outh Services of Creek County was chosen by Sapulpa-based Dynamic Restoration Roofing and Construction Company to receive a new roof for the holidays. Dynamic Restoration partnered with YSCC to “Raise the Roof” this holiday season, and is challenging the community to match their generous gift by donating other items that are needed to continue maintenance on the building. What began in 1987 as a children’s shelter, has grown to include counseling, case management, parenting classes, and a youth diversion program. Each year, YSCC serves over 500 youth and families, with 100 of them being children living in the area.

The Holidays are upon us! Remember to make the most of it.

Is it true for you as it is for me—that holidays are depressing? Feel that rush in your gut that nags: HalloweenThanksgivingChristmasNewYears? It seems to me that this time of year absolutely jets by, and every day is packed to the latches with holiday-specific chores to do.

There are scary witches and cobwebs to put up and take down, mums to buy and kill at first frost, costumes to make and sell at a garage sale next year, and $30 worth of candy to buy.

Take a breath and Thanks-

giving is here, with kids home from school, and staying antsy with no one to annoy but family. And if you are “it” for the Thanksgiving eating frenzy, you have so much to do you can’t even keep the socks off the living room floor.

Yelling doesn’t help. If it did, I’d hold the Queen’s “Order of the Garter.”

Then, the pre-“Grand Meal” begins. Try shopping with a thousand other people, trying to find the same items as you. Remind me again what turmeric is for.

Unsweetened evaporated milk? It’s on the list, so it’s in the basket.

Did anyone invite that sour old man who lives

across from us? Can you imagine anything more depressing than “Meals on Wheels” for Thanksgiving?

Surely, they mean well, but they bring the food and leave. The best part of any family meal for me is the laughter.

Wear sweatpants, eat till you’re stuffed, and lean back in the recliner for a nap. Ah, Thanksgiving!

How has this modest harvest day meal that began with “natives-allowing-strangers-to-live” Day, degenerate into eating and football debauchery? Most people eat too much calorie-laden and nutritionally-vacant food every day. Hence, the nationwide obesity epidem-

ic, especially in Oklahoma and other meat-and-potato states, and my own English dowager figure.

And the dishes! Every glass, bowl, and spoon in the building. I used dishes that were bought expressly for one meal, maybe two, the whole year. I washed them, wrapped them up, and returned them to the back of the closet. Do I feel like a fool? Yes. Who uses engraved glass butter knives or Grandmother Heginbotham’s china for everyday? Maybe we should.

Prepping for Sapulpa winter sports season

Time to clean.

That was the mantra of a few of our athletic teams last week as they gathered their cleaning supplies and got down to work.

More than 75 students and 10 coaches swept stairs, wiped down counters and seats, and straightened storage areas to make both high school gyms feel clean and new.

“This is always a great night for our winter programs; not only does it serve as a team and athletic dept bonding experience, but students also learn to value the great re-

sources that are available to them,” said Athletic Director Jason Parker.

Basketball kicks off this week with Junior High games on Nov. 12 at home vs. Carver (8th grade) and Owasso (9th grade). Varsity begins Dec. 4 at Booker T. Washington.

Junior High wrestling starts at Sand Springs on Nov. 30 and Varsity at Bristow on Dec. 4.

Sapulpa Chieftain Wrestling, Volleyball, Girls Basketball and Boys Basketball participated in the deep clean.

Local News City Employees get 3 percent raise “across the board” City Manager says “it’s the first time anyone can remember giving an across the board raise.”

Chief of Police, Mike Haefner, sporting a week’s worth of stubble for the charity fundraiser “Vets That Matter,” discussed with the Councilors present that Spay Oklahoma no longer supplied spay and neuter services to the Sapulpa Animal Shelter. He said the Humane Society of Tulsa, was a lot more expensive than Spay Oklahoma. On December 3rd, Spay Oklahoma will reopen on N. 36th St. in Tulsa.

In an interview following the SCC, Sapulpa Times found that 94 per cent of dogs and 92 per cent of cats have been adopted. Chief Haefner said that, sadly, 11 animals have been put down so far in 2018, mostly sick or injured pets. The council members approved.

Further, the Chief also discussed with the Councilors ending the contract with Alliance for cleaning the Police Dept. He said Office Express was the best bid and would save the taxpayers’ money, after a base “cleaning from top to bottom.”

The service would begin Dec. 10, 2018 in the amount of $1,495 a month. The councilors agreed.

City Manager Joan Riley asked the city leaders to approve an agreement establishing the Oklahoma

Municipal Management Services.

The City of Sapulpa would chip in $5,000 to the Association and help take care of smaller municipal entities. Following questions from Hugo Naifeh, Carla Dunn, Bruce Bledsoe, Mayor Reg Green, and others, Joan Riley answered that some communities are in “dire straits” and OMMS helps them “get through. It started as a ‘circuit rider’ (city manager replacement) and grew into cities of all sizes for counsel or training.”

Riley continued: “Great help to council, expertise. In Sperry, Ok, CMMS brought in an interim city manager to get operations back on line. Financial help…”

Someone asked, “Isn’t that what INCOG is for?”

“They placed an interim in Norman and Shawnee…” continued Riley. “You’re either a member or you’re not…Any council member could get with them for advice.”

Carla Gunn said, “It’s not very convincing right now.” With David Widdoes, City Attorney absent, the city leaders decided to table the motion to a Study Session in December for further inquiries.

Amy Hoehner, City of Sapulpa Legal Assistant, explained 2 different resolutions to amend the FY 2018-19 annual budget in accumulative amount of $410,604.00

County Commissioners change Columbus Day to “Native American’s Day” In new business, the Commissioners answered two neighbors who questioned how to get their bumpy, gravel-paved road onto the County Maintenance list. Gwen Deckard and Gloria Gaither told the assembled officials about their road, which is the end of 43rd W. Ave. south of Oak Ridge School. Deckard said it is a narrow road, with a wide ditch with old tires piled in it. Gaither stated that there is one neighbor (among 13 homes along that road) who has severe back problems and was in “excruciating pain.” When the gravel has worked its way to the sides of the road, it is extraordinarily rough and nearly impassable.

