Beyond meaning the third month of the year, the word “march” is also defined as the act of moving forward at a steady pace. And now that we’re well into 2020, it seems like a good time to assess how we’re each doing on our goals or promises to ourselves for the year. Are we moving forward, regressing or has not much changed at all? Personally, I set many goals for myself and this issue in particular fulfills one of them: writing my first So Scottsdale cover story. Yes, as the editor, I’ve always assigned the cover story out to writers for the 52 issues I’ve produced, but I promised myself that 2020 would be the year I put on my writer’s cap for some bigger stories. And a cover story on country legend Reba McEntire was one I could not pass up! McEntire has been a Scottsdale regular for nearly two deades as the 16-time host of the star-studded Celebrity Fight Night, which will take place early next month (April 4) to benefit the Alzheimer’s and Memory Disorders Program at Barrow Neurological Institute, as well as a number of other charities. Long before I was in this role as editor and knew about McEntire’s part in Celebrity Fight Night, I watched her hit sitcom Reba after school and sang along to her fan-favorite song Fancy while driving with friends. Upon diving deeper into McEntire’s life – and getting the opportunity to speak with her – I learned how savvy of a business woman she is and what a generous heart she has. I also learned we’re both Okies (me, by association as an Oklahoma Sooner). It is with great honor that I share McEntire’s story, and the message of Celebrity Fight Night, with you on page 46. The fun and inspiration continues on page 76, with our annual March madness feature highlighting 18 must-try activities and events perfect for springtime. Other spring treats include going green with refreshing salads (page 110), packing a picnic in style (page 99), feasting for National Noodle Month (yes, that’s a thing!) on page 72, and toasting our pristine March weather with a morning cocktail – preferably from a patio (page 106). When Suzanne Wilson was 5 years old, she saw her first musical – complete with a live orchestra – and it’s stayed with her ever since. “I was hooked,” Wilson says. “My mother immediately signed me up for piano lessons with a local teacher who instructed all of

the neighborhood children out of her house.” It was through studying piano, and voice a few years later, that Wilson began her rewarding journey in the world of music. During high school and college, she spent summers fine-tuning her craft at the Boston University Tanglewood Institute and the University of

She was even cast in a leading role in the first American musical to tour China, Once Upon a Mattress. “I love the creative outlet to express myself, but most of all, as many performers will attest to, there’s nothing like collaborating with other musicians and connecting with diverse audiences through live performance,” Wilson says. Wilson’s passion kickstarted her career in the performing arts industry, where she applied her music background in numerous positions in education. In Boston, she worked as chief of staff for the New England Conservatory, the oldest independent music conservatory in the country, in addition to holding influential roles with the Celebrity Series of Boston (a nonprofit performing arts presenting organization) and the Massachusetts Department of Conservation & Recreation. Before making the move to Scottsdale in August 2019, Wilson served as the executive director of Midori & Friends, a foundation that works to provide high-quality music education to public school students in New York City through instrument instruction, camps, concerts and workshops. “My biggest accomplishments across my career have been connecting people from all walks of life to the very best performing arts,” Wilson says. One endeavor that sticks out to her was during Dance Across the City Day in Boston, when she orchestrated a day of free instruction from some of the best local and international dance companies. And while living in New York, Wilson created City Music, providing students from public schools with the opportunity to perform on stage at Lincoln Center, an experience that imbued many with the confidence and motivation to take on any stage in the world. Now, Wilson is looking forward to bringing her two decades of experience in performing arts and education to the Valley, where she’s serving as the new president and chief executive officer of The Phoenix Symphony. “I am incredibly honored and excited to join an organization with the kind of impact and reputation The Phoenix Symphony enjoys,” Wilson says. “The Phoenix Symphony’s mission is my own mission. It’s exactly what I have dedicated my entire career to doing – creating high-quality music experiences, bolstering economies, and educating the next generation of musicians and audiences.”

