Dear Western Province Tabler,

Greetings from the vibrant and welcoming Western Province! As the Area Chairman of the Premier Area, it is my pleasure to extend a warm invitation to all Roundtable members within our area We are excited to share with you the profound importance of fellowship and its transformative power in our lives.

In the pages of this magazine, we aim to capture the spirit of camaraderie that defines our Roundtable community. We understand that fellowship is not just a word; it is a bond that unites us, transcending boundaries and creating lifelong connections. We believe that together, we can inspire and support one another on our respective journeys.

To the energetic souls between the ages of 18 and 40 who comprise our readership, this magazine is your gateway to a world of opportunities and meaningful interactions. Candidacy for Vice Chairman

Greetings fellow Tablers! My name is Nick Austin, and I am excited to announce my candidacy for the position of Vice Chairman of Round Table Western Province for the 2024/2025 term. As the current Chairman of the Cape Town 9 and the Western Province Area Secretary, I have been actively involved in Round Table for almost four years now.

I have always believed that Round Table is an exceptional organization that fosters leadership, community service, and personal growth. Through my experience with Round Table, I have come to realize that membership is the key to the continued success of the organization. That is why I am passionate about my membership drive plan, which comprises of a six-pronged approach to tackling membership head-on.

Over the next year, I intend to visit all the tables in the Western Province area to share my ideas on membership drives as well as to gather feedback from the different tables in the area

I believe that my experience and dedication to Round Table make me the ideal candidate for the Vice Chairman position. My involvement in various roles within the organization has allowed me to develop a deep understanding of the inner workings of Round Table and the challenges that we face. I am confident that I can make a real difference in the organization by implementing my membership drive plan and working collaboratively with other members to achieve our goals

Geagte WP Area Tafelaars, julle beste vriend Passi het besluit om hand op te steek vir die posisie van WP Area Onder-Voorsitter vir 2024 /25. Die feit dat ons kompetisie het op die posisie wys vir my die groei en vordering wat WP Area besigis om te maak, en ek sal graag wil bou daarop.

Ek en my mede kandidaat is bevoorreg om te volg op baie sterk Area Voorsitters, wat ons geneem het na nuwe hoogtes en in hul termyne reeds beplanning gedoen het en areas identifiseer het vir ons as WP Area om op te verbeter.

Ek is oortuig daarvan dat ek deur my persoonlike verhoudings gebou aan Tafel en my besonderse Liefde vir fellowship, die perfekte kandidaat is om die volgende Voorsitter te help om die volgendestap in die drie jaar plan aan te pak: die oorskakeling van fellowship na family

Dit is nie om te sê dat fellowship die enigste prioriteit is nie, ek het die idee om Paarl Boys’ High se Old Boys’ netwerk te gebruik vir potensiële Tafelaars identifiseer en ek glo dit is ‘n baie goeie geleentheid vir Tafels om lede te werf. Ek is ook besig om met Robertson 115 se hulp die oorskakeling na Sage af te skop, wat ‘n algehele verbetering in finansiële rapportering vir die Area bring.

Ek sien uit om my deel te doen om meer vordering en verbetering te bring aan WP Area en Round Table as ‘n geheel.

Skaap in Estonia

The life of a Tabler, how hard can it be? Business meetings once a month, an Area Meeting every now and again, looking forward to ARTSA and some great fellowship and projects in between… What more can you ask for? What If I told you there is even more… What if I told you there are more friends to make? What if I told you, there is even more to learn?

Moeilik om te glo, maar demmit, ek het wragtag plek in my hart vir nog pelle! Hoe het hierdie gelukkie in my skoot geland? Wel, dit alles begin deur net my hand op te steek om die WP Area by die RTI World Meeting te verteenwoordig in Gauteng. Min wetende dat twee weke later ‘n heel nuwe kommittee gekies moes word om die WM te reel van RTSA se kant af. So wat het toe gebeur? Skapie val met sy gat in kokende botter… ja, steeds botter, maar kwit, nou moet daar gewerk word… WM skuif in sy geheel Kaap toe en hierdie Kaapse Skaap se ondervinding beperk hom tot die Strand Promenade op ‘n warm Sondag stappie Maar dis mos nou waar Tafel se leuse inkom.

