Having had the privilege of getting to know the Calgary food scene over the past year, I have grown to love the people and the businesses whose stories we tell at Savour Calgary. You have become my tribe. So, when the world suddenly changed forever in March, I was heartbroken for what the impact of COVID-19 would be on the people I care so much about. It’s been immense. And it will be felt far into the future. It’s also been inspiring. And that too, we’ll remember.

I knew you had talent, creativity and passion, food people of Calgary, but now I know something else about you. You have grit. Under this immense social and financial pressure, you’ve become diamonds. You’re pivoting mid-stride, you’re changing your business models, you’re thinking outside the box, you’re finding ways to make the impossible possible – and you’re feeding people.

You have shown that cooking for us is a calling you can’t ignore – no matter the circumstances. Even in the darkest times, you’re compelled to create and to provide. It is a service of the soul – from your hands to our hearts in a time when we need you more than ever.

When we’re kept from our friends and our families, you’re gathering your ingredients.

When we’re afraid for our future, you light the fire and put the kettle on. As we reach for some sort of certainty in the chaos, you pass the bread and invite us to sit and eat and be still for a moment.

Even amongst all the turmoil and ambiguity in your businesses, you’re finding ways to provide hand-sanitizer, or feeding frontline healthcare workers, or raising money for outof-work wait-staff and bartenders. Your heart knows no bounds and we at Savour Calgary extend a sincere thank you for doing what you do – even when it seems impossible.

The coming weeks and months will be hard. I invite each of our readers to find a way to support your local restaurant, distillery, brewery, kitchenware and grocery store. Where you have an opportunity to choose Calgary – please do. Not only does it provide some muchneeded cash flow for these businesses, it’s also a gesture of solidarity. It shows that you know we’re in this together and that you’re there for them the way they’ve been there for us.

We tried the braised pork-rib katsu box featuring red miso soup with nappa cabbage, braised pork rib katsu, Japanese potato salad, rayu-marinated tomatoes, dashimaki tamago, pickled daikon and umeboshi on rice with black sesames. INSPIRED PIVOT When the folks at Inspired Go launched their business, it was intended as a healthy lunch delivery service for workers in the downtown core. Enter COVID-19 and social distancing. With an empty city centre, they had to think fast and pivot their business plan. Now, they’re delivering beautiful salads, bowls, fruit and more to homes all over the city and helping frontline healthcare workers while they’re at it. At publication they’d already donated more than 600 meals. We particularly loved the Singapore Fusion bowl, and all of the home-made dressings are wonderful.

Yum Bakery is a family-owned business with two locations in Calgary.

Owners Debbie and David Catling started the bakery at the Calgary Farmers' Market in 2009 back when it was still located in the Currie Barracks. David spent time at the San Francisco Baking Institute developing his craft before returning to Calgary and hiring a team to help run the bakery. Each item in the bakery is baked from scratch, by hand, the old-fashioned way using local whole ingredients and no fillers.

What started as a dream and a taste of an iconic Middle Eastern dessert, soon became Tasse Bakery, offering an assortment of Middle Eastern sweet and savoury treats. Raspberries B y E L L E N K E L LY It may be jumping the gun a bit, but right now I say we need some of the inimitable magic that only comes from a raspberry. Here on the prairies, it’s a summer fruit, available from late June into August and on into the fall (I’ve picked raspberries at Broxburn Farms well into September). However, Washington State provides the rest of the U.S. with easily 60 per cent of its raspberries and some of their finest make their way to us as early as late spring. Eschew the winter raspberry from Chile and environs, I know you can wait.

There is an undisputed consensus among all the raspberry gurus whose opinions I sought, that fresh ripe raspberries simply served with cream (go local and use Vital Green heavy cream, lightly whipped) is hands down the way to go. Be that as it may, another reason to glorify the humble raspberry is that even frozen, especially in baking, it is almost as versatile as fresh.

Whether you are finishing up frozen berries from last year’s bounty or just can’t wait for the canes in your yard to bear fruit, when you want a raspberry, you want a raspberry! We will see our own homegrown berries soon enough - for now, let’s indulge in a little pre-summer raspberry fantasy.

