We are thrilled to deliver the second issue of our in-flight magazine, FORM, at a time when we can celebrate a significant milestone — the completion of our first year of flying. It is with immense pride and gratitude that we reflect upon the journey we have undertaken together, and the remarkable strides we have made in delivering exceptional services to our beloved community of Members, family and guests. And last, but certainly not least, all our investors, supporters and Members — our ‘ohana — who have helped pave the runway for us to get here.
To put it into numbers, at the time of this writing, ROAM Maui has flown 333 flight segments for a total of 1,665 hours, with a total passenger count of 4,803 and an average utilization of 37.65%.
There is, of course, always room to improve. We constantly learn from our Members how to continue elevating the overall travel experience. From refining our service levels even more, to marketing, recruiting and signing up more Members in order to increase our flight frequency out of each City Club on the mainland. But with FORM, we are taking a moment to redirect the energy spent on solutions and perfecting our services, to instead reflect on the community we’ve built and celebrate the relationships that have blossomed from it.
FORM is a place for friends, to celebrate how grateful we are to have the ability to live and thrive on Maui and travel in style and with grace, the ROAM Maui way. FORM is a place for storytelling, like the Member profiles on Alex Fielding’s vision for sustainable growth for the new space economy that’s happening right here in Kihei, and Ed Freedman’s work with so many in our community with his Stable Road Foundation named after his historical residence in Paia, while we get personal with Chef Charlie Palmer and the special place that Maui holds for him and his family. We even catch-up with Maui’s own rising star, Lily Meola, talk favorite food trucks and go behind the lens of photographer Daniel Sullivan and much more.
FORM strives to be a source of inspiration, knowledge and connection for our community. We hope that within its pages, you find moments of joy, discovery and a renewed appreciation for the extraordinary experiences that await you both in the air and on the ground. The tight-knit and supportive Maui community is one of the many reasons ROAM Maui loves calling this incredible island home. This sense of ‘ohana and aloha is showcased to the world when one of their own is doing great things and representing Maui with an exuberant sense of class and style that is all her own. From performing at the Hollywood Bowl among many of the greatest musicians and entertainers of our time to celebrate long-time friend and supporter, Willie Nelson, to touring the world and grinding it out in the studio, Lily knows that Maui is behind her every step of the way. Her powerful lyrics and soulful style were seen around Maui as she performed locally since she was 11 years old — long before she stunned the world with her talents while performing “Daydream” and receiving the golden buzzer on America’s Got Talent. As long as Lily is out there living her daydream, the Maui community is there to continue lifting her up while ROAM Maui keeps her coming home.

Flying High
Q: You were in the line-up for what was an incredible, star-studded rock-and-roll / outlaw country birthday party of all-times, Willy Nelson’s 90th birthday party at the Hollywood Bowl. How did it feel to be taking the stage with all these luminaries in music?
A: I’m so in awe of Willie and the community that he has built around him. His birthday weekend was a time I will remember for the rest of my life. I kept pinching myself, thinking, “am I really allowed to be here right now?” I feel so fortunate to have been able to be a part of such a legendary event.
Q: Lady Gaga, Katy Perry, Bruno Mars… just a few names that were signed by a major record label, then dropped before earning a second chance. You have a similar story. What did you learn from the first time and how have things changed this time around for you as you approach the music industry as you navigate your career?
A: Although it’s strange, I found some much needed comfort hearing stories of certain artists being dropped. At first I was devastated, I felt betrayed in a sense but also this slight feeling of relief. I had been signed for a while and there were a few moments that really set my project back and delayed me from ever getting the chance to put any music out. The thought of doing things my own way was exciting but also terrifying… I was pretty naïve being a girl who literally grew up in a small town on an island then all of the sudden thrown into a major label record deal. So since then, I’ve grown so much as a person and an artist. I have my own vision for things and learned that I could go much further than I thought independently. So, looking back I’m so happy to be where I am today and although things don’t always pan out how you pictured, they would sometimes be for the better. I’ve just signed with a new label, and we are currently working on more music to come!

Q: Who do you lean on for advice with your career?
A: I have a wonderful small community of friends and family that I trust their opinions on my music. So, whenever I have something that I’m working on I love to send it to them to see how they react, it always feels like a good test.
Q: For aspiring artists out there, what’s your advice on how to stay focused and grounded?
A: Staying focused isn’t my strong point, so I can’t give much advice there… but I do know that if you have the desire in you to pursue something, you might as well give it a try and see where it takes you. If that sense stays, it’s going to fuel you to keep going. As far as staying grounded, for me it’s all about zooming out and looking at the bigger picture… that has always given me the perspective of how small we all are in the universe.
Q: What’s new in your world… how does the next year look for you?
A: Well, I have quite a few little things in the works, I’m currently working on building a podcast dedicated to sharing people’s journeys and stories in hopes to give the listener tools, advice, and inspiration to tackle their own dreams. I’m also writing and producing new music that will hopefully be released very soon, along with some fun shows coming up!
After Lily’s audition on America’s Got Talent, judge Heidi Klum said, “I’m speechless. Just everything about you, you just light up. I see a light around you. Immediately, I fell in love with you. I really, really like you, so I’m going to push this golden buzzer for you.”

