A land of gods, an invaluable gem in nature’s chain, unparalleled beauty, a unique fusion of human creativity that lovingly embraces and protects the natural landscape - a synchronised ritual of stories and experiences within a sanctuary, one that places humanity at its core and harmonises people with their very existence.
words by Aris Kavatzikis
Five HOTEL units, EACH of UNPARALLELED AESTHETICS, each WITH its distinct CHARACTER and ATMOSPHERE
With its long-standing heritage and green development philosophy, Sani Resort is a landmark on the global tourism map. From its inception, it has aimed to create stories and experiences that leave a lasting impression on visitors’ hearts and memories. But this is not the end— its journey of evolution, improvement, and sustainable growth continues. Like every precious gem with a unique story, this destination carries a rich heritage, brought to life by the brilliant minds that shaped it into what it is today.
Let’s begin with a small but intriguing trivia on etymology. ‘Sani’ - an ancient and historical name, shrouded in mystery. As a location, it was first mentioned in the texts of Herodotus - the first to map the area - and Strabo. The same phonetic structure is also found in other cultures and religions. In Sanskrit, the word signified the power of the god Kronos; in Islamic tradition, it referred to the creator of all, the maker of the universe, while for Brahmins it represented Saturday. However, the story of the land itself, upon which the living organism of Sani Resort thrives, is both compelling and remarkable. In the 1950s and 1960s, the Sani landscape was composed of a jungle of dense vegetation, marshlands, and sheepfolds. Access was difficult, if not impossible. The only way to reach it was on horseback, by tractor, or by boat. There were no roads, just kilometres of land, often muddy, especially in
& PROFOUND respect for NATURE , make it a BENCHMARK and CASE STUDY in TOURISM growth
winter. Even the bridge in nearby Potidea did not exist. Crossing into Kassandrathe renowned first peninsula of Halkidiki - was only possible via a makeshift raft (the so-called ‘sali’), tied with steel cables to support the weight of the vehicles. The very notion of developing the peninsula for tourism, with its Byzantine tower as a signature landmark, seemed like an unattainable dream.
In the 1960s, the only tourist destination at the tip of Kassandra was Paliouri, distinguished by “Xenia”, a hotel complex designed by the architect Aris Konstantinidis. It was there, during the summer of 1962, that Anastasios Andreadis and Leonidas Zisiadis - the two business partners who first envisioned the resort - arrived by boat from Potidea. Their vision, which once seemed like a gamble, has today blossomed into an exceptional tourism and development resource, a model of respect for the natural landscape and a human-centred approach as the focus of its operational philosophy. The land where the investment began belonged to the Stavronikita Monastery - an expanse of vast terrain, an endless sea, with the sunrise and sunset on the horizon. It was precisely here that the present-day oasis of Sani Resort was born.
The immense construction project began around 1964-1965, coinciding with public works for the road network in Kassandra. The first hotel, Sani Beach Club,
bore the signature of the esteemed architect Georgios Bogdanos, a pioneer of modernism. In the summer of 1970, the first British guests arrived, experiencing magical moments and getting “lost” in the cinematic setting of sand dunes, wild nature and an enchanting horizon. Construction of the Sani Beach Hotel began in 1973 and lasted a decade, interrupted by the turbulent years of political transition and the Cyprus tragedy. The heirs set new foundations for the original vision, with the ultimate aim of creating a unified resort with activities and facilities for visitors - a hotel complex akin to a small community, with entertainment venues and shopping areas. During the 1990s, two ambitious projects were initiated: the development of Porto Sani Village, the resort’s first fivestar hotel, and the creation of the shopping district surrounding the marina - a hub for social gatherings, entertainment and retail. In October 2002, work began on constructing a modern, fully-equipped marina with 210 berths, replacing the older facility. The unique Sani Resort community later welcomed two more hospitality gems: Asterias - whose first guests were the European leaders who attended the European People’s Party Summit - and Sani Dunes. As part of a holistic approach to relaxation and well-being, each unit features dedicated spa facilities, whose treatments, one-of-a-kind Anne Semonin Paris products and aesthetic philosophy
place them among the world’s leading wellness sanctuaries.
Five hotel units, each of unparalleled aesthetics, each with its distinct character and atmosphere. Over the years, each of the properties has evolved to create the exceptional resorts we know today, while Sani Marina has grown into a truly cosmopolitan destination — a postcard of Mediterranean beauty and refined luxury.
As well as a stunning retreat, Sani has woven its indelible cultural mark with Sani Festival. Against the backdrop of the medieval tower, this natural amphitheatre overlooking the sea, has hosted this internationally-acclaimed music festival every summer since 1992. Attracting renowned artists from across the globe, Sani Festival is a showcase for arts of all kinds and one of the highlights of the Greek cultural calendar.
With a culinary philosophy focused on the discovery of new flavours and the reinvention of traditional dishes, gastronomy has always been at the heart of Sani. A love of food which led to the creation of Sani Gourmet in 2006. This annual celebration of the culinary arts welcomes acclaimed guest chefs from across the world to collaborate with Sani’s own renowned masters, many with Michelin stars, who continue to elevate the dining experience across each of the resorts.
Now part of the Sani/Ikos Group, Sani Resort continues to innovate, an everevolving sanctuary of stories and experiences. Where numerous accolades for sustainable development, green philosophy, and profound respect for nature make it a benchmark for tourism growth — one that has always enjoyed a close connection with nature and the sea.
An ecological ethos that provides the perfect introduction for young visitors to engage with nature, while further enhancing a destination that continues to earn accolades as one of the world’s leading luxury family resort, with a fabulous choice of tennis, football, and wilderness survival academies, alongside numerous adult activities.

words and photos by Nikos Aliagas
“I SEEK gateways to A WORLD where the VISIBLE and the INVISIBLE COEXIST, where LIGHT and SHADOW weave TOGETHER the FRAGILE canvas of
In the heart of Greece, where the intangible meets the tangible, a land of mystery and wonders emerges. In my black-and-white photographs, I do not merely collect images; I seek gateways to a world where the visible and the invisible coexist, where light and shadow weave together the fragile canvas of existence. Life appears like a vision that binds us to an ancient shadow theatre. Greek light is not merely a physical presence; it is a metaphysical experience, dancing on the waves, breathing memories into the marks of time, into the faces of elders in village cafés. It is the light that reveals and at the same time veils falsehoods, the light that unveils and unites the beauty and depth of this land’s soul. Through my lens, I attempt to capture this eternal struggle between light and darkness. I search for timeless archetypes, unadorned by the embellishments of colour. Every surface hides a truth, a glimmer that shakes us from the slumber of the familiar.
Greece does not belong to us; we belong to Greece. In the faces I photograph, I sense that my life is intertwined with theirs. I see joy and sorrow, hope and disappointment, love and pain. Yesterday and today erase the borders of logic; everything is imbued with sentiment in a magical way, and people become fellow travellers. In the wrinkles etched by time, I see a map of life, in eyes that shine with wisdom and experience, in hands that have toiled the land and the sea, the blessing of the free. Every photograph captures a story, a silent song passed down through generations.
Greece is the crossroads where past and present exist in harmony. Here, contradictions compose a unique beauty that transcends words and becomes a promise. The horizon line is both a return and a departure. Time becomes an idea, as does light. Greece is the idea of light, where light and shadow have been locked in an endless battle since the dawn of existence. Aristotle, in his
"Treatise on Time", defines time as "the number of motion in respect of before and after" (219b1-2), emphasizing its linear nature, where past, present and future follow an unbroken path. Yet in Greece, the past and the present coexist and interact in ways that defy conventional perceptions of time. An ancient olive tree in Halkidiki or Laconia tells us more than reason ever could. It holds within it secrets and myths that have never faded. The philhellene writer Jacques Lacarrière captures this brilliantly: "In all their vastness, massive olive trees, enormous, swollen, or deeply cracked, full of lumps, twisted, broken, torn apart, intensely reminiscent of giant dwarves, the laughing and frozen faces of woodland spirits trapped in these trees, like heroes transformed into plants, immobilized in the midst of their metamorphosis". Greece transmutes and defines human fate for those who have the eyes to see and feel.
Photography is a way of connecting with the land of my ancestors, a form of meditation, a process of self-discovery. Through my lens, I see the world anew, finding beauty in simple moments, in the small details often overlooked. Greece is a land of magic, steeped in history, culture, and natural beauty. It is a place that inspires, that calls you to explore it. But to truly know it, you must first lose yourself in its rugged paths, only then to find your way, your true self. In the eternal dance of light and shadow, I seek a path, though I do not know how a beam of light chooses its course; it is both spectrum and miracle within the narrow field of my lens’s vision. The mechanisms of the camera capture, and I merely follow this strange destiny that guides me. Before I can even clearly define the frame, an urgent necessity rises before me - a moment that lasts an eternity or a single heartbeat. I feel what I think I recognize in a distant echo, a memory, an ancestral connection that binds me to the chain of humanity. Holding my breath, I seek something that calls to me yet surpasses me. I do not decide anything; I simply accept the light each moment bestows. In my photographic dream, what dies is reborn, what no longer exists will be, what seems real is already vanishing. Everything is journey, movement, doubt and prayer. I cannot capture an image, no matter how ordinary, without its sanctity. There is something precious and fragile in what appears before me - a dream, something fleeting yet essential.
I photograph because I am mortal, a passerby at the edges of existence. I think I am holding onto something the moment I press the shutter, but in truth, it is all these gazes that keep me alive. An endless dialogue that never falls silent.
Greece does not reveal itself easily; it demands initiation and self-denial. The cobblestone paths and olive groves have taught me more than the proverbs heard in village cafés. Every photograph invites me on a journey, an adventure, a discovery. It is a moment borrowed from the ineffable flow of time, a fragment of
“Photography is a WAY of CONNECTING WITH the LAND of MY ANCESTORS, a form of MEDITATION, a PROCESS of SELF-DISCOVERY”
“As ARISTOTLE once SAID, "In ALL THINGS of NATURE THERE is SOMETHING of the MARVELLOUS"”
eternity that cannot be traded. Through black-and-white images, I attempt to capture this breath of eternity that is resurrected in every corner of the country. The olive tree, with its gnarled and ancient trunk, stands as a living monument, resisting time. The fisherman repeats the same gestures that have existed for centuries. Greece is a palimpsest without beginning or end. Before this eternity, we mortals seem ephemeral, fleeting shadows that pass and vanish. As Aristotle once said, "In all things of nature there is something of the marvellous". The sea, with its eternal
waves, holds untold secrets in its depths. It is the mirror of the sky and the soul, an unexplored world that evokes awe. The sea is everything. Its breath is our conscience. Before its vastness, human concerns seem small, and the sea reminds us of our place in the universe - a mere fraction of a drop, a tear of joy and sorrow. As the ship approaches the shores of Halkidiki, I feel I am entering a world where time and myth are inextricably woven together. The atmosphere is imbued with the invisible legacy of ancient narratives that, though unseen, shape the present in ways
both subtle and profound. Halkidiki is not merely a geographical entity; it is a realm where myths breathe and live, embedded in the land and its people. Every rock, every tree, every shore seems to whisper stories of gods and heroes, of tragedies and triumphs. These narratives, though rooted in the distant past, bestow upon this land a dimension that transcends the tangible. In Kassandra lies the buried giant of earthquakes, Enceladus. The old name of the peninsula was "Phlegra", meaning "land of fire", due to the epic battle between the Olympian gods and the giants. The myth reminds us of the eternal struggles and choices that define human destiny. Moving towards Sithonia, the peninsula owes its name to Sithon, son of Poseidon. Everything is connected; everything is reborn. Local traditions keep alive the tales of nymphs and sea deities who once roamed these waters. In the fishermen's nets, tangled dreams and indelible secrets entwine. There, I will pause,
at the medieval Tower of Sani, standing proudly atop the hill of Sani Resort. The tower stands as a witness to history, merging medieval architecture with the modern cultural landscape. The place enchants, calling you to discover it, to live it, to love it. As the sun sets behind the hill, the voice of Plácido Domingo echoes like an ancient psalm. It is time to set my camera aside and, as my grandmother used to say, "rest a while", to welcome the colours and scents of a blessed land. To dream, to be filled with light, and to embrace my children. Everything else can wait.
Loretta Gaïtis opens the doors to the new Gaïtis-Simossi Museum on Ios, as she shares personal stories about her two remarkable artist parents.
interview by Eleni Papastergiou
“I WANTED something SERIOUS yet SIMPLE , INFUSED with a DAUGHTER’S
LOVE , channelled THROUGH my PROFESSION, to HONOUR THEM in my OWN WAY”
It was a weekday afternoon, just before the official museum opening in September, when she welcomed me via video call from the charming French capital. This was my first conversation with Loretta Gaïtis, and my excitement was twofold, as our discussion centred around the launch of the new Gaïtis-Simossi Museum on Ios. As an architect specialising in museology - and as a devoted daughter with a deep love and respect for her parents, painter Yannis Gaïtis and sculptor Gabriella Simossi - Loretta had a significant dream to fulfil. After years of dedicated effort, her vision for the museum finally came to life, a testament to her commitment and meticulous research. "I have been ‘carrying’ this museum on my shoulders for 27 years. Meeting the current mayor of Ios, Gikas Gikas, was crucial because, thanks to him, we managed to open the museum. The inauguration day was profoundly meaningful, bringing me immense joy. It was a dream come true. What moved me the most was the presence of ordinary people. The daughter of the island’s priest, whom I have known since childhood, called me in tears, saying, ‘What a wonderful thing you have done for our home.’ It felt a bit like a wedding day, when you get the impression that you didn’t fully enjoy the moment because you were caught in a whirlwind. My personal ‘misfortune’ is that, while everyone in Greece continues to talk about it and celebrate, I returned to Paris and cannot share
in that same happiness. There is always a small décalage when you don’t live in the same place".
"The first thing I did was conduct thorough research, creating an accurate biography and compiling images of both artists from various periods of their lives, enriched with contemporary and scientific resources. This is not merely an exhibition - it is their entire archive, a collection that took an immense amount of time to assemble. I wanted something serious yet simple, infused with a daughter’s love, channelled through my profession, to honour them in my own way. In the 1960s, my parents discovered this island when it was still completely untouched. Later, when my father had more financial resources - ten years before he passed away - he built our house here. Each year, he would construct one more room, shaping it as if it were a sculpture. When he died, I transformed the house into a chapel. This place wasn’t inherited; neither of them was from Ios. Instead, it was a product of their unwavering belief in an island they fell in love with.
The museum building dedicated to my father features a large hall with a high ceiling. At the entrance stand his iconic human figures, while the space showcases his major installations and other significant works, spanning from 1940 to 1984. As for

