Twisted Grove is about to blow your mind with its Gnocchi & Short Ribs ($19). Inspired during his annual “New York Foodcation” with his father, Chef Christopher Collins set out to make this fall dish all his own. The first step: Teaching himself to make gnocchi using housemade ricotta instead of potatoes. Next, Collins braises the short rib until it nearly falls off the bone, and he reduces the jus with his own chicken and beef broths for 12 hours until it becomes a decadently rich and savory sauce.
