Amended Rules for Public Conduct

by Thomas Dimopoulos Saratoga TODAY SARATOGA SPRINGS — The City Council this week approved a new set of rules to be applied to public conduct during the council’s twice-amonth meetings at City Hall. It is a topic that has come under much scrutiny during the past few years.

“Public Comment has been a subject that was very much a

part of this last election,” newly elected Saratoga Springs Mayor John Safford said shortly after taking office on Jan. 1.

The new Rules of Decorum and Order instruct members of the public to “behave in a manner conducive to the free and courteous expression of opinion,” but warn to not otherwise “engage in behaviors which disrupt the conduct of the meeting.”

“Loyalists in the Hudson Valley during the Revolutionary War” – Online Event Jan. 31 BALLSTON SPA — The Saratoga County History Center (SCHC) at Brookside Museum will host a virtual presentation by Dr. Kieran O’Keefe on “Loyalists in the Hudson Valley during the Revolutionary War,” at 7 p.m. on Wednesday, Jan. 31 through Zoom.

The talk will explore lives of colonists in the Hudson

Valley during the Revolutionary War. It will examine why some colonists remained loyal to the British, what the war was like for Loyalists in the region, and what happened to the Loyalists after the conflict.

O’Keefe was a postdoctoral fellow in Revolutionary Era Studies at the McCormick Center for the Study of the

American Revolution at Siena College, and is now Assistant Professor in History at Lyon University in Arkansas.

The event is open to the public.

It is free for SCHC members, and $5 for non-members.

Saratoga County History Center Issues Call for 2024 Award Nominations SARATOGA COUNTY — The Saratoga County History Center (SCHC) at Brookside Museum has issued a call for nominations for its third annual Saratoga County Public History Award.

Each year the SCHC confers the award on two individuals who have made a significant contribution in preserving, interpreting, researching, publishing, promoting or otherwise extending knowledge and

understanding of the history of Saratoga County. Previous winners Carol Godette, Charlie Kuenzel, Paul Perreault and Jim Richmond have advanced the awareness of Saratoga County history over many years.

Submissions should include a short bio, a description of the nominees’ accomplishments as well as references.

The guidelines for the submission and the nomination form are on the History Center website:

An award ceremony will be held in April at Brookside Museum in Ballston Spa to honor the award recipients.

Saratoga County Historian Lauren Roberts Discusses American Revolution with Saratoga Springs Preservation Foundation SARATOGA SPRINGS — The Saratoga Springs Preservation Foundation presents “Saratoga’s Role in the American Revolution,” at 7 p.m. on Thursday, Jan. 25 via Zoom.

Saratoga County Historian Lauren Roberts will share an overview about Saratoga County’s pivotal role in the American Revolution, the creation of the Saratoga250 Commission, and upcoming plans for the 250th Anniversary of the Battles of Saratoga.

Roberts will additionally discuss her involvement in the PBS television series “Travels with Darley - Revolutionary Road Trips” – which will feature a segment filmed in Saratoga County last fall - as well as her recent participation on a panel at the Smithsonian Institute highlighting Saratoga County’s rich history.

SARATOGA COMMERCE CHAMBER ENCOURAGES A “LEAP OF KINDNESS”

SARATOGA SPRINGS — In 2016, the Saratoga County Chamber of Commerce created Leap of Kindness Day in an effort to inspire community members to use leap day as an opportunity to do something kind for others. The idea took off, and in 2020, hundreds of other chambers organized their own Leap of Kindness days.

Now, four years later, leap day has returned and the Saratoga Commerce Chamber will again be celebrating the occasion on Thursday, February 29.

Local nonprofit organizations can email Greg Dixon at gdixon@saratoga.org to let the chamber know what they need this leap year. The requests will be posted to saratoga.org/ leapofkindnessday, where locals can see how they can help out their community.

“LOVE OUR LOCALS” CAMPAIGN TALLIES $206K SARATOGA SPRINGS — The Saratoga County Chamber of Commerce’s “Love Our Locals” campaign had a recordbreaking year in 2023, with more than $206,000 spent in support of local businesses and nonprofits.

The program encouraged shoppers to submit their receipts of $20.23 or more spent at a Saratoga County business or nonprofit to be entered into a gift card giveaway. Over 2,500 receipts were submitted in total, and dozens of participants won gift cards.

The “Love Our Locals” $20.23 campaign was sponsored by MVP Health Care, Hoffman Car Wash, and more than 50 other area businesses that donated gift cards.

“The Chamber would like to thank each and every one of the Love Our Locals $20.23 participants who chose to support Saratoga County businesses and nonprofits through this campaign,” said Chamber president

Winterfest Celebration Coming to Brookhaven Winter Park

GREENFIELD — The Town of Greenfield is hosting a Winterfest Celebration on Sunday, January 21 from 10am to 1pm at the Brookhaven Winter Park. The festivities will kick off with 2.5K and 5K snowshoe races. Then free snowshoe and cross-country skiing equipment will be available, along with instructors to guide newbies. Younger attendees can participate in a snowman-building contest. Race registrations will cost $25, but the rest of the celebration is free.