my mother, a key reference in her artistic journey was Evangelos Venizelos. My friend Vasso Papantoniou and I carefully selected large-scale works, which are displayed at the centre of the exhibition, alongside 37 collages from her collection and five pieces from the collection of her friend Jean-Marie Drot - she had designed sculptures for the outdoor space of his home. In her wing of the museum, a vast white hall with arches houses marble pedestals on which her white sculptures take centre stage. My mother adored white. When we lived in the same house, and someone brought her a bouquet of colourful flowers, she would immediately send it upstairs to me".
The Child of Two Great Artists "I called my father ‘Yannis’ until I was 22. I only began calling him ‘father’ three years
before he passed away. As for my mother, when working with third parties or museum collaborators, I don’t say ‘my mum’ or ‘my mother’ - I refer to her as ‘Gabriella Simossi.’ I have to maintain a bit of distance. I always followed their Art - it was something magical. Through her work, my mother expressed human emotions. The paintings of Giannis Gaïtis, especially with his signature human figures, explored the concepts of form and colour, reflecting the individual’s relationship with society, politics, football, nature - everything that moved him. My mother, on the other hand, was more melancholic and introspective; she didn’t have an easy life. With this museum, it feels as though I have given birth to her and brought her into the light. From both of them, I learned that, in every situation, I must do my absolute best, never settling for the surface level".
“ IDEALLY, we would LIKE to CREATE a NETWORK with other MUSEUMS in the CYCLADES, such as the TSOKLIS Museum in TINOS and the GOULANDRIS Museum in ANDROS”
The Museum’s New Chapter "The Museum will be open from Easter until October of each year. The exact dates for 2025 will be announced on the Museum’s website. In the afternoon, the heat subsides, and the sunset is breathtaking, as the museum is perched on a picturesque hill. In five years, our main goal is to complete the lighting and air conditioning installations, as well as the landscaping work in the gardens. Ultimately, we aim for the museum to achieve financial independence. Another important aspect is the annual rotation of temporary exhibitions, alongside creative activities that will complement the permanent collection of our two leading artists. We are also in the process of establishing a gift shop and a café. Ideally, we would like to create a network with other museums in the Cyclades, such as the Tsoklis Museum in Tinos and the Goulandris Museum in Andros. Additionally, we are interested in developing a library, which would be particularly valuable for young people who wish to study Gaïtis’ art. As for our efforts in inclusivity and accessibility, visitors using wheelchairs now have access to all museum spaces".

interview by Aris Kavatzikis
“Observing how PEOPLE ENGAGE with our WORK is incredibly REWARDING. It’s a REMINDER that our WORK EXISTS beyond the STUDIO”
LOT is an award winning architecture and design firm with offices in New York and in Greece, focusing on applying strong design concepts with consciousness and pragmatism, founded in 2014 by Leonidas and Eleni. LOT works on an array of projects ranging in scale and complexity, from spatial installations to interior spaces and buildings of high capacity architecture. In 2016 LOT formed Objects of Common Interest, a design studio with the aim in creating objects and still life installations in search of inspirational moments in materiality, process and concept, sharing a common vision in flowing seamlessly through interdisciplinary practices, blurring the boundaries between the artistic and the pragmatic, between form and abstraction, merging the founders’ backgrounds in architecture and art. Work has been featured in the press, including The Wall Street Journal, T magazine, Wallpaper*, FRAME and PHAIDON publishers, as well as being presented in exhibitions such as the Venice Architecture Biennale, Greek Architecture Biennale, and the Salone del Mobile in Milan. In 2014 LOT was shortlisted for the European Piranesi Awards and was also selected for the Wallpaper* Architects Directory, the iconic magazine’s list of the best architectural talent from around the globe.
Was studying architecture a one-way path for each of you personally, or did you have other directions in mind that you ultimately did not follow?
While architecture has always been a significant passion for both of us, our interests have spanned various disciplines. Eleni's background includes extensive experience in the arts, having served as the Executive Director for the non-profit Faou Foundation in New York and as the Director for internationally acclaimed artist Mariko Mori. Leonidas has combined his architectural pursuits with artistic endeavours, leading large-scale projects that blend pragmatic approaches with creative conceptual clarity. These diverse experiences have enriched our architectural practice, allowing us to approach design with a multifaceted perspective.
Would you share with us your original dream, as students starting your architecture studies? Was there a thought like, "We want to change the world or the way we live"?
As students, we were driven by a desire to explore the intersections of art, design, and spatial experiences. Our aspiration was to create environments and objects that provoke thought and elicit emotional responses, thereby influencing the way people perceive and interact with their surroundings. We believed in the power of design to inspire and bring about subtle yet meaningful changes in daily life.
What led you to transition from a large scale to a smaller one? I mean, from designing buildings and residences to designing functional objects and furniture?
Our journey from large-scale architectural projects to designing functional objects and furniture stemmed from a desire to explore materiality and form on a more intimate level. Founding Objects of Common Interest allowed us to experiment with still life installations and experiential environments, focusing on the tactile and the handmade. This shift enabled us to delve deeper into the nuances of design, creating pieces that encapsulate our conceptual explorations in tangible forms.
Your work exists within the urban landscape. However, many of your installations have been hosted in outdoor spaces. How does your creative process engage with the urban fabric versus nature?
Our creative process is deeply influenced by the context of each project. In urban settings, we consider the existing architectural elements and the dynamic interactions of the space, aiming to create installations that resonate with the city's rhythm. Conversely, in natural environments, we draw inspiration from the organic forms and inherent tranquility, crafting pieces that harmonize with or thoughtfully contrast the surroundings. This dialogue between urbanity and nature enriches our work, allowing us to explore a spectrum of spatial experiences.
You move between major cities - New York, Athens, Thessaloniki. Do you miss the connection with nature, both as a sensation and as a source of inspiration?
While our practice is rooted in bustling urban centers, we deeply value our connection to nature. This bond is not only a source of inspiration but also a vital component of our wellbeing. We often seek opportunities to immerse ourselves in natural settings, which in turn informs our design philosophy, encouraging a balance between the built environment and the natural world.
As global citizens, how does your homeland, Greece, "reside" within you? Is it a point of reference in your work? Do you believe your projects contain evident or "hidden" references to Greek culture? Living in New York, somewhat distanced from Greece - though never losing touch - we began to reconnect with its values and ideas. However, not in a superficial, touristic, or material way, but rather through sensations and memories. This abstract reading of these concepts, combined with natural elements, subtly and unconsciously filters into our work, simply through our active life and practice between the two places.
We carry our Greek influence in everything we do, not just in the form of historical references or education, which would be more direct and obvious, but as a feeling or
“While our PRACTICE is ROOTED in bustling URBAN CENTERS, we deeply VALUE our CONNECTION to NATURE”
cultural influence that helps us maintain a sensitivity and underlying identity in both our work and personal life. It may not always be visible to everyone, but for us, it is what guides and motivates us.
You are partners in both work and life. Do you always function as a duo, or are responsibilities and daily tasks distributed differently between you?
While we collaborate closely on all projects, we also recognize and leverage our individual strengths. Eleni often focuses on creative direction and conceptual development, drawing from her extensive experience in the art world. Leonidas brings a pragmatic approach, emphasizing technical execution and project management. This distribution allows us to efficiently navigate the complexities of our practice while fostering a dynamic and balanced partnership.
You have created installations in public spaces and museums, both in Greece and abroad, with people interacting with your work. How do you experience this interaction? Do you feel the energy your works leave on people?
Observing how people engage with our work is incredibly rewarding. Whether it's a subtle gesture, a moment of curiosity, or an unexpected interaction, these responses reveal the emotional and physical impact of design. It’s a reminder that our work exists beyond the studio - it lives through the experiences of those who encounter it.
Your studio’s establishment in the industrial zone of Piraeus and your work with acrylic resin casting - where is this leading you? What should we expect from this new step?
A space dedicated to the production and research of cast acrylic resin works. This has become a major focus for us, allowing us to develop mold-making and casting techniques for a wide range of forms and material specifications. This process gives us the freedom to experiment with larger-scale objects and complex geometries. In its liquid state, the resin is poured into molds, and once solidified, it is hand-finished, making each piece unique. Beyond our own explorations, we also see this space as an opportunity to serve as an art hub. Our fabrication studio acts also as a platform to bring ideas to life - developing and producing new pieces.
Can you share what you are currently working on - your upcoming projects in architecture, design, and the art/museum space?
We are currently working on several exciting projects for Milan Design Week 2025, taking place from April 7–13. At Alcova Milan, we will present two distinct installations. The first, in collaboration with the Greek Marbles, celebrates the revival of Greek marble. Soft Horizons brings together seven esteemed Greek marble companies - Dionyssomarble, FHL I Kiriakidis, Iktinos, John Papagianoulis Bros, Marmyk Iliopoulos, Marble Sachanas and Stonegroup International - showcasing the enduring craftsmanship and beauty of this material. Void Rollers installation, in partnership with Breeder Gallery, will be unveiled at Villa Borsani within Alcova Milan. At Nilufar, we are presenting Lucid Dreamscape, an immersive installation featuring red resin objects. Expanding on our ongoing exploration of transparency, material transformation, and spatial perception, the installation will remain on view for several months, offering a long-term engagement beyond the week’s events.
We are also unveiling a special collaboration with Tacchini, featuring a collection of mir rors and vases. This collection will be showcased at Tacchini’s new monobrand showroom in Milan, right in the heart of Brera, as well as at Rho Fiera Salone, within their booth at the Salone del Mobile.
We are also developing some public installations in Canada, designing several vacation homes on the Greek islands, and a residence in Porto Heli, Greece. In addition, we have several exciting collaborations and other projects that we will be ready to share later on in the year. At the same time, we continue the production and research of cast acrylic resin works in our new Piraeus-based studio, working on a series of commissions and partnerships.
“As STUDENTS, we were DRIVEN by a DESIRE to EXPLORE the intersections of ART, DESIGN, & spatial EXPERIENCES”
Three wonderful, unique and exceptionally creative individuals take us on a journey through their personal sanctuaries, the places where their minds and souls find rest. Speaking in the first person, they share their own stories of profound connection with the places they have chosen as their retreats, proving that nothing in life is entirely coincidental. There is always a story, whether real or even metaphysical, that binds us to the environments in which we live and breathe.
interviews by Aris Kavatzikis
My connection to Greece is quite interesting. My family owned a house in Ibiza, where we spent our holidays. My mother passed away the year I got divorced, and I wanted to sever all ties with that house and the past. Moreover, Ibiza had changed significantly, and I no longer liked it. I had reached a point where I needed to restart my life. Since I work in major urban centres, I realised that nature - the forest, my connection to the natural world - was truly important to me. My roots are from
“For me, GREECE is SYNONYMOUS WITH authenticity and the BEAUTY of NATURE”
Munich, home to a thriving Greek community, so I had always loved Greek culture, food, and the generosity and joy of the Greek people. That’s when I thought, Maybe I should look for a holiday home in Greece. I started holidaying in Patmos, but I was looking for a weekend destination, not a vacation destination - somewhere I could easily reach, no matter where I was in the world.
Then, one day, in a lounge at New York Airport, I met my third husband,
who lived in Nikiti, Halkidiki. His father was from Thessaloniki, he grew up in Tel Aviv, and he divided his time between Belgium, Paris and Nikiti. It was through love that I discovered this place - at a time when I was already searching for a home in Greece. I hadn’t known Halkidiki before, but I quickly realised how convenient it was due to its proximity to Thessaloniki’s airport. When we met, we knew we wanted to spend every weekend in Nikiti. No matter where I am in the world - from Korea to
Tokyo or New York - we return home 2–3 weekends a month. It’s not just a summer house; it’s our second home.
The primary material of the house, which was completely rebuilt from ruins, is stone. Essentially, we wanted to preserve the character of the old village houses, how the windows and balconies were placed. We respected these elements. Personally, I love vintage objects; I believe they give a home its soul. Old porcelain, old chairs that have lived through so many stories, with so many families. For me, it is very important to be surrounded by objects that had a life before me. I also prefer large-scale photographs over paintings. I love modern photographers, the way they "steal" and capture a moment. I like the contrast between a modern photograph and a vintage piece of furniture. The only painting I have in my home is the nude portrait of my great-great-great-grandmother, who was
the first woman to pose nude in Munich, causing a scandal. This painting, therefore, has soul and history; I have a connection with it. But even then, I placed it next to a modern photograph, so they could have a dialogue.
The philosophy of "Less is More", which we followed in decorating the house, is also my philosophy of life. I love the simplicity of things. I believe that too many objects and too much information distract the mind. They don’t allow you to breathe. In Nikiti, I want to rest my soul and mind, as I work a lot, meeting hundreds of people every day in meetings and calls. So on weekends, I want peace and tranquility. Perhaps that’s why I love hiking in the forest - there is no noise, just simple and authentic beauty. I can breathe. Also, I never have flowers in vases or potted plants in my home. Plants belong in nature; that’s where their roots
are. Besides, in a closed space, they absorb our oxygen. That’s why I don’t want people to cut flowers or bring them to me as gifts. Leave the flowers where they belong.
My favourite moment in Nikiti is having my morning coffee in the small garden, when the village is still quiet. For me, Greece is synonymous with authenticity and the beauty of nature. It has the most beautiful waters in the world. And even though I am not Greek, every time I come here, I feel as if I am returning to my roots.
There’s one more thing. Along with two couples, Greek and German friends, we bought the building across from our house. It had been used as a barbershop, post office, and clinic - it was the "centre" of village life. There, we will create a small boutique hotel - it is our pleasure project. We have already started renovating it; it will have a bohemian chic character, and will be called "Jeione".

