‘Let Our Residents Enjoy Saratoga Lake’:

Town of Malta Buys Former Mangino’s Property, Plans To Build Public Park

MALTA — The Town of Malta has purchased the property of the former Mangino’s Ristorante, and the town has plans to turn the location into public lake access and more.

Mangino’s, a restaurant run by the Mangino family for 72 years, closed in 2018. Town of Malta Supervisor Mark Hammond said plans for the town to purchase the property were “long-awaited.” The town purchased the property for $1.9 million, Hammond said.

“This has been something that was on my radar nearly two years ago, when I was deputy supervisor,” said Hammond. “I really thought that property was something, that it would be a benefit to the town residents to obtain that and solidify and firm up any lake access we would ever have on behalf of our town to the lake.”

Hammond said he “breathed a huge sigh of relief” when the sale was finalized, emphasizing the importance of the town having public lake access.

Gardening WITH PETER

& Garden

beginning begonias

While it might seem too early to get started on spring planting, there’s one garden plant that needs to get started during winter for spring planting; tuberous begonias and the tubers just arrived at the garden center. As the name implies these begonias grow from tubers rather than seeds or cuttings like other begonias. They sport showy flowers that come in a wide range of sizes and colors. There are even hanging varieties. Besides being a great choice for planting in flowerbeds, tuberous begonias are happy to grow in containers that you can place about the shady patio or balcony.

Since tuberous begonias are slow to start, it’s best to start them indoors and the earlier the better. It’s also a great winter activity for the northeastern gardener who’s yearning for the feel of soil and the sight of something…anything that’s growing.

To make a good show in the garden, you’ll want to start several begonias. Choose pots that are an inch or so larger than the begonia tuber. Fill the pots with a good potting soil. When you’re picking out your tubers at the garden center, you’ll notice that the lumpy round tubers are domed on one side and slightly dished on the other. Starting them is a snap. Simply nestle each tuber into the soil, dished side up, into your pot or tray just barely below the surface of the soil. You should cover the top of the tuber but not with more than a half of an inch of soil.

Water with room temperature water. Make sure the container you’re using has a drainage hole. Begonias will rot easily if kept too moist. After the initial watering, keep the soil just lightly moist. Don’t water again until the soil is actually dry an inch below the surface. Poke your finger in to check. Depending on the variety you’ve chosen, sprouts will appear from one to five weeks after planting and watering. Once the first shoots appear, make sure that you keep the soil from drying out; still avoiding sogginess since begonia tubers can rot easily if kept too moist. Frequent light watering is best.

They’ll need lots of bright light but no direct sunlight. Once they start growing, you can speed them along with HALF strength balanced (20-20-20) liquid or soluble plant food every three weeks.

Once ALL danger of frost has passed in spring (mid-May) you can transplant them into their summer bed or outdoor planter. Remember, they prefer shade so make sure they don’t

get direct sunlight. A couple of hours of morning sun won’t hurt them but avoid full afternoon sun completely. Now all they need is a little of the liquid plant food every couple of weeks and regular removal of spent flowers and they’ll just go and go.

Since begonia tubers are quite tender, you’ll want to lift them from the soil to store them over winter Do this immediately after the first frost nips them in fall. Snip off all the stems and place the tubers on a sheet of newspaper to dry. Brush off any loose soil and dust them with a good bulb dust to help prevent mold. Once they’ve had a couple of days to dry off, place them into a shoebox of dry potting soil for winter storage. Store them in a cool place that won’t freeze. Get them out next winter about this time and start all over again. Give tuberous begonias a try. They’re easy to start and you’ll have fun playing in the dirt as we wait for the frozen world outside to thaw.

Thanks for the read.

2 Week of March 3 – March 09, 2023 home
A thorough watering wakes them up. Starting a season of non-stop flowering! The dish side goes up. Begonias need a big head start.

SARATOGA

SPRINGS —

Former city Mayor John Michael (J. Mike) O’Connell, passed away peacefully in Saratoga Springs during the early morning on Saturday, Feb. 25, the city announced this week. He was 87.

Mayor O’Connell, a Republican, served two terms as the 15th mayor of Saratoga Springs, from 1996-1999.

O’Connell was born Dec. 23, 1935 at Saratoga Hospital and

graduated of St. Peter’s Academy in 1953, according to an obituary published by William J. Burke & Sons/ Bussing & Cunniff Funeral Homes. He worked as N.Y. Deputy State Comptroller from 1983 to 1987, prior to being named Deputy Commissioner of Public Safety in Saratoga Springs (1987-1991) and being elected to office as Commissioner of Finance, which he served from 1991-1995.

Dems Endorse Incumbent Council Members for 2023 City Elections; Two Former Council Members Cry Foul

SARATOGA SPRINGS —

The Saratoga Springs Democratic Committee announced this week it had endorsed each of the five incumbent members of the City Council in advance of the November 2023 election.

The five council members, all Democrats, are: Ron Kim for Mayor, Minita Sanghvi for Commissioner of Finance, Jim Montagnino for Commissioner of Public Safety, Jason Golub for Commissioner of Public Works and Dillon Moran for Commissioner of Accounts.

Additionally, Gordon Boyd was endorsed by the committee as Supervisor to represent the city at the county level.

“These endorsements weren’t automatic,” Pat Tuz, chair of the Saratoga Springs Democratic Committee, said in a statement. “Candidates had to go through a questionnaire and interview process, and then appear before the full

committee to defend their record and describe their plans for the next term. What impressed me most, across the board, was their commitment to serving the public and being responsive to citizen requests.”

