Guest chef at PRC Faye Weatherburn, a former student at Peterborough Regional College, is the latest chef on a list of Guest Chef Evenings held at the Park Crescent Campus. Faye studied for her VRQ Level 1 and 2 in Professional Cookery between 2009 and 2011, and then went on to complete a Diploma Level 3 Chef and Restaurant qualification at the University of West London, which allowed her to specialise in pastry. She returned to the College recently to talk to current students and visitors about her experiences since leaving the College and why studying at PRC inspired her to become a pastry chef, including the nine weeks work experience she received at Sally

Ann’s Cakes in Somerset during her studies. During her time at the University of West London she had two weeks’ work experience in the kitchen at Buckingham Palace and spent two years working as a pastry chef at the five star Le Méridien Hotel, Piccadilly, London Since March 2014 she has been working at the prestigious Ritz Hotel in central London.

RECIPE Cod in

tomato sauce

This simple dish makes a perfect supper with the tomato sauce packing a Mediterranean flavour

Method

● 1 small onion, finely chopped ● 1 clove garlic, finely chopped ● olive oil ● 200ml tomato passata ● 400g can chopped tomato ● 1 mild fresh red chilli, finely chopped ● 4 x cod steaks ● salt and black pepper ● 200g ready-prepared potato gnocchi ● lemon juice

1. To make the tomato sauce – gently fry the onions and garlic in a few tablespoons of olive oil for about 20 minutes until lightly golden and melted. 2. Add the passata, tomato and chilli, and continue to cook until the sauce has thickened leaving a rich sauce. 3. In a separate hot pan, place the slightly oiled cod fillets to seal the flesh. Once both sides of the fillets have been sealed gently add them to the tomato sauce making sure each piece is completely submerged. 4. Cook the gnocchi in plenty of boiling salted water until they float to the surface. Drain them and serve into bowls. 5. Gently lift out the cod and place on top of the gnocchi with plenty of sauce.

Slice hot cooked chicken, place on the gnocchi and spoon over the sauce ● Add in chunky cut vegetables like peppers, courgettes, mushrooms, baby corn or even olives to boost your five-a-day ● Swap out the gnocchi for pasta to make this meal more of an everyday dish using cupboard ingredients

A

fter a summer of barbecues, ice creams, and general overindulgence, I thought it would be great to share my tips on staying motivated and getting back on track to a healthy lifestyle. These are eight simple tips I live by when I feel my work schedule getting a bit busier, or I’m lacking that motivation I need.

1. Keep organised Meal prepping is the best way of making sure you don’t reach for unhealthier options at every chance. If you don’t have time to prep all of your meals, make it a priority to prepare in bulk things like rice, quinoa or sweet potatoes to save you time in the future. Another option is to double up on foods when cooking your lunches or dinners to avoid cooking an entire meal three times a day.

2. Set realistic goals Writing everything down as a list ensures your goals are clearly set out in your head. You can even put down the smallest things so you feel productive when you cross them off.

3. Keep exercises simple A 20-minute HIIT (high intensity interval training) workout is perfect for those of you with busy schedules. I like to do 30 seconds of flat out sprinting followed by a 30 second break. This really gets your heart racing and it burns fat fast.

4. Drink at least two litres of water a day This isn’t only important when you’re exercising, but it also keeps your metabolism running Telephone 01778 382762 | September 2015

5. Make time for yourself

Lucy Bee reveals her tips to keep motivated after a summer of indulgence

Part of the reason many people struggle with maintaining an exercise routine or healthy eating is because they think they have to sacrifice other enjoyments to make time for it. Make a note on your daily list to have some downtime. It will make your healthy living become cemented as a lifestyle rather than a short-lived pursuit.

6. Look for inspiration I love Instagram and blogs for recipe inspiration. If you’re having a creative block on dishes, it helps to spark ideas.

7. Invest a small amount of time in cooking If you enjoy cooking already, then it sometimes makes healthy eating a much easier process. However, if you’re not so fond of it, add to your list a small amount of time dedicated to preparing meals in advance.

8. Balance is key You don’t want to feel like you’re depriving yourself. So, I recommend trying to fit in some greens at every meal and focus on getting the good stuff in first. Then, if you are still hungry, you can enjoy your treats. I’ve found the good stuff will eventually replace the bad stuff in your life. Why not try some of these ideas and see how you get on!