Newt Stephens, Commissioner of District One, said he would start the process and put it on the agenda.

More questions included how to go about getting it on the list, would it be graveled or asphalt, and how long it would take. Stephens said that easements had to be “signed over” so the process could begin.

Both women asked, “Can we start today?” Stephens smiled broadly and said, “Why, yes, I can meet with you this afternoon.”

In as aside, Warner remarked that the “Lights On” ceremony on the courthouse lawn was “the best I’ve ever seen it.” He said, “Newt’s guys did it…It made me proud to be a member of Creek County.”

The 2019 Creek County Holiday Schedule, which is the same as the State’s, was approved. The main difference from last year is “Columbus Day,” is now referred to as “Native Americans Day Commissioner Stephens remarked that they “tried to call it ‘Indigenous People’s Day’ but nobody understood it.” It remains a federal, state and county holiday which is honored on the 2nd Monday of October.

The Allocation of the Alcoholic Beverage Tax was approved.

Treasurer Don Engle’s signature is on the Certificate and verifies that all the towns in Creek County get an amount of money: Sapulpa, $12,267.57; Mounds, $697.57; Drumright, $1,736.27; and Kellyville, $686.63. Twelve cities and towns shared in the tax allocation totaling $21,867.33.

Lane Whitehouse was absent from the proceedings on Monday, Nov. 19th.

The next Commissioners meeting is Monday, November 26th, beginning promptly at 9 a.m.

Corrections and Retractions: In a story published on November 10th, 2018 titled “Medical Marijuana reaches another benchmark,” Sapulpa Times erroneously attributed the following quote to a man named Gary Brunk: “if there

are needles and parapher nalia on our property, who we gonna get to clean that up?” We’ve since learned that Brunk was not in attendance at this meeting and the man who made that statement has not yet been identified. We regret the error.

and appropriations in the amount of $278,150.00, from the City and Sapulpa Municipal Authority, and revenues of $644,000.00 and increasing appropriations to $480,000.00, from the City and Sapulpa Municipal Trust Authority.

The first amount is for the funds for wage adjustments. And the second one is for funds for kennels and lab furnishings for the impending animal shelter (which was removed from the original budget).

City Manager Riley said this was just a “transfer here to there. We closed out the books in June 2018, and additional revenues were pending, higher than anticipated.” These items were approved by the council.

Speaking of wage adjustments, City Manager announced a 3 per cent wage increase “across the board” for city employees. When questioned by Carla Gunn, Riley said it was within her purview to hire and fire, and sign contracts (as with the City Attorney). “I can give raises,” she said. “This is the first time anyone can remember giving an across the board raise.”

A request to waive a decades-old (1993-94) lien against a property in Westport Addition arrived before the board in the person of Mattie Smith-Broom, who spoke for the owner. It seems the owner said he paid it, the city has no record of

payment or release. The owner has no proof one way or the other. The Treasurer has no record. It is only found in the County Clerk’s records which show an unpaid lien of $1,300.00. The owner wishes to sell his vacant lots but cannot until the lien is resolved. Councilors Lou Martin and Carla Stinnett fell on two sides of the question. Martin said the tax-payers would be paying for it, and Stinnett remarked that the city should “forgive a debt” that can’t be proven. The mayor suggested approving a reduction.

It was tabled until the owner could speak for himself.

The Groundbreaking Ceremony for the Youth Sports Complex is scheduled for 10 a.m., Tuesday, November 27th, east of Walmart on Cheyenne Road.

During the following Municipal Authority meeting, the Waste Management Public Sector Manager, Rich Padgett, and Purchasing Director for the City of Sapulpa, Mike Hoehner, spoke to the councilors about a 1st amendment to the Services Agreement to manage all commercial account services and extending the contract to June 2024.

It was tabled for more research on the services offered.

Herbert Baker

Dr. Kim Howard, Nikki White to wed

Herbert Joseph Baker, known as Herb or Herbie by his friends and family was born January 21, 1943, and lost his battle with cancer on November 18, 2018. His family has peace knowing that he is now with his lord and savior Jesus Christ. Herb was best known for his loving spirit, ability to make anyone laugh and feel good about life and themselves.

He was preceded in death by his mother, Ella May Baker, Father-nlaw, Sam Lewis Sr., his wife, Wanda Jean Baker, and his son, Gary Don Landers.

The ones left to cherish his memory are his loving companion and best friend, Betty St. John, his

daughters, Gina Banks of Glenpool, Susan McConnell of Glenpool, Jodi Kelly of Glenpool, and Jacci Townsell of Glenpool. Also, surviving are his grandchildren: Meredith Banks, Jannai Baker, Seah McConnell, Jagger Razo, Tafva Nelson, Ioan Townsell, Kamdin Bearpaw, tagOfanE Bearpaw, and his great-grandchildren, Eco Razo and Morning Rose Razo. Herb will also be remembered by numerous family and friends which he cherished.

Richard Clay Richard Dewayne Clay, 64, of Kiefer departed from this life on Friday, November 16, 2018 at St. Francis Hospital, Tulsa, OK. He was born on December 12, 1953 in Tulsa, OK to Charles W. and Carrie Lucille (Cowart) Clay. His job was being a U.S. Merchant Marine Officer for 40 plus years.

He graduated from high school in San Diego, California. He served his country in the U. S. Navy on the USS AJAX from 1975-1978.

Richard and Linda married on September 3, 2003.

He loved Nascar or any kind of racing with grandkids. He also loved riding motorcycles with family and friends.

