Before air travel became relatively affordable, the ‘Great Australian Road Trip' was the only option for many families needing to escape the rat race of suburbia. For me, many an hour were spent gazing dreamily out the side window of the family-mobile, the landscape morphing from dull concrete-grey of the city, to a million different shades of green, brown and spectacular blues, as we were transported to a world far away from home and school and the streets on which we’d ride our bikes. There was a big, wide world out there to explore. A world of trees and meadows and farm animals and towering gums and endless surf and a million stars illuminating the night sky. And in between the hundreds of kilometres of ever-changing landscape were places; towns – with their wide and deserted streets, architecture from bygone eras and dusty pubs lined with utes out front, and the ubiquitous dog walking aimlessly in the gutter.

It was in these towns, after the car was refuelled and legs were stretched, that adventures were had. It was in these towns where places were visited, and things were done and people were met. Funny people, some old with their hands and faces etched with dirt and lined from hard work, and stories of life on the land. They would show off huge machines, and farm sheds, and tractors, and silos of grain, and dams, and bottles with labels; frayed and faded from years in the sun. And they would

tell stories of their plight, of the hardships and victories; so proud of their produce and keen to share the fruits of their toil. And a keepsake was bought in each farm shop, and off we would travel to the next town and the next adventure, to hear another story and sample another families hard work and devotion.

Australia, and the wider world, is filled with places, and people, and stories; of lives committed to the land and the pursuit of turning dirt and sun and water into glorious produce to fuel our bodies and enrich our souls. It is these regional heroes who bring food to our tables and who fill our glasses with wine, beer and wondrous spirits which lubricate society and tantalise our souls. And for those still willing to cram into the family cruiser and venture beyond to roads less travelled, there are still adventures to be had, and people to be met and stories to be heard. Venture out and meet our regional heroes; and raise a glass to their hard work and a life dedicated to the land and producing the goods which sustain both our bodies and souls.

Foxeys Hangout

The Fox's Tale

The Foxeys Hangout label is inspired by the tales of massacre and murder surrounding an ancient eucalypt that once stood at the corner of Balnarring and Tubbarubba roads on the Mornington Peninsula.

In the 1930s, two fox trappers used the tree as their scorecard, hanging the corpses of their day’s shooting from opposite branches. In 1946 one of the trappers, Old Jack, was found murdered at his home near Foxeys Hangout. Locals continued the practice of hanging fox corpses for decades but eventually it petered out. From the early 1990s wooden effigies of foxes hung from the tree, reminding passersby of its grisly past.

In 2011 the tree, long dead, was moved to the side of the road. A healthy new sapling now grows in its place.

The Winemaking

We believe great wines come from great vineyards. Healthy soil grows healthy plants and healthy grapes, allowing each site’s natural character to tell its own story through the wine.

Sustainability is at the heart of everything we do: Foxeys Hangout winery is proud to be certified biodynamic by Southern Cross Certified (SXC). Ours is the first winemaking facility on the Mornington Peninsula to receive this certification.

Our White Gates, Scotsworth and Kentucky Road vineyards achieved full biodynamic certification for the 2019 vintage, along with our Red Hill winery. This certification is subject to external audit every year. It is your guarantee that we do much more than talk about natural, sustainable and organic practices in our vineyards and winery – we are held to stringent independent standards.

Our move to certification comes after more than a decade of practicing organic farming at these sites and supporting the many biodynamic

principles that are supplementary to organic farming. We are among several fellow premium Peninsula growers who have been exploring this sustainable approach to growing wine grapes over a long period but we believe we are the first to receive certification for our winery.

Wineries do not make flavour: flavour comes from grapes. We keep intervention to a minimum but we influence the journey from vineyard to bottle with a range of decisions in the winery. We generally use natural yeasts and bacteria to ferment grapes rather than inoculating with packets. We handle juice in an oxidative manner. We use new oak to add complexity to wine rather than to dominate it. We use only French oak (not American oak).

We like wines that are savoury and interesting rather than forward and fruity. That means picking ripe grapes with the lowest sugars possible to keep alcohols down and making wines which speak of their natural acid and tannin structures.

In 1989 Red Hill Estate commenced producing some of the finest wines from the Mornington Peninsula, and our brand is now synonymous with the very best wines from Australia’s very best Cool Climate wine regions.