Two former council members – former Finance Commissioner Michele Madigan and former DPS Commissioner Chris Mathiesen, however, have criticized the Saratoga Springs Democratic Committee, alleging the committee “derailed the traditionally open process of endorsements,” according to a joint statement released by Madigan and Mathiesen on Feb. 28. The statement also served to announce their own respective candidacies in the citywide election.

While both confirm they had been interviewed by “an endorsement committee,” they say they were “refused” the traditionally allowable abilities of addressing the full committee at which the

endorsements were voted on, as well as not allowing registered Democrats to attend the meeting. Madigan, announcing her candidacy for Saratoga County Supervisor, and Mathiesenannouncing his candidacy for mayor, say they have now decided “to go through the arduous task of collecting signatures in order participate in a (Democratic Party) Primary.”

The City Council is comprised of five councilmembers – one mayor and four commissioners. Saratoga Springs is additionally represented at the county by two supervisors. Republican Matt Veitch and Democrat Tara Gaston currently hold the two positions. Gaston announced earlier this year she will not seek re-election. Elections are held every two years. Mathiesen and Madigan will be soliciting signatures for petitions to get on the Democratic line on the ballot.

Tonko Announces More Than $150K Funding for Local Fire Departments

SARATOGA COUNTY —

Congressman Paul Tonko, who represents Saratoga County in the 20th Congressional District, this week announced the awarding of more than $156,000 in federal funding to two local fire departments.

In this round of funding from the Assistance to Firefighters Grants (AFG) program, the Burnt Hills Fire Department will receive $121,308.57, and the South Glens Falls Fire Company will receive $34,746.66, all going toward the purchase of radios, equipment maintenance, and other critical safety and operational needs to protect their members.

Greg Bradtke, Chief of the Burnt Hills Fire Department, said the award will allow the department to purchase 26 new P25 compliant radios with ancillary equipment and place one at every seat on apparatus and also in the hands of command personnel.

Arthur L. Porlier Jr., Firefighter and Grant Committee Chair at South Glens Falls Fire Company, said the new equipment, along with policies and procedures for

Under Development: Renovations at Longfellows, Redevelopment of Stewarts, SoBro Hotel Expansion,

on-scene decontamination of firefighters, will help to reduce the exposure to carcinogens our firefighters face, decreasing the likelihood of obtaining occupational cancer. According to the National Institute for Occupational Safety and Health (NIOSH), firefighters are currently being diagnosed with cancer at a nearly 10 percent higher rate than the general public and experiencing cancer-related deaths at a nearly 15 percent higher rate.

Tonko’s announcement marks the 19th round of the competitive FY 2021 AFG announcements, with previous rounds delivering a total of more than $1.56 million for fire departments in Albany, Glenville, North Greenbush, Saratoga Springs, Schenectady, and Troy.

SARATOGA SPRINGS — A criminal complaint was filed last month asking the Saratoga Springs Police Department to issue a summons to Chandler Hickenbottom, in connection with the disruption of a Feb. 7 City Council meeting. That council meeting was subsequently adjourned early and resumed two days later.

The request for a criminal summons was made on Feb. 16 by Public Safety Commissioner Jim Montagnino, according to court documents. The charge, a disorderly conduct violation, is specified under the subdivision as disturbing a lawful assembly without lawful authority to do so. Hickenbottom, 26, is scheduled to answer to the charges in City Court on March 7.

Following reports of the filing, city Mayor Ron Kim released a statement regarding the matter and the apparent filing of a summons against Hickenbottom, a member of Black Lives Matter Saratoga.

“I regret to hear that the

Commissioner of Public Safety has filed a summons against a BLM activist for her disruptive conduct during the Feb. 7, 2023 City Council meeting. This action is counterproductive to a continued dialogue with all members of our community, a waste of city resources and could potentially lead to additional costs to the city and taxpayers,” said Mayor Kim, who along with Public Safety Commissioner Jim Montagnino were two of the five council members present during the Feb. 7 meeting.

“The BLM activist who interrupted our meeting…acted in an irresponsible manner and I condemn any outbursts by a community member at our public meetings, but I do not believe it was criminal or requires any consideration by the courts,” said Kim, calling on Montagnino to withdraw the summons and adding that the action is “a misguided overreach by the Department of Public Safety… counterproductive and regrettable.”

Additional statements were later released by three other City Council members. They read, in part:

• Commissioner of Finance Minita Sanghvi: “I am deeply distressed to see that instead of moving towards engagement and dialogue through a community forum, the Commissioner of Public Safety has decided to waste taxpayer dollars by filing a criminal complaint against Chandler Hickenbottom of Saratoga BLM.”

• Commissioner of Public

Works Jason Golub: “I believe there are much better ways to respond to and solve the issues raised by BLM and by the Police Reform Task Force, rather than escalating unproductive rhetoric and taking unnecessary legal actions...BLM and the protests we’ve seen locally and nationally over the past few years give voice to a problem that must be taken seriously, and not dismissed by leaders. I believe the best path forward is a strategic and ongoing dialogue between BLM, members of the council, members of the police force, and other impacted constituencies with concrete outcomes and accountability. Everyone must come to the table and work together in order for us to progress.”

• Commissioner of Accounts Dillon Moran said he was “deeply disturbed by the unilateral actions taken by the Commissioner of Public Safety,” and urged “collaborative engagement with those seeking answers about our efforts relative to the work of the Police Reform Task Force... the criminalization of speech is simply unacceptable and will further widen the divide that exists within our community.”

