Minita Sanghvi Secures Democratic Nomination for NY’s 44th Senate District
by Thomas Dimopoulos Saratoga TODAYSARATOGA SPRINGS — Minita Sanghvi has secured the Democratic nomination for New York’s 44th State Senate district, following endorsements from the Saratoga County Democratic Committee and Schenectady County Democratic Committee.
“We are proud to endorse Minita, a committed advocate and proven problem solver. Her roles as a dedicated parent, respected educator, and effective public servant showcase her commitment to delivering results that rise above partisan politics,” Saratoga County Democratic Committee Chairwoman Martha Devaney said this week, in a statement.
Last week, County
Republicans announced their Party’s endorsement for re-election of incumbent Sen. James Tedisco for the seat.
Sanghvi is currently a member of the Saratoga Springs City Council and serves as city Finance Commissioner. Sanghvi was reelected city Finance Commissioner for a two-year term through 2025.
Among the seat’s responsibilities as defined by City Code, the Commissioner of Finance acts in place of the mayor in the mayor’s absence, and is the city tax collector, bursar of funds, keeper of city financial records, and its budget chairperson.
In the case of a seat a vacancy in this instance, the City Council would appoint a person to fill the vacancy until the conclusion of the term in December 2025. Note, were the vacancy to occur
in 2024 (beyond the official year in which the vacancy occurs), a special election would have been held to fill the seat for the remainder of the unexpired term.
The 44th Senate District counts just over 227,000 active voters – which includes 75,856 registered Republicans, 71,376 registered Democrats, and 64,831 registered “blank” voters (registered to vote, but unaffiliated with any party), according to the state Board of Elections. Just over 177,000 of those voters are in Saratoga County, and just under 50,000 are in Schenectady County.
There are several ways to vote in New York State, including in-person and early voting. Election Day is Nov. 5, 2024. For specific information about registration deadlines, go to: https://elections.ny.gov/ registration-and-voting-deadlines.

Timothy A. Brenenstuhl
SARATOGA SPRINGS —
It is with profound sadness that we announce the passing of Saratoga Springs, NY native Timothy A. Brenenstuhl. He passed away peacefully while surrounded by family on February 19, 2024 after experiencing an accident in his home two weeks prior. Tim was 40 years of age.
Tim graduated from Saratoga Springs High School in 2001 before earning a degree in Landscape Architecture from the University of Vermont. It was there that he met his future wife, Sophia Green, and together the couple moved to Los Angeles after graduation. Their work soon took them to Thailand where they spent nearly a year on the set of the 2006 film “Rescue Dawn.”
After returning to California, Tim stayed in the film industry for a time, continuing to work closely with Sophie’s parents, Patricia Green and the late Gerald Green, but ultimately chose to pursue opportunities in his original field of study. He worked for a few different landscape architecture firms in the area before starting his own company, TAB Design, which focused on the design, installation, and maintenance of unique landscape projects in southern California. In 2012, Tim earned his Master’s in Urban Planning and Landscape Architecture from UCLA, and the experience further amplified his interest in residential and commercial contracting and renovations.
In 2021, Tim moved home to Saratoga Springs to be closer to his family and to follow his passions for craftsmanship in construction and historical home restorations. For the past three years, Tim had worked for himself and was excited
to be in the middle of another project in downtown Saratoga, relishing the exhaustion that a long day of problem-solving and power tools brought him.
Tim was strong willed and curmudgeonly at times, but he also had an enormous heart, a contagious smile, and a wonderful sense of humor. He was generous, loyal, curious, and- in his younger days- never one to miss a good party. He was clever and full to the brim with knowledge gained through all his many life experiences - he could build or fix almost anything. Reading and research were two of his favorite hobbies in recent times, but he also loved all types of outdoor recreation, classic Volkswagen vans, designing and building furniture, and music of all kinds (except smooth jazzman, did he hate smooth jazz).
Tim is survived by his loving parents, mother Laurie Brenenstuhl and father Gary Brenenstuhl, his brother and sister-in-law Ryan and Megan Brenenstuhl and their daughter Caroline, former wife Sophia Green of Los Angeles and her family, his golden retriever Gracie, many extended family members, and countless friends near and far.
He will be remembered for all the heart he shared with his friends and family. He truly loved each of them- and if you knew him, you knew it. He will be missed dearly.
In typical Tim fashion, there will be no formal services planned, certainly no pomp and circumstance. A celebration of life will occur later in the summer with details to be determined.
In lieu of flowers, the family asks that donations be sent to Mary’s Haven, a program of Catholic Charities of Saratoga, Warren, and Washington Counties, which provided such comfort to Tim and his family in his final days, or to the Bethesda Episcopal Churchboth of Saratoga Springs, NY.

AG Releases Report On Saratoga Springs Response To City Protests
SARATOGA SPRINGS —On Feb. 20, the N.Y. State Office of the Attorney General released its 28- page report on Saratoga Springs Police Department’s response to protests in the city in 2021.
