We are pleased to bring you Around Town’s Summer 2012 issue. Over the past months, while you were all staying warm and enjoying New England’s mild winter, we visited lots of great places, chatted to many interesting people and, as a result, have some wonderful stories to bring to you. Renowned Chef & Author, Sabra Ricci, Chef to the Celebrities, shares with us how she prepares mouth-watering dishes for Hollywood celebrities while keeping a down to earth, healthy attitude all by linking food to astrology (Celestial Chef, page 6). And while we’re on the topic of delicious food, editor Jill Kimmins found time and spirit this winter to dine with ghosts at Windham Restaurant (Windham, NH) (Cozy, Inviting Dining on a Historic Site, page 38). Writer Jennifer Karin spiced up her winter with a visit to Agave Mexican Bistro to sample Mexican fare with style and pizzazz (Authentically Mexican; Authentically Delicious page 13) while writer Corrie Kerr had the chance to wet her whistle at the Ipswich Ale Company, tasting beer and getting to know the locals. (Celebrating 20 Years of Exceptional Craft Beers page 24). On a more entrepreneurial note, Writer Barbara Leech had the wonderful

In 60 Miles in Any Direction I visited my hometown of Everett, MA and spent quality time visiting with family while honoring five heroic service men who fought to give us the freedom that we enjoy today. Going from a family reunion to running around Portsmouth with designer Jennifer Ricci and photographer Jess Gately sampling local restaurant’s signature cocktails was a fun way to spend a Sunday afternoon. Celestial Chef: An Interview with Renowned Chef & Author, Sabra Ricci

S abra Ricci knows what Jim Carrey keeps in his snack

cabinet, how to make Julia Roberts’s favorite salad, and what foods help keep Jenny McCarthy healthy and fit – without even looking at a celebrity magazine. While the lovely Maui-based chef and author known as “The Chef to the Celebrities” has catered intimate dinners and lavish parties in remote locations and on private jets for Fortune 500 executives, Hollywood’s leading stars and some of the world’s most elite families, she couldn’t be more down to earth. Ricci, whose first name is pronounced SAY-bra, attributes her Italian heritage and a strong family cooking tradition to shaping her destiny from a young age. The granddaughter of Adam J. Ricci, one of the Massachusetts veterans featured in “Honoring our Heroes” on page 32, she grew up in the Sacramento Valley where she learned to cook from her maternal grandfather George, a pioneer in the kitchen for his unique creations as well as his role as the primary family cook in a time and culture where cooking was typically a woman’s role. It was his influence that helped guide Sabra’s decision to pursue a career in

food early on. “Growing up, my sister and I spent so much time at my grandparents’ house so I spent a lot of time in the kitchen with my grandfather, and I just knew at a very young age that if I could cook for people I’d always be loved…Make people happy through the food you prepare – it’s really as simple as that.” As a student at California Culinary Academy in San Francisco, Sabra served her externship at Napa Valley’s legendary Tra Vigne restaurant, working for founding chef Michael Chiarello, for whom she later worked after graduation. “He has such a great rustic style and I really love that about him and his food. It was a really fun time to be working for him back then because he had just started his Consorzio line of infused oils which was really cutting edge at the time, something no one else was doing, and now he’s become such a huge success. I really admire Michael.” Sabra’s time at Yes Catering Company in Paris – whose events included parties for Michael Jackson, the Paris Polo Club and Lancôme, and lunches at the Louvre – was another experience she’ll never forget. “One of the continued on page 8

One of Sabra’s most exotic and memorable assignments was preparing a private romantic lunch for two to be enjoyed on the dream-like serenity of a pristine sandbar in the middle of the ocean off Musha Cay, a private island in the Bahamas. For this surprise picnic for two of her celebrity clients, Sabra prepared everything on the island, delivered the food to the sandbar by boat, and worked with the island’s coordinator to set the idyllic scene with orchids and lovely teak furniture for a one-of-a-kind meal in paradise.

things I loved about Paris was the way the French eat and the way they really take it in. Every day when I worked there, even when we had three parties that night for 2,000 people in all, we would sit down at noon and have a leisurely family-style meal with such a wonderful array of food. It was just unbelievable, the pastries, desserts, espresso…They’re very into their traditions and I just love that about the French. Paris is my favorite city in the world. I made such wonderful friends there.” While her experiences in both Paris and the Napa Valley had a lasting impact on Sabra’s culinary style and outlook, it was her move to Maui nearly 20 years ago and her first job on the island as a chef at the former Mana Lea Gardens Yoga Retreat Center where she first gained expertise with special diets – something that makes her sought after by Hollywood’s elite to this day.