Facing the Future With The Phoenix Symphony approaching its 75th anniversary in just two years (the 2022-23 season), Wilson hopes to lead the treasured institution in yet another successful chapter. “I want to set the stage for the next 75 years,” Wilson says. “My vision for the future of the symphony is to ensure artistic excellence, make certain that music is accessible to everyone through compelling concerts and programs, and attract the next generation of symphony lovers.” As someone who frequents the symphony for date night with her husband Jason – an Arizona State University graduate and die-hard Sun Devils fan who has recruited Wilson into wearing

maroon and gold – Wilson is ready to accomplish her goals with the help of those around her. “It’s clear that the possibilities in arts and culture in Greater Phoenix are limitless. As the Valley grows, The Phoenix Symphony wants to harness that energy to expand and innovate so we can entertain and enrich our community while inviting people to feel a renewed sense of ownership and excitement. We want to be everyone’s symphony.” The symphony community that stands with her includes music director Tito Munoz, resident conductor Matthew Kasper, a dedicated board of directors, and, of course, the organization’s talented musicians. “Partnerships, innovation, and people have always inspired me and have been the centerpiece of any professional success that I have experienced,” says Wilson, noting that the people of the Valley have played a huge part in making her feel at home. “Since moving here, I have been consistently struck by the generous spirit and sincere willingness from complete strangers to welcome me into the community.” But no matter where Wilson is located, her heart lies in the arts and education. “There is something magical when watching a young person experience music and the performing arts for the first time,” she says. “I’ve seen so many students’ lives changed through music. Not all kids always went on to play professionally, but for so many, music helped them find something in themselves – confidence, imagination, self-expression – and instilled core values that opened unexpected doors for them.” And many doors have opened over the years to help lead Wilson to her position at the helm of The Phoenix Symphony. “Whether at a performing arts organization or government agency, at a major conservatory or leading a music nonprofit, all of my experiences have led me here to serve The Phoenix Symphony and this community,” she says. “I look forward to contributing and being part of a team that impacts the Valley of the Sun in a positive manner every single day.”

Former athlete Justin Thomas Allen triumphs over adversity to help others on and off the court

Justin Thomas Allen has transformed his personal struggles into a career dedicated to helping others reach their potential. As a young man from a small farming village in Illinois, Allen’s future looked bright with a scholarship to play basketball at Arizona State University ahead of him. But at 19, he was diagnosed with Hodgkin lymphoma. While undergoing six months of chemotherapy and eight weeks of radiation, he took a medical redshirt during his sophomore season of basketball. Ultimately, Allen recovered to finish strong at ASU, going on to play professional basketball in leagues around the world. Then, in 2016, he was diagnosed again, this time with thyroid cancer. After surgery in which his thyroid was taken out, Allen overcame the disease once more, but found himself battling severe depression. “After going through cancer a second time and considering suicide, I decided that I had to do something different,” Allen says. He took what he calls a “pursuit of passion” trip across the U.S., immersing himself in motivational self-development books along the way. This marked the beginning of his career as a life coach and speaker. “My journey to coaching was sparked by fighting through my own pain and darkness and coming out the other side stronger and more connected,” Allen says. “A life coach is a partner who is there for you through life’s most challenging times to help you to see things differently, refine your approach, and achieve your dreams.” Combining personal development and his love of sports, Allen also founded Passion4ball (www.passion4ball.org), which helps current and former athletes enhance their performance through coaching around their mindsets, habits, routines, and performance skills. “I developed Passion4ball as a way to help young athletes pursue their athletic goals and dreams like I did,” he says. “I wanted to scale this concept and impact more lives, so I developed an online course.” Today, Allen is also a happy family man. “I was told there was a high chance that I’d never have kids after my chemo and radiation,” he says. “The fact that I have three healthy kids is the greatest blessing in this world.” Allen’s future plans including writing a memoir and growing Passion4ball to impact more people. “I love watching the people I work with make changes, take bold action, shift their mindset, and ultimately realize their goals.”

