ello friends! Welcome to our April edition. This month, we focus on you: what you want, need, and how to get it. Whether it is moments of blissful relaxation, summertime aesthetics, the perfect lunch date digs, or an excuse to wear your dancing shoes, we’ve got you!

Not that anyone ever needs an excuse to dance… the benefits are endless: a great workout, a release of endorphins, and an overall good time. As a trained ballerina, I’ve experienced the joy dance brings to life. A local studio, Apollo’s Ballroom, is sharing that joy with the East Valley. Their fitness-minded ballroom studio will not only tone your body, but also give you the opportunity to get lost in an art that is quite meditative. I encourage you to grab your friends, or your partner, and express yourself on the dance floor – you won’t be sorry!

Now that we’re on the topic of meditative states, lets talk massage. My monthly massage is something I really look forward to. On the day of I am in a blissful state, daydreaming of the soft music, calming smells and amazing rubdown I will be receiving. Nothing beats it. Jordan Wessel wasn’t a pageant baby; she wasn’t even a pageant teen. Her crowning as Miss Arizona was a stunner for her—at age 20, it was the first pageant she’d ever entered. The Monument, CO native was raised in a household where she wasn’t allowed to watch pageants on television. “My mom sheltered me from that,” says Wessel. “She didn’t want me growing up thinking that beauty was just some external thing.”

So, Wessel, who has a 17-year-old sister and 29-year-old brother, grew up with not a notion in her head about ever competing in a pageant— let alone the Miss Arizona Pageant. How did she get from there to here? It was a long and painful journey. Although Wessel was a competitive dancer from ages six to 16, she says her family was never really that “into” fitness or nutrition. It didn’t become a topic of chief concern for her until she became very ill her senior year of high school. One morning she woke up and it was as though she was a completely different person. “I had a searing headache, severe stomach pains--I couldn’t function,” she remembers. As Wessel tells the story you can see the wonder in her eyes—almost like she can’t believe she’s really here. A myriad of doctors failed to diagnose her. “It was a nightmare, and I finally kind of let it sit just hoping it would go away.” That’s when she began Googling. “I just started Googling night and day and I didn’t stop. I took myself off of gluten and dairy and began to feel a little bit better.”

She felt well enough to finish out her high school year in Colorado and move to Tempe to start school at ASU, but she still wasn’t herself. She says it was a struggle just to get out of bed in the morning. And then there was the dorm food… “They would say something was gluten-free or dairy-free, but it wasn’t. I had to be really careful. I lived off of Chex cereal and dry salad for two months,” she says. Wessel’s parents followed her to Phoenix and eventually took her to the Mayo Clinic, where she was diagnosed with three different stomach ailments. “They just threw a bunch of pills at me and said, ‘This is what your life is going to be like—deal with it.’” But she kept up her rabid Googling, began working part-time at a health food store, and eventually met a man there who had battled cancer and lived with Crohn’s Disease. “And you would never know it,” she says. They trained together and worked further on her diet. It was a major mental change for her. “I was like, I’ll show you,” she says. “I am not going to live on pills for the rest of my life.

I am not going to feel this way.” And that’s when she set a goal to compete in a fitness competition and become a model. It wasn’t long after that when a sorority sister suggested she enter the Miss Arizona Pageant. By now, her headaches were gone and her stomach was better. “I felt like I could take on the world,” she shares. Wessel always had the support of her close-knit family. “My sister and mom are my best friends in the world.” And Wessel says the hard training she put in really showed her what she was made of. “I became very focused—I love to be pushed outside of my comfort zone now. I was told ‘no’ for so long when I was sick, that now, it’s like, I’m going to do whatever I want.” Hence, the pageant. “I thought, what do I have to lose? I looked at it as an opportunity to grow, and I gained a lot more out of it than I ever expected. For one, I learned there is no stereotypical pageant girl.” “But I am thankful for my mom for sort of sheltering me and showing me that beauty comes from the inside,” she continues. “I never had to obsess about how I looked on the outside because of how I was raised. And as far as the pageant was concerned, I thought, they’re either going to love me or they’re not. It’s that simple.” She concludes, “It’s easy to get caught up on being outwardly beautiful once you are in the pageant system. If you don’t have thick skin and a good head on your shoulders, society and criticism will eat you alive.”

