Planning a get together with close friends or family this holiday season and fretting over what to serve? Regardless of theme or guest list, a delicious artisanal cheese and wine platter is a great way to start off any gathering. By following these simple guidelines, creating the perfect pairings can be one of the simplest things on your to-do list this holiday season. Step 1: Vary your cheese choices Lindsey Jessup, cheese and wine pairing expert and wine ambassador for Bridlewood Estate Winery, suggests that balancing a variety of flavors is a good place to start. The key is creating a diverse platter that offers something for all your guests to enjoy. “Contrast your tastes and textures by offering a number of different cheeses,” suggests Jessup. “By balancing the different flavors, you’ll have a dynamic and complete holiday cheese plate that can be the perfect complement to your wine selections.” Jessup recommends a selection of four cheeses to build a crowdpleasing and wine-friendly cheese plate: an aged, hard-rind cheese, a soft-ripened cheese, a blue cheese and a mild cow’s milk cheese. Step 2: Select your wine Along with a variety of cheeses, consider the range of wine options to

offer your guests. A good rule of thumb is to have at least two red options and two white options to match the versatility of your cheese selections. If you are offering artisanal cheeses, balance them with handcrafted wines. “Bridlewood’s critically acclaimed Chardonnay, Pinot Noir, Blend 175 and Cabernet Sauvignon display unique, adventurous, yet approachable flavors that make a perfect accompaniment for artisanal cheeses during the holidays and beyond,” adds Jessup. Step 3: Begin pairing Personal preference plays a large role in all wine pairings. In general, Jessup recommends some general guidelines when pairing artisanal cheeses and wine: * Mild and hard cheeses match a wider range of wines than soft, ripe or mature cheeses. * White wine may pair more easily with a wider range of cheeses. * More tannic red wines pair better with harder cheeses. Step 4: Set up the display Now that you have the cheese and the wine, don’t forget the

presentation. First and foremost, it is important to serve your cheese at room temperature to maximize flavor profiles. Be sure to take the cheeses out of the refrigerator at least one to two hours before guests arrive. When considering layout, place cheeses from mild to strongest and accent them with colorful fresh and dried fruit, artisanal breads, and nuts. When displaying the cheese, pre-cut some while leaving larger pieces for a backdrop and have a dedicated knife for each option. Once your cheese is laid out, place your selected wine pairing next to each cheese option along with enough stemware for guests. Keep the white wine on ice so that it’s appropriately chilled throughout the evening. Whether you are planning a large party or a more intimate gathering, creating a simple and elegant artisanal cheese and wine platter is a delicious way to create a memorable and enjoyable experience this holiday season. local dentist dr. michael Tessier discusses Beautiful, Quick and easy solution for unsightly Black fillings Over the past thirtyfive years in the dental field, one of the most significant changes I’ve seen is the appearance of people’s Dr. Michael Tessier back teeth. We usually talk about front teeth when talking about cosmetic dentistry, but the appearance of the back teeth is also significant. I remember when I started in dentistry looking at mouths full of black fillings. I seldom see that anymore today, particularly in Southern Orange County where my practice is located. As an example, several years ago, there was a trailer for a Goldie Hawn movie in which this lovely actress threw her head back and laughed loudly, displaying a mouthful of silver/mercury amalgam fillings, which had turned black. Hardly consistent with the rest of her Hollywood visage. When silver fillings get old, they corrode- effectively rust- and it’s this silver oxide that turns black. And, that blackening is so pervasive that it often turns the whole tooth very dark. Last week the checker at

the supermarket had mostly clean, white teeth, except for the two lower left molars with very large mercury/ silver amalgam fillings. They’d probably been in her mouth for twenty years, and while they could have been clinically sound, she probably did not realize how they affected her appearance. By removing and replacing that black filling with a tooth-colored plastic restoration, or a toothcolored porcelain filling (lasts longer than plastic), or, in the case where removing the filling would leave the remaining tooth structure too weakened, a tooth-colored crown (or cap), the tooth could be returned to its normal, unremarkable appearance. Given the law of unintended consequences and the first rule of medicine-“Do no harm”-we avoid doing dental work that isn’t absolutely necessary. But a procedure like that is relatively non-invasive, and the effect is both dramatic and beautiful. Worth thinking about. Many couples said consecutive date sequences were magical because of their rare occurrence and the hidden meaning of numbers. Others chose the days because they said it would be easier to remember their anniversary Couples in search of symmetry—and an easily remembered anniversary date—flocked to the Orange County Clerk-Recorder Department to be married on Nov. 12, 2013—or 11/12/13. The department issued 107 licenses and performed 103 civil wedding ceremonies, more than double the amount of ceremonies performed on a usual Tuesday. “We were prepared and my staff did a great job to provide a memorable day for couples,” Clerk-Recorder Hugh Nguyen said. “These special dates only come around once in a century.” The last several years have provided several symmetrical and sequential dates that proved wildly popular for weddings. A record-setting 283 couples were married on Dec. 12 last year—or 12/12/12—which beat the previous record of 250 couples married in civil wedding ceremonies on 8/8/08. The marriages were performed at the Old County Courthouse in Santa Ana and at the department’s two branch offices in Laguna Hills and historic downtown Fullerton.

