How many events can you do on a weekend? Weekdays? A. Every week is different. During a busy season, we’ve done as many as 26 events in a week, 14 of them being on the weekend. Unlike others, our mixologists look to the kitchen and to the farm for inspiration and innovation when building our cocktails, bringing in seasonal produce and fresh ingredients, and crafting them together to make unforgettable drinks and experiences for your guests. Q. What makes your truck(s) unique from other companies? A. We utilize vintage vehicles from the late 40’s to the early 60’s. All of our trucks have been restored and repurposed specifically to pour beverages. We are unique from other beverage catering companies because we utilize these old rigs to operate as a mobile bar! The only other companies that do that are the vintage trailer rigs. We are the complete package of pulling up to your event, a quick pop up of a classic wood bar to go in front of the faucets, tap the kegs,

then away we pour! It only takes us about 15 minutes to set up and 15 minutes to take down. This convenience and unique style of running events has put us high among top mobile bars in San Diego. Who doesn’t love an old panel truck pouring up a fresh brewed IPA. Q. Do you have to get specific licensing to be able to operate a beverage truck like yours? I have heard there are some out there that aren’t getting the correct licensing that can ruin it for everyone? A. Yes, we are licensed to provide alcohol for our events and we are insured! There are many beverage catering companies that operate without a license. Word to the wise is to always visit the alcohol and beverage control website and search for the desired beverage catering company you would like to use for an event. If they are licensed, it will show you what license they possess. If they are not and you choose to use them for an event, you as

the host are liable and not the hired beverage catering service! Q. What do people say or comment hen they see your trucks at events? A. People are always ecstatic to see our Tap Trucks. Some have a nostalgic feeling when they see them, reminiscing when these vehicles once ruled the road; and others are just stoked to get a beer out of the truck. Q. 3. Do you own all of your own equipment: kitchen equipment, china, flatware, glassware, linen? Sometimes this can make a difference in pricing especially with linens when rentals are part of the package it may seem a little higher but also consider the caterer knows what is needed for equipment. 4. How can we ensure that what we experience at our tasting with you, will be the same quality for a large group at our wedding? This is hard to get a straight answer on, but caterer coordinators generally will take notes of what you really liked and items that you may have wanted altered. 5. Do You prepare and cook your menu items “on-site”? Often a combination of hot boxes and grilling and prep on

Q. How and why did you get into the chocolate business? A. Ten years ago, my mother Nancy introduced me to the world of chocolate. I felt absolutely driven to express my creativity through chocolate. Q. What makes your chocolate unique? A. I have a degree in Fashion Design and was a clothing designer for fifteen years. I design chocolate like you would design a line of clothing. I choose colors, prints, packaging, flavor profiles, etc. for each season, holiday and event. It is equally important to me that the chocolate tastes and wonderful as it looks. We work with each couples theme and colors to create a cohesive look. Q. We would love to share your ideas with our readers for ways we can incorporate chocolate as part of the entertainment? A. We have developed customized chocolate pairing stations as a unique experience to offer guests. The most popular pairings are chocolate and wine/ port, but we also

pair with whiskey, scotch, beer and coffee. The stations are selfcontained and require no staff. We create signage for each station to explain each pairing and tasting techniques. Who would likely do a Chocolate and Wine/ Port/ Spirit Pairings? A. Couples who are “foodies” and want to present something that is unique to their guests. Husbands who are passionate about beer or scotch. Couples who are wine collectors and have certain wines they want to highlight. Q. What kind of budgeting is needed to do this at your wedding or event? I am sure there is a range, but we want to give them good informative information! A. Of course, number of guests play a part here and we recommend 3-6 stations. Creating our own scenario, a

chocolate and wine pairing for 100 guests is our example. 5 stations @70 pcs of chocolate each station for a total of 350 pcs. Total cost of chocolate$700.00 ($2.00/ unit). We do have a minimum of 3 stations and a minimum of 30 pieces of chocolate per station. We will help you choose paired wines to purchase and recommend providing shot glasses for the pairing itself. In our scenario, 4-5 bottles of wine per station are needed for a total of 20- 25 bottles. Wine costs depends on what is chosen.

Another popular icing for wedding cakes is fondant, which is rolled out flat then draped over the cake to provide a completely smooth, firm surface for decorating. Linda and Henry tell SDSW about their wedding 50 years ago and what it takes to be happy together for 50 years. Q. When & where did you meet? Henry: We met at Golden Hill Park, I believe in 1963. We didn’t officially meet but was introduced by her boyfriend at the time. Linda: We met at Golden Hill Park in 1963. My friends and a bunch of his friends got together. Q. Was it love at first site? Henry: No. I didn’t think much of her at the time and I thought that she thought she was hot stuff. Linda: No, but I thought he was the cutest thing around!

Q. Was there a defining moment that you knew this was the one? Henry: Not really. Linda: I was just flabbergasted with his looks. I thought he was a hunk. Q. How long did you date before you got engaged? And how long were you engaged? Henry: We spent a lot of time together, but, I don’t think we were ever really engaged. That was something I couldn’t afford. Linda: We were never engaged. When he went to Viet Nam, he gave me a promise ring. I still wear it.