“Our residents are passionate about our remote location and our proximity to all that Saratoga Springs offers,” said Town Supervisor Kevin Veitch in a statement. “We work hard to build a sense of community pride among all of us who choose to reside here.

Brookhaven Winter Park is a jewel, and in recent years the word has been getting out.”

SARATOGA SPRINGS On Jan. 9, members of the Patrol Division responded to a residence in Saratoga Springs for a report of a fraud scam that involved a telephone call to an elderly resident that involved a request for money. The male caller claimed that her son was in an accident and needed money for bail after being arrested. The caller claimed to be an attorney and that someone would come to the home to retrieve the money for the bail bond. After completing the initial transaction and obtaining money, the caller continued to ask for additional money in order to drop further legal proceedings and compensate the victim of the accident. After the initial fraud, the victim’s family called the police and patrol officers responded.

The investigation continued with a second request for money being arranged. At a predetermined time, an individual arrived at the residence to collect the money for the fraud and was taken into custody.

Zebiullah Neyazy, 44, of Cohoes, Neyazy was charged with attempted grand larceny in the third-degree, a felony, released without bail and scheduled to appear in city court Jan. 25.

The Saratoga Springs Police Department advises the public that no police officer, court officer, or legitimate attorney, will make arrangements to pick up cash or other forms of payment, like credit cards or gift cards, to resolve legal matters.

SARATOGA COUNTY SHERIFF’S OFFICE Resulting from an investigation into a sexual assault complaint in the town of Milton on Nov. 17, 2023, the Sheriff ’s Office arrested Curtis J. Bennifield, 21, of Milton.

Bennifield was charged with Rape in the Third Degree, a class E Felony on Jan. 3. He is accused of having sexual intercourse with a female victim known to him without her consent. He was arraigned and released after posting bail. Bennifield is

BLOTTER scheduled to appear again in the Milton Town Court on a later date.

Resulting from a sexual assault complaint on Dec. 20, 2023 in the town of Providence, Christopher P. Poirier, 60, of Providence was arrested and charged with Sexual Abuse in the 1st Degree (class D felony). Mr. Poirier is accused of subjecting another person to sexual contact by means of forcible compulsion. He was arraigned and released to pretrial services pending further action in the matter.

The Sheriff ’s Office responded to a call of an active domestic incident at 4:15 a.m. Jan. 8 in the village of Stillwater.

Investigation into the matter resulted in the arrest of Michael T. Garrick, 41, of Stillwater. He was charged with Strangulation in the 2nd Degree (class D felony). Mr. Garrick is alleged to have impeded the normal breathing or blood circulation of a female known to him by applying pressure to her throat or neck causing

5 her to lose consciousness.

He was arraigned and sent to the Saratoga County Jail without bail pending further action in the matter.

On Jan. 5, members of the Sheriff ’s Office’s narcotics unit and the US Bureau of Alcohol, Tobacco, Firearms, and Explosives (ATF), with assistance from the Sheriff ’s Office’s special operations team, arrested the following persons following an investigation into the possession and sales of firearms and narcotics within Saratoga County: Christopher E. Terry, age 19, of Halfmoon, • Six counts of Criminal Possession of a Controlled Substance in the 3rd Degree (class B felonies) • One count of Criminal Possession of a Controlled Substance in the 2nd degree (Class A2 felony) • One count of Criminal Possession of a Firearm (class E felony) • One count of Criminal Possession of a Disguised Gun (class D felony) • One count of Criminal

Possession of a Weapon in the 3rd degree (class D felony) Mikhail A. Green, age 21, of Albany, • Three counts of Criminal Possession of a Controlled Substance in the 3rd Degree (class B felonies) • One count of Criminal Possession of a Controlled Substance in the 2nd degree (Class A2 felony) • One count of Criminal Possession of a Firearm (class E felony) • One count of Criminal Possession of a Disguised Gun (class D felony) • One count of Criminal Possession of a Weapon in the 3rd degree (class D felony) Mr. Terry and Mr. Green are accused of possessing large quantities of cocaine, fentanyl, and hallucinogens with the intent to sell them within Saratoga County.

They were also charged with being in possession of an illegal “ghost gun” as well as an extended 30-round magazine. Both were arraigned and sent to the Saratoga County Jail in lieu of bail or bond pending further action in the matters.

SCHUYLERVILLE — What do you do with a broken toaster? Or with a lamp that won’t work? Or with a favorite shirt that is ripped? Toss it?

No way! Schuylerville Public Library, on Ferry Street, is organizing its third Repair Café on Saturday, February 3.

Starting at 10 a.m. and ending at 1 p.m., various volunteer repair experts will be available to help make all possible repairs free of charge. Most tools and materials will also be on hand.

People visiting the Repair Café will bring along their broken items from home. Limit of two items per person.

Small appliances, lamps, hair dryers, radios, clothes, toys... anything that is broken and small enough to carry is welcome and can more than likely be repaired. The Repair Café specialists almost always have the know-how.

By promoting repairs, the library wants to help reduce

mountains of waste. According to Library Director Caitlin Johnson, “By repairing instead of tossing, we lessen the strain on our environment.”