LAGUNA BALLET PRESENTS 28TH ANNUAL PRODUCTION OF “THE NUTCRACKER” Laguna Ballet, a non-profit junior ballet company serving Orange County families since 1985, presents its 28th annual production of “The Nutcracker” December 19th-22nd in its sixth season at the McKinney Theater stage at Saddleback College. Beckstrands 10th Anniversary Gala Raises $1.81 Million Celebrity Lisa Rinna with longtime supporters Holly and Dave Wilson Photos by Carla Rhea and Tony Lattimore Celebrating their 10th anniversary, Beckstrand Cancer Associations legendary Diamond and Pearl Ball, held at The Ritz-Carlton, Laguna Niguel for an intimate crowd of 300 had only the nonprofits most cherished supporters in attendance. The gala realized an amazing $1.81 million in net proceeds, which will enable the Beckstrand Cancer Association to continue to help cancer patients and their families through trying circumstances during their cancer journeys. Co-hosting the elegant black-tie affair once again was Eva La Rue, the Associations National Spokesperson and well known television actress, with Beckstrands President/CEO Lil Spitzer. Beckstrand program recipient and recent cancer survivor Bryan Fazio touched hearts with his story of facing numerous recurrences of Hodgkins Lymphoma in his early 20s and, in the face of a daunting prognosis time and time again, stayed on active duty in the Navy for two years and earned his MBA degree. When he told guests that following his three-year cancer battle, he was cancer-free, the entire room rose to their feet in applause. Lauding Beckstrand, who paid his familys mortgage for seven months when they were about to lose their home, Fazio Dave Olsen and Daniela Ruah with Eva La Rue and Joe Cappuccio said, “During my fight, Beckstrand was there and when I graduated, they celebrated my victory with me”. Celebrated longtime Beckstrand supporters Mike and Jan Salta who are known for their generous and caring hearts, have supported the mission and programs of Beckstrand for the past decade, playing a pivotal role in the development and long-term execution of patient-focused assistance throughout the local cancer community. The Saltas $500,000 gala gift, announced later in the evening, showed their generous spirit. Newport Beach-based Lugano Diamonds, Presenting Sponsor three years running, provided the piece de resistance in the live auction a stunning 10.02-carat Ceylon sapphire. The rare, unmounted gem offered the winner the opportunity to design the setting with $5,000 towards that end, thanks to Lugano President and Design Director Moti Ferder, a Beckstrand board member. Ferder sweetened the pot by adding two oval matching five-carat sapphires, and it sold to longtime supporters Holly and Dave Wilson for $125,000. In a remarkable gesture, an anonymous donor offered to match the final bid, bringing the total amount raised by Lugano Diamonds Ceylon Sapphire to $250,000. Spitzer recognized several individuals who have been involved with the ball for the entire 10 years the first honoree, Dr. Simon Tchekmedyian; the original gala chair, Kirsten Prosser; the auctioneer, Mark Schenfeld, and gala Bold and the Beautiful’s Don Presenting Sponsor Lugano committee member Stuart Winston, who introduced Beckstrand to its first presenting sponsor, Bulgari, and later to Lugano Diamonds. Diamont and Cindy Ambuehl Diamond’s Moti and Idit Ferder Five couples were recognized for their amazing support, without whom we would not be where we are today, Spitzer said. They included Dave & Holly Wilson, AJ and Joni D’Amato, John & Patty Collins (Patty is Beckstrands board chairman), Keith and Mara Murray, and Blaine and Renetta Caya. Each lady was given a custom-designed gift from Lugano Diamonds a white gold initial necklace with a .30cts diamond encrusted butterfly, Beckstrands logo. Luganos Ferder then presented a custom-designed 18k gold necklace with a 2.5-inch high initial J encrusted with 1.50 cts. of diamonds called the Legacy Piece to Jan Salta. Celebrities attending the anniversary gala included Lisa Rinna, the Bold and the Beautifuls Don Diamont and his wife Cindy, and NCIS: Los Angeles Daniela Ruah. Morisettes private performance featured songs from her critically acclaimed Jagged Little Pill album, as well as other hits such as Uninvited and Thank U. She toasted all the caregivers in the crowd, saying, I’ve done it too, so here’s to all of us. The Diamond & Pearl Ball represents a celebration of cancer survivorship, with proceeds from the ball used by Beckstrand Cancer Association to provide cancer patients with advocacy and direct financial assistance for critical survival needs, such as rent/mortgage, utilities, food, gas, transportation, Beckstrand’s President/CEO Lil Spitzer and 10th Anniversary Gala medical insurance, copayments, and prescriptions. Dark Cocoa, Light Cocoa, Green or White Candy Melts Candy Peppermint Twisted Sticks Candy Assorted Holiday Sprinkles, including Holiday Nonpareils, Confetti and Jimmies, Red and Green Colored Sugars Line cookie sheets with parchment paper. In Disposable Dipping Container or bowl, separately melt Candy Melts candy in microwave following package instructions. Dip peppermint sticks into melted candy; tap stick lightly to smooth surface. Immediately add sprinkles. Set on prepared cookie sheet; chill until set, 5 to 10 minutes.

