This is the time of year that we get to start over. We seem to have a new outlook on life, a new hope for a healthier way, new relationships, and new promises. Here at Harvestime Temple we also believe it’s a time of new beginnings. A time to return back to our covenant with our Heavenly Father, Jesus Christ. There are wars and rumors of wars everyday in the news. People are longing for peace. But without peace on the inside, how can we expect to have peace on the outside? It seems

division has crept into this nation, our homes, families, and even our churches. A house divided against itself cannot stand. We need unity. We need to know the right way. Here at Harvestime Temple we are not chasing dollars, we are not chasing fame. We are chasing souls. Families are lost and they need to find the way, the truth and the life. You’ll find it in Jesus Christ. NAVIGATING LIFE’S CHALLENGES: DANIEL’S PHOTOGRAPHIC RENAISSANCE

In recent years, Daniel has faced substantial health hurdles, including two strokes and severe pneumonia that led to life support and lung bypass. The additional complications brought on by the global pandemic further complicated his recovery. “After a long recovery and the pandemic, he was unable to return to work and had to come back to live at home,” says parents, Mary and Eric Prather. “He was unable to be independent and exposed to other people. Just within the last year or so, he has improved enough to resume his love of photography. Although he mostly shoots pictures of nature, landscapes, animals, and interesting architecture due to not being around people, these are the subjects that he seems to have a talent for photographing! We are so thankful for his recovery and how he has overcome so many obstacles.” This remarkable resurgence unfolded in the last year as Daniel found solace and purpose in his love for photography. Nature, landscapes, animals, and captivating architecture have become his chosen subjects, showcasing a talent that has blossomed despite the adversities he faced. Daniel’s journey exemplifies the resilience of the human spirit and underscores the power of a passionate pursuit.

At the heart of Daniel’s journey from the beginning is the unwavering support of his family – parents Eric and Mary Prather, who have been steadfast pillars throughout his challenges. Residing in Stark County, Ohio, the Prathers discovered a supportive community through word-of-mouth that played a pivotal role in Daniel’s recovery. Organizations such as Stark DD, Gentlebrook, and Special Olympics became integral parts of this support network. Special Olympics, in particular, has been a significant platform for Daniel, allowing him to excel in various activities, including swimming, bocce, and track and field. The Stark County Challengers baseball team, church engagements, and scouting further enriched his community involvement. Daniel is also very involved in Scouts where he is a life scout working on Eagle with Troup 935 in Jackson Township. He is also an Order of the Arrow Honor Vigil Scout in Buckeye Council’s Sipp-O Lodge. Special Needs Mideastern Ohio

Additionally, he finds extra support with his brother and sisterin-law, David and Samantha. “They have always made sure that Dan was always being taken care of and looked after, during the most difficult time that our family has faced,” reflects Daniel’s parents. “Dan and Sam have a very special bond. Both Dave and Sam are in the medical field and are always there to rely on.” Finally, the light of his life is found in his fiancee, Tanya Hartman. They’ve been engaged for three years and are excited to get married! Daniel’s health concerns have paused them from making this a reality, but they look forward to this being in their future.

THROUGH THE LENS OF LIFE: PURSUING PASSIONS AND DREAMS Beyond the challenges, Daniel’s story is one of pursuing and reigniting passions. From his earlier years as a competitive swimmer and diver for Massillon Tiger Sharks and Akron Rippers Diving, he now aspires to turn his love for photography into a business. Despite facing health setbacks, Daniel holds onto dreams of marrying his fiancée, Tanya, providing a beacon of hope for the future.

I

n the bustling hallways of Green Intermediate School, you’ll find an energetic and friendly face, that of 11-year-old Noah Saley. Noah, a fourth-grader, exudes warmth and happiness that lights up every room he enters. Behind his infectious smile lies a remarkable journey of resilience, triumph, and a supportive community that has propelled his growth and development.