Graham Cornelissen, the newly elected WM Convener came to see me in Cape Town and shared his vision of the best WM that RTI has ever seen. I gave a big gulp and said, well let’s do this Immediately planning started and I got the coveted title of co-convener of events with Gerhard Ginger Ninja, our National IRO, in charge of pre-tours and the other co-convenor. But still, something was lacking Graham constantly had to remind me of the magnitude of what is coming and he saw the need to get this Beach Sheep some much-needed experience… And what followed would change the way I see Tabling.

End of Feb 2023 the World Half Year Meeting was held in Tallinn, Estonia. This lekker ekke went with the most windgat attitude I could muster after 24hours of flying and quickly came to my senses when I met up with Finnish Tablers at Helsinki Airport. I wrote my name in the Tabler Coffee stand book in a bar owned by a Tabler and quickly came to realise these okes are just like me.

Ek was ingedeel in ‘n hotel kamer met ‘n ene Andrei van Belgie. Wat ‘n karakter. Die perd lyk soos die grootste nerd onder die son, maar wragtag ‘n interessante kêrel. Sy nommer sal definitief in my foon se geheue bly vir die dag wat ek vir Belgie gaan besoek Die eerste aand was oorweldigend, so baie mense om mee te gesels, so min tyd om dit in te doen. Toe ek weer sien, is dit amper opstaantyd en ek moet my blou baadjie loop aantrek vir die Councillors Meeting.

I have been given the honour of “minute secretary” for both Councillors meeting as well as Half Year meeting. I took the role very seriously but it seems not even that could keep the sergeant away It was a great honour standing in front of Association delegates, and being introduced as WP Province Area of Round Table Southern Africa’s PRO. The first smoke break brought a barrage of questions about where I live, where the WM will be, what does our clubhouse look like, is there really giraffes in the streets. It was awesome.

Maar sekerlik die mees trotse oomblik, was toe RTI President Jayant Argawal, vir my persoonlik kom gelukwens het met die nuus dat ek offisieel verkies is tot Ondervoorsitter van die WP Area. Ek het onmiddelik geweet hierdie manne stel almal belang in mekaar en gee om vir mekaar Ek het die groot eer gehad om voor die hele skare WM te bemark en seker gemaak almal weet van die WP Area van RTSA!

My grootste les op die ekskursie… Jy gaan na ‘n vreemde land toe met ‘n Rondel op jou bors, alleen op ‘n vliegtuig en te min Euros in jou bank om ‘n dag te oorleef, maar jy kom terug met ‘n vrag vriende wat jy nooit sal vergeet nie en die babkop om daarby te pas.

I always knew it, but it never really sank in before I was on the flight back home, we are expecting overseas travellers to Cape Town, we are receiving Tablers. Tablers who looked after me, kept my glass full and always made sure I understood when they spoke amongst themselves. Tablers who care for each other and who will gladly accept you in their home.

Rev Your Engines

Round Table 276 of Yzerfontein is thrilled to host our very own Formula 1 Fantasy League! We have been running the league since the start of the season and will continue to do so until the summer break. We will then be hosting a new league for the post-summer break until the end of the championship year

Round Table 276 of Yzerfontein invites all ARTSA and RTI members to join our Formula 1 Fantasy League for the 2023 season. We had an incredible response for the first half of the season, and we’re excited to keep the momentum going.

After three races, the league has seen some position movements, with Prolly_Drunk holding on to the top spot, Kyle Kokstad 35 close behind in second place, and Wroth T1 RT276 Yzer rounding out the top three. Tammy Auret and Andre F1 Racing have also been strong performers, sitting in the fourth and fifth positions respectively. However, with half of the season still to come, anything can happen, and we encourage all ARTSA and RTI members to join in on the fun for the second half of the year.

Looking ahead to the second half of the season, there are many unknowns and possibilities. Will Verstappen maintain his advantage, or will Hamilton mount a comeback? Can Red Bull Racing keep up their momentum, or will Mercedes find their form again? Is Aston Martin in with a chance? And what about the rest of the field - who will emerge as the best of the rest? Regardless of the answers to these questions, we at Round Table 276 of Yzerfontein are excited to continue hosting our Fantasy League and raising money for important causes. We encourage all ARTSA and RTI members to join us, either in the main public league or the special tabler league, and compete for some fantastic prizes.