The Repair Café concept arose in the Netherlands, in 2009, and was formulated by Martine Postma, at the time an Amsterdam-based journalist/ publicist. In 2010, she started the Repair Café Foundation (see Repaircafe.org). This foundation provides support to local groups around the world wishing to start their own Repair Café. The foundation also supports the Repair Café in the Schuylerville Public Library.

SARATOGA SPRINGS — Bonacio and Universal Preservation Hall (UPH) have announced a new sponsorship deal that will have the development, construction and management company as the 2023-24 season sponsor for UPH. Bonacio Construction Inc., a Bonacio company, was instrumental in the restoration

Saratoga Springs Land Use Boards Reviewed 292 Projects, Made 246 Decisions in 2023

SARATOGA SPRINGS — The city’s three Land Use Boards collectively made 246 decisions among the 292 projects it reviewed while staging 64 meetings during 2023, the Office of Planning & Economic Development announced this week.

The three city Land Use

Boards are: the Planning Board, Design Review Board and Zoning Board of appeals. Each holds multiple public meetings every month at Saratoga Springs City Hall.

The Saratoga Springs Planning Board is a 7-member citizen board appointed by the Mayor to 7-year staggered terms. The City Council gives the Planning Board independent authority to review

development activities within city boundaries, including jurisdiction over the development of most new multi-family, commercial, institutional and industrial projects.

The Saratoga Springs Design Review Board is a 7-member citizen board appointed by the Mayor to

5-year staggered terms. The City Council gives the Design Review Board independent authorities to review development activities within city boundaries - jurisdiction over signage and exterior building changes related to both – Historic, and Architectural review, among them.

The Saratoga Springs Zoning Board of Appeals (ZBA) is a quasi-judicial 7-member citizen board appointed by the Mayor to 7-year staggered terms.

State regulations require communities to have a Zoning Board of Appeals to review requests for waivers from regulations in the existing zoning ordinance.

Saratoga Springs Adopts Amended Rules for Public Conduct continued from front page...

Listed prohibited actions include: Profane language, obscene gestures, threatening statements, shouting or other behavior meant to intimidate members of the council or others present at the meeting.

Additionally, sustained noise impeding others from hearing speakers, and items - such as signs - that may block the public’s view, are also prohibited.

The mayor has the authority to declare any person to be out of order for failure to follow directives.

Enforcement comes in 3 steps: 1. The mayor will verbally request the person or persons violating a rule to cease that conduct.

2. If the violation continues, the mayor issues a second verbal warning, stating that if the violation continues, the violator(s) may be required to leave the meeting room.

3. If the person(s) does not cease the violation the mayor shall declare the person to be out of order. At that time, a member of the Saratoga Springs Police Department who has been designated as the Sergeant-of-Arms may take steps to remove the person(s) from the meeting room. That person may also be subject to civil and/or criminal penalties.

Thirty minutes will be set aside at each meeting for public input, and each speaker will be

limited to three minutes. All remarks are to be directed to the City Council as a body and not at a specific individual, staff, or member of the public.

Following council debate regarding whether the 30-minute overall time limit should be extended or removed altogether, an agreement could not be reached and the amendment was approved 4-1, with Commissioner Minita Sanghvi casting the lone vote against.

“My main concern is by limiting public comments to only 30 minutes, we are creating a situation where some members of our community will not be heard,” Commissioner Sanghvi said. “The way I see it we are here in public service and our job is to listen to our community. During the Public Comment period at this week’s meeting, local blogger John Kaufman and former city Public Safety Commissioner Robin Dalton each expressed concern regarding emergency compensation for city councilmembers’ deputies. That on-call pay for deputies was authorized by the City Council in February 2023 by a 3-1 vote, with one abstention. City Mayor Ron Kim cast the lone vote against the measure.

The Daily Gazette first reported on the topic in February 2023. Last week, with the addition of documents obtained via the Freedom of Information Law (FOIL), Kaufman published comments related to

on-call pay status on his blog saratogaspringspolitics.com.

Newly elected city Supervisor Michele Madigan also commented on the matter.

“As a city Supervisor and a former Finance Commissioner I believe it’s essential to address this issue transparently and consider the broader impact on city employees and city taxpayers,” read Madigan, from a prepared statement. “Four of the five deputies in 2023 availed themselves to the on-call funds,” said Madigan, adding a list of responsibilities, duties and attended meetings associated with the potential securing of on-call pay. “As a former finance commissioner for 10 years, I’m well-versed in the fact that these are basic job functions for an

appointed deputy in this city’s form of government.”

While not referring to the issue by subject directly, Mayor John Safford began his agenda at the Jan. 16 meeting by seemingly referencing the topic.

“Based on a number of comments that were made tonight, we are looking into the question that’s been raised and our attorneys are engaged in that right now,” Safford said.

“We will find out what the right thing to do is and work with everybody to correct that if there’s been any mistakes.”

Safford also announced The State of the City Address will be held 7 p.m. Tuesday, Jan. 30 in the Saratoga City Music Hall, located on the third floor of Saratoga Springs City Hall.