The Journey of the Autism Diagnoses

Noah was diagnosed with autism at the tender age of two, a pivotal moment that prompted his family to embark on a journey of understanding and navigating the challenges that lay 36

ahead. His mom, Tina Saley, reflects on the early days when Noah’s speech development was slower than expected: “We noticed he wasn’t talking as much as we’d expected. He was receiving speech and occupational therapy services at the time. One early challenge that we encountered as a family was that when he was diagnosed with autism, our insurance no longer covered his therapies because it was a plan exemption. We are lucky that this is no longer an issue, but it was really hard at the time.” Swift action was taken, and Noah was receiving speech and occupational therapy services, setting the foundation for his developmental path. Noah

faces significant challenges with communication, both receptively and expressively. The teachers and therapists he has worked with have played a pivotal role in shaping strategies that benefit not only Noah but the entire Saley family. Tina emphasizes the importance of surrounding oneself with support during challenging times, urging families to steer clear of negativity and find strength in shared experiences. A Mom’s Advice to Other Special Needs Parents

Tina’s advice for parents facing similar journeys hits home in our hearts: “For a child who


has a developmental disability, being included is the most essential thing in every aspect of life.” Noah’s inclusion, both at school and in various activities, has been a cornerstone of his growth. Tina reassures others that, with time, the journey becomes more manageable, offering hope to those in the midst of their own challenges. “A diagnosis is really hard, so it’s important to surround yourself with support,” she encourages. “Try not to sit in the sadness for too long and stay off of negative social media. It does get easier. Your child will develop: it will just be in a different way and at a different pace. The joys you think you’re missing will be replaced with different joys.”

One of the most significant contributors to Noah’s joy and growth has been his love for swimming. An avid swimmer, Noah is a proud member of the Green YMCA Barracudas. The water serves as a canvas where Noah’s abilities shine, and he revels in an environment where he can compete alongside his same-aged peers. His participation in relays not only showcases his skills but also fosters a sense of pride for the entire team. The Saleys’ foray into organized swimming began with the Special Olympics Swimming Team in Akron. While appreciative of the organization, Tina felt it was essential for Noah to

engage with peers of his age. A heartfelt outreach to the Director of the Green Barracudas swim team resulted in a warm welcome and ongoing support for Noah’s swimming endeavors. Tina shares the joys of witnessing Noah being supported and cheered on by his teammates. His presence on the team goes beyond the individual victories; it serves as a source of inspiration and unity. he Unified Resources (URR) program in Portage County, Ohio, provides critical services and support for those with developmental disabilities. This innovative program empowers individuals in their local community.

Background on URR

POWERcorps was their AmeriCorps program name when they were established in 2002. They successfully moved out of AmeriCorps in 2012 and into a fully financed community program and started the process of changing to their new name in 2016. FCS has served as Portage County’s provider of care and resources for people with developmental disabilities. The organization operates with the vision that all people, regardless of ability, deserve the opportunity to thrive. URR provides programs for adults and teens. For both the adult and teen programs, participants must be between the ages of 12 and 17 and 18 years or older, respectively. Participants must be qualified to receive assistance from the Portage County Board of Developmental Disabilities. The importance of support

Under the direction of its forwardthinking Board of Trustees and 30-year CEO, FCS has established a reputation as a successful innovative force in social services. Portage DD fully funds the URR programs and has helped FCS fulfill the increasing demands of the community and assist those who are most in need. 37-year-old JD Haavisto known as “JD” to all of his family and friends has a devoted love for god. He is driven to study the bible and this translates into his role at Jason’s Place! Jason’s Place is a day program for adults with developmental

disabilities. It was at Jason’s Place where Melissa, the Jason’s Place CEO, recognized JD’s love and passion for God and the Bible. Melissa put JD in charge of their devotional group which is held every morning at 9:00 a.m. He chooses the teachings and music that he shares along with faithfully distributing a well-known quarterly devotional booklet “Our Daily Bread” to coworkers, bus drivers, and all he meets that would receive it. He loves Cooking Club but his mom, Sue says, “He really likes eating the best!”