At the end of the day, Formula 1 is all about competition, excitement, and passion, and we hope to bring some of that same energy to our Fantasy League. So, let's rev up those engines, get in touch with us, and join the fun for the second half of the season. Who knows - maybe you'll be the one lifting the championship trophy at the end of the year!

Met paasnaweek wat om die draai is het Paarl 44 op 3 April 2023, 48 bokse paaseiers met ‘n brief aan, gaan uideel aan verskeie aftree-oorde asook welsyn organisasies in die Paarl en Wellington area.

Alhoewel daar seker ‘n paar bejaardes is wat met ‘n suiker probleem sit is dit darm lekker om soms nie vir jou Dokter te luister nie en ‘n soet ding te eet. Die manne se kinders was ook betrek en het saam ons gaan uitdeel.

Anton van Belgie kom kuier

Somerset West 31 het gasheer gespeel vir Anton Daems van Round Table Aarschot 85 in België

Anton het sy pa, Marc, saamgebring wat self ook ‘n Tafelaar was vir 18 jaar! Marc besit ‘n huis in Somerset Wes en het ons belowe om gereeld te kom inloer. Wat meer sou jy vra wil ‘n man uit so kuiertjie kry? Wel, Marc was ‘n aktiewe 41er in België, maar agv sy besige toer skedule, het hy bietjie weggestaan van die formele vergaderings wat hulle gehou het. Ons het met hom meegedeel dat Somerset West 41ers ‘n sterk club is wat elke maand bymekaar ko men hy was in ekstase om bietjie met sy eie garde ook te kan skakel Dit wys net, die skarniere van vriendskap wat deur Round Table gegiet is, roes nooit.

Ons sien uit om gou weer vir Anton in Somerset Wes te verwelkom.

STafelronde Saldanha 226 het op 16 April 2023 hul jaarlikse paaseier uitreik gehad

Vanaf Huis Hadasa(kinderhuis), die strate van Vredenburg tot Louwville was talle kinders en jeug van jonk tot oud se gesigte vol breë glimlagte.

Kinders en jeug is die toekoms van môre!

Baie dankie aan Rola Mahindra Vredenburg vir die borg van hulle voertuig asook aan MyRide Group Nissan Weskus en die publiek vir die borg van paaseiers om ons uitreik moontlik te maak

PAARL 44’S WP COUNCIL MEMBERS

On 4 March 2023, Paarl 44 had one new member inducted on the Western Province Area Council, with one member we already have on the council.

Congratulations to Trompie Esterhuizen who has been inducted as the new PRO of the WP area council as well as Jan de Lange, who remains the IRO on the WP area council

We wish you all the best as you embark on this journey, and we have no doubt that you will excel in your roles and make a significant impact

We as Paarl 44 are also privileged to have the Tabler of the year from our table. Well done Trompi. The hard work pays off and the drive for impactful change

EASTER table view 246

On the 7 th April 2023, Table View 246 arranged to setup a collection stand at one of the local Super Spars in the area. The goal behind the collection was to ask for donations of Easter Eggs, non-perishable foods and toiletries, of which we would drop off at an orphanage that we support.

The morning started off with a bang (not the one you thinking of) Our co-convenor who made the arrangements with the Superspar where we would be setting up, informed us last minute.com that he wasn’t able to attend. This was just the start, as we were told to meet up at 1 of the 3 Superspars within our area only to find out after we had set up the gazebo and banners, that we were at the wrong one. We packed up, and headed to the next one, wrong again… Finally 3 rd time lucky, we had set up at the correct Superspar. At this stage, we were thinking of appropriate strafs for our next business meeting.

The day was not all doom and gloom, as our 246 Easter Bunny, apart from scaring a few kids, entertained the customers visiting the store, hopping around like a “mal haas”. Each 246 member was also kitted out with their own pair of Bunny ears, bunny tail and bow tie to match, which peaked he interest of a few ladies walking by asking excitedly if we were the Chippendales and if we were going to put on a show. Can you believe it, nogals on a religious day.. Hali haaa.