He is survived by his wife,

Linda D. Clay of the home; son, Johnny Lawrence and wife, Amber; grandchildren, Gage, Nathan, Hailey, Ryan, Miracle and Ryder Lawrence, Clarissa Draven; gr e a t- gr a ndc hil dren, Adrian M. Lawrence; brother, Redd Carson of Kellyville; and sister, Liz Berry and husband, Danny of Tulsa.

How much is that Coffee Mill?

Morning coffee has been a necessity for centuries, and there have been numerous patents for coffee-making machines. The first American patent was given to Thomas Bruff Sr. in 1798.

Coffee grinders, also called coffee mills, were needed to grind the coffee beans to cook with water to make coffee. The mills were hand-cranked until 1938, when the first electric models were made.

Most collectors search for early wall-mounted or box-type mills. They were made of wood or glass with a cast iron crank.

Coffee-mill companies also used ceramics, plastic or attractive metals later in the 1900s. Most coffee mills had the name of the brand of coffee on the front or at least the word “coffee.” “Koffee” is not a misspelling; it is the German word for coffee.

On the back or side of the coffee mill there usually is a serial number that can be dated with the help of information found online or in “The MacMillan Index of Antique Coffee Mills,” a book by Joseph E. MacMillan. There also may be colorful pictures like the ones seen on a patriotic coffee mill, which was

decorated with a flag and a picture of Theodore Roosevelt on his horse.

It recently sold for $265 at a Hess auction. *** Q: I have a pair of shoe roller skates with wooden wheels. There is a metal plate on the bottom with the number “5” and “Chicago Roller Skate Co., Ware Bros., Pat. Aug. 15, 1914, Made in U.S.A.” What can you tell me about them?

A: Ralph and Walter Ware bought The Chicago Roller Skate Co. in 1905. Their brother, Robert, joined the business in 1909. Roller skating was a popular pastime, and Chicago had several roller rinks. Skates with wooden wheels were made to skate on the wood floor in roller rinks. The company also made racing skates, clamp-on skates for skating on sidewalks, parts for skates, lawn sprinklers and a few other products. Your shoe skates probably were made between 1914 and 1920. Time to Cash Those Old Savings Bonds?

Did you stash away savings bonds years ago? Do you know what they’re worth now?

While savings bonds used to be a great way to put money aside for the future, with the different interest rates and dates of maturity, it’s all too easy to forget they’re there.

Paper bonds haven’t been issued for years; they’ve all gone electronic.

But if you have paper bonds from long ago, there’s a good chance they’ve matured. A few things to consider: -- Paper bonds can add interest over and above the face value until they’re finally mature, which is usually 30 years. If your paper bonds are very old, they could be worth much more than face value.

-- Cashing in the oldest bonds first is a mistake. They might still be earning great interest.

-- If you cash in a bond on the

wrong day, you might be giving up six months of interest.

-- Since you pay federal taxes on the interest, cashing in too many at once can have tax consequences you might not expect.

If you have paper savings bonds, your best bet is savingsbonds.com.

It has loads of information to help you get the most cash out of your bonds, plus a complimentary bond calculator. If you set up an account, it will track your bonds and give you their current values.

Perhaps its best feature is that it tells you the next time interest will be added. The last thing you want to do is cash in one right before the interest is posted. And it will warn you what interest you need to report on your taxes before you cash them in.

Creek County Democrats to offer scholarships Submitted Special to Sapulpa Times

The Creek County Democratic Party is pleased to announce that it is continuing its successful scholarship program. In the past, scholarships have been awarded to students from Bristow, Mannford, Depew, Kellyville, Drumright, and Sapulpa.

The Democrats hope to award two $1000 scholarships in 2019.

The charity called “Vets That Matter” is being honored with donations from the Sapulpa Police Department. The Chief, Mike Haefner, has relaxed grooming standards for the event until Christmas, during “No Shave November” and Men’s Health Month (also November).

Each man must donate $25 a week to continue growing his beard and donations or sponsorships are welcome.

Commissioners getting a new boom unit, hear bids on other projects

The two Commissioners in attendance, Leon Warner (District 2) and Newt Stephens (District 1) h, on Monday, November 19th, passed and made no action in “letting for bid” a 5-ton rooftop gas package unit (huge heating unit) for the Creek County Sheriff’s Office.

The unit on the roof has been repaired 2-3 times and it costs $1,500 each time to keep repairing it. This is a 3- bid item and will be passed to next week.

The commissioners opened and accepted sealed bids for one and/or two miles of 2” overlay for Highway 97 west on West 71st . Paragon Industries, B & S Construction, Dunham Asphalt, and APAC Central all submitted bids. Dunham’s was the lowest bid at $81,451.00 for one mile and $162,902.00. for 2 miles. The commissioners agreed to pass to next week, so they could study the bids and have Lane Whitehouse’s input. (He was absent for the Monday, November 19th

meeting.)

Next, Janet Thomas, the Purchasing Agent for the County, gave a presentation about the bids for the 6-month bridge and highway materials. There was confusing information for “all types of crushed rock.” The bids will be “rebid” for specific materials and the bids will be opened and possibly awarded on Dec. 10th.

Bids were discussed for the cleaning contract for the Collins Building. Commissioner Warner stated that Dana Logsden, Assistant County Clerk, had “done the homework on references.” Logsden recommended using a local chain, Bonus Building Care, at $235.00 a month which is $2 more than the lowest bid. No action taken.

The bids for the boom lift were opened and the decision was approved to buy the used 2006 Genie X65 from United Rentals for $30,000.00. For 2019 models, the prices ranged from $102,658.00 to $139,465.00.

The next meeting is Monday, November 26th beginning promptly at 9 a.m.

Do You Remember: The TeePee Drive-In? A weekly feature highlighting a historic Sapulpa business by Charles Betzler The TeePee Drive-In began operation in 1950, as a joint venture between Jimmy Zartaludes, the owner of the Criterion Theater, and an amusement company in Oklahoma City. The theater was said to have a 400-car capacity, a state-ofthe –art sound system to drive the speakers at each parking spot.