“I HAD experienced an OVERDOSE of NIGHTLIFE in NEW YORKI was DONE with THAT. I WAS seeking PEACE and TRANQUILLITY”
I discovered Patmos in 1982, the year my eldest daughter was born. We were living in New York and had come to Greece for a holiday. We rented a house in Agios Nikolaos, Crete. There, I met a Frenchwoman with exquisite taste, who asked me if I had ever visited Patmos. She was convinced I would love it. She even offered me her house in Chora to rent the following month so that I could explore the island. It was somewhat comical yet tragic because the woman who worked for me as a housekeeper and nanny was Portuguese, and the relentless 10 Beaufort winds blowing throughout August triggered her deepseated trauma. Back in her homeland, a violent storm had torn the roof off her house. We lived through a small drama due
by
to her fear, but I fell in love with Patmos. I tried to find a house to buy, but with no luck, and so I left.
“I BELIEVE that the FOREIGNERS -WRITERS, researchers, and ARTISTS- who settled in PATMOS and built HOMES there have helped PRESERVE its CHARACTER”
I continued visiting the island every summer, renting a house each time. However, in 2004, I came across a ruin that was for sale. The moment I stepped inside, I felt something special, despite only seeing a stone staircase and a well. It was just two walls and a door - the ceiling had collapsed, and the space was filled with stones, completely inaccessible. Essentially, there was nothing else to see. But I thought to myself, Even if this is all there is, I’m fine with it - I’ll take it. The house was essentially rebuilt. My dear friend Katerina Kamara, who has a remarkable talent for interior design, oversaw the renovation, while I took charge of decorating and “lighting” every corner. For nearly a year, we travelled to Patmos every Sunday by ferry. We would leave Piraeus at midnight
on Saturday, work all day Sunday with the construction team, then board the ferry again at midnight. By Monday morning, we were back at work. This house in Patmos was created with immense joy and love, and that is exactly what it radiates. I didn’t need to buy any furniture, as I had everything from my family’s homes, including my mother’s. There were plenty of pieces available for the house on the island.
I believe that the foreigners - writers, researchers, and artists - who settled in Patmos and built homes there have helped preserve its character. Reaching the island was an adventure, with no easy road access, no nightlife; you had to truly love it to stay. And that suited me perfectly. I had experienced an overdose of nightlife in New York - I was done with that. I was seeking peace and tranquillity. Patmos was exactly what I needed, and the people who
chose it were also searching for just that. Those who love solitude are the ones who know how to be with themselves and enjoy their own company, and that has value. In fact, from 2010 onwards Patmos also gained recognition among people in the international fashion industry, thanks to its untouched natural beauty and authenticity. As a result, the island was featured in international publications and, beyond attracting intellectuals and artists, it also drew the fashion crowd. Yet, even today, in the height of August, if you have your own little retreat, you can find peace under a tamarisk tree with nothing but your towel.
Four years ago, something remarkable happened. Maria, who takes care of the house and lives on the island permanently, brought me some holy water and an icon of Saint Amphilochios, advising me to place it among my other icons because, as she said, He watches over the house. She explained that “the previous owner was the cousin of Monk Amphilochios, who lived in a hermitage in the mountains. When he came down to Chora, he stayed in this house, where he would pray”. I instantly felt that his presence had left an imprint on the space, that the walls had absorbed this divine energy. That very same day, the church had canonised him.
The moment I cherish the most in my house is at dusk, during sunset. After returning from the beach, I sit on the veranda, gazing at the sea, listening to beautiful music. If I had to share one secret about the island, it would be a tiny cantina above the Twin Beaches, serving the most delicious homemade dishes. It’s an openair kitchen, but to me, it is one of the finest restaurants on Patmos - a dream.

“This HOUSE in Patmos was CREATED with IMMENSE JOY and LOVE , and THAT is EXACTLY what IT RADIATES”
The first time I set foot on Serifos, in 1976, was an adventure. I was waiting for the results of my university entrance exams and spending the holidays on Sifnos with a large group of friends. We had rented a huge house, but after something happened that left us disappointed, we suddenly found ourselves on Serifos.
“The WORD that COMES to MIND when I THINK of SERIFOS is GROUNDING, I FEEL LIKE the island’s METALLIC subsoil DRAWS out all NEGATIVE ENERGY”
From the moment I stepped off the boat, I fell head over heels for the island.
Serifos is a place you either love or hate. It’s a barren, harsh, metallic island - until 1960, iron mines were still active beneath its surface. It’s a place where you can see industrial ruins scattered across the landscape. To me, abandoned factories have always felt like temples of labour and life. Even today, Serifos hasn’t been spoiled by tourism; it has managed to retain its character. The people of Serifos are reserved; they don’t seek much interaction or celebration, unlike the more outgoing locals of Sifnos. Even after all these years, they still see me as an outsider. They’ve never truly considered me one of their own. At least now they understand that I genuinely love their island. This closed-off community
of tough people, who keep to themselves, is something I found deeply intriguing. By 1980, I already had a house on Serifos, bought with my first earnings - even though, back in Athens, I didn’t have the basics, such as a car. I remember when I first arrived, the bus we used to get to the beaches had holes, and there was only a makeshift club on the island. It was practically deserted; you had to walk quite a way to reach the sea. But the island’s Chora was - and still is - breathtakingly beautiful. My first house was there, just below a church, and my "courtyard" was a hollowed-out rock that felt like a cave. Later, I sold that house to an American friend to build a bigger one. The same thing happened with the next houses I built, until I finally settled in my current refuge in 2004. Throughout this journey, my good friend, the architect Giorgos Zafeiriou, has been by my side, helping design and construct each home. Together, we created houses that seamlessly blend into the natural landscape of the island. They looked like bunkers - one was even a repurposed old sheep shed, another an old workers’ building. We built homes that tell stories. For example, we preserved the original form of the sheep shed, even keeping the outdoor feeding troughs. That house now belongs to a Swiss owner. But I never take anything with me when I leave a house behind. For me, each home is a closed chapter that allows a new one to begin.
The houses, and their interiors, are the culmination of a creative process. The result is often artistic and minimalist, with many built-in features and very few, if any, objects. There are no collections of things, only pieces I created specifically for each space. My current house is by Lia beach, and it was probably once a pigsty. We were asked to take on its construction because, at the time, we stood ideologically and practically opposed to the rapid, cookie-cutter development happening on the island - rows of small,

identical houses, crammed together, with bedrooms buried in basements and living rooms on the ground floor. Personally, I prefer sleeping in a space that’s open on all four sides rather than being boxed in by walls. As for the objects in my house, between two windows I painted a candelabrum. On another wall, I hammered in 20 nails, allowing the shifting daylight to create playful shadows. Elsewhere, there’s an iron sculpture carved into the wall - an abstract equation of evolution and growth. These are all in situ works, made either by me or by local ceramists. This appreciation for handcrafted labour has been a constant in my life - the beauty of things made by hand.
Even after all these years, Serifos still holds the same energy. Thankfully, the island hasn’t been overdeveloped. The hillsides remain untouched, free from sprawling villas. Both the locals and the municipal authorities are determined to preserve the uniqueness of this iron-rich landscape. I love the island’s ridgeline, where tall mountains rise almost directly from the sea. Especially at dusk, when the untouched peaks, unlit and raw, stand out in silhouette against the purple sky, like a dramatic stage set - sharp-edged as if cut from cardboard. There are also secret treasures, like the caves hidden along beaches that are not visible from the road. Swimming there, between the white rocks and the deep blue waters, feels like discovering another world.
At my house, I always wake with the sunrise. I never close the windows - the moment the sun rises, its first light floods directly onto my bed. The word that comes to mind when I think of Serifos is grounding. I feel like the island’s metallic subsoil draws out all negative energy, releasing tension from the body and mind. Every time I arrive, it’s as if I’m picking up the thread from where I left off, continuing an unbroken cycle that’s constantly being renewed.