Jazz up your berries and cream for company with sugared phyllo baskets. Take 4 sheets of thawed phyllo pastry and brush each layer with melted butter. Sprinkle each layer with sugar, ending with sugar on the top. Cut the pastry into 12 squares and press each square into a buttered muffin tin cup. Bake in a preheated 350 oven for 7-9 minutes until golden and crisp. Cool and then fill with whipped cream, top with fresh raspberries, and garnish with a sprig of mint.

It’s true they are a fragile fruit, primarily when picked ripe, so taking a careful look at the berries you buy is paramount.

It takes an eagle-eye to detect a hint of mold in the stem cavity and stained packaging means crushed berries.

When you get them home, spread the berries out on paper towels and pick out any moldy berries, stems and leaves. If you aren’t going to eat them that day, they can be refrigerated for a day or two (not optimal), but consider freezing them in their prime to use in any number of ways. Spread the berries out on a tray and freeze. Collect the frozen berries in a bag or container and pop back in the freezer for future delights.

Raspberries, fresh or frozen, can be added to scones, muffins and coffee cakes; they make excellent pies, alone, with other berries or with a favourite summer partner, fresh peaches; fools, crumbles and cobblers are always an option as are puddings, crème brulée, crème caramel, panna cotta and cheesecakes; and berry sauces, shrubs and vinegar don’t even come close to completing the list. Raspberries love chocolate, add panache to a smoothie and make stellar margaritas. Unlike most other berries, raspberries are rich in pectin making them a go-to for jams and jelly, with seeds or without.

Raspberries grow wild in all the cooler regions of the Northern Hemisphere.

I grew up with an ice cream pail tethered around my neck, picking raspberries and saskatoons every year on the prairies. I can testify that picking raspberries from a tall cane in a farmed u-pick environment or backyard patch is a lot easier than stooping for the low-growing natives - the berries are bigger and that burst of nothing-like-a-raspberry is just as addictive. My grandfather would have argued that the wild ones are free for the picking, but so are the ones you were clever enough to plant against the back fence.

Another ridiculously easy preparation is a kind of trifle-like affair without all the fuss. Make a fool by folding lightly crushed raspberries into whipped cream. Lightly toast large cubes of angel food cake, sprinkle sparingly (no soggy cake!) with a nice sherry or a little brandy and loosely assemble layers of cake and fool in pretty glasses.

One last favourite… raspberry vinegar. I make it every couple of years to use on summer salads, to mix with soda and gin and to gift to special friends. Easy to make, it quickly becomes something you can’t do without. Simply dissolve ½ cup sugar in 4 cups Champagne vinegar, white wine vinegar or white balsamic vinegar over medium heat. Don’t boil. Pour the hot vinegar over 3 cups fresh clean raspberries in a large jar. Seal and let sit at room temperature for 2 days, then strain through a fine sieve. If you want a clear vinegar, don’t press the solids, but being of a thriftier tribe, I like to extract as much of the nectar as possible and don’t overly care about the clarity. I keep it in the refrigerator.

CRAVINGS, COURAGE AND CULINARY DISCOVERY IN LATVIA

I’m known for my insatiable sweet tooth. I love a sticky caramel, would happily live inside a cheesecake and have never met a waffle I didn’t like. But on this cold, gloomy day in Riga, Latvia, something peculiar has come over me. I want fluorescent, fermented cabbage – I crave it with every fiber of my being, and nothing else will do.

As I cross the lobby of the opulent five-star hotel where I am staying in the Latvian capital, I wonder if anyone else has ever smuggled plastic bag-fulls of every type of sauerkraut and coleslaw imaginable into their room.

Good thing I don’t have a roommate. But if I did, I would vigorously defend my newfound probiotic heaven, because this isn’t just any pickled cabbage. It has been treated with turmeric, beetroot and pomegranate marinades, creating both its distinctive bright colours and umamibomb of flavours, while maintaining just the right amount of crunchy texture.

I found this treasure sold in bulk by the kilogram, along with pickled apples, mushrooms and entire heads of garlic, at the Riga Central Market.

Spanning five massive pavilions that once housed Zeppelin airships during World War One, this is the largest market in Europe and a UNESCO World Heritage site that dates back to 1930.