Home on Maui
Q : Please tell us about growing up on Maui — your favorite childhood memories and growing up in a musical family and with musical friends?
A: Like I said earlier, growing up on Maui was so special. The fact that I spent pretty much every day surrounded by nature makes me so grateful. Hiking to waterfalls, diving for shells and surfing baby waves. Despite being a remote island chain, Hawaii has a booming music scene. So many talented musicians and vocalists that inspired me… Paula Fuga, Jack Johnson, Israel Kamakawiwo‘ole, the list goes on.
Q: How does living on Maui affect your writing?
A: While traveling more in my adulthood I’ve come to the realization that being raised on Maui was extremely special. The culture, the nature, the community and the respect. MAKING SPACE with ROAM Maui Member, Alex Fielding

For many of us, space feels like something that is literally a world away, something we cannot control, clean up or make a better place. ROAM Maui Member Alex Fielding and his team at Privateer are working tirelessly to create the data infrastructure that will enable sustainable growth and accessibility for the new space economy. It certainly doesn’t feel like a world away when you hear him casually discuss the connection to our daily and future lives as this directly correlates to our communications, financial transactions and the climate. Taking a pro-active approach to making space predictable, safe and sustainable opens the doors to an expanding exploration of space and commerce.
To spend any amount of time at all with Alex, discussing his work feels like a gift. As a society, if we could bottle the amount of passion, dedication and persistence that he puts into his mis-
sion every day, we could do the unimaginable. Access is critical, and we are seeing these costs continue to go down, which will be important to so many upcoming missions and discoveries. “To put this into perspective, we are putting up a satellite later this year and the amount of money we are paying SpaceX to put that asset on orbit is less than we spent on regulatory and attorneys to get the paperwork done,” added Alex.

“My daughter insists every night that we walk outside for her to see the moon before she goes to sleep. She asked me the other night if she could go to the moon and I, of course, told her that she could absolutely go to the moon. She not only wanted to confirm she could go to the moon but wanted to drive the rocket and take me and her mommy. This would have been science fiction when I was a kid but today, this is proving that it can be science fact.”
An inventor who holds several patents in robotics, machine learning and artificial intelligence, Alex grew up in the San Francisco Bay Area, and likely never imagined that he would now be living on the beautiful island of Maui and collaborating with a team of hand-picked individuals all at the top of their games. His career journey began as an engineer at Cisco Systems and Apple before he would form several companies including Exodus Communications, Ripcord Networks and later Ripcord, Inc. while working as CTO at Power Assure and Vice President at Vigilent — all leading to serving as the CEO and co-founder of Privateer Space, which he founded with Apple co-founder Steve Wozniak and MacArthur Genius Dr. Moriba Jah.
With service and environment in-mind, Privateer joined the Maui Ocean Center on Earth Day for a beach clean-up adventure as part of their Honu Heroes program, which left everyone ready to do even more to further protect the wildlife and preserve Maui. Philanthropic roles have always been a part of Alex’s personal and professional life. He has served on the board of directors of the Institute for the Study of Knowledge Management in Education, CodeWarrior Foundation, and California Women Empowering Women. He has been an advisor to TEDMED and TED WED and a donor to UNICEF. Alex is also a contributing member of two NIST working groups on the Security Content Automation Protocol (SCAP).

The Mission at Privateer
Wayfinder is the first of many apps to be built on Privateer’s data engine, allowing us to explore space on their website — all from the comfort of our own homes. Alex took some time to explore this app with me, which is an open-access and near real-time visualization and tracking of satellites and debris orbiting the Earth. They have taken this larger-than-life concept that seems impossible to properly comprehend and created an easy-to-navigate way to see what’s happening up there — as Alex reminded me, “Space is not all that far away, especially when it’s nothing for us to hop on a plane and fly several thousand miles in a day.”
Experts break this down a step further to say that the edge of space as we know it is only about 62 miles above sea level and the International Space Station maintains an orbit at approximately 250 miles above sea level. Wayfinder’s proprietary knowledge graph technology enables the monitoring, assessment and verification of space-actor-behavior; and as he explains, the Crowsnest feature allows anyone who is operating a satellite to do so safely and get out of each other’s way when necessary. “Humanity is inspired and excited to unlock this new domain,” added Alex. “The things that are coming are not from governments, but instead from companies with a mission to better our society, globally.”

A lot of low orbiting objects are either untracked or poorly tracked, but they pose a real hazard to our everyday services and future missions, which are becoming a reality at a very fast pace. As space travel becomes more accessible, human lives face real risks as we travel through crowded orbital pathways. It’s currently a bit like the ‘Wild West” up there with more than 60 UN-recognized countries participating in space alongside NGOs, academia, and private industries, but no one is claiming responsibility or ownership of the consequences of this global issue.

