Make Your Hair Color Sparkle this Holiday Season with Color Specialist, Rodney Gentry

“This season, it’s all about blends and natural, warmer tones,” says Rodney Gentry, hair color expert and master stylist. “There is so much you can do with your hair to create just about any look you want.” There’s no surprise that Ombré is extremely popular this fall. It’s a hair coloring trend that doesn’t seem to be wavering; only changing by the season. This fall, the Ombré style uses warmer tones which are blended for a subtle, more natural look. Another gorgeous blended color that’s hot this season is Mushroom Blonde. Mushroom Blonde is an ashy mix between blonde and brunette, creating an ashy, gray blonde with dark undertones—think of the color variety on the underside of a mushroom. “It’s excellent for weaving colored pieces around your face to create a subtle and natural change,” says Rodney. This color option is a great way for blondes to spend time on the darker side. Conversely, there is Mushroom Brown for the brunettes who want to go a little lighter, while creating a multi-dimensional hair color. In this instance, the colors are subtle shades of brown and gray. Copper tones are all the rage as more and more people desire a look of red without the commitment and hassle of keeping up with red hair. Additionally, rooted gold tones are a favorite this season. There’s also a variety of feminine chestnuts and browns. “These colors tend to not fade as much so it’s more low-maintenance,” Rodney explains. For those pesky gray hairs, Rodney reveals that the key to gray coverage is to not cover it 100%. Instead, he prefers to use a neutral color on select pieces to make the grays look highlighted. This way, people don’t have to recolor as often. By doing this technique, it saves the condition of the hair since you’re not covering all of your roots as often. For those of us who lived through the 80’s, you may see familiar-looking accessories making a comeback. Fun-colored bobby pins, bows, and scrunchies are back in style, along with toned-down versions of 80’s hair styles. “You get volume in the body of your hair, with tamer roots,” says Rodney. Rodney takes into account a person’s features, skin tones, and routine when he artistically crafts a new hairstyle. “”The right color will make the right hair cut. Michael Jones is all smiles a year into his role at Delta Dental

Delta Dental of Arizona is celebrating its 50th anniversary in 2022 by giving back to the community it has been serving since 1972. At the helm of these efforts – and the company – is President and CEO Michael Jones, who has been in his role for just over a year. Jones is passionate about community service

and healthcare, and with Delta Dental, he is able to integrate the two in a whole body healthcare mindset. Jones and his siblings were raised by a single mother in Chicago’s Cabrini-Green housing project. Despite the area’s reputation for crime and neglect, Jones grew up with the values of

Pulse UP CLOSE character and integrity, and the philosophy that it was vital to work hard, stay positive and remain hopeful. His aim was to get a great education and find a way to give back to the community. Graduating from Iowa State University with a degree in engineering, Jones eventually earned an MBA from the University of Texas with a focus on business strategy. He decided on a career that focuses on the intersection of healthcare, strategy and technology, and how they lead to building healthy communities. “As my career progressed, my passion has always been there to help others,” he says. “I understand the need and I also understand that people aren’t looking for handouts for their whole life, they just need a leg up until they get on their feet and are able to go. I identify with that. I was underserved, I was underinsured, I was the child of a single-parent family.”

A Passion for Business While he always had his sights set on using his skills to affect change in the community, Jones’ journey wasn’t linear. “Careers aren’t a straight trajectory. They go up, they go to the side, they dip down, they come back up. You take two steps, you go back a step,” he says. “My career represents a culmination of experiences and a body of work and the impact I’ve been able to have in the jobs that I’ve had. You’ve got to be able to deliver results, first and foremost, or you don’t get to go after your passions.” When the opportunity arose for Jones to take the helm at Delta Dental – where the goal was to develop a growth strategy for the company while simultaneously heading up the community service arm of the organization – he jumped at the chance. “This job represents my ability to bring both of my passions together,” says Jones, who, since taking over as president, has also launched a partnership with Arizona PBS to amplify oral health education among children. When he joined Delta Dental, Jones also signed on to be the president of Delta Dental of Arizona Foundation. Since 2010, the foundation has given more than $15 million to support oral health education and disease prevention programs for underserved and uninsured communities across the state. In Jones’ first year as CEO, the foundation gave more than $750,000 to 29 nonprofit organizations, supporting projects and services promoting good oral health practices and increasing access to dental care among underserved populations. Since taking over, Jones has also added three new board members to the foundation’s board. This summer, Jones was also elected to Greater Phoenix Leadership, the state’s premier business roundtable for CEOs. He’s also looking to get involved as a board member for organizations or education-focused nonprofits that could benefit from his expertise in devising growth strategies and finding new ways to connect with the marketplace.

