SPRINKLE ON SOME

Here’s how you can enhance the flavours in food

M

y husband often accuses me of being a drama queen, I don’t know what he means - I keep telling him its ‘Spice Queen’ not ‘Drama Queen’! Anyway, he always says that I can make something out of nothing but he usually means in life - not food. I disagree... I can make something out of nothing and I mean with food not life! I believe that with the right spice and the right method, you can rustle up a tasty meal in minutes. You don’t need a whole lot of ingredients, sometimes something as simple as a potato can be transformed into something wonderful when cooked with the right spice. Indian spices really enhance the most modest of ingredients.

One of my favourite spices is cumin, it’s not hot but adds real depth of flavour to most dishes. I like to add it to vegetables when roasting in the oven but best of all is my real ‘go to’ quick side dish - my cumin roast potatoes. Just adding a little cumin crisps them up nicely and the humble potato becomes something amazing. They are the perfect accompaniment to any meal, try them with chicken or fish, however they should come with a word of warning - they are addictive!

Cumin Roast Potatoes - Method Prep Time: 5 mins Cooking Time: 20 minutes Serves: approx 6 1. Pre-heat oven to 200°C / Gas Mark 6. 2. Cut the potatoes into wedges and boil in salted water for approx 5 minutes or until they are half cooked.

3. Drain and place the potatoes in a non-stick baking tray. Drizzle in oil and sprinkle with cumin and salt. Give them a shake in the tray to ensure all the potatoes are coated in the lovely spices. 4. Cook for 15 minutes or until cooked through. Keep turning the potatoes, allowing them to crisp up evenly. Pack it in!

Packed lunches with a nutritious punch.

S

hiny shoes at the door and bright white shirts can only mean one thing – back to school time! While I am excited to boot the kids out the door I am less enthused about making packed lunches again. Packed lunches are however a time to experiment and broaden children’s food likes as often they are so hungry at school they devour the whole contents without moaning. Equally, I realise there are also many parents left at the end of the day removing squished fruit and half eaten slimy sandwiches from their child’s lunch box.

• If sandwiches are met with turned up noses try jazzing up the fillings with grated cheese, apple and mayonnaise; smoked mackerel mixed with cream cheese; chorizo and red pepper or simply hummous and cucumber. Bored with bread? Then try oatcakes, wraps, breadsticks, pasta, quiche or pizza for variety.

So, how can we provide a lunch box to support learning and play that will be enjoyed by our children and not the bin?

Read on… • Include a high fibre starchy carbohydrate to fuel brain power, play time and avoid the “I’m starving” at home time. Examples include wholemeal bread, wholegrain pasta and oat cakes. • Involve your child in decision-making and preparation too. Simply asking what your child wants can go a long way to minimising food refusal, waste and most importantly the moaning. Keep it simple and offer two choices like bread or roll, apple or satsuma or which pots they want to use. • Make food fun and appetising. Cut sandwiches into shapes, offer food on skewers like fruit kebabs or simply add colour with fruit and vegetables. A Bento style box can look appealing and means your child can just get on with eating, not spending time opening wrappers. • Aim to provide at least two portions of fruit and vegetables like chopped vegetables such as sliced carrot, pepper, cucumber or cherry tomatoes with sandwiches and little pots of mixed fresh and dried fruit – melon and dried mango. Aim for the rainbow to provide colour and a variety of nutrients. • Protein is the building block of bone and muscle so needs to be offered at every meal. Ideas include chicken satays sticks, tinned tuna, boiled egg, salmon skewers or beans and tofu for a vegetarian alternative.

• To support strong and healthy bones and teeth aim to include a calcium source such as yogurt (frozen), pots of rice pudding or custard or cubed cheese/cheese strings/Babybel. Dairy free alternatives include soya, dried apricots and white bread.

• Drink. Keep it simple with water! • A little something nice. Requests for Mr Kiplings or chocolate bars will flood the conversation and while it is okay to occasionally indulge them, try to offer healthier snacks such as scone, tea cake, brioche, homemade flapjack or homemade cake. Fruity pancakes are a great hit in our house at breakfast that double up for pack ups too. For a savoury tooth try pretzels, cheese straws/scone, popcorn or small handful of crisps.

