2020 was, of necessity, all about low maintenance colors, but now it’s time to start having fun with your hair color once more. 2021’s hottest spring trends are all about leveling up your lockdown look, according to Rodney Gentry of Scottsdale’s Saachi Studios. “Spring’s hair colors are showing that it’s time to come out of hiding and start enjoying the world once more,” he says. “From rich, all-over color to fabulous tones for highlights and lowlights, it’s time for your color to be bright, bold and beautiful.” For all-over color, expect plenty of red tones this spring, as well as lighter browns that leave the darkness of winter behind and carry hints of the summer sunshine that’s yet to come. Social media has been awash with influencers framing their faces with bold streaks of color, also known as e-girl streaks. Reds, along with a whole spectrum of other colors, are expected to make an appearance in e-girl streaks this spring. This season, this trend will be taken further, with two-tone streaks and some dazzlingly bright colors. “While e-girl streaks look fabulous set against dark hair, they can also look stunning with blonde locks, making this a versatile and accessible style for everyone to experiment with this spring,” Gentry says. In terms of techniques, balayage will continue growing in popularity over the course of the spring. The hand-painted style produces beautiful, natural-looking color in all tones, while it’s also ideal for pastel colors, for a truly fresh spring look. More traditional coloring techniques also remain popular. “Both highlights and lowlights will continue to remain popular, even as a growing number of clients try out balayage,” Saachi Studio’s Gentry says. “What’s different this spring is that clients are going for brighter highlights and richer, deeper lowlights. 2021 really is the time to celebrate color in a wide range of ways.”

Ville Houttu, founder and CEO of Vincit USA, is a firm believer in the power of happy employees and clients. A native of Tampere, Finland – one of the birthplaces of Finnish industry and the home of Nokia Corporation – Houttu began his career as an engineer at a variety of companies that didn’t seem to

care about managing attrition or employee satisfaction. He soon found a home at Vincit (www.vincit.com), a software company that designs and develops apps, web services and embedded systems for businesses across the globe. After helping the Finnish company reach 350 employees and go public

Pulse UP CLOSE on Nasdaq First North Growth Market in 2016, Houttu took a leap and moved to the U.S. to start Vincit’s local subsidiary in Southern California. “That was the point I realized it’s not about the end results, it’s about the journey. I wanted to do something that I believed in, something I felt was mine,” says Houttu, who resolved to hammer away for a year to see if he could make the company work – and it didn’t just work, it flourished. Today, Houttu has expanded the software development company yet again, bringing its innovative, full-service approach to the Valley.

Re-imagining Management Much of what makes Vincit unique is its perspective on leadership. After first moving to the States, Houttu noticed that his employees weren’t content with the existing management structure – middle managers who wanted to spend their time coding were stuck passing papers from desk to desk, while the team members under them were stuck with unhappy management. Houttu knew this deep-seated problem would require a radical solution so he got rid of the hierarchy system altogether. Instead of having “imaginary” preexisting boundaries between managers and employees, Vincit’s structure is dictated by the needs of an individual project, allowing for flexibility in establishing task forces and selecting leaders for each specific team. “We believe in individuals taking individual responsibility,” he says. “That boils down to them owning their work, owning the results and helping to build a workplace that’s better tomorrow than it is today.” One practice that achieves this while emphasizing the importance of decision-making is “CEO of the day,” where each month, an employee gets the power to make one decision to improve the workplace. Previous CEOs have chosen to add an office library and paid time off for every employee on their birthday. And Houttu’s response if he’s asked for input or permission? “No comment.” “When you give them an unlimited budget and say, ‘it’s your call,’ they realize it’s not an easy job to make decisions,” says Houttu, who originally implemented the exercise as a joke but has since seen it evolve into a great way to build trust among Vincit’s team members. “I don’t think there’s a number you can put on trust. I’m a bit extreme when it comes to risk taking – as shown by my moving from Finland without any employees or clients here! – but I believe every risk is worth taking. If you understand the risk, you can also limit the risk.” In addition to building trust, Houttu’s tried-and-true method for establishing an inimitable team of employees is to hire for people rather than skills. “We hire all the good people we interview, no matter the situation. It’s very easy to find work for smart and talented people,” he says. “Like many other things we do, if you plan too hard, it doesn’t work, so you just have to go for it. The key when you come up with an idea is to take action, and if it works, keep doing it.”

