Select three or four chocolates – White Chocolate Orange/Key Lime, Hazelnut Milk Chocolate Truffle, Sea Salt Caramel and Espresso Dark Chocolate Truffle. Depending on your Honey, you may each want a chocolate to yourselves, so two of each chocolate.

Purchase one bottle/can of the following beers – a 12- or 16-ounce beer can be shared. Belgium Wit – Allagash White or Blue Moon; American Amber – New Belgium Fat Tire Ale or Bells Amber Ale; English Brown Ale – Cigar City Maduro or Newcastle Brown Ale; and last but not least, Stout or American Porter – Guinness Stout Irish Draft or Funky Buddha Last Snow Porter.

Here is how they pair up and sample in this order – lightest to darkest – chocolate and beer!

* White Chocolate Orange/ Key Lime Truffle with Allagash White or Blue Moon - citrus flavors in the ale will complement the citrus in the chocolate.

* Hazelnut Milk Chocolate Truffle with New Belgium Fat Tire Amber Ale or Bell’s Amber Ale – the toasty caramel flavors, slightly fruity yeast flavors and slight bitterness will complement the milk chocolate and nut flavor of the truffle.

* Sea Salt Caramel Dark Chocolate Truffle with Cigar City Maduro or Newcastle Brown Ale – the rich caramel and nut flavor of the ale will complement the caramel and dark chocolate of the truffle.

* Espresso Dark Chocolate Truffle –Guinness Stout Irish Draft or Funky Buddha Last Snow Porter – the coffee bitterness and malty roast of these ales will complement the coffee and dark chocolate of the truffle.

Pour the beers, same size glasses if possible and let them warm up a bit – same with the chocolates. A bit of warmth releases more flavors. Each of these beers should complement some flavor in the chocolates. Eat a bite of chocolate, drink a sip of the paired beer and savor. The beer may enhance the flavor or draw out some flavor notes that were not noticed before. Talk with your Honey about the flavors and sensations! You may need to shop around for the chocolates and beer, but your beer and chocolate loving Honey is worth it. Happy Valentine’s Day!

The big game is the time for beer and the TV ads during the game prove the point. What to drink if you want

something different for your guests or to bring to the party?

First think session beer – the game, halftime show and visiting with partygoers, lasts for hours. The beer chosen should be one that is a bit lower in alcohol but not low on taste – a session beer.

The big three Super Bowl party foods are chicken wings, spinach artichoke dip and pizza – quite a range of flavors to match up to. Here are some beers that can cover the flavors of these foods and are session beers. Cigar City Jai Low IPA, Fort Myers Brewing Gateway Gold Blond Ale, and Yuengling Traditional Lager. All of

these beers are lower in alcohol but still big on taste.

These three beers can handle it all. Cigar City Jai Low IPA has more hop bitterness and hop aroma of the three beers – this can match well with the cheese and garlic of the spinach artichoke dip and the mix of ingredients on pizza like pepperoni, cheese, and red sauce and the crust of pizza. Fort Myers Gateway Gold Blond Ale is malty with very low bitterness and hop aroma with a slight fruitiness from the ale yeast. This pairs very well with all these foods – a very good complement to the vegetables in

the dip, toppings for the pizza and the wings! Yuengling Traditional Lager is malty with a slight bitterness from hops. The slight bitterness pairs well with the cheeses in the dip and the pizza and the bitterness can handle the wings. All of these beers provide carbonation, and those bubbles can cleanse and reset your tastebuds between bites.

Cross Creek Restaurant Policy

Dear Members,

To ensure you have a smooth dining experience at the Cross Creek Restaurant with no waiting it is recommended that you make a reservation. A reservation can be easily made by calling the restaurant at (239) 768-1474.

Making your party’s restaurant reservation will ensure a seamless dining experience and that our staff is prepared for you when you arrive.

Walk-ins are welcomed but in season especially you may have to wait until a table opens. Reservations are a must for any Cross Creek events.

Another important policy is that parties over 10 guests will be split up into two or more tables depending on the number of people in the party. For example, 24 people will sit at three tables of eight.

So, please check the Cross Creek restaurant schedule and come out and dance or just enjoy some music while helping support our men and women of our armed forces who have sacrificed so much for our freedom.

It’s because of all of you who come out and generously support us in our ongoing mission that we were able to collect $2,400 in 2024 to add to our overall total of over $13,000.

WYLDEWOOD

Daniels Parkway was a two-lane road when Wyldewood was incorporated in August 1984. Two years later, the first condo unit was purchased from the builder, the US Home Corporation. One of the early owners were Paul and Irma Jones. Paul died this past December, a month following his 101st birthday. He was involved in our community, drove to use our pool, and always had a story to tell about his years as a Naval Officer and flying B22 bombers in WW II. Irma died a few years earlier. Paul was not happy that a hurricane was named Irma, a constant reminder of his loss.