Healthcare & Finding His Home As CEO, one of Jones’ top priorities is advocating for medical-dental integration. Often, oral exams can help with the early detection of other underlying conditions, such as diabetes,

anemia, or gastrointestinal disorders. For 2023, the foundation has expanded its grant cycle to include non-dental programs, specifically nutritional access programs. “There are those in our community that struggle daily with getting food for themselves and their families,” he says. “We know those individuals and their families are just as likely to have unmet dental needs as well.” Jones believes that the best way to get the skyrocketing cost of healthcare under control is to look at the intersection of healthcare systems, and seek opportunities to collaborate, bringing the best of all capabilities together. Delta Dental has expanded its partnerships to include organizations across the state that provide education, screening and referrals for oral care. After moving from Minnesota to Scottsdale just a year ago, Jones has clearly made his mark in the community and is enjoying exploring his new hometown. Jones and his wife, who have been married for 30 years and have two adult children, are starting to get involved and engaged outside of the corporate world. They’re getting to know the neighborhood after just recently finding a permanent place to live in the bustling housing market. The couple enjoys exercise and living an active lifestyle, and are looking forward to exploring the arts scene and all that Scottsdale has to offer. “We also love restaurants,” Jones says. “Scottsdale has a plethora of opportunities to try new places. Veronique Munro continues to be a trailblazer in the sunless tanning industry

New York native Veronique Munro’s complexion erred on the fairer side growing up, earning her the nickname “Casper” by many. Embarrassed by this, Munro spent hours in her room mixing ingredients to change the color of her skin, which taught her how color works. Munro later studied computing and business abroad, which paved the way for a lucrative career as a business and technology consultant for years. In the mid-2000s, she noticed the sunless tanning industry was having a big, booming moment. “I saw an opportunity to do something progressive in that space, and with my background in color and technology, it was a very fun and easy transition for me,” she says. In 2005 in Beverly Hills, before spray tanning was known and accepted, Munro launched Infinity Sun, the first and only fully computerized airbrush tanning system that combined sunless tanning solutions with highend beauty treatments. The founder and CEO uses proprietary technology to create sunless tanning and skincare products for businesses and consumers. Over the years, the brand has attracted a celebrity clientele, including Jessica Alba, Jennifer Lopez and Britney Spears, to name a few. Infinity Sun (www.infinitysun. com) also empowers sunless tanning professionals to succeed by offering unparalleled education and support, Munro’s favorite aspect of her job. “Helping someone create a life they absolutely love living every single day [is so rewarding to me],” she says. Because Los Angeles was one of the first cities to go into lockdown during the pandemic, Munro needed a new home base for her business to continue operations as normal. Arizona, North Scottsdale specifically, became her answer. “I already had a holiday home here and family members I wanted to be close to. Moving made sense,” she says. This business maven is also a dog lover. Her pup Snoopy inspired (and is the co-founder of) her nonprofit, Sprays for Strays (www.spraysforstrays.com), which raises money through the sunless tanning industry to end dog homelessness across the nation. “Through having a [Snoopy], I learned so much about love and believe he healed much of my early life trauma. It seems right that his existence should benefit dogs [in need],” she says.