The Best Policy Moving from Finland to the U.S. has given Houttu – who’s also a seasoned triathlete and pedal steel guitar player – an insider’s perspective on two different business cultures, allowing him to pick and choose which principles work best for Vincit. “There’s a common value in Finnish companies of honesty, punctuality and equality. Everything is pretty equal and open, and there’s a lot of transparency when it comes to company information and leadership,” he says. This transparency is an essential component of Leadership as a Service, an online tool that Vincit employees use to address their needs rather than submitting requests to a manager. It’s built on the concept that a leadership model should be tailored to the individual requirements of the people who work each day to make the company a success. But for Houttu, success in the areas of employee and client happiness always comes first – not much of a surprise for someone who hails from one of the happiest countries in the world. By focusing on growth indicators like the satisfaction of employees and clients instead of growth itself, Houttu has, by extension, created an ideal environment for profitability, and that’s certainly something to be proud of. “Finnish people are super modest. There’s a saying that if you reach for the tall tree, you will fall into the bush. But I decided to reach for the stars,” he says. “The culture here in the States celebrates people who have reached for the stars – whether they fail or succeed, they still had the courage to give it a try.”

Those close to Tiffany Quayle wouldn’t be surprised by her recent foray into the accessories business. “Ask anyone who knows me and they will tell you I have entirely too many headbands, earrings, bracelets, belts, shoes and scarves! However, if you buy the right accessories – items that are classic, timeless and wellmade, you’ll have them forever,” she says. “I believe the clothing, shoe and beauty product industries are highly saturated. However, there is a void in affordable, quality accessories that are well-made from smart fabrics.” Her recently launched company, CoQau (pronounced “koh-koh” and a nod to her love of all things French) combines her love for accessories, her background in the tech industry and her health-conscious lifestyle. Essentially, her products aim to fuse fashion and function. “I started CoQau because I wanted to create accessories that worked for me while I wore them,” says the active mom of three who spends her free time running, hiking, swimming and playing tennis. “I try to take care of my skin and hair, which is a huge challenge given all of my outdoor activities. Still, those areas show the wear and tear of age more than any other – and it’s just another reason I am looking to create accessories that help protect from UV damage and promote healthier skin and hair.” The brand’s name is an acronym for the smart fabric ingredients: “CoQ” for CoQ10 for anti-aging, “A” for Antimicrobial elements to repel germs and bacteria, and “U” for Ultra fresh thanks to infused aromatherapy. “As a woman in my mid-40s who is constantly battling the aging process, I have been fascinated and intrigued by anything and everything that claims to be anti-aging,” Quayle says. The products are made using a patented microencapsulation technology, and the brand currently sells unisex gaiters and kerchiefs, with face and hair products in the works. When she’s not working on her brand or staying active outdoors, Quayle’s other main passion is helping local children. Prior to launching her brand, she was working for Phoenix Children’s Hospital Foundation and currently still helps the foundation with special projects. She also does work with Childhelp and PANDA (People Acting Now Discover Answers).

Author Erin Stremcha’s new book encourages youths to replace self-doubt with self-esteem

Books are powerful tools for children, serving as a positive source of learning and guidance. Erin Stremcha is adding to that idea with her recently released childrens book called Power Up. The new read showcases 29 motivational messages for children about love, kindness, and other positive values. Stremcha’s inspiration is deeply rooted in family history and creating a better life for the next generation. The author’s father was adopted and her grandmother was orphaned, so both had been part of the foster care system. “As I was growing up, I experienced trauma, from the person that was supposed to be protecting me the most,” she says. “As a result, I never want that to happen to another child. Stremcha’s personal experiences have propelled her to pay it forward to those around her. “I wanted to get involved and give back. I think COVID-19 was a reset for a lot of people in many ways,” Stremcha says. “There’s never been a better time in the world to give back to causes you feel strongly about.” The mother first created a small version of Power Up for one of her sons when he was 10 years old. She noticed he used it as a tool to make himself feel better and, because it had such a positive impact on her son, Stremcha sought out to expand the story and sell it in an effort to spread her message to help other children. Over the course of the last four months since Power Up was released, almost 300 copies have been sold, and Stremcha has matched that number of books as a gift to Arizona’s Children Association of Foster and Abused Children through her Buy a Book, Donate a Book Program in a partnership with Arizona’s Children Association. “My passion for mentoring youths to achieve their dreams, raise their self-confidence helped me recognize my personal passion and goal in life, which is to help make a positive impact on children in Arizona and worldwide,” she says. Stremcha says she hopes children use Power Up as a guide to learn to embrace adversity and struggle while also bringing positive messages to their lives. Her goal is for children and parents to use it together so they can work on replacing their doubts of themselves with self-esteem.