His family has also worked with his SSA through the county board to help them to get ramps, lifts, and transport chairs which are necessary for JD to be able to get out and about. Parents, James & Sue Haavisto stated that LED Transportation is very good to work with and shows great care and compassion to clients and their families. Besides mom and dad, JD has Two Sisters & 2 Nephews that he loves & prays for daily. He loves watching his nephews grow, including sports they participate in. He loves to share, pray, and encourage all he meets so JD is quite excited to be approved by SARTA for door-to-door transport in which a rider may accompany him. This opens more doors for JD’s future goals. A couple of fun things about JD is his snow globe collection from places like Japan & Germany. His dog Flash is an Australian Shepherd. Also, JD’s love for Hot Dogs makes him the namesake of JD’s Gourmet HOT DOGS & More! This is their family-owned food stand. JD’s Gourmet Hot Dogs sells premier buildyour-own gourmet all-beef hotdogs, premium ice cream sundaes, and more. JD realizes that his life is the only exposure some may ever have to the work of God on this earth & he decided long ago his life will be a testimony to Salvation through Jesus Christ. He walks with God & be sure to look past the disabilities because when meet JD you have touched the hand & Spirit of God.

“NEW YEAR, NEW YOU?” DON’T DIET! BY DANIEL ANSCHUTZ

E

very year, after the traditional holiday binge of sweets and excessive eating many of us do, what comes next? A New Year’s resolution to diet starting January 1st. So you go through the cupboards, fridge, freezer, your special hiding places for your binge-worthy treats (even that one you know nobody else will ever find) and you purge all temptation from your home for good! But after about three weeks of restricting yourself from eating anything with flavor, eating dry salads, drooling over your friend’s slice of pizza, and being completely miserable you cave and binge on whatever is easily accessible and that you’ve been craving. That Drive-Thru large fry on the way home from work, the entire box of thin mints you were saving in the freezer to celebrate, the pint of double chocolate fudge ice cream you miraculously found in the bottom of the freezer (*gasp* I swear I threw this out! You know you didn’t.). All because you caved once you just give up completely and go back to your old habits. Does this sound familiar to you? Of course, it does; diets are meant to jumpstart your system and get you ready for a lifestyle change. If you want to really change and for good, I’ve never had success by completely

cutting myself off from everything I really enjoy eating. The most success I’ve ever had was doing two weeks of a pretty restrictive diet and then re-introducing foods and allowing myself to enjoy certain things I crave regularly but in moderation. Portion control and moderation have always been the greatest success in my personal journey and don’t be too hard on yourself if you have a bad day. You can always start again tomorrow. If you want lasting change it won’t be easy, but I’ve got some helpful tips that have helped me. My first system jumpstart is a vegan, whole food (minimally processed), no-added fat diet. Vegan is all fruits, vegetables, grains, and no animal or animal byproducts (milk, eggs, honey, etc.). My favorite is called the Engine 2 Diet. Developed by a firefighter (His son is a doctor at the Cleveland Clinic) and a great jumpstart to your system. You will need to plan a bit more when making meal choices, but this will help your system reset itself and is only a two-week commitment. I told myself if I can’t commit myself for two weeks, what can I commit to? Second, I focus on a Nutrientdense lifestyle. My favorite book with recipes for this is Eat to Live. Nutrient density means that you focus on the

best vitamins, minerals, omega, and amino acids per calorie you eat. Soda or frosted pastries are examples of foods that have a high calorie count but are very low in nutritional density. The opposite would be cruciferous vegetables like broccoli and zucchini; and low-fat protein like chicken and fish. Eating more nutrient-dense foods, but the same caloric intake helps you feel fuller faster than eating non-nutrient-dense foods. In addition, limiting myself to a serving of my favorite snack twice a week or a square of chocolate every night. Whatever was my craving at the time, so I didn’t jump off the deep end into an entire bag of fun-sized candy bars. Knowing I had a 2oz square of dark chocolate waiting for me at the end of the day made it much easier for me to make the right choices during the day. Every person is different, and everyone will react differently to changes in what you regularly consume. If you want to make big changes in your lifestyle, please consult with your physician/ dietician to make sure you are making changes that your body will happily accept. Even if you want to make changes for yourself, long-lasting changes are the first step in the right direction of a new, healthier you!


