The sublime skills of the silversmiths

Georg Jensen, a name globally synonymous with Danish design for over a century, will provide visitors to its grand flagship store at Amagertorv Square with a demonstration of the craftsmanship required to produce its luxurious silver pieces.

It’s a unique opportunity to appreciate the inner workings of the iconic brand and all part of its 110th anniversary celebrations, which will include other special events and the release of limited edition pieces.

The silversmiths have trained for four years as artisans to learn their craft, and on our visit to their workshop, it was fascinating to get so close to the process and to be able to appreciate the detail and precision required to produce each design.

Deep-rooted passions

The piece de resistance is the custom-made table: a collaboration between Georg Jensen and the acclaimed Hørsholm-based designer and cabinet maker Laura Bergsøe’s. Using 6,000-year-old bog oak and elm wood, Bergsøe collaborated with the silversmiths to take moulds of the oak surface and fill sections of the pitted surface area with solid silver for the appearance of “silver floating in the veins of a tree, bubbling out of holes and cavities”. The innovative design of the table is an impressive work of art, which is fitting for the store and well worth seeing.

an aladdin’s cave Whether or not you’re a lover of Danish design, it’s impossible not to be impressed by the gleaming collections on display and the newly renovated store. Every minute detail in the headquarters could be described as the stylistic excellence you’d expect from the design institution: from the custom-made Ege magnolia patterned carpets and the long sleek Finn Juhl exhibiting table, to the unique Vibeke Skar porcelain ‘knitwear-inspired’ lamps illuminating the collection.

Visitors also have the opportunity to learn about the history of Danish design on a tour that includes a rare display of silverware pieces designed and crafted by Georg Jensen himself, displaying his talent as both an artist and craftsman. Jensen’s work sits alongside master craftsman Harald Nielsen’s work from the early 1900s and Sigvard Bernadotte, the ‘Design Prince of Sweden’, from the same era.

The store holds an array of beautiful vintage Georg Jensen pieces, sourced from private collectors over the last decade. The second level displays two leather chairs and antique mahogany furniture cabinets from Georg Jensen’s original store in 1908. The varied collection features silver pieces and jewellery from the past century, providing a visual story of the evolution of Danish design, from art nouveau to contemporary.

As well as the close-up demonstration, the silversmiths discussed their passion for a craft passed down from generation to generation, the technical skill required to form the pieces and the process of bringing designs to fruition, from paper to silver. The silversmith craft is laborious. One silver platter takes approximately ten months to complete, executed with countless targeted hammer strokes, each requiring perfection.

In July and August the Gala Hall and adjoining rooms will be open to the public.

The rooms are considered to be some of the most beautiful interiors in Denmark and still serve as royal chambers of representation.

The rooms represent the zenith of Danish neo-classical décor, with colour schemes by artist Nicolai Abildgaard (1743-1809), whose bold choice of tones reflected the taste of the time in Europe’s trendsetting circles. The celebrated sculptor Bertel Thorvaldsen (1770-1844) created two large figures which decorate two recesses in the Gala Hall.

The palace was inhabited by Christian VIII from 1805 until his death in 1848. Before then, his father Prince Frederik, who was known as the Heir Presumptive, lived at Amalienborg and even had a throne chamber, which stands intact today and is part of the tour.

Each room on the beletage has its own personality. There is a room in Pompeian style, a neo-gothic library and the Cabinet of Orders, where the Order of Dannebrog and the Order of the Elephant are exhibited. A remarkable part of the visit is the view of the palace square with Saly’s equestrian figure in the center.

The beletage forms part of the visit to the museum in Christian VIII’s palace, which tells the story of royal life from past to present. The museum features the private rooms of the latest kings and queens, with original furnishings and art, while another part of the exhibition gives an insight into the 21st century monarchy and its many traditions. During the rest of the year, the beletage is open to the public on Saturdays.

Happy ever after on this fairy-tale gastronomic journey

“Our philosophy is to share our stories and emotions,” explains Jakob Mielcke, the owner and executive chef of Mielcke and Hurtigkarl.

“Just like in the fairy-tales you’ll never know what to expect.”

Jakob wasn’t just reeling off words when he made this statement. From our first glass of R&L Legras Blanc de Blancs Champagne in the pavilion, to the last homemade beer-fudge chocolate, these words rang true.