I started going to the TeePee as soon as I obtained my driver’s license in 1966. Until I started driving, I watched movies at the Criterion, but once I had my own wheels, I opted for the Tee Pee. I usually watched action/drama movies, but enjoyed sci-fi the most. I remember the concession stand very well. They had the best corn dogs around, and everything seemed to taste better when I was sitting in the comfort of my car, usually with a few of my buddies.

I remember one evening we tried to sneak a few friends in the trunk. (That was before the “carload –price.”) Jerry Zartaludes was taking tickets, when suddenly, a friend of mine in the trunk sneezed with the force of a stick of dynamite.

The jig was up! We had to cough up a few more shekels to get in. For the record, I never tried that again.

One of the down sides of an outdoor theater was the mosquitoes.

During the summer, since the drivein was close to a creek, the pesky little critters could be quite obnoxious. I always kept a can of OFF! in my glove box. Another annoyance was the occasional, inconsiderate

driver who would enter the drive-in and park with his headlights on.

The movies being shown were, for the most part, movies you could take children to. Many times, in the summer months, you would find the children playing in an area in front of the screen and families would sit out in front of their cars. Pickup trucks and station wagons were routinely backed into the parking spots, so several people could have unobstructed views of the screen.

A fond colloquialism for the drive-in, back in the day, was the “passion-pit.” This moniker was quite apropos. On many a cool evening, you would see cars in the back

rows with the windows all steamed up. Once I started dating, I did not pay much attention to what was on the screen. NOTE: I tried to keep up enough, so if queried by a parent of girlfriend’s parent, I could tell them what the movie was about.

The TeePee survived the wrath of nature, although once, as related by Mary Zartaludes (the daughter of Jimmy Zartaludes), Jimmy was in the concession stand when a tornado passed over head. It did not destroy the concession stand, but Jimmy watched the screen being lifted up, slightly, in the air and then coming back down. The drivein, however, could not survive

changing times and in 1999 closed its doors.

The Tee Pee went through several owners and operators. In 2012, Russ Glen, AKA Russell Brannan, purported theater entrepreneur, lease-purchased the drive-in from the owners, Marsha and James Baccus of Owasso. In a plot out of “The Music Man,” Glen/ Brannan announced he would bring a 3-D digital projector, a 40-foot-tall teepee neon sign, and eventually a second screen. Glen set up a Facebook page for the theater. He also set up TeePee Drive-In Theater Association, a supposed non-profit to take donations. He was quoted as saying, “I am doing everything by the book.” Déjà Vu? Glen/Brannan never showed up at the site again. It turns out the companies he listed were not on file in Florida as he stated. Furthermore, he had a trail of theaters he leased or subleased and walked away from. After a “snag” in completing the lease, Glen/Brennan was out of the picture, leaving many people who had volunteered laboriously to clean the place up and one who had put $2,000 into the Association’s bank account, stunned. Fortunately, Glen/Brannan was not a signer on the account and the volunteer got his money back.

Today, a former jewel of Route 66 sits in ruin and legal morass, waiting for someone to rescue it.

Nerd Knowledge: How to transfer Video and Audio tapes to your computer

Recordings made on tape, sooner or later, will deteriorate. Each time you play a tape some of the binder that holds the magnetic particles on the tape comes off. This is the reason you have to clean the heads of audio and video recorders and players.

You can transfer VHS, Berta, super VHS, VHS C, or 8MM. You can also transfer audio cassette recordings as well as 8-track tapes.

The first requirement, of course, is to have a working video or audio player. You should make sure the heads are clean and the machine is in good working order. If you no longer have a player, you can pick

up VCRs at thrifts stores for under $30. If you are playing back from a camcorder and no longer have one, you can still find those at thrift stores and on-line.

The first thing to remember is that you will be recording in real time and you will have to monitor start through finish. Another thing to keep in mind is that anything you do, like Fast Forward, or Rewind will show up in the transferred file.

If you are trying to save VHS, it would be preferable to have an S VHS player with an S video output.

Regular VHS is 240 lines of resolution and S VHS is 420 lines of resolution.

To get started, you will need either an AV capture device that comes with special software and an RCA cable (yellow, white, and red), or S video and a red and white (audio) cables to a USB connector. The capture device should have its own software, or you can download free software to your PC that will allow you to capture and edit or enhance the final product.

There is a plethora of Audio/ Video capture devices, starting at

around $10 up to around $100. The Best overall video capture card is the Diamond Video CaptureVC500.

My second choice is AverMedia DVDMaker 7.You can also buy a $10 capture device and use free software. I would recommend going to cnet.com and search for free video capture software. The really cool thing about this software is that it not only lets you edit your recording, but stabilizes the picture, enhance colors or video detail.

Transferring audio tapes such as cassettes is much more straight forward. You simply need an RCA to 3.5mm adapter. You place the red and white (RCA cables) into your cassette recorder/player and the 3.5mm plug into the Line-In on your PC. This is usually the blue jack by your speaker jack. Then down-

load Audacity at AudacityTeam.org.

This will let you edit and convert to an MP3 or WAV file. The latter format has better audio quality.

Last, but not least, is file sizes.

If you are saving video in uncompressed form, you will need a large external drive to store the video.

You can also burn to a DVD. Audio being transferred will have better fidelity if you use raw audio. If you need the storage space, I recommend using MP3 or WAV format, the latter having better fidelity.

You now have the information you need to save your precious memories. By doing it yourself, you can control the quality and editing, while saving yourself money.

Columns Nature Know Best: Eating well during the holidays

This is the season where food will be abundant for the next couple of months and it’s easy to gain a few unwanted pounds or fall off any bandwagons you may be on. In January we may all be searching for a way to get back on track.