Jose and Brittany Acevedo share others’ stories while writing their own

Jose and Brittany Acevedo are the dynamic duo behind Finding Arizona (www.findingarizonapodcast. com), a weekly podcast that features Arizona business owners and creatives. The podcast’s mission is to share unbelievable stories from the one-of-a-kind people creating them. “We choose to highlight the well-deserving, the tenacious, and the kind,” Brittany says. “I love what we do because bringing our state together brings us closer together.” Since the first episode in July 2015, Finding Arizona has been a passion project for Jose to share the points of view of local entrepreneurs. “I started out of a hot garage with just two mics and a laptop,” he says. “It has since become a community of great people and friends, and I want this train to continue on until I am too old to push the record button.” The couple met while at a coworking space in 2015 and started dating soon after. “When I found out Jose had a podcast, I binged all six episodes that night and made it a point to make myself part of it,” Brittany says. In February 2016, she accomplished just that, starting by taking photos and then transitioning into scheduling, marketing and advertising. Brittany has been working with Jose ever since, noting that communication is key in successfully working together. “We know each other’s strengths and weaknesses, which gives us the opportunity to learn from each other,” Jose says. “She is the yin and I am the yang.” On October 12, 2019, the couple said their “I do’s,” livestreaming the ceremony on social media as a way to include all of their friends and followers. Both agree that their wedding is the most memorable moment from working on Finding Arizona. “The best thing in the world is to be able to work creatively side by side with my favorite human,” Brittany says. “Although it is part time today, I look forward to the day we can put all of our energy full time into Finding Arizona.” Central to all that the Acevedos do is storytelling and helping listeners learn more about the dynamic people and businesses in Arizona – while learning in the process themselves. “Everyone has a story to tell and deserves a chance to be heard,” Jose says. “Each story is an opportunity to learn something new, and I love what we do because everyone wins in the end.”

Although her career as an estate planning and probate paralegal influences her to dress on the conservative side, Gerber loves adding a statement piece like a purse, ring or cardigan to show her personality. “It’s good to have a conversation starter to connect with clients,” she says. “You are what you wear.” Inspired by the wardrobes of Zooey Deschanel, Jessica Alba and Marilyn Monroe, Gerber finds herself buying blazers and classic cuts while maintaining her signature casual vintage style. “I’m in love with my 1950s-style emerald green dress with large polka dots all over it,” she says. “I wore it to a polo match in 2018, and I smile whenever I look at it.” Her No. 1 tip when it comes to style? “Keep it clean and simple. here are stars, and then there are legends. With a storied and multifaceted career spanning four decades, Reba McEntire is certainly both. The singer is often known as the Queen of Country, and with good reason. McEntire has had 32 No. 1 hits – the most ever by a female country singer – and holds the record for the most top 10 country hits. She’s sold more than 75 million albums worldwide, and she has more No. 1 albums than any other female country artist.

But it’s not just about the numbers – it’s about heart, the heart behind McEntire’s music and the heart behind all that she does. Among her many endeavors, McEntire is part of the Valley’s most star-studded philanthropic event, Celebrity Fight Night. She’ll return for her 16th year as host when the event takes place at JW Marriott Phoenix Desert Ridge Resort & Spa on April 4. “Music is healing; it’s encouraging,” McEntire says. “It talks to your soul like nothing else can.”


It’s this transcendent power of music that keeps bringing McEntire back to Celebrity Fight Night and it’s what has given her such a loyal fan base. This power is also what prompted McEntire’s mother to teach her four children about music as they grew up on an 8,000-acre cattle ranch in Chockie, Oklahoma. “My mama was the musical person of the family; she had the talent and passed it down to us,” McEntire recalls. “When us kids were in the backseat wrestling and fighting, Mama would keep us out of trouble by getting us all to sing, and she taught us harmony.” McEntire went on to form a country-western group with two of her siblings called The Singing McEntires, where they performed at rodeos, clubs and dance halls. But it was singing the National Anthem at the 1974 National Rodeo Finals in Oklahoma City that changed the trajectory of her life. “Red Steagall heard me sing there, and then took me to Nashville to cut a demonstration tape,” McEntire says. Just 11 months later, these recordings secured her a deal with Polygram Mercury Records. “My first single came out in 1976, and my first No. 1 record was in 1983,” McEntire says. “So, it wasn’t overnight success, to say the least. Everything took a long time with me, but I’m very thankful about that because I didn’t know anything about the business … I learned about people and the business, and I had a strong foundation of friends and industry folks to help me. So that was a huge blessing to me.”