The international autism community is the focus of a unique event taking place on April 2nd. “Light It Up Blue” is a global initiative that ushers in April, which is Autism Awareness Month. In honor of the special day, hotels, sports venues, museums, bridges, concert halls, landmarks, retail stores and countless homes and communities “Light It Up Blue”, and the event helps to “shine a light” on the health issue that affects so many around the world. Some of the buildings that are “going blue” include the Sydney Opera House in Australia, The Torch in Qatar, St. Sava Temple in Serbia, The Empire State Building in New York, Ada Bridge in Serbia, and Burj Al Arab in Dubai. World Autism Awareness Day (WAAD) is celebrated each April 2nd, was adopted by the United Nations in 2007, and is only one of three health issues to be recognized by the United Nations with its own special day. Autism is a global health challenge and WAAD activities work to increase and develop worldwide knowledge about the crisis. Some of the corporate partners for the event include everyone from Toys-R-Us and Build-A-Bear Workshop to Home Depot and MTV. Autism Speaks is the world’s leading autism science and advocacy organization. Next, in a medium pot with a double boiler melt 1/3 cup of beeswax; add ¼ cup coconut oil and one teaspoon of honey. Pour the heated mixture into containers of your choice, and let stand for 15 minutes. AVOCADO FACE MASK

For this mask, you’ll need an avocado half, two tablespoons of hot water and one teaspoon of honey. Once you’ve gathered your goodies, mash the avocado with a fork or in a mixer. Dissolve the honey into the water and add it to the fruit. Apply to your face with your fingers and leave on for ten minutes.

Eat this. Don’t eat that. That’s good for you. You shouldn’t have that. You need to avoid gluten. Don’t eat too many carbs at night. Monitor your sugar intake. Keep your dressing on the side. Drink water. No more ice cream.… Any of these sound

familiar to you?

Chances are you’ve heard one of them, are trying one of them, or have completely mastered one of them. And there is also a high likelihood that all of the different nutrition tips and suggestions you hear on a daily basis from television, magazines, your trainer, and/or coworkers all lead to one thing—confusion! Without being too technical, there is some very simple advice to help guide you dayby-day, meal-by-meal, food choice by food choice. Make the next great decision. That’s right, make the next great decision. Don’t fret or spend time worrying if you ate something you know you shouldn’t have. Acknowledge it. Learn from it (how does it make you feel? Does it correlate with your current fitness goals?). And move forward with the mentality that the next food decision you make, you will make a great one. This mindset really simplifies your approach to nutrition and your approach toward living a healthier lifestyle. Now, with that being said, it is highly important to increase your educational awareness regarding food choices and even more important to trust the sources from which you are receiving your information. Don’t rely 24

on gimmicks or quick fixes. There is no such thing as overnight success when it comes to weight loss or body fat transformation. If it took several years or months to stack on unwanted pounds or excess body fat, then be aware and acknowledge it is going to take some time to shed those same pounds. But again, in this circumstance, I encourage you to take it one day a time. Focus on making the next great decision regarding your fitness goals. Start first with your healthy breakfast. Eat it. Enjoy it. And then think about your choice for a healthy snack or lunch. Taking each meal one at a time will help keep you focused on a day full of healthy choices. Day by day, mini successes add up to a healthy lifestyle change. Set your long-term goal, but more importantly, focus on achieving each of your short-term goals. These mini-steps and accomplishments add up quickly, and before you know it, your body and mind will be transformed. So, no matter what your goal is, stay focused on the next GREAT decision that will take you closer to your goal. Some days you might move inches and some days you might make leaps and bounds, but as long as you are pointed in the direction you want to go, you will continue to make progress, and you will continue to battle through the confusion.

DANCE LIKE THE GODS APOLLO’S BALLROOM BY LINDSEY RODRIAN

Apollo’s Ballroom began as a fitness center offering services like personal training, boxing and MMA. In 2013, a family friend possessing years of ballroom experience approached owners Dr. and Mrs. Jean LeTarte. Jean had a passion for arts of any kind and went with the concept, to which she explains, “There is nothing more beautiful than the combination of a healthy and fit body as it is in motion on the ballroom floor.” Harrison Powers, Managing Consultant, explains, “Now Apollo’s Ballroom will not only offer ‘partnership’ dance lessons but has the facilities in place for those seeking a more athletic approach than the typical ballroom studio. We offer certified professional trainers on both sides of the business.” Apollo’s Ballroom trainers bring Jean’s concept of a ‘fitness minded ballroom studio” to life. The owners and managers excitedly showcase the expertise and character of each member of the studio. Matt Maguire is not only an amazing personal trainer, but also an avid ballroom instructor and dancer. Summer is on its way. It’s hot, you’re sweaty and you are daydreaming of lounging by the pool with your husband. You oil his once bear-like back with ease, and without an ounce of hesitation, you fearlessly remove your cover-up, baring silky smooth legs and a bikini line to match.