Saratoga County: Shortages Approved, Deputies Honored, Saratoga Supervisors Approve New Voter Database Software

BALLSTON SPA — The Saratoga County Board of Supervisors held its first regular monthly meeting of the year Jan. 16 at the county complex in Ballston Spa. During the meeting, the Board authorized the renewal of an agreement with NTS Data Services, LLC, based in Niagara Falls, for maintenance and support services of the county Board of Elections’ voter database software. NTS has provided voter registration and other election services to county board of elections in New York State since 1981.

The contract with Saratoga County runs through Dec. 31, 2026 and is authorized at a total overall cost of up to $224,011 for the three years.

County Supervisors also approved the creation of eight, part-time deputy sheriff positions through the 2024 calendar year. Those temporary positions are help meet staffing shortages

in the Saratoga County Sheriff ’s department. Each of the temporary deputy positions may be employed for up to 75 hours every two-week pay period at a pay rate of $27.10 per hour.

Board of Supervisors Chairman Phil Barrett also recognized three county Sheriff Deputies who were honored earlier in the day for their actions during two specific events in 2023.

“This afternoon we were able to attend the New York State Sheriffs Institute event in Colonie, and I want to congratulate the Saratoga County deputies who were honored for their incredible acts of bravery and service,” Barrett said. “Those are deputies Simpson, Whipple, and Milligan.”

Deputies Jeffrey Simpson and Robert Whipple were selected for their actions in May 2023 as members of the Sheriff ’s special response team.

Whipple, realizing Simpson suffered a life-threatening injury, tended to Simpson’s wound to control the bleeding while under stressful circumstances.

This year, more than one deputy was chosen.

The county Board of Supervisors oversees a $410 million budget and is comprised of 23 supervisors. Each of Saratoga County’s 21 municipalities have at least one elected supervisor; Saratoga Springs, and Clifton Park – the county’s most populous municipalities – each have two representatives.

New Belmont Logo Revealed

SARATOGA SPRINGS — The New York Racing Association (NYRA) revealed its 2024 Belmont Stakes logo on Wednesday. This year’s event will be hosted at the Saratoga Race Course while Belmont Park undergoes renovations.

The new logo features the Saratoga grandstand and pays tribute to the track’s storied

past. The image will be displayed during the event and on official merchandise.

The Saratoga grandstand’s spired roofline was designed by architect Herbert Langford Warren. According to NYRA, the grandstand is the oldest continuously used stand of any professional sport in the country.

The 2024 Belmont Stakes will begin on Thursday, June 6 and end on Sunday, June 9.

Tickets go on sale next month.

CLASSICAL RADIO STATION ADDS NEW HOST

TROY — Classical music radio station WMHT-FM has added a new host/producer to its lineup: Charlotte Evelyn Wilson.

Wilson previously worked at Radio New Zealand, where, according to WMHT, she managed a nationwide campaign protesting the government’s decision to “axe” the country’s only classical music station. The campaign resulted in an apology from New Zealand’s deputy prime minister, and the station stayed on the air. Wilson was also a public radio host at KBAQ classical radio in Phoenix, AZ and at NPR member station WUOT in Knoxville, TN.

SARATOGA SPRINGS — The Saratoga Springs City School District needs your help naming honorees for its ninth annual Hall of Distinction. In a statement, the district called it a “wonderful opportunity to honor and celebrate the outstanding accomplishments of the graduates of our school district.”

Potential candidates must have graduated from the Saratoga Springs High School at least ten years ago. The district said nominees should “exemplify

our District’s educational philosophy through an outstanding social contribution to the broader community, by making a difference in the lives of others; and/or outstanding professional contribution to, or achievement in, their field of endeavor.”

Past Hall of Distinction recipients include actor David Hyde Pierce, golfer Dottie Pepper, writer Joseph Bruchac, and aviator Margaret Stoddard Perkins.

SARATOGA SPRINGS — After two years of negotiations, the Saratoga Springs City School District and the Saratoga Springs Teachers Association (SSTA) have reached a new, five-year contract agreement.

The SSTA ratified the agreement on January 4, and the district’s Board of Education (BOE) approved it at a meeting on January 11. The contract will last until June 2027 and cover nearly 600 teachers.

The agreement includes annual salary increases of 4.5% inclusive of step increments, as well as employee health insurance contribution increases.

The contributions will increase by 2% in 2024, 1% in 2025, and

1% again in 2027.

“Our membership has always been committed to providing the best education it can for the students in our community, and it has been a priority of ours to be able to recruit and retain the best teachers as they are the cornerstone of learning,” said Tim McGuiggan, president of the Saratoga Springs Teachers Association, in a statement. “We think this agreement will help the Saratoga Springs City Schools live up to that commitment.”

At the BOE meeting on Jan. 11, Superintendent of Schools Dr. Michael Patton said that “it took us a little longer than anticipated, but in the end, we got to a spot that was mutually beneficial to both parties. This new contract supports our current faculty members and continues to help

our school district remain highly competitive in our recruitment and retention efforts.”

Tony Krackeler, president of the BOE, said that the agreement “really acknowledges the incredible commitment and devotion of the teachers to the students of this district while also recognizing the fiscal reality of budgetary stress that’s pretty much prevalent everywhere in every institution right now. So I think we came to an agreement that works for all sides.”