Red Hill Estate was established in 1989 by the late Australian businessman, Sir Peter Derham and his wife Lady Averil. As a pioneer of sparkling wine on the Mornington Peninsula, and with 23 acres under vine, Sir Peter brought a clear vision of what he wanted to achieve under the Red Hill Estate brand.

Fruit for our flagship wines is now sourced from our nearby Merricks Grove Vineyard, situated just a short distance from our Cellar Door on the south eastern hills of the Mornington Peninsula. Established in 1998 the Merricks Grove Vineyard has flourished into a mature, quality producing vineyard of high repute. We now also work with renowned growers in Australia’s finest Cool Climate wine regions outside the Mornington Peninsula to source fruit for a range of other delicious wines sold under our label.

The wines across our diverse range are exceptional, with grapes sourced from Cool Climate wine regions where different cool climates mix with volcanic and sedimentary soils to create wines that are wonderfully textured, complex and elegantly understated and we regard ourselves as Cool Climate wine specialists.

We’ve come a long way at Red Hill Estate and our winemaking team is testament to that. Overseen by owner Frank Fabrizio, the team is responsible for influencing, nurturing and refining the very best that our wines have to offer. Frank works closely with our viticultural team to create wines that we have all grown to love. Wines that have elegance, regional character, finesse & classic style.

Redefining Luxury Sparkling Wine

Sixty years ago, Robert-Jean de Vogüé and an assortment of his closest friends set out to redefine luxury sparkling wine.They decided the only way to bring it into the modern world was to take it far, far from home. That journey of rediscovery began in Argentina and eventually took them to California, Brazil, China, India and, of course, all the way down here to little old Australia. When we say the sun never sets on Chandon, we mean it quite literally.

At Chandon, we’ve always taken risks because we’ve always believed it was riskier not to take them. John Wright, who ran Chandon California at the time, took a risk on our land of opportunity. He visited Victoria in 1982 and was chuffed with the can-do spirit of the Australians. The boss, Phillipe Coulon, visited soon after and gave his tick of approval. They then tasked the legendary oenologist Tony Jordan with the unenviable task of finding the perfect land to begin a vineyard.

In Australia, if Tony had just thrown a rock in any direction, he probably could have hit a decent piece of land for winemaking. But Tony wanted something truly special: a cool-climate area with enough diversity of terroir to give him all the blending options he could dream of. The Yarra Valley was the natural choice, and Tony loved it so much he couldn’t leave. The first cuvées were released in 1989 under the new Chief Winemaker and head rock thrower, the one and only Tony Jordan.

If variety is the spice of life, then Chandon Brut is a perfectly seasoned little sparkling. A mix of Chardonnay and Pinot Noir grapes are carefully selected from Australian vineyards.

the soil: It is all about rich Cambrian soils of Heathcote which are dark red and rich with calcium and made up of greenstone, perfect for retention. This combination of Cambrian calcium rich soil and greenstone means the vines are kept cooler than other regions, as it retains the small amount of water the region receives.

the wine: A careful selection of small parcels of Shiraz that are handcrafted and used to produce dark, evocative and perfumed wine that is born of the earth.

Not only is this range from the wonderful region of Heathcote, the wines are purposefully chosen, and handcrafted by Chief Winemaker, Steve Webber.

A selected small parcel of Shiraz was chosen to reflect the earthen nature of the Heathcote rich red cambian soils and an ability to mature gracefully.

Fruit is picked, sorted and placed in open fermenters and vats. Some whole bunch inclusion for extra perfume and charm. Plots fermented and pressed separately. Blending after 9 months of maturation in French oak casks.

Heathcote Winery is a premium, familyowned boutique winery located in the main street of Heathcote, central Victoria. From gold mines to grapevines — and a short stint as a cattle yard in between — our winery is a storybook of serendipitous moments and mystique. The store’s original proprietor was a pioneering gent by the name of Thomas Craven. Inside, he sold and traded goods for gold, while out back, his horses and mail coach awaited their next potentially perilous journey. We pay tribute to these origins with our signature wine, Mail Coach Shiraz, now in its 27th vintage. In addition, we offer Cravens Place Shiraz— named in honour of the man himself. Brown brothers prosecco sconeS with Strawberry Jam

INGREDIENTS

– 4 cups self-raising flour, sifted

– 300mL cream

– 300mL Brown Brothers Prosecco NV

– Brown Brothers Prosecco Jam*, to spread

METHOD

1. Preheat the oven to 200°C.

2. Sift flour into a large bowl, add cream and Prosecco.

3. Mix together with a fork, until combined.

4. Pat onto a well-floured board, cut with a floured scone cutter, and place on a baking tray.

5. Bake for 10-12 minutes.

6. Cool on trays, and serve with your choice of strawberry or raspberry jam. Add a dash of whipped cream, and a glass of Prosecco to drink!

