The ‘work’ in life, as in painting, is about the experience of the immediate moment, whether it’s painting or having a conversation. Trusting that it’s all in there—memories, loss, love, hope—learning and discovering from each experience what more painting can be, who you are and where to go next.

In 1982, I interned with George McNeil, a New York School painter, who was 80 years of age at the time and warned me of the dangers of being a painter. To make ‘Art’ a real thing in your life, you must learn to be in the moment of each experience, whether physical, mental, emotional or otherworldly. When the logos are brought to bear, when you are alone in the studio and you have done your homework (lived your life), it is both terrifying and exhilarating. Making art in many ways is like making your children—you may have little or nothing to do with it, but you still have to take the credit or the blame. Conception is out of your hands. But oh how glorious it is to ‘see’ your child being born and grow before your eyes. As Matisse said, not he but the postman had painted “The Pink Onions.”

Artist Statement In my studio after letting go of the many phases and parts of the histories of my personal life, and those of the painters, poets, musicians, filmmakers with whom I share kindred spirits, I approach the space in which I am to work with awe, with no recollection of aforementioned musings. This is so that I might learn with a beginner’s mind...childlike... free.

To me, painting is a child’s game that is to be played as if it is always the greatest adventure. Each time you begin again and invent anew.

I believe there is a semi-adult part to all of this, aside from putting pen to paper. It is a part where the metaphysical nature of the process requires one to take, seize, and transfer from the objective or the subjective worlds, or both, to work through until they begin to mesh within the picture plane. Then your inner child is beckoned to obliterate the conscious linear thoughts and memories so you can get to something that is real and alive in the anomalous endeavor we call painting. It is something that lives despite your short comings. When it doesn’t come to you, wait and see… the truths and the tricks are there to discover before you turn back into an adult.

Turkey Marsala Recipe by Chris Xaver

Serves 6

My crew voted this their favorite recipe of my first season. In fact, we shot this episode on a chilly October evening. Even though they could see their breath, two of my crew members stayed out on the deck to finish every last bite. (If you drop your fork & step away from your plate during a shot, chances are there won’t be anything left when you return). To me…that was the best compliment of all. I bet your family and friends will feel the same way.

6 turkey cutlets (3 oz each) 1/3 c all-purpose flour 1.5 t salt 3/4 t fresh ground pepper 3/4 t poultry seasoning Olive oil 10 shallots, thinly sliced 8 c mushrooms, thinly sliced 1 c broth (chicken, turkey, or veggie) 3/4 c Marsala wine (not cooking wine) Cutlets come first: Start by mixing together flour, salt, pepper & poultry seasoning in a small bowl. Dredge cutlets in flour mixture. Coat the bottom of a frying pan with olive oil & bring to medium heat. Cook cutlets in pan, about 2 minutes per side. Remove turkey from pan & cover with foil to keep warm.

Add shallots and mushrooms to the same pan and sauté until soft. Increase heat to medium-high & add Marsala and broth.

Bring to a boil. Cook until slightly thickened, about 1-2 minutes Reduce heat to medium-low & return turkey cutlets to the pan. Warm about 1-2 minutes on each side or until meat is heated through.

Cortland Chamber On The Move The Customer Service Difference

We

all know the importance of taking care of our customers, right?

Not so fast! Every day I hear stories about the exceptional—and less than exceptional—customer service provided by local and national businesses.

Customers have shared a variety of experiences, including making calls to competing businesses for the same service or product and getting very different attitudes. All else being equal, those with the exceptional customer service won the customers’ business.

Shouldn’t that be you?

Let’s get specific. Coffee Mania, a local company owned by Craig and Michelle Brooks, has been serving great coffee and complementary items in the Cortland area since 1999. Coffee Mania won the Chamber of the Year Award for small business in 2011.

We did some research on their business and found 100% positive stories about their customer service. One gentleman shared, “You

think I go there for the coffee? The coffee’s great but I can get good coffee elsewhere.

I go there for the smiling faces I always see with my coffee.” Again, don’t you want your customers saying that about you?

J.B. Smith Propane, Heating & Air Conditioning is another Cortland Chamber member with exemplary customer service. How do they excel? One customer said, “When I call they always seem as though they know me, and I haven’t met any of them in the office. When I need them, they’re there. They care about me, answer my questions, and solve problems in a reasonable, practical way.” What better review could a service company want?