The 408-word Executive Summary occupies page 1 of the 28-page report. It reads as follows:
“For more than a year beginning May 31, 2020, the City of Saratoga Springs saw regular Black Lives Matter protests on its downtown streets. The protests criticized city officials and called to “defund” the Saratoga Springs Police Department. Although they could be raucous, the protests
were also peaceful—there were no credible allegations that any BLM protester ever harmed another person or damaged property during a Saratoga Springs protest.
On June 26, 2021, at a press conference, Saratoga Springs Assistant Police Chief John Catone threatened the BLM protesters that he would “pull out every single connection my family has made over the last 130 years, and I will stop your narrative.” Catone said aloud what other Saratoga Springs officials expressed only privately: that the city should use its police force to silence the BLM protesters.
Weeks later, during a July 14 rally protesting Catone’s remarks, Mayor Meg Kelly and Commissioner of Public Safety Robin Dalton each ordered Police Chief Shane Crooks to arrest protesters. Dalton demanded that Crooks “Arrest all those (expletive deleted).” Kelly texted, “I hate these people,” and called for a Child Protective Service investigation of Lexis Figuereo, a Black Lives Matter leader. Crooks replied that he had a “list” of protesters to arrest and would get arrest warrants for the BLM leadership.
Nearly two months after the July 14 protest, local law enforcement arrested twelve BLM protesters for minor offenses allegedly committed during the protest. Consistent with Kelly’s instructions, an SSPD officer initiated a Child Protective Service investigation against the mother of Figuereo’s children. That inquiry was unfounded, and all charges against the protesters were dismissed.
Following complaints from the public, the Office of the Attorney General investigated under Executive Law § 75(3).
The OAG issued subpoenas to Saratoga Springs, Dalton, Kelly, Crooks, and other individuals, reviewed approximately 276,809 documents, took 9 sworn oral examinations, and interviewed members of the public.
The Attorney General concludes that, in 2021, Dalton,
Kelly, and Crooks implemented an unconstitutional official policy of retaliating against BLM protesters based on their speech. The sweeping arrests violated the police department’s written policies to protect protesters’ First Amendment rights. But they were conceived of and approved by the highest decisionmakers in city government. Because those arrests were caused by official hostility to the protesters and their message, they violated the First Amendment.
To prevent these circumstances from ever recurring, the Attorney General recommends permanent policy changes to be monitored over time by the OAG.”
The report references a period of time two administrations ago, and none of the four Saratoga Springs officials named in the Executive Summary are currently in city government or with the police department.
On Feb. 21, the office of current Mayor John Safford released a brief statement regarding the release of the Attorney General’s report, which read, in part: City officials are now reviewing the report, learning from its content, and proceeding with the development and implementation of policies, procedures, and practices to address the recommendations made by the Attorney General’s Office.
Saratoga BLM released a statement on Feb. 23 which read, in part: The release of
this report, while a crucial step towards accountability and justice, is merely the beginning of a long overdue reckoning with the systematic injustices and abuses of power that have plagued our community far too long…this report marks only the beginning of our journey towards justice, but it is up to us to endure that it is not the end.
“After discussions with the AG, they changed their report to accurately reflect that it was not the SSPD responsible for firing pepper balls or utilizing an armored vehicle designed for combat in Iraq. Facts matter,” current Public Safety Commissioner Tim Coll said in a statement on Feb. 21. “I look forward to continuing to review the document to determine if other inaccuracies exist.”
The AG’s report references that during protests in 2020 “the SSPD and other police agencies responded with horsemounted police, dozens of officers in riot gear, and an armored vehicle designed for combat in Iraq,” and links to an Aug. 4 SSPD press release that states “The Saratoga County Sheriff’s Department ‘MRAP’ vehicle,” was used, as well as that the use of OC Spray and Pepper Projectiles may be considered for use to bring a group under control and that “the Chief of Police authorized the use of the pepper projectiles once the situation started turning violent.”
Lessons Of The Hour: Acclaimed Film Installation Goes On Exhibit At The Tang
by Thomas Dimopoulos Saratoga TODAYSARATOGA SPRINGS —
He was considered the most photographed man of the 19th century, and among the finest of orators of his time. He last visited Saratoga more than a century-and-a-half ago and spoke publicly on multiple occasions.
A new exhibition at The Tang Museum brings the life of Frederick Douglass back frontand-center, in a bedazzling film installation that features scenes from the life of the former slave and abolitionist. Created by London-based artist Isaac Julien, it is titled Lessons of the Hour.
Inside the Tang Museum’s Malloy Wing - mapped out in configuration to the artist’s specs right down to the deep red carpet underfoot - 10 screens of varying dimensions flex across the massive space, depicting an abundance of moving images that dance in a multitude of ways.
Speakers slung across the room punch-in from all directions with dialogue, music, and sonic ambience. The noisy hammering of a sewing machine meets the peaceful hum of a vanishing water tide. A gentle breeze flows through cotton fields. Train wheels steam violently across long roads of rail.
Here, is Frederick Douglass (as portrayed by actor Ray Fearon), draped in along blue overcoat and accessorized by an ascot of brilliant color, speaking in sepia tones of our vintage past.
There, viewed from a variety of angles (if not alternating points of view), is the turbulence of our most recent days. It is a morphing overlap that embraces
who we were, and what we are.