I am not a big fan of fad diets or the latest and greatest health trend.

But, I would like to share a few plans or ways of eating that have worked well for us.

The Daniel Fast is a plan based on the scripture in the Bible where Daniel and his men abstained from eating royal foods for ten days, at the end they looked healthier and more nourished than the king’s men who feasted on royal fair. This fast can be done for several reasons be it spiritual or health related. (Daniel Chapter 1) The Daniel Fast consists of eating fruits, vegetables, legumes, whole grains, nuts, seeds and healthy oils. And, saying no to meat, sugar, yeast, all forms of sweeteners, pro-

cessed and fried foods for 21 days.

We have done this a couple of times and it is surprising how good we felt afterwards. There are several books and websites available. We use The Ultimate Guide to the Daniel Fast by Kristen Feola which contains great recipes.

Another plan that people have seen great results with is called Trim Healthy Mama or THM. It was created by two sisters named Pearl and Serene. In short, “Trim Healthy Mama is more than a nutrition book, although you’ll be armed with knowledge that will revolutionize your life. It is more than a recipe book, although you will find hundreds of quick and tasty recipes to satisfy your family and trim your waistline at the same time.” (Google Books) I learned several new tricks while reading their books such as using cauliflower as “fotatoes” instead of potatoes that are loaded with carbohydrates. The sisters are big on unprocessed foods and

eating a balanced diet. They have their own product line selling stevia as a sugar replacement and collagen for instance. I love their recipe for “good girl moonshine” which makes it easier to drink Apple Cider Vinegar which is fantastic for one’s PH level and overall health. They have books available, a website and a facebook page where they share women’s (and men’s!) testimonials.

Some are truly amazing!

Another plan of eating that works for us is “Eating 4 Your Bloodtype” by Peter J. D’Adamo.

The author says,” (after) collecting thousands of certified medical results from readers and patients that it works for 9 out of 10 people and that the more severe the problem, the faster it works.”

This plan is based on the idea that “Lectins, which are found in food, have a direct effect on the blood and the digestive tract. The protein binds to cells within the body, causing them to clump together and, potentially, to cause

hormonal disruptions. This effect on the body is similar to a foreign substance being present.”

“Peter D’Adamo suggests that people with different blood types react differently to different types of food and their lectins. As a result, he recommends specific diets for people with these different blood types”. (Medical News Today.com) For instance, it is recommend that blood type O people stay away from most grains (gluten) but may partake in red meat while red meat is not beneficial for an A blood type.

Although medial evidence may be lacking to back this diet up, we have seen this plan benefit our own family so we have to say there is some merit to it.

And lastly, this is not for the weak of heart. If you are healthy and have a strong constitution but feel like a cleanse is in order for your personal health, the Master Cleanse may be right for you. It is a 10 day challenge where you consume nothing but lemonades made with Cayenne pepper. Oh…drinking salt water every other night is also included. My fastest personal healing came with this method but I would only recommend it for a few.

And, please check with your doctor first.

So, whether you are ready to lose a few pounds or just trying to recover from the holidays, one of these options may be the fit you are looking for!

I have always liked Thanksgiving.

I know its origins are a little dubious. I cringe a little when I think about the construction paper Indian costumes and the happy story I learned as a child about that first Thanksgiving. I cringe a little more when I read about people missing their holiday meal so they can work at retail jobs where people will wait for hours at the store’s entrance to buy things. I don’t understand this, I have to confess. I have never been in such a hurry to buy anything in my life.

But even if the mythology of Thanksgiving is a little suspect and the current traditions can be a little crass, I like Thanksgiving because I cannot dislike a day dedicated to feeling grateful.

My first Thanksgivings were spent at the farmhouse where my mother grew up. If I had to put my finger on the moment that made it Thanksgiving, I would say it was at that moment after all the food had been piled onto the big dining room table, and grandma (for just a moment) had her apron off, and the cousins (for just a moment) had been herded together into some sort of group, and everyone (for the one and only time all day) had fallen more or less quiet. Then we would sing the blessing. My mother’s family had a lot of good singers in it, sisters who played the piano and sang harmony in church. And so someone, an aunt I am sure, would begin: Be present at our table Lord, We didn’t ask for help, or intercession, or forgiveness. We just asked the God we believed in to be there with us.

Be here and everywhere adored.

But not just with us; we asked

for God’s presence to be everywhere it was welcomed.

These mercies bless and grant that we...

We asked for all this abundance to be blessed—all that was on our table, in our hearts, and standing there beside us, singing in the farmhouse. Then, in my family, we concluded: May strengthened for Thy service be.

I have since learned there are many ways to finish this prayer.

The more common ending is: “May live in fellowship with Thee.”

Some families sing, “May feast in Paradise with Thee.” But my mother’s family was a farming family and we asked for strength to keep on working. Feasting in Paradise might have been fine for some families, but that was a little more than any of us could imagine. Asking for strength so we could keep on doing what we had been doing seemed like a pretty safe bet and, perhaps, not too much to ask.

Then we sang, “Amen,” and we ate. There were many more people than chairs so the cousins sat on the stairway and the aunts squeezed side by side on the couch and some uncles ate standing up—despite my grandmother’s repeated warnings that this would lead to fat feet.

And the table would be filled with enough pies to nearly cover its surface, served with whipped cream and weak coffee. And a cold wind would rattle the last stubborn leaves hanging on the trees, reminding us that colder days were ahead.

And so, even though I am many miles away from my family and years away from that farmhouse, I am going to sing today.

Be present at our table Lord, Be here and everywhere adored.

These mercies bless and grant that we May strengthened for Thy service be.

Because it’s a simple request, and a good one.

Dear Aunt Gabby, I just returned to work after being out sick for a week with pneumonia. I work with 5 other women and an older guy. The boss is an older woman, getting ready to retire. We get along great at work, but don’t hang out after work.

My feelings are really hurt!