Deb Levine connects with spirits to bring healing messages to the living

Originally from Pennsylvania, Deb Levine is a connector – in more ways than one. The mother of two teenage girls is a medium and intuitive, both personally and professionally. “I can’t separate the two. My gifts have always been with me.” Levine says. Though she tried for many years to avoid it, Levine has always been sensitive to energies of those around her, and at age 13 she noticed that she could communicate with spirits. It wasn’t until after the birth of her children that she honed her talents and began practicing her gift full time with the launch of her business The Soul Wisdom (www.thesoulwisdom.com). “Self-development is something that we as humans constantly work on, but the learning doesn’t end there,” Levine says. “Although we are no longer in our physical bodies after death, our essence and our spirits are around forever. Even spirits learn, evolve and continue to grow.” Those booking a session with Levine should expect the unexpected as each reading is different. Utilizing her “mind’s eye” either as a medium or intuitive, she taps into what is needed at that exact moment for her client’s highest self, whether it is communication from a loved one who has passed or tapping into the client’s energy for what she calls a “gentle soul excavation” as a means of alternative therapy and healing from beneath the person’s subconscious. “There are elements to well-being that we can’t necessarily see,” she says. “Calling on spirits for help isn’t all that weird or spooky; it’s part of the healing.” Levine is inspired daily by the people she meets through her work. For Jesus Jimenez, the owner of a creative photo and video agency, less is definitely more. No matter what he has on his everchanging schedule for the day, the Arizona native mixes earth tones with classic vintage-inspired streetwear and designer labels. Jimenez believes that style isn’t just about the clothes one wears, but how they communicate with the world. “I’m a big believer that your energy introduces you before you do and so does your style,” he says. His signature look is a high-fashion blazer, a plain white or black T-shirt from ASRV, and Italian jeans from Live to Inspire. His look isn’t complete without a pair of fashion-forward sneakers, an item close to his heart. At 17, Jimenez developed a sneaker reselling business. “Being exposed to the streetwear scene caused a deep love and passion for culture and how collaborations with artists could have such a deep influence on what people wear,” he says. Jimenez finds style inspiration from his time filming in LA and NYC. “Both places have bled into my style choices,” he says. “I also love the aesthetic of gentlemen’s attire in Italy and other places in Europe.”

Who influences your style? I had the pleasure of filming for Nicola Differdinando, who is a titan in the commercial real estate space. Nicola is the living embodiment of James Bond and his style choices are always world-class. He’s taught me not just how to dress more like a gentleman but to also behave like one as well. What is your most prized possession in your closet? My floral Eaton shirt. When I first stepped into business, a client who has now become a close friend introduced me to the brand and actually bought my first Eaton shirt for me. That garment to me is priceless. What is your favorite local store? My favorite store is the Clotherie at Biltmore fashion park. The entire shopping experience makes you feel like royalty and they truly treat their clients with the utmost care and respect.

As the owner of Curated Medical, Katie Mann is in the business of creating confidence. Like her clients, Mann loves to keep up with trends, but her goal is to always achieve an effortless, put-together look. “Style was definitely not something that came naturally to me,” she says. “Luckily with social media, I have learned to develop my own style. I’ve learned how to use trends that seem intimidating at first so my style is always evolving.” During the fall season, Mann will often style neutral bodysuits with a cool jacket, trendy jeans, and unique shoes. “My must-haves are amazing jeans and great basic tops. I would much rather spend more on these items that I will wear over and over,” she says. “I love Agolde and Mother for denim. I have many different styles of each and they always fit amazingly. Rag & Bone shoes are always so comfortable and great quality.” Many of Mann’s style inspiration comes from her trips around the world. “My sister lives in LA so I’m definitely influenced by what I see when I visit her,” she says. “I have a Paris trip coming up and cannot wait to see all of the chic fashion.”

Who influences your style? Charly Goss is a Canadian stylist who I follow religiously! She provides tons of information about what the trends are and how you can incorporate them into your life. I also love Marianna Hewitt’s style. My sister also has great style! What is the most prized possession in your closet and why? At the moment my most prized possession is my new Saint Laurent hobo bag. It was a gift and is just the perfect size and great trendy shape. What is your favorite store? I love Shopbop because it has a variety of styles, a lot of great brands and accurate product photography. I’ve gotten quite a few items from Oak and Fort lately, I love that Reformation has petite sizing, and Abercrombie has really stepped it up lately for basics!

Colin Egglesfield has landed the role of a lifetime. The actor, known for his television roles on All My Children, Rizzoli & Isles, The Client List and Melrose Place revival as well as for his big screen role in Something Borrowed, recently moved to Scottsdale to serve as the brand ambassador for locally based R3 Stem Cell. “I have, both knowingly and not, been preparing for this role my entire life,” Egglesfield says.