“You get the sense that it’s not just about history,” says the museum’s Dayton Director Ian Berry, watching the dynamic juxtapositions of images of Douglass’s life unfold on the hanging salon-style screens.
The 28-minute film, which runs continuously and invites multiple viewings, features the 19th century abolitionist, writer, and freed slave reciting passages from some of his most famous speeches. Open-ended narrative vignettes are set in Washington D.C, London, and Edinburgh and portray Douglass with influential women of his time—including Susan B. Anthony and Ottilie Assing—dramatizing ideas of racial and gender equality.
“The work rewards repeat viewings, telling us that the hour is now, and lessons still need to be learned,” said Berry, who will give a curator’s tour of the exhibition at noon on Thursday, March 28.
FREDERICK DOUGLASS IN SARATOGA
Douglass visited Saratoga to speak on multiple occasions. In 1849, he included Schuylerville, Quaker Springs, and Dean’s Corners on his speaking itinerary, according to the Saratoga County History Center, and returned decades later to speak to a large gathering in Saratoga Springs. Newspaper reports published in early April 1870 by The Saratogian inform of Douglass’ upcoming lecture on the 15th amendment at the Congregational Church, adding “the building is likely to be crowded, and those who wish to make sure of a place should engage reserved seats.”
The First Congregational Church of Saratoga Springs was “centrally situated on Phila street, just out of Broadway,” according to Nathaniel Bartlett Sylvester’s “History of Saratoga County, New York.” An article published in late April 1870 provides a lengthy report of the daylong events that featured Douglass, including “a procession during the day and an address in the evening (at the Congregational Church) from one who ranks among the very first of living orators.”
“I wished to use the distinctive language of filmmaking, photography and bookmaking to create artworks that would
“Rightly viewed, the whole soul of man is a sort of picture gallery, a grand panorama, in which all great facts of the universe, in tracing things of time and things of eternity, are painted,” – Frederick Douglass "Lecture on Pictures," 1861.
Frederick Douglass quote prominently depicted in the 272-page catalogue companion to the Lessons of the Hour Tang Museum exhibition, serving as a visual and literary meditation that juxtaposes artist Isaac Julien’s works with archival images of Douglass and essays that acts as a worthy introduction to the exhibition.
hopefully inspire others,” said Julien about his created Lessons of the Hour. His films and photography have been shown worldwide in solo and group exhibitions in galleries and museums.
“Frederick Douglass’s belief
in the importance and power of photography and picture-making in advocating for social justice is brought vividly into the 21st century through Julien’s poetic vision,” Berry said.

Narcotics Unit: 13 People Charged In Connection with Suspected Operation of Illegal Open Air Market
MALTA — Members of the Saratoga County Sheriff’s Office’s Narcotics Unit and Special Operations Team, with assistance from the New York State Office of Cannabis Management, executed a search warrant at 2244 U.S. Route 9 in the town of Malta earlier this month, following an investigation into the sale and possession of controlled substances and marijuana within Saratoga County.
Following the completion of the search warrant, the vendors suspected of operating in the illegal open-air market were
allegedly found to be in possession of a large quantity of concentrated marijuana, hallucinogenic mushrooms, and over 43 pounds of flower marijuana. Additionally, two handguns and approximately $10,000 in cash were seized, police said.
The following were each charged with two counts of criminal possession of cannabis in the second degree, a felony: Leslie Mason-Flowers, age 32 of Troy; Russell F. Gorgen, age 31 of Glenville; Damian C. Pitt, age 22 of Mechanicville; Joseph M. Lavoie, age 53 of
Sutton, Massachusetts; Zachary J. Wissenbach, age 26 of Delanson; Gerald R. Helm, age 33 of Saratoga Springs; Kevin J. Tidd, age 37 of Glenville; Saverio B. Mastrianna, age 34 of Albany; Thomas J. ALSO ON EXHIBIT
Also new on view is an exhibition of work from the Tang collection—many of them recent acquisitions—that explore studio portraiture and archives, from 19th century daguerreotypes and vernacular photography to contemporary portraiture and video, exploring themes of agency and visual representation as a tool for empathy and justice, and organized to complement Lessons of the Hour.
“This is the advent of photography,” Berry said, moving through the exhibition space in the museum’s lower-level gallery and gesturing to a tabletop display where photographs dating to the mid-19th century are housed in ornate cases.
“With this (then) new invention of photography, Frederick Douglass said he would have his picture taken, it would hang on people’s walls and when they would see his face, they would see his humanity. So, he saw photography as a key to his abolitionist ambitions,” Berry said. “It’s historytelling, but it’s also using the portrait for power, to reveal something about oneself.”
In the Mezzanine Gallery, artist Yvette Molina’s “A Promise to the Leaves” creates a museum community space devoted to art, conversation, and contemplation; In the Winter Gallery a student-curated
group exhibition titled Abject Anatomy features a selection of two dozen photographs, prints, drawings, and paintings that asks viewers to reflect on deep-seated fears about their own bodily nonconformance and those around them, while instructing: “as you explore the exhibition lean into the unease.”