*You can purchase a jar of wine-infused jam from our Milawa Cellar Door; these are small-batch, artisanal products made in collaboration with local producers. Alternatively, substitute with a jam or topping of choice!

Mountaincrafted for Adventure

Bright Brewery was born in 2005 from a passion for well-made beer, a love for the town of Bright and its pristine alpine environment, and the adventurous outdoors lifestyle that the High Country provides.

The brewery was founded by Scott Brandon, his late wife Fiona Reddaway and their friends David and Julia, driven by a desire to make beer great and to share Bright’s spectacular surrounds and environment with everyone who passes through our town. Between 2006 and 2011, our humble brewery and adjoining bar was housed in two small tin sheds, with only limited outdoor seating.

In 2012, Bright Brewery underwent substantial redevelopment, transforming the small and simple brewery and bar into an environmentally considered, multipurpose, all-weather venue, with seating capacity for over 250 people. In 2014, Bright Brewery added a stunning Hop Terrace, providing the most attractive place in Bright to enjoy beers and meals outdoors.

The Benchmark of Australian ‘Botrytis’ Dessert Winemaking

The Riverina in the south-west of New South Wales is where the story of De Bortoli Wines began. Vittorio De Bortoli arrived in the region after migrating to Australia from northern Italy with little more than a few coins in his pocket. And though the flat plains and fertile red earth of the Riverina were completely different to all he had ever known, Vittorio together with his new wife, Giuseppina, made it their home. The winery at Bilbul remains our home and our heart to this day.

The Bilbul winery is the home of our world-renowned and award-winning dessert wine, De Bortoli Noble One Botrytis Semillon. First created in 1982 and made here ever since, it is one of the most successful and internationally award-winning wines ever produced in Australia.

Handcrafted Chardonnay

Vineyard

The grapes for this wine come from one of the oldest Chardonnay blocks planted in the Tumbarumba region, using the Penfolds Clone. Planted in 1981 at the Tooma Vineyard in the Maragle Valley. The site has an elevation of 550m with a soft Easterly aspect. Grown on decomposed Granite soils.

Tasting Notes

Complex nose with pink grapefruit, white nectarine, spices and nougat aromas. Intense palate of lemon curd, baked pastry and nutty flavours. Wrapped up in Tumbarumba’s hallmark acidity which gives great drive and length to the wine. Stored well, this wine will cellar for next 5 to 10 years.

Stone & Wood Brewing Co. was founded in 2008 by three mates in Byron Bay, Australia.

We are true artisan distillers. Only a few people work in The Big Red Shed to ensure consistency and personal craftsmanship.

Our Distillers manage all parts of the Rum-making process, from fermentation, to nursing the still throughout the day, to cask-aging our exceptional Rum.

Fine Australian Rum must legally mature for a minimum of two years to be sold as “Rum”- so we gently let our Beenleigh spirit age amongst our historic surroundings. You just can’t rush artisan Rum!

A Little Remote, A Little Different

In 1997, we founded Australia’s most remote brewery in Broome, a tiny, far flung WA town, famous for its natural beauty and extreme heat. Housed in the old "Matso's Store”, our brewery reflects Broome’s charm, history, sense of humour and laid-back lifestyle –or as we like to say, taking an “Unserious” approach to life!

We’re named after the Japanese Matsumoto family, who were attracted to Broome with the promise of a vibrant pearling industry in the early 1900s. Broome's relentless heat inspired us to experiment with fruit and flavour, shaping our never-ending quest to find the perfect balance of flavour and refreshment. And if it can refresh here in Broome… it can refresh anywhere! Our creativity led to Australia's first alcoholic Ginger Beer and first fruit-flavoured beer - our beloved Mango. While our line-up of delicious drinks has expanded, our spirit of discovery remains the same and we’re still proudly Australian owned & made.