Alfresco dining by the stunning River Nene

I

f you are strolling along the banks of the River Nene in Peterborough and thought about grabbing lunch, then pop into The Dragonfly.

Situated on the River Nene with stunning views from the patio terrace, you can enjoy lunch alfresco, with new outside wooden furniture giving that clean and rustic feel. Owned by Surya Hotels, it is currently undergoing a major bedroom refurbishment, which will bring its standard up to one of the higher budget Hotels in the Peterborough area. I popped by for lunch with Dragonfly’s Sales Manager, Lucia Day, where we enjoyed varied menus of some traditional and slightly more exotic tasting food. We decided to try different dishes. My starter of choice was the Chilli King Prawns (£5.95) - breaded king prawns served with a sweet chilli sauce, and an Indian Snack Plate (£5.95) consisting of a meat samosa, chicken kebab, spring roll and a dipping sauce of tomato

chutney, just right to get the taste buds tingling ready for the main course. The prawns were lightly deep fried so nice and crispy, not greasy, and dipped in the chilli sauce were very moreish. The Indian snack plate gives you that little piece of Asia and India, very tasty.

Great service, fantastic food and great outdoor views For our mains, Lucia went for the more traditional serving of Scampi and Chips served with mushy peas. I ventured onto the Asian side, with Thai Fishcakes served with new potatoes, broccoli and dill mayo. The fishcakes were delicately spiced with lemongrass helping to provide that traditional Thai flavour, cooked to perfection, and tasty to boot! The more traditional Scampi was as you would expect,

succulent and hearty with tasty thin and crispy batter. Both dishes only £11.95 - excellent value for money. Dessert is always my favourite part of any luncheon, and Dragonfly did not disappoint! Lucia had the Strawberry Eton Mess (£4.95) served up in a jam jar glass, and I went for the Belgium Waffle with summer berries and cream (£4.50). The waffle is a slightly thicker version than the norm, it was crispy, tasty, and the berries give the dish that sharpness needed to compliment the waffle and cream. The Eton Mess, however traditional, was served in a different way to make it much more fun.

A sneak peak inside the newly refurbished Cock Inn

T

he Cock Inn has been a landmark pub in Werrington Village for decades. Many locals have a story or two to share when reminiscing about the character hostelry and the many joyful evenings spent there. After many years of the pub bumbling along, it has now been given some serious love and attention, with a £280,000 refurb inside and out, to include new flagstone flooring, carpeting, decoration and furnishings. The fireplaces have been exposed, renovated and new wood burning stoves installed.

With the character of the building being sympathetically restored, the pub and restaurant now offer customers the perfect place to enjoy some delicious, genuine home cooked food prepared by their new experienced chefs and served with a smile. The restaurant has a slightly more formal feel about it and offers waitress service, whilst the bar area has the same menu with relaxed seating areas. The food on offer is varied and caters for all dietary requirements. You can decide to have sharing platters and tapas style dishes,

Relax your mind and prepare for autumn

S

eptember invites a welcome change, after the long, beautiful, hot summer months, resuming a steadier pace in life again for so many of us. If you have children at school or starting school, a routine will be crucial and for those readers with older children, returning or just starting College/University, it will mean an empty, quiet house to be alone in. All these changes affect us in different ways and having coping mechanisms to deal with them will help us to take control of our thoughts and improve the mind. So, how do we relax the mind? Here is a list to start us on the right path. 1. Take slow, deep breaths, or try other breathing exercises for relaxation

2. Soak in a warm bath 3. Listen to soothing music 4. Practice mindful meditation 5. Write

What other areas of interest can we look at, as we move into autumn, to help with our energy and fitness?

Mindfulness: paying more attention to the present moment

1 Be a morning person Lack of sunlight as the days become shorter and darker can trigger seasonal affective disorder (SAD), leaving you feeling depressed and tired. Get outside for 30 minutes between 6 and 10am when daylight is strongest.

2 Sort out your sleep pattern Longer hours of darkness cause increased levels of melatonin, the sleep hormone, making you feel sleepy in the day, but restless at night. Instead of drinking coffee to stay alert or alcohol to sedate you at night, stick to a routine of going to bed and getting up at the same time.