Then, there is the Elevator. Elevator Music 48: “Alone, only in flesh,” is a site-specific, collaborative meditation on diaspora combining spoken word poetry, experimental cello, traditional Vietnamese garments, and Southeast Asian home goods.
In this exhibition, artists Antonius-Tín Bui, MIZU, and Theresa-Xuan Bui create a space for all to commune with the unknown and untranslatable and meld the language of altars—spaces of presence, transcendence, and transmission— with the liminality of the shifting elevator and welcome all to commune with the unknown. Watch the elevator doors open, see mallet, bang a gong.

Gardening Now is the Time to Put up a Bluebird House
Written & Photographed by Peter Bowden for Saratoga TODAYIwelcome any sign that spring is near. One of those signs is seeing the first bluebird of the season. Anyone who has ever seen one knows the feeling of surprise and joy that accompanies a bluebird sighting. Since they are not overly shy of humans and nest and feed in open areas, bluebirds are some of the easiest birds to watch and learn about.
Bluebirds are territorial so once you've seen them in an area, odds are good that you'll be able to visit and observe them on a regular basis. Those with a large lawn or property adjacent to open fields can attract their own resident bluebirds to enjoy on a daily basis during spring and summer. I am lucky to be able to host a pair of bluebirds, and the little effort needed to attract them to your yard is amply rewarded by the color and liveliness they add to the little bit of the world we call our garden.
The easiest way to lure
bluebirds to your property is to provide bluebird nesting boxes. If you would like plans for building a bluebird nesting box, go to the NYS Bluebird Society website. If you purchase a bluebird nesting box, all you need to know is where to mount it to attract bluebirds.
Your bluebird box should be mounted on a metal post. Mounting on trees is not advised since it may allow predators to gain access to the box. Your bluebird nesting box should be mounted with the bottom a minimum of 3' from the ground.
4' to 5' is considered optimal. In our cold climate, the box should be mounted with the entrance facing southeast, away from our colder prevailing wind. Since bluebirds hunt for insects in lawns and meadows, it's best to locate your box adjacent to these open areas. To help fledglings survive, try to place your boxes where there is a fencepost or tree within 100' of the entrance hole. This will give young bluebirds an easy, safe perch to reach on their first flight from the box.
Since bluebirds are territorial, nesting boxes should
not be placed closer than 300' apart. If you have swallows in your area, they may compete with bluebirds for nesting boxes. In this situation, it may be necessary to place two boxes 5' to 15' apart. The swallows will occupy one box, leaving the other available for the bluebirds. Since bluebirds are on the increase in New York State, properly placing nesting boxes on your property is very likely to attract younger pairs of bluebirds with the possibility that they and their offspring will return to your area year after year.
To lure nesting bluebirds to your area, have your nesting-boxes up as early in spring as possible. If all goes well, you'll have a nice
clutch of eggs by early May.
After that, it is simply a matter of keeping the boxes clean and safe. In fall or early in spring before the bluebirds arrive, the nesting box should be cleaned out. Remove any old nesting material and then scrape our dirt and debris with a putty knife or wire brush. Old nesting material should not be left on the ground near the nest but removed from the area to prevent parasites that can harm baby bluebirds in the nest. Washing out the nestingbox with a spray of 1/10 bleach/ water will sterilize the box, and it is ready for the season.
Thanks for the read!

PROPOSED SHORT-TERM RENTAL REGULATIONS SPARK CONTROVERSY
by Jonathon Norcross Saratoga TODAYSARATOGA SPRINGS —
Proposed short-term rental regulations have sparked debate among Saratoga homeowners, and resulted in a feisty public hearing at the February 20 Saratoga Springs City Council meeting.
Prior to the public hearing, Commissioner of Accounts Dillon Moran explained his proposed regulations of shortterm rentals to a vocal audience.
According to Moran, more than 1,200 of the city’s 9,800 residential properties are currently
functioning as short-term rentals. “We are creating the ability to license your home to rent it,” Moran said. “We are enabling this activity legally for the first time in our community’s history.”
Moran said that currently, any rental under 28 days is not allowed, and commercial activity inside a residence is a violation of zoning laws. “It’s not allowed right now,” Moran said. “This is simply the facts. This is not my opinion. This is the position of the city.”
Moran said that shortterm rental laws have not been enforced due to technological
limitations. He also said that if the city did not regulate its own short-term rentals, the state government would do it instead.
“We’re creating a city-wide registry of rental units because the state is going to pass a law requiring it,” Moran said.
Moran called houses that are used solely as rental properties “a blight on the neighborhood.” Shortly after, members of the audience shouted back at Moran, causing Mayor John Safford to admonish them.
“Listen, we’re going to be here all night if you keep this up,” Mayor Safford told the crowd.
Moran’s plan would require property owners to pay $1,000 per dwelling unit for a twoyear permit. Owners would also need to have a local emergency contact, fire extinguisher, carbon monoxide smoke detector, emergency egress plan, and insurance. The tentative start date of these regulations would be July 1, with a 60-day phasein period. The proposal will not affect this year’s Belmont and track season rentals.