Behind some of the most outstanding adornments worn and treasured around the world, are the talents who carved a fascinating legacy of unmatched quality and impeccable design, made in Greece.
The rich jewellery tradition of Greece dates back to prehistoric times. According to Homer, Hephaestus, the god of metalwork, forged the shield of Achilles, the golden chest of Hercules and the bridal crown of Ariadne. Twenty-five centuries before the construction of the Parthenon, the inhabitants of the Aegean islands were working with pure materials, shaping them into delicate forms that captured the essence of nature and the world in objects they wished to last forever. The archaeological findings at Mycenae and the hand-hammered jewellery uncovered here, three millennia later, have provided us with designs that continue to inspire Greek goldsmiths today. Moving forward, the grandeur of the Byzantine emperors in the 10th and 11th centuries was reflected in the creation of luxurious jewellery. At the same time, small-scale craftsmanship also flourished, creating a tradition that lasts to this very day. The 19th century saw an influx of European influences and a reevaluation of the significance of ancient Greek civilization in the global context. Since the 1950s, Greek goldsmiths have established a vibrant presence in the jewellery world, drawing inspiration from history, nature and cultural references, while their craftsmanship embodies a combination of ancient techniques and modern practices. In the 1960s and 1970s, renowned jewellers spread the word of Greek jewellery around the world, drawing influence directly from Greece's cultural heritage. Today, a new generation embraces a contemporary style, keeping Greece at the forefront of the industry.

This is a story of 165 years and five generations. A tale of bold talent and restless creativity that begins with Thomas Fanourakis in Heraklion, Crete, and extends to Lina Diamantopoulou Fanourakis in Athens, who took over the company’s creative leadership after the passing of her husband, Leonidas Fanourakis, in 2006. Every Fanourakis piece is endowed with unique techniques, a refined character and a natural sense of balance between the austere and the humorous, the professionality of perfection and the easy flow of intuition. Today, Fanourakis is synonymous with a distinctive universe - a realm that bridges reality and dreams, where golden dragonflies rest alongside hand-painted flowers, and the playful design of stringknot rings complements the serious elegance of pendulum pearl earrings.

Sofia Thanopoulou was born in Russia, where her father worked as a dry goods merchant, but the family soon moved to Greece. Her childhood summers in Aegina and Mykonos, her mother’s native land, filled her heart with the beauty of the seabed, inspiring her artistry later in life. After creating rope sandals and scarves in Athens, her semi-precious stone worry beads become a big hit, enhancing her flair for jewellery. Sophia, known as Maroulina (a name inspired by her grandmother), then moves to Mykonos where she opens her "Magazaki tis Maroulinas" (Maroulina’s Little Shop) in 1954. The walls of her shop are all dressed in simple, yet elegant wicker, and, on the door, a metal sign features a sun kissed mermaid with a crown and a ship with the shop’s name. Melina Mercouri comes to visit and puts her signature on the arch, where more and more famous names are gradually added (these 130 signatures are kept in the Folklore Museum of Mykonos). Maroulina sells her unique and avantgarde creations, which combine shells and beads with leather, gold, silver, and coral. Choreographer Maurice Béjart encourages her to explore genuinely valuable materials. Each piece of jewellery is made with great effort, while she has a hard time parting with her creations, making sure they would be worn properly and by the right woman. The 1960s bring increased attention to Mykonos and influential figures such as sisters Jackie Bouvier and Lee Radziwill bring Maroulina’s jewelry back to New York, Paris and London, helping to establish the jeweller’s reputation. In 1972, the self-taught artisan moved her shop to Athens, where she continued creating her jewellery and beloved amulets. Each year, she would hang a new amulet, which she made herself, on the wall of her house on Solonos Street. She continued developing her craft until her passing in 1997.

in Parisian ateliers, Efthimios Zolotas returns to Greece in 1895 and at the foot of the Acropolis, at just 21-years of age, he lays the first stone of what will soon become the most historic jewellery house in Greece. ZOLOTAS House. This will very soon become the meeting point of all the Athenian elite. A true visionary, Zolotas shares his expertise with the most skilled goldsmith artists of his time, establishing an apprentice school with a distinctive style. His son, Professor Xenophon Zolotas, a central figure of the country’s economic and political life, passionately contributes to his father's business, merging Greek cultural heritage with modern influences. Aristotle Onassis, Jackie and John Kennedy, Romy Schneider, Elizabeth Taylor, Maria Callas, become avid fans of ZOLOTAS House. In the seventies, Greek sculptor Takis designs a magnetic jewel for the House, acclaimed painter Alekos Fasianos creates charms, sculptor Claude Lalanne transforms laurel leaves into gold, and Paloma Picasso designs a limited collection of necklaces and bracelets in the shape of daisy petals and bracelets with the faces of the moon. In the late 1970s, Ronald Mc Namer designs a collection for ZOLOTAS House and is soon deeply involved in all stages of jewelry making, becoming the true "soul" of the House. Today, under the vision of artistic director Georges Papalexis, ZOLOTAS House bridges the past with the present, blending Greek cultural heritage with the innovation of contemporary design. Rooted in techniques dating back to the Minoan and Mycenaean civilizations, the House’s goldsmiths ingeniously preserve and reinterpret the House’s unique Chrysotechnie, transforming precious metals into iconic jewellery of enduring beauty that transcend time.
A visionary ahead of his time, Ilias Lalaounis was an inspired man, an artist and academic who passionately devoted himself to his calling. Meticulously studying the art of his ancestors, he breathed new life into ancient Greek artifacts, thus reigniting the tradition of jewellery craft. By bridging the past and the future of Greek jewellery, he guided his fellow craftsmen towards a modern interpretation of their shared heritage. He introduced new tools and fashions which sparked a new era for the craft. A pioneer and a born leader, he founded the Greek Jeweller’s Association and later became the first goldsmith/jeweller to become a member at the Institut de France, in the Académie des Beaux Arts et des Lettres. His inspired contribution to the art of jewellery became the impetus for multiple studies which he communicated to his fellow Academics and the public. His clear and unique vision, along with his love for simplicity and appreciation for history, man’s technological achievements and nature's organic shapes, embodied his beloved gold creations and shaped an instantly recognizable style, the sign of a true classic. His legacy is incarnated today through the lives and work of his four daughters: Aikaterini (co-CEO Greece), Demetra (Intl CEO), Maria (co-CEO Greece and Creative Director) and Ioanna (Director of the Ilias Lalaounis Jewellery Museum). With every new collection, each Lalaounis piece tells a story of exceptional craftsmanship, featuring innovative creation and inspired design, always pushing the boundaries of imagination while remaining true to the core of the Lalaounis name. 1
From an early age, Ileana Makri was fascinated with gemstones, and working with her hands was a calming and meditative practice for her. After earning a degree in Business Administration, she decided to pursue her passion for jewellery design and, in 1996, enrolled at the Gemological Institute of America in Santa Monica. Two years later, she launched her eponymous brand and quickly gained international recognition for her innovative designs. Her signature jewellery line, “Classic", introduced that same year, marked a significant milestone for Ileana, as it was instantly picked up by Barneys New York. A globetrotter at heart, Ileana travels extensively to source the most exquisite gemstones, bringing them back to her workshop in Athens where they are transformed into skillful pieces in collaboration with some of Greece's finest artisans. Sharing her time between Greece, India, London, Paris and New York, allows her to embrace and celebrate the different cultures and landscapes that inspire her craft while seeking to uncover the distinct craftsmanship and methods of each region. One of her favorite regions is India, where she has recently begun creating select collections with local artisans. Her Athens Atelier houses her workshop, enabling her to oversee every detail of her creations. Ileana Makri's jewellery transcends mere aesthetics; it embodies a philosophy that encourages exploration, curiosity and reverence for the world’s diverse cultures and ecosystems. Each design encapsulates a sense of personal luxury - not as a status symbol, but as an opportunity to connect deeply with the essence of nature, history and the extraordinary in everyday life.
His studies in Literature and Philosophy provided a strong intellectual foundation before this designer pursued his passion for stones. Born into a family of jewellers, he completed his studies in Gemology and Glyptography at the Gemological Institute of America before establishing his namesake Maison, Nikos Koulis Jewels, in 2006. With his own workshops and access to exquisite stones in unique cuts from around the world, he crafts exceptional pieces for an international clientele who values his intrinsic quality and aesthetic ethos, showcasing his distinct artistic signature, alongside an intricate technique and deep expertise in jewellery making. Operating in the rarefied space between distinguished handcrafted fine jewellery collections and iconic one-ofa-kind creations, Nikos Koulis has won four Couture Design Awards and received the GEM Award in Jewellery Design in 2020 - arguably the most prestigious honor in the international jewellery industry. This recognition highlights the durability and remarkable quality of his work. His loyal clientele includes luminaries such as H.R.H. Queen Rania of Jordan, Rihanna, Beyoncé, Oprah Winfrey, Scarlett Johansson, Adele, Jennifer Garner, Jennifer Lopez, Salma Hayek, Gwyneth Paltrow, Jane Fonda, Nicole Kidman, Reese Witherspoon, Alicia Vikander, Jennifer Lawrence, and Michelle Obama. His atelier is located in Athens, complemented by three boutiques in Athens, Mykonos and Paros, each reflecting the unique aesthetic of his creations. His collections are also available at select top-tier retailers and various eclectic jewellery stores across the USA, Europe, and the Middle East. Unconventional, exceptional, experimental and daring, Nikos Koulis redefines the expectations of high jewellery while maintaining a strong personal signature and connection to specific artistic codes, resulting in one-of-a-kind pieces of enduring value.