Little Creatures

In 1999 a group of mates, hailing from the beer scene, got together to brew a bold, hop-driven Pale Ale with a distinctive aroma and delicious flavour.

To open Aussies up to better beer, these mates had to open a new space in which to brew, eventually landing in a huge shed and former crocodile farm on the water’s edge in Fremantle, WA. A site that was to become the home and birthplace of Little Creatures Brewing.

When the doors finally opened to the public in November 2000, people were served our Pale Ale, amongst other crafty delights, in the midst of where they were made (an entirely new thing back then - trust us).

And while people opened our beers, we opened floor to the creative arts scene in Freo - hosting fire twirlers, hula hoopers and more. In this way, we didn’t just create another brewery, we built a space that was welcoming and inclusive. A space where people, from all walks of life could try our beer and be welcomed into the world of Little Creatures.

24 years later and we're still welcoming people through our doors in Freo and encouraging them to open up a little.

Wine has been flowing in the Clare Valley since 1851 and is an integral part of the region’s culture. It is one of Australia’s most prestigious premium wine regions, renowned for its Riesling and Shiraz. A small but mighty region, it accounts for less than 1.5% of Australia’s total wine production. With its beautiful, rolling hills, ideal winter rainfall and Mediterranean climate, the Clare Valley carries a unique history and winemaking heritage. This iconic region is home to Australia’s first and only Assyrtiko vines thanks to Jim Barry Wines, who embarked on a decade long journey to import cuttings of Assyrtiko into Australia from their homeland, the Greek Island of Santorini. Jim Barry are currently celebrating their 10th vintage of this refined white wine.

In November of 2014, Perth locals Michael Cameron, Jack Cameron and Jared Proudfoot embarked on a trek across the infamous Nullarbor plain. Five days later, they dropped anchor at a small plot in Adelaide’s dynamic inner west. It took them three months to convert the property into a fully functioning brewery, and in March of 2015, Pirate Life Brewing launched officially at the Gilbert Street Hotel.

Since then, Pirate Life has become one of Australia’s most recognisable craft brands – with four epic venues nationwide. Here, we make the beer we love to drink, and we have a hell of a time while doing it. As we have grown, our recipes have evolved as well, from unapologetically hoppy IPAs to laid-back & approachable froths.

Our flagship, the South Coast Pale Ale, is an embodiment of that evolution, and a proud celebration of the place we Pirates call home. It’s citrusy, crisp, and crushable, with a with a gentle haze and cruisy 4.4% ABV. Best served ice-cold with mates and a cracking view. The fruit was picked in the cool of the night, the fruit is processed quickly to retain freshness. The clarified juice is then fermented cool to preserve fruit lift. The wine is then clarified and bottled. The 2023 growing season was cool throughout, ensuring slow, even ripening and flavour development.

Hardys Tintara

The story of Hardys begins with the very man who gave us his name, Thomas Hardy. From the moment he arrived in Australia in 1850, his ingenuity, determination and hard work built a business that has lasted more than 160 years.

1830: The Birth Of Thomas Hardy

Thomas Hardy was born in the small village of Gittisham, in Devon, England on 14th January 1830. He was one of generations of Hardys who lived and farmed in the Devon countryside.

1850: Thomas Hardy comes to Australia

Thomas arrived in Australia in 1850 with only £30 in his pocket via ship to Australia on the boat ‘British Empire’ on a journey that took 12 weeks. Once he arrived on Australian shores, he soon found work with John Reynell at Reynella Farm and learned much of winemaking from the German fellow-workers. At the end of about 12 months Thomas left for the goldfields of Victoria and after a while entered a partnership with a butcher and delivered meat to feed hungry miners.

1853: The Creation of Hardys Wines

In 1853 Thomas saved up enough money and was finally able to buy land of his own on the banks of the River Torrens, aptly named ‘Bankside’, where Hardys Wines was born. Thomas's vineyard at Bankside was ranked amongst the most important vineyards in the colony, and Thomas was regarded as one of the most hardworking and enthusiastic of vignerons. Thomas started with 2 acres of fruit trees, primarily oranges, and 0.75 acres of Shiraz vines.

