True Food Kitchen’s poke bowl ($22) is a lighter, brighter twist on the trendy traditional version, swapping out ahi tuna for sustainable, wild-caught albacore and sushi rice for a nutrient-dense mixture of brown rice and quinoa. For an umami flavor combination, the base ingredients are combined with earthy avocado and Asian-roasted mushrooms, while Persian cucumbers, pickled ginger, watermelon radishes, and cashews add a little crunch and spice.