When I showed up this morning, no one said, “Welcome back.” Or “How are you feeling?” or anything.

They just handed me a stack of paper and waved as they walked away.

Is it OK if I send myself flowers and a card, just to remind them how people ought to be treated? Am I overreacting or being childish?

Call me Sick of Being Ignored.

Dear Sick, I am glad you are feeling better.

I think your co-workers were being unkind, but maybe they are sending you a loud message. Seems you learned something valuable, even though you probably didn’t want to learn it. Here is the lesson: It is a very good idea to get along with people at work. It is foolhardy to imagine they want to be your best friends.

I refer to this as being “Queen of the Rodeo.” Some people can be “Queen” at work, and everyone seems to love them. They hang out after work with their work mates, and it doesn’t cause them trouble.

Some people can’t or don’t want to do it. At my last job, the fun revolved around drinking excessively together. Not interested.

Apparently, you thought they were your best buds and they are not. They like you at work. They want you to be good at work. They are not happy when they have to

share your work when you are out sick. You may think the same way about them.

My best advice is to make friends with someone outside work.

I recommend taking a class, volunteering for a cause you care about, or meeting people at church or other place of worship. And corny as it sounds, it is still true that the best way to have a friend is to be one.

By the way, get flowers for your desk, and feel better.

Aunt Gabby Dear Aunt Gabby, I live in a fairly conservative little town. My new neighbors just put up a Confederate Flag on their flagpole in front of their house. I am so upset! I am so embarrassed.

I don’t know what to do! How do I get them to take down that awful thing?

Call me Not a Racist Dear Not, I have lived in the Deep South, Louisiana, Mississippi, and Florida. There are Confederate Flags everywhere. Some of the people are racists, some are not. Some call waving the Confederate Flag history and revering their relatives who died, some call it living in the past and revering traitors to the USA. The funny thing about the First Amendment, is that it protects “speech,” which includes showing flags, bumper stickers, and even writing and saying foul things to other people. It protects speech you and I agree with and speech we do not agree with. Some constitutional scholars argue it even protects “hate speech” and vulgarity.

So, about your neighbor. I personally would be glad he put that flag up, not because I agree with him, but so I have some idea what he believes in and how he treats others.

I would also try really hard to treat him well, to remain open-minded about his reasons, until he proved himself otherwise.

Faith and Family How to have a grateful heart all year-round!

Gratitude is largely a matter of perspective. If you look primarily at the blessings you have and if you recognize that you have so much more than most of the world’s population, you are likely to have a grateful heart, even though you may have few material possessions. On the other hand, if you spend the majority of your time comparing what you have with those who have more than you do, gratitude will escape you. You will instead find your heart filled with discontentment and envy.

The mistake we often make is that we compare our lives to those who have more. As a result, we find ourselves getting disgruntled. We think, “I don’t have a swimming pool like my neighbor,” or “I don’t have a car like that.” What happens when we think this way? We lose our joy, we get jealous, and we become bitter.

What if, instead, we looked at how blessed we are compared to so many that live with next to nothing all around the world? Studies indicate that 70-80% of the world’s population lives on less than $10 a day.

While I may get a little irritated if I have to wait a half an hour in a doctor’s office, most of the world has no access to quality medical care. I may become annoyed because my

favorite cereal is out of stock at the local grocery store, yet so many in our world wake up with nothing to eat for breakfast.

A missionary named Charles Hawkins told a story that brought this truth home for me. Hawkins was in Africa and the huts where he stayed were quite simple, of course, made out of bamboo wood and thatch. Hawkins noticed that the grass was cleared away around the outside of the huts for several feet, exposing the bare ground. He asked why this was so and he discovered that there was a very good reason for it – each night, the dirt just outside the hut was swept clean and smooth. Then, when daylight came, the dirt was inspected to see if any snakes had crawled into the hut during the night!

You know, as I have awakened in the morning over the years, I’ve occasionally had worries like, “I hope my car is going to start today,” or (when I lived up north) “Am I going to have to shovel the snow in the driveway?” But never in my life have I awakened, worried that a snake may have crawled into my house during the night!

Even if you are not well-off, could it be that, materially, you are better off than at least 70-80% of the world’s population? We have so much to be thankful for…and the interesting thing is that I haven’t yet touched upon the greatest blessing of all. The greatest reason to be thankful is Jesus. If you know Jesus as your Savior, you are spiritually rich beyond compare! And if you haven’t received Jesus as your Savior, He is waiting for you to open up your heart to Him. When you do, you will possess the greatest treasure in all the world!

Potato Latkes Aren’t Just for Hanukkah “When the calendar turns to December, we’re a blended family as far as holiday traditions go,” said professional caterer and mom Carole Blumenberg Garrigos. Her husband was born in Seville, Spain, of Catholic heritage, and she was raised in the Jewish faith in St. Louis Park, Minnesota. Their teenage daughter Carmen practices Judaism, but appreciates both family religious traditions, including the approaching celebrations of Hanukkah and Christmas.

On a visit to their home, I asked Carmen what the eight days of Hanukkah, beginning Dec. 2, mean to her.

“The most memorable night is when my extended family gathers at our home at sunset, and we light candles on the menorah, sing a blessing, and eat a meal with tender, juicy brisket, a green salad, Jell-O and -- fresh out of sizzling pans on the stove -- potato latkes!” she said.

So we grated, stirred and fried up a big and beautiful batch of 12 golden latkes (potato pancakes) together. Topped with dollops of applesauce and sour cream (if you opt for ketchup on top, that’s OK too, according to Carole), I was convinced that latkes are delicious not only during Hanukkah, but anytime of the year.