We were at the store for around 3 hours, and we managed to collect 2 full trolleys, and a basket full of donations. The community really came out and supported us and at the same time we were a Table do, and ho

Ohe donations were split between Luthando House, our local orphanage who we have been supporting for many years and Little Brinks which is a safe “stop over” for kids while social workers find suitable long term homes, of whom we haven’t dealt with before. Our “mal haas” and a few of our Tablers hid some of the chocolates and arranged a Easter Egg hunt at Luthando, which has become somewhat of a regular event each year.

PAARL BLOOD DRIVE

On 30 March 2023, the tablers of Paarl 44 went to donate blood at the Toringchurch hall in Paarl, thereafter we went to hand out warm soup and bread to the homeless people in and around Paarl.

Each and every time we go and hand food out, we realize how fortunate we all are to have warm food and a roof over our heads, as this should never be taken for granted. This is what table stands for.

Cape 1000 in Hermanus

Cape 1000 het hier op ons voorstoep kom stop. Dit is n klomp exotiese karre van oud tot vandag se nuuste sports kar. Corne Burger, “Durbell Oubal” het ons vasgekeur by die Wp Area Induction dinner en ons begin vertel van die event wat hy deel is van. Hy het genoem hulle kom deur Hermanus en gevra of ons kan help met n paar dinge, soos almal weet staan 267 se hande vir niks verkeerd nie. Al die karre ,ek wil amper se al 56 van hulle het by Hermanus Waterfront, Gearings point geparkeer sodat die mense na die pragtige masjiene kon staar Hulle was oppad George toe, toe hulle weg trek in Hermanus. Die klank van die karre het ons omtrent laat hoender vleis kry op plekke waar ons nog nooit gehad het nie. Dit is altyd lekker dat ons naam daar buite kom en dalk gekoppel kan raak aan nog een groot charity event. Francois buurman Bezuidenhout het natuurlik eerste keuse gehad op hulp verleen en het 2 keer die manne laat af skiet by hulle bepaalde tyd zones

PAARL BOLAND AUTISM ROLBAL DAG

Op 24 Maart 2023, het beide die manne en dames van Paarl 44 twee spanne ingeskryf vir die Boland Skool vir Autisme se rolbaldag.

Boland Skool vir Autisme is gelêe in die Paarl en bied hulp aan vir kinders met Autsime, deur vir hul spesiale onderwys en fasiliteite aan te bied.

Die manne en dames het hul laaste wedstryd van die dag teenmekaar af gespeel en dit was groot pret en samesyn

Voedings Skema

Ons as Tafel het sedert Januarie 2023 by Linda se sopkombuis hier op Robertson betrokke geraak. Linda voorsien 2 keer per week (Woensdae en Saterdae) kos aan +- 400 minder bevooregte mense (meestal vrouens, kinders en bejaardes) in Robertson.

Elke lid aan tafel kry dus n spesifieke week wat aan hom geallokeer is om soveel as moontlik groente, vrugte en ander kosgoed intesamel en dan na Linda se sopkombuis te neem. Die groente en vrugte donasies word gewoonlik deur plaaslike boere verskaf Ons dank hulle hartlik daarvoor. Pick and Pay Robertson, spesifiek George en Stacey Joannou, moet ook spesiaale dank kry vir hulle donasies en bydrae.

PAARL 44 INDUCTION DINNER

Paarl 44 het op 14 Januarie 2023 hul jaarlikse inhuldigings ete van die nuwe voorsitter gevier by die Kalahari Grill. Ons nuwe voorsitter, Donovan Ackermann, is deur ons uittredende voorsitter, Stephen Van Niekerk ingehuldig

Die aand was gevul met grappe, feesviering en kameraadskap onder mede tafelaars asook hul beter helftes. Ons het verder ook die inhuldiging van ons nuwe raad gemerk, wat saam met ons nuwe voorsitter gaan werk om te verseker dat ons die doel van Tafelronde na streef.

Soos ons uitsien na die nuwe jaar, is ons gretig om voort te gaan met ons missie van dienste aan die gemeenskap lewer en om saam vorentoe te beweeg, verenig in ons vebintenis om ‘n positiewe impak asook verskil te maak.