Lito Karakostanoglou, who once wanted to become a photographer, was originally trained in Boston for marketing management and advertising. During her time there, she would spend her weekends crafting makeshift jewellery together with her roommate, trying to find a way to express her creative streak. Upon returning to Athens, she launched her “Open Studio” in 1999, showcasing primarily one-off styles using a variety of materials. Despite being self-taught in jewellery and in light of her success in Athens, she wanted to further enhance her craftsmanship. Her instinct and her boldness brought her to Paris in 2004 where, for two years, she studied sculpture and life drawings at the Ecole des Beaux Arts as well as technical drawing for jewellery at the Ecole du Louvre. It was during her stay in Paris when she created pieces for Kenzo and Jean Paul Gaultier, and designed handbag charms for Zadig & Voltaire. In 2007 she felt it was finally time to return to Athens and re-open her shop, inspired this time by the concept of a “Cabinets of Curiosities”. Her clientele was already there, waiting for her to pick up from where she left off, only to discover she had moved further upwards and beyond the limits of her imagination and talent. One cannot restrain her work into typical norms, as the properties of her chosen materials themselves are, each time, the driving force for her designs. She loves embracing natural materials like corals and shells with gold, playing around with semi-precious stones, and respecting the energy and purpose found in each shape, be it a mystical scarab or a mesmerizing eye.
Yannis Sergakis' tale is one of engraved childhood memories of a pure and rich family heritage that ensures timeless eminence. Born into a prominent family of Greek diamond traders, he was drawn into the enchanting cosmos of precious stones from a very young age, often observing his uncles in their showroom. After obtaining his degree in gemology and design at the Gemological Institute of America, he joined the family business as a trader. In 2004, he established his own business, collaborating with renowned jewellery houses both in Greece and internationally. More than a decade and thirty collections later, he launched his own signature line in 2014. After Athens and Paros, 2024 saw the opening of his flagship store in the historic Palais Royal in Paris. Today, his collections are exclusively handcrafted in the heart of Athens by master artisans who employ traditional techniques to skillfully transform raw materials into exquisite pieces.
Born in Hydra Island, Elena Votsi completed a degree in painting at the School of Fine Arts in Athens, followed by a master's degree in jewellery at the Royal College of Art in London, where she graduated with honors. While studying, she was selected to design and manufacture jewellery for the William Chan fashion show in London, starting a string of important collaborations, such as the one with the Zolotas House, the design of the commemorative gift for the Summit of the Presidents of the European Union and the design for the “Key” of Hydra. The president of the Gucci Group personally selected her and invited her to Florence, where she joined the Group’s staff, designing jewellery and items for the famous Italian firm. This was followed by her collaboration with the National Gallery, the Acropolis Museum, the Benaki Museum, the Museum of Cycladic Art, the Historical Archive Museum of Hydra, the Ghika Gallery, the Vasilis and Eliza Goulandris Foundation and Ralph Lauren. After designing many awards and medals, the milestone in her career was the redesign of the medal of the Olympic Games for the Athens Olympics in 2004. Impressively enough, her design has remained on the front part of the medals until the latest Olympic Games in Paris. Inspired by the world’s wonders, she fearlessly infuses her designs with a sense of daring innovation, merging unconventional materials and unexpected techniques. Her boldness has become a signature mark, a symbol of her audacious artistic voice. Elena Votsi believes in the transformative nature of her craft, that allows her to manifest beauty and capture the essence of emotions within every piece she creates.
Minas1
A free-spirited rebel fired up by an inner passion for a life of creation, Minas started drawing at a very young age, something no one was impressed with at the time, as he would like to say. Not even when he won an award for a painting at just 14 years old. A year later he drops out of school and goes on to work for Vourakis, the high-end jeweller of the time. He gradually becomes more and more interested in simple black lines on white paper, as he feels this is exactly where things are born. His unparalleled talent for design and deep understanding of technical drawings leads him to spend a major part of his military service in the navy, drawing mechanical parts. For him, this repeated and precise process becomes the schooling that will define his jewellery. “Fashion is created by the disobedient” he would say. In 1967, the junta rules in Greece and Minas, with 200 dollars in his pocket, flies to New Yoirk with a one-way ticket and starts working for David Webb jewellery. With his first paycheck, he buys tools and sets up his own little shop at the goldsmith exchange on 47th street. This is where his business mind is honed, perfectly paired with his artistic majesty. His work finds itself all the way to Italy, the crème de la crème of Portofino become obsessed with his minimal, bare jewels, calling them ‘contro corrente’, against the current. His odyssey complex soon calls him back to Greece, where he starts everything again from scratch. His original spirit draws a new wave of fans that include Keith Richards, the Rolling Stone who becomes his dear friend and calls his work “music in shapes”. In 2000, Minas operates and sells his designs privately from his stores in Athens and Mykonos, while in 2015, a London store is added. His legacy exceeds that of a simple goldsmith. Having designed everything, from furniture to small everyday items, from a solar clock to his house in Mykonos as well as the nightclub Astra on the Cycladic Island, this designer put out his soul in every line on white paper, drawing everything by hand until his passing in 2020.

From designer, stylist, and fashion director to photographer and, today, one of the hottest names in museums around the world, Vangelis Kyris is an artist never defined by his medium but, on the contrary, a creator of new mediums, unique to his inner travels. words by Eleni Papaioannou
It was his MOTHER’S fine TASTE , together with his PARENTS’ LOVE for getaways during the weekends of his youth, that FED his love for DISCOVERY
Being wholeheartedly present in the here and now dictates a certain kind of mindset, one that travels constantly, both through time and space. This is the principle that has defined Kyris, even as a five-year old boy growing up in the Athenian suburb of Nea Smyrni. An iron cast design of an old door, a worn-out rocking chair, any old thing his mother or grandmother decided to throw away; somehow objects found their way back in the house, with the little collector feverishly guarding their old souls and giving them a second chance in life. Vangelis’ obsession with old things would often lead him to attics around the neighborhood, a task that would come to a halt whenever his mother would decide to rearrange the furniture around the house, or bring over seamstresses to create her wardrobe, inspired by the many magazines always lying around. Mesmerized by her creativity and her love for fashion, her spurts of inspiration would keep him in, invested wholeheartedly into the art of her elegance.
A celebrated career in fashion
It was his mother’s fine taste, together with his parents’ love for getaways during the weekends of his youth, that fed his love for discovery. The first far-away voyages, however, took place inside this boy’s mind, through the two dimensions of the postcards sent by relatives in America, and the old stamps collected by his grandfather: A mysterious and magical man, chiefdesigner for the Greek Railroads with a secret creative streak for pornographic drawings of immense beauty. Everything around young Vangelis is a story, from household tensions to everyday joy, everything is wrapped up in the beauty of drama, weaved in his mind and kept there until the time comes for it to become artistic expression. The first outlet of his talent is fed by his passion for discovering a new life for old things, through clothes inspired by unique thrift store finds. It is the decade of wild clubbing, and every outing is a statement, leading to his great success as he decides to experiment with the

seamstresses who frequented his house. His friends stand out everywhere they go, their punk, new-wave and neo-romantic styles turning heads. He studies fashion design, his mother helps him travel to New York, and after opening a short-lived boutique, he gets into styling, soon becoming “Gynaika” magazine’s fashion director. His keen eye for detail often guides the photographers who work for the magazine until, during a trip to New York, his publisher Aris Terzopoulos lends him a camera and he snaps his first fashion editorial, which also becomes the magazine’s cover. It is the start of the fruitful nineties and Vangelis, prompted by the freedom offered to him by Terzopoulos, cultivates his talent further and further, never staying loyal to one style of photography but always falling in love with love itself, living every phase to the fullest. Sculpture, dance, painting; all the arts he loves find their home in one: “Kyris treats the pages of Gynaika like a gallery”, says one of his contemporaries. It is this gallery he doesn’t wish to have to compromise, when things in the media turn from romantic and free, to be guided by marketing. Trying to balance out the shift he starts to feel around him, he takes his own pictures and keeps them in his drawer. From now on, every project he starts has no end, coming in and out of his life, like the Tsarouhis inspired photographs he starts around this time. Projects that accompany his interviews and slowly grant him a place in exhibitions, making way for the next, big chapter.
From magazine pages to gallery walls
Then comes the big bang of the economic crisis. Vangelis locks himself up in his house, his dreams, his work. He starts experimenting with postcards, he has time to look through his work, he prints his first images on cloth. This is the time he spends working closely with Anatoli Georgiev. A portrait with an embroidered African costume is the first spark. “Would you like me to embroider the details on the cloth?” asks Anatoli. “Do you know how to?”, replies Vangelis. “No”. But he did, anyway. And so, it started. Little canvas stretchers and pillows in the beginning, bigger and bigger works later on, start to embody what will be known as “A Voyage Within, Raiment of the Soul…” It is the birth of a new medium that still brings surprising emotional reactions and is a fascinating success around the world. Small exhibitions with Anatoli and their collaborator, Errica Vasileiou, bring him to the National Museum of Greece and its then director, Efthimia Papaspyrou. He requests to exhibit in the museum.
“We don’t rent the museum spaces, but we are interested in your work", she replies, when Vangelis suggests he photograph the museum’s collection. This woman who, after Terzopoulos, becomes the second person to give his art wings and entrusts him with the garments worn 200 years ago by the protagonists of the Greek revolution. What she says to him then, he cherishes to this day: “What you are doing today will still be in museums, 200 years from now”. Covid brings everything to a halt, along with the exhibition that was to be held in the Museum to celebrate the 200 years from the 1821 Revolution. The pandemic, together with his mother’s passing, brings Vangelis back to his inward voyage of working at home, centered around his project, making room for all that would be new, at the turn of the page. Ten exhibitions later (from Kalamata and Hydra Island to the Acropolis Museum in Athens, in Thessaloniki at the initiative of the Papageorgiou Foundation, the Palazzo Bonvicini in Venice and around the world), the time
had come for the next chapter. Centered around his new home spread across three levels and including an atelier, a gallery and a studio, located in Crete,on the foot of Psiloritis mountain, in a Venetian village almost in the middle of nowhere, as well as his family home in Nea Smyrni, that now hosts a bright and sun-filled atelier, a team of eight embroiderers lean on his new work, to be presented in the Eretz Israel Museum in Tel Aviv: For “Light and Thread”, the photographer focuses his lens on the 18th20th century garments and rare jewels from Jewish communities of the diaspora, spread across 24 different countries around the world. A massive collection of 114 garments and shawls, from Russia to Afghanistan, tell their tale through his eyes, bringing everything full circle from that first stitch of “Voyage Within”. Giving life to “old” things that still breathe, listening to the whisper of tradition as it reveals the symbols and talismans hidden yet in plain sight, revisiting everything from the beginning: Life, Art, Love.

Sani Resort is not just an exceptional destination for luxury hospitality; it is a place that actively promotes sustainability and community engagement, integrating the principles of environmental protection and social responsibility into every aspect of its operations. With a vision to preserve its unique natural environment, while delivering an unparalleled guest experience, the resort has been consistently recognised for its dedication to sustainability and robust ESG practices. This commitment is reflected in a wide
range of global accolades and certifications, including multiple Blue Flag and Green Key awards, as well as international standards for environmental and energy management, and carbon neutrality, such as ISO 14001:2015, ISO 50001:2018, and ISO 14064-1:2018.
Significant investments have been made in net zero strategies, positioning Sani Resort among the most environmentally responsible destinations in the Mediterranean. As the first carbonneutral resort in Greece since 2020, Sani sources 100% of
its electricity from renewable sources, verified through Guarantees of Origin. With an ambitious goal to reach net-zero carbon emissions by 2030 -well ahead of the EU’s timeline- and targets to eliminate single-use plastics and achieve zero waste to landfill by the end of this year, Sani continues to lead the way in sustainable hospitality.
Beyond its environmental accolades, Sani places biodiversity protection at the core of its sustainability strategy, leading a range of initiatives to conserve and restore local marine and terrestrial ecosystems in
partnership with scientific institutions, NGOs, and local communities.
The resort lies at the meeting point of three distinct natural worlds - the sea, the wetlands, and the coastal pine forest - each vital to regional biodiversity. Conservation efforts span these protected landscapes and are supported by long-standing scientific collaborations. In partnership with the Forest Research Institute of ELGO "DIMITRA", the resort has established the Sani Environmental Observatory to advance climate change
research, forest regeneration and education.
Part of the Natura 2000 network, the Sani wetlands cover 110 hectares and are home to over 225 bird species, including rare and endangered species that make up nearly half of Greece’s total avifauna. Through a pioneering monitoring programme developed with its scientific partners, the resort safeguards this critical ecosystem. Guests and residents are invited to explore local biodiversity through complimentary birdwatching trails and guided forest tours -creating meaningful connections with nature and fostering a culture of shared environmental responsibility. Another key initiative is the protection of Aegean dolphins. In collaboration with environmental organisation iSea, Sani actively supports the Thermaikos Biodiversity Project, which monitors and documents dolphin populations in the Halkidiki region. To date,
researchers have identified 100 bottlenose dolphins, 50 common dolphins and 28 striped dolphins. Through this partnership, Sani Resort not only advances marine conservation, but also engages families and children in educational activities that foster awareness and respect for marine wildlife.
Furthermore, in partnership with The Bee Camp NGO, the resort has created Greece’s first and largest interactive Bee Spot, dedicated to pollinator conservation and environmental education. This innovative garden highlights the vital connection between bees, humans, and the natural world. The Sani Bee Spot features seven stations that explore different stages of the bee life cycle. Guests of all ages can participate in hands-on workshops, deepening their understanding of biodiversity and the essential role of bees in the ecosystem.

“The ways Sani brings a family together in surprising ways is very special and totally unique in a resort. Nothing beats a family adventure where children and adults learn something new alongside one another. I also enjoy swimming in the sea, walking in the scented woods, and eating at the fabulous and varied restaurants. There is a Peruvian chef at Sani Beach who is out of this world. One of the most sensational meals of my life”.
Every guest at Sani Resort is unique and special. The following individuals, who captured their thoughts and emotions about this earthly paradise, set aside their recognition and fame to share everything they felt while experiencing a sanctuary full of stories and experiences.