As the president of Business Warrior, a marketing software company, Brooks knows how important brand identity is. Giving credit where credit is due, Brooks’ wife has influenced his style throughout the years. “I believe in good basics and staples versus trends and patterns,” he says. “I want to be able to get ready easily without much thought to save time and look good effortlessly.” Brooks stocks his closet with a variety of custom suits made by his tailor-turnedfriend Evan Delaney. “I believe everyone should have one good, tailored suit and a great shoe because it’s best to have it and not need it versus need it and not have it,” he says. “People may not remember a great suit but they definitely remember a bad one and you don’t want to be that guy.”

What is your most prized possession? My cowboy hat that I had custom-made by the same company (Burns Custom Hats) that created the hats for the entire cast of Yellowstone. It was a really cool experience to see how they are made and meet the family behind the business, which started in 1876. What is your favorite store? I love UNTUCKit because it meets a lot of my style needs of needing extra tall length, combined with the fitted look. Karpel, who was born in Transylvania and raised in Romania until a teen, also takes style influence from her upbringing. What is your signature look? Power blazers are my pedigree. I have a closet full of them and I can’t help lusting after more. A blazer will dress up any outfit with just the right amount of polish. What will we see you in on weekends versus workdays? Weekends are for yoga pants and messy buns – the mom uniform. Entrepreneur coach Ali Brown supports women business owners at the top of their game

li Brown, founder and CEO of The Trust, an exclusive network for highlevel women entrepreneurs, has made a name for herself as one of the most recognized business coaches in the world. But like many others, her journey began near the bottom of the ladder. “Most of my 20s was about feeling ‘unemployable’ as I hopped from job to job, trying to find one that made me happy

most. Success is such a personal journey for us. It’s thrilling to see a woman leader placing all bets on herself for the first time – it’s a huge milestone that means she’s ready to go big and stop doubting.” With the rise of social media, which allows anyone to label themselves a business coach, Brown knew she had to set herself apart. When she looked for a subset on which to focus her efforts, leaders with larger businesses stood out. “With larger ventures, the stakes are higher, and the bigger game always includes a bigger impact. There are also fewer women entrepreneurs at the higher levels – less than 2% of women-owned businesses generate revenues past $1 million a year.” Today, Brown offers online courses, live seminars and private mentoring for women entrepreneurs through her business empowerment company We Lead. Her individualized advice helps her clients identify hidden opportunities, unforeseen challenges and industry formulas to position businesses for the next level of growth. “Women bring so much to the world of business, including an importance on how our work aligns with our missions and passions. I find it fascinating that money is just the start of their journey – typically there’s also a huge personal purpose emerging, and I help bring it out so we can focus on that as our North Star.”

Making Radio Waves

where I could put my talents to use,” says Brown, who moved between jobs for six years after graduation before joining a small ad agency in New York City. While she enjoyed the variety of projects and fast pace, Brown was frustrated that many of her ideas for improvement fell on deaf ears. “I realized then I was meant to work for myself – and I never looked back.” In 1998, Brown quit her job and worked as a freelance copywriter from a secondhand computer given to her by her younger brother. During this time, she juggled her feelings of certainty that she was on the right path with the realities of

kickstarting a career as an entrepreneur – at one point going to the ATM only to find that her bank balance was less than $20. But she refused to give up her newfound independence, and by focusing on her talents for copywriting and online marketing, Brown started to gain bigger and bigger clients. And when other women began asking her for advice, she knew she had really made it. “I always loved helping others, sharing what works and getting to know people’s journeys. Becoming a mentor, consultant and coach combined everything I loved in a very business-oriented but personal way,” she says. “I enjoy working with women the