After Moran laid out his plan, the floor was open to public comments. Skeptics of the plan who voiced their thoughts ranged from Airbnb hosts to homeowners who rent out their houses for only a few days each year. Moran’s proposal was criticized for its $1,000 licensing fee,
relatively quick implementation, loss of money from renters who would stay outside city limits, and fireplace maintenance requirements.
Lori Leman from Saratoga Realty Associates said she received a lot of feedback from her clients when she sent Moran’s proposal to them. “To most of us, it seems this is a tremendous overreach in both depth and breadth,” Leman said.
“We have a mosquito problem and it looks like we ordered a bunch of B-29s with napalm to extinguish them,” said Joe Conlon.
Anna Smith, a mortgage broker and homeowner, said that “Saratoga was not affordable before Airbnb existed, was it? It won’t be affordable once they legislate a lot of short term rentals out.”
Public commenters more supportive of the plan said that homes used solely as short-term
rentals were driving up housing costs, hurting the quality of neighborhoods, and depriving families of houses. One woman called Airbnb rentals “unhosted money machines that don’t belong in our neighborhoods.”
After public comments concluded, Moran said he would “address some of the comments that you’ve made. Frankly, I don’t think we’re very far apart.” This provoked laughter from some attendees. “Again, the answer is not going to be no regulation, and the reality is the state is going to regulate this,” Moran said. “So the question is, do we want the state telling us what to do or do we want to determine it ourselves?”
As the proceedings drew to a close, a man from the audience yelled at Moran, saying “We don’t have to justify our lives to you, it’s the opposite. We don’t work for you, you work for us!”

Franklin Square Market Entering New Era
by Jonathon Norcross Saratoga TODAYSARATOGA SPRINGS — Franklin Square Market, formerly known as PDT Market, has in its own words “made every mistake a young business can make.” But now a new leadership team is taking the helm.
Mark Delos and Jullie Delos will be the “collective driving force” behind “culinary innovation” at Franklin Square, according to a statement released by the company last week.
For the past seven years, Chef Mark Delos has overseen all culinary operations for Mazzone Hospitality’s catering division. Jullie Delos, Franklin Square’s new Director of Hospitality and Operations, was formerly Director of Sales and Events for Friends Lake Inn in Chestertown. She also managed the pop-up restaurant division of Mazzone. At Franklin Square, Jullie’s first order of business will be revamping the Market Bar and Cafe.
“Mark and I have wanted something of our own to be part of; something we could invest ourselves in,” Jullie said in a statement. “Nothing was the right fit until now.”
Originally named PDT Market, Franklin Square underwent a name change when its original founder, Chef Adam Foti, left the business in September 2023. “The effort required to build and sustain PDT Market, and simultaneously keep PDT Catering functioning at the very high standards we set for ourselves, was not always compatible,” Foti wrote in a social media post at the time. Shortly after Foti’s departure, PDT announced its name change, writing that

SARATOGA SPRINGS —
Last month, Empire State University launched a virtual food pantry for students facing emergency situations. The pantry received nearly 70 applications within days of its launch.
Set up as a personalized order system, students first apply to provide information about how many people
are in their household and the type of emergency they have. Applicants are then sent a link to create a grocery cart online, through stores like Walmart or Amazon, with a budget based on their family size and USDA nutritional guidelines.
“Part of the reason we structured it that way is because everybody has different brand

Food
Shop and Brine in Time for St. Patrick’s Day
SATURDAYS
9:30 A.M. - 1:30 P.M.
by Jodie Fitz for Saratoga TODAYWhat
do you serve for St. Patrick’s Day dinner? Many dish up the traditional corned beef and cabbage dinner. I love a good Reuben sandwich with a twist – I swap the sauerkraut for a deliciously easy, homemade coleslaw. However you like to celebrate St. Patrick’s Day, we’ve discovered how you can support locally produced and grown goods at the Saratoga Farmers’ Market to complete your menu.
For corned beef brisket, Grazin’ Acres Farm sells beef brisket along with DIY corned beef brine kits. It takes 7 to 9 days to brine corned beef, so plan on grabbing your brisket this weekend. They also have ham in the event you prefer a baked ham dinner.
When shopping for a brisket, remember there are two different cuts: a flat cut that’s rectangular and relatively equal in thickness and a point cut with a point at one end and uneven thickness with more fat marbling throughout.
Trim the outer fat before cooking or brining your brisket. Once the meat is cooked, let it rest for 20 minutes before slicing. Find the grain of the meat, then turn the brisket to cut across the grain for the most tender cut. Slice thin, and enjoy every savory bite!
Carrots, onions, and cabbage are St. Patrick’s Day staples available at Gomez Veggie Ville. You’ll find potatoes and onions at Lovin’ Mama Farm and Gomez Veggie Ville. Squash Villa also has potatoes.
Irish Soda Bread is a tangy scone-like bread, and both Jennifer’s Sweet Treats and The Bread Butler offer this traditional treat. In addition, Katie Bakes Gluten Free has gluten-free Irish Soda Bread.
Rye bread for the Reuben sandwich lover is also at the farmers’ market. Night Work Bread has a sour dough-based rye bread, and The Bread Butler has traditional rye bread.