Subsequent to the February meetings, the mayor recommended changes to the twice-amonth council meetings, effective immediately, that will feature an earlier start time and place a time-lengthened public comment period at the end of meetings, rather than at the beginning – where they currently stand.

‘Let Our Residents Enjoy Saratoga Lake’: Town of Malta Buys Former Mangino’s Property, Plans To Build Public Park

continued from front page... Hammond said he hopes to create office space and boat slips/ launches for the Saratoga Lake Protection and Improvement District (SLIPID), the Malta Ridge Volunteer Fire Company,

and the Saratoga County Sheriff’s Office Marine Patrol.

“Really happy that we’re at this point,” Hammond said. “It’s step one. ...The major step is the first one, and that was getting the property.”

Hammond said there are also goals to build a park for residents, and mentioned picnic spaces, a non-motorized launch, and a fishing pier as possibilities. Hammond said the goal is to allow the town’s residents to “enjoy the lake.”

“That’s our goal. Let our residents enjoy Saratoga Lake,” said Hammond. “It’s our way of affording them access to that body of water that a lot of people enjoy. But from the Town of Malta standpoint, we had nothing until now that guaranteed our residents access to that lake.”

Hammond said he envisions the park holding picnic areas, grill setups, and more, allowing a space where residents can relax by the water and “enjoy the serenity of the lake.”

“Basically, just relax, and enjoy one of the beauties that we have right in our backyard,” Hammond said. “It really, truly, is a gem.”

Hammond also said it would be beneficial for SLIPID, Malta Ridge, and the County Sheriff’s Marine Unit to have a presence on the lake. He said SLIPID “are the true stewards” of Saratoga Lake.

“I want them to have their own bonafide office space, where they can show the residents, and have a presence at this location, to show, ‘Hey, this is what we’re doing to keep this lake healthy, and keep it safe,’” said Hammond. “I’d like

to have those three entities have a means to say, ‘OK, this is where we can launch to and from, or slip,’ and also provide what small office space they may need to facilitate their operations daily.”

The property is roughly 2.65 acres in total, said Bonnie Mangino, daughter-in-law of former Mangino’s owners Richard and Pauline Mangino and a former employee of the restaurant. She said the family is “so grateful” to Hammond and the town for their purchase.

“We are so grateful to Mark Hammond. It’s really his vision to make that happen, and to make sure that property didn’t go to some sort of private development,” said Mangino. “He worked hard, and over a long period of time, to make that happen.”

Mangino said the family is

glad the property will become a resource for local residents.

“Gratitude is the absolute feeling of the week, and the month, and the year,” Mangino said. “Toward a lot of people, but Mark is at the top of that list, for sure. ...Years from now, people won’t remember our name or his name, but they’ll know that park and they’ll love it.”

Hammond said the town is hoping to move quickly, attempting to maintain “forward momentum” with the project.

“Once we get pointed into a direction of what we should do, I’m going to move as quickly as I can,” said Hammond. “Not because I want to do it out of haste, but because I don’t want this opportunity to lose its steam. I want this to move forward, and I want it to be available for people sooner than later.”

DON’T MAKE DECISIONS (STRICTLY) BASED ON WHAT YOU READ ON THE INTERNET/SOCIAL MEDIA

I have a confession to make: in the past I’ve “self-diagnosed” a medical issue by searching Google before going to the doctor.

Inevitably when I went to the doctor I was shocked to learn that my self-diagnosis was not correct, for reasons that were very obvious to the doctor upon hearing the entire context of my situation but that were overlooked during my research.

Go figure, and I’m sure I’m not alone in this.

So it goes with legal problems as well.

It’s very common that a potential new client will come in to meet with me having done their own research. This is great; in fact, we prefer to work with engaged

clients who do research before reaching out to or hiring a lawyer.

Where this becomes less beneficial, however, is when the person says something to the effect of: “well, I read online that this person in Florida won _____ million dollars for the exact same thing.” Or, “my friend/spouse/ sibling told me that based upon their research I should expect to get _______ outcome.”

It’s human nature to wonder about the future, and about the potential outcomes of a problematic situation. Legal matters are very stress inducing, so it’s no surprise that they would be ripe for this sort of thinking. These days this inevitably leads most people to online research and/or discussions with friends.

The beauty of the internet is that essentially all of the information in the world is available to everyone. One of the downsides, however, is that all of the information in the world is available to everyone. Much of it without context, which leads most of us to form conclusions based upon surface level information. For better or worse, however, in the legal profession context matters. A lot.

When a person comes to a lawyer with a legal problem, the lawyer will typically approach the situation using the framework below (this is what’s taught in most law schools):

1. What are the relevant facts of this situation? (Note: what the client thinks are relevant and what the lawyer thinks are relevant are not always the same).

2. What legal issues do these facts raise?

3. What is the relevant law(s) applicable to these facts and issues?

4. How does that law apply generally?

5. What facts make this case similar or different from the general application of the law?

6. What intangibles impact the potential outcome based upon the general application of the law? These include (but certainly aren’t limited to):

a. Location of the matter;

b. Witnesses;

c. Credibility of parties;

d. Potential public interest;

e. Etc.