The number of treatments varies based on the treatment area. Berkbigler notes it usually takes six to eight treatments for areas above the waist and eight to ten treatments for below the waist. These treatments are spread between four to six weeks, dependent upon your personal hair cycle and other considerations.

Some may think this vision can only be obtained in an alternate universe, but Kimberlee Berkbigler, owner and operator of The K Lounge, promises otherwise. Berkbigler’s extensive medical background proved the perfect foundation as she pursued her training in lasers, microneedling and chemical peels before opening her Gilbert location in June 2013.

While receiving treatments, it is important that you do not wax, pluck or apply chemical depilatories to the treated areas. “But you can shave!” she adds. During treatment, you should protect the area with an SPF of at least 30, and keep it covered when exposed to natural sun or tanning booths. Sun protection should continue for one to two months following the treatment. Berkbigler also asks her clients to avoid steamy showers and workouts for 48 hours following a laser hair treatment.

Sushi culture dates back to fourth century BC, originating in Southeast Asia. It was discovered that the salted fish placed in cooked rice results in the first steps of a fermentation process. Centuries later, the Japanese served the first complete sushi dish, calling it Nare-zushi or “aged sushi.” The popularity of this dish skyrocketed as Buddhism swept the world, gaining popularity because of the religion’s vegetarian restrictions. Sushi evolved over centuries and decades, as creators presented the favorites of today like Raw-nare zushi, Nigiri and specialty rolls. Today, this aspect of Japanese culture is among American favorites. Los Angeles was the first city in America to embrace the Sushi. By the 1970’s everyone was buzzing about this delicious food….the chop sticks, the Saki, the uniqueness of Sashimi and the feeling one gets when finding themselves pushing personal taste limits. We all know how it goes… you start off with the classic California Roll, and you’re hooked. You get a little more adventurous next time, (only because you’re friends squawk, “California Roll?! Does that even count as sushi?”) So, maybe next time the shrimp tempura or the tuna? You take baby steps until you’re munching on fish eggs and thick cuts of salmon sashimi while using your chopsticks like a pro. VALLEY LIFESTYLES MAGAZINE | APRIL 2014

FOUR COMMON STYLES OF SUSHI: First, Maki-style. This style of sushi is the actual roll. Maki calls all newbie sushi lovers to embrace the culture and expand their taste buds. The sushi ingredients are rolled into rice or seaweed paper and usually drizzled with a tasty sauce and cut into bit size pieces. Maki-style sushi leaves lots of room for creativity, resulting in custom-made, creative bites!

CHOPSTICKS: Chopsticks are an equally important part of sushi culture. Noticeably, chopsticks come in many different forms. The forms reflect the area from which they were born. In Japan, the chopstick was originally used only for religious ceremonies. Eventually, chopsticks made their way into common uses and evolved. A new member of the sushi world can feel a bit nervous with first use. No one wants to be handed to ‘kiddie version’ but don’t brush it off, they are a useful tool! Make sure to use the first chopstick with your middle finger and thumb. Now, onto the chopstick in control, this one is in control of all the movement: grip it with your index finger and thumb for ultimate control. Take a few minutes of practice opening and closing the stick and then go grab some sushi!

Second is Nigiri, this means means grasped or squeezed. So, this type of sushi includes molded rice with a perfectly fitted piece of fish. Nigiri is often held together with a piece of seaweed and is considered the “finger food� of sushi.

Next comes Sashimi, a true sushi-lovers delight. Sashimi is slices of sushi-grade fish, served alone or with a side of rice. Seafood lovers travel distances for quality sashimi, because there is nothing like it! The most common sashimi includes tuna and salmon.

Lastly, we have Chirashi. This style is like a fusion between sashimi and just plain sushi. You can recognize Chirashi by the thick slices of sushi-grade fish topping a bowl of vinegared sushi rice.

SAKE: What’s sushi culture without Sake? For starters, sake is a staple in Japanese culture. The alcoholic beverage, made from fermented rice was often offered to the Gods as a holy tribute in the dawn of Japanese civilization. The “rice wine” quickly made its way into outlets aside from religious ceremony, as noted through ancient text, telling of singing, dancing and sake. The production of sake is pretty interesting, and slightly complex. The rice used specifically for sake is called shuzo kotekimai, the grain is larger and stronger than rice typically eaten by the Japanese. Water plays a huge part in sake production, from the washing of the rice to the dilution of the final product. The Japenese were so set on perfecting their sacred drink, that they opened a sake-brewing research institute in the 20th century. 42