Cheery Cereal Tree Treats

Makes about 12 treats 1/4 cup (1/2 stick) butter or margarine 4 cups mini marshmallows Juniper or Leaf Green Icing Color 6 cups crisp rice cereal White Cookie Icing Jumbo Rainbow Nonpareils, Sprinkles or Sugars, as desired Prepare 3D Silicone Tree Mold and silicone spatula or wooden spoon with vegetable pan spray. In large saucepan, melt butter. Add marshmallows; cook and stir until melted. Tint with icing color. Remove from heat and add cereal; mix well. Press into prepared mold. When cool to touch, remove from mold. (If mixture becomes hard to work with, microwave at 50 percent power for 30 to 60 seconds to soften.) Heat Cookie Icing following label directions. Squeeze snow and garlands on trees; add sprinkles and sugars as desired. Let dry.

Christmas Candy Swirl Cookies

Makes about 2 dozen cookies. 2-3/4 cups all-purpose flour 1 teaspoon salt 1 cup (2 sticks) butter, softened 1-1/2 cups granulated sugar 1 egg 1-1/2 teaspoons vanilla extract 1/2 teaspoon almond extract (optional) Red and Green Sparkle Gel Preheat oven to 350°F. Lightly spray Easy Decorate Swirl Cookie Pan with vegetable pan spray. In small bowl, combine flour and salt. In large bowl, beat butter and sugar with electric mixer at medium speed until well blended. Beat in egg and extracts; mix well. Add flour mixture; beat until well blended. Press dough into pan cavities, filling 2/3 full. Bake 10 to 12 minutes or until light brown around edges. Cool in pan 10 minutes. Turn pan over; lightly tap pan to remove cookies. Cool cookies completely. Decorate cooled cookies with Sparkle Gel. Let set, at least 30 minutes.

Makes about 3 dozen cookies 2-3/4 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon salt 1 cup (2 sticks) butter, softened 1-1/2 cups granulated sugar 1 egg 1-1/2 teaspoons vanilla extract 1/2 teaspoon almond extract Red, Green and White Cookie Icing Red and Dark Green Colored Sugars White Sparkling or Pearlized Sugar White Sugar Pearls Preheat oven to 350°F. In small bowl, combine flour, baking powder and salt. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Add egg and extracts; mix well. Add flour mixture, 1 cup at a time, mixing after each addition. Do not chill dough. Divide dough into 2 balls. On floured surface, roll each ball into a circle approximately 12 inches diameter and 1/8 inch thick. Dip Cookie Hugger or “Ho-Ho” Word cookie cutters in flour before each use. Bake cookies on ungreased cookie sheet 8 to 11 minutes or until cookies are lightly browned. Cool cookies completely. Outline and fill-in cooled cookies with Cookie Icing. For “Ho-Ho” cookies, sprinkle with sugars; let set until icing is completely dry. For snowflake cookie, add white Cookie Icing detail to dried cookie; attach Sugar Pearls with dots of icing.

White, Red, Green and Dark Cocoa Candy Melts candy Large Marshmallows Holiday Confetti, Nonpareils and Colored Sugars In Disposable Dipping Container or bowl, melt Candy Melts candy separately following package instructions. Dip marshmallows in melted candy and place on cooling grid positioned over parchment-lined cookie sheet. If desired, sprinkle with sugars and sprinkles. Chill 5 to 10 minutes or until set. Using candy decorating bag or disposable decorating bag, drizzle melted candy or pipe outlines, if desired; immediately sprinkle with sugars or nonpareils. Attach confetti with dots of melted candy. Chill 2 to 3 minutes or until set. With point of sharp knife, carefully cut through candy on the marshmallow where stick will be inserted. Insert three marshmallows onto each Colored Lollipop Stick, securing with melted candy.