Alleviating Hunger in Worcester Community

In a world often overshadowed by distressing headlines, the Worcester community has recently been illuminated by a remarkable act of kindness. The Worcester Round Table 68, known for their dedication to community service, has teamed up with the Khanyisa Community Development Organisation to assist in their Needy Households Project. The philanthropic group donated an abundance of food parcels, thereby extending a lifeline to some of the most vulnerable members of the Worcester community.

In the face of hardships and adversity, the power of compassion cannot be understated. Worcester Round Table 68’s latest endeavour proves this beyond doubt. Each food parcel donated does more than satisfy a physical hunger - it provides a beacon of hope and camaraderie to those who are struggling, and delivers the message that they are not alone in their plight.

Worcester Round Table 68 made a donation of R5,000 that was paid directly at Raimondi’s Worcester. Khanyisa Community Development Organisation bought items for the food parcels to the value of R5,000 at Raimondi’s The food parcels were carefully prepared by the dedicated members of Khanyisa Community Development Organisation. Their efforts represent the spirit of unity and mutual support, showcasing that community is not just about geographical proximity, but about caring for each other, especially in times of need.

The Khanyisa Community Development Organisation has long been on a mission to uplift the most vulnerable households in the community. Their Needy Households Project is just one of the many ways they reach out to the underprivileged. With the added support from Worcester Round Table 68’s R5,000 donation, they have been able to extend their help to even more households in need.

This collaboration also highlights the immense power of local organisations coming together to make a tangible difference The power of community is magnified when forces are joined, and this partnership is a clear testament to that effect.

MEETING WITH PAARL LIONS CLUB

On 17 March 2023, Paarl 44 held their monthly business meeting.

The Paarl Lions Club paid a visit to discuss their upcoming charity events and community service initiatives. They further shared their vision for supporting the local community and we shared our upcoming projects as well as the projects which we are currently busy with

We shared ideas for collaborating on future projects and the meeting was a great opportunity for both Paarl 44 & Paarl Lions Club to network and strengthen our partnership for the betterment of the community.

Overall, the meeting was a great success, and both groups left feeling inspired and motivated to work together for a noble cause

Agulhas 245 het ons Jaar afgeskop met 'n baie suksesvolle eerste Event.

Ons het 'n 4x4 dag gehou by Aniston wat baie suksesvol was ons het wel oor die 75 voertuie gehad en dit was 'n baie suksesvolle dag

Ons het geld ingesamel en van dit geskenk aan die Aniston gemeenskap Waar hulle opgraderings Gaan down aan die biblioteek en sop kombuis.

PITCO 2023

Op 25 Maart 2023, het Paarl 44 die jaarlikse CVC vergadering asook PITCO kompetisie gehou by ons klubhuis.

Daar was 12 uit die 16 tafels wat ingeskryf het en potte gemaak het Alhoewel dit op die dag gereën het, het dit niemand teruggehou nie en die potte het geprut met Saldanha 226 wat die eerste plek verower het.

Dankie aan al die mede tafels en tafelaars wat bygewoon het, sonder julle sou die dag nie ‘n sukses kon gewees het nie

Somerset West 31 se Biltong en Pasta Pot

Inleiding

Nou kyk, potmaak gaan nie noodwending oor wat op die ou einde van die in jou bord is nie, maar meer waaroor jy kan gesels die volgende dag. Daarom is dit vir Somerset West 31 se manne vreeslik

belangrik om die bestanddele vir dag liewer aan goeie geselskap en kamerraadskap te meet, as gramme en liters! Maar nie te min, vir elke strontpraat storie is daar tog ‘n rolletjie om mee op te vee as almal se pense dik is!

Wat het jy nodig?

• Een swart pot (duh), nommer 3 sal genoegsaam wees, maar ons stel voor gebruik ‘n platboom vir hierdie resep

• ‘n Paar makkers om seker te maak jou geselsies raak nie op nie.

• 350gr Biltong (nie te vetterig nie, net lekker)

• 500gr pasta (Skulpies is ons voorkeur)

• So bietjie olie

• 2-3 uie, kap hulle fyn, maar nie te fyn nie, ook nie te grof nie, net lekker.