More than 3,000 vendors hawk their wares here, both indoors and spilling outside for blocks.

While mostly locals shop here for their groceries, it’s also the perfect place to pick up a nonperishable souvenir – say, a Latvian invention such as a pair of mittens or blue jeans.

Wandering through the aisles on a food tour led by local chef Artūrs Trinkūns, of the innovative Riga hotspot, 3 Pavāru, I spot several unfamiliar creatures. One of those creatures is a coveted Latvian delicacy called the lamprey. Its slippery eel-like features strike terror in my heart, and little do I know, I will face it head-on soon enough.

And when I say head-on, I mean it quite literally, as this jawless, boneless parasitic fish is barbecued on the grill, then consumed whole, starting from the tail and ending with the head.

A few days later, on a tour of the countryside, I meet my slimy nemesis at Sia Krupis, a family-run business located in the tiny coastal town of Carnikava – the lamprey capital of Latvia. I muster only enough courage for a few bites above the tail, though I also taste it jellied and in the form of sushi. It makes for a rather unorthodox breakfast, but thankfully the overflowing shot glasses of Latvian whisky offered by our hosts, Zigrīda Skaveneca and Eduards Skavenecs, help it go down more smoothly.

What comes next is much more my style, as we head to another familyowned business in the countryside called Gogelmogels. Here Jānis and Eva Joma craft small batches of ice cream using egg yolks from the more than 200 chickens they raise on their farm.

Their unique brand name is a play on words on kogel mogel, an egg-based desert that originated in the 17th century from Jewish communities in central and Eastern Europe. We’re treated to bowls of ice cream flavoured with sea buckthorn, halvah, bee pollen, stracciatella, and vanilla, then given a tour of the adjacent hen house where eggs are laid tidily on shelves and collected for the next batch – part of a thoughtful system the owners designed so as not to disturb their chickens.

Over the next few days, I’m treated to an assortment of meals at restaurants that can be best defined by their farm-to-table culture.

It strikes me that the intimacy of Latvians’ relationship with nature and their treasured customs of pickling, foraging, hunting and fishing that go back for centuries, is what really sets their cuisine apart.

While it’s known for its heartiness, a growing openness towards innovation and experimentation is putting Latvian gastronomy on the culinary map – still a largely undiscovered gem, but in a world hungering for authentic experiences, it may not remain undiscovered for long.

40 g water 300 g soft unsalted butter 3-4 tbsp cocoa 150 g condensed milk

Use a food processor or a knife to roughly chop the nuts.

Turn the oven on at 150° C (300° F) in fan mode. Line three baking trays with non-stick baking paper. Draw a circle 26 cm in diameter in the middle of each baking tray.

Separate the egg whites from the yolks. Place the yolks in the refrigerator. Add egg whites to a large bowl and begin to foam with a hand beater. Add a pinch of salt. When it becomes white and thick, gradually add in the sugar. Finally, mix in the potato flour and chopped nuts.

Spoon the meringues within the circles on your baking trays, then put in the oven. After 15 minutes, reduce the temperature to 110° C (230° F) and bake for one more hour. Leave the biscuits to cool overnight in the oven.

For the filling (to be made the next day): Boil the water and sugar until it becomes dissolved into a thin syrup. Add the hot syrup to a bowl with the egg yolks and whisk together, then add butter, cocoa, condensed milk and liqueur of your choice.

Cool the cream in the refrigerator.

Assembly:

100 g dark chocolate

Remove the baking paper from the base of each meringue and gently flip them over. Start with one meringue on the bottom of your serving platter of choice and spread 1/3 of the filling on it leaving a 2 cm border from the edge. Put the second meringue on top and repeat, then add the remaining layer on the third.

Combine the chocolate and cream in a heat-proof bowl over a pan of hot water, then keep stirring until smooth.

HOW SWEE T THOU ONION TART

More often than not I’m cooking what I have on hand rather than going on a special shopping trip for ingredients. This is why onions, carrots, potatoes, squash, cabbage and turnips are the unsung heroes of the dinner hour. They aren’t glamorous but they are there for you in your hour of need. Onions are so self-sufficient that they can support an entire dinner and still be appreciated the next day at lunch. The smell of a frying onion comforts and reassures your dining companions that indeed, something is happening in the kitchen. They’re humble, versatile and surprisingly complex. Recently I had raw onions served as a side to cassoulet and they worked much like lemon in that the crunchy raw slices brightened the rich meaty flavours of the beans and duck.