FAMILY-STYLE POTATO LATKES 4 large potatoes (Carole prefers Yukon gold, scrubbed and unpeeled) 1/2 onion 2 eggs, lightly beaten 1/4 cup flour 1 teaspoon salt Freshly ground pepper to taste 1/2 teaspoon baking powder Vegetable oil for frying

Sour cream for topping Applesauce for topping 1. Cut potatoes and peeled onion in chunks and coarsely shred in a food processor, or use a box grater. Place in a mixing bowl.

2. Add eggs, flour, salt and pepper, and baking powder. Toss to combine.

3. Heat 1/4 inch oil in a heavy frying pan over medium high heat.

Drop mixture in heaping spoonfuls into the hot oil. Cook for about 3-4 minutes. Turn with a spatula and cook to light brown and crisp on both sides.

4. Serve immediately with toppings of sour cream and/or applesauce. Serves 4-6.

EXTRA IDEA: For a twist, heat up your waffle iron, oil lightly, and cook the potato mixture by the spoonful until crisp. Enjoy as a brunch item topped with a poached egg, smoked salmon and chopped chives as a garnish, if you wish.

The right way to store leftovers • Store leftovers in serving-size containers for food safety and cooking ease. Dig into the containers to make sandwiches, turkey and mashed-potato burritos and turkey stir-fry!

Build your own rocket using paper and fizzing tablets! Watch it lift off. How high does your rocket go?

Suggestion: Find a grown-up to do this activity with you.

Materials: Paper, regular 8-1/2- by 11-inch paper, such as computer printer paper or even notebook paper.

Plastic 35-mm film canister (see hints below) Cellophane tape Scissors Effervescing (fizzing) antacid tablet (the kind used to settle an up-

set stomach) Paper towels Water Eye protection (like eyeglasses, sunglasses, or safety glasses)

Hints: The film canister MUST be one with a cap that fits INSIDE the rim instead of over the outside of the rim. Sometimes photography shops have extras of these and will be happy to donate some for such a worthy cause.

Keep in mind: Just like with real rockets, the less your rocket weighs and the less air resistance (drag) it has, the higher it will go.

Making the Rocket You must first decide how to cut your paper. You may cut it the short way or the long way to make the body of the rocket. There is no one right way to make a paper rocket.

Try a long, skinny rocket or a short, fat rocket. Try a sharp nose cone or a blunt nose cone. Try it with fins or without fins. Experiment!

Here’s just one idea for how you might cut your whole rocket from one piece of paper:

Here are the basic steps: Young rocket engineer Cut out all the pieces for your rocket.

Wrap and tape a tube of paper around the film canister. Hint: Tape the canister to the end of the paper before you start wrapping.

Important! Place the lid end of the canister down.

Tape fins to your rocket body, if you want.

Roll the circle (with a wedge cut out) into a cone and tape it to the rocket’s top.

Blasting Off Put on your eye protection.

Turn the rocket upside down and remove the canister’s lid.

Fill the canister one-third full of water.

Now work quickly on the next steps!

Drop one-half of an effervescing antacid tablet into the canister.

Snap the lid on tight.

Stand your rocket on a launch

platform, such as your sidewalk or driveway.

Stand back and wait. Your rocket will blast off!

How does the pop-rocket work?

When the fizzy tablet is placed in water, many little bubbles of gas escape. The bubbles go up, instead of down, because they weigh less than water. When the bubbles get to the surface of the water, they break open. All that gas that has escaped from the bubbles pushes on the sides of the canister.

Now when you blow up a balloon, the air makes the balloon stretch bigger and bigger. But the little film canister doesn’t stretch and all this gas has to go somewhere!

Eventually, something has to give! So the canister pops its top (which is really its bottom, since it’s upside down). All the water and gas rush down and out, pushing the canister up and up, along with the rocket attached to it.

We call this wonderful and useful fact the law of action and reaction.

The action is the gas rushing out of the rocket. The reaction is the rocket taking off in the other direction.

In other words, for every action, there is an equal and opposite reaction. The rocket goes in the opposite direction from the gas, and the faster the gas leaves the rocket, the faster the rocket gets pushed the other way.

S.T.E.M. This month’s STEM is all about Dark Matter and Dark Energy

In the early 1990s, one thing was fairly certain about the expansion of the universe. It might have enough energy density to stop its expansion and re-collapse, it might have so little energy density that it would never stop expanding, but gravity was certain to slow the expansion as time went on. Granted, the slowing had not been observed, but, theoretically, the universe had to slow.

The universe is full of matter and the attractive force of gravity pulls all matter together. Then came 1998 and the Hubble Space Telescope (HST) observations of very distant supernovae that showed that, a long time ago, the universe was actually expanding more slowly than it is today. So the expansion of the universe has not been slowing due to gravity, as everyone thought, it has been accelerating. No one expected this, no one knew how to explain it.

But something was causing it.

Eventually theorists came up with three sorts of explanations.

Maybe it was a result of a long-discarded version of Einstein’s theory of gravity, one that contained what was called a “cosmological constant.” Maybe there was some strange kind of energy-fluid that filled space. Maybe there is something wrong with Einstein’s theory of gravity and a new theory could include some kind of field that creates this cosmic acceleration. Theorists still don’t know what the correct explanation is, but they have given the solution a name. It is called dark energy.

What Is Dark Energy?

More is unknown than is known. We know how much dark energy there is because we know how it affects the universe’s expansion. Other than that, it is a complete mystery. But it is an important mystery. It turns out that roughly 68% of the universe is dark energy.

Dark matter makes up about 27%.

The rest - everything on Earth, everything ever observed with all of our instruments, all normal matter - adds up to less than 5% of the universe. Come to think of it, maybe it shouldn’t be called “normal” matter

at all, since it is such a small fraction of the universe.

What Is Dark Matter?

By fitting a theoretical model of the composition of the universe to the combined set of cosmological observations, scientists have come up with the composition that we described above, ~68% dark energy, ~27% dark matter, ~5% normal matter. What is dark matter?