“It was mostly vegan and vegetarian cuisine there, which gave me a very good springboard for what I do now, since I work with special dietary needs a lot, especially with celebrities. When people are getting ready for a project or working on a film, their diets are so extreme – I’ve done anything from vegan, wheat-free, gluten-free, and casein-free diets to low-carb, foodcombining diets…anything and everything really.” Since working as a private chef to Courteney Cox, her first celebrity client on the island in the mid 1990s, Sabra’s client list has spread by word of mouth to include Tobey Maguire, Cher, Orlando Bloom, Jim Carrey, Julia Roberts and Jenny McCarthy among many others. Today, she runs Cookin Productions, LLC with her husband Ferenc and a staff that allows her to pull off every job seamlessly – from intimate picnics and family vacation

meals to elaborate luaus and gala dinners for 200 guests. Through it all, maintaining balance and a healthy lifestyle has been a key priority for Sabra. While working at her clients’ private villas on Maui or at destinations worldwide often consists of 10-day stretches of 14- to 16-hour days, her time off in between projects allows her the freedom to enjoy healthful pursuits such as Bikram yoga, cycling


and spinning as well as astrology, an interest that began in her childhood while reading the horoscopes after a big Sunday breakfast with her grandparents. Sabra, a Scorpio, is an avid believer and proponent of astrology and a regular contributor to AOL Living and Tarot. com. She often consults with her own astrologer and her astrology software to help her determine the best time to make an important business decision or to know how communication will be perceived on a specific day. “Timing is everything. I really believe that,” she says. This lifelong interest in astrology, combined with her affinity for delicious, healthful food, as well as the success of her recipes in The Inside Out Diet by Boston-based naturopathic doctor and nutritionist Cathy Wong (Wylie & Sons, 2007), made it the perfect time for Sabra to combine all of her passions into her own cookbook. Her first book, Lobster for Leos, Cookies for Capricorns: An Astrology Lover’s Cookbook (St. Martin’s Griffin/Thomas Dunne Books) debuted on January 3, 2012. Entertaining and informative, the 280-page book combines some of Sabra’s best recipes with enlightening narratives about the attributes and personality traits associated with each sign of the Zodiac, and the optimum foods for the wellness of each. Offering menus and recommendations for each sign, including stressreducing foods for perfectionist Virgos, romantic bite-sized morsels for sensual Scorpios, and brain-power foods like acai berries and walnuts for cerebral Aries, the book offers practical, informative nutrition information that will benefit people from all signs, such as tips about foods rich in anti-oxidants and superfoods like almonds, salmon and olive oil that promote the health of specific parts of the body. All of this is done with Sabra’s signature flair and

recipes that her clients love, such as the Lemon Thyme Roasted Turkey Breast with Butternut Squash, a favorite of actress Jenny McCarthy, who wrote the book’s foreword. Sabra also infuses a dash of Hawaiian flair into her menus with recipes such as the Kona CoffeeRubbed Flank Steak, Smoked Molokai Sweet Potatoes and Coconut and Macadamia Nut Crusted Shrimp with Lilikoi Cocktail Sauce. “I’m really a true believer in having your whole chart done,” says Sabra, who includes an additional list of resources in her book for those who want to delve further into astrology. “For my book, I look at it as more entertainment than how to live your life,” she explains. “It’s a lot of fun and there’s a lot to it, so even if you don’t believe in astrology, the foods and nutrition tips are really applicable, not to mention there’s some really great recipes – tried and true ones that are alltime favorites, and variations of things I’ve done…I think it’s a fun gift and something that people will really enjoy.” Sabra’s second book, the next in her series of astrological cookbooks, slated to debut later in 2012, is about how to romance the sign of your partner or love interest, which is a topic that comes quite naturally to her. “I’m a romantic at heart,” she adds. While she has cooked for some of the world’s most famous people in some of the most beautiful places on earth and has been highly celebrated for her divine culinary skills, Sabra loves nothing more than traveling and enjoying the great cuisines the world has to offer. As she reflects in her book, however, after all these years, no matter where she goes, nothing can top the taste of her dear Grandpa George’s special lasagna, made inside the happy home where her love of cooking first began.