My next question is: how can we learn from this and improve our customer service? On November 18th, the Cortland Chamber will host an educational seminar on customer service where we’ll address just that. We’ll have a speaker kick off the program, then we’ll share our experiences and ideas. Just as a tease, Coffee Mania and J.B. Smith have both agreed to join us for the discussion. The goal of the seminar is to help our members provide customers with the best service possible and get the same kind of rave reviews about their customer service.

Located at 11 Groton Ave. in Cortland, The Blue Burrito specializes in offering locally sourced, high quality premium burritos and barbeque beef sandwiches served on Kummelwick rolls baked daily on the premises. They also offer vegetarian meals including beans, rice and fresh-made organic salads.

Ann and her son Blake own and operate the Blue Burrito, cooking and preparing all of the food in house.

“We are trying to offer the Cadillac of Burritos here,” says Blake. “It’s a premium burrito with local all natural beef, Mexican rice, sherried black beans and cheddar cheese rolled together with our spicy salsa, topped with more cheese and salsa and baked to perfection.”

“When we’ve just finished cooking up some of our beef or pork, salsas, or other items, customers remark on how good it smells, and how good it tastes after having some,” says Ann. “We use local grass fed beef, local sourced lettuce, and as many other locally grown products as we can, and I think

Other recently added and popular items include the “Ghost Pepper Pork Premium Burrito,” which has a growing fan base, and hand-made specialty hot sauces and unique salsas with freshly cut peppers and cheese sauces using real melted cheese. The Blue Burrito offers mild to extreme salsas and sauces, using fresh jalapeno, habanero and ghost peppers. The hot sauces have been very popular with customers, who ask if they can buy bottles to take home. The Blue Burrito plans to offer its own line of bottled sauces for sale in the near future.

For dessert, The Blue Burrito offers the very popular chocolate stuffed brownies, which quickly sell out after they are made. A text alert is offered to let customers know when they come out of the oven (email Brownie@blue-burrito.com.)

Spotlight on Art: Thoughts and Questions Fine art or not art?

Is that a real question? I recently purchased a new comforter set, which included everything you could ever imagine putting on or around a bed: comforter, pillow shams, Euro shams, bed skirt, and throw pillows. I chose a set that incorporated autumn colors: rust, beige, and brown. In that my old comforter was rust and beige, I assumed that all of the art currently hanging in my bedroom would fit in seamlessly with the new set. Yet, after arranging everything, I realized that the art on my walls definitely appeared “off.”

It wasn’t a color issue; it was the overall feel

of the flow that felt disjointed. Introducing a more repetitive pattern ended up clashing with everything around it. I started to envision new paintings that would better balance the room, and then I wondered... if I paint in order to match the decor (or furniture, or curtains...or anything else for that matter), is it still art? Or is it interior design?

And, are they mutually exclusive? Is one better than the other or in any way more “real” than the other?

That led me to thinking about the purpose of art. If you own a gallery, the purpose is very near and dear to your livelihood. If you’re an interior decorator, the purpose is to complement the overall room aesthetic and contribute to harmonious space. If you’re an artist, the purpose could be to release energy that would otherwise stay bottled up until (in slightly scientific terms), the lack of an outlet leads to a chemical reaction resulting

in some type of behavioral explosion (which definitely happens to me...just ask my family!)

I pose these questions not because there is any definitive answer. Like so many other things in life, it’s all a matter of interpretation. I’ve always believed that mathematics is the only thing that leads to one answer.

Everything else falls into different shades of grey, depending on perspective and other personal factors.

Whether in a gallery, museum, or somewhere in your home, art is still art. Where you see it does not automatically define the strength or importance of the visual experience...art speaks from anywhere and everywhere.

The wait certainly was worth it after a nearly two-year renovation of the Dowd Fine Arts Center Theatre.

“It’s all ready to go, brand spanking new,” Halpin said. “We had several concerts at the end of the semester and the acoustics were absolutely wonderful. Voices were clear, diction was right on, the voices rich.”

There’s also a more contemporary lighting system, which will enhance the set illumination, and a new seating arrangement. Long, single row “continental” style aisles have been replaced by three seating sections and four aisles, creating a more accessible layout for audience members.

Why to attend: The performances celebrate the grand reopening of a 440-seat renovated theater. “Brigadoon” was the very first play performed in Dowd Fine Arts Center when it opened in 1967.