Following his Dreams The Chicago native grew up with dreams of being a doctor. Upon graduating high school, Egglesfield attended both Illinois Wesleyan University and the University of Iowa to study medicine. “I earned my undergraduate degree in biology and took the Medical College Admission Test, or MCAT, but in order to pay for my schooling, I also modeled on the side,” Egglesfield says. “It all happened as a fluke when I entered a model talent search after hearing about it on the radio.” One job turned to two and two turned into offers from the likes of Calvin Klein and Versace. “Rather than jump into medical school right away, I decided to backpack across Europe and try the whole modeling thing, which led me to living abroad for a spell and then took me to New York in the early 2000s,” Egglesfield says. “My agent encouraged me to try my hand at acting as well, but at first I didn’t think I had what it took, despite taking and loving acting classes.” Egglesfield continued modeling and taking acting classes. By 2001, he was able to afford an apartment in the city across the street from the World Trade Center. “The events of 9/11, as they did for all of us, had a lasting impact on my life,” Egglesfield says. “I watched the second plane hit in real time, and my windows were blown out when the towers fell.” Shaken but determined to live his life from that day on knowing that tomorrow is not promised, Egglesfield moved to Los Angeles almost immediately after the attack, emboldened to become an actor. After small parts, including playing a murder victim on Law & Order: SVU, Egglesfield got his first major break when he landed the role of the iconic Erica Kane’s son Josh Madden on All My Children in 2005. “In my time as Josh, the character managed to crash an airplane, steal $20 million and even take his sister’s girlfriend hostage,” Egglesfield says. “I even haunted the show’s fictional town of Pine Valley as a ghost. But none of that compared to what was happening behind the scenes.” Six months into his time on the soap opera, Egglesfield was diagnosed with testicular cancer. Despite aggressive treatment and a period where he was cancer-free, Egglesfield was diagnosed with cancer a second time a year later requiring additional surgery. “While I never wish what I went

through on anyone, that time in my life forced me to develop patience and practice having hope in the face of what would have been infinite sorrow,” Egglesfield says. “That hope got me through multiple surgeries and years of scans, X-rays, radiation, and seemingly endless testing. It also gave me the courage to strike out again, both to seek more complex roles and to spread my volunteer wings by giving back to the medical community and those dealing with diagnosis like mine.” After departing All My Children in 2009, Egglesfield became a staple on television and in films (watch him in Something Borrowed opposite Kate Hudson and Backtrace alongside Sylvester Stallone, both available on Netflix now) as well as in the philanthropic community, notably with St. Jude’s Children’s Hospital, until he lost his father in 2016.


“No one is ever prepared to lose a parent, and when it happened to me, I felt compelled to go back to the Midwest to be with my family,” Egglesfield says. “I moved back to Chicago to recalibrate my priorities and my perspective on life.”

Determined to Help Egglesfield took a break from acting while he and his family grieved. Save for a few movies here and there, his entire focus was caring for his mother, reconnecting with his Midwest roots, and spreading hope among family and friends where he could. “I had a lot of time to think and reflect in that first year after losing my dad,” he says. “Eventually, I started putting pen to paper on the things that shaped my life. Soon, I had the makings of a book.”

The book, titled Agile Artist: Life Lessons From Hollywood and Beyond, was released in 2019 and focuses on the sometimes broken road that led him to the arts. It also seeks to connect readers with the artist in themselves. “While certainly autobiographical in nature, Agile Artist is also a how-to guide for those seeking strategies to help unleash the creative, authentic side I think lives within all of us,” the author says. Egglesfield began a cross-country tour to promote the book in 2020, which was quickly stalled by the COVID-19 pandemic. “Cancer couldn’t stop me, and I would not let the pandemic stop me either,” says Egglesfield, who took the book’s teachings virtual, offering online courses to help kickstart participants’ creative juices, overcome