Q. Tell us about your wedding. Did you have a traditional church wedding? Did the father of the bride pay for the wedding? By any chance, do you remember the approximate cost of your wedding? Was it a big wedding? And anything else you can think of… Henry: Our wedding didn’t really work out great but we tried. Linda and I ended up doing most of everything. Her mother was taking over the whole wedding, being too controlling so we took over. I remember having to deal with a hotel for the first time in my life. We had a dinner reception at the Filipino American Hall. Her dad belonged to the association so I believe he took care of that. We got somebody to cater a modest meal. A friend of Linda’s dad provided the cake. We made every effort to have a traditional wedding because Linda’s mom wouldn’t have it any other way. We went in totally blind. We had our dance reception at El Cortez. We didn’t know anything and couldn’t afford to have a professional do it. Linda: We had a traditional wedding. We were married at Our Lady of Angels in San Diego. My Dad organized the Filipino Hall and cake. I don’t


remember the cost, but it was big. Everything went pretty smooth that day, except my mom crying every time she saw me…jeez. We had our dance reception at El Cortez. My cousin Raymond jumped in the pool, tux ’n all. It was funny. Oh, we forgot the pins for the dollar dance…I held a bunch of money in my hand. We spent our first night at Henry’s house. We woke up in the same clothes we got married in - hungover…LOL! Q. Is there anything you wish you knew or someone would have told you BEFORE you got married? Henry: Absolutely!! I was young and foolish and didn’t think too much about life. I didn’t have the social life most kids think of and talk about. I spent too much time with friends roaming the neighborhood and accomplishing nothing. We had to entertain ourselves and pass the time doing no good. I needed to learn and get educated. I just didn’t know it at the time. Living the dream and family values were, for me, beyond reach. You can only learn so much hanging out with friends. Family values is not something that you are born with and is certainly not something you learn about hanging out with friends. Q. What has been the most difficult and the easiest elements of being married? Henry: I believe the most difficult element of being married is earning trust, especially by those closest to you. If you have trust you will also have faith and confidence. Linda: The most difficult has

been arguing about something then not communicating for days. The easiest is having a sense of humor. That always helps, especially now. Q. How do you resolve conflict? Henry: These days we talk about it. Effective communication is critical and essential in discussing any and all conflict. Linda: Talk it out, communicating. Especially when you’ve cooled off. Q. Is there anything (relationship wise) that you would change or do differently? Linda: Nope…not now. We just communicate…it’s easier that way. Q. What's the secret to your marriage? Henry: Don’t take life too serious. Consider your options. Linda: A sense of humor and communicating. Q. What advice would you give to young couples getting married today? Henry: First and foremost, do not get married young. And if you do get married young, do not have children right away. You need time to grow up, mature and become educated. When you’re young you think you are mature and very capable of succeeding in today’s society but in reality you are not. Not even close. You need to grow up, mature, live a little and learn. Beneath the 110 year old fig tree in their family's backyard is where Jennifer & Michael chose to have their ceremony because it holds a special place in their hearts and provided a beautiful backdrop. They incorporated their love of travel with the use of world maps, the places they've traveled together for table names and old suitcases for cards. They had to create a seating chart with the help of their wedding party the night before the wedding using a world map after the one they ordered never arrived. The chart turned out even better than planned and they had a great time together creating it.

About the Venue At Bernardo Winery guests are surrounded by beautiful landscape, a vintage pavilion and gazebo and all shaded by decades-old olive trees. With three different venue options, couples have several charming backdrops to chose from. Rosario’s Pavilion for the larger up to 240 guests with a nicely state of the art turfed grass makes for a lush backdrop for your photos. MARRIAGE LICENSE GENERAL INFORMATION In addition to obtaining your marriage license at any of the branches, you may also have a Deputy Marriage Commissioner perform a civil ceremony for you for a fee of $88. (This is in addition to your marriage license fee). This service is by appointment only and no walk-ins are allowed. You must also provide your own witness.

DOCUMENTS AND FEES In addition to completing the application, you must also show a valid photo identification card or passport. The document must show your date of birth and your full legal name (no abbreviations or initials). A copy of your birth certificate is also handy to take along, but is not required. Marriage license fees for San Diego County vary on the type of marriage license. TYPE OF LICENSE Non-Confidential: You may be married anywhere in the State of California. A witness is required and the marriage becomes public record (Cost $70 San Diego/ $90 Temecula Fees subject to change.) Confidential: You must marry in the county where the license is issued. No witness is required. Only the bride and groom may obtain a certified copy of the license ($89/$100 Fees may be subject to change.) TIME FRAME The license is valid immediately upon issuance and remains valid within the State of California for a period of 90 days. You may apply for your license at any time. However, you may want to avoid waiting until the last minute and obtain the license about a month in advance. WHAT ABOUT PRIOR MARRIAGES? You no longer have to provide proof of divorce but it falls on the burden of the person involved. For divorced persons, the divorce decree must be final prior to the application for a marriage license. AGE REQUIREMENTS Both male and female applicants must be 18 years of age in order to apply for a marriage license. For anyone under 18, there are additional requirements that must be met, and you should contact your nearest County Clerk’s office for additional information. FILING YOUR LICENSE The officiant or minister performing the ceremony is responsible for filing the document with the Recorder/County Clerk’s office within 10 days of the ceremony. Certified copies of the license are available approximately 2 weeks after the filing, and may be obtained at the Recorder/County Clerk’s office for a nominal fee ($15). Brides may need to obtain a few copies of the license in order to facilitate name changes with government agencies, banks, etc.

