Paul’s Perspective “E-A-T”- Our 2013 Culinary Showcase We just finished up our 2013 Culinary Showcase. and I was very pleased to hear all of the positive feedback from you our customers, as well as, from our vendors. Congratulations to Cajun Glaze Donuts in New Iberia for winning this year’s grand prize: a 2 door True Fridge! I’d also like to congratulate the winners of our S&W Checks; see pg 5. I hope everyone enjoyed the S&W door prizes, as well as, the prizes given away by our vendors at their booths. Most importantly, for all who attended, I hope you gained valuable and helpful information for your business. I feel that this is the most important “prize” of all at S&W’s Showcase. The main goal of our showcase is to provide every customer with useful recipes, menu ideas, product details and current insights in our industry that assist your business in increasing profits and continuing to succeed. Re-Inventing America’s Favorite Meal!

C

onsumers are tired of the “norm” and are wanting MORE! Restaurateurs are trying to meet those needs by reinventing the burger, in all sorts of imaginative ways. Such as adding bold flavors, extraordinary toppings and giving them distinctive names. Some have spicy flavorings, or zesty marinades. Others are served on special bread, or garnished with unconventional toppings like grilled pineapple, avocado, or crisp tortilla strips. A few burgers are served with spicy dipping sauces, and others are just much smaller, or much bigger than average. “People definitely like the familiar with a twist,” says Michele Schmal, Vice President of Foodservice for The NPD Group, a market research provider. “New flavors and toppings are a great way to make a menu staple like hamburgers fresh and exciting,” she says. From quick-service chains such as Hardee’s to high-end establishments like Wolfgang Puck, restaurants are re-inventing the burger to further capitalize on consumers’ devotion to America’s favorite sandwich. Ellen Gibson, National Cattleman’s Beef Association’s executive director of Checkoff-Funded new product initiatives, agrees. “Hamburgers are loved by just about everybody,” she says. People know the hamburger is a good, safe choice, and they are willing to experiment a little with different flavorings and toppings. “Eight out of ten commercial and noncommercial foodservice operators serve hamburgers,” Gibson says, and each establishment wants to offer a signature burger to distinguish itself and draw more business.