“I particularly remember the sea at Sani Resort – it was the cleanest, most beautiful and actually the warmest sea I have ever swum in. I remember it being emerald in colour – really magical. At the time there was a bookshop within the resort, and I did a presentation of my books to the hotel guests. It was fun. Quite international!”.

“Sani Festival has been instrumental in forming who I am today. At 14 years old I experienced live jazz, performed by internationally acclaimed artists, music that informed my musical sensibilities to this day. I remember listening to Cassandra Wilson under the stars, watching the full moon rise as she sang Harvest Moon and getting goosebumps... So many magical moments against that historic backdrop surrounded by the turquoise sea. It’s admirable that Sani has managed to create and maintain a festival of this calibre at such a high level of quality, for so many years. It’s vital to keep culture like this thriving, for us all. What would we be without great music and art?”.
“Why travel to the Maldives when you have the same beaches and transparent waters here. I love Sani Resort as I have never seen a more beautiful beach. So many different places to eat and shop at, beach clubs, and the fact you never get bored, make Sani a great place. The Melissa Odabash shop is of course my favourite. The first thing that caught my attention when I visited Sani was the colour of the water and the chic organic interiors. My favourite memory of the place is the Zip Wiring – I have never laughed so much!”.
“I love swimming, and you have fantastic beaches. I really enjoyed the fish restaurant at the resort, savouring traditional Greek cuisine”.

“Sani itself started out in 1971 as a single, family-owned hotel built on land bought from the Monastery of Stavronikita on nearby Mount Athos. Since then it has steadily grown to become a cluster of five smart hotels and nearly 30 restaurants, set between white sand beaches and pine forests on the verdant Kassandra Peninsula, 70 kilometres south of Thessaloniki. It is luxurious without being ostentatious and is run with slick efficiency. Junior staff stand to attention like ball boys and ball girls, managers carry the calm assurance of experienced umpires”.

“Sani is an all-singing, all-dancing, nothing-is-too-much-trouble behemoth of a place. It is deeply comfortable, which frankly is what everyone needs from a summer family holiday. And of course the Greeks really do love kids”.
“We were excited about the Sani Hill concert and had the opportunity to see a bit of the resort and the beautiful area. I have not been to Greece many times, but I have always been very attracted to it. Its history, its beauty, the landscapes, the crystal clear sea, the food and above all that light. But of course, it's also the people who live here and their unique hospitality, especially also here at Sani Resort”.
CONNIE OSBORNE Editorial Business Director, Harper's Bazaar
“The best way to truly appreciate the scale of Sani Resort is from the treetops. As my husband, son and I embarked on the hotel’s exhilarating adventure course through the forest canopy, we were rewarded with an astonishing view. A thousand acres of trees and wetlands curve around a sparkling turquoise stretch of the Aegean coastline, stretching from the Kassandra peninsula to the pine-topped hills of Northern Greece beyond. Sani is a paradise for adults and children, comprising five individual hotels. There are seven beaches and numerous restaurants boasting Michelin stars. As part of the resort’s annual Gourmet festival, we experienced a truly memorable tasting-menu from the visiting chef Akira Back featuring smoked slow-cooked lobster and a melt-in-the mouth wagyu short-rib – a dish so good my husband actually dreamt about it”.
“Sani Resort boasts high-standard facilities and is an ideal destination for guests who want to train in tennis while also enjoying their vacation. What makes the Rafa Nadal Tennis Center stand out are the values of the people at Sani Resort, who ensure the highest quality of service and hospitality every day”.
Beneath the starlit sky of Sani Hill, a mystical experience unfolds—one where the divine talent of artists with mesmerizing voices meets an almost mythical landscape, seemingly plucked from the pages of a fairytale. Here, the nocturnal horizon embraces the vastness of the sea, creating a setting of unparalleled beauty.

Since its landmark inception in 1992, Sani Hill and its historic tower have served as the breathtaking natural stage for the Sani Festival, which this year celebrates its 33rd consecutive edition. Inspired by a jazz festival that took place in Catania, Sicily, during the summer months, the first Jazz on the Hill event quickly evolved into a prestigious musical institution. With each passing year, the festival grew in scale and prestige, welcoming world-class artists. Establishing a unique identity and earning a rightful place on the cultural map of the country was no small feat for an entirely private initiative. Yet, despite being hosted within a resort, Sani Festival has never been a commercial tourist attraction. Instead, it has remained a true celebration of music and the arts, evolving with curated themes such as Sani Classic, Sounds of the World and Greek Variations. Under the late festival’s artistic direction Olga Tabouri, Sani Hill became a home to legendary artists, such as Cesaria Evora, Lila Downs, Dee Dee Bridgewater, Ismael Lo, Abbey Lincoln, Tito Puente, Hindi Zahra, Liz Wright, Cassandra Wilson and Peter Greenaway—to name just a few. In recent years, world-renowned performers such as Plácido Domingo, Andrea Bocelli, Tom Jones, Sarah Brightman and Bob Geldof were hosted here.
This year, an Incredible line-up of International Artists, 14 Grammy Awards and 36 Nominations is taking the stage.
On July 12th , the Festival opens with
a journey straight to the heart of Havana. Buena Vista All Stars, featuring original members of the iconic Buena Vista Social Club, take the stage to deliver a performance brimming with rhythm, passion and the unmistakable sounds of Cuba. Led by original members of the Buena Vista Social Club, this extraordinary ensemble preserves the legacy of Cuban music while infusing it with a fresh contemporary spirit (Sounds of the World).
On July 19th , we welcome Nora Jones, a voice like no other, who has mesmerised audiences for over two decades with her signature blend of jazz, soul and folk. Her deeply expressive vocals and genredefying artistry have led her to collaborate with legends across the music world and her songs have been streamed billions of times. Now, for the first time, she brings her spellbinding presence to Sani Festival, treating audiences to a night of soulful storytelling, evocative melodies and heartfelt musicianship (Jazz on the Hill).
On July 26th , a performance that will be an unmissable celebration of music, nostalgia and the unstoppable spirit of one of the music industry’s most enduring legends. Gloria Gaynor, with a career span of over five decades, continues to thrill audiences around the world with her powerhouse vocals, infectious energy and timeless hits. Her iconic song I Will Survive became a cultural phenomenon and a global anthem of empowerment, resilience and strength. Now she brings
her electrifying stage presence to Sani Festival, backed by her full 10-piece band (International Sounds).
On August 16th, Gipsy Kings ft. Tonino Baliardo, after a sold-out performance last year, return to Sani Festival for another exhilarating night of passion, rhythm and flamenco fusion. Tonino Baliardo, a guitar virtuoso and the creative force behind the band, has captivated audiences for over four decades with his distinct soundblending traditional flamenco, salsa and pop (Sounds of the World).
On August 23rd , the grand finale of Sani Festival 2025 is a celebration of Greek artistry, paying tribute to one of the country’s most distinguished songwriters, Lina Nikolakopoulou. A defining figure in Greek music for decades, Nikolakopoulou’s words have given life to some of the most beloved songs in modern Greek history, shaping generations through her poetic, emotional and socially resonant lyrics. Treasured vocalists, such as Manolis Mitsias, Glykeria and Pitsa Papadopoulou will be there to perform her songs, and the participation of Serbian composer Kiki Lesendric will bring a unique crosscultural dimension to the night (Greek Variations).
The programme will be further enriched by two more iconic headliners, set to be announced shortly. Scan the QR code for all the details.
The power of his voice transcends emotions and worlds; his personality and the breadth of his majestic existence have overcome borders and languages. His relentless and tireless work has led to global success and recognition. Last summer, as part of the Sani Festival, his celestial voice painted the horizon of Sani Hill with lyricism and poetry.
interview by Aris Kavatzikis
You followed in your parents' footsteps, and so did one of your sons. Has this natural succession, this family heritage, ever troubled you? What I meant to say is that you developed your talent, but never discovered what else you could have done, let’s say, with your life. Do such thoughts ever cross your mind? I couldn't do anything else… music was – and is! - my world. Following in my parents' footsteps was the most natural thing for me. As a child, I spent a lot of time in the theatre with them. They worked a lot, because they had a Zarzuela company: this was a great responsibility. I admired them and I made myself useful, at first by playing the piano. One day my mother found out that my voice was very interesting… and so my story began.
So far, you have 150 opera roles listed in your fascinating journey. What is it that makes you, today, prefer concerts to reappearing in a great theatre, anywhere on the planet, bringing an intriguing role to
life? Is this what they say “at one point you run out of roles to play”? Working for an opera production in the theatre requires many days for rehearsals; at least ten days, eight hours each day. It is natural that I prefer concerts today. But last August, I performed at the Arena di Verona in a Gala entirely dedicated to the Zarzuela with scenes, costumes and ballet. It was wonderful and very special, because it was on that immense stage that I had made my debut some 55 years ago, with Turandot.
You have been performing for over 60 years now. After such a long journey, in your view, what is the essence of success?
I wonder if success is ultimately the love of one’s audience, self-acceptance and acknowledgement or fame?
I think the essence of success is to be able to evoke emotions in the public, and to probably have the public love you back. Fame is an empty box if there is no such exchange.
“ FAMILY is essential FOR ME; it has been an irreplaceable SUPPORT since I STARTED. I can't think of my CAREER or MY LIFE WITHOUT my FAMILY”
Do you think you would be happy and fulfilled as an artist if you weren't equally happy in your personal life, as a human being and as a family man? This had always been the life-long struggle of the unsurpassed diva Maria Callas, who failed - no matter how hard she triedto find a balance between these two aspects of her life.
Maria Callas' solitude has always impressed me a lot. Family is essential for me; it has been an irreplaceable support since I started. I can't think of my career or my life without my family.
You have been at the top for decades. I wonder, are there things that still surprise you? Or is it maybe possible that you continue to surprise yourself?
The emotion and sense of responsibility in front of the public never change, perhaps even increasing over the years. Before going on stage, I always pray and am thankful for still being where I am. At 83 years of age, still able to sing and being happy to do so, is something that goes beyond my dreams.
Could you tell us how you believe it would be possible to attract more people to classical music? Why should classical music lovers always be the minority? I mean, most people will listen to pop or rock music at home, and very few will listen to classical music. Why is that; I think it is essential to spread classical music and give young people the opportunity to get to know it more. What is not yet known, cannot be appreciated. With The Three Tenors we brought the most popular
arias to a vast audience. Many people then also came to the theatre to see opera on stage, to experience a new emotion.
Do you ever wish you could have lived in another era? For example, to have met Verdi and Puccini, composers whose work you have been performing all your life?
Living in another era maybe not... I have lived through multiple beautiful eras. But it would be wonderful for me to meet Verdi and Puccini today, and first say to them: Thank you!!
You appeared at Sani Festival, performing in the majestic natural setting of the Sani Hill. How was this experience for you? What emotions did you encounter? Did you have a special experience, like a vision or dream, while performing under the stars? Coming to Sani Festival was a wonderful experience. I also loved spending a few days in such a beautiful place. The natural setting of Sani Hill offers people a beautiful opportunity to enjoy the music, while remaining in the holiday atmosphere, by the sea and under the stars.
How important, and at the same time how different, is it to perform in a natural setting like Sani Hill, compared to an indoor theatre? Do the sounds of nature become an ally for performers? The theatre was created to enhance sound and all its nuances. But singing in openair locations is beautiful because you can approach a wider audience. There are some technical difficulties, but I love this contact with nature and the natural setting of the Sani Hill. It’s fantastic.
“I LOVE this CONTACT with NATURE and the NATURAL SETTING of theSANI HILL. It’s FANTASTIC”