Walking up to the three-story townhouse, with its twinkling white lights, large cathedral windows, and romantic wrought-iron railings, it’s easy to imagine the grand haciendas of Colonial Mexico. Welcome to Agave, an authentic Mexican restaurant located in historic Newburyport, and the perfect setting to experience a cuisine centuries old. “It’s been my dream to bring real Mexican cuisine to New England,” says the restaurant’s founder and owner Dawn McCandless, a California transplant who grew up with the aromas of traditional Mexican fare. “And it continues to be my dream job every day.” Inside, exposed brick and polished wood surround festive, well-dressed patrons enjoying Agave’s famous margaritas, or another cocktail from the restaurant’s full bar, with the option to order appetizers or a meal from the restaurant’s fresh, traditional menu. Proceed upstairs and the second floor offers a cozy and elegant dining room, with velvet curtains and amber chandeliers. Here, long-time celebrating couples and first dates share quiet conversation over roasted poblano chilies stuffed with chicken and covered with a lightly fried meringue, or the died-and-gone-to-heaven churros, the Spanish version of the deep fried donut, resplendent with cinnamon-sugar and chocolate sauce.

The third floor, a favorite of Agave amigos, features another handsome full bar, as well as dining tables, making it the perfect gathering spot for groups to share the homemade nachos with refried beans and melted Chihuahua cheese, or the Michoacán style carnitas, shredded pork slowly cooked in a copper pot and served with fresh salsa verde. Agave’s signature presentation is homemade guacamole as fresh as you can get it. The ingredients are presented on a platter, making sure everything is to your liking, then prepared tableside with a traditional Mexican mortar and pestle. “We had to calibrate the heat for New England taste buds,” says McCandless. “But it’s still very authentic. No Tex-Mex, no pre-fab tortillas, no canned anything.” Late at night, onions, garlic, chilies, and oregano continue to fill the kitchen air while beans soak on the stovetop, and brisket soaks in the oven. The kitchen is still hard at work, much like the tireless McCandless, a single mom to two active young boys. “Our kitchen never sleeps,” says McCandless. “When the last satisfied customer has left for the evening and the doors are locked, we’re preparing for the next day’s meals.”

An Anniversary Announcement! Dawn McCandless is marking the tenth anniversary of Agave with a celebration… and a hammer. “We are breaking down the wall and expanding Agave into the building next door,” explains McCandless.

Now in its tenth year, Agave’s Newburyport location is packed most nights, with many locals as well as people traveling from surrounding towns. It led McCandless to open a second location in Portsmouth, NH three years ago. Now, both restaurants are a favorite foodie destination. McCandless is as warm and friendly as the restaurant she runs, and she encourages customers to let her know when they are dining, so she can come by and say hello. She hopes her two sons will grow up learning and loving the restaurant business as well, and will carry on the Agave tradition. How does the overwhelming acceptance of Agave’s authentic Mexican cuisine in the heart of a quintessential New England town make McCandless feel? She glances around the lovely restaurant she built. “Authentically happy,” she says with a smile.