#’s 5& 6 are critical, because in our experience online searches and discussions with friends/ family often overlook both the details that make cases unique, as well as the intangibles that can have a substantial impact on the outcome. An easy example of intangible “a”: someone who suffers a broken leg in a car accident in Kings County, NY will very likely have a different outcome than someone who suffers the same injury in Saratoga/Warren/Washington or

other upstate New York counties. In that context, location matters. I thought of this just this week, when I read an article about a settlement in the case involving the family of Kobe Bryant, who settled multiple claims against Los Angeles County for close to Thirty Million Dollars. The facts of the claim were fairly straightforward and included allegations that deputies who arrived on scene took unauthorized photos and shared them.

Of course the case was anything but usual, and involved a) a public figure and case of massive public interest; b) in a jurisdiction that has a history of substantial jury verdicts and settlements; and c) what appeared to be significant credibility issues on the defense side. So, while a reasonable person could see that settlement and think, “my case should be worth that much or close to it,” this would more likely than not be incorrect for the reasons I mentioned.

The point is, if you find yourself with a legal (or medical, accounting, engineering, plumbing, etc.) problem it absolutely makes sense to do your own homework and educate yourself about the process. Be cautious, however, about reaching conclusions about how things might go based solely on articles online or conversations with friends, keeping in mind that what you read often lacks the relevant context, which can make all the difference.

‘Dare to Imagine’: Local Author Frank Gratton Hopes to Inspire Kids to Use Their Imagination With Sci-Fi Series

CLIFTON PARK — Frank Gratton has always let his imagination run wild. Now, through his books, he hopes to inspire kids to do the same.

Gratton, a Saratoga Springs native, has published two books, ‘Billbet’s Space Adventure,’ in 2020, and ‘Nula,’ in 2022. His third book, ‘Nula: Second Generation’ is planned to be released sometime next year.

The series details a group of children who become entangled in space adventures, traveling across the universe to save planets in distress. Gratton said the story begins in the first book, when the young Billbet, one of the main characters, accidentally lands on Earth. He befriends two human kids, Theresa and Kevin, who attempt to help him return to his home planet.

The second book, ‘Nula’, follows Theresa (now known as

Nula) and Kevin (now known as Dauntless) as they travel across the universe on a ship they constructed with the help of Billbet.

“Of course, Nula is the star,” said Gratton. “She’s a young earthling who started off when she was 10 years old, and she became a hero. Not because she wanted to, she just kind of fell into it. The new book, she’s going on some real dangerous missions.”

Gratton said he is a science fiction fan who is particularly interested in space, and wants kids to simply have fun reading his books.

“I want it to be fun,” said Gratton. “I don’t want the reader to get scared, or anything like that. I just want them to have fun. I remember when I was reading Huckleberry Finn and Tom Sawyer, I just had a lot of fun.”

Gratton said his main goal is for kids to become excited about using their imaginations.

“My main hope is that I can get them to get excited about

their imagination,” Gratton said. “Everybody’s got one. Most people just don’t do anything with it. … Imagination is what starts anything.”

The first book in the series was a long time in the making, Gratton said, with his first inspiration coming while he was serving in the U.S. Navy.

“I was in the Navy in the 1960s, and I was passing through the Mediterranean Sea, and I was on the midnight watch,” said Gratton. “It was a clear night, and there were a billion stars up there. I just started fantasizing, my imagination started running wild.”

Years later, while employed at G&H Hardware in Schenectady, Gratton said he began work on the book.

“There was a Stewart’s ice cream store right down the road. I went to work early every day, and I sat in that shop, and I wrote my first book,” Gratton said.

Gratton said he began writing the book during his time at the store, which came after a stint working at his father’s hardware store in Saratoga Springs. He eventually worked at Saratoga Casino Hotel from a year before its opening until he retired in 2016.

Four years later, in 2020,

‘Billbet’s Space Adventure’ was published, almost 25 years after Gratton began writing it.

“When I wrote the book, I wrote it by hand,” said Gratton. “Then I hired a guy to put it on a word processor. … He put it on the word processor, printed it out. I had the pages bound, and it laid in my closet. Then my daughter self-published it, which was a challenge all by itself.”

Theresa Gratton, Frank’s daughter and the namesake of the series’ main character, published

the first book through Amazon’s Kindle Direct Publishing, she said. While she admitted it was a “learning process”, the book is currently available on Amazon and can be ordered by request at bookstores.

Gratton said after reading ‘Billbet’s Space Adventure’, he wanted to continue writing about the characters. The second book in the series, ‘Nula’, was published by Olympia Publishers, a Londonbased publishing company.

“After I read ‘Billbet’ when it was in cover, I really got choked up about the characters,” Gratton said. “I liked the characters, and I wanted to make them go further. So that’s really the reason why I did it.”

And now, Gratton is working on the third book in the series, ‘Nula: Second Generation.’ He has no plans to stop in the future, saying, “As long as I can write, I’ll write.”

“Right now, I’m content with just writing and hopefully somebody reading,” said Gratton. “I want people to read it. I don’t even care about making any money, I just want people to read it.”

And ultimately, Gratton said he hopes the books can help kids “dare to imagine.”

“That’s the beauty of books. They can take you wherever you want to go,” Gratton said. “That’s what I’m hoping to do.”

Perfect Plant Farm A holistic take on farm-to-table food

SATURDAYS

9:30 A.M. - 1:30 P.M.

Chicken Biryani

Makes 10 Servings

Prep time: 10 mins | Cook time: 50 mins

It’s 4 p.m. on a February evening in Latham, and the temperature is falling.