the fear of public speaking, and even learn the basics of acting. During one of his courses, he struck up a conversation with participant Kathleen Francesca, president of R3 Stem Cell, based in Scottsdale. Given both his background in biology and his cancer battle, the two quickly became engrossed in a discussion about the benefits of stem cell therapy. “I soon found myself researching the regenerative therapies they offered, many of which help individuals avoid painful and costly surgeries, two things I am all-too-intimately aware of given my own battle,” Egglesfield says. When discussions to move to Scottsdale and be part of their team as a brand ambassador began, Egglesfield had to smile, thinking of his father. “My dad, brother and I has visited Scottsdale at least 15 times as we made Scottsdale our home base each year so we could catch both Chicago Cubs and White Sox spring training games, so I already knew I loved the city,” Egglesfield says. Egglesfield accepted the position and relocated to Scottsdale in September, though he has not gotten the chance to explore much just yet. Days after moving, he was off to West Virginia for six weeks to shoot a television movie with fellow actor Chrishell Stause based on Ann Rule's 1993 true-crime book, A Rose for Her Grave. “In it I play Randy Roth, a man with a troubled past who was convicted of killing two of his wives. ROCK THE ROOFTOP Music’s rising stars perform to benefit local nonprofits

For the past several years, local leaders Dillan Micus, Jason Adler and John Creighton donated their time to the Coors Light Bird’s Nest, the popular multiday concert series that takes place during the WM Phoenix Open. “Through it, we saw some extraordinary talent come through Scottsdale, and not just the big stars,” Micus says. “Each year, we found ourselves blown away by many of the then lesser-known acts, notably Morgan Wallen before he burst onto the mainstream. We became such fans of finding and showcasing the next big thing in music.” Inspired to showcase tomorrow’s brightest stars in new and different ways, Micus and Adler put pen to paper on a full-scale fall concept that could expose local music lovers to emerging artists while giving back to the community at the same time. “And just like that, Rock the Rooftop was born,” Micus says. The debut event will take place under the stars on the WET Deck at W Scottsdale on Friday, Dec. 2. The concert will light up the night with an intimate yet explosive performance by Bailey Zimmerman, who recently made history on Billboard’s Hot Country Songs chart by becoming the first artist to place three career-opening entries in the Top 10 simultaneously. Zimmerman’s style, a mashup of timeless American country, rafter-rattling arena rock, and authentic storytelling, has earned him more than 400 million global streams in the past few years. Zimmerman will be joined by Nate Smith, who was recently named to the Country Now Artists to Watch list after exploding onto the scene with Wildfire that went viral with more than 3 million views on TikTok. “His music is best described as soulmeets-country but with a grit and swagger all his own,” Micus says. Rounding out the evening with a latenight performance to close the event is Loud Luxury, a Canadian EDM duo, comprised of

Jason Adkins has mastered multiple artistic styles

There are two aspects to the art that painter, sculptor and designer Jason Adkins creates. “There is one [aspect] where I just let things go, where I do what I want and feel, whether it results in art that is smooth and relaxing, or crazy, abstract, and chaotic,” Adkins says. One look at his Instagram profile (@throw_that_paint), would show just that. Scrollers might see depictions of mythical creatures, reimagined abstract versions of classical paintings, and brightly colored canvases. “I paint everyday no matter what, even if it is just trying to get a certain brush stroke with a certain brush,” he says. In the second aspect of Adkins’ art, he focuses on creating pieces for the interior design world. His portfolio includes commissioned artwork for hotels (including two large-scale pieces at the Four Seasons Scottsdale), homes, and, most recently, the set of the upcoming Netflix production, Obliterated. Through this part of his business, Adkins seeks to fit a universal, calm aesthetic – a world mostly devoid of color and chaos. “There are over a billion people in this world, and everybody likes something different,” he says. The trick is to understand how the design world showcases art to appeal to the masses, which, it turns out, is by keeping it simple. As a prime example, Adkins submitted artwork for consideration to Restoration Hardware – through a company called General Public run by Portia de Rossi – where this distinction became apparent. “I sent a piece that was 4 feet by 6 feet, and the color was magenta. It was just loud and bright. General Public loved the piece, but the magenta piece on its own may not go in every home,” he says. Using high-powered computers, General Public made a digital copy of Adkins’ magenta canvas using only black and white colors. “That was a good introduction to me. I can do magenta paintings all day and make them interesting to me, but in the interior design world it speaks differently,” he says. “Because of this, I reflect a lot on color and how color influences people’s mood, the setting, and what they want to have in their home.” There may be two dimensions, or personalities, to Adkins’ work, but each adds a different dimension to his art. Whether creating for himself or others, Adkins has a new perspective on how the world sees color and emotion. Plus, he adds, he has learned to be a better listener. “Ultimately the art needs to fit the space, so I found I needed to listen intently to the client about the color, size, material, and overall mood of the space [for which] I am designing,” he says. WHY ARE PATIENTS WITH LUNG CANCER LIVING LONGER?