Life as we know it down here on Earth depends on spacebased services all orbiting safely — from location and internet to climate monitoring, banking and telecommunications. According to Privateer, as Earth orbit becomes more accessible and, thus, more crowded, this proprietary data and intelligence platform removes ambiguity, enabling stakeholders to protect their capital, optimize investments and ensure the safety of humans in space. Alex and his company are building globally accessible, open, and transparent intelligence technology to keep space safe for all humankind.
There is no reason that space cannot be the shared responsibly if we work together, globally. The future of the space economy seems boundless, and the pursuit of opportunities in space is rapidly evolving. But humans have believed previous frontiers to be immeasurably vast, and we neglected to put forethought into our impact as we explored. Now is the time to learn from our mistakes and establish how we will take care of space to ensure future generations can flourish on the ground, in Earth orbit and beyond. Alex added, “It’s what we are doing by going to space and taking a proactive approach to the cleanup that improves our lives on Earth.”
We are familiar with many of the mind-blowing discoveries and missions by NASA over the years including the Landsat program, which is still proving to be immensely helpful to the success that NASA and Privateer are now having in paving the way to the future of space travel and understanding how to better protect space and our future on Earth. Landsat 1 was launched back in 1972 to monitor our planet’s landmasses as a critical step in merging space and remote-sensing technologies to better inventory and manage our resources on Earth.
Six degrees of separation is alive and well as ROAM Maui’s managing partner, David Young’s father, James Young, received the Public Service Medal in 1997. This is NASA’s highest honor that he received for his contributions to several major projects, namely VIIRS, one of the first meteorological sensors sent into space, and the original Thematic Mapper, a program that would later become Landsat. Thanks to the
multiple operations and the people involved with this research and monitoring for over 50 years, NASA/USGS Landsat Programs provide the longest continuous space-based record of Earth’s land in existence, which is essential to how we approach our resources and environment. “I can’t think of another running mission at NASA that was started and still running an active mission in space,” said Alex. “That is how pivotal the work of those associated with Landsat has been to our humanity, and our ability to understand Earth and our path forward.”
When it comes to Alex’s travel down here on Earth, ROAM Maui is proud to be his choice to shuttle him along with his friends and family to and from the mainland. With his forward-thinking approach to life, he is already excited to see ROAM Maui take this community of like-minded travelers and launch ROAM Space in his lifetime. Today, Privateer and ROAM Maui remain focused on the ease and safety of accessibility — Alex is passionate about continuing to find ways that humanity can come together to work on joint missions to get us to the next step while keeping space accessible and safe.

FORM Favorites: Navigating Maui Food Trucks

Figuring out where to find Maui’s best food trucks used to require frequent checks of their social media accounts, as the owners had all taken to heart “have wheels, will travel.” While some mobile restaurateurs still alternate between locations, many have joined forces in creating food truck parks that not only offer reliable hours, but also picnic-style seating, restroom facilities and, in some cases, live entertainment.
These days, most take credit cards and Venmo as well as cash. Be aware that Sunday remains a rest day for many, and social media is still a good method for discovering specials or altered hours. Here are five favorite enclaves, with a few of our favorites in each:

The Kīhei Food Oasis can claim pride of place, offering lovely foliage and shade with outdoor seating and restrooms in South Maui Gardens, 30 Alahele Place, off South Kīhei Road, across from Kalama Park.
Howzit Eh ( howziteh.com) pays tribute to the Canadian presence in Kīhei through its unique poutine fusion menu. While you can get a classic poutine with cheese curds and beef gravy atop skin-on fries, try the “Eh Braah,” incorporating Portuguese sausage and kim chee with a jalapeño cheese sauce, or the kalua pork version with a smoky pineapple pork gravy and slow-roasted pork. There’s even a vegan version with smoked tofu, white truffle oil and a veggie gravy. Monday through Saturday 11am to 8pm.
Empanadas (turnovers), choripan (baguette sandwiches) and other Argentine street food are on the menu of El Carrito Maui (808.419.5403). Visit its Facebook page for pictures of mouthwatering specials such as pork sausage choripan or humita empanada, the latter stuffed with corn, onion and béchamel sauce. Tuesday through Saturday 11am to 8pm.
If you like their classic smashburger with Wagyu beef on a Maui-made bun, Burger Boys Hawai'i is happy to double the patties (“Deuce Deuce”), triple them (“The Trip”) or quadruple them (“The Full Send”), although you’ll need to do a lot of hiking or surfing to work off the latter two. Wednesday through Sunday 11:30am to 8pm.
LAHAINA
The sugar cane train may run no longer, but the Sugar Cane Train Food Truck Park at its Lahaina depot fuels the engines of a new generation of visitors and those working nearby. It’s at 961 Limahana Place in the Lahaina Industrial Park; exit Kā‘anapali Parkway at Hinau Street, turn right on Limahana Place and follow it to the end.
Egyptian-born chef Sharif Elhadidi traverses the Mediterranean with his moderately priced menu for Shaya Fusion Cuisine ( shayafusioncuisine. com , 808.344.2809). If Greek beef and lamb gyros, shrimp and chicken kebabs, or falafel don’t appeal, consider a pasta like shrimp and scallop spaghettini or tequila chicken fettucine. Weekdays 11am to 2pm and 4 to 7pm.
Chicken tinga, pork adobo, carne asada and roasted potatoes with poblano peppers can be savored in tacos, burritos, quesadillas or plates with rice, beans and tortillas at Linda’s Kitchen Mexican Cuisine ( lindaskitchenmex. com, 808.707.2339). If the habanero salsa is too spicy, order a refreshing horchata or tamarindo agua fresca. Monday through Saturday 11am to 7pm, Sunday noon to 4pm.

