he Shrewd Fox Brewery in Eldred, once an old post office, was transformed into a local treasure. And

like its predecessor, SFB knows how to deliver! Growing quickly, SFB has become a destination brewery surrounded by stunning vistas and outdoor activities that utilize the very best of locally-sourced ingredients. Their finely-crafted brews are produced by the wizardry of balancing scientific and creative approaches while not losing the sense of history of local craft beer creativity in their corner of the Catskills. SFB brews traditional craft Lager, Porter, Hefeweizen and IPA’s. Similar to the traits of the animal in its name, SFB’s cunning and subtle use of the right combinations don’t disappoint. “What makes SFB standout is our wood aged beers, i.e. using first generation barrels of Woodford Reserve, Old Forester, Laphroaig and E&J Brandy to create a unique infusion of tastes that amazes one’s palate,” explains SFB Owner Bill Lenczuk. Another SFB favorite is their dry hopped gluten free cider/ale using a 250-year-old Edinburgh, Scotland yeast very unique very popular all four seasons. I have to plug one of SFB’s original recipe which is our fall Pumpkin ale based on the famous George

But aged into one of our Bourbon barrels would surely have our first president smile.” Also make sure to try SFB’s two tasty Belgian Farmhouse Ales - DeVenoge made with honey, coriander, seeds of paradise and orange peel, and Kutya which is made with Buckwheat, and Buckwheat honey. Lenczuk loves the creative entrepreneurial process of making craft beer in a small and independently-owned and run brewery. Their history is local, using Catskill water, and New York State Hops and Barley, earning them the local and regional distinction of being a “New York State Labeled Beer.” continued on page 12

Customers are encouraged to talk with the brewers and owners about their start, regional approach, and influence the designing and naming of SFB’s beers, as well as walk through the environmentally sustainability brewing process on their state of the art brew house and equipment. Indoor activities include Public House Chat or take the fun outside and visit the beer garden, play some corn hole and enjoy music. SFB received its Farm Brewery license in June of 2015 and has doubled its production every year and added a beer garden. “Our 2018 forecast is on track for another banner year with brew house expansion construction in the fall and warehouse space to expand our barrel aging Bourbon, Scotch and Brandy sales,” Lenczuk said.