3 Know your stuff and get seasonal food savvy Shorter days and lack of sunshine reduces our body’s production of serotonin, the ‘happy hormone’. Resist the urge to tuck into

serotoninboosting carbs such as pasta, potatoes and instead, grab these low-fat seasonal treats, rich in disease-fighting antioxidants: Swede, sweet potato and pumpkins – great sources of vitamin C, fibre and the antioxidant, betacarotene. Apples and pears – apples contain heart-healthy flavonoids, while pears are rich in soluble fibre, which helps boost digestion and lowers cholesterol. Figs – a high-fibre treat and a good source of calcium.

4 Take some vitamin D Sunlight is the body’s main source of vitamin D, and when levels are depleted in the darker months, some experts think it can increase the risk of SAD. One US study found that taking vitamin D supplements led to significant improvements in SAD symptoms. Doing these small, incremental steps, will aid to bring about the vitality you need for the change in season. Enjoy and good luck

Making a Positive Impact RuntalkRun - a safe space for people to come together, talk and exercise

M

y name is Jennie and I think I first realised the strong link between physical and mental wellbeing back in 2013 whilst I was recovering from a thyroidectomy. Exercising every day (however small) helped me through a very difficult time when even the thought of getting dressed was a massive challenge. I trained as a Personal Trainer and continued with my business and individual coaching and realised how inextricably linked the two are. For me, health and fitness are integral to both mental and physical wellbeing and I truly believe individuals perform better when both are in balance. In 2016 I was diagnosed with

a further auto-immune condition and also suffered the sudden and devastating loss of my dad who sadly took his own life. My world as I knew it literally changed overnight and there were times I wasn’t sure if I would make it out of this dark and very confusing place. What I found is that you find support in the strangest of places, people you don’t know can offer comfort and most importantly, hope. I found this through the park run community - I remember my first run clearly, running with a bunch of strangers, who were so encouraging and friendly, focusing on breathing and pace (I like to run but I am not a runner). It allowed me to quiet my mind for 30 minutes, which at that time was

an amazing feat as even at rest I was wracked with nightmares and panic attacks. I also found a lot of support via Instagram and that is where I came across RuntalkRun. I got in touch with Jessica May Robson and her spirit and passion was so inspiring I just knew I wanted to get involved. I had been looking for something positive to do and this was just perfect. A safe space for people to come together, talk and exercise at their own pace - and it was free! I knew I wanted to set up a group in Peterborough. New ‘call blocking’ initiative helps to silence nuisance callers

ou’re just about to sit down to your favourite soap or are in the middle of cooking dinner or bathing the kids and the phone rings - it’s one of THOSE calls. It is estimated that around 30 million nuisance calls are made each week. However, many of these are made not just by cold callers, but by scammers; bringing misery to some of the most vulnerable members of our community, such as those living alone or with dementia.

At Safe Local Trades, we echo the concerns of groups like the recently formed Cambs Against Scams Partnership and the nationwide Friends Against Scams initiative - which recognise the harm done by fraudsters; not only those who dupe their victims to part with their cash, but who also feel threatened and helpless against the callers. In 2016, a grant of £500,000 was made to National Trading

Standards Scams Team (NTS Scams Team) to provide telephone call blocking technology to people who are bombarded by scam and nuisance calls, and are most vulnerable to losing money to these callers. Initially, the focus was on providing call blocking units to people living with dementia.

Protecting and preventing people from becoming victims of scams There are an estimated 850,000 people with dementia in the UK, with numbers set to rise to over one million by 2025. The project has been a great success, with the units blocking 99% of scam

and nuisance calls received and making dramatic improvements to users’ wellbeing. And equally as important, the results saw a 97% reduction in users losing money at the hands of scammers, 85% reduction in users feeling helpless to stop the calls and an 85% reduction in the number of users who were worried by these calls. Friends Against Scams (FAS) is a NTS Scams Team initiative, which aims to protect and prevent people from becoming victims of scams by empowering communities to ‘Take a Stand Against Scams’.