Virgilio Martínez is a Peruvian chef born in 1977, who has dedicated his career to showcasing Peru's biodiversity and landscapes on the global gastronomic stage. After travelling and working in kitchens worldwide, he returned to Peru and founded Central in Lima in 2008, which was named the World's Best Restaurant in 2023. His "altitude-based philosophy" explores Peru's diverse ecosystems from below sea level to the high Andes. Martínez is also the founder of MIL in Cusco (located over 3,500 meters above sea level), MAZ in Tokyo (which received two Michelin stars in 2023), and co-creator of Mater - an interdisciplinary research organization focused on Peruvian ecosystems and biodiversity. inspiration from Auguste Escoffier while also developing his own interpretation. His innovative approach to sauces incorporates techniques of extraction, fermentation and cryoconcentration to capture and enhance the essence of flavours. In 2008, he founded his eponymous group, which has expanded internationally. Notable achievements include earning three Michelin stars at Alléno Paris in Pavillon Ledoyen and at Le 1947 at Cheval Blanc Courchevel. His restaurant empire has grown to include 17 restaurants with a total of 15 Michelin stars, making him the second most-starred chef in the world. He continues to explore the concept of Pavyllon restaurants and has recently expanded into Japanese cuisine with L'Abysse locations.
Internationally recognized chef, Gaggan Anand, has established himself as one of the most innovative creators in the global gastronomy scene. Through "progressive cuisine", he has developed a theatrical approach to food that transforms every meal into an artistic performance. The multi-talented chef, who combines the qualities of a musician, dreamer and rebel, constantly evolves his art through a philosophy that embraces both failures and successes. Despite his initial plans to move to Japan, Anand returned to Thailand to reinvent his vision. His restaurant today offers a multi-sensory journey that moves away from the conventional aspects of haute cuisine. In contrast to our digital age, Anand offers an analogue experience of theatrical cooking, orchestrating each meal as a holistic experience that combines touch, sound, light, aroma and taste, as well as the element of surprise. His innovative approach has elevated gastronomy into an art that goes beyond simple food consumption. Each dish he creates is part of a broader narrative that aims to move, surprise and ultimately transform perceptions of what a meal can be.

After working at prestigious establishments in Sweden, including Edsbacka Krog and Operakällaren, she moved to New York in 2010 to join Aquavit as pastry chef. In 2014, she was promoted to Executive Chef, and under her leadership, the restaurant earned two Michelin stars that same year, making her the first Swedish woman to hold two Michelin stars and only the second female chef in the U.S. to achieve this distinction. Her cuisine features seasonal Nordic ingredients with light, bright dishes focused on fresh seafood and traditional methods like pickling and preserving.

Your journey in the world of haute cuisine has been filled with challenges. What was the biggest challenge you faced as a woman in a male-dominated field? Typically it is a very difficult environment for everyone but I focused on my craft, remained disciplined, and let my work speak for itself. I was fortunate to have incredible mentors, like Gordon Ramsay, who supported and challenged me. Ultimately, I believe that talent, dedication, and resilience transcend gender, and these qualities are what truly matter in our profession.
Your restaurant, Core, achieved three Michelin stars in just three years. What is the “secret” behind this remarkable success? There’s no real ‘secret’ - it all comes down to hard work, passion, and an unwavering commitment to excellence. At Core, we focus on creating something truly special: a warm, welcoming experience with exceptional food and impeccable service. Every detail matters, from the quality of ingredients to the way we treat our guests and our team. I’ve always believed in staying true to my vision - celebrating the best of British produce and telling a story through each dish. But most importantly, success is never achieved alone. I have an extraordinary team who share the same drive and dedication, and together, we constantly push ourselves to evolve, improve, and innovate.
Your culinary philosophy is deeply connected to the origin and quality of ingredients. How do you choose your ingredients, and how do they influence the final outcome of a dish? For me, everything starts with the ingredients. I’ve always believed that the best
“The MENU at SANI GOURMET was INSPIRED by GREECE’S exceptional LOCAL INGREDIENTS and MY philosophy of SHOWCASING
cooking comes from respecting nature and working with the finest produce available. At Core, we source from the best British farmers, fishermen, and artisans - people who share our passion for sustainability, seasonality, and quality. Each ingredient has a story, and that story influences the final dish. I design my menus around what’s at its absolute peak, allowing the natural flavours to shine through. My job as a chef is to showcase that produce in the best possible way, using technique and creativity to enhance but never overpower its essence. Simplicity, balance, and respect for nature are at the heart of everything we do.
You have traveled all over the world. Is there a particular cuisine that has impressed you and influenced your own culinary philosophy?
Traveling has been an incredible source of inspiration throughout my career, and two cuisines that have profoundly influenced me are Japanese and French. Japanese cuisine has always impressed me with its precision, discipline, and deep respect for ingredients. It’s about balance, seasonality, and allowing natural flavours to shine without unnecessary complexity. The way they elevate even the simplest ingredients to
something extraordinary aligns closely with my own philosophy at Core. At the same time, French cuisine is the foundation of my training and remains at the heart of how I cook. The techniques, the structure, and the understanding of classic flavours have shaped me as a chef. Mastering French cuisine gave me the discipline and knowledge to innovate while staying true to the principles of excellence and craftsmanship. Both cuisines, in their own way, have reinforced my belief that true mastery comes from an obsessive attention to detail, respect for ingredients, and a relentless pursuit of perfection.
What is the greatest reward for you in your work? Is it the accolades, customer satisfaction, or something else?
The greatest reward for me isn’t the accolades or the recognition - it’s the satisfaction of knowing that we’ve created something truly special for our guests. When someone walks out of Core feeling genuinely moved by their experience, that’s when I feel I’ve done my job. It’s about the connection we make through food, the joy we bring, and the memories we help create. Of course, the Michelin stars and other awards are wonderful affirmations of our hard work, but at the end of the day, it’s the people who come to our restaurant and leave with a smile that make all the effort worthwhile.
Last summer, you were featured at Sani Gourmet. What impressed you the most about your experience there?
My experience at Sani Gourmet was truly exceptional, not just because of the incredible local ingredients but also because of the
outstanding team at Sani Resort. From the chefs to the front-of-house staff, everyone was incredibly passionate, professional, and dedicated to delivering a world-class dining experience. Their knowledge of Greek ingredients and commitment to excellence made collaborating an absolute pleasure. The warm hospitality and attention to detail were truly inspiring, and it was a joy to work alongside such a talented and welcoming team in such a breathtaking setting.
What inspired the dishes you created at Sani, and how did you adapt to the local Greek ingredients?
The menu at Sani Gourmet was inspired by Greece’s exceptional local ingredients and my philosophy of showcasing purity and balance in flavours. I adapted by working closely with local purveyors, incorporating fresh seafood, coastal herbs, and regional wines. Dishes like scallop tartare with sea vegetable consommé and poached sea bass with cockles highlight the area’s marine bounty, while desserts such as strawberries and cream feature Greek aromatics. Each dish pays tribute to Greece’s culinary heritage while blending my own modern approach.
You have collaborated with renowned chefs and cooked for prestigious events, such as the royal wedding of Harry and Meghan. How was that experience, and what did you learn from it?
Cooking for the royal wedding of Harry and Meghan was an incredible honour and a truly special experience. It was a moment that brought together the best of British and seasonal ingredients, reflecting the couple’s
values and love for sustainability. The challenge was to create a menu that felt elegant yet natural, showcasing beautiful produce in a way that was both refined and approachable. What I took away from the experience was the importance of collaboration and precision at the highest level. Events like these require absolute attention to detail, seamless teamwork, and the ability to adapt under pressure. It reinforced my belief that great food is not just about technique but about telling a story and creating an experience that is deeply personal and memorable.
Success comes with responsibilities. Do you feel a sense of mission to inspire and mentor the next generation of chefs?
Absolutely. Success isn’t just about personal achievement; it comes with the responsibility to give back. I feel a deep sense of mission to inspire and mentor the next generation of chefs, just as I was guided by incredible mentors throughout my career.
The industry is challenging, and young chefs need support, encouragement, and opportunities to grow. I want to help instill discipline, creativity, and resilience in them while also championing sustainability and excellence in cuisine. It’s incredibly rewarding to see new talent emerge and to play a role in shaping the future of gastronomy.
As the president of Bocuse d’Or UK and a judge in international competitions, what do you think it takes for a young chef to stand out in the industry?
Standing out in this industry requires a combination of skill, dedication, and a relentless pursuit of excellence. Technical ability is essential, but what truly sets a young chef apart is their mindset - passion, creativity, and resilience in the face of challenges. Attention to detail, discipline, and the ability to adapt under pressure are also crucial, especially in competitions like Bocuse d’Or, where precision and
innovation matter.
Beyond that, a strong personal identity in cooking - understanding ingredients, sustainability, and storytelling through foodcan make a chef truly distinctive. Hard work and perseverance will always be key, but those who push boundaries while respecting the fundamentals of great cuisine will go far.
Sustainability and environmental consciousness are now key issues in modern gastronomy. How do you incorporate these principles into the philosophy of Core, and what is your perspective on the future of sustainable gastronomy?
Sustainability has always been at the heart of Core’s philosophy. We work closely with local farmers, fishermen, and producers who share our commitment to ethical and sustainable practices. Sourcing high-quality, seasonal ingredients with minimal waste is essential, and we ensure that every part of an ingredient is used creatively to maximise its potential. I believe the future of gastronomy must be rooted in sustainability. As chefs, we have a responsibility to lead by example - supporting regenerative agriculture, reducing food waste, and championing ethical sourcing. The industry is evolving, and diners are becoming more conscious of where their food comes from. It’s our job to push boundaries while respecting
experiences - where storytelling, seasonality, and a sense of place play a central role. Ultimately, fine dining is about creating memorable moments, and the future lies in balancing innovation with authenticity and respect for ingredients.
How do you manage the pressure and high demands of your job while maintaining work-life balance?
The demands of this industry are incredibly high, and managing pressure is something every chef has to learn. For me, discipline, organisation, and having a great team around me are key. I’ve always thrived in high-pressure environments, but I’ve also learned that balance is essential to longevity in this profession. I make a conscious effort to prioritise my well-being by staying active, spending time with family, friends and my dog Storm, and finding moments to step away from the kitchen to recharge. It’s also important to create a positive work culture where my team feels supported - ensuring they have a healthy balance as well. At the end of the day, passion drives me, but I also believe that to be the best chef and leader, you need to take care of yourself and those around you.
What is the next step for Clare Smyth? Are you planning to expand into new projects or try something entirely different?
the planet, ensuring that fine dining can be both exceptional and responsible.
Gastronomy is constantly evolving. What trends do you see shaping the future of fine dining?
Fine dining is evolving towards a greater emphasis on sustainability, locality, and a deeper connection to nature. There’s a shift towards using every part of an ingredient to reduce waste while still creating refined, elegant dishes. Ethical sourcing and working closely with farmers, fishermen, and artisans are becoming even more essential. I also see a movement toward more immersive dining
I’m really excited about what’s next. We’re opening a new bistro just off Sloane Square in London, which will be a more relaxed and casual dining experience while still reflecting the quality and ethos we uphold at Core. It’s about creating something approachable, where people can enjoy great food in a welcoming environment. Beyond that, we have something even bigger on the horizon - a major new opening in Central London in 2026. It’s still under wraps for now, but it will be a truly special project, pushing boundaries and bringing something new to the city’s dining scene. I’m always looking for ways to evolve and challenge myself, and these next steps are a reflection of that journey.