The first event in the New Year at Wyldewood was a fun-filled “Welcome Back” party at the

pool. Food was provided by Two Meat Balls. A game was played called cardboard. Each guest received a playing card with a chance to win a great door prize. Fifty-two cards are attached to a board. When your card is turned up, it reveals a “price-less” prize or groan depending on what was revealed.

The next event is a Super Bowl tailgate party on Sunday, February 9. Volunteers will cook up gourmet fare to be served along with potluck salads and desserts. In response to popular demand, a Super Bowl pool is planned. A few days later, a Valentine extravaganza will be held at the pool. Bring your sweetheart and/or your wife to this romantic event. We are only in mid-season with more events to look forward to. Look for an update next month.

Recipe JAMBALAYA

INGREDIENTS

2 pounds chicken, diced (I use boneless thighs or a combination of breast meat and thighs –anything will do.)

3 tablespoons oil

1 1/2 pounds diced smoked pork sausage (The smaller the pieces, the better the result.)

2 1/2 pounds onions, chopped

1 1/2 bell peppers, chopped

1 cup celery

3 large cloves garlic, chopped

1/8 cup Worcestershire sauce

1 tablespoon hot pepper sauce. (I use Tabasco.)

1 tablespoon seasoned salt

6 cups water

1 1/2 pounds rice

VARIANCES

• Use half seasoned salt and half Tony Chachere’s Creole seasoning.

• Use 5 cups water and 1 cup tomato juice.

• Can use cubed pork instead of chicken.

Jambalaya can be whatever you want it to be. For seafood, use shrimp, but the sausage is important.

PREPARATION

In a very large heavy iron pot, brown sausage in oil. Remove sausage and add diced chicken, cooking until brown. Remove chicken and clean pot of all grease. Add onions, green pepper, celery, garlic, Worcestershire sauce, hot pepper sauce, seasoned salt, cooking until vegetables are tender. Add chicken and sausage. Add water and cook, covered, about 45 to 60 minutes. (Check water level of pot before you start cooking and continue adding water to keep same level.) Add rice and bring to a boil. Lower heat. Stir once and cook at a very low heat for about 20 minutes longer. Remove from heat, stir, and serve. Serves 10 to 12.

The heavy iron pot is an essential element to get the proper Gulf Coast product. In Louisiana these pots are a standard part of the kitchen. They are often passed down through generations and given as wedding presents.

Cross Creek Women’s 18 Golf League

Cross Creek Women’s 18 Golf League started the season January 8th on a cold, grey morning (45 degrees Fahrenheit) and finished in sunshine (58 degrees Fahrenheit). Twenty-two sturdy women bundled up and played the 18 hole scramble; some a bit stiff from the cold and some a bit stiff because of too many layers. One hardy soul wore shorts and declared “I’m from Michigan, this is nothing!” The temperature did not interfere with the fun and fellowship and maybe provided some with an excuse for the occasional errant ball.

Cross Creek Men’s Golf News

MEN’S 18 HOLE LEAGUE

The Cross Creek Men’s 18 Hole League invites new and former members to join and play each in a shotgun format each Friday morning at 8 a.m. The league runs from November through April. There are also a number of events members can play in divisions based upon their handicap: The Match Play Tournament was held in early January.

The next event is a newly named David Lander Memorial Member-Member Tournament, a two-day event starting on February 13. The league board recently announced this event honoring Dave, who was a seven-time winner of the

men’s championship, a past board member, a person who epitomized how golf should be played and a friend to all.

On February 14 the 18 Hole Men’s League will host the annual “Ryder Cup” play against the Del Tura Country Club. The Ryder Cup offers several challenges including best ball, and alternate play in a match play format. Members may join the Cross Creek team through qualifying play.

On March 17 the Men’s Golf Championship starts. Flights are available for all members regardless of their handicap. The winner of the first flight from the No. 2 tees becomes the men’s champion. The twoday play is followed with a

luncheon where winners are announced.

The weekly Friday play rotates between scrambles, best ball of two, three or four. On the first Friday each month the league meets for lunch to discuss their golf games, and talk about league, and golf rules.

If a member of the league gets a hole-in-one, the member is awarded $50. Recently the board announced the start of an additional hole-in-one incentive. Members can contribute $5 to a pot. The next hole-in-one can win all the money in it.

What could be better than opening the mailbox or the front door and finding an unexpected package? Free gifts might seem like fun — but when an unexpected package lands on your doorstep, it may come with a higher cost than you expected.

Scammers are sending people fake “luxury” items like rings, beauty products, and even Bluetooth speakers. This is sometimes called a “brushing scam,” so called because it’s “brushing up” — or increasing — the scammer’s sales. How does it work? Scammers or sellers of knockoff merchandise find your address or other personal information online. They send you goods you

never ordered and use your information to write fake online reviews about their products in your name — which helps them boost sales.

“Who cares if they write a fake review in my name?” you might say. Well, if you got a package you didn’t order, it means someone likely has your personal information — and undoing the potential harm from identity theft could cost you time and money.

