"I appreciate Nyons olive oil because it combines exquisiteness and complexity of flavours: a green apple scent, aromas of dried fruits and a buttery sensation, almost like freshly cut gras... How can a product so basic be so complex? In my cooking, this olive oil reveals the sun, the heat and the "twist" that will lead beyond my dishes. It fits wonderfully with a “poêlée de chanterelles” / apricot / rosemary or alone, in a salad of ground ivy with a good camembert. Moreover, its golden glints are a real invitation to Provence, we can find that warm and friendly nature of the South in this oil. I am always happy to use it in a dish because this olive oil will be present while being discreet; this is its real subtlety!”
