W

hat started out as a catering company in Scottsdale called The Herb Box, which was named in homage to founder Susan Wilcox’s desire to serve savory twists on tried-and-true cuisine while offering fresh, seasonal ingredients, has grown to be a staple restaurant and bar concept in the Valley. So much so that in March the brand expanded from its two Scottsdale locations to add a third venue, this time located at the Colony in Midtown. An early standout on the cocktail menu is the most popular sipper at their two other locations – The Blackberry Mojito ($11). “Our Blackberry Mojito is a fun twist on the classic mojito using Dragon Berry Rum and fresh blackberries,” says Jessica Coulbourne, assistant general manager of The Herb Box. “The Dragon Berry Rum is a unique blend of strawberries and exotic dragon fruit, resulting in a bold – yet sweeter – flavor profile, especially when muddled with the fresh mint and lime. It really pops!” The cocktail was initially developed by Wilcox herself, as she was dreaming up her beverage program more than 20 years ago. “All of the cocktails that we offer, thanks to Susan’s forethought, are either very fruit forward or herbaceous, which makes them a great match for our gardenfocused menu,” Coulbourne says. 5538 N. 7th St., Phoenix; 480.393.0432; www.theherbbox.com.
