ORECCHIETTE ALLE CIME DI RAPA Orecchiette with broccoli rabe
Ingredients 300 g. orecchiette 1 Kg. broccoli rabe 4 fillets of anchovies in oil 4-5 spoons of olive oil Garlic Salt Crumb
Method
1. Wash the broccoli rabe removing the tough leaves.
2. Boil the water and plunge the broccoli rabe. Cover the saucepan.
3. When the water gets boiling again, plunge the “orecchiette� and cook them.

Fry lightly the oil with 2 or 3 cloves of peeled garlic and the anchovies in oil.
5. Grate some stale bread and put the crumbs into the oven for a few minutes.

Strain the pasta and the broccoli rabe. Put into a saucepan and add the sautĂŠed anchovies. Season with the crumbled bread.
7. Mix and serve.