FAS has been created to tackle the lack of scams awareness by providing information about scams and those who fall victim to them. This information enables communities and organisations to understand scams, talk about scams and cascade messages throughout communities about scams prevention and protection. FAS encourages communities and organisations to take the knowledge learnt and turn it into action. Anybody can join and make a difference in their own way. e have been mystery shopped by the Financial Times Advisor and here’s what happened… The scenario which we were presented with was: “The shopper has inherited the family home from his deceased father and needs to know his options. The shopper is in Cambridgeshire, calling about a family home left to him in a will. Ownership of the home is split 50/50 with his brother, who wants the shopper to buy him out. The self-employed shopper is considering whether to keep the property as a buy-to-let (BTL). The shopper is also considering buying a property in Kent.” We were then reviewed on the following criteria:

Call to Arms

The story behind our city’s WW1 recruiting office

T

he exact entrance of the recruiting office was at 2 Long Causeway, so now part of the Boots Opticians window. There exists an arched doorway to the right of this building, but this is not where the recruits entered but is the site of the Civic Society’s blue plaque which was officially unveiled as part of the city’s Armed Forces Day events on 30 June 2018. The plaque commemorates those who arrived to enlist to serve King and Country and was unveiled by Peterborough Mayor, Councillor Chris Ash, along with dignitaries, including Mr Jaspal Singh DL (representing the Lord Lieutenant), Lt Col A P Gifford from the 158 Regiment and Group Captain A Keeling, Station Commander at RAF Wittering along with city cadets.

The First World War began in August 1914. No one knew what kind of war it was going to be or how long it would last, but men rushed to join up and go to war. Between 1914-1917 over 8,000 men from the City and Soke of Peterborough and District went through the doors of our recruitment office before it ceased to be operational. At the outbreak of war, 970 local men had joined the Army, 124 men joined the Reserve Peterborough Battery and there were 190 Peterborough men in the Service Battery; 79 in the Yeomanry; 100 in the Hunts Cyclist Battalion already on active service; another 750 Peterborough men had called up to the colours as Reservists - so altogether 2,020 Peterborough men had responded immediately to the call to arms.

Altogether 2,020 Peterborough men had responded immediately to the call to arms It is interesting to note that Recruiting Officers were paid for each man, so some pretended to be unaware that they were recruiting underage volunteers. The British government had originally said that no one under 19 years of age would be sent overseas to fight. In April 1918 they lowered the age to 18 after suffering a near-defeat on the Western Front. One of Peterborough’s many underage recruits included Harry Miles who joined aged just over 16. During the third week of November 1914 an argument raged between the Recruiting

transferred from the city to the army authorities. In this respect Peterborough was a sub-centre to Market Harborough.

Office administrators and residents because the front of the Recruiting Office had only one lone flag hung outside the firstfloor window “twisted like a mop around a stick”. The controversy continued until Major Shipley Ellis wrote the following words and had them stuck outside the recruiting office below a large image of the Union flag: “It is only an old tattered, torn piece of bunting. It’s only a red, white and blue bit of rag. But heroes are fighting and dying yonder. Upholding the fame of our Union Flag.”

Another interesting aside is that in November 1914 the Master of the Peterborough Workhouse, Mr F C Field, had been successful in persuading 7 vagrants of suitable age to enlist at the Peterborough Recruiting Office – and all were accepted as fit and able. Peterborough, apart from having a Recruiting Office, became a remount centre with 250 horses having initially been

Thus, the recruits, whether conscripts or volunteers, who passed through the Recruiting Office entrance were ‘citizensoldiers’, whose attachment to their societies and stake in their country’s existence goes far to explain the tremendous resilience of the armies of 1914-18. Some gave to the greater good by paying with their lives and some returned changed forever, both physically and mentally. We will remember them. The above words were particularly true of those men who worked in this city that came from the Commonwealth nations who decided to enlist. An example being those from India who came to work for our railways.

Passing through the town Looking at the 1800s when Stamford was at its peak of traffic benefices.