1857: The First Vintage of Hardys

In 1857, Thomas produced his first vintage, which included 2 hogsheads (286 litres) of wine, the first significant quantity to be shipped from Australia to the UK in 1859. Unfortunately, Australia’s first wines were

generally poor, and Thomas became known not only for the quality of his own wines, but for his efforts to raise the overall quality and establish an Australian wine industry.

1863: Continued Growth and Expansion

Hardy’s vineyards continued to expand, and by 1863 Thomas had grown to have 35 acres of various grape varieties, including Grenache, Mataro, Muscat, Roussillon, Shiraz, and Zante grapes. He also sourced grapes from fellow vignerons in the Adelaide area, emphasising collaboration within the burgeoning wine community.

1876: Tintara Winery

The Tintara Vineyards Company came up for sale just as Thomas was looking to expand. Established in 1861, and now bankrupt, this McLaren Vale winery had great potential. Thomas bought Tintara on the spot, sold all the wine and essentially got himself a new winery for nothing. Tintara was to become the centre of Hardy's enterprise and by the late 1800s was one of the best-equipped and managed wineries in Australia. This success was substantially due to Hardy's initiatives in planting higher quality, lower yielding varieties rather than the harsher, heavier-yielding types more common at the time.

1887: A Family Business

Thomas Hardy’s dedication to winemaking was a family affair. In 1887, he established “Thomas Hardy and Sons Ltd.” alongside his three sons—James J. Hardy, Thomas N. Hardy, and Robert B. Hardy—along with Joseph Rowe Osborn. This marked the formalisation of a family legacy that would

endure for generations. Thomas also played an instrumental role in protecting South Australia's vineyards from the scourge of phylloxera as a founding member of the Phylloxera Board in 1889, and was a tireless promotor of Australia's fruit and vine industries

1904: Up In Flames

By 1900, Thomas Hardy and Sons was the largest winemaker in South Australia, so when Thomas’ original winery at Bankside burnt to the ground in 1904, it could have been a devastating blow, but Thomas took it in his stride, moving on to his new larger site at Mile End.

1912: Death Of A Legend

Two days shy of his 82nd birthday, Thomas passed away. From the young man who boarded the ship in 1850 with £30 to his name, to the father of the South Australian wine industry, his vision, perseverance and sheer hard work had built a company to last. Thomas Hardy’s contributions to the South Australian wine industry were immeasurable. His dedication, innovation, and unwavering commitment to quality established the foundations upon which the region’s winemaking prowess stands today. From pioneering exports to embracing technological advancements, Hardy’s legacy continues to thrive in the vineyards and wineries of McLaren Vale and beyond.

1938: Losing A Leader

Tragedy struck again in 1938 when Tom Mayfield Hardy died with other prominent South Australian wine figures Hugo Gramp of Orlando and Sidney Hill-Smith

of Yalumba, in a plane crash near Mount Dandenong while en route to Canberra for a wine industry summit meeting in 1938 in Kyeema, leaving behind widow Eileen and four young children. Eileen, a woman of immense character and fortitude, immediately stepped up, taking on a role with Hardys that would define the rest of her life. Eileen was so beloved by family, friends and wine lovers, that she was known affectionately as “Auntie Eileen”.

1965: Four Generations of Hardys

By 1965, the fourth generation of the Hardy family was now on board, with Tom Mayfield’s eldest son Thomas Walter taking over the running of the company, and siblings David, Pam and Jim, as well as Ken’s son Bob. Eileen’s four children decided to celebrate their mother’s 80th Birthday with the best wine in the company, the first Eileen Hardy Shiraz. An accolade only briefly eclipsed by the Order of the British Empire she received from the Queen at Buckingham Palace in 1976.

1973: Honouring Eileen

By the mid-1970s five generations of the Hardy family had guided and shaped Thomas Hardy & Sons, overseeing expansion into new Australian viticultural regions and the introduction of technological advances.

1980: The Passing Of A Matriarch

As the 1980s dawned however, the Hardy family received a double blow, firstly with the loss of Eileen herself in April, then her eldest son Thomas Walter, who died of cancer in December of the same year. With the fifth generation only just joining the company, it was a difficult time.

As Australia’s first lady of wine, Eileen left a lasting legacy on Hardy’s and the Australian wine industry. Her favourite colour was blue, hence the blue caps and Eileen Hardy signature on the iconic range named in her honour. Eileen had a daily ritual where she would have “Elevensies”: A glass of sparkling wine at 11:00am.