A STAR IS BORN

From there, McEntire’s journey has been a steady climb to the top. She moved to MCA Records in 1983, under which her career blossomed with her first two No. 1 hits, winning CMA Female Vocalist of the Year for four consecutive years, winning CMA Entertainer of the Year in 1986, joining the Grand Ole Opry in 1986, becoming part of the Country Music Hall of Fame and Museum, and debuting multiple Gold and Platinum albums. Earning recognition as a household name, McEntire remained with MCA until moving to The Valory Music Co. in 2008. Over the course of her career, she’s won three Grammy Awards, and in 2018 she received the prestigious Kennedy Center Honors for her lifetime of contributions to American culture. Beyond gracing the stage, McEntire has also been behind the scenes in the business management side of her career. She co-created Starstruck Entertainment in 1988 and founded Reba’s Business Incorporated in 2015 – both of which have allowed McEntire to oversee her management, booking, publicity, and music publishing. “It’s been a lot of fun to work in all the different aspects of the music business, including coproducing myself on my records,” says McEntire, who also joined Given Music Publishing as a writer in 2018. “It’s so much fun to find the music and find the songs. I just love to be in the studio, and I love the whole process of recording.” Of course, many recognize McEntire’s bubbly energy and comedic sensibilities from her self-titled hit sitcom. Fans can fall back in love with the characters of the fictional Hart family on Hulu, where Reba is currently streaming. McEntire also has a number

of film credits under her belt, and notably played the role of Annie Oakley in the 2001 hit Broadway musical Annie Get Your Gun. Throughout her versatile career, McEntire has continued to hone her musical roots, releasing a total of 33 studio albums and continuing to innovate for her fans. This year, in addition to continuing her Las Vegas residency with Brooks & Dunn at The Colosseum at Caesars Palace – Reba, Brooks & Dunn: Together in Vegas – country’s leading lady will headline her own all-new tour for the first time in 11 years. “I’m looking forward to doing a brand-new tour and putting new songs of mine in the show, as well as having new costuming, new staging, and new video content,” McEntire says. “My fans have been very loyal to me, and I love them with all of my heart. I want to do this for them.”

FIGHTING FOR A CAUSE

Doing for others is at the heart of McEntire’s years-long participation in Celebrity Fight Night, a charitable event in its 26th year that supports the Alzheimer’s and Memory Disorders Program at Barrow Neurological Institute, as well as several other charities. 10 Ways to Get Your Teen Driver Road-Ready Auto expert Shahe Koulloukian shares the most important factors in teenage driving safety.

H

aving a child that’s finally old enough to drive is nervewracking – for the teen who’s a novice behind the wheel, but perhaps more so for the parents! We asked our go-to car expert, Shahe Koulloukian, owner of Mazvo Auto Care, for his best advice on making sure your teen is ready to hit the road… safely and responsibly. Here are his pro tips:

6. Teens whose parents drive distracted are two to four times likely to also drive distracted. Remember, teens see their parents as role models. That doesn’t change when they get their license. When you are behind the wheel, don’t do anything you wouldn’t want your teen to do. If they catch you – admit to your mistakes. It shows your new driver that it is never too late to start driving safely.

1. Practicing with them honestly is the best way to start. Share the stories of your first experience driving, and how nervous you were, and the mistakes you continue to make… even today.

7. Sign them up for driving school and leave them alone. They need to focus on learning by a third-party, non-biased person. You can judge them later.

2. Remember, you are not the person to make your teen a great driver, they are! Accept the fact that you’re not the master; you are just the introductory level.