KALE WITH FLAVOR • 12oz Kale, Ribs removed and cut into 3in squares • 3 Cloves Minced Garlic • 1tsp Crushed Red Pepper • Juice of ½ Lemon • 1tsp salt • 2Tbsp Olive Oil 1. Heat a Saute Pan to a moderate/ moderate high heat. 2. Add the olive oil and kale and Crushed Red Pepper to the pan. 3. Cook until the Kale is half wilted, add the garlic, and turn down to a moderate/low. 4. Add the lemon juice and salt, tossing to incorporate. 5. Eat hot, or cold the next day.

On A Quest For Independence INTRODUCING YOU TO AMY LICHTENWALTER BY ANDREA HURR PHOTOS BY JULIAN CURET

F

or Amy Lichtenwalter, employment has always been an important part of her life. Her mother, Carol, describes her as a “very charming young woman who loves to work and enjoys her job at Pegasus Farm, where she has worked for ten years.” She has also worked at Wendy’s, Kraus’ Pizza, and Aultman Hospital in Project Search before accepting her current position at the farm. Amy loves to learn from each position she has had, and she continues to strive for independence. Amy’s quest for independence led her parents to open up their family home to become

a group home for Amy and three of her friends. In this setting, Amy and her housemates were

able to live together for 10 years learning valuable independent living skills. Thanks to the skills she

learned, Amy was able to move into her own apartment. However, upon the passing of her father, she made the decision to move back into her family home with her mom, Carol. Listening to Amy and treating her as the capable adult she is allows her to grow and thrive. Carol says, “Not every person with special needs fits into the same mold. Amy has taught us that we need to listen to her and let her guide us. Don’t be afraid to speak up and work with professionals as equals until you find solutions that work.” Carol’s advice for parents of newly diagnosed special needs children is to not be afraid to reach out to other parents who are or have gone through similar experiences. “They are a wealth of information and truly understand and often have found solutions that can help.” “Sometimes it seems like you are alone in trying to figure out how to meet the unique needs of your child. You are not… It can be overwhelming, and this can happen at each phase of your child’s development.” There are a plethora of services available and Amy and her family have benefited from many along their journey together. “Starting with early intervention through the Stark County Board of DD, we learned how to support Amy’s growth and development, connected


to other parents for support, and learned about community resources.” Keeping Amy involved in inclusive activities has given her the opportunities to build relationships with both people with Special Needs and those who

were typically developing. In addition to her job at Pegasus Farm, Amy also volunteers by helping to deliver meals for Meals on Wheels and she is currently serving as the President of The Stark County Aktion Club (a

Amy’s long-term plans are to continue her work at Pegasus until retirement where she loves the work she does in the Country Store helping customers and keeping the store clean and well stocked. Question & Answer Session with Diana Spaulding Event Director of Night to Shine, Canton Q. Where do you work currently? A. I’m the Event Director for

Night to Shine, Canton hosted by Westbrook Park Church Q. What is your job title here? A. Event Director Q. How long have you been working with this event? A. This is our second year

putting on Night to Shine Q. What other professional associations are you a member of? (Board of Directors, Volunteer organizations, etc) A. I’m the CEO of Elevate

Life Network, a non-profit focused on abolishing economic, relational, and spiritual poverty in Canton, OH through career building and offering wrap-around services to help people move from generational poverty to generational wealth. I also volunteer at the Westbook Park Food Bank and with our Share Canton ministry that helps provide food, clothing, and other needs to the homeless and transient community. Q. What do your day-to-day job responsibilities include? A. For Night to Shine, connecting with community

partners and volunteers takes up a large portion of my day. There are also a lot of emails and phone calls to answer questions. I want to make this a special event for everyone involved, and that means doing a lot behind the scenes to make sure everyone involved can enjoy the night. Q. What is the inspiration behind why you put on this program? A. It all really started with my friend Gary. His brother and

sister-in-law are some of my best friends. And he is the sweetest guy. I see what he has gone through and what the community around him looks like, and it doesn’t take long to see that this is a community that deserves more recognition, more celebration, and how much love is shared within the 58