Brown has also been able to help thousands of people narrow in on their purpose through her podcast, Glambition Radio, with episodes sharing invaluable information and success stories with listeners around the world. “Glambition Radio began in 2014 because I craved intelligent conversations with incredible women entrepreneurs. I was tired of the vapid ‘boss-girl-babe-badass’ podcasts and wanted to offer something of substance, but still have some fun – hence the name.” Each guest – including humanitarian Zainab Salbi, former White House Press Secretary Dana Perino and Orangetheory Fitness’ Ellen Latham – provides insider information on how they’ve scaled their businesses, birthed movements and made an impact in their respective fields.


Brown’s most recent venture, The Trust, was also born from her desire to support other entrepreneurs. “Once my company’s revenues were into the multiple millions, I was fortunate to be invited into several private circles for this level of women business owners. I was growing tired of joining groups filled with newbies – I love helping other women, but I needed somewhere to be fulfilled myself.” Though Brown made some great connections through these organizations, she found many of the groups to be dry and unhelpful. And her clients, most of whom were making well over $1 million in yearly revenue, turned to Brown in their own search for a network of women at a higher level. “Over the past few years, I heard this little voice in my head saying, ‘Maybe you’re supposed to do this, Ali.’ I kept putting it off, but finally I realized the idea was waiting for me, and I made the move.” Founded in 2020, The Trust (www. jointhetrust.org) is a global network for women entrepreneurs generating sevenand eight-figure revenues. The private, invitation-only community fosters relationships between high-level peers through exclusive webinars and in-person gatherings, many of which are held in Scottsdale. Frequently in attendance are female founders and CEOs of nine-figure companies, who meet with and provide personalized support for members. “I wanted something business-focused but with a warm, sisterhood feel, a bit of fun, and at its core, a very strong level of trust,” Brown says. “Launching in 2020 was not easy, but our circumstances created the most rewarding community I could have imagined. We leaned on each other during some rough months via regular Zooms and our private group app, and everyone came out on top. That closeness continues today – to all of us, this feels like home.”

Trusting Yourself

For Brown, an essential part of entrepreneurship is being able to call the shots yourself, but sometimes, this comes with its own set of challenges. She experienced this firsthand after spending years growing her company just for the sake of growing it. “This was the only time I started to resent the business I’d created. One

morning, lying in bed, I picked up my phone, looked at my overscheduled calendar and didn’t want to get out from under the duvet. I’d started a business to be free and break all the rules, only to create new rules that I’d boxed myself into.” This led to a realization that she needed to focus her energy where she’s needed most – as a philanthropist, CEO of The Trust, host of Glambition Radio and mom to 8-year-old twins. “Many people ask me about the hardest thing I’ve ever done. The most personal one is having the courage to slowly break down what I had so passionately and publicly built up. It took several years, many hard conversations and

a lot of tears, but I have no doubt that it led me to where I am today, at my happiest.” But Brown understands that taking the leap can be daunting – that’s why she’s here to help. “It’s important for successful woman to inspire, help and hire other women along the way, so our success creates a ripple effect,” says Brown, who after over 15 years of coaching still feels there’s nothing as empowering as watching other women take charge of their future. “The first time a woman owns a business is often the first time she really steps into her personal power. Art Within each piece of Cyn Silva’s art is a positive hidden message. When Cyn Silva was just 12 years old, she studied Art Theory from world renowned Artist, De’Ovalle before finding her niche in painting large scale originals using a variety of oil, acrylic, water color, and mixed media. “I see art every day, whether I am on a hike, on a walk, traveling, bike riding, or golfing, I always see a painting in my head,” she says.