Julie and Rob had always dreamed of having the cliff-side experience for their wedding, so they chose Sunset Cliffs for their ceremony location. Fortunately, despite threats of inclimate weather, they were overjoyed that it was mid 70s with a slight ocean breeze the day of the wedding. They even had a flock of pelicans fly over just as the ceremony music began! After a fun and memorable reception at Tom Ham’s Lighthouse, they topped off the evening by treating their guests to a late night taco truck that was a huge hit.

The bride has been in love with birds all her life and has a small collection of antique birdcages and ceramic birds. She wanted their wedding to incorporate her collection, starting with birdcages as the centerpieces for all guest tables overflowing with flowers and lace. If one was to look closely they would see birds inside cages, on tables, designed on cookies, and incorporated into display items. They were able to keep it simple and elegant highlighted with colors of dusty blue, sage green, dusky pink, and peach.

The engagement sessions allows them to become comfortable with not only us, but with our big cameras as well, resulting in more relaxed and genuine portraits on the wedding day. Q. While she was doing her last show she traveled to Tokyo with the Billy Joel show and met Bruce. They walked by each other on a crowded subway and didn't say anything just smiled. Then 3 days later we saw each other in a store on the other side of Tokyo. We got married a year later now have 2 amazing girls.

THE WEDDING DAY GOES FAST BUT THE MEMORIES, AS WELL AS PHOTOS AND VIDEOS, REMAIN. While couples typically make photography a priority, often they can’t afford videography too. But now there’s an affordable, high quality solution – cinephotography. That’s where a videographer shoots video with a 4k camera (4000 pixels of resolution creating a more detailed, high definition picture that’s four times higher than standard high definition) and the video is so good that the editor can grab high resolution still images in post-production. Those crisp shots can be used to make prints, albums and of course, be shared on social media.

A NEW WAY Generationally, there are different wedding photo wants and needs. Parents and grandparents tend to want prints and albums, while couples and their peers value video. Traditionally couples hire a photographer to shoot still pictures and a videographer to capture the live action of the wedding day. But doing both can be pricey for couples and it means there are more people working the event, including multiple photographers and videographers. But that’s changing with cinephotography, which is relatively new to San Diego, and almost unheard of in the rest of the country. Dillan Stockham, owner and leader videographer for Stockham Wedding Cinephotography was the first San Diego photographer to make shooting 4k a standard in weddings.

“We spent a lot of time on cinephoto to deliver quality you can expect in photo and video,” says Brandon Wilcox, operations manager for Stockham Media.

NOT JUST A TREND The demand for wedding cinephotography is growing. Wilcox says the company’s bookings are increasing, thanks to good reviews and word of mouth. The first cinephoto wedding they shot was a success and they knew they could continue to offer the photo and video style. “We delivered a pretty epic album of 400 pictures and the couple loved it,” says Wilcox, who predicts this way of shooting will revolutionize the way couples capture their wedding imagery.

cinephotographers know to shoot some images exclusively as still photos. “We’ll take snaps of anything the couple might want to blow up,” says Wilcox, who explains they shoot detail shots including the wedding dress, rings and flowers. They shoot portraits as still photos too, so couples and their families can have more traditional portraiture. A lot of video (and therefore stills) are shot across an entire day of wedding festivities. “We have millions of opportunities to find a really good picture,” says Wilcox, noting in the editing process, editors sort through the raw video footage looking for ideal images. “Video shoots 24 frames per second and that’s 24 opportunities for photos,” says Wilcox. Not every frame of video is worthy to be used as a still photo. But there are many

suitable images to choose from in a scene. For example, looking at cake cutting, there are lots of moments to consider, one frame at a time.

FUTURE OUTLOOK Cinephoto streamlines the workflow at the event at well. Instead of having five or six people – photographers and videographers – shadowing the couple, there are three cinephotographers working together to get all the angles. “You can have epic videos and photos from high quality photographers for the same price as just one of them, if you hired them individually,” says Wilcox. Cameras continue to get even better. The idea of shooting video that also produces quality photos is going to gain momentum. Couples will benefit from having the best of both photo and video.

The concept of cinephotography has strengthened over the past decade. Videographers shooting nature, sports and fashion found themselves shooting video and wanting a few images at the same time. The new high quality 4k cameras made it easy for videographers to review the footage, pull out some of their favorite moments and save them as highresolution photos.