Swaying palm trees, turquoise sea and green everywhere: the moment I arrived at Sani Resort left me speechless. It was a hot day in August and as a golf cart took me to my room through a cloud of tantalising pine-scented air, I was mesmerised by the lush resplendence of so many different plants. My experience on previous trips had been that the more upscale the holiday and the resort, protecting our environment took a back seat. But Sani Resort in Greece shows that it doesn’t have to be that way; that not only do the two go hand in hand, but they can even complement one another beautifully. Here, nature does not make way for the hotel: the two exist in harmony.
A bouquet of hydrangeas – my favourite flower – was waiting for me in my room. Although it was, of course, a coincidence, I was thrilled by the attentiveness. This warm reception was followed by one moment of joy after another, only one of which was the picturesque view of the sea, standing in magnificent contrast to palm trees and the like, into which the hotel buildings blend unobtrusively. As I enjoyed a typical Greek lunch - oh, these zucchini puffs-, a feeling came over me: a mix of relaxation and security. Part of it was the wonderful mood that radiated from everyone who worked there, everyone laughing and taking the time for a little chat or a quick laugh. It was familiar and warm, perfect for making guests quickly feel welcome. Everyone whom I spoke with during my stay, whether they
were a waiter, housekeeper or driver, seemed to truly enjoy their work there, and it was palpable to me. Many of them have worked there for years and are only too happy to help the hotel’s efforts to give back to nature and protect it.
The Sani Resort is a world of its own, a literal oasis. Although extraordinary quality is the priority when it comes to meals, offerings and service, no one ever forgets the precious value of the piece of earth on which the resort is built. I was constantly astounded at how effortlessly luxury and sustainability seemed to harmonise here. The forest owned by the hotel is kept safe from fires by a private fire brigade and the sea dwellers that call the bay home are lovingly cared for and nurtured.
Sure, there was the gorgeous nature, the homely atmosphere and this feeling of relaxation that set in immediately. I felt as if I’d finally arrived when I discovered my favourite spot in the entire resort: the incredibly soft beach lounger in the Sani Asterias. I still dream about being there, with an ice-cold smoothie in my hand and a view of the seemingly endless bay.
I travel a lot and have had the pleasure of getting to know quite a few fantastic hotels in this world. But there will always be a little piece of my heart left at Sani Resort. Even though I was there alone, never once did I feel lonely. And even more importantly for a woman travelling on her own, I always felt safe. And I was never bored. The number of activities on offer is tremendous. But in the end, one thing beckoned me over and over again: the soft beach lounger. My time there wasn't enough to discover everything, and seldom have I found it so difficult to say goodbye to a hotel. I can hardly wait to come back.

“Swaying PALM trees, TURQUOISE sea & GREEN everywhere: the MOMENT I arrived at SANI RESORT left ME SPEECHLESS”
One of the most vivid holiday memories of my life to date was at Sani Resort. It was there during that year’s Sani Gourmet, more than a decade ago, and I took the first mouthful of a dish that I hadn’t ordered, but was presented to me as part of a multi-course tasting menu. It was a delicately flavoured, perfectly al dente plate of Orzo in Tomata, a restaurant on the edge of Sani’s glittering harbour. Somehow I’d never tasted orzo before – but that dish made quite an impact. It still lingers in my memory to this very day.
That week went by in a daze of delicious meals, with every chef creating something unusual and extraordinary. But whether it’s been during the Sani Gourmet or not, it’s something I’ve come to adore about every trip to Sani Resort. I’ve since travelled with friends and partners, our time consisting of long lazy lunches in the sunshine, meals rolling into sunsets and suppers beneath star-studded skies.
Incredible food has always been the bar I used to decipher whether a holiday is a good – or not so good. For me, a meal has the ability to instantly improve any day. Anyone who knows me, knows that when I talk this way – obsessively, you might say – I’m not just referring to an evening meal. It begins with the first meal of the day, the most important meal of the day. Breakfast. It’s not what you may think. This isn’t about firing up my metabolism, nor the perfect flat white or flakiness of the pastries. But the atmosphere. Breakfast is a meal to ease you into the next 16 or so hours – it has the power to set the tone of what’s to come. Frantic and fraught, or relaxing and replenishing. How your day

starts is the hallmark of a good holiday, and I’ve seen so many - beautiful, admittedly - hotels fall down in this area. Needless to say, the team at Sani Resort gets it right every time.
Of course, my time at Sani Resort hasn’t just been about eating - although it happily could be. Several years back, a friend and I devoured books on the beach, taking breaks from the horizontal position on a lounger to take a pedalo out on the water, diving into the sea to cool off. We toured the nearby countryside, stopping at fields of sunflowers so big and vividly yellow you’d swear they’d been photoshopped. We ventured into the shaded woodland one morning, dressing up as enthusiastic apiarists learning about the Queen Bee and her colony as they furiously make honey. And then, of course, we ate well, multi-course meals of lightly battered calamari, saganaki, freshly caught fish perfectly grilled and doused with olive oil and lemon.
My next visit to Sani Resort will look somewhat different. Meal times will be a little earlier, conversation potentially a little stilted. It’ll be my first time at Sani Resort with my young family; finally, a chance to experience it with the people that Sani is so perfect for. Little travellers. And even with the slightly more stressful dining experience that a toddler can create – a napkin or two tossed to the floor, the same can be said for cutlery, drinks and entire plates (meal times have become quite unpredictable) – there’s one thing I know for certain. My children will dine at Sani Resort as enthusiastically as I do.

Look around you. Listen to the echo of the past as it moves through everything the eye can and cannot see. You are standing on sacred grounds, blessed by ancient tales, and shaped by fascinating myths. This historical sanctuary is yours to explore, and to call your own.
words by Eleni Papaioannou
A land of Gods, Halkidiki is steeped in mythology, as the extremely wild area of Pallini is said to be the birthplace of the Giants, the supernatural beings of divine origins and mortal nature. According to Greek mythology, this is where the battle between the mighty Giants and the gods of Olympus took place, in the time before time. Legend has it that after losing the fight, Enceladus, the Giants' leader, was buried alive in Kassandra. The myth interprets the unearthly characteristics of this area, as Kassandra, submerged in
the centre of the peninsula, is engulfed by the hot sulfur that emanates from Agia Paraskevi, creating an unparalleled thermal spa. At the other end of Halkidiki, Athos peninsula was named after the Giant Athos who, during the same battle, threw the mountain to the Gods, in an attempt to harm them. Sithonia was named after King Sithon, son of Poseidon. Deeply rooted in history since ancient times, the area is ideal for exploring. It’s time to discover the past that will lead you straight to the soul of a mythical land.
During the 7th century BC, the flourishing Cycladic Island of Andros founded not one, but three colonies in Halkidiki: Acanthos, Sani and Stagira, the birthplace of the great ancient Greek philosopher Aristotle. This here, the third colony, offered its inhabitants economic prosperity, due to its location, as it was set near mines and with access to the sea, facilitating commercial contacts with important centres of the ancient world. The temple of Apollo Helios near Nea Roda is one of the most significant monuments in the area.
Some 50 years ago, a country house of the Roman period, with mosaic flooring and many marble architectural details, was discovered on the pine-covered beach of Megali Kipsa in Sani area, Kassandra. The farmhouse was created by Romans and included barns, workshops, and richly decorated residences. Many years later, Christians used the site to build a temple, following many of the architectural patterns of the Roman buildings.
Proudly standing on the hill at the right side of the port at Nea Fokea, facing the Kassandra sea, this stone-built, dominating Byzantine Tower is 28 metres tall, with its crenelations still intact. It was built around 1407 on the ruins of a prehistoric site, and today it is also located near the ruins of a small church dating back to 1868. It is speculated that the tower was created to protect the “metochi” (region, glebe) of St. Paul’s Monastery and its inhabitants from possible raids from robbers and pirates, and it was perhaps connected to Sani
Tower through an underground passage! During the Greek War of Independence in 1821, the tower served as the headquarters of leader Emmanouil Papas, when it was set on fire. Its roof was reconstructed in 1976.
The village of Athitos or Afitos in Kassandra is the place where the Giants were raised, often mentioned by ancient writers such as Herodotus, Thucydides, Xenophon, Aristotle, Pausanias and Strabo: according to the historian, during the 1st century this was one of the five cities of Pallini (as Kassandra was then called), demonstrating its significance. It was first inhabited in 3,000 BC and during the 8th century BC it was chosen by settlers from Evia, who made this place one of the most prosperous cities during Archaic and Classical times. They even established their own coin.
The famous sanctuary of ancient Afitos became home to two Gods with different origins, but very similar traits regarding water and divination. Dionysus, accompanied by his Nymphs, was the first to declare his presence in the sanctuary, choosing the cave, located south of where the temple of Ammon Zeus would be built later on, in the second half of the 8th century BC. Inscriptions on vases and figurines undoubtedly confirm the worship of Dionysus, the one who knew how to interpret the secrets of the gods. At the end of the 5th, towards the start of the 4th century BC, an Egyptian God arrives in the sanctuary of Afitos, to establish a majestic Doric temple and displace his predecessor. Ammon Zeus and the spread of his worship is apparent on the coins of Afitos, which gradually eliminate the form of Dionysus and replace it with that of Zeus himself, accompanied by one or two eagles. These two Gods significantly contribute to the amalgamation of Afitos’ fame throughout antiquity.
Located on the grounds of ancient Mendi, a place that took its name after the aroma of Mint (Menda in Greek), this sanctuary is the oldest temple of Poseidon, which is said to have been active for more than 1000 years. Built by Eretrian settlers, the sanctuary dedicated to their beloved God and protector consisted of four large buildings (the main temple, two buildings on each side of the temple and an arched structure on its eastern side, dating back to the Protogeometric Period (11th – 10th c. B.C.), featuring a tiled floor and pebbled walls). Both the historian Thucydides and 14th-century documents from the Holy Mount Athos refer to the foundation of the temple, while the ashes of the sacrifices to the sea god are still visible in its altars.
With its own laws, an autonomous monastic state has existed for centuries on the overgrown peninsula of Athos, the ultimate sanctuary of the Virgin Mary who, taken by the serenity of the place, asked her Son to dedicate this place to her as her garden. Mount Athos was inhabited by its first monks at the beginning of the 9th century and was gradually divided into twenty autonomous regions, each characterized by a dominant monastery and surrounding buildings. The enormous historical, national, religious and cultural value of the site led to its declaration as a World Heritage Site in 1987.
The Museum of Aigai, located in Vergina, Northern Greece, is a remarkable cultural site that brings to life the ancient kingdom of Macedon. Built near the ruins of the ancient city of Aigai, the museum is dedicated to preserving and showcasing the rich history of this significant archaeological area. Aigai was the first capital of Macedon and the royal burial site of the Macedonian kings, including Philip II, the father of Alexander the Great. The museum displays stunning artifacts discovered in the royal tombs, such as golden wreaths, intricately crafted weapons, and ceremonial armor. Its design integrates the surrounding landscape, offering visitors a unique experience that blends history with nature. Through multimedia presentations, interactive exhibits, and original relics, the Museum of Aigai provides a deep insight into ancient Macedonian culture and its influence on the wider Hellenistic world. It stands as a symbol of Greece’s rich archaeological heritage.
Standing between Macedonia and Thessaly, the tallest mountain in Greece and the second tallest in the Balkans is the sanctuary of the Gods, a divine dwelling that inspired a myriad of myths and legends among its sharp peaks and steep slopes. Home to the twelve gods of Greek mythology, Olympus dominates, imposing and inaccessible to the mortals who want to conquer its peaks and master the impassable grandeur of its nature.
In the words of esteemed Archaeologist Dr. Evi Papadopoulou (PhD in Prehistoric Archaeology from the University of Ioannina), “The Tower of Sani was built on the site of an ancient city, one that had its own acropolis in the classic Ionic style which has been lost in the mists of time. The Byzantine tower was built much later, in 1543, to protect the hill and the surrounding lands - a "metochi" belonging to the Stavronikita Monastery on Mount Athos. Rising over three floors, it was topped with ramparts and offered shelter to those cultivating the surrounding fields. To this day it continues to stand tall over the ocean and is bathed in the same pink sun of every sunset. And what better location to host musicians from across the world at the annual Sani Festival”.
The TOWER of SANI continues to STAND tall OVER the OCEAN, BATHED in the SAME pink SUN of every

The concept of a Sanctuary is deeply personal, private, and non-negotiable. One’s personal retreat is an oasis of thoughts and dreams - the realization of everything envisioned not in words, but in images. Images that shift through emotions and shades, much like the work of visual artist Ilias Kafouros. Wishing you a wonderful summer!