If you got an unexpected package you didn’t order:

• Change passwords on all your online shopping accounts in case they were compromised. If the package came from Amazon or another online marketplace, send the platform a message so they can investigate removing the seller.

• Check your credit weekly for free at AnnualCreditReport.com to monitor the information in your credit report and check for signs of identity theft.

• Don’t contact the sender. If you search online for the sender and reach out, anyone who responds will likely try to get more sensitive information from you to try to steal your money.

FEBRUARY ON THE WATER

Waters around Southwest Florida affords us a choice of fishing opportunities as we move towards the close of winter with spring in sight. While some fish are completing their spawning duties, others are just beginning. February will bring us cold days followed with a warming trend. By the later part of the month, cold days should become less numerous, followed by a rise in water temperature.

The winter run of sheepsheads will peak as the larger fish complete their spawning duties. Sheepshead school around structure with a good tidal flow inshore, around the beaches, and nearshore. They are the one fish that thrive in the cold with the best bite often coming over the coldest days. Sheepshead are one of Florida’s tastiest fish and get a good deal of attention from anglers fishing from boat and land. Public docks, piers, and bridges offer excellent sheepshead fishing for shore bound anglers; however, many were damaged or destroyed from recent hurricanes.

Fishing the same areas inshore and along the beaches plus sandy bar and channel edges is the best way to hook a few pompano. They feed off the bottom and love shrimp. While a live shrimp is hard to beat and works great, those that target pompano often throw artificials to cover more ground. Small pompano jigs with white, pink, and yellow, the most common colors have been catching pompano forever. You can really enhance these jigs with a small piece of fresh shrimp.

Hard bodied crazy style jig in various colors have also become a pompano favorite. With these jigstyle baits a moderately slow retrieve with a jigging motion to bounce the bait off the bottom and simulate a fleeing crustacean is the key to success. Pompano are one of Florida’s tastiest fish.

As the month passes, warming waters and the return of schooling baitfish will mark the beginning to some of the largest sea trout of the year. Large trout are locally known as “gators” or “gator trout” and exceed well over twenty inches, often pushing thirty inches. They are moving onto the inshore grass flats, as well as oyster bars, and deeper holes. Sea trout are sight feeders and prefer water with good clarity. These larger fish are often egg laden as we approach their spawning season and should be managed with care and released after a good battle. Sea trout are in season.

The snook bite is determined by the water temperature. If winter cold continues then snook aren’t highly active; if we get a stretch of warm days later in the month, look for them to become aggressive and hungry. Snook are ambush feeders that are found around island points, oyster bars, sand holes near islands, and structures such as dock, bridge, and pier pilings and riprap. If the water is cold, they are seeking sheltered areas like canals and deeper water protected from the wind. Snook season remains closed through February,

While redfish tolerate the cold, their numbers and appetite increase as winter nears its end. They range in size from little guys barely a foot long to well over thirty inches. While snook have fast blazing runs, dramatic leaps from the water, and head for the nearest structure, redfish are in a different category. They fight like a bull, not fast but super strong and don’t know the word quit. They will fight hard from start to finish. Redfish are found in the areas previously mentioned for sheepshead, sea trout, and snook, as well as under mangrove overhangs on the higher stages of tides. Anglers also choose to sight fish reds as they are tailing and pushing a wake as they hunt for prey over the shallow flats. Negative low tides offer the best opportunities, particularly early morning, and late afternoon. Redfish season is open.

In the waters of the Gulf of Mexico, fish are on the move as they follow the rising water temperature north. Often just a few miles off the beach King and Spanish mackerel plus bonito or false albacore are off the coast and often in large schools. Watch for feeding birds to locate the hungry fish. Cobia, a local favorite, which is often mistaken for a shark due to its similar appearance, may show up at any time around your boat offshore or inshore.

Bottom fishing around reefs, ledges, and hard bottom could yield a variety including sheepsheads, various snappers, grouper, permit, and flounder to name a few. Also, keep an eye open for triple tail sunning on their side around floating objects.

The transition from late winter into early spring can offer some of the best fishing the area offers as days get longer and water temperatures rise. Of course, we can expect a couple more cool fronts before months end that will affect the bite and fishing conditions, but spring is just around the corner.

Stay up to date with fishing regulations by visiting the Florida Fish and Wildlife Commission at www. myfwc.com. Also, upload the Fish Rules app on your phone. It has current regulations with pictures to help identify fish. If you turn on your GPS location the Fish Rules app updates to your location. In my opinion, it is more accurate and up to date than FWC’s website.

Did you know you may order food and drinks to be served by the pool? All you have to do is call the restaurant, give them your order and be sure to tell them you are by the pool. 768-1474.

Desserts are made of sugar and spice and everything nice, Appetizers can be anything like the roll of the dice, Entrees can be meaty, veggie and even rice, But please, let’s not have lice or mice.