So why not let the onion take centre stage with a simple, filling and yet somehow exotic onion and leek tart? The beauty of this tart is that you can use onions and/or leeks, even throw in some diced shallot or garlic, or stick to all leeks or all onions. From there you can add bacon lardons, cream or crème fraîche and, if desired, your choice of cheese like Gruyère, Comté or Cheddar.

The onion tart is a versatile thing of magic. It’s rich and savoury with a subtle sweetness from the long-cooked onions. It is delicious served hot with a green leaf and walnut salad, as a cold lunch, is an excellent addition to a brunch and welcome on any buffet.

You will need a 12” shallow tart dish, 2 frying pans, parchment paper and dry rice or beans for blind baking the crust.

Ingredients:

Method:

1 pack frozen puff pastry

Roll your puff pastry out to ⅛” thickness and press it into the tart dish, rolling any overhanging excess dough into the rim.

3 leeks, trimmed

Prick the dough multiple times with a fork and lay the sheet of parchment paper on the dough.

2 medium yellow onions, diced 3 tbsp butter 1 tbsp olive oil 2 large eggs 1 cup heavy cream ½ cup white wine 1 cup grated cheese (Comté, Gruyère, Cheddar, I’ve also used pecorino… it’s your choice) ½ cup bacon lardons, (about 6 bacon strips cut crosswise into matchsticks) optional Thyme leaves, tarragon or rosemary finely chopped — your choice of herb.

Fill the paper with dried rice or beans and bake the crust for 15 minutes.

Remove the dish from the oven and carefully lift the parchment with rice or beans off of the crust. The beans and rice can be stored in a ziplock bag and used multiple times as blind baking pastry weights.

Put the crust back in the oven for another 10 minutes and allow it to slightly brown.

Remove from oven and set aside until ready to fill.

Turn your oven up to 450°F. Trim your leeks by cutting off the green parts about 2" from the where the white ends and cutting off the root.

Slice the leek lengthwise and rinse thoroughly under running water – leeks are notoriously sandy and that’s one ingredient you don’t want.

Once clean, slice the leeks crosswise.

Peel and dice your onions and set the leeks and onions aside.

If you are using bacon, slice the bacon strips crosswise into lardons, and set aside.

Heat the butter and olive oil in a medium sized frying pan.

When the butter and oil are hot and foaming, add the onions and leeks and stir until they are coated with butter and oil and turn the burner down to medium.

Add the wine.

½ tsp chili flakes (optional)

Cook the leeks and onions until they are soft, translucent and tender or go further and caramelize them. They will turn a rich, golden brown with a soft, melting texture and sweet earthy flavour.

Thoroughly thaw puff pastry.

Caramelizing takes time but the deep umami flavour that this adds to the tart makes it well worth the effort.

Pre-heat your oven to 425°F and butter your tart dish.

Once your onions and leeks are well under way, fry the lardons on medium heat until they’re nice and crispy, drain them on a paper towel and set aside.

In a medium bowl, mix together the cream, eggs, cheese, chopped herbs and chilis.

Thoroughly combine the fried bacon with the leeks and onions and scrape the mixture onto the crust, spreading evenly.

Evenly pour the cream, cheese, egg and herbs over the leeks, onions and bacon.

Place the tart in the 450°F oven and bake for 10 minutes.

Turn the heat down to 425°F and bake another 15 minutes until the crust is golden brown and slightly puffy.

Remove from the oven, cool slightly, cut into wedges and serve with a green salad topped with walnuts and a tart vinaigrette.

For spring and summer ­— from warm cobblers to layered trifles, gelled panna cottas and syllabubs, there’s something satisfying about a pudding beyond the kind that comes out of a box.

These elaborate fruit-based desserts you serve up with a spoon, old-fashioned flummeries and grunts are the things summer dreams are made of.