Mahbub Rahman, his wife Irin Naher, and their three children, Masrur, Haniam, and Surah, hurry to cover flowers growing in their hoop house.

They carefully lay tarps over ranunculus, snapdragons, tulips, and other flower varieties. They will bring these flowers to farmers’ markets beginning in May.

The family works together to support their farm and holistic wellness business, Perfect Plant Farm, a NY State Grown and Certified farm. The farm participates in Agricultural Environmental Management and is free of chemicals and pesticides. Their products include microgreens, seasonal flowers, potted succulents, and ready-to-eat foods like microgreen smoothies, salads, soups, and rice dishes.

“Our goal is to make and grow real food for good health because everyone should have the right to be healthy,” explained Rahman.

Microgreens are a crucial part of what is produced at Perfect Plant Farm as they contain 4-40% more nutrients than mature vegetables and herbs typically consumed. The tiny greens are packed with vitamins, minerals, and antioxidants. Vibrant flats of microgreens are available from the farm at weekend farmers’ markets in Saratoga.

“It is very important to understand what foods support our health needs because we are all different,” said Rahman. “What makes your body happy is different from mine.”

The family also promotes their holistic business, Irin Wellness. Naher, a licensed holistic health professional, offers personal nutrition consultation.

“The goal is to help people to make the right food choices,” explained Rahman.

Perfect Plant Farm supports the understanding that food should be delicious and healing. They bring lentil soup with vegetables, herbs, and lemon, chicken and rice take-home meals, spring rolls, rice pudding, vegetarian pakora (fritters), and more.

“We really enjoy offering our food at farmers’ markets,” said Rahman. “It is where real people come to shop, the food is the best, and it helps the community,” he added.

You can also find Perfect Plant Farm at the Spa City and Colonie Farmers’ Market. This summer, they will also attend the Clifton Park Farmers’ Market. Their products are available for pick-up in Latham by preordering by email at perfectplantfarm@gmail.com and by phone at 646-591-6046. Ask about their CSA shares to save on prepared food, flowers, and microgreens.

The Saratoga Farmers’ Market is open on Saturdays from 9:30 a.m.-1:30 p.m. in the Wilton Mall Food Court. Find us online at www.saratogafarmersmarket.org, where you can sign up for our weekly newsletter, and follow us on Facebook and Instagram @SaratogaFarmersMarket.

INGREDIENTS:

*Ingredients currently available at the farmers’ market

• 1 cup plain yogurt*

• 2 tablespoon lemon juice

• 4 cloves garlic*, minced

• 1 tablespoon ginger, minced

• 1 teaspoon coriander powder

• 1 teaspoon cumin powder

• 1 teaspoon red chili powder

• 2 teaspoon garam masala

• 1 ½ teaspoon salt

• 3 lbs chicken thighs, bone-in*

• 2 ½ cups Basmati rice

• 7 Tbs Ghee, coconut oil, olive oil, or oil of your choice

INSTRUCTIONS :

1. Mix all the marinade ingredients together in a large bowl. Add the chicken to the marinade and mix, ensuring each piece is coated thoroughly. If time permits, cover the bowl and put in the fridge to marinate for at least a half hour. For optimal results, allow the chicken to marinate overnight.

2. Soak and cook the rice: Place rice in a large bowl, fill with water, and swish with your hand for 10 seconds. Drain water and repeat 3 times. Drain well in a colander. Place rice and 3 ½ cups of water in a medium-sized saucepan over medium-high heat. Once simmering, cover and cook for 12 minutes. Remove from heat.

3. Heat oil in the dutch oven or skillet on medium-high heat. Add the marinated chicken and use a spatula to scrape any excess marinade into the pot. Mix well. Simmer, stirring occasionally for about 20 minutes or until the chicken is cooked through and the oil separates. Taste and adjust for seasoning.

4. Add the rice to the cooked chicken and continue to cook on low heat for 20-25 minutes.

5. Serve with fresh lemon and cilantro.

March is here. As we are in the final stretch of the colder weather, our appetites may still yearn for heartier meals. Recently, I went through my kitchen looking at the basics of what I use often. I found that I use a handful of reliable pots and pans. However, I also found that I reach for a rimmed baking sheet often. A rimmed baking sheet can be used for baking, roasting, toasting, and broiling. You can also use it with a wire rack to hold foods

USING The Basics

Hello my Foodie Friends!

before and after frying for baking cookies, scones, vegetables, potatoes, fish, meat, croissants, pastries, breads, pouring out toffee or chocolate bark, cookies and so much more.

Sheet pan dinners have skyrocketed in popularity because they are such an easy way to cook veggies and proteins together in one pan, allowing flavors to blend and avoiding a sink full of dishes to clean. For too long this workhorse of the professional kitchen was a chef’s secret, helping bear the loads for prep cooks, caterers and bigbatch bakers. No more. Sheet pans

Sheet Pan Chicken and Rainbow Vegetables

INGREDIENTS

• 1 medium sweet potato scrubbed and diced into 1/2-inch-wide pieces

• 3 tablespoons extra-virgin olive oil divided

• 1 1/4 teaspoons kosher salt divided

• 3/4 teaspoon black pepper

• 1 1/4 pounds boneless, skinless chicken breasts cut into bite-size pieces (about 2 medium breasts)

INSTRUCTIONS

• 1 small head broccoli  cut into florets (about 2 cups florets)

• 1 red bell pepper cored and cut into 1/2-inch pieces

• 1 zucchini halved lengthwise, then cut into 1/2-inch-thick half moons

• 1 yellow squash halved lengthwise, then cut into 1/2-inch-thick half moons

• Zest and juice of 1 medium lemon

1. Place a rack in the center of the oven and preheat the oven to 400 degrees F. For easy cleanup, line a large, rimmed baking sheet with foil. Lightly coat the foil with nonstick spray.