2005: Old Becomes New

It was time for the old cellars at Hardys Tintara to move into the modern age, embracing the very same principles Thomas Hardy himself used, Cellar 8 was renovated to become the most advanced open fermentation cellar in the southern hemisphere. Hardy's grows the grapes that are best suited to the country's individual winegrowing regions. Thomas Hardy's ambition was to create quality wines that will be prized in the markets of the world. There is no shadow of a doubt this is still the principle that drives the Hardys winemakers.

Australia’s Oldest Wine.

Did you know that the oldest recorded surviving bottle of Australian wine is a Hardys?

An 1867 Tintara Vineyards Association Claret made its way back to Australia in 1977 after a century spent in a dank English cellar, where it was purchased by the Sutherland Smith wine family.

In 2001, Hardys bought the wine back for an undisclosed sum, returning it to its original home. It wouldn't make good drinking - its big red blend of Cabernet, Shiraz and Mataro would have peaked around 1900 - but its historical significance can't be overstated.

Established in 1951 with history dating back to the late 1800s, Wynns Coonawarra Estate is the region's preeminent wine producer and largest single vineyard holder. Winemaker

Senior Winemaker at Wynns Coonawarra Estate, Sue Hodder, is an icon of Coonawarra’s wine industry. Sue has made wine at Wynns since 1992, and made history as its first female chief winemaker in 1998. Our founders were a courageous couple who embarked on a sailing tour of the world. On one of the earliest stops, they found New Zealand. They quickly fell in love and decided to end their tour of the world to build a mud house in New Zealand and planted vineyards. Cleighten Cornelius

Cleighten completed his Bachelor in Viticulture and Oenology at Lincoln University and set off to the northern hemisphere to work vintages in France (Chambolle-Musigny), Germany (Rheingau) and Cyprus. Returning to his hometown of Marlborough, with worldclass experience under his belt, Cleighten joined the Mud House team in 2012. After a decade of winemaking, Cleighten’s core focus remains unchanged, “to make the best wine possible!” He believes learning is the key, both experimentally and from others. Having a job where you only get one chance a year to perfect your art means that winemaking remains challenging and a continually evolving process. Cleighten’s spirit of adventure is built around fishing, diving, exploring the outdoors, playing the guitar, cricket and watching sport.

Krystal Palmer

After four years tripping around the globe, Krystal returned home to Marlborough and graduated with her Bachelor of Viticulture and Oenology from Lincoln in 2012. Krystal has experience across many facets of winemaking, including assistant viticulturist and winemaker, and has done vintages in Marlborough, Waipara, United States and China. Red wine is Krystal’s passion, particularly a juicy pinot noir. “When I make Pinot Noir, it is in a hands-off fashion. With minimal intervention, the purity and elegance of Pinot Noir really shines through. I love the art, science and creativity of winemaking. It is fluid, never stagnant – there are so many challenges and different branches to winemaking. I love that.” Most days, Krystal is in a ballet studio, sailing, paddle boarding, surfing, or singing in theatre productions.

Our Bourbon Making Process

Bourbon takes time, and with almost a century of combined experience, our Master Distillers know that better than anyone.

Handling And Milling

It starts when the Master Distiller selects the corn, rye and malted barley for distilling. We use only the best ingredients at the Wild Turkey Distillery – nothing but our specially grown, non-GMO grains, which are quality tested at four separate times.

Mashing & Malting

They say location is everything, and Wild Turkey distillery proudly sits atop a limestone shelf situation along the Kentucky River, allowing us to use quality Kentucky water straight from the source. The limestone naturally purifies the water of iron, and this non-acidic, limestonefiltered water is used to cook the grains during this stage, making for a better depth of flavour in our finished product. Once the malted barley is added, we introduce our sour mash – a previously fermented mash that still contains live yeast – to start a new fermentation process.