Sauerkraut as a side or to layer onto a Reuben is an excellent addition. Be sure to stop by Puckers Gourmet.
Festive desserts will be abundant with Katie Bakes
Gluten Free’s specialty cupcakes and St. Patrick’s Day cookie packs. Night Work Bread will bring brownies and cookies. Sweet Treats by Jennifer always has their Chocolate Mint Dream cookie and shamrock sugar cookies. The Bread Butler will have their infamous black-tie brownies.
For Irish coffee, get your ground coffee and beans from Nally’s Coffee.
The Saratoga Farmers’ Market will be open on Saturdays from 9:30 a.m. to 1:30 p.m. from November through April at the Wilton Mall Food Court, accessible from the mall entrance across from BJs or the mall interior. Find us online at www.saratogafarmersmarket.org, where you can sign up for our weekly newsletter and follow us on Facebook and Instagram.
Corned Beef with Vegetables
INGREDIENTS:
*Ingredients currently available at the farmers’ market
• 3 quarts water
• 1 1/2 cups kosher salt
• 1 cup brown sugar
• 2 cinnamon sticks, broken into several pieces
• 2 1/2 tablespoons mustard seeds
• 2 tablespoons black peppercorns
• 12 whole cloves
• 12 whole allspice berries
• 20 whole juniper berries
• 3 bay leaves, bruised
• 3/4 tablespoon ground ginger
• 1/2 tablespoon celery seed
• 1 - 4lbs trimmed beef brisket*
• 3 small onions, quartered*
• 4 large carrots, roughly chopped*
• 1 stalk celery, roughly chopped
• 3lbs potatoes, cubed*
• 2 heads of cabbage, quartered*
INSTRUCTIONS:
1. Place the water into your largest stockpot, at least 3 quarts. Add the salt, sugar, and all of the spices.
2. Bring the brine to a boil. Then simmer until the salt and sugar have dissolved and your kitchen smells delicious. Refrigerator brine overnight.
3. Once it has cooled, place the brisket in a 2-gallon Ziplock bag and add brine. Seal bag and place the bag inside of another container as to prevent possible leakage. Cover and place in the refrigerator for 10 days. Each day make sure the brisket is covered by the brine.
4. On the 10th day, remove the brisket and rinse well under cold water. Place the brisket into a pot just large enough to hold the brisket and vegetables. Fill the pot so that the contents are well covered. Heat on high and bring to a boil. Reduce the heat to low and simmer for 2 to 3 hours or until the corn beef is perfectly tender.
5. Add the vegetables approximately 45 mins before desired finish. If you prefer more tender vegetables, add them at the very beginning of the cooking process.
* I like to purée some of the veggies and add it to the cooking liquid. Typically, before the cooking liquid is boiled, purée the celery, 1 carrot, a half of an onion, and half of a head of cabbage in a blender and add it to the boil for a deeper flavor. If you cannot fit all of the purée items in your blender, you may need to do it in more than one batch.
6. Remove the corned beef from the pot and allow the meat to rest for 3 minutes. Thinly slice the meat across the grain and serve with the vegetables. Enjoy!

Drip Coffee Maker
TODAY
by John Reardon for SaratogaHello my Foodie Friends!
For many of us, our daily routine can include that morning coffee or tea. Making your coffee is a routine, a way to start your morning. Over the years, I have fallen more in love with coffee. Having a great tasting cup of coffee in the morning is an important start to my day. Many of us need that cup of coffee in the morning to
get us going. There are few things that a coffee fan loves more than waking up to a great cup of Joe. Wake up coffee offers the kick you need to get your day started. Waking up to a good cup of coffee is an American tradition! Just saying the word coffee will make you recall those wonderful aromas that have surrounded our kitchens, local coffee houses and convenience stores forever. Even if you don’t like the taste of coffee, you probably still like the smell of it.
There are many ways to make coffee. Our cups of coffee are very important to us since we start with that “necessary cup.”
Butterscotch Pecan Scones
INGREDIENTS
• ⅔ cup pecans
• ½ cup heavy cream, plus more if necessary
• 1 large egg
• 1 teaspoon vanilla extract
INSTRUCTIONS
• 2 cups flour, spooned into measuring cup and leveled-off
• ½ teaspoon salt
• 1 tablespoon baking powder
• 3 tablespoons packed dark brown sugar
1. Preheat the oven to 400°F and set an oven rack in the middle position. Line a baking sheet with parchment paper.
2. Arrange the pecans in a single layer on the prepared baking sheet. Bake until lightly toasted and fragrant, about 4 minutes. Slide the parchment off of the hot baking sheet and let the pecans cool on the countertop. When the pecans are cool enough to handle, coarsely chop them and set aside. Place the parchment back on the baking sheet.
3. In a small bowl, whisk together the heavy cream, egg and vanilla. Set aside.
4. In a large bowl, mix together the flour, salt, baking powder and brown sugar (use your fingers to rub the brown sugar into the mixture until no lumps remain). Add the pieces of butter. Using your fingertips, rub the butter into the dry ingredients until the mixture resembles coarse crumbs with pea-sized clumps of butter within. Stir in the butterscotch chips and pecans. Make a well in the center of the dry ingredients, then add the cream mixture.
