GRANDMA’S ECONOMICAL FRUIT TEA LOAF

The Tea Loaf is a traditional English bread, particularly associated with Yorkshire. It features dried fruit soaked in tea and is known for its long shelf life and deep, comforting flavours. The mixture will be firmer than you would imagine and needs to sit before slicing and smearing with butter.

This recipe uses up the left over old banana in the fruit bowl and has very little butter/egg etc so it’s a great option for the budget. It is designed to be buttered and thinly sliced with a good serrated bread knife a day or two after baking.

2/3 cup sugar

1 cup strong tea of your choice

1 cup sultanas

3 Tbsp butter (45g)

1 Tbsp orange zest (optional)

1 tsp baking soda

1 large egg

Pinch of salt

1 mashed banana

½ tsp ground nutmeg

½ tsp mixed spice or cinnamon

2 cups flour

2 tsp baking powder

Boil 1 Tbsp orange zest (optional) the sugar, tea and sultanas for a few minutes so the fruit is plump. Gently simmer for 5 mins and then turn off. Add butter and orange zest if using. Leave overnight if possible otherwise leave till cool. Preheat oven to 180ºC and grease and line a loaf pan. Add next six ingredients and mix well. Finally sift in flour and baking powder and gently combine. Bake at 180ºC for 45-55 mins – test after 45 mins with a skewer.

We placed walnut halves on top of the loaf prior to baking. This is a sturdy number – not to be compared to a soft moist cake – its designed to be buttered then sliced and served.

Chia Seed Breakfast Jar Ingredients

The base:

2 tablespoons chia seeds

½ cup coconut milk (or milk of your choice)

1 teaspoon maple syrup (or sweetener of your choice).

The topping:

⅓ cup Te Atatu Toasted Paleo Blend Muesli

100g drained tinned (in fruit juice) peaches

1 tablespoon passionfruit pulp

Method

1. Place chia seeds, coconut milk and maple syrup in a jar and stir well until fully mixed. I then stir again 10 minutes later to remove any clumping.

2. Blend the peaches and passionfruit together and set aside.

3. Add the muesli to the jar, then place the peaches and passionfruit mix on top.

4 Place overnight in the fridge.

5 Serves 1. Enjoy!

Tips:

Breakfast Jars are great for busy mornings, just make it the night before and remember to grab it from the fridge on the way out the door.

JULIE’S CHOCOLATE CAKE

Australian master chef winner Julie Goodwin gave me this super recipe for the best simple to prepare, but deliciously eatable chocolate cake. It showcases the marriage of super dark chocolate and coffee in this two bowl cake. Everyone who tried it was impressed with the moist richness and yes, it does have a serious amount of dark chocolate and butter in the recipe, so just serve as small sliver and make it last!

11/4 cups milk

250g butter, cubed

2 cups (440g) caster sugar

250g dark cooking chocolate, broken up

1/4 cup (60ml) strong black coffee

1 tsp vanilla extract

1½ cups four

½ cup self-raising flour

1 /3 cup (35g) cocoa powder

3 eggs, lightly beaten

In a medium saucepan combine first 7 ingredients. Stir over medium heat until melted together and smooth. Take off heat to cool. Preheat the oven to 170deg C and grease and line a 26cm cake tin. In a separate bowl sift the dry ingredients and make a well in centre. When chocolate mix cooled pour in and mix, add eggs – stir gently till well combined and the mix will be runny.

Pour into cake tin and bake 11/2 hours – but check after 70 mins – (as ovens vary) you want the cake to be coming away from the sides of the pan and firm to a gently touch in the centre.

Cool in pan for 10 mins and then place on a wire rack and cool completely before icing with a chocolate ganache