Many of Stamford’s Public Houses were linked to specific traders

his time last year we were reading about Turf Wars – Civil Wars of the mid1600s. Now to the 1800s - how things have changed! The town had profited from being near the Great North Road since the 12th century when the road moved eastward toward the town. Turnpike Trusts were established in the middle of the eighteenth century. However, the travellers went on foot or horseback and, even in the 18th century, the Great North Road was only a paved causeway with an unmade road on either side. Strings of 30 or 40 packhorses could use the roads come what may but coaches were rarely able to begin their travels until early/middle of May. When they did, they would be decorated with ribbons and flowers, and would set off from Stamford preceded by the town band and young people in couples. Wheeled traffic also increased but this was via the payment of turnpike tolls – funds that would improve the quality of the roads. The peak for coaches through Stamford appears to be in 1830 when 40 mail and 30 stage coaches appeared to pass

through the town each and every day. No doubt Stamford got fed up with some of the aspects - and very happy about others. For instance – 65 public houses existed in the town! These were not ‘any-old places’. Throughout the summer and into the autumn many were linked to specific traders in Stamford. For instance, the ‘Carpenters’ Arms’ and the ‘Sawyers’ Arms’ made it very clear what good advice and assistance they could provide for the traveller. The ‘Red Lion’ didn’t offer the care of wild animals but it did have good stables and no backway out. Horses had to come in and go out via the front door – a doorway watched carefully by hotel staff! Stamford also had great herds of cattle passing through the town at this time on their way to London. An inn in St Paul’s Street called ‘The Parting Pot’ was where the roads to Bourne and Market Deeping divided and was an ideal situation for cattle dealers and drovers to meet and have a last drink before heading off in their planned routes. There are two hotels that we must mention before we move on.

One is ‘The George’ in St Martin’s – the most famous couching inn in town. It links way back to the time of the Hospitallers. As you enter the room on the left is marked for London and the place where the travellers wait while the York room opposite serves those going north. Just make sure you pick the right one! The other is the ‘Stamford Hotel’ that was begun in 1810 but not finished until 1829. It offered ‘elegant and superior accommodation’, a ballroom and dining and card rooms. It was also a ‘Whig’ centre, encouraged by the Earl of Gainsborough, to counter ‘The George Hotel’ which was ‘Tory’!

Does the megalodon still exist? Richard S heads to the cinema to find out! 13

E

ver since Jaws burst into the cinema back in 1975, audiences have been fascinated by sharks. They are either mocked (Sharknado 1,2,3,4 etc), ‘fluffed up’ (Shark Tale) or used as a suspense building catalyst (Deep Blue Sea, The Shallows etc). To add to the collection of shark films; that includes such gems as Megashark vs Giant Octopus, Jurassic Shark and the amazing (sense sarcasm in my tone) Sharktopus vs Whalewolf, we have the new offering of The Meg, a film about the oft thought extinct Megalodon Shark, the largest shark to have ever roamed the seas. Starring Jason Statham, Ruby Rose, Li Bingbing and Rainn Wilson, the film focuses on the discovery of a Meg shark and the obvious coverup and disbelief from sceptics in the science world, until a team get trapped under the sea after going toe to toe with the Meg and losing 5 years later. This puts our hero, Mr Statham in quite a pickle, as he vowed to never dive again after the catastrophe of the previous mission to save a team went awry. From here on in you have tension, angst, several disagreements and deaths before getting to the end. The writing is quite weak, with parts lifted from previous shark related films and the occasional nod to the classics. But herein lies the issue. The Meg doesn’t know

There may actually still be a Meg alive and well in our seas… whether it wants to be a parody film, or a serious film, and for the most part it dithers between whilst dropping all the obvious characteristics of a shark film, but not adding anything new. The jumpy parts are obvious, the story arc is weak and the acting for the most part could really do with picking up. Statham does his brooding best to lift the film but he is weighed down heavily by the, thankfully, underused Ruby Rose who plods along, trying to match Statham’s brooding but fails badly. The upside to The Meg is the fact we get to learn a bit about a species of Shark long thought to be extinct, but with sections of the scientific community theorising

there may actually still be a Meg alive and well in our seas. The educational parts are few and far between and the obvious scenes soon take over again pushing you to the obvious ending. I do have to say though that the CGI is exceptional, the editing is also very, very good and the action sequences, as obvious as they are, are really well executed and do give the audience something to enjoy when watching the film. A friend of mine, Daniel Ackerley (of Daniel Ackerley Photography, and a film fan much like myself) perfectly described The Meg as one of the best worst films he had ever seen and rated it as both a 1/10 and 10/10. I wholeheartedly agree with this statement. Richard S hosts the Film & TV Show on Hereward Radio and the show is in podcast form on iTunes, Stitcher and Podbean.

chance encounter at a Wood Green event led to an incredible donation from a local supporter that is already changing the lives of pets and their owners.