We are much more certain what dark matter is not than we are what it is. First, it is dark, meaning that it is not in the form of stars and planets that we see. Observations show that there is far too little visible matter in the universe to make up the 27% required by the observations.

Second, it is not in the form of dark clouds of normal matter, matter made up of particles called baryons.

We know this because we would be able to detect baryonic clouds by their absorption of radiation passing through them. Third, dark matter is not antimatter, because we do not see the unique gamma rays that are produced when antimatter annihilates with matter. Finally, we can rule out large galaxy-sized black holes on the basis of how many gravitational lenses we see. High concentrations of matter bend light passing near them from objects further away, but we do not see enough lensing events to suggest that such objects to make up the required 25% dark matter contribution.

However, at this point, there are still a few dark matter possibilities that are viable. Baryonic matter could still make up the dark matter if it were all tied up in brown dwarfs or in small, dense chunks of heavy elements. These possibilities are known as massive compact halo objects, or “MACHOs”. But the most common view is that dark matter is not baryonic at all, but that it is made up of other, more exotic particles like axions or WIMPS (Weakly Interacting Massive Particles).

One explanation for dark energy is that it is a property of space. Albert Einstein was the first person to realize that empty space is not nothing. Space has amazing properties, many of which are just beginning to be understood. The first property that Einstein discovered is that it is possible for more space to come into existence. Then one version of Einstein’s gravity theory, the version that contains a cosmological constant, makes a second prediction: “empty space” can possess its

own energy. Because this energy is a property of space itself, it would not be diluted as space expands. As more space comes into existence, more of this energy-of-space would appear. As a result, this form of energy would cause the universe to expand faster and faster. Unfortunately, no one understands why the cosmological constant should even be there, much less why it would have exactly the right value to cause the observed acceleration of the universe.

Astronomers using data from NASA’s Hubble Telescope have observed what appears to be a clump of dark matter left behind from a wreck between massive clusters of galaxies.

The result could challenge current theories about dark matter that predict galaxies should be anchored to the invisible substance even during the shock of a collision.

Abell 520 is a gigantic merger of galaxy clusters located 2.4 billion lightyears away. Dark matter is not visible, although its presence and distribution is found indirectly through its effects.

Dark matter can act like a magnifying glass, bending and distorting light from galaxies and clusters behind it.

Astronomers can use this effect, called gravitational lensing, to infer the presence of dark matter in massive galaxy clusters.

This technique revealed the dark matter in Abell 520 had collected into a “dark core,” containing far fewer galaxies than would be expected if the dark matter and galaxies were anchored together. Most of the galaxies apparently have sailed far away from the collision.

“This result is a puzzle,” said astronomer James Jee of the University of California in Davis, lead author of paper about the results available online in The Astrophysical Journal. “Dark matter is not behaving as predicted, and it’s not obviously clear what is going on. It is difficult to explain this Hubble observation with the current theories of galaxy formation and dark matter.”

Initial detections of dark matter in the cluster, made in 2007, were so unusual that astronomers shrugged them off as unreal, because of poor data. New results from NASA’s Hubble Space Telescope confirm that dark matter and galaxies separated in Abell 520.

One way to study the overall properties of dark matter is by analyzing collisions between galaxy clusters, the largest structures in the universe. When galaxy clusters crash, astronomers expect galaxies to tag along with the dark matter, like a dog on a leash. Clouds of hot, X-ray emitting intergalactic gas, however, plow into one another, slow down, and lag behind the impact.

That theory was supported by visible-light and X-ray observations of a colossal collision between two galaxy clusters called the Bullet Cluster. The galactic grouping has become an example of how dark matter should behave.

Studies of Abell 520 showed that dark matter’s behavior may not be so simple. Using the original observations, astronomers found the system’s core was rich in dark matter and hot gas, but contained no luminous galaxies, which normally would be seen in the same location as the dark matter.

NASA’s Chandra X-ray Observatory was used to detect the hot gas. Astronomers used the Canada-France-Hawaii Telescope and Subaru Telescope atop

Mauna Kea to infer the location of dark matter by measuring the gravitationally lensed light from more distant background galaxies.

The astronomers then turned to the Hubble’s Wide Field Planetary Camera 2, which can detect subtle distortions in the images of background galaxies and use this information to map dark matter. To astronomers’ surprise, the Hubble observations helped confirm the 2007 findings.

“We know of maybe six examples of high-speed galaxy cluster collisions where the dark matter has been mapped,” Jee said. “But the Bullet Cluster and Abell 520 are the two that show the clearest evidence of recent mergers, and they are inconsistent with each other. No single theory explains the different behavior of dark matter in those two collisions. We need more examples.”

The team proposed numerous explanations for the findings, but each is unsettling for astronomers. In one scenario, which would have staggering implications, some dark matter may be what astronomers call “sticky.”

Like two snowballs smashing together, normal matter slams together during a collision and slows down. However, dark matter blobs are thought to pass through each other during an encounter without slowing down. This scenario proposes that some dark matter interacts with itself and stays behind during an encounter.

Another possible explanation for the discrepancy is that Abell 520 has resulted from a more complicated interaction than the Bullet Cluster encounter. Abell 520 may have formed from a collision between three galaxy clusters, instead of just two colliding systems in the case of the Bullet Cluster.

A third possibility is that the core contained many galaxies, but they were too dim to be seen, even by Hubble. Those galaxies would have to have formed dramatically fewer stars than other normal galaxies. Armed with the Hubble data, the group will try to create a computer simulation to reconstruct the collision and see if it yields some answers to dark matter’s weird behavior.

The Hubble Space Telescope is a project of international cooperation between NASA and the European Space Agency. NASA’s Goddard Space Flight Center in Greenbelt, Md., manages the telescope. The Space Telescope Science Institute (STScI) in Baltimore, Md., conducts Hubble science operations. STScI is operated by the Association of Universities for Research in Astronomy, Inc., in Washington, D.C.