The food trucks at Kulamalu Town Center in Pukalani satisfies neighbors’ appetites as well as those of visitors ascending and descending from Haleakalā or checking out nearby sights. The trucks form a cluster with seating near the Longs Drugs at 55 Kiopa‘a Street, Makawao.
Maui Cattle Company supplies the grass-fed beef for Stewz Burgers (stewzmauiburgers. com, 808.740.1961), which operates this food truck as well as a restaurant in Kihei. Its 6-ounce patties, with vegetarian and fish options, sit on housemade Hawaiian sweet bread buns and are best downed with a side of hapa fries — a blend of sweet and white potatoes. Monday through Saturday 11am to 6pm.
Since the owner of Leekam Lunch Wagon (808.385.6889) carefully makes each plate of mochiko chicken, chicken katsu or other local favorite by hand, you may want to text your order in advance with your pickup time. It’s fun, though, to peruse the lengthy menu with options such as the Kilauea mochiko chicken, served over crinkle fries with gochujang aioli, or a loco moco with beef stew or curry instead of the usual brown gravy. Tuesday through Friday 11:30am to 2:30pm.
Heidi Cramer opened a bakery in Paia in 2001 and later specialized in celebratory cakes and packaged shortbread cookies before launching her first mobile Maui Cookie Lab (mauicookielab.com, 808.300.0022) in 2020. While the rich and savory chocolate chunk sea salt cookie is understandably a best seller, be sure to sample a tropical flavor, too, such as coconut mac nut macaroon, liliko‘i oatmeal or white chocolate mac nut pineapple. Wednesday through Friday 11am to 6pm, Saturday 9am to 2pm.
KA –‘ANAPALI / HONOKO –WAI
Convenient for Kā‘anapali, Nāpili and Kapalua beachgoers and golfers, the Honoapi‘ilani Food Truck Park sits across the street from the Times Supermarket at 3350 Lower Honoapi‘ilani Road, Lahaina.
Da Best Pho & Vietnamese Food (dabestpho.com, 808.446.9088) does have an impressive menu of pho soups and bánh mì sandwiches, including unusual seafood and vegetarian versions. Yet Korean, Japanese and island-inspired dishes such as kimchee fried rice with butter garlic shrimp are also worth the wait. Daily 4:30 to 8:30pm.
One of the less common trucks with breakfast hours, T’s Island Café (808.385.2782) woos early risers with pan-fried banana bread, smoothies, sweet bread french toast and coffee concoctions from Maui grown and roasted beans. The cheery yellow truck and bright orange papaya halves are like a ray of sunshine, too. Daily 6:30 to 11am.

For those who arrive at the airport hungry, the Kahului Food Truck Parks make a convenient pit stop. Enter the triangular gravel lot from 591 Haleakalā Highway; it’s across from the Costco gas station and next to the Courtyard by Marriott.
Fans of barbecue can enjoy a literal pit stop at Al’s BBQ Pit (alsbbqpit.com, 808.264.3686). The housemade teriyaki sauce makes marinated steak and chicken plates the big draw here, although peeled garlic shrimp and crispy Korean fried chicken are also tempting. 10:30am to 7pm Tuesday through Saturday.
Tom Sribura, the chef-owner of Thai Mee Up (thaimeeupmaui.com, 808.214.3369), worked at renowned Mama’s Fish House down the road in Pā‘ia for two decades before opening his food truck, popular with herbivores, carnivores and gluten-free diners alike. John Baran is an internationally recognized artist and photographer who has the distinctive ability to make us feel something from the intensity that can be seen in everything he produces. ‘Wave’ was shot at East Beach in Santa Barbara. While summertime waves are often difficult to find along this iconic strip of coastline, John got lucky with this special photo. “I always say that Mother Nature makes the art, I try to find it,” said John. “She [mother nature] gave me this one for free, though I can’t disclose the exact location as it’s a special place where magical things happen.”
The Chardonnay and Viognier were hand-harvested from La Presa Vineyard in August 2022, and Bion fermented the grapes entirely in stainless steel tanks with a New Zealand Sauvignon Blanc yeast that preserves the natural acidity and elevates the citrusy and exotic fruit notes in the aromas and flavors. Post fermentation, he racked the wine to 100% neutral French oak barrels and aged for five months to pick up very subtle oak nuances. “We only bottled 120 cases of each wine in May 2023,” added Bion. “I love these wines with Indian and Thai dishes with medium heat.”