Delivering pet care and advice wherever needed Dennis Gunn met Clive, Chief Executive of the Charity, and asked what would make an immediate difference to pets in need. The answer was simple - a new vehicle enabling the Wood Green team take their great work on the road to help more pets and people, ensuring all pets are well cared for in loving homes for life.

The new service is part of a wider project to expand the impact of the Charity’s pet support services; Wood Green is entering an exciting period of change. A new Welcome Centre has opened

in place of the previous retail space at the main Centre near Godmanchester, with the aim to provide pet support and advice to more pets and people whether on site, online or on the phone. The charity shop has been relocated closer to the site entrance to make public access even easier and a new website, featuring extensive

advice for pet owners will be launched. The new approach has already proved a success across Cambridgeshire and beyond during national Rabbit Awareness Week. Conserving natural heritage Nene Park wins national award for Moments with Trees project Nene Park Trust has won a national horticulture award for its innovative ‘Moments with Trees’ campaign. The Trust was recognised at The Horticulture Week Custodian Awards, which honour the achievements of professionals at the UK’s parks and gardens, in the ‘Best Urban Tree Initiative’. Moments with Trees is a twoyear project made possible thanks to National Lottery Players which has been initiated by Nene Park Trust with four aims in mind: to enhance public knowledge and understanding of Nene Park’s trees, to encourage children’s connection with them, to conserve the natural heritage and tree stock, and to reveal their past,

celebrate their present and shape their future. Matthew Bradbury, Chief Executive at Nene Park Trust said: “We’re thrilled to have won this award. We certainly feel that a lot has been achieved in our first year. Visitors can now learn more about the history and beauty of the Park’s trees through a series of trails and guided walks, and our volunteers have developed tree identification and management skills. We run tree-themed activities for children in the summer months which are proving immensely popular.” Since its launch in April 2017, Moments with Trees

Edinburgh Fringe Madness! Peterborough’s YAC takes success to Scotland

I

’m up in Edinburgh at the annual Fringe Festival producing and performing my show, The Museum of Tat Roadshow, as I write this. If you haven’t heard of the Edinburgh Fringe (where have you been?!), then put simply: it is the largest arts and culture festival in the world.

Acting… and so much more

To put ‘EdFringe’ into perspective; in 2017 there were a whopping 53,232 performances of 3,398 shows in 300 venues across the city. Competition is very tough, but for most who experience it (and we poor professional idiots are addicted - this is my eleventh), there is nothing like it. The Young Actors Company (YAC) have taken shows here several times in our history, and although we aren’t officially performing in 2018, that doesn’t mean that YAC is unrepresented. Amongst my past and present students in Scotland right now is Jessica Mescall, who I taught at YAC Peterborough

over a decade ago and who went on to train as a professional actress. Jess now has a successful career in casting for TV and film and is assistant producer on three shows at this year’s Fringe. A Kestrel for a Knave Founder of The Phoebe Research Fund, Zoe Crowson, and partner Coronation Street Star Steven Arnold have set up a production company called Psychotastic Productions. They have pledged that 25% of all profits from each and every one of their productions will go towards supporting The Phoebe Research Fund, an important charity which directly makes a difference to RDRB sufferers. Steven has a wealth of experience on stage including Chaplin and Accrington Pals and cannot wait to rise to the

challenge of Kes - an iconic film first screened in 1970, with a stage adaptation which will see Steven playing 8 different characters alongside another actor who will play the younger Billy Casper. They are extremely fortunate to have appointed David Crowley, one of the best directors available who works mainly within theatre and TV and was also associate director at West Yorkshire playhouse.