The parameters of what constitutes a pudding is broad; our minds might first go to soft, milk-based custards — one dictionary definition of a pudding — but then there are puddings made with stale bread, dried-fruit-studded, moulded and steamed puddings, and syrup-drenched sponges. Even crisp, eggy Yorkshire puddings have the same name. Unless you’re British, in which case all desserts are referred to as pudding, it’s a safe argument that any sweet thing you’d default to serving with a spoon could be considered a pudding.

In spring and summer, rhubarb, berries and juicy stone fruits like peaches, apricots and plums are well-suited to such desserts, and can be used interchangeably or in combination with each other, with enough sugar to suit your taste or the tartness of the fruit. If you find yourself flipping through old cookbooks, you’ll likely come across dozens of methods for fancy chilled jellies and puddings designed to revive stale bread or cake; pudding is just the thing when juicy fruit is at its peak.

Stone Fruit Flummery Some of the less recognizable puddings have the best names, like a flummery: chunks of cake topped with custard, sliced fruit and meringue, almost like a plated trifle that thriftily makes use of stale cake. (Made with berries, rhubarb and stone fruits, it’s a summery flummery.) If you like, swap whipped cream for the torched Italian meringue. (This quantity of meringue is enough for 4-6, but can be easily doubled if you need more.)

Sliced stone fruits or berries Sugar, to taste Leftover cake, cubed Italian meringue: ½ cup sugar ¼ cup water

Toss your fruit or berries with sugar to taste and let sit for 10 minutes or so, until the fruit releases some of its juice.

(Roughly mash the berries or fruit, if you like, to break it down and make it saucier.) Assemble the cake cubes over a platter or large plate, and top with the fruit.

To make the meringue, bring the sugar and water (and lemon juice, if you like-it helps keep the syrup from crystalizing, but isn’t necessary) to a boil in a small saucepan and cook, swirling the pan, until the temperature reaches 240˚F on an instant-read thermometer.

¼ tsp cream of tartar

Meanwhile, beat the egg whites and cream of tartar with an electric mixer until soft peaks form; with the beaters running, slowly pour in the hot syrup in a thin stream, and continue beating until stiff peaks form. When it has the texture of shaving cream, beat in the vanilla. Spread over the fruit and cake and run under the broiler for a minute or two, or torch with a blowtorch until browned on the surface.

½ tsp vanilla

Serves as many as you like.

W hat’s cooking | J U L I E ’ S K I T C H E N Berry Cornmeal Cobbler A cobbler can be many things to many people, but is best made with juicy spring and summer fruit; rhubarb, berries and stone fruits work exceptionally well, releasing enough juice for the crunchy topping to sop up. Toss your fruit with sugar and a bit of cornstarch to thicken, then drop the simple batter in large spoonfuls over top to bake—only one bowl required. ¹/³ cup sugar 1 tbsp cornstarch 6 cups fresh or frozen berries and/or chopped rhubarb Batter: 1 cup all-purpose flour ¼ cup cornmeal ¼ cup sugar 1 tsp baking powder ½ tsp baking soda ¼ tsp salt ½ cup buttermilk or thin plain yogurt ¼ cup melted butter or canola oil

Preheat the oven to 375˚F. In a large bowl, combine the sugar and cornstarch to get rid of any lumps; add the berries and toss to coat.

Pour into a 9-inch baking dish or deep pie plate.

In the same bowl, stir together the flour, cornmeal, sugar, baking powder, baking soda and salt. Add the buttermilk and butter or oil and stir just to blend the batter.

Drop in spoonfuls over the fruit. Bake for 45 minutes, or until the topping is golden and the berries are bubbling, with thickened juices around the edge. Serve warm.

Serves 6-8.

Rhubarb Charlotte As desserts go, charlottes are all over the map — they can be fancy or plain, set on a cake base or wrapped in ladyfingers, but are most often fruit-based and set with gelatin. This rhubarb version is creamy and tart, a more sophisticated (if not as aesthetically perfect) Jell-O. Simmered and strained berries are delicious, too — instead of or combined with the rhubarb. Adapted from Nellie Lyle Pattinson’s Canadian Cook Book, circa 1923.