Last year, SSTA members called upon the district to increase both salaries and healthcare contributions.

MALTA — Representatives from National Grid spoke to 11th graders at the Clean Technologies & Sustainable Industries Early College High School about the future of energy management in New York.

Cross spoke to students about New York State programs and incentives for energy efficiency.

And Lina Konandoust educated students on the future of energy management.

The presentation was designed to help students with their Household Energy and Carbon Footprint Mastery assignments.

SARATOGA SPRINGS — The Saratoga Springs City School District opened registration for its 2024-2025 Universal Pre-Kindergarten programs on Monday. The programs are tuition free. To be eligible, children must turn four on or before Dec. 1, 2024. Registration will be open until April 30, 2024.

A submitted application does not guarantee placement in a pre-K program. If there are more applicants than available spots, a lottery will occur on May 15. All families will be notified if their child has received a spot by the end of May. Upon being notified, families will need to confirm their child’s placement.

The Ballston Spa Central School District will open registration for its Universal PreKindergarten program on Jan. 29. Online registration will be available at 8 a.m. on Jan. 29 at bscsd.org/Page/13659. The deadline for all applications is March 1, 2024. If there are more applicants than available spots, a random lottery will occur. Those not selected in this lottery will be placed on a waiting list. A letter confirming acceptance or rejection from the Universal PreKindergarten program will be mailed to families by March 15.

The district is also hosting two Universal Pre-Kindergarten

open houses, which families are encouraged to attend. During the open horses, families will be able to meet teachers, tour classrooms, and learn about specific policies and procedures.

ortunately, the Saratoga Farmers’ Market is inside the Wilton Mall during these chilly, sometimes frigid, winter days. Did you know that you can sip a hot cup of coffee from one of our vendors while shopping at the market? I recently had a great chat with Sam, owner of Nally Coffee, about the brand and beans.

INGREDIENTS:

*Ingredients currently available at the farmers’ market • 1 cup plain yogurt* • 1 cup minus 2 tablespoons maple sugar* from Slate Valley Farms, divided (see note) • 2 eggs • 1/3 cup vegetable oil

I started Nally Coffee in February 2021.

I was interested in specialty coffee and trying it from different parts of the world. I discovered roasting coffee after my brother gave me un-roasted coffee beans for Christmas, so I started researching and learning. Things fell into place a couple of years ago, and I knew it was time to jump in and give it my best shot!

How many flavors do you have?

Currently, I have five blends with new flavors coming. I currently offer The Adventure, The Heritage, The Puffin, The Tune Skis, and a decaf Honduran coffee blend.

In making the Adventure and Heritage Blends, I use Fair Trade organic Honduran Coffee with a heavier body with caramel and butterscotch notes. The Heritage blend is a darker roast with nice smokey and nutty-like flavors. I make the Puffin and Tune Skis Blends from Fair Trade and organic Colombian coffee with fruity notes like cherry and orange. The darker roast has a subtle hint of smokiness. The Decaf is very popular; it’s smooth with a brown sugar tone.

4. In another mixing bowl, combine the flour, baking powder, baking soda, and salt. Peel the apple, then core, quarter, and slice it thinly. Add the flour mixture to the yogurt mixture and whisk it in quickly, until just combined. Don’t worry about lumps and do not overmix.

5. Pour the batter into the prepared pan, arrange the apple slices on top, starting from the outside, and sprinkle with the reserved maple sugar.

6. Put into the oven to bake for 35 to 40 minutes, until the top is golden and a cake tester inserted in the center comes out clean. If you feel the apple slices might be browning too quickly, cover with a piece of parchment paper.

7. Lift the cake cautiously out of the pan and transfer to a rack to cool. Serve slightly warm or at room temperature.

NOTES: Substitute 3/4 cup maple syrup and use just 3/4 cup yogurt to make up for the extra moisture.

HELLO MY FOODIE FRIENDS !

One of our family’s favorite food is pizza, especially Paula’s homemade pizza. Pizza is an excellent all-around family

food that every person can personalize and enjoy on the day it is cooked, or the following day (Breakfast Pizza?). It is also a perfect “on the go” food to help with the crazy schedules that we all have. Back in the days before children, pizza was a frequent meal for Paula and me. Our lives were basically like “two ships passing in the night.”

Italian Margherita Pizza

Food When Paula and I first dated one of our favorite romantic places to eat was an Italian restaurant called Verdolini’s. We were there so much they knew our order when we came in. The waitresses used to elbow each other and fuss over the young lovers. They were planning our wedding even before we even thought about getting married.

The lighting and ambiance were straight out of a movie.

The whole Verdolini family worked there and when he was old enough, my brother Bill, worked there also. They made

INGREDIENTS

• 3-4 c. water, divided • ½ tsp. instant dried yeast • 7 ¾ c. white flour (unbleached) • 1 tbsp. + 3/4 tsp. fine sea salt RED SAUCE • 1 large can san marzano tomatoes (28 oz.)