Drip coffee makers are very popular, as they are found in so many homes and offices today. Drip coffee makers provide a simple way of making coffee, whether you take it black or with cream. They might not produce specialty coffees or rich espressos, but sometimes all you want is a basic brew. Drip coffee makers are essentially automatic pour-over machines, and with pour-over coffee experiencing a resurgence, now might be the perfect time to try a drip coffee maker. This style of coffee maker usually brews a large carafe of coffee, which is ideal when you have several coffee drinkers in your household.
French Press
People who use a press know and act like it is their own
• 6 tablespoons cold unsalted butter, cut into ½-inch pieces
• ⅔ cup butterscotch chips
• Raw sugar for sprinkling
5. Use a rubber spatula to mix until the dough comes together. It should be a bit sticky, almost like chocolate chip cookie dough. If it seems dry, add more cream little by little (no more than 2 tablespoons should be necessary).
6. Dust a clean, dry work surface with flour. Place the sticky dough on top and dust the top of the dough with a little flour as well. Knead gently a few times until the dough comes together into a ball. (Sprinkle lightly with more flour as needed so that the dough doesn't stick.)
7. Press the dough into a circle about 1-inch high, then cut into 8 wedges. Arrange the wedges on the prepared baking sheet, spacing evenly apart, and then sprinkle each one with about ½ teaspoon of raw sugar. Bake for 14 to 16 minutes, until lightly golden and firm to the touch. Let the scones cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.

secret. You can see it in the smile they have when they talk about it as they are purchasing one for a friend. You can also see it in their frowns when they need one because the old one is lost due to a move or they are visiting here for an extended vacation and need one now. My customers have many different passions for their favorite products but French Press people are knowledgeable loyals. While the drip method may be known for being easy and convenient, using a French press isn’t exactly difficult. Pour coarse ground coffee into the bottom of the carafe, followed by nearly boiling water. Boil your water and then let it cool slightly before pouring it over the grounds to get the perfect temperature. After allowing it to sit and steep for a few minutes (four to five minutes is best), slowly press the plunger down so the water and grounds can separate. What’s left is pure happiness.
Espresso
Espresso is a type of coffee that includes the method of brewing coffee that uses high water pressure and finely ground beans to make a small, concentrated shot. While darkly roasted beans have historically been more popular in Italy, where espresso was invented, any kind of coffee bean from
any origin and at any roast level can be used to make espresso. One of espresso's defining characteristics, aside from its concentrated flavor and more syrupy body, is a top layer of foam known as the crema, which is a by-product of the high-pressure extraction process. Espresso can be combined with milk (or additional water) to make other espresso-based drinks, such as a macchiato, cappuccino, latte, americano, and more.
At Compliments to the Chef, your Neighborhood Kitchen and Cutlery Store located at 33 Railroad Place, we carry espresso machines and offer top end super automatic machines, various models of drip coffee makers and French presses. Our assortment includes incredible espresso and coffee machines by Breville and Capresso, and the amazing JURA coffee machines that are associated with the best coffee quality, simple operation and stunning design. Enjoy a range of speciality coffees at the touch of a button with JURA – always freshly ground, not capsuled. We also carry pour over accessories if you choose that option. Albany Symphony Announces 2024-2025 Season
ALBANY — The Albany Symphony 2024-2025 season will feature masterworks that include Beethoven’s Pastoral, Mozart’s Symphony No. 35, Dvorak’s New World Symphony, and Tchaikovsky’s Piano Concerto No.1, as well as new works by a wide array of current-day composers.
The programming for this season has been curated by conductor David Alan Miller. Concerts will take place in a wide variety of the most exciting Capital Region concert venues, including the Troy Savings Bank Music Hall, the Palace Theater, Proctors, and EMPAC.
The season opens in October with Tchaikovsky’s First Concerto, famed for the sequence of pounding chords with which the soloist's part launches the first movement. The concert will also feature a world premiere by famed Cuban-American composer, Tania León, who won the 2021 Pulitzer Prize in Music for her orchestral work, Stride. Her Pregón is dedicated to Jesse Rosen and is inspired by the pregoneros, known as town criers in English, of her childhood memories, where she grew up, on the streets of Havana.
The year’s classics include Carl Nielsen’s Symphony No. 4, “The Inextinguishable,” Antonín Dvořák’s Symphony No 9, “From the New World,” Antonio Vivaldi’s Concerto for Two Oboes, Sergei Rachmaninoff’s Rhapsody on a Theme of Paganini, and more.
Many of the country’s most exciting composers will be featured and celebrated throughout the season. Joan Tower’s Cello Concerto, A New Day, will debut in November and was written in memory of her husband, who passed away last year. The season brings firsttime and returning composers to the Albany Symphony stage, including old friends like Loren Loiacono, Reena Esmail, and Daniel Bernard Roumain. Bobby Ge’s orchestral tonepoem, Water Music, will be given its world premiere at the American Music Festival. Ge is a Chinese American composer who explores the vivid beauty of the ephemeral. His work, often collaborative in nature,
focuses on themes of home and communication. Additional high notes at the end of the season include Clarice Assad’s Percussion Quartet Concerto, with the amazing members of Third Coast Percussion, Sophia Jani’s What do Flowers do at Night?, and Christopher Theofanidis’ Clarinet Concerto.
