A matter of pure taste For the online gourmet retailers Franz Derungs and Pascal Rothenbühler, it was only a matter of time before they created their own passion product. They decided to combine craftsmanship and innovative ideas to found their own single-origin balsamico brand, for which perfectly matured fruit from the region and a gentle refining process in small amounts are of the proverbial essence. The usage of chrome steel tanks plays a big role in the creation of the Puro Balsamico, as no additional tannins enter the maturing process, thus guaranteeing the purity in taste.

Pure, high-quality products make a good meal. At the ziegel.hüsi rrestaurant (awarded with 13 Gault Millau points), the effect of the pure fruit flavors can be experienced on location. Apart from the manufactory and restaurant, a wine shop rounds up the casa di mattoni enterprise in the picturesque town of Deisswil near Bern. Thus, interested connoisseurs may enjoy an all-round gourmet treat on the premises.

casa di mattoni vinegars mirror the innovative production process with a trademark transparent flavour. “Each fruit that we use can be immediately recognised in the respective product,” Franz Derungs says proudly. At present, the ‘Swiss Vinegar Manufactory’ uses apples, pears, cherries and raspberries as well as cassis to create the delicious Puro Balsamico. The five variations have already caught the interest of many highly decorated top chefs.

The five Puro Balsamico variations are also available nationwide at Loeb and Magazine zum Globus gourmet stores. The handmade product is meant to reach all those who enjoy cooking and consuming pure-quality food on a broad basis. “You don’t need to be a star chef to handle our balsamico,” Pascal Rothmüller explains, “the usage is not any different than that of traditional vinegars, however it will add that certain something to your dish.”

Shortly, casa di mattoni will launch a much-anticipated project on which the two entrepreneurs have been working with heart and soul: White, red and rosé wine vinegars made from Chasselas, Merlot and Oeil-de-perdrix. By using single-origin wines only, the project once again features the casa di mattoni ‘pure taste philosophy’: Puro Balsamico, in the true sense of the word!