• 1 ½ tbsp. olive oil • 1 clove garlic, minced • 1 ½ tsp. sea salt • ¼ tsp. dried oregano • dash red pepper flakes (adjust to taste)

MARGHERITA TOPPINGS • 1 lb. fresh mozzarella, torn • fresh basil • fresh parmesan cheese • any additional toppings you’d like (oregano, pepperoni, sausage)

INSTRUCTIONS MAKING THE DOUGH: 1. In a small bowl, add ½ tsp. of yeast and 3 tablespoons of warm water. Set aside.

2. In a very large bowl or 12-quart round tub, add the flour (7 ¾ C) and slowly add 3-4 C of warm water. Mix by hand until just incorporated. Cover and let rest for 20 to 30 minutes on your counter.

4. Sprinkle the salt over the top of the dough.

Then pour the yeast mixture over the dough.

Use a small piece of the mixture to wipe the remaining yeast goop from its container, then throw it back in the tub.

5. Mix the dough by hand, wetting your working hand with water before mixing so the dough doesn’t stick to you. Mix well until incorporated.

6. Reach underneath the dough and grab about one-quarter of it. Stretch this section of dough and fold it over the top of the other side. Repeat three times until the salt and yeast are enclosed.

Let rest for 30 minutes.

8. After 30 minutes, fold the dough by grabbing the edges and stretching them up and into the center. Fold 4 times. Let it rest, covered at room temperature, for 5-6 hours. When the dough is about double its original volume, it’s ready to be divided.

9. Divide, moderately flour a work surface about 2 feet wide. With floured hands, pick up the dough and ease it onto the work surface in a somewhat even shape. Dust the entire top of the dough with flour, then using a large knife or bench scraper, cut it into 6 equal-size pieces.

10. Shape each piece of the dough into balls. Be careful not to knead it - you don’t want to deflate the dough. After each ball is formed, place it into a piece of plastic wrap that is sprayed with cooking spray or lightly oiled. Seal each dough ball in the plastic wrap. Place all 6 balls of wrapped dough onto a large baking sheet and place in the fridge. Refrigerate for at least 30 minutes to make the dough easier to shape.

Once the dough has refrigerated, you are now ready to prep it for the oven.

11. To prep for the pizza, put the pizza stone in the oven and heat to 550°F or the hottest your oven will go (If it only goes to 500°F that’s fine, you’ll just bake it a little longer.)

RED SAUCE: Pulse all sauce ingredients quickly in a blender. It doesn’t need to be too finely pureed.

FORMING THE PIZZA: 1. Remove the dough ball from the refrigerator, put it on a floured work surface to coat the bottom with flour. Flip and coat the other side with flour as well.

2. Gently stretch and turn the dough repeatedly.

Keep a close eye on the thickness of the dough.

You want it thin, but you don’t want it to tear or develop holes. Using your fingertips, press outward on the dough until it forms a 10-14 inch pizza. Leave the outside 1 inch of the dough’s outer rim thicker to be your crust. Add the dough onto the floured pizza peel and run your hands around the perimeter to shape it.

3. Add pizza toppings starting with red sauce, then fresh mozzarella. Be sure to tear or cut your fresh mozzarella into thin pieces. Sparsely place the mozzarella around the dough - you want spaces of red sauce in between the cheese.

4. Add any additional toppings you’d like - we love adding fresh basil leaves before baking they get sweet and crispy when cooked. Oregano, fresh parmesan, pepperoni, and sausage are also great on these pizzas.

COOKING THE PIZZA: 1. Once your pizza is topped, slide dough onto pizza stone - leave stone in the oven. Bake for 5-6 minutes at 550 (if your oven only goes to 500, bake for 7-8 minutes), or until tops of crust and cheese are browning. Remove pizza with pizza peel and transfer to a cool surface. Let rest for 5 minutes before cutting and serving.

19 a pizza that was different from any pizza I have had before or since. Paula was curious about their ingredients and how it was made. She would ask and they would say “it’s a secret.” We had my brother Bill, however, as our spy on the inside. Bill would bring home any leftover pizzas at the end of the night and hand them out to whoever wanted them. He could not manage to get the entire recipe from the owner, but he got enough that he and Paula came close. One of the special parts was baking them in their stone oven. We have tinkered with it over the years, and I think Paula’s pizza is now perfect. That’s the thing about pizza; it’s a personal taste type of food. The way I like it might be different than the way someone else likes it and that’s ok.

A pizza stone is one of the keys to making a perfect pizza.

The science behind pizza stones is relatively simple: the stone conducts and holds heat, which keeps the oven temperature steady even when a cold ingredient (such as an uncooked pizza) is introduced. This not only helps the pizza cook more evenly, but also allows the bottom to get crisp. The trick to a crispy pizza is to heat the stone in the oven prior to putting your prepared pizza on it.

Singing The Blues at Caffe Lena Feb. 10 SARATOGA SPRINGS — A night of vintage blues and roots will be staged at Caffè Lena on Saturday, Feb. 10, featuring two talented duos: Boston’s Erin Harpe Country Blues Duo and Saratoga’s Mark & Jill Sing The Blues.

The two teamed up for last year’s sold-out “HURT - A Mississippi Inspiration: Fundraiser for the Mississippi John Hurt Film Project” show last April at Caffé Lena.