8. This is the most important step. After they have completed a driving school course, Go to the B.R.A.K.E.S program website (https://putonthebrakes.org/shop) and sign your teen and yourself up for this amazing FREE program. Yes, it’s free, and they travel all around the country teaching safe and defensive driving the right way. You simply sign up and give a credit card to hold your spot; if you show up, it’s FREE! If you flake out and are a no show, then you get charged for your saved spot. It’s really that simple.

3. Explain that distraction is the biggest reason for accidents. Teach them about the three types of distraction: manual, visual, and cognitive. • Manual distractions are those where you move your hands from the steering wheel. • Visual distractions are those where your eyes aren’t focused on the road. • Cognitive distractions are when your mind wanders away from the task of driving. • Remind them that texting involves all three types of distraction! 4. Start with parking and turning before allowing them to drive on the road. Be sure to invest at least ten hours of just parking and turning, spread out over time. A good rule of thumb is to commit to two hours a week in 30-minute segments. After they master the parking and turning, you can slowly start the driving in low-risk situations for a minimum of 15 hours, then work up to more risky situations for at least ten hours. 5. No passengers in the vehicle other than parents. No radio or music for the first 20 hours of driving. They can sing and get jiggy with it any time in the future.

9. When you’re ready to purchase a car for them, stay away from vehicles that have too many bells and whistles – i.e., the backup camera, side motion sensors, and cruise control. These may seem helpful, but they’re bad-habit-forming features that your teen will rely on, not actually doing the work of paying proper attention and becoming a good defensive driver. 10. Teach your teen the “nuts and bolts” of their vehicle: tire size, the type of oil it requires, what the warning lights mean. Get them familiar with their owner’s manual and encourage them to keep a maintenance schedule. Make sure they know what to do in case of a flat tire or other roadside emergency. Car accidents are the leading cause of death for ages 15-20, and teaching teens safe driving goes far beyond “Put your seatbelt on and be careful!” – especially given all the possible distractions that technology provides. But with proper education, you can rest a little easier knowing that your teen is prepared and responsible. Behind the wheel, at least.

Taking place March 16-22, the Ladies Professional Golf Association (LPGA) Founders Cup will see the top women in golf tee off at JW Marriott Phoenix Desert Ridge Resort & Spa’s Wildfire Golf Club. The lush scenery will serve as the perfect backdrop for socializing, imbibing and celebrating the 10-year anniversary of the only LPGA event in Arizona. Integral to the LPGA Tour is the LPGA Foundation, which empowers girls and women through developmental, humanitarian and golf community initiatives like the LPGA*USGA Girls Golf program, where girls have the opportunity to learn the game and apply for college scholarships. Young women selected to be Flower Girls for BOV learn the art of giving back to the community by participating in various philanthropic events each year. Such events include the Annual Fashion Show Luncheon in December and a visit to Ryan House. To celebrate these young women, their fathers will present them at the Annual Charity Ball, which is Arizona’s longest running philanthropic event. “As we enter our 112th year as an

organization, we are thankful that this time-honored tradition remains,” says BOV Chairman Susan Westra. “The members of The Board of Visitors recognize and are grateful for the generosity of those who have supported our events, allowing us to fulfill our mission.” Since its inception, BOV has granted more than $22 million to local nonprofit organizations in the Greater Phoenix community. Dan Dan Noodles Flo’s A classic Chinese comfort food staple, Dan Dan noodles are a spicy street food from China’s Sichuan province. Kathi Turner designs meaningful Western and Southwestern-inspired pendants