Situated in Copenhagen’s stunning Frederiksberg gardens, the surroundings are an integral part of

the organic experience. And while the gardens may be cultivated, Mielcke aims to inject as much “organic wilderness” into his cuisine as possible.

This was evident from the moment we sat down with our starters in an outdoor terrace reminiscent of those in Provence. We enjoyed leeks rolled with pistachios and puffed potato, freshly-picked carrots with a carrot cream, and lovingly crafted ‘leaves’ made of sea-buckthorn with garden herbs.

And just as we thought we were on a journey through the spring garden, a Japanese street food called Takoyaki was served up. This was my absolute favourite and a fine example of Mielcke’s aim to present elements that are “playful and in the moment”.

After moving indoors here, you quickly notice that Mielcke’s obsession with nature has been captured in the interiors. The walls are artfully painted with greenery, and if you look closely, you’ll even notice the small plastic garden bugs too.

Having been spoilt by the starters, we moved onto the fish and meat courses. Mielcke is on a mission to play with people’s senses and the dish that certainly embodied this was the asparagus.

Surrounded with a green curry sauce and a generous dollop of cream infused with Italian pork breast, the dish etched a place in my mind due to its sheer creativity and complexity.

After five fine courses we reached a main of pork infused with a richness that I’ve rarely tasted. Fer-

July/August 2014 mented in miso for two days, then cooked over charcoal with black garlic, it came served with hearty flamed overtones. This was offset with a salad component that was tart, fresh, and earthy.

Now while the food here is magnificent, the wine pairings are also on par. The delightful sommelier, Jose Santos, fills the room with a charm and a passion for his craft. He sources the most in-demand vintages from around the globe and works closely with the chefs on a daily basis. After a night here, it’s certainly clear why this restaurant was awarded ‘Best wine experience 2014’ by White Guide Denmark.

The desserts here are made for the moment. Take the Woodrof for example. Made with apples, almonds and wild herbs, it was fragrant and raw.

The dessert wine – a 2013 Spätlese Burgenland Weingut Kracher – further enhanced the dish. An Austrian drop made with Chardonnay and Welsh Riesling, it was acidic yet sweet.

A dining experience with Mielcke and Hurtigkarl is one of those fairy-tale gastronomic journeys with surprises at every turn. Never have I witnessed such a creative expression of food that left such a strong impression. I can’t recommend this place highly enough. It just might change your outlook on food forever.

Esplanaden 21, Cph K; lumskebugten.dk Shielded by Copenhagen’s old custom house and the grand headquarters of Maersk, Lumskebugten is not immediately obvious to either locals or tourists. This makes the old cliché ‘a hidden gem’ very apt, because once discovered it won’t be forgotten. Vegetables have played a dominant role in the cooking of Lumskebugten’s owner, Erwin Lauterbach, throughout his long career. And at Lumskebugten, seasonal vegetables are used both as central ingredients in the delicious dishes and as informal, stylish decorations in vases, which means that both the restaurant’s menu and decor change according to the season.

So I was inspired upon the discovery that Krogs is upholding the establishment’s rich seafood tradition by offering consistent, delicious, classic seafood in a relaxed yet refined brasserie setting. Tourists can delight in the novelty of enjoying fresh Danish seafood in a historic setting that was once the centre of the city’s harbour side fish market without forgoing the opportunity for a Copenhagen-worthy gastronomic experience right in the heart of the city.

Wildergade 10, Cph K; kadeau.dk Everybody talks about Nordic cuisine, but why not make your experience of the sought-after kitchen a bit more local? At Michelin restaurant Kadeau they present the Nordic cuisine with a special focus on the terroir of Denmark’s sunshine island, Bornholm.

The menu, inspired byBornholm’s specialities, is centred around conserved summer ingredients. The restaurant pretty much oozes Bornholm. The colourful plates are from a local ceramic maker called Lov i Listed, the decorations both in the restaurant and on the plates are inspired by the terroir, and the toilets play natural sounds from the island.

Smørrebrød – don’t try saying it – just taste it

Smørrebrød means “open sandwiches” and, as the name suggests, it isn’t just one dish but many. In fact, it embraces a vast number of variations of fish, meat, salads and vegetables and cheese on rye or white bread.