In our eyes, no other U.S city delivers such a dramatic seaside setting reminding us so much of the European Riviera and especially Spain’s Mediterranean coast. The spectacular mountain and ocean landscapes are awe inspiring, and the ever-present Spanish influences provide visitors a setting unparalleled in this country. This is one of those rare cities where most folks who live there are ecstatic to call it home, and many of us who visit wish we could move there. City envy prevails! So what else is there about Santa Barbara that has turned us and other vacationers into lifelong devotees? Well, read on! WHAT TO DO: Any city with such a fantastic harbor, pristine beaches and extraordinary seashore lends itself to all the water sports and activities you might expect. Sailing, kayaking, surfing, ocean swims, standup paddle surfing, deep sea fishing and any type of boating await. HIGH TIDE BY KRISTIAN SEEMEYER

High Tide, a recently opened seafood restaurant in Gilbert, has a good shot at being one of the East Valley’s hottest restaurants. Great seafood is hard to come by, but have a sit-down with High Tide’s Executive Chef Eric Emlet, and you’ll be convinced why the quality of the seafood and the methodology behind the cooking makes his restaurant the best around. The fish, for example, is flown in daily from the finest purveyor on the West Coast—Santa Monica Seafood. “They go above and beyond even the highest standards,” says Chef Emlet. Some of the items on the menu are considered boutique. The salmon is sushi-grade and comes from a tiny purveyor called Skuna Bay off the west coast of Vancouver Island. “It’s this tiny place where the fishermen live right on the shoreline. It’s their craft,” he notes.

Swimming in glacier-fed waters, these fish live in pens that are 98.5 percent water and only 1.5 percent fish, so the salmon have plenty of room to swim around and build up healthy muscle. All this makes for a mild, buttery, fresh and tender fish. And the salmon reaches Chef Emlet within 48 hours of being harvested. It’s an exclusive piece of fish. Then there are the boutique oysters. Chef Emlet’s eyes twinkle a little when he talks about the oysters. “You’ve got your Blue Points and other oysters you can find just about anywhere, but I like to feature the oysters with nuanced flavor,” he explains. The Grassy Bar oyster is one such specimen. They are raised carefully by a family-run operation out of Morro Bay, Calif. They are rich, very plump and briny. Then there is the Hama Hama of Hood Canal, Wash. These are thick-shelled, beach grown, slow-growing oysters with a mild, fruity aftertaste and great salinity. These delights and other menu items are steam pot cooked. It’s a high pressure

method where the food item is cooked by the steam, but doesn’t actually come in contact with it. The cooking process takes three to four minutes and seals in flavor. And each entrée is cooked in a separate pot. Other menu items include cioppino, mussels, king crab, cod, shrimp and calamari to name a few. Chef Emlet is enthusiastic about all facets of the operation. The restaurant has an open quality and the steam pots sit behind a U-shaped bar, so if you wish, you can enjoy a cocktail and watch your gorgeous seafood being prepared. High Tide has a full bar with a premium well, a varied wine list and eight craft beers on tap. Not only is Chef Emlet passionate about the quality of his product, he comes to High Tide with a strong resume. He did a seven-year stint as Executive Chef at Superstition Mountain Golf and Country Club, and that’s where he met High Tide owner, Chris Glass. Both a saltwater and freshwater fisherman since his youth, Chef Emlet was drawn from the shores of Lake Michigan to the Pacific Coast to pursue his dream of being a chef. His skills were honed over eight years as manager and executive chef at two restaurants in San

Diego’s Mission Beach neighborhood. He furthered his expertise at Scottsdale’s Culinary Institute Le Cordon Bleu, graduating with Alpha Beta Kappa honors. He sees High Tide as an opportunity to bring diners the essence of seafood with a twist. Though the quality ingredients stand on their own, crowd pleasers like “The King”--king crab legs, scallops, salmon, citrus scented mushrooms and roasted tomato served in a light saffron cream sauce, and “Tide Roast”--brandy, lobster, citrus broth simmered with tomato cream and choice of seafood have already created a buzz. He shares, “One diner came up to Chris the other day and actually gave him a hug and said, ‘Thank you for opening a restaurant like this; we’re so lucky to have you.’” Indeed.    Nothing says spring like fresh, ripe strawberries. Although the fruit is available year- round, the most popular berry in the world hits its peak between April and July. The heart-shaped fruit, hailing from Rome, boasts many nutritional benefits like healthy-heart and blood pressure support. Packed full of vitamins, fiber and healthy cholesterol, the little berry is a powerful source of antioxidants and a healthy fix for anyone with a 64

sweet tooth. Strawberries are extremely perishable, so examine the fruit for a firm and plump texture with shiny, deep red color and attached cap. This berry does not continue to ripen after picked, so avoid any with white-green color spots. When considering shelf life, studies show that strawberries begin to lose nutrients like vitamin C and polyphenol antioxidants after two days of storage. Keeping the fruit in a cold, humid spot

will aid in the prevention of nutrition loss. Luckily, California strawberries are grown year-round and can easily be found fresh at local grocery stores. The fragrantly sweet and vibrant strawberry can add color and taste to any meal. Include the raw berry in a salad for a sweet taste and luscious red aesthetics. Or, include in a desert for a yummy digestive aid full of enzymes.