Thanks to her 30-year background in real estate, Cyn is a pro when it comes to connecting with people. She is still an active realtor, but finds time for art late at night when her creative juices are flowing. She’s also able to bridge the gap between real estate and art by connecting with interior designers, architects, builders, restaurants, and salons to create art for their lobbies and offices. “Home offices after the pandemic have kept me very busy creating pieces for many companies within a variety of work spaces,” she says. HEALING THROUGH ART Holly Anderson’s creative career doubles as her remedy for pain

Holly Anderson’s artistic career began as a pain reliever and healing distraction after being diagnosed with a variety of debilitating physical health conditions. First came an incurable muscular skeletal disease, then double carpal tunnel and De Quervain’s Tendinosis, which limits the use of all of a person’s limbs. “I was desperate to find an escape from the pain. I had always really loved painting and it was suggested to me that I should start doing art as therapy,” she says. Anderson has had a passion for art since she was a child. “My first pencil drawing was at age 7 and I illustrated a future art show as my dream has always been to be an artist,” she says. “The first big life-changing moment for me and my art career came after my grandmother passed. My grandmother was a professional watercolor artist and left me all her art supplies. This is when I began experimenting with painting.” Anderson sold her first piece in 2011 at her first art show. Today, the established artist paints, sculpts, and creates largescale mixed-media installations inspired by human emotion, water, yoga, abstracting aerial NASA photos, and internal arts. “I’ve been told that my work embodies a certain organic feel and has a lot of perceived movement,” she says. In addition to creating for private collectors, Anderson creates large-scale installations for hotels and large companies, such as Marriot Hotels and Microsoft. Additionally, her artwork has been featured on numerous book covers and calendars and she is also a contracted designer with VIDA clothing and accessory brand. “There have been some big surprises in my career. Paramount Pictures contact me and buy several original paintings for the movie Daddy's Home 2,” she says. “If you ever stay at the AC Marriot Hotel in Irvine, California, you will find an original art piece of mine in every room (181 original paintings).” Anderson spends her free time doing activities that both promote healing from her chronic pain and inspire her work, including playing instruments like the African piano, looking at organic specimens under her microscope, volunteering with Animal Defense League of Arizona, working on archery, teaching intuitive painting, and writing poetry on her antique typewriter. “I struggle to get out of bed some mornings, but painting is the one thing that motivates me to keep going,” she says. “Art has been my saving grace.” Her paintings are currently on display at The Gallery at The Madison and at her studio in the Grand Avenue Arts District, which is open to the public on First Fridays from 6 to 10 p.m. Anderson’s upcoming solo exhibit at The Gallery at The Madison will be on display from October through December of this year. There’s a certain metronomic cadence relative to some of Mercedes’ new product introductions that’s reassuringly Germanic. Mercedes’ baby GLA SUV is fitted with a hand-built insanely powerful and ridiculously quick 2.0-liter, 382-horsepower, twin-turbocharged four-cylinder engine. The new 2021 GLA comes standard with a base grade 221-horsepower, four-cylinder engine and there’s also the starter AMG GLA 35 with a 302-horsepower engine. On the road, the eight-speed, dual-clutch automatic transmission snaps through the gears lightning quick, launching the GLA from 0 to 60 mph in just 4.3 seconds, according to Mercedes. It’s electronically governed to a top speed of 155 mph. There’s a choice of six varying driving modes, ranging from comfortable to highly dynamic, to choose from, including Slippery Comfort, Sport, Sport+, Individual, and Race. Mercedes notes that every drive mode alters the GLA’s stability control, all-wheel-drive system, transmission behavior, suspension softness, exhaust sound, and throttle response.

Handling and body movement are both technologically and shrewdly controlled with a ride that’s necessarily stiff, even in the Comfort setting, but the experience is so enthralling that most buyers simply won’t mind. Drivers will need keep a continuous eye on the speedometer as the vehicle goes faster than it seems. On the outside, the GLA 45 showcases a long power-dome hood, muscular shoulders over the wheel arches, large air intakes on the front fenders, and the classic AMG-specific grille. OH WOW, CURACAO The ultimate island escape awaits in the Dutch Caribbean

Where can you stand on an ostrich egg and snorkel with stingrays while indulging in five-star waterfront resort accommodations and amenities? That would be in Curacao (pronounced “cure-ah-souw”). Located in the southern Caribbean Sea just north of Venezuela, with nearby Aruba and Bonaire, Curacao is the “C” in what many call the ABC islands. It is also part of an island chain often referred to as the Dutch Caribbean. Though just 182 square miles, there are 35 distinct beaches across the island, many tucked into intimate coves or with world-class dive sites or jet-black sand, so the land feels dynamic and expansive. The east end of the island, which is home to the capital city of Willemstad, is by far the most industrialized and busiest region, and where most trips begin given Curacao International Airport is less than 10 miles from the city center.