Real smørrebrød is a pleasure to the eye and to the palate. But be careful - smørrebrød comes in almost as many different sizes as there are variations and it is more filling than you might think!

The Danes eat smørrebrød all year round as a traditional lunch dish. It is also popular on festive occasions together with the family or friends. And smørrebrød is almost always accompanied by Danish beer and schnapps.

Copenhagen boasts a whole range of restaurants which specialise in smørrebrød – typical Danish open – faced sandwiches. They are ancient, traditional establishments, often located below street level in cosy basements and cellars. Service at Copenhagen smørrebrød restaurants differs in style from that at normal eating places and can be an experience in its own right!

The cuisine is typically Danish and the restaurant has always made it an honour to serve good, traditional Danish food at reasonable prices. The menu has extended to include a range of foreign dishes which have become part of the Danish kitchen.

Kanal – Kafeen – Canal Café – located on the canal near Christiansborg parliament building – dates back to 1852. The first owner of the café was a former cook at the royal palace who was given the restaurant as a pension! Canal Café has a genuine old – world Danish atmosphere, with a plethora of old pictures on the walls and low beams! The restaurant is frequented by office workers from the quarter as well as parliament, with families and tourists often in evidence! The Kanal – Kafeen is a bit cramped with seating capacity for only 60 guests, but there’s always room if you are prepared to wait a few minutes for a table – otherwise when weather permits, tables are put out on the pavement overlooking the canal.

Café Sorgenfri is a 150-year-old basement restaurant in central Copenhagen, serving classic Danish open sandwiches. Our famous kitchen works every day from 11am to 9pm (Sun 12 noon to 5pm), where as the restaurant only closes at midnight. A lot has been written about Café Sorgenfri as an example of genuine, traditional Copen-hagen culture at its best. However, most of all, the restaurant is popular in the true sense of the word.

Promising 17 operatic happenings ranging from full-scale operas to vocal snippets on a boat-tour, the highlights of the eight-day festival include full length performances of Romeo and Juliet, Manon, The Marriage of Figaro and Ottone in Villa (see page 3).

Massenet’s Manon has French soprano Patricia Petitbon in the title role and will be one of the festival highlights. A close-shaven version of the Barber of Seville will also be doing the rounds of the suburbs on the back of a truck over five days.

If you hanker after the days where school started with a rousing tune, you can burst into song yourself every day

at 9am at Torvehallerne at the festival’s morning assemblies.

If a sing-song on a boat sounds like a good idea – try the ‘Operetta on a Boat’ canal tour leaving from Gammel Strand twice a day where the charming Ingeborg Børch will be belting out classics that take us from from France to Denmark, via America.

At the other end end of the cultural spectrum, DJ Noize makes sure Friday night ends with a bang by looping and mixing opera into the beat accompanied by mezzo soprano Andrea Pellegrini.

Another promising collaboration is the staging of Gounod’s opera Faust together with the 1926 silent film of the same name.

Saturday will see the superb international baritone Bo Skovhus serve up arias as a warm-up to the the grande finale concert at Torvehallerne on the final Sunday, which will be transmitted live on DRK.

Olafur Eliasson: Riverbed

This August, Louisiana will welcome a spectacular solo exhibition featuring Danish-Icelandic artist Olafur Eliasson.

Famous for his large-scale installations, the main highlight of this exhibition will be a really long landscape that will take over most of the south wing of the museum.

As it can be understood from his previous works such as the façade on the Harpa concert hall in Iceland and his installation Your Rainbow Panorama at Aarhus Kunstmuseum, Eliasson likes to enhance the audience’s experience by

using reflections and elements like light and water and playing with human perception.

“My senses are my experiential guides – they generate my innermost awareness of time while generously giving depth to my surroundings,” he explains on his own website (olafureliasson.net).

Known as the light and space artist, his work can be classified as post-modernist, although it is rooted in romanticism: the belief in seeking the ideal nature.

While eliminating fundamental elements of nature in his work such as rain and making it a man-made scenario, Eliasson is searching for the sublime and he finds it in the nature.

Riverbed will be a blend of contrasting notions such as outside and inside, nature and culture highlighted with the concept of vacancy.
