The Governor has lifted restrictions. For Texas, it looks like the official quarantine is at an end. Does that mean everything safe? Of course not. As we get back to life, let’s be safe. Most of us have merely been inconvenienced by the Covid 19 lock down. Most of us know people, however, who have been tremendously ill due to the illness. It isn’t gone.

There is not a vaccine yet. Let’s do get back to life, but let’s still be cautious and keep our families healthy. If fishing isn’t your forte, but you love getting out on the water, Village Creek offers great kayaking and canoeing trips. There are multiple places to launch from, depending on your location. The launch site closest to Lumberton is right off U.S. Highway 96, approximately 2 miles outside of town (all launch sites inside Village Creek State Park have been closed indefinitely due to the damage caused by hurricane Harvey).

If you are a Kountze resident, the closest boat ramp is located 3.2 miles outside of town on Farm to Market road 418. Silsbee residents are blessed with two access points those being TX highway 327 located 3.6 miles outside of Silsbee, or local launch site Baby Galvez, which is right off U.S. Highway 96, as you enter Silsbee. Each site has its own trip that you can take, ranging from trips of 1-2 hours up to 6 or more hours of steady

paddling. A favorite local pastime is going sand bar hopping (commonly known as bar hopping).

Launch your floating device of choice and stop at the numerous large white sand bars. Get out of your boat and eat, swim or lay in the sun. No matter what, you’re guaranteed a great time. So, pack a lunch and get out on the water!

If you want to enjoy the water without having to strain at an oar, merely go to one of the launch sites. Each sight has a great beach and swimming hole. Some of the sand bars even have great rope swings stretching out over the water. Simply pack some food and drinks, drive to one of the boat ramps listed above, park your vehicle and hike down to a good time. None of the hikes are over a mile, so you don’t have to worry

about wearing hiking shoes or carrying a walking stick.

However, if hiking is what you love to do, there are hundreds of miles worth of trails just waiting to be traversed by foot or by bike.

Head down to Village Creek State Park, located off U.S. Highway 69/96 North, or up to Roy E. Larsen Sandyland Sanctuary, which is right off TX highway 327 for a

great time in nature. These nature preserves are perfect for studying and observing nature. In Village Creek State Park, guided tours are provided to further your outdoor knowledge. Village Creek State Park is also popular for geocaching and campgrounds. So, get out there, roast some marshmallows and sing a song around the campfire, and bring out a little bit of your wild side.

If you enjoy being outside in the great outdoors, Village Creek can accommodate you. Nevertheless, don’t let yourself get so caught up in the fun that you forget common safety. Bring sunscreen and water

to avoid coming back looking like a tomato. Also, don’t forget that this is still wild nature preserve, if alligators or snakes are seen just leave them alone. The creek is a moving body of water so for younger, weaker swimmers, life jackets are recommended. NEVER EVER, EVER dive head first into the creek because you never know what’s down there. With these simple safety tips in mind, go have fun. Remember that we are there to enjoy nature, not to destroy it.

Stay on the path and pick up your trash. Thus we will all be able to enjoy the beauty of God’s Creation for years to come.

A Meal Plan for Eating at Home

I have one child finishing the high school soccer season and another one kicking it off with the Beaumont Youth Soccer Club. As you can imagine with our hectic hours and amazing restaurants in Southeast Texas, we do occasionally dine out. However, my goal is to have a something easy and healthy for my family at home most nights 12

Some days, it may seem that a home cooked meal is not worth the effort. You might think, “Why bother?” Here are a few statistics that may change your mind.

tip. Last week, I was able to feed my family, home cooked oven fried chicken with two vegetables and salad for $15. Even better, there were left overs for lunch the next day.

If you need help planning home cooked meals, here are some ideas that have been good for me: Plan According to Your Schedule What is the easiest method and time of the day for you to put your meal plan together? Take a few minutes at the beginning of the week to get a plan. It can be as easy as going through your refrigerator and making a menu or sitting down with the Market Basket or HEB sale paper to make a shopping list. Remember your plan may vary from time to time or season in your life. Do you have some down time on Saturday?

Put together a couple of casseroles your can re-heat later in the week Be Realistic Noticed I did not say, attempt to make meals from scratch seven days a week. Pick the number of days that will work for your schedule and be realistic with what and how you will prepare your meals.

On hectic days, take five minutes to start a crock pot meal in the morning or knock out a ten-minute skillet cooked chicken and vegetable stir fry after work.

With the right motivation and a little preparation, you can save calories, money, and enjoy quality time with your family over a simple meal at home.

Here is one of our Breaux family favorites to get you started.

Oven Fried Chicken (adapted from Calorie King) • 1 cup corn flakes, crushed • 1/3 cup flour • 1 tsp salt • 1/2 tsp ground red pepper • 2 egg whites, slightly beaten • 1/4 cup skim milk • 2 lb boneless, skinless chicken breast, cut into even strips Cooking Directions: Preheat oven to 400ºF. Spray cookie sheet with butter flavored cooking spray.

Mix all dry ingredients in large bowl. Mix egg whites and milk in small bowl. Dip chicken into egg mixture and coat with corn flakes. Place on cookie sheet, and spray with more cooking spray.

Bake in preheated oven for 15 minutes, then flip pieces and spray with more cooking spray.

Continue baking for 10 to 15