Albany Symphony oboists Karen Hosmer and Grace Shyrock will perform at the Holiday Mozart and Vivaldi concert. Harmony Zhu, a teenage prodigy who made her debut with the Albany Symphony in 2020, will perform Rachmaninoff’s Rhapsody on a Theme of Paganini. Kala Ramnath, a seventh-generation violinist specializing in Hindustani (Indian) classical music, will perform.
Guitarist Bokyung Kim will premiere a new concerto written for her by Nicky Sohn. Amaryn Olmeda will perform Samuel Barber’s Violin Concerto under the baton of guest conductor, Lidiya Yankovskaya, Music Director of Chicago Opera Theater, who grew up in Guilderland.
The 2024-2025 season runs from October through the American Music Festival in June. Subscriptions offer patrons the opportunity to purchase their favorite seats before tickets
go on sale to the general public. Season subscriptions offer flexibility and convenience. The deadline to renew is April 14. Through the Nielsen Associates’ Student Access Program, students can purchase discount subscriptions and enjoy the full benefits of being a subscriber for as little as $45. To purchase a subscription online and see a full schedule, visit http://www. albanysymphony.com or call the Albany Symphony Box Office at 518-694-3300.

Skidmore Getting New Baseball Field
SARATOGA SPRINGS —
The Skidmore baseball team is getting a new turf field that will accommodate more fans and “enhance the team and spectator experience,” the college announced last week.
Construction will soon begin on the $3.4 million project, which is being financed primarily by donors. The new field will be on Daniels Road, northwest of the school’s main campus, and will be ready in time for the spring 2025 season.
"Castle Diamond has been a wonderful home for our baseball team for many years, but between the expected aging of
a well-loved facility, costs and challenges associated with renovating the current site, and the growth of both our program and Division III sports overall, it's time for a move,” said Gail Cummings-Danson, assistant vice president for student affairs and director of athletics, in a statement.
"Our current field has a lot of history, a lot of memories," said Ron Plourde, head baseball coach. "At the same time, it's also brought a lot of challenges, and we're grateful Skidmore and our fans see the value of this move for our program and Skidmore Athletics overall.”
Saratoga High School Launching
Girls’ Flag Football Team in Partnership with New York Giants
by Jonathon Norcross Saratoga TODAYSARATOGA SPRINGS —
While Josh Allen and Tommy Devito are licking their wounds during the NFL offseason, a new football league will debut in New York State.
Saratoga Springs High School is participating in a girls’ flag football program that will begin this spring and include 12 other teams from the Suburban Council. “Last year, Troy High School was the only team in the area that had a formal girls’ flag football team,” said Saratoga Superintendent of Schools Dr. Michael Patton. “What started just a few years ago with a conversation, now has led to a fullfledged opportunity for girls to participate in flag football.”
The league’s ten-game season will feature five home and five away games. The season will end with a league championship similar to a sectional championship. The winner of the league
title will then have an opportunity to capture a state championship. The state title game, hosted by the New York State Public High School Athletic Association (NYSPHSAA), will be on June 2 at SUNY Cortland.
As of press time, regular season schedules and coaching positions for the Saratoga team were still being determined. At the end of last year, 65 Saratoga girls had already signed up to participate.
“There’s not a lot of cost to getting this started,” Dr. Patton said, “but the nice thing is that it has all been provided by the [New York] Giants or through USA Football.” The Giants donated $30,000 to help launch the league. The funds will be split between participating schools. USA Football is also donating equipment such as flags and balls.
“I think there’s a lot of interest and momentum moving forward with the girls’ flag football program,” Dr. Patton said, “not
only at the local level, but state and national level and Olympic level.”
In October 2023, USA Football announced that flag
football will make its debut in the 2028 Olympic games in Los Angeles. Scott Hallenbeck, CEO of USA Football, said in a statement that flag football’s
inclusion in the Olympics was “an acknowledgment of the sport's tremendous international growth and appeal as a fast, exciting and competitive sport.”

Saratoga Wrestler Finishes 3rd in State Championship
SARATOGA SPRINGS — Saratoga Springs varsity wrestler Taylor Beaury finished 3rd in the New York State Public High School Athletic Association’s championships last weekend after persevering through a challenging season.
“Taylor’s entire season could be made into a movie,”
said Coach Jake Zanetti. “I am very proud of him and the young man/wrestler he showed us he is capable of being.”
Beaury suffered a fractured jaw earlier in the year but went on an undefeated streak after returning to action. He was also plagued by a lingering shoulder injury and was involved in a car accident. At
state championship, he came back from a tough first round loss to end up placing third.
“He did an amazing job to earn himself a Top-3 finish, beating the guys he lost to earlier in the tournament,” Zanetti said. “The sky is the limit for Taylor and this was a great thing for him and the Saratoga wrestling program.”