The restaurant will soon have an expanded first floor bar, with custom waterfalls, new hardwood floors, and windows overlooking both Inn and State Street for an open-air feel. Patrons can enjoy a drink before heading to a table upstairs, or eat at one of the bar tables in the expanded area. Outside, more tables will be added for al fresco dining, including Agave’s unique weekend Mexican breakfast, complete with “Good Morning” cocktails, beginning at 9:00 a.m. The expansion will be christened with a weeklong fiesta, inviting friends of the restaurant to enjoy specials and complimentary treats. “We want to give back to the community that’s been so supportive and welcoming of Agave,” says McCandless. After 20 years of successfully managing a $63 million budget for Massachusetts mental healthcare facilities, Connie Doto knew it was time for a change. In fact everything about Doto’s business plan is focused on making it personal. “A home is a very personal thing to people. It is memories and dreams and people want to be heard and have their needs met when buying or selling a home,” she says. “This is where we stand out and what makes our agency different.” The Connie Doto Realty Group opened its doors at 119 Pleasant Street in October of 2010 and has since seen tremendous success and growth in business as well as more agents coming on board. Doto says that each of the seven experienced agents she works with came to her seeking a more “personal relationship - customer focused” agency. “We are all on the same page and we work together to make the customer’s needs our priority,” she says. As for the timing of spreading her wings and opening her own agency, Doto says many people thought that with the challenged real estate market, she was a bit crazy to make the leap to real estate business owner. When Maureen Christilles, MS, APRN and Valerie Varela, MS, APRN met back in 1993, they were starting their first graduate school class to become nurse practitioners. As the duo began to talk about goals, careers and their life paths, they soon realized they each had the same calling — to provide wellness through integrative health care that recognizes the entire person, not just the symptoms. “That first day at Rivier College we actually agreed that maybe we should go into business together,” Varela says. “We knew it then and here we are many years later doing exactly what we both felt so passionate about.” Christilles and Varela, both board certified Family Nurse Practitioners by the American Nurses Credentialing Center (ANCC) went to work in a traditional medical practice after graduation but found that their true calling would once more present itself. That is how they came to open their own practice, Londonderry Nurse Practitioners Whole Health Consultants, located in Londonderry Square. “It all started because one door closed and another one opened, as I see it,” Christilles says. Back in 2003, both Christilles and Varela were working for a successful medical practice and implementing integrative, holistic care to patients, page 20 • Around Town In New England Magazine • Summer 2012

but the Board of Medicine began to enforce restrictions on the physician’s office to keep with standard medical practices. In other words, Christilles says, alternative medicine such as looking at the use of herbal remedies or nutrition was not going to be allowed. So these dynamic ladies, rather than conform, decided it was time to be true to self, and hang their own shingle together. In January, Londonderry Nurse Practitioners will celebrate their eighth year helping people to heal and to achieve wellness. These medically trained providers stand by the belief that by combining medical knowledge with the use of pharmaceutically prepared naturopathic supplements and herbs, patients can achieve a better level of health and actually take control of their own healing process. “Our philosophy of integrated health is that ‘medicine’ is not bad, but it does not put all situations back into balance,” Christilles says. “The profession of nursing essentially started

Less than a mile away from quaint downtown Ipswich in an unassuming, utilitarian warehouse is where the magic happens. For two decades, the Ipswich Ale Brewery has been a fixture in the coastal North Shore town, known for its selection of barrel-crafted microbrews that have garnered loyal fans across New England and beyond. Inside the brewery on Hayward Street, the dedicated, selfdescribed “punk rock” brewers craft each ale with pride. The building is also home to Mercury Soda Pop, where caffeine-free sodas are made with real cane sugar in flavors such as root beer, cream soda, birch beer and many others named for Ipswich Ale’s parent company, Mercury Brewing and Distribution Co.


“A solid reputation, high quality and pleasing taste keep the beers selling year after year..” Almost all of the beer produced by the company has the highly recognizable Ipswich Ale Brewery logo – an illustration of an 1800s sailing ship befitting the historic area where the beer is produced. The company brews a variety of awardwinning brews including their signature Ipswich Original Ale, IPA, Oatmeal Stout and various seasonal brews and special editions like their 20th Anniversary Imperial Pale Ale which was introduced in spring 2011. The widely popular ales can be found in around 300 restaurants and pubs in Massachusetts alone. Without a doubt, the Ipswich Original Ale is the most successful product. “The style is that of a pale ale and because of that, it has a broader appeal than most other styles,” says James Dorau, Operations Manager and Brewer. “It has a really nice balance of malt and hops, with a slight bitterness and mild fruitiness.” A solid reputation, high quality and pleasing taste keep the beers selling year after year, and people often go out of their way to recommend the beers to their friends. As an added benefit, the beer produced in Ipswich is all vegan-friendly; no animal products are used in any of the beers. “There was no real intention of brewing a vegan-friendly ale, but rather a decision not to use isinglass – a product derived from dried swim bladders of fish – in our beer,” Dorau says, describing the

