iven Arcadia Tavern boasts 50-plus types of beer available by the bottle, can and on draft at any given time, the locally owned bar and restaurant has long had a reputation as more a brew-focused haunt. Thanks to a complete update of its beverage program, however, Arcadia Tavern is becoming a go-to hot spot for cocktail lovers across the Valley. Case in point – the Arcadia Paloma ($10). Developed in an effort to show guests that tequila can be used in more than just margaritas, every single sip is fizzy, fun and refreshing. “Our Paloma starts with tequila – the brand and type really do matter. We use Don Julio Reposado, which is made from 100% Blue Agave, double distilled and carefully matured in small oak barrels,” says Erica Norris, a long-time bartender at Arcadia Tavern. Norris mixes the tequila with housemade simple syrup to provide sweetness, adds a healthy pour of freshsqueezed grapefruit juice, and tops it with Cock’n’Bull Ginger Beer, much like one would top a Moscow Mule. “The result is a slightly bubbly tequila cocktail whose citrus flavors make your mouth feel like it is on vacation – or at the least, lounging by the pool.” 4801 E.