Exploring Willemstad Willemstad is unique in that it is literally cut in half, joined solely by Queen Emma Bridge. Access to both areas is easy thanks to traditional motor transportation as well as motor taxis on both sides. Willemstad’s architecture is vibrant, notably with pink, teal and yellow Dutch colonial buildings lining the neighborhood along the main canal in the Punda district. Nearby, the city’s Otrobanda district feels more European, with cobblestone and open-air markets. Finally, there is the Pietermaai district, which is the foodie and nightlife hot spot in town, notably home to City Beach 88, an outdoor lounge on the beach; Cristal, a French and Mediterranean bistro with a fantastic wine list; Ginger, a Caribbean-meets-Asian eatery; Kome Restaurant, which has an open kitchen and shines a light on local ingredients; and The Pen, a slightly open-air restaurant with updated takes on regional dishes. Landhuis Chobolobo, the local name for the Curacao Liqueur Distillery (and home to the famed Blue Curacao) is also located in the Willemstad area. There, guests may enjoy daily tours that include a behind-the-scenes look at the distillation process of all the brand’s liqueurs, great history on the island itself and, of course, samples. The blue offering is just one of the distillery’s takes on orange liqueur, which is made with dried orange peels from the island’s native laraha orange as well as herbs and spices. In addition to the distillery and sample bar, there is also a gift shop and cocktail lounge where guests may choose from nearly a dozen Curacao Liqueur-infused specialty drinks.

Play & Stay Just a short drive from anywhere in Willemstad, miles of beaches reveal themselves. Kenepa Beach, Playa PortoMari and Mambo Beach are three of the most popular, but this also means that they are frequently crowded. Beyond these more well-known spots, Playa Kalki is cozy and great for water sports; Cas Abao is a popular place for scuba diving and a favorite among tourists and locals alike; Blue Bay offers sparkling white sand as well as restaurants and ample lounge chairs, plus a large childrens play area; and Black Sand Beach, which, as the name implies, is a beach covered in black sand. Beyond Shete Boka, animal lovers should also consider a day trip to Curacao Ostrich Farm, which houses more than 600 birds and offers guided tours. The farm offers a bird’s-eye view – literally – of ostriches in every stage of development, including the chance to see newborn babies and the opportunity to stand on an ostrich egg (no, it will not break). Though marvelous in a margarita, high-quality tequila is best enjoyed on its own. Complex and balanced – often with layers of citrus, herbal, floral or even sweet notes depending on the classification – here are a few standouts that are well worth a sip.

PaQuí Silvera Silver, more commonly known as blanco, is tequila that has not been aged in any way. Often classified as having a harsher and more vegetal flavor profile than its aged counterparts, this particular expression is exceptionally smooth. VIOLET AND VIBRANT Wok ‘N Roll has a sweet and tart hit on its hands with Purple Haze

