MOWRY & COTTON The Phoenician debuts a new eatery with local flavor in mind

Over the past two years, The Phoenician has been undergoing an extensive, multi-million-dollar refurbishment. Rooted in luxury and layered with details that define the destination’s history, location and culture, The Phoenician’s new look will feature a more contemporary use of influences from the surrounding Sonoran Desert. It also includes substantial redesigns of the guest rooms, casitas, The Canyon Suites, public and dining areas, pools, and even its spa. In mid-October, one of the most anticipated new venues courtesy of the renovation, Mowry & Cotton, opened its doors to major acclaim. Replacing Il Terrazzo, Mowry & Cotton relaxes the traditional luxe scene of The Phoenician, and, instead, aims to draw locals in with an inviting, laidback vibe; seasonally inspired dishes; and winsome drinks. Inside, there is a spacious, open dining room where a signature hearth oven stands as the central focal point. Sleek surfaces, floor-to-ceiling windows, ambient lighting, and rustic touches make for a relaxed backdrop for both comfy booth and chair seating.

“We got the name itself from two Old West businessmen – Mowry and Cotton – who, legend has it, partnered together to open one of Phoenix’s first fine liquor establishments more than 100 years ago,” says Lisa Mercer, food and beverage director for the resort. Each of the menus, which include breakfast, lunch, dinner and weekend brunch options (in coming weeks), is an array of regionally sourced dishes driven by chef de cuisine Tandy Peterson, who boasts an impressive background, including time at Cafe Bink and Binkley’s Restaurant as well as Spain’s Asador Etxebarri, which has been lauded as among the top 10 restaurants in the world. Peterson’s goal? A menu as approachable as the two folk-legend barmen themselves, bursting with flame-cured, indigenous flavors and textures of modern American cuisine. Guests can expect the likes of creative flatbreads, grilled pheasant, Southwesterninfused striped bass, and smoked spare ribs paired with a strong lineup of veggies like barbecue beets and caramelized cauliflower. The buzzy drink options and bar space itself are equally as impressive, with everything from spirit-forward spins on bourbon cocktails to regional craft beers, and, of course, extensive wine options. Beyond the bar is perhaps the venue’s most beloved space during fall – an expansive, openair back porch with views of the newly redesigned pools that is picture-perfect for drinks or dining. Mowry & Cotton is open for breakfast from 6:30 a.m. to 10:30 a.m., lunch from 11 a.m. to 2 p.m., and dinner daily from 5 to 9 p.m. Beginning Nov. 11, brunch service will be from 10:30 a.m. to 2:30 p.m. on Saturday and Sunday.