• 3 knoffelhuisies (om die katte weg te hou)

• 200gr tot soveel as wat jy verkies, Bacon. Lekker fyn gekap.

• 250gr Mushrooms, daai lekker bite size enes.

• 1 blokkie bees aftreksel.

• 2 koppies kookwater (nee, nie jou kookwater talent op die rugbyveld nie)

• 1 koppie witwyn, half vir jou, half vir die potjie.

• 1 sakkie tamatie paste. Daai pizza jam.

• 1 koppie volroom melk

• 250gr of meer cheddar-kaas, want kaas

• 1 koppie vars room.

• Swart peper met bediening

Hoe maak mens?

1 Raait, as die vuur loop en die gees is aan en die waarheid is in jou linkerhand, maak seker by jou gaste hoe laat hulle wil loop lê, want wat volg, maak magie vol en ogies toe.

2. Verhit die olie in jou pot tot warm en braai die uiwe en knoffel tot die uiwe deurskynded lyk.

3. Nou laat die varkie refs optel. Braai die bacon en mushrooms saam die uie en knoffel tot bacon gaar is.

4. Nou stuur jy jou pel om jou dop te refill en iemand anders om die kookwater en ‘n maatbeker te bring. Meng die beesaftreksel, tamatie paste en witwyn in die maatbeker met kookwater en gooi in die pot Roer deeglik deur

5. Nou kom die magic. Gooi eers die biltong in, roer deur en dan die pasta. Meng die besigheid behoorlik. Wenk: uit ondervinding het ons geleer dat geduld hier belangrik is, moenie haastig raak met die kole nie. Sit nou jou deksel op en laat prut vir so 5min voor jy weer die deksel afhaal. Die pot lyk baie souserig, dis reg so!

6. Nou issit vir die suiwel. Gooi die room, melk en kaas in en meng lekker. Onthou om daai kameraad met die sleutel tot die yskas op sy tone te hou…

7 Laat hom nou rustig prut, met die deksel op vir so 10-15min Die pasta behoort nou soos die “grease koppe” sal sê, “el dente” te wees. Nou bestuur jy net die souserigheid van jou pot, wees versigtig dat die pot nie aanbrand nie. Roer gereeld deur en indien jy moet, gooi bietjie water by.

8. Sodra jy happy is, is almal happy. Bedien met swartpeper en geniet jou vriende, want vriende is die rede om die lewe te geniet!

Caledon 185 Guinness Pot

Ingredients

2 tbsp olive oil

2.5 lb / 1.25 kg beef chuck , boneless short rib or any other slow cooking beef (no bone)

3/4 tsp each salt and black pepper

3 garlic cloves , minced

2 onions , chopped (brown, white or yellow)

6 oz / 180g bacon , speck or pancetta, diced

3 tbsp flour (all purpose/plain, Note 3 for GF)

440ml / 14.9 oz Guinness Beer (Note 1)

4 tbsp tomato paste

3 cups (750 ml) chicken stock/broth (or beef broth - Note 4)

3 carrots , peeled and cut into 1.25 cm / 1/2" thick pieces

2 large celery stalks , cut into 2cm / 1" pieces

2 bay leaves

3 sprigs thyme (or sub with 1 tsp dried thyme leaves)

1. Cut the beef into 5cm/2" chunks. Pat dry then sprinkle with salt and pepper.

2. Heat oil in a heavy based pot over high heat. Add beef in batches and brown well all over. Remove onto plate. Repeat with remaining beef.

3 Lower heat to medium If the pot is looking dry, add oil

4. Cook garlic and onion for 3 minutes until softening, then add bacon.5. Cook until bacon is browned, then stir through carrot and celery

6. Add flour, and stir for 1 minute to cook off the flour.

7. Add Guinness, chicken broth/stock and tomato paste. Mix well (to ensure flour dissolves well), add bay leaves and thyme.

8. Return beef into the pot (including any juices). Liquid level should just cover - see video or photos

9. Cover, lower heat so it is bubbling gently. Cook for 2 hours - the beef should be pretty tender by now. Remove lid then simmer for a further 30 - 45 minutes or until the beef falls apart at a touch, the sauce has reduced and thickened slightly.