Mark & Jill Sing The Blues are led by guitarist/singer Mark Tolstrup, accompanied by the

Erin Harpe Country Blues Duo has been called “today’s country blues at its very best”

A Tribute to Django Reinhardt: Hot Club of Saratoga Presents Django Birthday Celebration Jan. 23 ALBANY — The Hot Club of Saratoga and The LindaWAMC’s Performing Arts Studio will collaborate on a spectacular homage to the musical genius of Django Reinhardt Tuesday, Jan. 23 with a concert, immersive workshops, open jam session, and dancing.

ALBANY — The performing arts centers at The Egg and the University at Albany, which jointly present Dance in Albany, present The Mark Morris Dance Group at The Egg at the Empire State Plaza in downtown Albany for a performance on Thursday, Jan. 25, and the Ellen Sinopoli Dance Company onstage at the UAlbany Performing Arts Center on the uptown University at Albany campus on Saturday, Jan. 27. Both performances will begin at 7:30 p.m.

Mark Morris Dance Group (MMDG), was founded in New York City in 1980 by artistic director and choreographer Mark Morris. The company’s last appearance in the Capital Region was in March 2022, also as part of the Dance in Albany series. This time, MMDG’s performance will be accompanied by both live and pre-recorded music and will feature four works: Excursions,

Candleflowerdance, A Wooden Tree and Water. Prior to the performance on Jan. 25, there will be a Prelude talk sponsored by the Dance Alliance that begins at 7:15 p.m. at The Egg. Ellen Sinopoli Dance Company (ESDC) with Capital Trio: As both a collaborative artist and venue venture, the Jan. 27 performance is a unique one. For over 30 years, the ESDC has been the resident company of The Egg. The program will feature all live music and will include two dance works as well as a music interlude.

Premiering on the program will be Boundary Behavior to David Walther’s “Eighth Duo” for violin and piano performed by Duncan and Hilary Cumming.

The choreography explores how boundaries control and curtail movement and yet enable it when they segment, shatter, reshape and become living malleable entities. The Capital

Trio will also offer Beethoven’s Piano Trio in G major, Op. 1 No. 2 as an interlude between the two choreographed works on the program.

All-Star Grasso Surpasses All-Time Goal Record

Tara Sweeney is a student and teaching assistant at the Saratoga Springs Youth Ballet who performed with the New York City Ballet at SPAC in productions of “Coppélia” and “A Midsummer Night’s Dream.” Currently a senior at Johnstown High School, Sweeney will attend Vassar College this fall to study English and Dance.

Saratoga TODAY asked Sweeney about her many accomplishments, as well as her future plans.

Q: What was it like performing with the New York City Ballet (NYCB)?

A: Performing with the NYCB was one of the greatest experiences of my life. Not only were the instructors kind and considerate but so were the dancers. I was expecting them to ignore us children in the ballet but they talked and welcomed us and it made the experience memorable. It was a new experience dancing for four or more hours a day, every day, and it heightened my love for ballet.

What are some things about ballet that the general public might not understand?

A: Most people in the general public do not understand how much of a commitment dance is. I dance every single day after school and on Saturdays and it is extremely time consuming, if not more than a school sport. I dedicate my time to coming to dance class every week and preparing for my numerous performances throughout the year. Something people may also not know is that dance is not just during the school year. In order to maintain your ballet technique over the summer break, dancers attend summer intensives where we dance all day long for at least 5-6 weeks of the summer.

What are your future career plans/goals?

A: In my future, I plan to have a writing career of some sort in the form of journalism, article writing, publishing and editing, or novel writing. I also enjoy literature and could imagine a career in library studies or museum work. My passion for dance persists and I will be dancing in college and I hope to either continue dancing in my future or become a dance teacher.

GLENS FALLS — Adirondack Thunder All-Star Patrick Grasso has set the record for the most goals scored in team history. Grasso broke Brian Ward’s old record of 77 with his 78th goal against the Maine Mariners on January 6.

Grasso also competed in the 2024 Warrior/ECHL AllStar Classic on January 15.

Grasso scored a goal in the third period to give the ECHL AllStars a five-point lead. The AllStars won the game 18 to 11.

Schuylerville Player On Brink of Breaking Records

SCHUYLERVILLE — Luke Sherman, Schuylerville High School’s varsity basketball star, is on the brink of breaking two all-time school scoring records.

As of Jan. 16, when a snowstorm canceled a scheduled home game against Queensbury, Sherman had netted 1,283 career points with the Black Horses.

This placed him 35 points shy of breaking the boys’ basketball scoring record set by Eric Stover in 1978. Sherman may also surpass Carol Cheney’s 1986 boys and girls scoring record of 1,566.

Sherman’s next game is on Friday, Jan. 19 at Glens Falls. As of press time, the Jan. 16 home game had not yet been rescheduled.

Racing Hall of Fame Updates Review Process

SARATOGA SPRINGS — The National Museum of Racing and Hall of Fame is overhauling its review process. Starting this year, the Historic Review Committee will only consider candidates for induction if they were active during a specific era. In prior years, the committee considered all

candidates throughout racing history, as long as they had been out of competition for more than 25 years.

