The Georges Bank Scallops ($32) at Hearth ’61 – located at the newly opened Mountain Shadows – are flown in twice weekly from the internationally acclaimed Northeast fishing region, Georges Bank. Sweeter than a traditional scallop, each one is seared and enveloped in an earthy romesco sauce tinged with the heat of red peppers. Playing up the rich flavors, Executive Chef Charles Wiley adds buttered mushrooms, Meyer lemon barley and charred spring onions, and he finishes the dish with fennel pollen, which has notes of both sugary marshmallow and spicy licorice.