One of these barrels can make up to four hundred and twenty cases. common additive used to settle out and weigh down the yeast cells in cask ales to help ensure a clear pint. Ipswich has always produced an unfiltered, unpasteurized ale since its beginnings in 1991, and all of the beers are brewed with local water, which according to Dorau, makes all the difference. “Ipswich has excellent water similar to Burton, England, which is perfect water for the brewing of pale ales,” he explains. A tour of the brewery, available exclusively during special events, can give visitors a chance to learn just how the distinctive water transforms itself into unfiltered, unpasteurized ales, seeing the process first hand amidst the churning of brewing machines and the rhythmic clank of bottling appliances. The company recently unveiled its limited edition Local Harvest 5 Mile Stock Ale, made with at least 50% Massachusetts ingredients and at least one ingredient from within five miles of Ipswich (in this case, local Cascade hops from the brewery’s own local hop yard). At the 5 Mile release party in late October, employees were cheerfully serving hearty chowder, oatmeal-stout-infused mustard and freshly brewed beer to visitors who came to be the first to bring home this new single-batch brew. continued on next page


Adam Meuse, founder of BrewEngland.com, a web site dedicated to New England beers, breweries and brewpubs, speaks for many in recognizing that Ipswich Ale sourcing local hops and grains is good for the business and the customer. Meuse says he “would love to see” more breweries try to create locally sourced products like the Local Harvest 5 Mile Stock Ale. “It’s a win-win situation for both Ipswich and the other companies which they partner up with,” he says. The green initiative creates “a better bond within the communities surrounding the brewery.” In fact, the brewery is so committed to Ipswich that their new brewpub will be located there. “It’s a great location with easy access to Boston, Gloucester and Newburyport,” Dorau page 26 • Around Town In New England Magazine • Summer 2012

says. “Ipswich also gets a good deal of visitors to Crane Beach, the best beach on the North Shore. It’s a perfect town to be associated with,” he adds. The company, headed by President Rob Martin, who bought the brewery in 1999 after working there in nearly every capacity since 1995, is looking to relocate because the current brewery, at approximately 11,000 square feet, is bursting at the seams. To keep up with demand, the current location will brew more than 20,000 barrels this year, not including 1,000 barrels of soda. The future brewpub will be three times the size of the current brewery and sell food that complements the distinctive ales. Additionally, tours will be offered on a more regular basis in the new location and more bottles will be sold in a new retail space along with hip, branded apparel. continued on next page


The Tapmobiles: Draught Brew That Comes to You Need a keg? How 'bout a whole vehicle? Ipswich Ale Brewery will deliver its suds right to your door – and do it with style in one of their signature Tapmobiles. Renting one of these vintage, brightly colored ale-dispensing vehicles is as easy as making a phone call or emailing the brewery. The first Tapmobile was created – or reborn – out of Yankee ingenuity from its former life as a delivery truck in 2002, following a close call for Operations Manager and Brewer James Dorau. “We had to retire the 1965 Grumman Kurbside from its job (of delivery truck),” he explains. “It was dying a slow death, and I was nearly killed when getting off of the highway, only to discover that the brakes were gone on it. Good times!” he recalls. Instead of junking the brakeless truck, Dorau and owner Rob Martin decided to use the van as a “tap box” for outdoor festivals. The idea to rent out the eight-tap truck (now dubbed “Thing”) followed shortly after. The truck can hold 14 to 16 kegs in total and root beer is certainly an option for at least one tap. Currently, the brewery has a fleet of three Tapmobiles: one can easily be rented for a wedding in Gloucester while another can complement a BBQ in Saugus on the same day. After the conversion of the Grumman, a 1951 Ford F-1 pickup was the next vehicle to morph into a three-tap Tapmobile and a 1948 Dodge Route Van became another eight-tap dispenser. Although it’s a time consuming process to convert any automobile into a roving tap dispenser, Martin and Dorau trust Stu Beaulieu of Auto Body Restorations in Salem to handle the body work on the aging cars. Brewery workers do most of the engine work themselves while Beaulieu works on lovingly restoring and painting the antique cars. The vivid retro logo artwork is created and applied by Ipswich's Cape Ann Sign. With shiny red and white surfaces and funky antique bodies, the Tapmobiles gather lots of attention when put to work at the brewery’s annual Harvest Festival in September and at local events such as The Essex Clam Fest, Essex Music Fest and the Gloucester Harbor Fest. Dorau says that one more Tapmobile will be ready to join the fleet soon and six more should evolve from scrap metal to tap peddlers before long. In particular, a 1939 aluminum art deco delivery van is waiting to be souped up. “Can you really have a Tapmobile fleet without an Aluminumart Deco bus? In a town once known mainly for its famous beach and legendary clams, the brewery has made Ipswich known for high quality beer that is in equally high demand. According to Anthony Hurrell, Head Cellarman, the locals are hopping about the plans for the brewpub. “So many people in town are interested in the brewpub,” he says, recounting one day when he was driving around town in one of the brewery’s Tapmobiles (vans that dispense ale on the spot) and was surprised by a resident who knocked on his window just to ask whether or not the brewpub was open for business. Officially, the Ipswich Ale Public House brewpub is slated to open in fall 2012. When it kicks into high gear, there will likely be patrons lining up for a table, taste and tour. Appropriately, the new address of the Ipswich Ale Public House will be 2 Brewery Place. “People will have a nice place to see the brewery, dine, and taste the many ales we’ll have on draft. The additional space will allow us to grow and keep up with increased demands,” Dorau says. Perfect for when thirsty customers come knocking.

