Sarah,HeadChefofTheCoach,aone MichelinstarredpubinMarlow,won theprestigiousMichelinYoungChefof theYearaward2023,ahuge accomplishment,Sarahsays: “Wow,I amreallyblownawaytobehonest andreallyhumbledtoreceivethe YoungChefAward,whatanhonour.I havesomuchrespectforMichelinand Iknowhowproudmydadwillbe, beingachefhimself.”

Inspiredtocookfromherfather,a RoyalNavyChef,Sarahgrewup aroundthesightsandsmellsofthe kitchen.

At16,Sarahdidaone-year apprenticeshiphereatTheRoyal workingunderAlanStaley.

NickwhohasbeenwithTheRoyal over20years,fondlyremembers workingwithSarahinthekitchen, “youcouldtellthen(at16)shewas goingtobeagreatchef,shealways gotstuckintothelessglamorousside ofworkinginakitchenandputinthe extraeffortthatshedidn’thaveto becauseshehadthepassionanda loveofgoodfood.”

Inhersparetime,Sarahenjoysconcertsand running,havingcompletedTheLondon Marathonin2021toraisemoneyfor HospitalityAction,andagainin2022for PancreaticCancerUK. SARAH HAYWARD

OurEchiumCandicans(also referredtoasPrideofMadeira), standaspectacular2.5metres tall,surroundourrestaurant gardensaswellastheRiviera Terrace,arelaxingspottoenjoy viewsacrossVentnorBay.

Agorgeousabundanceof Wisteriatrailaroundthefrontof thebuildingandverandaswith densebloomsofpurpleandlilac throughcreamandwhite.

plantssuchasSweetPea,MintandDill aswellasLemonVerbena(Aloysia citrodora)-alemonscentedherband hasavarietyofusesrangingfromrich roaststosweetcitrusydessertsand jams.Lovageisgreatforsalads,soups andstewsandLavender,aculinary versatileflowerwithflavourscanbe usedinanumberofdishesfromsweet tosavoury.

Sempervirensalsoknownas‘Green Pencils’orItalianCypress,werelater addedandhavegrownsignificantly withinthefrontgardensandadda lovelyarchitecturalfeeltothe gardens.Additionally,thereare ornamentalolivetrees(Olea Europeaea)andgrapevines(Vitis Vinifera)inthegardens,thatadda furtherMediterraneaneleganceto ouroutsideenvironment.Our wonderfulbaytrees(LaurusNobilis) wereourlatesteditiontoour groundsin2019whichareunique withtheirspiralstemsandperfectly frameourfronthotelentrance.

Hannahfarexceededheroriginalfundraising targetof£200,havingreachedamagnificent £1000!Wecan’twaittoseewhattheycan achievenext.

MadisonstartedherjourneyinhospitalityatThe Wellingtonattheageof15,workingFrontOf House.Twoyearslatershebecameapartofthe Royal,achievingaleveltwoapprenticeshipin hospitalityandcatering.

“Ireallyenjoyeditanditbuiltmyconfidencewhen talkingtoguestsastheRoyalencourageshighstandards ofcustomerservice.Gainingthisskillatayoungagehas beenreallyvaluableinmycareer.”

At18,MadisonwouldjoinTheAgencyinNewportforan apprenticeshipinbusinessadministration.

Withherofficeexperience,MadisonbeganworkingatYatesBreweryinanAdmin/ Officerole,whilstworkingatformerlyknownpopularrestaurantTramezzini,now knownasTrueFoodKitchen,workingasRestaurantManager.

MadisonthenmovedontoSmoking Lobsterwhereshewouldbeoffereda managerialposition.“Ithinkthisrole putmeinabetterpositioninmy careerbecauseitwaschallengingand taughtmemanyskills.Ialsoadopted anewpassionfordiversecuisine.

Inspiredtoseetheworld,Madison wenttravellinginAsiawhichwasan eyeopeningexperienceforher,and gavehertheconfidencetogooutof hercomfortzone,beinspiredby differentculturesandcultivatedan attitudeinbelievingthatyoushould befreetoexpresswhoyouare.

In2019Madisonreturnedto Tramezziniwhereshewouldspend thenextthreeyearsofhercareer, untilshechosetoseekanew opportunity.

UponhearingthenewsthatMadisonwasafree agent,NickDobsonfamiliarwithMadisonfrom herinitialtimeatTheRoyal,sawtheopportunity torecruitMadisonbackhometotheRoyal, whereherwelcoming,bright,positiveenergy wouldbesuitedasahostforthehotel.

Bringingherexperiencealongwithherbackto theRoyal,Madisonfoundherselfquicklytaking onmoreresponsibilities,focusingonalevel threemultifunctionalhospitalityapprenticeship andeventuallyjoiningMariainourEventsand Planningteam,whilehersunnypersonalityis stillheretoshinethroughtoguests,hosting breakfastsandevents.

Sincejoiningat18inthe CocktailBar,Jadehas progressedandtakenmany responsibilities,andcompletedamonth ofManagementtraining.