Question: My weeks are extremely busy and it’s tough enough to find time to exercise. Now, I’m learning that I need to strength train in addition to my cardio. I don’t always have time to do this separately. Is there a way to mix cardio into my strength training routine to maximize my exercise time?

Answer: The easiest way to mix cardio and

Answer: If you feel that you are performing

these weight-bearing exercises correctly, and you have no previous injuries, the pain you are feeling in your wrists could be due to lack of mobility and stability in your wrists. Wrist circles are an easy, yet effective exercise drill you can do to help improve the suppleness of your wrists. Sit or stand in an upright position, with your upper arms close to the body. Bend your elbows until your forearms are parallel to the floor and hold your hands palms down with a loose fist. Circle your wrists clockwise five times, and then circle your wrists five times counterclockwise. Do this drill 2-3 times as a part of your warm up routine prior to beginning your weight-bearing exercises.

strength is to alternate the two disciplines in short segments. Perform two strength exercises and immediately get on your favorite cardio machine for 3-5 minutes. You can also shorten up the time spent between your strength exercises and move quickly to the next exercise to keep your heart rate elevate. This will provide a cardio challenge without having to find additional time to jump on cardio equipment. Keep track of your current rest between sets and slowly begin to decrease the rest time to 30 seconds.

Question: I’ve been walking on the treadmill

for several months and feel that I am ready to challenge myself by adding the incline feature to my current program. How much incline should I start off with?

Answer: The incline feature on a treadmill is intended to mimic uphill climbing. The best news is that you do not have to walk quickly to reap the benefits of walking on an incline.

Maintaining a slow to moderate steady pace, over time, will allow you to maintain the incline level for longer periods of time. Most treadmills

allow for a minimum grade of .5% all the way up to 10-12%. Begin walking at your normal pace and start increasing the incline from .5% to 3% for 1-2 minutes, then decrease the incline back to 0%. Alternating incline and flat surface walking every couple of minutes is a great way to slowly introduce uphill climbing to your workout. Treadmills also frequently come with a built-in hill climbing automatic program, in which the treadmill will increase or decrease the incline level to mimic walking or running up and down hills outdoors. Even though the incline will change automatically, you will still have the ability to increase or decrease this feature, along with the speed, to keep the program within a comfortable yet challenging pace.

Start off slowly as walking on inclines does shift your gait and require the front part of the lower leg to take on some extra work while stretching the back side of the lower leg. You’ll need to work up to longer or steeper inclines just like with any other workout you do!

Bailey Place Insurance recently opened its

second office in Tompkins County, located on Triphammer Road in Ithaca. Steve Franco, President of Bailey Place, described the new office as being more modern with an open floor plan. “Our other offices in Cortland and Dryden have a very traditional feel to them, but we really wanted to do something different here.”

The agency has had a presence in Tompkins County since 1936 when George B. Bailey opened up the Bailey Agency out of his garage on Library Street in Dryden. “The decision to open the office in Ithaca was made to better serve our existing clients, as well as to expand our reach into Tompkins County,” said Franco.

The agency purchased the Triphammer Road building in June and spent approximately three months renovating it. “The building was in rough shape but we loved the loca-

tion and saw its potential,” said Franco. A number of area contractors were involved in the project, including Roy Phelps, Goddard Roofing, Ernz Painting Co., and K & B Plumbing. Mollie Riley Designs of Homer did the interior design and decorating.

“Here’s a Caesar Salad recipe without the risk of a raw egg! Perfect to compliment any meal.”

Ingredients: 1 head of romaine lettuce, rinsed 2 large garlic cloves, peeled and pressed 4 anchovies, chopped 1 1/2 tablespoons fresh lemon juice 1 tablespoon Worcestershire sauce 1 1/2 teaspoons Dijon mustard 3 tablespoons olive oil 1 tablespoon wine vinegar 2 tablespoons grated Parmesan cheese Croutons Salt & pepper

Directions: In a large wooden salad bowl, sprinkle some salt and add garlic, anchovies and grating of pepper. Work mixture to a paste.

Add lemon juice, Worcestershire sauce and Dijon mustard; mix well.

Mixing vigorously, add oil and vinegar. Tear lettuce in 2 inch lengths into salad bowl. Add some croutons and cheese. Toss the salad well.

Serve at once. Serves 4.