Appointments are being taken now for marriage licenses and ceremonies, as well as passport services, for Saturday Nov. 16 and Dec. 14, when the offices of the Orange County Clerk-Recorder Department will open from 10 a.m. to 3 p.m. Clerk-Recorder Hugh Nguyen has opened office doors for one Saturday each month since June to help customers who are unable to visit during regular weekday hours. The Old County Courthouse will be open on Nov. 16 and Dec. 14 for marriage licenses, civil wedding ceremonies and passport applications, plus property research at the Archives. Copies of property and vital records, as well as marriage services, will be available at the Laguna Hills and Fullerton branch offices. Passport services, however, are not available at the branch offices. Free parking will be available at all three locations. “The response from the public and my staff to our special Saturday hours is much appreciated,” Clerk-Recorder Hugh Nguyen said. “We’re always looking for additional ways to help improve customer service.”

November and December are arguably the busiest months of the year for traveling and shopping. Millions of people descend on the nation’s airports and shopping centers looking to create that perfect holiday memory. With all the excitement surrounding this time of year, the last thing Americans should worry about is escalator and elevator safety while navigating through the crowds. But while you may be more focused on your holiday to-do’s, you need to remember some important safety tips about the elevators and escalators you are using. Safety innovations have come a long way in the last few decades and today’s elevators and escalators are safer than ever before. The National Elevator Industry, Inc. (NEII) is the expert in building transportation safety. NEII works to develop and promote updated

safety codes, encourage the adaptation of the latest safety technologies, and ensure passengers are informed on the safest riding procedures for elevators and escalators. However, even with all the advancements in safety technology, it’s worth keeping in mind that most accidents can be easily prevented by following simple elevator and escalator safety tips. Below are key guidelines proven to keep riders safe during the holiday season and any time throughout the year: When boarding and riding elevators: * Allow passengers exiting the elevator to clear before boarding * Watch your step - the elevator car may not be perfectly level with the floor * Stand clear of the doors - keep clothes and carry-ons away from the opening * Hold children and pets firmly * Leashed pets should be on the same side of the door as the passenger to prevent the door from closing on the leash * Passengers nearest to the doors should enter first when the car arrives * Push and hold the “door open” button if doors need to be held open, or ask someone to push the button for you * Never try to stop a closing door, wait for the next car * Once on board, quickly press the button for your floor and move to the back of the car to make room for other passengers * Hold the rail or stand against the wall, if available * Pay attention to the floor indications and announcements when provided * If the doors do not open when the elevator stops, push the “door open” button

If there is ever an emergency, remember that all elevators have several safety devices, one of which is brakes that will stop the car if it is not operating properly. If the elevator should ever stop between floors, do not panic. Follow these guidelines: * If the elevator should ever stop between floors, do not panic, there is plenty of air in the elevator * Never climb out of a stalled elevator * Use the “alarm” or “help” button, the telephone or the intercom to call for assistance * Above all, wait for qualified help to arrive and never try to leave an elevator that has not stopped normally * Emergency lighting will come on in the event of a power failure When entering escalators: * Watch the direction of the moving step and step on and off with extra care * Hold children firmly with one arm or hold child’s free hand * Hold small packages firmly in one hand, but always leave one hand available to hold the handrail * Grasp the handle as you step onto the moving step * Do not step onto an escalator going in the opposite direction * Do not take wheelchairs, electric scooters, strollers, hand carts, luggage carts or similar items on the escalator When riding and exiting escalators: * Keep loose clothing clear of steps and sides

* Wear closed-toed and hard-soled shoes, and avoid wearing footwear made of soft-resin or other rubbery materials * Stand clear and keep feet clear of the sides of the escalator * Face forward and keep firm grip on the handrail * Reposition your hand slowly if the handrail moves ahead or behind the steps * Don’t climb onto or ride the handrail * Do not let children sit on steps or stand too close to sides * Don’t hesitate and step off promptly * Make sure to step over the comb fingers; don’t let your feet slide off the end of the escalator * Immediately move clear of the escalator exit area; don’t stop to talk or look around since other passengers may be behind you Always remember, if there is an emergency, simply push one of the “stop” buttons located at the top or bottom landings of the escalator near the handrail or floor level.