2. Place the sweet potatoes in a large bowl. Drizzle with 1 tablespoon olive oil and sprinkle with 1/4 teaspoon kosher salt and 1/4 teaspoon black pepper. Toss to coat and then spread into a single layer on the baking sheet. Keep the bowl handy. Bake for 10 minutes, or until the sweet potatoes are just beginning to soften on the outsides but are still too firm to eat.

3. Meanwhile, in the bowl that you used previously for the sweet potatoes, place the chicken, broccoli, bell pepper, zucchini, and yellow squash. Drizzle

are popping up in the kitchens of recent grads and grandmothers alike — and not a moment too soon. These sturdy rimmed stainless steel or aluminum sheets are good for so much, there is little this pan cannot do.

We carry Nordic Ware and USA Pan rimmed baking sheets. Both of these brands are excellent quality and have stood the test of time (and frequent use). The 12×17-inch size is just the right size for a dozen cookies, and the rimmed edges prevent any sauces/syrups from dripping off the sheet.

The Nordic Ware naturals was Voted "Best Baking Sheet,” the Baker’s Half Sheet is an essential tool in the kitchen you will use in a variety of ways from sheet pan dinners, to baked goods to food prep. Our top-rated Naturals® Bakeware collection is made of pure aluminum for superior heat conductivity and produces consistent evenly browned baked goods every time. These premium pans have a lifetime durability and will never rust. Encapsulated galvanized steel rims prevent warping. Creativity meets natural aluminum sustainability.

The rimmed baking sheet from USA Pan includes a unique fluted design that facilitates air circulation and maximizes pan strength to help resist warping. It

is Made with the same standard high-performance features used for bakeware in commercial bakeries. The USA Pan is easy for clean up with a nonstick silicone coating: FDA approved for safe contact with food. Looking for those basics for your kitchen? Stop by Compliments to the Chef, your Neighborhood Kitchen and Cutlery store located at 33 Railroad Place. Let us assist you with the cool tools that make a difference in your kitchen. Remember my Foodie Friends, “Life Happens in the Kitchen”.

Take Care, John & Paula

• 2 1/2 teaspoons  Italian seasoning

• 1 teaspoon garlic powder

• 1 teaspoon onion powder

• 1/4 cup freshly grated Parmesan cheese

with the remaining 2 tablespoons olive oil. Add the lemon zest and juice, Italian seasoning, garlic powder, onion powder, and remaining 1 teaspoon salt and 1/2 teaspoon pepper. Toss to coat.

4. Transfer the chicken and vegetable mixture to the sheet pan with the sweet potatoes, using a spatula to spread everything into an fairly even layer and stirring it a bit if needed.

5. Return to the sheet pan to the oven and bake for 15 to 20 additional minutes, stirring once halfway through, until the chicken is cooked through and no longer pink in the middle and the vegetables are tender but not mushy. (They won’t be browned and caramelized but will be delicious to eat.) Sprinkle with Parmesan. Serve hot.

Music Haven/ Proctors Collaborative Bringing International Artists at UPH

SCHENECTADY — For 30 years, Music Haven has presented global sounds in Schenectady’s Central Park bringing international music to the summer seekers hailing from locales locales like Yemen, Ukraine, Louisiana, Ireland and Peru. The Passport Series takes the same world music that patrons of the park series have come to cherish and brings it to Proctors in Schenectady and Universal Preservation Hall in Saratoga Springs.

“Music Haven is thrilled to expand its partnership with Proctors Collaborative to include UPH as well as the GE Theatre at Proctors,” said series curator Mona Golub, in a statement. “Our winter/spring Passport Series itinerary boasts exquisite artistry from four distinct locales – two familiar favorites in Ireland and Cuba and two dynamic new destinations in Turkey and Korea.”

The first in the 2023 Passport Series is the traditional Irish

music of Dervish at Proctors, Schenectady 7:30 p.m. on Friday, March 3. Aynur – who has become one of the most well-known musicians from Turkey and a representative of the Kurdish people – will perform at Proctors at 7:30 p.m. on Thursday, May 4.

At Universal Preservation Hall in Saratoga Springs: get transported to Cuba. “Salsa Night with Tiempo Libre” will be at UPH 8 p.m. Friday, March 24. Tiempo Libre are modern heirs to the rich

musical tradition with its sophisticated performances of timba music, an irresistible, dance-inducing mix of Latin jazz and Cuban song.

Lastly, join ADG7 (Ak Dan Gwang Chil) at UPH 8 p.m. Friday, May 5. ADG7 features a rich repertoire inspired by Korea’s sacred, shamanic ritual music (gut) and beloved folk songs (minyo) of Hwanghae Province in the northern reaches of the Peninsula. ADG7 made their first big U.S. splash at globalFEST

in 2019, an annual cultural celebration that features the most dynamic music globally.

The Passport Series pass includes a ticket to each of the four winter/spring 2023 shows in the series for $100. Single tickets to each show are also available at the Box Office at Proctors, in person or via phone at 518-3466204 Monday-Friday 10 a.m.-6 p.m. and Sunday 10 a.m.-2 p.m. or online at proctorscollaborative. org/passport-series.