Leading the

The Shepherds Hut is a new eating experience for Whittlesey. It is joined to The Ram Inn, which has been in this ancient Fenland market town since 1854, and this is the first time there has been a dedicated restaurant as part of it’s offering. Located in central Whittlesey, the restaurant and pub boast one of the biggest – if not the biggest beer gardens in the town. Speaking to owner Pete SteadDavis, I quickly learnt that the restaurant was swiftly altered. “We originally viewed the building in November 2014, and have worked hard over the last

The Shepherds Hut is a family run restaurant in Whittlesey, which opened in July, and we sent Alice Brazier to investigate eight months to transform it.” The restaurant is spacious, and has a chilled atmosphere and shabby-chic decor, and there are definitely more development opportunities on the cards. “We’re looking to add some play equipment for the beer garden, and possibly expand the restaurant with a conservatory.” The food on offer at The Shepherds Hut

can be described as ‘good, honest pub food, with a twist’, and the Sunday menu definitely doesn’t disappoint. I was joined in the restaurant by several couples and young families, enjoying a threecourse roast dinner, perfect on a lazy Sunday afternoon. The kitchen is run by Pete’s son Ben – having previously worked at several prestigious hotels across Peterborough – and the dishes were outstanding. It’s fabulous to witness a new restaurant spring up outside of the main city, and with such great quality too. The décor really modernises the building, and the huge beer garden is just calling out for beautiful late summer days this September. Chilli peppers are anything but chilly – these little fruity pods pack a spicy punch

T

he chilli plant is native to Central American regions where it has been the main spice ingredients in Mexican cuisine for centuries. It was introduced to the rest of the world by Spanish and Portuguese explorers during the 16th and 17th centuries. The chilli is a fruit pod from the plant belonging to the nightshade family. The hotness of chilli is measured in Scoville heat units (SHU). On the Scoville scale, a sweet bell pepper scores 0, a jalapeño pepper around 2,500-4,000 SHU, and a Mexican habañeros about 200,000 to 500,000 SHU. The fiery hotness of the pod comes from an active component of chillies – capsaicin. It is an irritant for mammals, including humans, and produces a sensation of burning in any tissue with which it comes into contact. However, capsaicin has anti-bacterial, anti-carcinogenic, analgesic and anti-diabetic properties. It also found to reduce LDL cholesterol levels. In fact, chilli peppers contain an impressive list of plant-derived chemical compounds that are known to have disease preventing and health promoting properties and both red and green chillies are rich source of vitamins and minerals.

to Ferry Meadows

Wyndham Thomas, the key creator of Ferry Meadows Country Park is returning after 37 years to formally open its improved Wildlife Garden. The garden, which forms part of the Visitor Centre, is a ‘park in miniature’. Offering shelter from the winds that whistle across the lake and meadows but representing the variety of habitats in the wider Nene Park, it contains a small pond, meadow areas and trees. Wyndham says that when he arrived in Peterborough: “The land in what’s now known as Nene Park was bleak and often flooded, while the city had few public open spaces. So my idea was to develop the floodland for recreation, but I didn’t have a

detailed picture in my mind or the certainty that it would appeal to people on a regional scale. So to see it now, nearly 40 years later, with such good facilities and so many visitors from a wide area is hugely gratifying.”

Of the classes I reviewed, I was most nervous about Darren’s class at Raw32 – but I needn’t have been, and I honestly loved this class. The class includes various Tabata sets (think: strength training) mixed with fitness (squats, boxing, press ups) for an hour of intense workout. The class was full of differing abilities and strengths, but it was easy to choose weights suited to my ability, and work to my own speed, but still see the benefits. Darren comes from a strong sporting background, previously captaining Northampton Saints Rugby team, and commented on his class: “My classes are about real-life training, which will make day-to-day activities easier. Each trainer at Raw32 brings something different to the class schedule, all of which can develop your body the way you want.”

pened in May 1869 to assist with the spiritual needs of the large numbers of railway workers and their families, money towards St Pauls was the building of known locally as a church. Succeeding vicars were Revd F J Boss (1933-1943), Revd J A Fisher (1943-1953), followed by Revd D M Forrester – who in 1958 was the overseer of some expensive renovations work at a cost of £6,000. An interesting sum when you consider that the initial cost of the building was £4,000. St Paul’s church is constructed of stone in the early English style of architecture. It has an apsidal (rounded) chancel, clerestoried (windowed) nave of five bays, aisles, a west porch and a low central tower with pyramidal roof, containing one bell.

There is a handsome oak screen erected by John Thompson (local builder) in 1907. Some say this is the redeeming feature of an otherwise plain church. Gifts and improvements over the years produced a porch in 1887, a vestry in 1902, a hall in 1905 and an oak pulpit in 1937. A new high altar was added in 1950 in memory of Canon Maskew. In 2007-2008, a new 8ft-high steel cross was erected on the roof of St Paul’s and the bells were overhauled. On Saturday 12 December 2009, the dedication of the cross and bell service was undertaken by Canon Gordon Steele, the Rural Dean and Vicar

of Peterborough Parish Church, St John the Baptist (see May 2012 edition of City Scene). Today Gordon Steele is the Venerable Archdeacon of Oakham. St Paul’s vicarage was a splendid Victorian property, located between the recreation ground and the church. One can only imagine that the double horse-drawn carriage, pictured in c1907, is awaiting its occupant – Canon Maskew. Sadly the vicarage was demolished to make way for a new one.