10. Skim off fat on surface, if desired. Adjust salt and pepper to taste. Remove bay leaves and thyme.

11. Serve with creamy mashed potatoes!!

Hermanus 267-Bobaas Durban Curry

Ingredients:

1.2 kg Lamb Knuckle

2 Onions cut up in small pieces

20ml Cooking Oil

1 Pack Roosterkoek (4piece)

250G white mushroom

15-20g G/Star Mild Durban Curry

5 cloves of garlic cut up in medium size pieces.

12 baby potatoes cut in halves.

200g carrot hearts

2 fresh sweetcorn

Knorrox Chicken Stock Cubes x 2

Brown onion Soup

Half a block salted butter

Lots of pepper according to taste

Method

1. Grab a size 3 flat potjie pot place it under a medium to hot fire.

2. Add 20ml of cooking oil let it get warm enough when placing 1 piece of onion it sizzles!

3 Fry onions and garlic until brown and remove from pot and place in a separate container

4. Brown the Lamb Knuckle on high heat for about 8 minutes, add salt and 10g Mild Durban curry powder.

5. Mix 1 liter of water with 2 cubes of Chicken stock and 10g of curry powder as well as the onions fried earlier and add it to the pot.

6 Add the halved potatoes to the pot and keep the pot on medium heat for about 1 hour and 20 minutes.

7 While the meat is cooking to a soft state, place the mielies on a grid and add butter to color it to give it some color over the fire.

8. Cut the mielies in to 4 finger thickness to add to the pot.

9. After 1 hour and 20 minutes check the moisture level, add the carrots and the mielies. Let it boil on medium heat for 20 minutes.

10 Now take the rooster koek, cut it in halves and add butter to both sides, braai on a medium fire for a crispy finish

11. Lastly add the mushrooms to the pot and let it steam for 10 – 15 minutes

12. If your guest are not ready to eat simply remove heat from potjie and let it rest just keeping it warm.

13. Finally take your warmed up rooster koek halve and place it on the plate, now have a brandy and enjoy this irresistible potjie on your rooster koek.

Paarl 44 lamsboud

2kg lamsboud

250g varkspek, in blokkies gesny

15ml gemaalde koljander

15ml bruinsuiker

1 bottel droë rooi wyn

30ml botter

3ml gedroogde roosmaryn

250ml suurroom

150g droëperskes

2 middelslag uie

heel uitjies

300g jong geelworteltjies, geskil

8 middelslag aartappels, geskil en in helftes gesny

300g murgpampoentjies

pakkie sampioene

sout en peper na smaak

15ml appelkooskonfyt

15ml koekmeelblom

Sny alle oortollige vet van die boud af Marineer die boud in die wyn oornag Stop die boud met die varkspekblokkies deur met ‘n skerp mes diep snye in die vleis te maak, ‘n vinger in elke sny te steek om dit te rek en dan ‘n stukkie spek daarin te druk. Vryf die vleis deeglik in met koljander en bruinsuiker.

Smelt die botter in die pot terwyl die vuurtjie nog vlam en braai die uie. Skep die uie uit en braai die boud totdat dit effens bruin aan albei kante is. Voeg die roosmaryn en 50ml van die wynmarinade by Sit die deksel op en laat stadig prut vir 1½uur tot halfgaar Sorg dat daar nie te veel kole onder die pot is nie. Draai die boud kort-kort om en gooi nog ‘n bietjie wyn en die helfte van die suurroom oor.

Voeg nou die droëperskes by, sit die deksel op en laat prut vir 30 minute. Gooi nou die uie terug in die pot en pak die groente op die vleis in die volgorde waarin dit aangegee word. Strooi sout en peper oor. Voeg die orige suurroom by en plaas die deksel terug. Laat prut vir nog ‘n uur.

Voeg die appelkooskonfyt by wanneer die boud heeltemal gaar is. Plaas die deksel terug totdat die konfyt gesmelt het. Daarna is die potjie reg vir opdiening.

Haal die boud uit en sny die vleis in skywe. Voeg meel by die sous en roer dit tot gaar.