January 2024

community. I want everyone to know how much God loves them just the way they are and that they deserve that love and respect from everyone in the community. Q. What part of your event are you most passionate about? A. It’s hard to see what’s

coming together when you’re down in the weeds getting all the pieces put together. There are plenty of days that you wonder why you want to put the time and effort in. But when Night to Shine comes around, and you get to talk with the guests, hear their stories, and the stories from the volunteers and workers – it reminds you 10-fold why I want to do this and make it bigger and better every year. Q. What advice would you give to someone who is new to your field? A. Be ready to devote yourself

to the work. It’s not a job, It’s not a 9-5. This is something that will change the way you see people and the way you see the world. It will inspire you, exhaust you, and your heart will be filled. God isn’t asking for something easy, he’s asking for your heart and for you to share it with others who He loves just as much. Q. What is your favorite success story you have seen? A. There are so many great stories to tell, but one that

always stands out to me and I tell others over and over is towards the end of the night at the 2023 Night to Shine, one of our guests came up and told me that she got to check off 3 items from her bucket list – she got a flower, she got a crown, and she got to dance with a boy. She was so sweet and that’s just one of countless stories from one night in one year. Q. If you could go back and talk to yourself at the beginning, what advice would you give yourself? A. I would tell myself to not worry as much about

the details. Things will come together. The people who are meant to help will be there. The guests will


be there. God has it in his hands and he is the one that makes me look like I know what I’m doing. Q. What is something you would change in your field for the better if you could? A. I’d make it easier to navigate services. There are so

many, but some are not easy to find, and it is difficult. I don’t have a better answer or any suggestions on how I would do it, but that’s what I would love to see. Q. What advice would you give to parents in your field to help navigate? A. Don’t be afraid to ask questions or ask for help.

There are so many people just waiting to offer a hand. Listen for the advice and even if you think your question is off the wall or someone won’t know the answer, just ask. I’ve been able to make some incredible connections through the most unlikely channels just by asking what I thought was a hopeless question. Q. What has been the biggest factor in your success? A. One of our biggest allies who have given us the ability

to open up to as many guests as we have has been Jason Dixon, the Assistant Superintendent of Canton City Schools. He offered us to use Timken Career Campus and because of this and the incredible staff at the building and within

the district, we have the ability to grow. He’s an incredible person and an enormous factor in our success. Another has been our pastor Joel Adkins. He’s going to hate that I mention him of give him any credit, but his leadership and faith in me and my team was the reason Night to Shine is in Canton to begin with. But it’s the giving of time and resources of all our volunteers that really makes this successful. I could never do this alone and it takes a community to put this on. I should also thank my husband, Eric, and my girls, Ryah, Kara, and Evelyn. They are an incredible support system and also do what they can to help. Q. What is your favorite non-profit organization or volunteer opportunity? A. I have to mention The Tim Tebow Foundation which

started the Night to Shine movement. His foundation does so much great work, not just with Night to Shine and the special needs community, but in all sorts of areas. And, if I can make a selfish plug, I’m just starting Elevate Life Network, working with individuals in poverty to provide free career training to bring them out of generational poverty and move to generational wealth. We’re starting our first cohort in February (just after Night to Shine) and registration is open now. We want to try and change the face of Canton on multiple fronts, and we hope that we can be a positive force in our neighborhood and community.