RdV Delaplane, Virginia
In 2001, owner Rutger deVink began his search for a new terroir that had the potential to produce the next great American wine. After searching both coasts, he discovered Lost Mountain in the foothills of the Blue Ridge Mountains. Legend has it that George Washington, as a young surveyor, inspired the name while reviewing new maps of the region. He noted that this range had neglected to be included, stating, “how did you lose a mountain?” In jest, his cartographer corrected the error and named it Lost Mountain.
Much like its origins, RdV has remained a hidden gem since their first vintage in 2008. And, as a self-proclaimed American Grand Cru, this boutique winery will appeal to those who follow the best estates of Napa and Bordeaux. However, the wine is neither singularly Napa nor Bordeaux, it is something entirely its own, “a revelation,” as Robert Parker has said. That’s most likely thanks to Joshua Grainer, the winemaker at RdV and one of 500 individuals worldwide to have earned the title of Master of Wine as well as the work of Eric Boissenot, famed consultant of Bordeaux’s classified growths.

Crimson Lane Vineyards Linden, Virginia
Although newly opened in March of this year, Crimson Lane Vineyards has been in the works for over 20 years. Owners Tom and Deanna Herrity, along with Dominick Fioresi (Deanna’s brother), seek to honor Virginia’s distinctive terroir while creating a community of like-minded wine enthusiasts. They’ve built a stunning mountainside tasting room with the help of Napa-famed architects, Backen & Backen. Inspired by traditional agricultural forms, it not only invokes the rich farming history of the area, but it also seamlessly blends high-end moments of curated luxury with the comfort and inclusivity that is intrinsic to the Crimson Lane experience.

Ed Freedman’s Dedication to Giving Back on Maui

FOR MANY ON MAUI , ROAM Maui Member, Ed Freedman, is simply known as the local surfer and kitesurfer who pours every bit of his time and soul into the incredible work that he and his team are doing at the Stable Road Foundation. While this is a very true assessment of the guy we know today, this legendary entrepreneur spent about 20 years serving as Founder and Chairman at Total Merchant Services, which he sold in 2017 so that he could focus on family and philanthropy, full-time. “When I moved to Hawai'i years ago, I knew I wanted to set down deep roots here,” Ed said. And that’s exactly what he did making Maui his permanent home. “Hawai'i has its own unique culture, its own rich history — and for me, it’s very important to respect that in every way,” he added.
The motto at Stable Road Foundation is “feel the impact,” which Ed and his team practice in everything they do, rolling up their sleeves and becoming involved at every level. The foundation is committed to providing children with everything they need to grow and thrive while also protecting the places where they live since these two missions are intertwined at the core. “I’ve learned so much from my Hawaiian friends and neighbors,” Ed said. “They’ve inspired me to get involved and really become a part of the community here.” He is personally fully invested in lifting up those in need, particularly children living with special needs and those trying to overcome difficult circumstances. Ed has lived on Maui since 2014 and he has never felt more at-home than he does now. There is an unmistakable spiritual feeling, or mana, as they say in Hawaiian, that is experienced by so many fortunate enough to spend some time here. Ed said, “The first time I set foot on the Stable Road property, I knew it was something special. I hoped to get a shot of a turtle on the beach that night. As I waited, I watched as two, six, 15 and soon 84 turtles came up to sleep on the beach in front of me. It was truly a once-in-a-lifetime shot!”

The Strength of Community with Hui No‘eau Visual Arts Center
COMMUNITY CONTINUES TO BE SUCH A BIG PART
of ROAM Maui. We, along with ROAM Maui Members, work with the community to bring more awareness and support local endeavors such as the impressive team behind the Hui No‘eau Visual Arts Center. The center offers over 200 hands-on art classes, special exhibits and other unique opportunities each season, it’s open to the public with free admission Tuesday – Saturday, 9am – 4pm.
As the site of an early Maui sugar mill and a historic home built in 1917, the Hui’s Kaluanui Estate reflects some of the unique features of Upcountry Maui from a century or more ago. Guests can learn more of this fascinating history through a guided or self-guided tour. Don’t forget to also visit The Gallery Shop at Kaluanui, which is filled with handmade items from over 75 local artisans and unique museum quality gifts. All purchases help support the Hui and local artists. Many of the items are made in the Hui’s very own jewelry, ceramics, printmaking and glassblowing studios.