L

ung cancer, the third-most common cancer in America, is also the deadliest, accounting for 22 percent of all cancer deaths every year, according to the National Cancer Institute. But today, the outlook for patients diagnosed with lung cancer is better than ever. After decades of relatively unchanging lung cancer survival rates, researchers are now reporting promising trends at every stage of the disease. This is largely attributed to people living longer with non-small cell lung cancer (NSCLC), which accounts for roughly 80 percent of all lung cancer cases. Researchers believe this trend is due to fewer people smoking and to advances in screening and treatments. “People are more aware today that smoking is dangerous,” says Sagun Shrestha, MD, Medical Oncologist and Hematologist at Cancer Treatment Centers of America® (CTCA), Phoenix. “That’s huge.” The rates of new cases and deaths has been declining over several decades, but both categories have seen significant declines since the early 2000s. For instance: • The percentage of people living at least three years after a lung cancer diagnosis rose from 19 percent in 2001 to 31 percent in 2018. • The average survival rate also increased during that time, from eight to 13 months. Early-stage lung cancer incidence jumped from 17 percent in 2004 to 28 percent in 2018. But that’s a good

sign, according to researchers, because it means more lung cancer cases are being caught earlier. The U.S. Preventive Services Task Force (USPSTF) first started recommending lung cancer screenings in 2013—a move that appears to have had an important impact: The overall rate of people dying from lung cancer dropped 56 percent from 1990 to 2019 in men, and 32 percent from 2002 to 2019 in women. Early detection is critical to lung cancer outcomes. The five-year survival rate for advanced lung cancer is 6 percent. For early-stage cancer, it’s 60 percent. In 2021, the USPSTF updated its recommendations for lung cancer screenings to account for emerging evidence on the importance of early detection for people at high risk. Now, it calls for a low-dose CT scan for anyone between the ages of 50 and 80 who has smoked at least 20 pack years. A pack year is the equivalent of smoking one pack of cigarettes a day for one year. “We’re doing more screening but still not as much as we’d like to see,” Dr. Shrestha says. “It’s important to remember, though, that lung cancer is treatable at any stage, and we have treatments now that can help people with lung cancer live longer and with a better quality of life.” FOR MORE INFORMATION VISIT CANCERCENTER.COM. MODERN MOUNTAIN METROPOLIS Salt Lake City shimmers all winter long

Winter is coming. Thankfully in Salt Lake City, Utah, unlike a certain HBO mega hit, there are neither dragons nor zombies. Instead, expect a world beyond one’s wildest snowcapped mountain dreams. The glistening city is Utah’s urban gateway to one of the most adventurous ski and snowboard destinations in the world. By month’s end, each of Cottonwood Canyon’s four award-winning ski resorts – Alta, Snowbird, Brighton, and Solitude – will open, offering at least 500 inches of fresh powder just 35 minutes from the center of town. If skiing and snowboarding are passions, invest in the Salt Lake Ski Super Pass, which offers lift tickets to all four resorts starting at $64 per day for kids and $143 per day for adults.

Hit the Towns Each resort offers something a little different, and each has a personality all its own. Alta, for example, is located at the top of Little Cottonwood Canyon in the Wasatch Mountains. It has steep, deep powder so some runs might be a challenge for newer skiers. It is also home to world-class snowshoeing tours and programs that allow for birdwatching on skis. There are both ample apres ski options and dining destinations on-mountain as well as at the base, including the iconic four-course tasting menu at Alta Lodge. Like Alta, Snowbird is located at Little Cottonwood Canyon. It features an aerial tram and is best known for having North America’s only ski tunnel as well as the award-winning Cliff Lodge and Cliff Spa. Cliff Lodge offers ski-in, ski-out accessibility and an unforgettable outdoor rooftop pool with heated decks and gas fire pits. Snowbird is the perfect pick for adventure seekers looking to heli-ski and endeavor on guided backcountry exploration. Brighton, located in Wasatch’s Big Cottonwood Canyon, is a great choice if newer to winter sports or if traveling with children. In fact, kids under 6 are admitted to ski free. Adjacent to Brighton but with unique terrain of its own, Solitude – as the name suggests – is a best bet for those seeking to get away from it all. Understated but with some pubs and restaurants sprinkled throughout, Solitude offers Nordic trails in addition to the nearly 1,200 miles of downhill runs. There is also an amazing Yurt dining experience diners may snowshoe or cross-country ski to access.