Jewelry designer Kathi Turner creates rustic wearable art and accessories. Her distinctive creations draw from her life as a cattle rancher in eastern Washington and the remote high desert near the Nevada border. “My inspiration comes from the beauty all around me, and so much comes from the ranching world I shared with my husband,” Turner says. “I think that’s why horses show up in so many of my pieces.” After marrying in 1964, Turner and her husband Tom started their first ranch together in Ellensburg, Washington. There, she learned about beading techniques, materials, and use of colors from the female elders of the Yakama Native American tribe. “I started doing a lot of beading at age 13, and that is when my love to create and design jewelry started,” she says. Turner is primarily self-taught – through lots of trial and error, she says. “It’s hard to explain a person’s drive to create. It’s a driving force within that just takes place when you start creating. You may have an idea, but when you start it takes its own direction.” After retiring from ranch life and moving to Scottsdale, Turner took her jewelry-making in a new direction and began working with silver, copper and semi-precious stones, turquoise being her stone of choice. “With a torch in one hand and a passion in the other, I have come up with a style I call ‘rustic primitive.’” Turner participates in two annual art shows: Hidden in the Hills Studio Tour, held by the Sonoran Arts League the weekends before and after Thanksgiving, and the Superior Livestock Video Auction held every July in Winnemucca, Nevada. Her pieces can be viewed and purchased on her website (www.highdesertcreations.com) and by appointment at her Scottsdale studio. Each pendant has a meaningful name, such as A Sense of Peace. A favorite of Turner’s is the Soul Mates pendant, with a turquoise heart resting below two horse heads cast in silver. “It represents individuals who, despite their differences, have a driving love for each other,” she says. “It seems to be a favorite among sweethearts. This piece says a lot and means a lot.” Beyond her repertoire of pendants, Turner also does commissioned pieces, which hold a significant place in her heart. “Through commissions, I have heard some very awesome stories, and some very sad ones. Sometimes I’m asked to remake things that I have made in the past, and other times it may be recycling a memory and using a piece of jewelry that has meaning.” Most of her commissioned pieces are ranch brand pendants or key fobs, but Turner welcomes those interested to contact her. “I became an artist to share what I feel,” Turner says. “When I sell a piece, I’m not just selling a piece – I’m selling a piece of my heart and soul.”

AMBASSADOR, GATEWAY FOR CANCER RESEARCH Samantha Harris has many credits to her name, including: wife, mother, Emmy Award-winning TV host, certified health coach, and cancer survivor. Recently, she added another title – ambassador of Gateway for Cancer Research. Samantha had dedicated much of her life to healthy living. She ate right, exercised regularly and was, from all outward appearances, the picture of perfect health. She underwent her first mammogram in late 2013, at age 40, earning a clean bill of health. That all changed in just 11 days. Following a workout, Samantha discovered a lump in her right breast. Referring back to her seemingly clear mammogram less than two weeks prior, her ob-gyn discounted the mass as little more than lumpy tissue resulting from having dense breasts, as many women do. Still feeling uneasy about the lump, Samantha met with an internist who, again, assured her that it wasn’t cancer. Four months later, Samantha’s gut intuition wouldn’t let the matter go, so she scheduled an appointment with a surgical oncologist. She underwent multiple procedures, including two ultrasounds, an MRI and a needle biopsy – all of which suggested the mass was benign. However, the doctor performed a lumpectomy in a last-

ditch effort to confirm the origin of the mass and ease Samantha’s fears once and for all. That test proved that Samantha’s instinct had been right all along. It was in fact cancer. A cancer that had been present for possibly years, slowly growing. When the radiologist looked once again at the original mammogram, with new knowledge of the location of the mass, he suggested it was “like trying to find a snowball in a snowstorm.” Samantha was diagnosed with invasive ductal carcinoma in situ (DCIS). In May 2014, she made the difficult decision to undergo a double mastectomy

followed by breast reconstruction surgery. Today, the former Entertainment Tonight and Dancing with the Stars co-host is cancer free, living life to its fullest and helping to educate others about the importance of knowing your body, trusting your gut, and being your own advocate. 2020 ROLLS-ROYCE CULLINAN The full-sized SUV is the epitome of luxury BY JIM PRUETER