Mark Erelli: Album Release Concert at Caffe Lena March 5

SARATOGA SPRINGS — During a performance in the summer of 2020, Mark Erelli looked down at his guitar neck and couldn’t believe what he saw. Or rather, what he couldn’t see: his fingers on the frets.

A subsequent diagnosis of the degenerative eye disease retinitis pigmentosa (RP) provided some answers, but also yielded new questions. Does diminished eyesight decrease one’s insight? What does it mean to be ‘fully seen,’ by oneself and by others? These questions, along with Erelli’s drive to regain his creative agency, are at the heart of his new album “Lay Your Darkness

Down.” The album was released Friday, Feb. 3

Erelli turned to songwriting as an internal compass that might guide him in assessing this radically-altered vision of his future. The new songs, though decorated with references to shadows, light, and obscured vision, are more about resilience, love, and the human condition than they are about blindness: “Lay your darkness down/ shadows lie upon the ground, to show us where the light is coming from…”

Mark Erelli will perform at Caffe Lena on Sunday, March 5. Call 518-583-0022, or go to: caffelena.org.

Athlete Dominates Pro Debut Saratoga Springs Native Don Walton Wins MMA Match

SARATOGA SPRINGS —

Karate, judo, jiu-jitsu, wrestling, Muay Thai. You name it, and Don Walton likely utilized it during his professional MMA debut on Feb. 18.

Walton, a coach and trainer at the Saratoga Academy of Elite Martial Arts, defeated Jason LaPage as part of the Battle in Barre 9 in Barre, Vermont. The match was Walton’s first professional fight.

“It hasn’t become real yet,” said Walton of his victory. “It still is kind of sinking in a little bit. But it’s just nice to be able to watch all the years of suffering and hard work that I’ve been through finally come to fruition, and show something.”

Walton has been training at the Saratoga Academy of Elite Martial Arts since 2012, beginning as a student. Walton is a black belt in Kyokushin karate, a four-stripe brown belt in Brazilian jiu-jitsu, a yellow belt in judo, and will be receiving his jiu jitsu black belt soon, said Saratoga Academy of Elite Martial Arts head instructor Jim Bruchac.

Eventually, looking to increase his skills, he headed west to advance his training at Kings MMA in Huntington Beach, California. There, he worked with highly acclaimed trainer Rafael Cordeiro, who has trained fighters such as Anderson Silva, Maurício Rua, Wanderlei Silva, and more.

“It just was really amazing,” said Walton of the experience. “I just fell in love with it, I loved everything about it.”

Fun And Games

After the COVID-19 pandemic hit, however, Walton ultimately moved back to the Capital Region. Initially, Walton was unsure if he wanted to continue fighting, but said the itch eventually returned.

Walton’s professional debut would not come without its hurdles, however. His initial opponent dropped out due to an injury, and Walton’s first professional opportunity did not come until a year later.

Walton said in order to stay prepared, he simply tried “not to focus too much on the fight.”

“I tell people, if all you do is focus on trying to be a fighter, you’re going to burn yourself out,” said Walton. “You physically and mentally cannot be focused on fighting all the time.”

That’s where his role as a teacher comes in. Walton said he focuses most of his time on being a martial artist and a teacher at the Saratoga Academy of Elite Martial Arts, saying it is “more rewarding” to watch another person develop their skills.

“I really enjoy teaching more than anything else. Fighting is really fun, don’t get me wrong,” Walton said. “But it’s more rewarding to me to watch someone else develop themselves in a way, where I get to play a role in that myself.”

Walton runs the Academy’s muay thai programs for both adults and children, and is a camp instructor at the martial arts school at Ndakinna Education Center, Bruchac said.

“We have some very competitive kids in both those arenas,”

said Bruchac. “Right after winning his fight, he was helping us run one of our youth camps, our nine-year-old group.”

Eventually, the day of Walton’s fight came, and saw him utilize a wide variety of moves in order to capture a win via leg lock in the second round. Walton said the skill learned from a variety of styles has been invaluable.

“In this fight, I got to use muay thai. I used karate, I used judo, I used wrestling, I used jiujitsu. Just everything that we do here,” said Walton.

Bruchac said Walton is ultimately fighting “for his students,” providing a real-world example of the moves and methods that the Academy teaches.

“To highlight what we teach at our school, to show things come to fruition in a real situation like a sports situation, and then be able to pass that on to his students,” said Bruchac. “He fully illustrated all that we offer at the school in brilliant fashion.”

“For me, I like to say this is the example,” Walton said. “You see now why I require you to understand judo, why I require you to understand wrestling. … It’s not just about punching people, you have to also be able to deal with every possible scenario.”

As for the future, Walton said that while he has been offered more professional opportunities, he will likely only fight “once or twice a year.”

“At the end of the day, my career is a coach and a martial artist,” Walton said. “I hope to get back in there again before the end of the year. But right now, we’ve got other guys on our team that I’m trying to help bring up. I’ve got some guys that might be fighting in March and April, so I want to help those guys first.”

Walton said that ultimately, professional fights are a way for him to test himself.

“For me, I like to push myself to the limit and just be able to find out, how far can I go? How far can I push my body?” said Walton. “Win or lose, I don’t care. It’s all about me testing myself and my skills. It’s not about me proving anything to anyone other than myself.”

Wrestlers Place at States Locals Finish Strong at State Tournament

ALBANY — Eight local wrestlers competed at the NYSPHSAA Division 1 State Championships over the weekend at MVP Arena in Albany, concluding their seasons against the top wrestlers in New York State.