City Life Certainly, these wide-open spaces beckon when visiting Salt Lake City, especially in the winter, but carve out ample time to enjoy the city itself as well. Salt Lake is home to Broadway shows,

world-class symphony, opera and ballet, and the 100-acre Red Butte botanical garden. In the late 1800s, escargot was all the rage, leading to a shortage. Oysters made sense as a substitute, especially a cooked preparation innovated in New Orleans served on the half shell with melted butter, herbs, and breadcrumbs. Nicknamed Oysters Rockefeller, they became a delicacy all their own. Earlier this year, Rockefeller opened its doors with a menu featuring elevated, iconic delicacies. The seafood-centric restaurant offers many small plates, but the Oysters Rockefeller stands out. Served by the half- or full dozen, the oysters are flown in fresh from both coasts several times a week and made to order. They are cooked on the half shell with spinach, bacon and breadcrumbs as well as Genepy bechamel sauce and Parmigiano-Reggiano. Garnishes include lemon wedges, purple cabbage, and greens. AFTER-DINNER DELIGHT

J.T. Prime Kitchen pays homage to owner’s Latin roots with its espresso-infused Carajillo

When chef Alex Trujillo sought a name for his planned Yuma sandwich shop, he looked to his family. “My three sons’ names start with J, so I used their shared initials – J.T. – to inspire J.T. Bros. Sandwiches, which opened in Yuma in 2020,” Trujillo says. “Soon after opening, we decided to offer dinner popups for patrons so I could stretch my culinary imagination.” The evening concept, called J.T. Prime, quickly became a steak and seafood hot spot. Its success led the family to open J.T. Prime Kitchen in Scottsdale earlier this year. “Our dishes and drink are a celebration of elegant American classics, often with ingredients from my Mexican heritage,” Trujillo says. The Carajillo ($18) is a prime example. “This after-dinner drink is beloved in regions of Spanish descent,” Trujillo says. “In Spain, it is often made with brandy; in Cuba with rum; and in Mexico with mezcal, coffee liqueur or, my favorite, Licor 43.” Licor 43, the base spirit in Trujillo’s iteration, has 43 proprietary ingredients, and though the recipe is under lock and key, there are clear notes of sweet vanilla, cinnamon, and citrus. “The build is basic by design, as are most of our dishes and cocktails,” Trujillo says. First, Licor 43 is added to a custom-made mini snifter glass with ice. Next, freshly brewed espresso is gently layered atop the liqueur, followed by a heaping spoon of whipped cream. It is garnished with cinnamon dust and a cinnamon stick, then served without being stirred. “We like for the guests to decide to stir the ingredients or not, and if they do, it provides a bonus visual,” Trujillo says. Famous for its New York-style pizzas baked in brick coal-fired ovens, Grimaldi’s Pizzeria was founded in Brooklyn, New York, and is now headquartered in Scottsdale. As the culinary manager, chef Hector Godinez relishes the diversity of his role, which includes menu development and mentoring young chefs.

How did you get your culinary start? My mom worked in the restaurant industry and has always been a great cook, teaching me how to scramble my first egg when I was 10. At 15, I started working in a kitchen washing dishes to help support the family. They taught me how to prep, and then they put me on the line. By the age of 16, I was a full-time line cook while still going to school. I’ve been cooking for over 20 years, and just hit my 10-year mark with Grimaldi’s. What are your roles as culinary manager? I’m in charge of all the food and equipment R&D, including seasonal menu changes. I’m also the trainer and restaurant coordinator for openings, so I help put the new team together and get everyone up to speed. Do you have a favorite pizza? I would probably say our Brooklyn Bridge Pizza. We use our signature pizza sauce made with imported San Marzano tomatoes, sliced mozzarella, NY-style ricotta that is really smooth and creamy, Italian sausage that we hand-pinch and add raw so all the juices cook into the pizza, and red peppers roasted in our coal-fired oven. Are there other must-order items? We have starters, salads and calzones, and each location makes its own cheesecakes. Our traditional New York-style cheesecake and Oreo cheesecake are available all year-round, and I add two more seasonal cheesecakes that change every three months. Do you have a favorite food memory? My mom’s scrambled eggs. She would always have salsa; green or red, not too spicy. She would scramble the eggs and then bathe them in her salsa and let them simmer a little longer, and usually serve them with homemade tortillas. Very simple, but very flavorful. Burrata with Cherry Tomatoes and Fruit