It was inevitable that Rolls-Royce would follow the likes of Lamborghini, Bentley and Maserati into the booming SUV market, albeit belatedly. The luxury automaker’s contribution, the Cullinan, is named for the largest gem-quality rough diamond ever found, discovered in 1905 and weighing more than 3,100 carats. The Cullinan is heavily based on the RollsRoyce Phantom, mimicking its boxy style, tall windows, and 22-inch wheels. Higher ground clearance, a wagon-style roofline, and thick D-pillars set the Cullinan apart. Inside, the cabin is magnificently finished. It is almost identical to the Phantom, but with a larger infotainment system and a wider center console. The entire interior is an amalgamation of luxuriously hand-finished surfaces, featuring water-resistant box-grain leathers and jeweler-styled metalwork. The 18-speaker audio system is nothing short of stunning. Of course, Rolls-Royce allows customers to source pretty much anything to personalize, enhance, wrap or inlay into the interior, making the Cullinan a bespoke work of art. The overall feel of the cabin bears resemblance to a high-end living room, with seating more comfortable than any sofa on the market. And, of course, seating adjustments are unlimited. There’s simply no other vehicle with luxury, comfort and quiet on this level. Power is delivered by a 6.7-liter twin-turbocharged V-12 engine with 563 horsepower and 627 pound-feet of torque. There is a striking 42-mile valley that separates the colossal Teton Mountain Range and Gros Ventre Range, both in Wyoming. Originally called Jackson’s Hole and named after famed 1800s beaver trapper David Edward “Davy” Jackson, there is no actual hole in the mountain-lined paradise. Back then, the term “hole” was simply used to describe a high mountain valley. Today, this hot spot for adventure buffs, culinary connoisseurs, and nature lovers alike has evolved from a sleepy mountain town into a laid-back yet chic refuge for everyone from Sandra Bullock to Harrison Ford.

Though best-known for its prime-aged beef and seafood, Eddie Merlot’s also has some of the best starters in town, all offered at a discount during happy hour from 4 to 7 p.m. seven days a week. One of the most popular dishes is an inspired dinnertime take on avocado toast ($15.95 or $12.95 during happy hour). It starts with a chive crema made from sour cream, lemon juice, salt and pepper. The crema is plated and layered with whole grain toast followed by smashed avocado infused with tart lemon vinaigrette and housemade egg salad comprised of capers, mustard, parsley and mayonnaise. Finally, thinly sliced smoked Atlantic salmon and a salad of lemon vinaigrette-marinated fennel fronds, cucumbers and red onions completes the surprisingly refreshing tower of flavor. Maple & Ash’s It’s Not You, It’s Me is a floral infusion of flavors

The aim at swanky new Scottsdale hot spot Maple & Ash is to modernize guests’ ideas of what it means to be an American steakhouse in the 21st century. “Through creative tweaks, our cocktail program is a perfect example of how we pay homage to classics like martinis and Manhattans while also giving new and different options,” says bar director Eric Simmons. Among its most inspired offerings is It’s Not You, It’s Me ($15). “It is a riff on the Clover Club, a frothy gin and raspberry-infused cocktail first invented at a Philadelphia club of the same name in the early 1900s,” Simmons says. It starts with The Botanist gin, which is known for its botanical and floral notes as well as for its soft finish. “In most Clover Clubs, you combine gin with dry vermouth and raspberry syrup. Together, that makes for a very sweet drink, so I trade out the vermouth for Cocchi Americano, an aperitif wine that is sweet but a touch bitter and even a bit zesty,” Simmons says. “I swap the raspberry syrup with hibiscus tea, which plays up the gin’s floral elements and gives the cocktail its vibrant color.” He then adds lemon juice for acidity and egg whites before performing a dry shake, which gives the cocktail its froth. After a secondary shake with ice, it’s strained into a sour glass and garnished with dehydrated hibiscus flowers and lavender. “We do this as much for the look as for the aromas,” says Simmons, noting that the cocktail is well-balanced with hints of citrus and a burst of botanicals, making it perfect for a refreshing spring drink. Joe Absolor is the executive chef of recently opened Chauncey Social, where he crafts elevated American cuisine sprinkled with Asian and Italian influences.