In 2024, only pre-1900 horses, jockeys, and trainers will be candidates for induction. In 2025, the period of 1900 through 1959 will be reviewed. In 2026, the 1960-2000 era will be up for consideration. Then in 2027, the process will cycle back to pre-1900.

Each year, the Historic Review Committee is able to select a maximum of three inductees.

All inductees need 75% approval from the committee.

“Based on feedback from members of the various Hall of Fame committees and the committee chairs, I believe these changes will make for a more effective evaluation process for historic candidates being

considered for the Hall of Fame,” said Brien Bouyea, the Museum’s Hall of Fame Communications Director, in a statement. “These specialized review committees will no longer have to compare candidates from vastly different eras. Evaluating the achievements of a horse or human from before 1900 alongside one from perhaps a century later is an apples vs. oranges exercise that

we wanted to improve upon.”

This year’s pre-1900 Historic Review Committee will include Michael Veitch, Edward L. Bowen, Ken Grayson, Jennifer Kelly, Dorothy Ours, Josh Pons, Mary Simon, and Gary West.

The 2024 Hall of Fame class will be announced in late April.

Saratoga Hall of Yankees Sign Local Infielder Famer Interviews by Jonathon Norcross Saratoga TODAY for NFL Head Coaching Job EAST GREENBUSH/ NEW YORK CITY — The New York Yankees have signed infielder Kevin Smith, a native of East Greenbush, to a minor league deal. Smith played in 49 games with the Oakland Athletics last year, finishing with a career-best OPS of .546. He

also played with the Athletics in 2022 and saw 36 plate appearances with the Toronto Blue Jays in 2021.

Smith graduated from Columbia High School in East Greenbush, about ten minutes outside of Albany. After playing at the University of Maryland, College Park, he was drafted in the fourth round of the 2017 MLB draft by Toronto.

SARATOGA SPRINGS/ ATLANTA — Anthony Weaver, a former Saratoga Springs High School football player and member of the Blue Streaks Hall of Fame, interviewed for the Atlanta Falcons’ head coaching position on Sunday. While at Saratoga, Weaver won the National Football Foundation scholar-athlete award. He’s also a member of the Capital Region Hall of Fame.

Weaver is currently the

assistant head coach and defensive line coach for the Baltimore Ravens. He has 12 years of coaching experience, including stints with the New York Jets, Buffalo Bills, Cleveland Browns, and Houston Texans. Prior to coaching, he played as a defensive end for the Ravens and Texans. He was a second-round pick in the 2002 NFL Draft.

According to ESPN reporter Adam Schefter, the Washington Commanders have also requested to interview Weaver for their head coaching job.

BALLSTON SPA — The Ballston Spa girls varsity basketball team’s four-game winning streak came to an end last Friday.

In their game against Niskayuna, the Scotties lost 41-59. They are now 8-5 this season.

Despite the loss, the team maintains a positive outlook.

Head Coach David Morse’s focus is on the immense improvement from last year.

Referring to last season as a year to “put a system in place, and get everything in order,” Morse said this year, the team is putting all of the pieces together.

Morse said that there was a lot of work put in during the offseason, and it paid off. “We had so many girls come in that have improved so much,” he said.

One of these girls was junior Sophia Lee. She leads the team in points, averaging 14 per game. Coach Morse said that when the team is struggling, like they were against Nisky, they

will turn to her to score. She finished with 19 points in Friday night’s game.

But Morse also highlighted the team as a whole, praising them all for their talent. “It seems like every game we have someone else step up in a big role,” he said. With multiple players averaging almost double digits in

both points and rebounds, every win is a team effort.

The Scotties look to use this week’s loss as a way to improve.

“Our focus is moving forward,” Morse said. “We reflect on what we did poorly and we look to get better every day.” Their next game is on Friday, January 19 against Guilderland.

Saratoga Cross-Country Champions Celebrated by Education Board

SARATOGA SPRINGS — The Saratoga Springs High School girls’ and boys’ crosscountry teams were formally recognized and celebrated by the Board of Education at a meeting on January 11.

Dr. Michael Patton, Superintendent of Schools, said that “the teamwork and comradery and really the year-round effort that our student-athletes put into our running program is just an incredible accomplishment.” Patton said that the board meeting was “truly a special night to have both our boys and girls here together to be celebrated for this wonderful accomplishment.”

The state champion girls’ team was introduced by their coach, Linda Kranick. “This

team went on to win the Federation meet, which is yet another state championship and that’s the best of the best in New York State and [the team] finished number six in the United States this year at Nike Cross-Country National Championship,” Kranick said.

“I personally want to thank all the parents, both boys’ and girls’ cross-country teams, because you’re out there in the roughest weather supporting your sons and daughters and we really appreciate it.”

Boys’ coach Shane Zanetti introduced his team and praised them for setting “a culture and tradition that’s going to continue for the next few years.”

At the NYSPHSAA Class A championship in November, the girls’ team captured the team title for the fifth straight year, and senior Emily Bush won

The boys’ team won the Class A championship in a tiebreaker, marking their first team title since 2012. They finished

third at the Nike Cross Country Regional Qualifier, just one spot away from a trip to the national championship.