This is a community art exhibition celebrating marine biodiversity. Hui No‘eau is thrilled to collaborate with Gar Waterman, the Hui’s 2023 Artist in Residence, to engage the community in the discovery, celebration, and conservation of Hawai'i’s marine ecosystems. Artwork must feature an existing ocean species found in or near Hawaiian waters. This exhibition will include Gar Waterman’s completed nudibranch sculpture, dynamic artwork created by Maui’s school children, and works of marine-themed art created by local artists.

The seasonal menus are created around fresh ingredients that can be locally sourced whenever possible. Like so many Members, Palmer looks forward to being able to board ROAM Maui and allow himself to begin the process of decompressing and preparing for quality time on Maui with his friends and family. It’s a life of extremes for this celebrity chef as he bounces between the high-octane lifestyle in the kitchens to enjoying the spectacular sunsets with his family on Maui — all while managing his thriving hospitality and consulting projects with the Charlie Palmer Collective.
Palmer made headlines again this spring when he decided to bring a Taste of Aureole experience back to Manhattan at The Knickerbocker Hotel. This taste (literally) of what is to come brought Palmer back together with a collection of the establishment’s impressive alumni like Top Chef’s Bryan Voltaggio, Dante Boccuzzi, Marcus Ware, Christopher Engel and pastry chef, Richard Leach to create and present this re-imagined 5-course menu with sommelier-curated wine pairings. The original Aureole locations in New York City opened in 1988 and earned 13 Michelin stars and two James Beard awards before closing in 2020. The Taste of Aureole allowed Palmer and his colleagues to come together and serve amazing food for three sold-out nights.

It’s this fast-paced lifestyle that Palmer has come to know as “normal” that affords him the opportunity (and need) to escape to Maui with his wife and family to unwind and enjoy the laid-back lifestyle that he fell in love with about this area all those years ago. From long walks on the beach to spending quality time in the kitchen with friends and family, there are no shortage of ways to unwind and savor the local lifestyle when it comes to his time on Maui. “Over the years, I’ve been lucky enough to make frequent visits to Maui, creating countless memories with new friends, old friends, and family alike,” adds Palmer.
The Monica Vitti Cocktail Ingredients
• 2 oz Gin (Winestillery London Dry Gin)
• ¾ oz simple syrup
• ¾ oz lemon juice
• 1 oz egg white
• ¼ oz Graza “drizzle” olive oil
Method
Add gin, simple syrup, lemon juice, olive oil and egg white into a shaker and dry shake (without ice) vigorously. Add ice and shake again until well-chilled. Strain into a chilled coupe glass. Garnish with a basil leaf and enjoy.

Sea Scallop Sandwiches with Citrus Juices
From Great American Food by Charlie Palmer Serves four
Ingredients
• 1 cup chicken stock
• 12 large fresh sea scallops
• 4 large baking potatoes, peeled, washed and well dried
• 2 tablespoons superfine flour (such as Wondra)
• ¼ cup fresh lemon juice
• ¼ cup fresh orange juice
• 2 cups safflower oil (or other vegetable oil)
• 3 tablespoons unsalted butter
• 1 tablespoon fresh chervil, chopped
• 1 tablespoon fresh chives, chopped
Method
Line a sheet pan with parchment paper. Set aside. Place stock in a small saucepan over medium-high heat. Bring to a boil. Continue boiling for about 5 minutes, or until reduced to 1/8 cup. Set aside.
Slice each scallop, crosswise, then into ½ inch discs. Pat dry. Shred potatoes, lengthwise, on a mandolin or other vegetable slicer set to a very fine thickness. Place in a clean, thick, cotton kitchen towel. Pull up corners of towel and tightly squeeze until all the water has been pulled from the potatoes. Fluff up the potatoes and divide them in half. Use one half to make 12 small mounds on the prepared sheet pan. Dust each mound with a bit of the flour.
Slightly overlap 2 scallop discs on top of each mound, season liberally with salt and pepper to taste. Use the remaining potatoes to cover each of the scallop-covered mounds evenly, season lightly with salt and pepper. Dust each sandwich with remaining flour. Do not press layers down.
Line a sheet pan with double layers of paper towels. Set aside. Strain citrus juices through a fine sieve and set aside. Preheat oven to 275°F. Place 1 cup of oil in each of the two 10-12-inch nonstick sauté pans. Place pans over medium-high heat and heat for about 2 minutes, or until oil is almost smoking. Using a spatula, carefully place 4 sandwiches in each pan, making sure that they hold their shapes. Lower heat slightly and cook for approximately 5 minutes,
or until bottoms are gold-brown and crispy. Carefully turn and brown the other sides. When well browned and crisp, remove from pans onto lined sheet pan to drain. When well drained, lay out each sandwich on unlined sheet pan and place in preheated oven, with door open, to keep warm while preparing sauce.
Add citrus juices to reduced chicken stock. Place over medium-high heat and bring to a boil, continue boiling for about 4 minutes, or until sauce coats the back of a spoon. Whisk in butter, a bit at a time, until well incorporated and smooth. Check seasoning. Add coarse salt and white pepper, if necessary. Stir in herbs.
Spoon an equal portion of sauce onto each of the 6 warm serving plates, making a circle in the center of the plate. Lean 2 sandwiches up against each other in the center of the sauce. Serve immediately.
Note: You can use clarified butter to fry sandwiches; however, it is costly, a lot less healthy, but makes a much richer sandwich. On the other hand, much of the butter is drained off, so go for it if you feel the urge. “I kept the sauce simple, with an intense flavor that enhances the sandwiches by cutting their richness with pungent acidity,” adds Palmer.

