, tahini, lemon, garlic and olive oil. Once you have these ingredients combined, it is easy to add other herbs, spices and even roasted carrots – like I do here – to flavor and season basic hummus.

In the early spring, I love to roast fresh carrots until they are deeply caramelized and purée them to add to the base of chickpeas and tahini. To deepen the golden color, I add a touch of turmeric. The combined result is a deep golden yellow hummus that is the perfect color for daffodil season.

The secret to creating the creamiest and freshest hummus is making sure that the skins of the chickpeas are removed and discarded. Many brands of water-packed cooked and canned chickpeas come mostly skinless, so this is not as labor-intensive as it may sound, and it’s well worth the effort.

Serve the hummus with crudites for a springy colorful snack or appetizer and pita chips. I like to make my own pita chips baked with a light brush of olive oil and seasoned with a sprinkling of coarse salt and za’atar. Once they are seasoned, you can cut them into triangles – six per pita bread is a good size – and bake them in a 350 degrees F. oven until they are crisp.

Servings: 16 appetizer-sized portions Start to finish: 50 minutes 1/2 cup well-roasted carrots, cut into small pieces (about 6 small carrots) Juice of 2 lemons, plus more as needed (about 2 ounces) Zest of 1 lemon 1/2 cup extra-virgin olive oil, plus more for garnishing hummus 2 generous tablespoons tahini (sesame paste), with some of its oil 2 15-ounce cans drained chickpeas, liquid reserved and skins removed 2 cloves garlic, peeled, or to taste 1 teaspoon sea salt, or more to taste

1/4 teaspoon of white pepper or pinch of cayenne pepper 1/2 teaspoon ground cumin 1/2 teaspoon ground turmeric Paprika, a sprinkling for garnish Curly parsley for garnish Pita chips (homemade or store bought) Raw vegetables Preheat oven to 350 degrees F. Coat carrots with oil and season with salt. Place on a sheet pan and roast carrots. Remove from oven when soft and browned in places, about 30 minutes depending on the size of your carrots.

Cut into small pieces and set aside.

Place carrots in a food processor with the lemon juice, lemon zest, tahini and olive oil and process until smooth, about 1 minute.

Put remaining ingredients except the paprika and the parsley in a food processor and begin to process; add a couple of tablespoons of the chickpea liquid and more olive oil as needed to allow the machine to produce a smooth purée. The amount will vary every time you make it based on how much liquid is in the chickpeas.

Taste and adjust the seasoning (I often add more lemon juice).

Serve immediately or chilled in a shallow bowl with pita chips and raw vegetables, drizzled with olive oil and sprinkled with a bit of paprika and some parsley.

Will keep up to five days in refrigerator.

Huhta received a certificate and $500 toward her spring 2017 tuition and fees from the Board of Trustees at their monthly meeting on March 14. Huhta’s essay now will be entered in the statewide competition to possibly earn an additional stipend to be used toward fall 2017 educational expenses.

The Paul Simon Essay Contest takes

Each community college in the state of Illinois is invited to host the essay competition for its students, select the best essay submitted at their school, and forward that essay to the state-level competition. The essays submitted are required to be no more than 500 words on the topic, “How My Community College Changed My Life.”

If her essay is selected as the statewide winner, Huhta will be invited to the annual ICCTA Conference in June.

Huhta crafted her essay, titled “Dear Future Me,” as a letter to her future self and how her experiences at Kish influenced her journey. Essays were juried by members of the Kishwaukee College English department.

those who ate more than four servings of cured meat a week, 22 percent reported increased asthma symptoms. Noting that increased weight also is a factor for worsening asthma symptoms, the researchers adjusted for weight, smoking and educational levels – and still found a correlation between worsening asthma and cured meat.

Oddly enough, two U.S. studies have found that people newly diagnosed with chronic obstructive pulmonary disease were more likely to eat cured meats four to six times a week, but they did not find an increase in asthma risk. The cured meats here also included hot dogs and bacon.

As for why eating cured meat might worsen asthma, theoretically, nitrites can cause oxidative stress within the lungs and lead to more inflammation within the body, which can worsen asthma. While nitrates and nitrites may worsen asthma, I am not certain they create asthma. In addition, these studies did not separate meats cured by nitrites or nitrates and those cured by other means.

The take-home message: Stay away from meats cured with sodium nitrite or potassium nitrate. Not only are cured meats associated with greater obesity and increased asthma, meats cured with nitrites and nitrates increase the risk of cancer. If you don’t have asthma and you don’t smoke cigarettes, cured meats without nitrites and nitrates should be safe, but still, it’s better to limit them.

Dear Doctor: I love ham sandwiches – and have one almost every day. I also have asthma, and just read processed meats can increase the risk of asthma. How can this be?

Dear Reader: Meats have been cured – that is, preserved and flavored – since ancient times, largely through salting or smoking. Potassium nitrate and sodium nitrite salts were used to some degree in the Middle Ages, although the practice was not widespread. In the United States, these salts have been used to cure meat since 1925, and are highly effective in decreasing the incidence of bacterial disease. However, ingested nitrates and nitrites can form nitrosamines, which are carcinogenic.

Now comes a study, published last year in the journal Thorax, concluding that cured meats such as ham increase the risk of asthma. The study enrolled 971 male and female participants from five cities in France. The enrollees, not all of whom had asthma, filled out a 118-item food-frequency questionnaire.

Cured items included ham, sausage and dried sausage. Exposure was categorized as less than one serving a week; one to three servings a week; or greater than four servings a week. Participants reported the severity of their asthma over a 12-month period and scored this from 0 to 5, with 5 being waking up from sleep with an asthma attack.

At the beginning of the study, those who consumed more than four servings of cured meat a week were more likely to be men, were slightly more likely to smoke, were slightly more obese and had slightly lower educational levels. Those who ate more than four servings a week of cured meat also were more likely to be asthmatic and have more severe asthma at the beginning of the study.

After seven years, the participants filled out another survey regarding their level of asthma. Among those who ate less than one serving of cured meat a week, 14 percent reported increased asthma symptoms; among

If you bid ‘em up, you had better read the cards well. This was the third consecutive six-heart contract that my wife and I bid at bridgebase.com last month.

I would have opened one club with my wife’s hand, but after she passed and I bid one heart, her three-spade response showed fourplus hearts, a maximum pass and a singleton or void somewhere. My three no-trump inquired. Then I used Roman Key Card Blackwood to learn that my partner had two aces and the heart queen. (Yes, it is surprising that East stayed silent.)

If West had led its singleton club, I could not have made the contract.

But West chose the spade six. I captured East’s 10 with my king and played a heart to dummy’s jack. East’s diamond-five discard was a blow.

Now I had to lead dummy’s diamond. East won with the queen and shifted to a club. Having no choice, I played my queen. After a diamond ruff and the heart ace-queen, I had to return to my hand to draw West’s last trump. Judging that surely East would have given West a spade ruff if the opening lead had been a singleton, I crossed to my spade queen and easily took the rest of the tricks.

Note that West was waiting to ruff my club ace.

We were the only pair out of 16 in six hearts. There were 14 in four hearts, and the final table’s auction was bizarre. It went pass - pass - one heart - pass - two hearts(!) - three diamonds (not two no-trump, which would have shown at least 5-5 in the minors) - pass - four diamonds - all pass, making five!