1 tbsp plain gelatin ¼ cup cold water 3 cups chopped fresh or frozen rhubarb 1 cup sugar 1 tsp vanilla ¾ cup whipping cream

Soften the gelatin in cold water in a small dish. Combine the rhubarb and sugar in a saucepan over medium-high heat with ½ cup water and cook, stirring often, until the rhubarb is very soft. Remove from the heat and stir in the softened gelatin and vanilla. Let cool completely.

In a medium bowl, whip the cream until softly stiff peaks form; fold in the rhubarb mixture and pour into a plastic-lined 1 L bowl or gelatin mould. Refrigerate for several hours, until set. Invert onto a plate to unmould and if you like, fill the middle with berries.

Serves 8.

Karen Anderson and Matilde Sanchez-Turri’s awardwinning Food Artisans of Alberta will inspire you and help you plan your first road trip once we’re back on the highways, windows down, tunes cranked. Gwendolyn Richards’ Pucker: A Cookbook for Citrus Lovers is sure to cheer you up AND get you your daily recommended intake of vitamin C. One cookbook you’ll want to have on hand during these dark days is Calgary Eats by Karen Ralph and Gail Norton, which rounds up some favourite dishes by local chefs. Local food blogger and Savour Calgary contributor Bernice Hill (Dishnthekitchen. com) has a great recipe for barley arancini with shittake and seaweed on her site – and we’ve included it here for you too. Bonus: it calls for a ¹⁄³ cup of pinot grigio and someone will need to drink the rest. Hey, there’s a pandemic going on out there, we won’t judge you for drinking on a Tuesday.

JOIN AN ONLINE FOOD COMMUNITY: Facebook has lots of local food groups including Bite Club and Calgary Food - Food YYC - or, start your own. My friend Jim invited me to eat out of cans together on FaceTime the other day. I haven’t taken him up on it yet. I think we can do better. Bite Club hosted its first online meeting in March with members cooking in their kitchens together over Facebook Live.

PREPARE A MEAL FOR SOMEONE ELSE: While you’re at it, save some for a friend or neighbour. Half the fun of cooking is having someone fawn over your genius. Just because they can’t do it in person, doesn’t mean you should be deprived of your due admiration. Consider putting together a care package with homemade goodies and dropping it off on a friend’s porch.

Life in self-isolation can be positively primitive. I’m not going to lie, I found myself tearing the flesh from a cold KFC drumstick letting the crumbs fall where they may in front of the TV last week. But it doesn’t have to be that way. In all seriousness, we need community now more than ever.

Find a way to break the monotony, break the loneliness, and break bread with someone. After all, we eaters know better than anyone how powerful food can be in bringing people together, even when we’re at least two meters apart.

Barley Arancini

Method Add two tablespoons of olive oil in a medium pot on medium to high heat.

Heat up mushroom stock in a separate pan.

Add finely diced onion and sauté until translucent before adding the minced garlic.

Continue to sauté for another minute or two.

Add pearled pot barley and stir, coating the grains in olive oil. If the contents of your pan are sticking, it may require additional olive oil.

Pour in wine and reduce so that the alcohol has a chance to burn off.

Add heated mushroom stock, a 1/2 cup at a time, stirring until the liquid has absorbed into the barley in between each addition.

To tell if your barley is cooked, taste a grain and if you can chew it (but it still sticks to your teeth) it is finished.

Stir in the mushrooms, nutritional yeast, and reconstituted seaweed stems.

Allow to cool thoroughly, ideally overnight.

After the barley risotto has cooled, roll into

balls and coat with panko.

Heat oil in a large Dutch oven.

Test oil by dropping a few panko crumbs in the hot oil.

If they are ready they will slowly begin to turn golden brown.

Ideal frying temperature is between 360° F – 375° F. Carefully put six balls in the oil and move them around so they brown evenly. It takes roughly about 8 minutes.

Remove carefully allowing oil to drain from the ball before putting it down on paper towel.

Serves 6

Bigoli all’ Amatriciana Ingredients 6 oz (170g) guanciale, diced Olive oil (optional) Bigoli

Here, the magnificent guanciale (pork jowl) adds depth, flavour and punch to this spicy classic. Bigoli is a type of pasta made with water and hard durum wheat flour. It’s particularly popular in Rome and looks like a thick spaghetti and is perfect for absorbing sauce. You could also use Bucatini which is long and hollow like a pasta straw and like Bigoli is made with water and hard durum wheat flour. If you’ve never tried it this is your golden opportunity. Whichever pasta you decide on this is a satisfying and comforting meal.