Ballston Spa’s Darrien Insogna finished as the NYSPHSAA Division 1 runner-up at 215 pounds, falling to Minisink Valley’s Ethan Gallo in the state championship match. Connor Gregory earned a thirdplace finish at 160 pounds for the Scotties, while Ralph Keeney placed fourth at 110 pounds. Also competing for the Scotties was Cameron Hinchcliff.

Saratoga Springs’ Taylor Beaury earned a seventh-place finish at 126 pounds, while Lorenzo Palleschi battled to an eight-place finish at 189 pounds. Also competing for the Blue Streaks were Vito Spadafora and Patrick McKinley.

Ballston Spa head coach Harvey Staulters said it was “great to get them out there a second time,” noting that Insogna, Gregory, and Keeney all wrestled at last year’s state championships as well.

“Because of their experience, they were a little more at ease, and had a little higher expectations, a little higher goals,” said Staulters. “It was great to watch them compete.”

All three of the Scotties’ returning wrestlers improved on their finishes from the 2022 state championships.

Saratoga head coach Jake Zanetti said the weekend was “a nice culminating event” for Spadafora and Palleschi, who are seniors. Zanetti added that it was great experience for Beaury, a sophomore, and McKinley, a junior.

“Definitely a great opportunity for all four of them for different reasons,” said Zanetti.

For Ballston Spa, Insogna opened his tournament by pinning Longwood’s William Francois, then pinned Central Square’s Rocky Files in the quarterfinals. Insogna pinned Bellport’s Jaiden Green in the semifinals, dropping an 11-4 decision to Gallo in the

state title match.

Gregory earned a 17-6 major decision over Horseheads’ Liam Levantovich in his opening match, rallying to earn a 6-4 sudden victory decision over Iona Prep’s Sean Dagl in the quarterfinals. Gregory fell in the semifinals, dropping a 5-3 decision to Cornwall’s Tyler Reed, before winning a consolation match over Churchville-Chili’s Coy Raines to advance to the third-place finals. There, Gregory beat Degl again, earning a 3-2 decision.

Keeney opened the tournament with a 15-2 major decision over Brady Judd of Warwick Valley, dropping a 9-0 major decision to Valley Central’s Luke Satriano in the quarterfinals. Keeney earned consolation round victories over Jason Euceda (Brentwood), Ryan Cielinski (Spencerport), and Ryan Ferrara (Chenango Forks), before dropping the third-place finals in an 8-4 decision against Long Beach’s Dunia Sibomana.

Hinchcliff defeated Hilton’s Tyler Simons in the first round, falling to Niagara Falls’ Amarfio Reynolds in the second round. In the consolation rounds, Hinchcliff earned a 9-5 decision over Horseheads’ Cody Dale, and a win by fall over Carthage’s Landon Copley before dropping a 5-0 decision to Pittsford’s Samson McKissick-Staley.

Staulters had praise for his wrestlers, saying they “exceeded expectations” over the weekend.

“They were inspirational, to continually fight and move forward, despite some of the adversities,” said Staulters. “Sometimes they lost, and they just kept coming back. It was really a great experience.”

For Saratoga, Beaury opened the tournament with a victory by technical fall over West Babylon’s Billy Colloca. He fell to Calhoun’s Ray Adams by an 8-2 decision in the quarterfinals. Beaury won his first consolation match over Fox Lane’s Justin Gierum, falling to Nikolas Massero of St. Joe’s Collegiate in the second. Beaury earned a 4-2 decision over Bellport’s Camryn Howard in the seventh-place match.

Zanetti said that Beaury “did really well,” noting that the 126pound weight class was particularly strong.

“The seeds don’t really matter much at states,” Zanetti said. “He’s a tenth-grader, he battled a lot of older kids than him.”

Palleschi beat Canandaigua’s Mason Depew in the opening round, avenging a loss to Depew earlier in the season on Jan. 21. Palleschi fell to top-seeded Zack Ryder of Minisink Valley in the quarterfinals, and bounced back by winning his opening consolation match over Bethlehem’s Quincy Bonville. Palleschi lost

to Pine Bush’s Braydon Pennell in the second consolation match, and dropped a 6-2 decision to Orchard Park’s Jack MacDonald in the seventh-place match.

Zanetti said it was nice to see Palleschi avenge his earlier loss to Depew, which came in sudden victory during the King Bison Invitational at Shaker High School.

“For him to get a ‘W’, that was really nice,” said Zanetti.

Spadafora lost his opening round match to Nyack’s Sam Szerlip, defeating Lancaster’s Mikey Schaefer in the consolation rounds. Spadafora fell to Clarke’s Justin Soriano in the third consolation round.

“(Vito has) been a key program guy for a long time, so for him to get to the state

tournament was really fun for him,” said Zanetti.

McKinley earned a 5-3 sudden victory decision over Davit Abjandadze of Edward R. Murrow High School, falling to Gallo, the eventual state champion at 215 pounds, in the quarterfinals. McKinley beat Josh Amiel of John F. Kennedy (Bellmore) by 4-3 ultimate tiebreaker in the first consolation match, falling to MacArthur’s Ben Velasquez by 7-2 decision in his second consolation match.

Zanetti described McKinley as “a total Cinderella story,” saying he emerged as one of the team’s top wrestlers midway through the season.

“Once he started showing signs of that, it was great for him to get out there,” Zanetti said.