Fermenting

Yeast is added to the corn, rye and malted barley to create our yeast mash, naturally turning the starch into sugar, and giving Wild Turkey its full, rich flavour. Our yeast strain is unique to Wild Turkey, and a secret that is closely guarded by Master Distillers Jimmy and Eddie Russell. WILD TURKEY MASTERS KEEP

Master’s Keep Triumph is an authentic celebration of Kentucky rye, crafted in the distinctive Wild Turkey way. As the oldest age- stated rye ever released from the Wild Turkey Distilling Co. at 10 years, this expression, inspired by Eddie’s son Bruce’s affinity for rye, stands as a testament to both the spirit’s tenacity and a son’s influence on a father’s craftmanship

Distilling

The liquid mash is pumped into a continuous still.It’s vaporized at a high temperature, turned back into liquid, and distilled all over again, creating the highest quality spirit without sacrificing flavour.

Barrel Filling

After distillation, the spirit is poured into new American White Oak barrels with the deepest No. 4 “alligator” char. We choose to barrel our bourbon at a lower proof, so that by the time it’s finished aging we can add less water than other whiskey makers typically would in order to avoid diluting our bourbon’s signature flavour before bottling. That allows Wild Turkey to retain the true, rich flavour and deep auburn colour it acquires from the barrel.

Barrel Aging

Once the barrels are filled, they’re stored for aging. Starting at two years, we taste our bourbon annually until its fully matured. We age our whiskey longer than most distilleries, giving it more of the time it needs to develop its distinctive, rich flavour.

Bottling

Only the master distiller can decide when a barrel is mature enough for bottling. On their command, the bourbon is dumped, filtered and bottled, ready for you to enjoy.

Angel’s Envy, founded in 2011 in Louisville, Kentucky by Lincoln and Wes Henderson, quickly revolutionised the bourbon industry by introducing a unique maturation process. Unlike traditional bourbons, Angel’s Envy finishes its Kentucky Straight Bourbon in Port Wine Barrels, adding a distinctive layer of complexity and flavour. The distillery, established in 2016, embodies the Henderson family’s dedication to crafting exceptional, innovative spirits.

In 2022, Owen Martin was appointed as Angel’s Envy’s first Master Distiller since Lincoln Henderson’s passing in 2013. With a deep understanding of both European and American distillation techniques, Martin brings a progressive approach to the craft while respecting whiskey traditions. His expertise in secondary finishing, product development, and experimentation perfectly aligns with Angel’s Envy’s philosophy of honouring whiskey traditions while continuously innovating and exploring new horizons.

As Master Distiller, Owen leads Angel’s Envy’s production team at the Louisville distillery, ensuring the highest standards across its core offerings and limited-edition releases. Originally from Kansas City, Martin's journey took him to Scotland, where his passion for whisky deepened. After returning to the U.S., he honed his skills at small-batch craft distilleries before joining Angel’s Envy. Owen’s work continues to shape the future of bourbon, challenging expectations and redefining the category. These relationships are paramount.

A Q&A With Master Distiller

Own Martin

Owen, you've had an incredible journey to becoming the Master Distiller at Angel’s Envy. Can you share a bit about your journey and how you became so passionate about bourbon?

I grew up in Kansas City, Kansas, but my passion for distillation truly took off when I moved to Scotland to study brewing during the U.S. craft beer boom. There, I fell in love with whisky, and I quickly shifted my focus to distillation. After finishing my Master's thesis with a Scotch whisky distillery, I returned to the U.S. and gained experience with rye and bourbon at a craft distillery in the South and later in Denver.

Joining Angel’s Envy in 2022 was an exciting next step for me. I’m honoured to lead a team that continues to innovate while preserving the tradition of Kentucky bourbon. The brand’s use of finishing techniques, like our signature port barrel finish, really resonated with me. It’s a great opportunity to challenge the norms of what bourbon can be while honouring the legacy of Lincoln Henderson, who started it all.

Angel’s Envy has made significant strides in Australia. What do you think is driving the increasing demand for high-quality bourbon in the Australian market?

Australia has an incredibly dynamic and passionate spirits scene, and it's been exciting to see the shift towards premium bourbons in recent years. I think this is due to a combination of factors: a growing appreciation for craftsmanship, the influence of global whiskey culture, and Australians’ increasing desire for authentic, high-quality products. Angel’s Envy, with its distinct port barrel finish, resonates well with this market because it offers something different. Australians are very discerning when it comes to the finer details of whiskey, and they are eager to explore new, elevated expressions of bourbon. Bourbon has always been deeply rooted in craftsmanship, and Australians, much like ourselves, are appreciating the artistry behind a well-made, high-quality spirit.