2 large cloves garlic, chopped 1 tsp red chili flakes 2 cups San Marzano passata 1 lb (0.45kg) bucatini pasta Kosher salt, to taste ½ cup grated or shaved Pecorino cheese Crusty bread, sliced, to serve

By: Kayle Burns, Bread and Circus, Calgary Eats Cookbook Method Heat a large frying pan over medium heat, add the guanciale and cook for about 5 minutes, or until golden brown. If the guanciale is on the lean side, add a splash of olive oil. Transfer to a plate and set aside.

In the same pan with the fat, add garlic and chili flakes and sauté for 1 - 2 minutes over medium heat, until fragrant.

Add passata, reduce heat to medium-low and simmer for 10 minutes.

Meanwhile, bring a large pot of salted water to a boil.

Add bucatini and cook for 10 minutes, until it’s still firm and about 80% cooked.

Drain, then add pasta to sauce and cook for another 5 minutes, or until it’s al dente. Transfer pasta to a serving platter and garnish with pecorino and crispy guanciale. Serve with a rustic red wine and crusty bread.

I sat down with two of Calgary’s leading authorities in the beverage industry – JD Darnes, beverage director at Cocktail Concierge and Jesse Willis, co-owner at Vine Arts – to get their opinions on the essential spirits, necessary mixers and must-have tools to get you sipping, shaking and stirring like a boss.

“Rule number one,” says Darnes, “is to stock a wide enough range of spirits in order to make as many drinks as possible.

Rule number two is to make sure you choose versatile spirits. Choose spirits that are good enough to drink neat, but not (so) good that you can’t mix them in a cocktail.”

Homemade Falernum Syrup NON-ALCOHOLIC CARIBBEAN SYRUP Ingredients: 375 ml water 5 g cloves 5 g lime zest (about 2 limes) 30 g chopped gingerroot 1 whole cinnamon stick (broken) 375 g sugar Directions: Add everything except the sugar to blender and pulse to chop.

Add to pan and heat to around 60° C. Add sugar and dissolve over heat. Strain while hot, bottle and store in the fridge for up to 2 weeks.

We might be inclined to listen to Darnes. He’s mixed drinks for George Clooney, managed cocktail parties at Cannes Film Festival and re-opened the famous American Bar in the Savoy Hotel in London. And that’s only half his resume. Now based in Calgary, he’s leaning into the craft cocktail craze, pioneering a new concept called Cocktail Concierge, a drinks agency focused on custom cocktail event service.

There’s no denying the recent popularity of craft cocktails. Variations on the Moscow mule, smoked old fashioneds and twists on tiki drinks like the mai tai are now standard menu options in most restaurants.

And with the craft cocktail trend in full swing, it makes sense that home bartending is enjoying its own little renaissance.

“Customers often come in asking what they need to set up their home bar,” says Jesse Willis at Vine Arts. “Diners try drinks at local restaurants and think, how can I make this at home.”

This recent surge in home bartending is one of the reasons Willis and his partners, Jeff Jamieson and Warren Orban, launched Fifth & Vermouth, an online store that sells a range of barware and cocktail supplies.

“Vine Arts customers started asking where they could find mixing glasses, shakers, coupes and other accessories…but there was a real hole in the market. So, we started Fifth & Vermouth to give people access to professional-grade, reasonably-priced barware.”

STOCK THE BASICS Both experts agree that it’s unrealistic (and expensive) to try to stock every bottle in the book. Instead, start with some base spirits to make a few of your favourite cocktails and build from there.

Of course, opinions abound over what constitutes “base” spirits – even our experts don’t agree. But there are five staple spirits every well-rounded bar should stock: 1) gin for the martini or Negroni; 2) rye whisky or bourbon for the Manhattan, old fashioned or whiskey sour; 3) rum for the mojito or daiquiri; 4) vodka for the Moscow mule or Caesar; and 5) tequila for the margarita or paloma. From there, you can add scotch, brandy, calvados or absinthe.

