A Night Out with the LVF Team: Bar and Lounge by

Once again, the boys got to get out of the house After being contacted by Tommy Dorsey of Honest Trav’s Virtual Dive Bar about checking out a new spot in South Side Bethlehem, Jarred and Kyle were more than happy to join. Meeting with Tommy and his wonderful fiancée Samatha in front of Alibi Bar and Lounge (located at 203 E 3rd St Bethlehem PA 18015 in the previous Hookah Lounge Essence and attached to another great Southside Bethlehem brick and mortar Flying V), it was immediately evident that Alibi was going to be an experience to remember.

With a full glass exterior (which may open up with hotter weather months coming up, we weren’t able to confirm this) giving glimpses of the gorgeous, updated interior we entered the foyer to speak to the hostess and were immediately taken aback by the upscale feeling and aesthetic solely in the bar. Once our reservation was confirmed we were escorted upstairs passing by the in-house DJ that was providing patrons with fun background music to accompany their night.

Off the bat the environment of Alibi screams elegant comfort. Between each table having their own LED lamps that can be changed to your desired color temperature and brightness, to chairs that seemed to hug you and pull you into a state of pure comfort Alibi captured metropolitan elegance balanced with a sense of comfort that most people wouldn’t think was possible in a sit-down bar and restaurant We started with drinks, the four of us tried their: Amaretto Sour, Marzipan Espresso Martini (Samantha and myself both tried this one), and Fig Boulevardier Shortly after our drinks arrived, the manager sent over a few more popular and eyecatching cocktails to also try out: Blueberry Clover Club, Hawaiian Whiskey Sour, (a bit of drink and a show) Zombie Fever, and (a hit at our table) the Matcha Cheesecake. As we all exchanged stories and a few laughs we passed the drinks around, each with their own distinct flavor profile of unique and complex flavors perfectly detailed on their cocktail menu.

Of course, we wouldn’t be Lehigh Valley Food if we didn’t take the time to go over the incredible dishes that we had the pleasure of trying. We started off family style ordering both the Charcuterie Board and the Chef’s Cheese plate to share for the table. Fully expecting a meager helping of meats and cheese we were all delighted at the amazing spread of many different types of Meats, Cheeses, Nuts, Spreads, and Honey. As we all recounted trips and fun times, we swiftly devoured both Boards This was followed by the incredibly flavorful and crisp Beef Tallow Truffle Frites (imagine the greatest most flavorful fries you’ve ever had and then multiply it by 3 for a comparison). For our entrees we ordered: House Made Gnudi, Coconut Crusted Tiger Prawns, Wagyu Beef Sliders, and (the dish that quite literally left me speechless) Iberico Pork Belly Bao Buns. Needless to say, that the food was beyond incredible, every dish seemed to be better than the last with each bite forcing us to reevaluate what we considered the best dish.

In the end Alibi Bar and Lounge delivers in providing the experience that we think they were trying to capture. A high quality, elegant, comfortable spot for people of all ages to sit down, relax, enjoy music and the company of friends or family while enjoying the highest quality drinks and food. All of this catered to the Valley’s late-night crowd, a group that unfortunately has been overlooked for very long often losing out on the opportunity to go out for drinks and food due to work, family, or any number of contributing factors forcing them to need to start their nights later Alibi Bar and Lounge provides Bethlehem with a spot for people to come and enjoy an elevated Metropolitan experience, great cocktails, and amazing food later into the night.

Earth Day Kid Snack

Kids will love creating this fun snack of our world for Earth Day. Grab a blanket and some earth day books and have a little picnic snack outside. You can even turn it into a little lesson and talk about the 7 continents and more!

Ingredients:

1 cup Blueberries

1 cup Grapes (green)

1 tbsp Sugar

1 tsp Vanilla

1 Package flavored Rice cakes

1 package Cream cheese

How to make:

1. Cut the grapes and blueberries in half.

2. In a small bowl, mix the cream cheese, sugar, and vanilla together.

3. Spread the cream cheese mixture onto a rice cake.

4. Then create your own planet Earth by adding the blueberries and grapes for the water and land. Enjoy!

Earth Day Fruity Lemonade Drink

Ingredients:

Your favorite lemonade recipe or store bought lemonade

Fresh or frozen blueberries

Green apples (like Granny Smith)

Edible flowers (optional)

How to make:

1. Start by making your fruity ice cubes with the blueberries and diced up pieces of the green apple (leave the skin on and try to arrange the apple skin to be seen on the outer sides of the ice cubes). The blueberries and green apples will represent the land and water of our planet Earth. Add water to the ice cube tray and freeze.

2. Once ice cubes are ready, add the ice cubes and lemonade to a glass. You can also add a straw or some edible flowers and enjoy!

Watermelon Mint Salad

Ingredients:

1 small seedless watermelon, cubed

1/4 cup fresh mint leaves, chopped

1/4 cup crumbled feta cheese

1/4 cup chopped cucumber

1 tablespoon honey

Juice of 1 lime

Salt and pepper to taste

Directions:

In a large bowl, combine the cubed watermelon, chopped mint leaves, crumbled feta cheese, and chopped cucumber.

In a small bowl, whisk together the honey and lime juice until well combined.

Pour the honey-lime dressing over the watermelon salad and toss gently to coat.

Season with salt and pepper to taste. Serve chilled and enjoy this refreshing and unique summer salad.

Ingredients:

4 oz chilled rosé wine

2 oz lemonade

1 oz sparkling water

Fresh berries and mint for garnish

Ice cubes

Instructions:

In a glass filled with ice, pour in the chilled rosé wine. Add the lemonade and stir gently to mix. Top off the cocktail with sparkling water for a refreshing fizz. Garnish with fresh berries and mint leaves for a pop of color and extra freshness. Stir gently to combine all the flavors. Enjoy your Rosé Lemonade Spritz on a hot summer day by the pool or on a patio with friends. Cheers!