Angel’s Envy is known for its finishing process in port barrels. Why do you think this adds such a unique flavour profile, and how did that idea come to life in the early days of the brand?

The idea of finishing our bourbon in port wine barrels came from our founder, Wes Henderson,

who wanted to create something truly special that didn’t just follow the conventional rules of bourbon making. The port barrels add a depth and complexity that you don’t find in traditional bourbons. The rich, fruity sweetness of the port subtly enhances the natural vanilla and caramel notes of the bourbon, creating a smoother, more layered experience. It’s about marrying the best of both worlds—the bold, classic flavours of bourbon with the refined, nuanced qualities of the port casks. That innovation has become the hallmark of Angel’s Envy, and it’s something that really sets us apart. It was a daring decision at the time, but it has paid off as drinkers continue to seek out these more sophisticated and nuanced bourbons.

In the past few years, we've seen an explosion in the demand for premium spirits, especially elevated bourbons. Why do you think consumers are so drawn to these more refined, higher-quality options?

I think consumers today are looking for experiences, not just products. The rise in demand for premium bourbons can be attributed to people’s growing appreciation for craftsmanship and quality. Bourbon isn’t just about a drink; it’s about enjoying something that has a story, a depth of flavour, and a complexity that reflects the passion and skill of the people behind it. With so many options available, it’s the finer details—the meticulous process, the rare ingredients, the unique aging techniques— that make elevated bourbons stand out. I think consumers are becoming more conscious of the stories behind their bottles, and they want to enjoy a product that reflects that.

What can we expect to see from Angel’s Envy in the next few years? Any exciting new releases or innovations in the works that you can share with us?

We’re always innovating, and there are a few exciting things on the horizon. One area we’re exploring is expanding our range of finished bourbons, continuing to experiment with different cask finishes to bring new flavours to the forefront. There’s a growing demand for unique and unexpected expressions, and we’re excited to meet that challenge. As for specific releases, I can’t reveal too much just yet, but we’re always looking for new ways to surprise and delight our fans. The innovation doesn’t just stop with the whiskey itself; we’re also exploring new ways to connect with our audience, whether it’s through events, collaborations, or enhancing the experience of enjoying our products. calligrapher The first barrel of each row in Hennessy’s prestigious cellars is meticulously inscribed by a professional calligrapher, indicating its date and origin. The font is unique to the Maison. As eauxde-vie don’t stay indefinitely in the same barrel, chalk is used so as to easily erase the description once an eau-de-vie is transferred to another barrel.

Madame Clicquot: The "grande dame of Champagne"

Barbe Nicole Clicquot Ponsardin was born in 1777, the daughter of a textile manufacturer in Reims, Champagne. Widowed at the age of only 27, she took control of her own destiny and became one of the first modern entrepreneurs. In an era when women were excluded from the business world, she dared to assume the head of the company founded by her father-in-law in 1772, a role she undertook with passion and determination.

Her creativity and lust for innovation led to many firsts in Champagne: the first known vintage champagne; the invention of the riddling table; the first known blended rosé champagne. Three inventions that revolutionised champagne making and were widely adopted by producers, becoming the basis of modern champagne production.

Madame Clicquot made her name into a brand of excellence and had it shine the world over. Her formidable contributions earned her the nickname of "la grande dame of Champagne".

Bringing experimentation and attitude to the art of whiskymaking, Emma sought to create a tantalizingly delicious new expression, bringing Black Label’s most indulgently sweet and smooth notes centre stage.

To create this uniquely vibrant Scotch, Emma selected sumptuous whiskies from the Johnnie Walker reserves of aging whiskies from across the four corners of Scotland, some of these whiskies were matured in a combination of cask types including ex-wine, ex-PX Oloroso and ex-bourbon casks. Amongst these malts, there was an unprecedented emphasis on one of the most modern Johnnie Walker distilleries, Roseisle, which is known for its incredibly rich, sweet, and smooth whiskies. For an unexpected twist on Black Label, Emma dialed down the signature smoke, further amplifying the honeyed fruit flavours.

The result - a big smooth Scotch which balances the boldness of Black with fruity flavours, perfect for when the night begins.

– 30mL fresh lemon juice

METHOD

Start by filling a shaker with ice cubes. Add Absolut Vodka, Lemon Juice, and Simple Syrup. Add the Egg White last. Shake it like you hate it!