ACHIEVING Everything She Puts Her Mind To THE STORY OF STAR SCHAFFER BY ANDREA HURR PHOTOS BY JULIAN CURET

S

tar Shaffer, a sophomore at Glen Oak High School, is truly a bright and shining star who spreads love, joy, and kindness everywhere she goes. Although Star happens to have Down syndrome, she chooses not to let it define her. She is a very social 16-year-old with a great sense of humor who loves life, dressing up, doing her hair and make-up, and like most teenagers, spending entirely too much time on her iPhone. Star is also an avid reader and superb speller with an extensive vocabulary. When she doesn’t know the meaning of a word, she will google it and learn it! Star’s parents, Randy and Lisa Shaffer decided early on that they

would never allow limits to be placed on her. “We have always given Star the opportunity to try everything she is interested in because she always learns an important skill and becomes a more well-rounded person from everything, she has enrolled herself in. She is one tenacious young lady who we know can achieve anything she puts her mind to.” However, being born with not only Down syndrome but also two large holes in her heart, low muscle tone, and bilateral mild to moderate hearing loss meant that Star would face many obstacles. Soon after birth, Star’s parents enrolled her in occupational and physical therapy through Help Me

Grow. Knowing that “it is imperative to surround yourself with good positive, supportive people who are going through similar battles,” Lisa joined DSSN, a local support group for moms of children with Down Syndrome run by Nikki Papoulides, which has been a huge blessing to their family. Through them, the Shaffer’s learned about the Down Syndrome Clinic at Akron Children’s Hospital where they promptly took Star to be examined by their team of experts. During their visit, the pediatric cardiologist found two large holes in her heart, and at six months old, baby Star underwent a successful open-heart surgery. However,


another blow quickly followed in the form of a bilateral mild to moderate hearing loss diagnosis. At 9 months, Star braved another procedure to place tubes in her ears and a few weeks afterward, she began wearing hearing aids. Star’s audiologist connected them with the Regional Infant Hearing Program who helped them with the hearing aids and set them up with therapists to teach Star how to listen and identify words. In addition, Lisa chose to teach Star sign language, explaining that babies with hearing loss are often slow to talk and learning sign language helped her to communicate at a much earlier age. After attending toddler class at Eastgate at the age of two,

at Pegasus Farm for 10 years where her love of horses blossomed. Through sheer hard work and unwavering determination, Star continues to overcome challenges and amaze everyone around her. She is thoughtful, delightful, and a very involved and active teenager.

Star followed up with three years at SPEAK preschool where she successfully learned to talk. When it came time for kindergarten, Star attended with her typical peers and has been included in regular classes within the Plain Local School District (who, Lisa points out, have done a stellar job implementing inclusion) ever since. During her elementary years, Star continued to spend long hours in therapy working extensively on finger strengthening and handwriting skills and ultimately cementing her wonderful legible penmanship. To develop her core strength, Star attended equestrian riding lessons

Presently, Star attends Bright Minds Learning Academy (since 2021) where she receives math and reading tutoring twice a week. Lisa speaks very highly of Bright Minds and Sheila Lahoti who devised this program. Star absolutely loves going and it has helped her to become a more self-reliant, confident, and successful student in school. Star stays busy with an after-school social club, exercise and cooking classes at Gigi’s Playhouse, and playing baseball in a Canton Challenger League. Star loves acting and has been taking drama classes at school since the 5th grade where she memorizes monologues and participates in the

Christmas play every year. However, Star is most passionate about her martial arts training. She has been taking lessons for nine years at East Coast Martial Arts where she has successfully learned self-defense, Jiu Jitsu and sparring. Currently a purple tip, she is determined to one day earn her black belt. In her free time, Star enjoys listening to music, singing, attending the theater, watching the Cavs, traveling and spending time with family. After high school, Star plans to attend college, live on her own, and be fully independent with a good meaningful job. When asked what her future aspirations are, Star

specified, “I want to be an actress, work in a flower shop, or teach little kids. I also definitely want to work at a veterinarian hospital or animal shelter because I love animals.” Whatever path this strong-willed and tenacious young lady chooses, one thing is clear: Star’s choice to not let Down syndrome define her, far outweighs her abilities in showing the world what she is truly capable of and in paving the way for a very bright and successful future.