You should also stock two kinds of vermouth: sweet vermouth for drinks like the Manhattan, Martinez and Negroni and dry vermouth for the classic martini.

JD’S PRO TIP When serving a crowd, consider “prebatching” your cocktails. Pre-mix your drinks in large batches before your guests arrive. Don’t forget, however, to aerate each cocktail by shaking over ice. Or use an immersion blender to aerate the whole batch!

TOOLS OF THE TRADE There are six must-have tools you’ll need to start your home bar: 1) a cocktail shaker; 2) a mixing glass (for stirred drinks); 3) a jigger; 4) a Hawthorne strainer; 5) a bar spoon; and 6) a muddler. From here you can add specialty ice-molds, a serrated zester, a paring knife, a fine-mesh strainer…or, for the truly advanced, a smoking kit.

Want your cocktails to look like the pros? Invest in these three types of glassware: 1) Double-rocks glass; 2) a champagne coupe (the new “martini” glass); and 3) a tall Collins glass.

Non-alcoholic mixers: ice, tonic, soda, lemon and lime juice.

Bitters. Start with the “big three,” says Willis, “Orange, Angostura and Peychaud’s.” Or try Black Cloud’s sampler pack.

Sweetener. Simple syrup is must-have for a number of cocktails.

And it’s called simple for a reason.

Dissolve one cup of sugar with one cup of water over heat. Store in the fridge for up to four weeks. Look for other recipes for Grenadine, Orgeat and Falernum.

Garnishes. Stock fresh mint, oranges, lemons, limes, olives and bourbon-soaked cherries.

TAKE AND BAKE Calgary has a bevy of bakeries in all four quadrants, each with their own dedicated following including those customers who will drive across town to visit the bakery. Belgian-born Manuel Latruwe showed an interest in baking early on. The Covid-19 Tsunami B y L A NC E H U RT U BI S E In 17 years of operating Vintage Group, we have never witnessed anything that has devastated the restaurant industry like COVID-19. As the virus rapidly impacted our economy, we made the most difficult decision to lay off 100 per cent of employees and shut down all Vintage Group restaurants indefinitely. Since starting Moxies in 1986, we have experienced three recessions and always questioned how we would get through it. But we managed to keep our doors open – until now.

Imagine all your employees out of work.

Hundreds of thousands across Canada are left scrambling to figure out how to survive without employment. Without immediate relief from the government, Calgarians will likely see over 30 per cent of restaurants close forever.

Advocacy groups like One Table and Save Hospitality have raised awareness of the severity of the crisis. But is it enough to save the wellbeing of hundreds of thousands of restaurant employees? Not without the government giving us some serious attention.

It’s like we’re experiencing a tsunami – a series of waves that relentlessly hit the industry with severe impact.

Celebrating

The first wave. Restaurants already run on tight margins, and now for many, cash flow is gone. With no income, restaurateurs are still expected to pay rent, insurance and utility bills. Deferring those payments will only incur an overwhelming amount of debt.

YEARS

The second wave. Rent is due. Although many landlords offer deferrals, the restaurateur will never recover the sales they lost during the shutdown.

But once the dust has settled, they will be paying additional rent to make up the deferred payments.

The third wave. Restaurants that survived COVID-19 will now face new challenges. All ingredients will need to be replenished. While owners hope their staff will return, many will have to invest in training new employees.

The fourth wave. Restaurants are open for business but continue to face uncertainty. Will social distancing rules still be in place? Will consumers be comfortable going to public places? Before going back to “normal,” restaurants will experience low sales and will be in cost-recovery mode for some time.

Payments that were deferred and new bills that arrive will continue to overload restaurant owners. After a few months, more restaurants will be forced to close as they succumb to the burden of debt and overwhelming overhead costs.

For years, people have enjoyed cuisine that comes from around the world, but this is in serious jeopardy of not being an option anymore for Calgarians to enjoy. Without support, Calgarians can say goodbye to its eclectic food scene.

What we know for sure is that our voices need to be heard. We need the government to listen to advocates of the restaurant industry to help relieve the grim conditions we face. Even those restaurants who manage to survive the tsunami need a year to be profitable again.

That is best case scenario, and many will not be able to survive.