Did you always want to be a chef? While I grew up in a single parent household and chipped in by cooking from a young age, I did not set foot in a professional kitchen until I was almost done with culinary school. My first career was actually in construction. Tell us about the transition. After high school in my native Washington, I enrolled in college in Idaho. It wasn’t a fit, so I eventually moved to Phoenix to live with a friend in 2001. He introduced me to construction, where I began in an entry-level capacity and earned my way to a foreman role. However, the work was physically demanding – so much so that I enrolled at Le Cordon Bleu in Scottsdale in 2007 to explore my passion for cooking. Describe your culinary journey so far. I got my start as a food runner at Prado, then took a position at The Parlor, where I spent nearly five years expanding my knowledge and skills. In 2013, I became one of the opening partners of Clever Koi. One year later, I joined Evening Entertainment Group (EEG) to help open Bottled Blonde in Scottsdale, followed by locations in Dallas and Chicago. I was named executive chef at EEG’s Stock & Stable in 2016 and moved over to head up Chauncey Social in North Scottsdale last November. What’s been one of your major career highlights? Last year, Devour Culinary Classic awarded me a “golden ticket,” which provided entry to compete in the World Food Championships in Dallas in November. Talk about the experience of a lifetime! What is your favorite dish at Chauncey Social right now? The 12-hour braised short rib dumplings with fig and chile marmalade ($15) are heaven on Earth. What would we be surprised to know about you? The Americano brings a new Italian steakhouse concept to North Scottsdale

At a traditional American steakhouse, one expects exquisite cuts of meat, a selection of fine seafood and shellfish, and hearty sides like loaded baked potatoes. The concept of an Italian steakhouse is not all that different, and – in fact – has its roots in America, too. In 1926, two Italian immigrants opened The Palm in New York, wanting to combine their warm, inviting approach to service with their favorite recipes from their home in northern Italy. Given that they were located in New York, however, they continuously got requests from customers for steak. After running down the street to get steak on request one too many times, they added it to the menu. The combination of the two cultures became the toast of the town, and The Palm became America’s first Italian steakhouse. Nearly 100 years later, the brand is still family owned, now with 24 locations across North America. Taking inspiration from iconic Italian steakhouses like The Palm and infusing its own twist, Pomo Restaurant Group – known for Pomo Pizzeria Napoletana, Meat the Ball and Mora Italian – has recently launched The Americano.

Billed as modern in its approach yet Italian in spirit and design, the 7,000-squarefoot space, adorned in dark grays and light greens, has an open kitchen with a wood-fired grill. The dining room features crescent-shaped booths as well as butcher block-style tables and art throughout. Inside the bar and lounge, there is a sizeable island bar with access to the outdoor patio area. There are also two private dining rooms: the Milano, which fits up to 10, and the Manhattan, which fits up to 40. Matthew Taylor, a veteran of the Michael Mina Group, is serving in a dual role as the executive chef of The Americano as well as Mora Italian, a position he’s held since 2017. His menu features fine steaks using grass-fed, certified Italian purebred Piedmontese cattle; domestic wagyu beef; Japanese Kobe beef; fresh homemade pasta; and Mediterranean seafood, including a raw bar and caviar service. Beyond the ample steak options, notable dishes include Tagliolini all’Americano, which is white soffritto (the aromatic base for most sauces, soups, stews and braises in Italian cuisine), king crab and Santa Barbara sea urchin with infused butter ($32) and Mediterranean Branzino alla Plancha with black garlic, frisee and Treviso salad, fennel and charred lemon ($50). There is an extensive wine list, with the sommelier’s top seasonal picks noted on the menu. The cocktail list features eight signature options, including Hugo, made with Italicus Liqueur, mint, lime, orange, Fever-Tree Elderflower and prosecco ($16), and Olive You More, featuring Stoli Elit Vodka, barrel-aged olive brine, salt water, olive bitters, and extra virgin olive oil ($22). The Americano is open for dinner at 5:30 p.m. daily while the bar opens at 4 p.m. daily. There are plans to add lunch hours by month’s end. The Americano, 17797 N.