Zinqué This burrata bowl starts with a shell of salted mozzarella cheese stuffed with curds of mozzarella soaked in cream. Sweet peaches and nectarines as well as juicy cherry tomatoes are paired with the creamy, salty burrata cheese for a refreshing colorful dish. Minced shallots, herbaceous basil oil, and a tangy, lightly sweetened balsamic vinaigrette add crunch and superb savory flavor to the light dish. Proof Canteen Inspired by executive chef Chuck Kazmer’s grandmother’s recipe for chicken and biscuits, this updated on the popular Southern dish starts with chicken that has been brined in homemade hot sauce and buttermilk, a salt-forward process that changes the structure of the muscle proteins resulting in a juicier bird. While there is an art and science to expertly layering flavors throughout a dish, two of the chief ingredients chefs experiment with when developing a recipe are surprisingly simple: sugar and salt. When sprinkled and dashed in perfect combination, salt simultaneously activates all the ingredients in a dish while sugar softens the brinier notes that may result from said activation. Here, fresh slices of traditional Sicilian bread start as a blank canvas and then fig jam, salted and whipped goat cheese spread, pears, and agave syrup add flavor dimensions into every bite. Gastromé Market features a restaurant, cheese shop, wine store and more under one roof

Now open in Gainey Ranch, Gastromé Market is a 5,000-square-foot odyssey through international and domestic cheeses, wines from around the world, delicious sweet and savory delicacies, and artisan goods. Within its walls, there is a 3,500-square-foot market, which is home to freshly made bread from MJ Coe, dried meats and fruits, packaged specialty foods like olive oil and caviar, curated pastas, novelty gifts, flowers by Amy’s Flower Truck, a confectionary counter, a full-scale bakery, and a gift basket making station where shoppers can build an ideal present using any product found on the shelves. Beyond this, the market also features a 15-foot, temperature-controlled wine cave with more than 280 different varietals. The cave is adjacent to a wine alcove where guests can grab a bottle they love or try something new under the guidance of Gastromé’s expert team of wine stewards. Owners took special care to source Arizona wines along with hard-to-find collector’s bottles and tried-and-true favorites from around the world. Wine’s best friend – cheese – also

has its own space at Gastromé thanks to an impressive three-case cheese island displaying more than 300 international and domestic cheeses along with a hanging trellis of cured meats. There is also a grab-and-go deli counter with freshly made gourmet sandwiches. Outside of the market itself, which looks and feels like one might find in Europe or New York with exposed brick, chalk board menus and light woods, there is a classroom space tucked into the back of the property where the owners plan to host wine and cheese classes, have charcuterie building workshops, lead culinary seminars, offer chef’s tasting menus, and even host private parties by reservation. They are also planning to open a patio by late fall of this year. The space is also home to a 1,500-square-foot restaurant with seating for about 20. Open for lunch and dinner as well as for those simply seeking to enjoy a nice glass of wine, the Gastromé Market Restaurant offers several shareable items ranging from raw and grilled oysters on the half shell and charcuterie boards to mushroom toast and hamachi crudo. There is also a small menu of main dishes, including Two Wash Ranch Chicken with corn pudding and charred shishitos ($40), Iberico Pork Feather Loin with Swiss chard and apricots ($52), and 18-ounce Terra Farm Wagyu with salsa verde and smoked seas salt ($125). Expect copious wines by the glass and bottle as well as a menu of predominantly Arizona craft beers. Gastromé Market is open Sunday to Thursday from 10 a.m. to 8 p.m. and Friday and Saturday from 10 a.m. to 9 p.m. The restaurant offers a bottle and board deal Sunday and Monday from 2 to 5 p.m., with a discount on a bottle of select wine and a seasonal chef’s tasting board.