Ricci, Torpedo Mate First Class, U.S. Navy. Like so many other war veterans, my dad didn’t speak much about the war. Presenting the wallet to Mrs. Jennie Ricci, a widowed mother of seven, the marine said that he didn’t know the disposition of her 18-year-old son, Thomas, other than that he was missing in action after the battle. The wallet had been found and sent back to the States. Thomas William Ricci, like many boys, including two of his older brothers who had already enlisted, was anxious to join the war effort. The day after his 17th birthday, he convinced his mother to sign the Consent of Parent to Enlistment of a Minor in The Marine Corps Reserve. Private Ricci then was assigned to Company A, Fourth Marine Division, and sent overseas. Thomas’ official specialty was Light Machine Gun Crewman, but he was also a messenger. That sounds simple enough, until you realize the messages he was carrying were battle orders, and his route was from foxhole to foxhole. Messengers, who were targeted by the enemy, were said to have short life spans.

On February 19, 1945, Company A became part of the spearhead assault force on Mount Suribachi. Before reaching the beach, the men were told to throw their belongings, such as wallets, into the ocean. Tommy, as he was called at home, and his fellow marines helped capture the Iwo Jima Volcano Islands. Then on February 23, Tommy watched as the first American flag was raised on Mount Suribachi. On February 26, Private Ricci was wounded in the hand and separated from his outfit. At this point, only 28 men of the approximately 250 in the company had

survived. For three days he wandered on the battlefield, hiding from the enemy, trying to find anyone in his company, and bargaining with God to let him live. At 52 Rock Valley Avenue, Jennie Ricci’s letters to the Marine Corp had generated only perfunctory responses, saying the Corp had no news of her son and would contact her when it did. After the return of Tommy’s wallet, Mrs. Ricci visited her local priest to prepare services for the dead. But then, a miracle: A letter written in a scribbled hand—Tommy’s hand—arrived from a military hospital. Tommy was alive and would be coming home. On March 26, 1945, Private Thomas William Ricci was awarded the Purple Heart for wounds received in action against an enemy of the United States. He was honorably discharged in September 1945, by which time he held the rank of corporal. After his Military Discharge, Tommy spent some time in Everett. He then moved to Detroit, Michigan, where he married and lived out the rest of his life. But there were plenty of trips home to Everett where Tommy, who didn’t have children of his own, became a favorite of his many nieces and nephews. Thomas William Ricci died July 14, 1992. He lies in peace at the Military Cemetery in Battle Creek, Michigan.