Grilled Chicken & Strawberry Wrap INGREDIENTS

2 whole Boneless, Skinless Chicken Breasts 1/2 cup Bottled Balsamic Vinaigrette 1 whole Package (12 Ounces) Mixed Salad Greens 12 whole Medium Strawberries, Hulled And Quartered 4 whole Green Onions Sliced (white And Light Green Parts) 1/4 cup Pecans, Chopped 4 ounces, weight Goat Cheese Crumbled 6 whole Large Whole Wheat Tortillas

DIRECTIONS

1. Place the chicken breasts in a large plastic storage bag. Seal the bag, leaving a small opening, then use a rolling pin to pound the breasts until they’re a uniform thickness. Pour in half the balsamic vinaigrette, then seal the bag and marinate in the fridge for 1 hour. 2. After the chicken has marinated, grill it until it’s done in the middle, about 5 minutes per side. Remove from the heat and set aside to cool slightly. Dice up the chicken when it’s cool enough to handle. 3. Add the salad greens to a large bowl. Add half of the remaining dressing and toss it to coat the greens. Add more if it needs it. Add the strawberries, chicken, green onions, and pecans. Toss it gently a few times until it’s all combined. Top with crumbled goat cheese and toss a couple of times. 4. Place an equal amount of salad down the middle of each tortilla. Roll up, then slice in half. 5. Serve wraps with chips and extra strawberries.

Pat’s Run is named for, and held in memory of, Pat Tillman. Pat attended Arizona State University and was a professional football player with the Arizona Cardinals. After 9/11, he decided to enlist in the army, foregoing his multi-year, multi-million dollar football contract to serve his country. On April 22, 2004, while serving in Afghanistan, he was killed in the line of duty. He was 27 years old. Pat’s Run is an annual running/walking event commemorating his ultimate sacrifice. RECYCLING: Doing My Part BY KELLY POLLARD

I’m going to attempt to write a column this month that doesn’t have the word ‘wine’ in it. I’m noticing this has become an alarming trend in previous columns for this magazine, and I don’t want readers to think that all I do is sit around in my pajamas chugging Sauvignon Blanc while watching Bachelor reruns. The problem is, my boss asked me to write about recycling. What’s the first thing to pop into my head like the thunking sound of a cork? When I think of recycling, the shaming sound of shattering bottles tumbling into the recycling truck on pickup day comes to mind.    The official definition of recycling is to treat or process used or waste material to make it suitable for reuse. I grew up in a generation feeling ashamed for wasting trees by using too much paper. As an aspiring writer back then, I wasted many trees. Now that my sons are in school, I’m hip to the concept of a school recycling program where tireless volunteers collect and sort used juice pouches and chip bags for cash, and cafeteria workers give almost daily lectures to the students on which bins they should throw their milk cartons and plastic sandwich bags into. They’re raising our future generation of recyclers who have learned to reprimand their parents for using plastic baggies to hold their sandwiches, rather than the more ecofriendly, reusable bags.    Don’t even get me started on plastic bag bans in grocery stores and how I’ve now mastered the art of forgetting my reusable bags in my garage. I’m not bagging on the recycling industry. I’m actually married into it. My husband has been a maintenance manager at a garbage company for years now. The monstrous machine that sorts the recycling of thousands of customers is a frequent caller on our Saturday nights when it inexplicably breaks down and he has to drop everything to get it running again. I know what my piles of recycling look like when I’ve entertained people over a long weekend. Imagine that multiplied by thousands of consumers.   I do know how to recycle clothing. A friend delivers clothes that her son has outgrown every few months, where I turn around and hand off the ones my sons have outgrown to another friend. I’ve shopped thrift stores since before Macklemore made them hip. I attend ‘naked lady’ parties where I can shop other gals’ clothing and offload outfits I’m just not into anymore. In case you were wondering, these parties involve wine. Speaking of wine and recycling: have you heard that some forward-thinking wineries and wine bars will offer repeat customers the option of refilling growlers with wine? Now I can stock up on vino and be kind to Mother Earth, while avoiding the clanging, crashing shame of a case of empty wine bottles dropping into the recycling truck every Tuesday morning.