A deep dive into Italy’s sleeper of an island…
Sicily is everywhere now, thanks to sultry Season 2 of The White Lotus. But further out in the Tyrrhenian Sea, there’s another island that’s every bit as scenic and soulful, and far less crowded. Sardinia is where Italians go for their vacations on the sea, so much so that you will rarely hear English spoken here. The island’s rugged interior is dotted with stone nuraghi — monumental structures dating back to between 1900 and 730 BC — that number in the thousands and are found only on Sardinia. Small towns and villages rich in folklore and ancient customs and traditions also characterize the dry, hilly inland areas.
But Italians come to Sardinia for the sea, and you should, too. The island’s more than 1,000 miles of coastline shelter some of the Mediterranean’s most stunning beaches, from
cliff-ringed pebbly coves to soft, pastel-colored sandy shores that stretch for miles, all lapped by astoundingly clear waters. We are partial to the Gulf of Orosei (Golfo di Orosei) for its wild beaches accessible only by boat or rigorous hikes, and to the broad swathes of undeveloped seafront and family-friendly beaches along the Pula coastline south and west of the capital city of Cagliari. Here, enjoy the comforts at upmarket Forte Village, a sprawling complex of eight hotels featuring several all-inclusive options. Another favorite near Orosei is Alba Dorata Resort, which is a low-key resort favored by Italians, where units have kitchenettes, available meal-inclusive plans and the beach is within walking distance.

SOUTHERN AFRICA Safaris, culture and history lessons…
Everyone expects to see wild animals on an African safari, but nothing can quite prepare you for the sheer multitude of wildlife that lives in (and out) of Southern Africa’s game parks and unfenced reserves. Consider this land- and cruise-based safari with CroisiEurope River Cruises, featuring the Southern Africa Explorer that is well suited to families traveling with older kids — our 11-year-old daughter did fantastically on the trip. The safari was filled with big adventures, from a flight in a 4-seater Cessna to multiple jeep game drives, transfers by boat and a helicopter ride over Victoria Falls. Along the way, we saw three of the Big Five, including lions, elephants and Cape buffalo along with more impalas, hippos, warthogs and baboons than we could possibly count.
Equally as important for our daughter — and for the entire family — was the opportunity to see and learn more about the culture and history of South Africa, Namibia, Botswana and Zimbabwe. We live privileged lives so it was equally important to explore ways the next generation can help make the world a better place. Learning about the darkest days of South Africa’s apartheid period, the ongoing struggles there and in Zimbabwe for economic opportunity and stability, how little a rural clinic in Namibia can do to help its population, or how climate change threatens the wildlife we gushed over in Botswana’s Chobe National Park… it was an eye-opener and will stay with us for years to come.

VANCOUVER ISLAND AND THE SUNSHINE COAST A slow-paced, seaside adventure…
For families looking for a combination of local culture, charming seaside towns and spectacular natural scenery and wildlife, Vancouver Island has it all, and more. Trips to the island usually begin in charming Victoria, the provincial capital that feels more European than Canadian. The waterfront Inn at Laurel Point is a short walk or bike ride to downtown, where afternoon tea at the landmark Fairmont Empress is a must-do. From there, many travelers head to Tofino, the remote Pacific Coast town that lures summer visitors in search of whales, tasty waves and pristine beaches.
Far less crowded, even in the summer months, is the east coast of Vancouver Island, which in combination with British Columbia’s Sunshine Coast — the west coast of the BC mainland — offers a delightfully low-key vacation for hikers, paddlers,
bird-watchers and foodies. We spent a lovely day and night at the Old House Hotel & Spa in Courtenay, and explored Comox’s picturesque harbor, beaches, forests and tidepools before moving on, via ferry, to tiny Madeira Park, where we cooked out, went on a boat tour, hiked, and counted harbor seals while based at the Painted Boat Resort
The only thing we were missing was more time — the “loop” tour from Vancouver to Victoria, up the island’s east coast and across to the Sunshine Coast and back down to Vancouver is most ideal when you have a week to soak it all in.