The Windham Restaurant: Cozy, Inviting Dining on a Historic Site

Early in the nineteenth century, a gentleman named Isaac Dinsmore built a stately two-story colonial house on a plot of farmland in Windham, New Hampshire – a spacious home where two generations of his family would eventually live out their lives. Today the 200-year-old Greek Revival structure, one of the town’s oldest buildings, is home to The Windham Restaurant, its pristine brick exterior and distinctive mansard roof welcoming visitors from its perch on the hill overlooking Route 111A. “We fell in love with the building – the historical feel of it, the detail,” says chef-owner Vessarios Liakas of the time he and his aunt and business partner Loula spotted the circa 1812 structure for sale in 2001. After running previous establishments in Boston, Vess and Loula saw this venerable landmark just minutes from Route 93 as the perfect site for their new restaurant. The two purchased the property and quickly set to work in converting the building, a former French restaurant, to suit their needs, while preserving the architectural details of the original home. Today, past and present seamlessly combine inside The Windham Restaurant, which celebrated its 10th anniversary in November 2011. The twostory restaurant offers a cordial atmosphere that unites traditional historic elements with clean, classic lines. Elegant yet understated in a warm palette of mocha, wine and beige, the refined décor is set off by crisp white table linens and original millwork that adorns the interior rooms, doorways and windows. That doesn’t stop The Windham from coming out with some of the most inventive, flavorful dishes in the area, like the herb-marinated pork tenderloin with maple-glazed cranberries and the Seafood al Forno: baked haddock enhanced with shrimp, scallop, crab and lemon pesto. The restaurant’s signature dish is its legendary rack of lamb, tender and flavorful with classic Mediterranean herbs. While Loula, who is from Corfu, Greece, modestly says she doesn’t cook at the restaurant, it’s clear that her talent and expertise is evident in every aspect of the business, where family heritage is a key to The Windham’s success. In fact Vess’s brother, two sons and a cousin also work at the restaurant. The outstanding cuisine and unique historical atmosphere make The Windham Restaurant a popular spot for functions of up to 40 guests, such as retirement and birthday parties. It’s an especially popular spot for brides- and grooms-to-be. “We do a lot of rehearsal dinners here, especially in the summer,” Loula adds. Around Town Takes on Some of Portsmouth’s Most Creative Concoctions at the 5th Annual Cocktail Competition

hen we started out at the Sheraton Harborside with a Pink Flamingo cocktail in hand while sporting pink flamingo headbands, we knew it was going to be a great Sunday evening. OK - maybe the pink flamingo headbands didn’t last long, but they definitely got us into the festive spirit of the event. Weeks before, when I asked our designer, Jen Ricci, and photographer, Jess Gatley, if they wanted to do a road trip, they jumped at the chance. Once they found out that they had to go to eight local restaurants and pubs and try a signature cocktail at each, their assignment suddenly got much more interesting. So with designer, photographer and Around Town supporter Diane Wasilisian of DesignDotCom Inc & The Social Expert, LLC in tow, we hit the streets of Portsmouth on June 5th, along with a couple hundred other cocktail connoisseurs, in search of the best cocktail at the 5th Annual Portsmouth Cocktail Competition. Fat Belly’s White Sangria, The River House’s Mainely Blue, Portsmouth Gas Light Co.’s The Bucket, Sake Japanese’s Mai Tai, Dolphin Strikers’ Pink Lemonade, The Page’s Infused Margarita, The Chef’s Table’s Uhn Reel Margarita and the Sheraton Portsmouth’s Pink Flamingo…we tried them all. We even went back for seconds of some on the pretense that we

needed to get a really good photo for the magazine (we really are perfectionists!). It’s even possible we set a record for the number of times “Cheers!” was said in one evening, but to stay in this competition, we had to hold our own. Once we finished our tour of all eight establishments and sampled their signature drink, we all made our decisions and voted. Regardless of which cocktail each of us liked best, the unanimous vote was that this was a really fun event and we can’t wait for the 6th Annual Portsmouth Cocktail ­— Elizabeth Souza, Publisher Competition on June 3, 2012! Newburyport Emergency Practice Provides Vital Expertise When the Unexpected Happens

watching a small rash on his young son’s jaw. If the rash began to spread down the neck, and his son’s fever spiked, Sidford would treat his son for the potentially fatal skin infection at a nearby hospital. training, most parents wouldn’t know how to navigate foreign healthcare systems, call for medical transport or arrange for a medical evacuation. “Add a language barrier, and the accounts of medical horror stories are too many to mention,” says Sidford, referring to one medical facility in Greece that treated a wound with ketchup. This experience teaching and practicing emergency medicine in remote and difficult conditions led Sidford to found Black Bag, a private emergency medical consultancy that provides individuals and families with immediate care guidance, regardless of their location in the world. “Before my clients board the plane, I research where they are going, so in case of a heart attack, broken bone, food-borne-illness, or mysterious insect bite, I know the most reliable medical facilities nearby and the experts to treat them,” says Sidford. “If they need to be evacuated, I oversee every step until they are in the hands of the best doctor available.” He also hands them the Black Bag, an emergency medical kit developed by Sidford with private security experts, and personalized with prescription drugs and items necessary for their destination, like water purifiers and high-powered flashlights, before they embark on their trip. “Everyone loves the bag,” says Sidford.