SWITZERLAND’S BERN CANTON Lakes, Alpine peaks, chocolate and cheese…
Switzerland is every bit as beautiful as it appears in photos, and the Canton of Bern offers the best of Switzerland in one geographically diverse state. The capital city of Bern is storybook Europe, with half-timbered houses and painted gingerbread trim, rustic taverns offering fondue and rosti and a picturesque setting at a sharp bend on the Aare River. During the summer, do as Berners do, and brave the chilly waters of the Aare for a midday swim or inner tube ride.
Bern is just a short train ride to Interlaken (this is Switzerland, after all, where virtually every place is reachable by train, cable car or cogwheel rail), which sits between two idyllic lakes, Thun and Brienz. Savvy travelers head here for the big scenery and for big lake adventures, from kayaking and lake cruises to tandem paragliding. Looming large — literally and figuratively — over Interlaken is the Jungfraujoch, which, at 11,333 feet above sea level, is the highest train sta-
tion in Europe. The trip from Interlaken takes a little less than two hours, via a mountain train, a modern cable car and a cog wheel train that climbs up the final stretch. At the top, there is snow-cover year-round, an ice palace, numerous viewpoints, a snow park, ziplines, restaurants and because this is Switzerland, after all, a Lindt chocolate shop — all conveniently located at the highest altitude in the world.
Just be sure to pack for the weather — even in the middle of summer, you will need to bundle up for the Jungfraujoch. Back in Interlaken, the Victoria Jungfrau Grand Hotel is as posh as its name suggests, while The Hey Hotel has a more modern, laid back vibe.

Welcome Home to the Coral House on Maui
At its heart, this vacation house is about creating a sanctuary where a multigenerational family can share experiences and create memories. Overlooking Maui’s southern shore with views to the ocean, mountain landscapes and other nearby islands, this home was designed to experience nature and support active lifestyles.
The home’s architecture is both contemporary and casual befitting its coastal neighborhood, intended family use and a less is better approach that results in minimalist aesthetic and restraint. A strong connection with nature and livability drives the arrangement of Coral House’s main gathering spaces. A covered lanai sits between the pool and interior living, dining and kitchen spaces. Large pocket doors open to merge the exterior and interior spaces. These doors allow for an open plan with kitchen, dining and living areas integrated into a single casual space that uses a unified language of material finishes and detailing.

The home’s flat roofs are tiered for scale and designed with large eave overhangs protecting the lanai spaces and interiors from sun and rain. Second-story living spaces are set back from the ocean side of the home due to development requirements, and a green roof provides these spaces with an upper garden and ocean views. Photovoltaic solar panels on the upper roof are hidden from view below. Exterior walls are designed with durable materials such as coral stone and aluminum brise-soleil screens that provide shade and privacy from the street and side neighbors.

Lilikoi’s Forever Home
ROAM MAUI IS FULLY COMMITTED TO SUPPORTING local organizations and the Maui Humane Society continues to be at the source of so many success stories for dogs like Lilikoi. In a rather short amount of time, Lilikoi went from being somewhat aloof in the chaotic environment of the over-crowded kennels to meeting her soul mate, flying in style back to the mainland and now chasing rabbits in her new home in the Pacific Northwest.
“I secretly thought I could convince my mom to adopt another dog, but I fell in love with Lilikoi’s cuddly and sweet nature,” says Megan. “She loves holding hands and laying in laps.”
Megan had a lot of love to offer and Lilikoi needed a true companion. Thanks to the tireless work by everyone at the Maui Humane Society, we often hear of these types of success stories, and we hope that more people like Megan and her mom continue to foster and adopt dogs to provide sweet dogs like Lilikoi a new lease on life. Lilikoi’s favorite activities on the mainland now includes running through the mud, frolicking in the snow and chasing bunnies — Megan added that her first bunny encounter was hilarious for all involved.
“Within 24 hours she was thriving,” adds Megan. “Lilikoi obviously lived with a family before she was abandoned because she immediately knew what a couch was and loves small children. I could go on forever about how sweet she is.”

SPOTLIGHT: Assistance Dogs of Hawaii
FORM Magazine is proud to highlight the important work that Assistance Dogs of Hawaii is doing to bring smiles and a sense of freedom to so many every year. This 501(c)(3) charitable organization provides children and adults with disabilities professionally trained dogs to increase their independence and enhance the quality of their lives.
Several of these vital programs include:
Service Dogs: Service Dogs are trained to assist people with disabilities by performing tasks such as pulling a wheelchair, turning on and off lights, opening doors and retrieving items that are out of reach. Service Dogs provide their partners with the freedom and confidence to lead more independent lives.
Hospital Facility Dogs: Facility Dogs provide love and companionship to patients at hospitals and nursing homes. They work full time and live with a staff member who receives intensive training and is certified in Animal Assisted Therapy. Patients look forward to daily visits from Facility Dogs, and appreciate the wonderful, non-judgmental nature of these special dogs.
Veteran’s Program: Therapy Dog Teams visit veterans with physical disabilities, amputations and PTSD at local agencies around the state. These teams are proud to serve the men and women who bravely serve our country. Learn More assistancedogshawaii.org