Wok ‘N Roll – Chinese, Sushi, Sports founder and CEO Scott Stuart’s passion for great Asian food is equaled only by his love of music. “As our name suggests, Wok ‘N Roll is the marriage of Scott’s two loves, a theme we carry onto our signature cocktail menu as well,” says Morgan Holder, bar manager of Wok ‘N Roll. “Each cocktail on our menu, in fact, is named in honor of a classic song.” All signature cocktails are also imbued with a floral aromatic and/or fresh fruit. For example, Billie Jean features lychee and strawberry, and Bohemian Rhapsody showcases blood orange and lemongrass. Among the most popular summer features is Purple Haze ($12), aptly named given its deep violet hue. The name is also pitch-perfect for August, the height of monsoon and haboob season and its resulting blurred vistas. “It starts with Tito’s Vodka, which we infuse over several days with ginger, hibiscus, fresh raspberries and cucumber,” Holder says. “Tito’s is a great base given it is a touch sweet but with a crisp minerality and clean finish. Its complexity naturally balances other flavor profiles with ease.” Once infused, the vodka is added to a shaker with ice, Liquid Alchemist Passion Fruit Syrup, lemon juice and sparkling water. “The passion fruit enhances the color and tropical notes while the lemon gives acidity, and the soda water adds effervescence,” Holder says. The contents are strained and poured into a coupe glass with a sugar-coated rim. The cocktail, which is equal parts sweet and sour with a cooling finish thanks to the cucumber, is garnished with a sprig of mint for an added pop of color and to open the senses for what is to come. What made you start cooking? While I moved to Arizona at 4 and consider myself basically a native, my parents are Southerners, which meant homemade gumbo and red beans and rice growing up. My love of eating transitioned into a love of cooking. The only jobs I’ve ever had, dating back to my first at 15, were in restaurants and kitchens. How did you get to the Princess? In 1998, I enrolled in Scottsdale Community College’s culinary program. Upon graduation, I cooked in various positions at Mountain Shadows, Arizona Biltmore and Sheraton Wild Horse Pass before moving to California in 2015 to serve as the food and beverage director at St. Regis San Francisco. I learned of the Princess position through friends in 2017, and jumped at the opportunity. How big is the culinary department? I work with a dozen in-house executive and sous chefs, plus we partner with celebrity chefs Michael Mina and Richard Sandoval on their concepts, plus about 100 other food and beverage staff. Then, there is usually a major event or program, such as Christmas at the Princess, happening with its own culinary and staffing needs. We are like a small army! Standout Princess culinary memories: Each year, the process we go through to transform Toro from restaurant to Waste Management Phoenix Open Hole 18 luxury clubhouse is a memorable one, as are the quieter moments with our chefs doing research and development aka lots of good eating. What are some of your favorite dishes on property? I will die before we ever take the lobster tacos off the La Hacienda menu. Then at Bourbon Steak, I often find myself daydreaming about one of our newer dishes, which is a haysmoked tomahawk steak carved tableside. And at Toro, I am all about our new bone-in short rib with lettuce cups. What would readers be surprised to know about you? I have a collection of hundreds of sneakers at home. Tapas Papas Frita Any list of great tapas in Arizona must begin with Tapas Papas Frita, which has been serving small bites with a slice of history in Scottsdale since 1990. Solomillo means “sirloin” in Spanish, while moruno means “Moor.” This is a fitting name for the popular Andalucian meat shareable plate as the Moors ruled the Andalucia region for nearly 800 years. Served simply without pomp or circumstance, the dish is a beef tenderloin with a red adobe sauce made using peppers, paprika, vinegar and spices. $12. www.tapaspapafrita.com.

Basque Sa’ndwich Bites

Renata’s Hearth The newly opened Renata’s Hearth at Arizona Biltmore, A Waldorf Astoria Resort elevates the childhood comfort classic grilled cheese by tranforming it into a mouthwatering take on a similar sandwich from the Basque region. Here it’s re-imagined with jamon iberico and manchego cheese, both from Spain, as well as truffle oil. Tostones

Tapas, small and mostly savory dishes meant to be enjoyed as a snack or before a meal among friends and family, first originated in Spain. They were created when King Alfonso X was battling an illness and required small bites of food between sips of wine. Legend has it he requested wine be served with at least a bite of food to one and all, keeping those drinking on empty stomachs from getting sick. Over time, those small bites became more celebratory, and thus, modern tapas were born. As popular as ever, here are a few local interpretations.

The Canal Club While a common staple in Latin American and Caribbean cuisines, tostones are sometimes hard to find locally. The twice-fried and salted slices of plantain, which is a member of the banana family without the distinctive flavor profile, are crispy and satisfying on their own. The Canal Club takes them to another level, however, by pairing them with a bacon-infused black bean puree dipping sauce topped with pico de gallo and cotija cheese crumbles. $12. www.thecanalclubaz.com.

Ceviche

CRUjiente Tacos This classic Latin dish was first developed in Peru, but quickly gained popularity in Mexico, especially in beachside towns with access to fresh fish. The modern taqueria imports fresh white fish weekly for its zesty take on the traditional preparation. The fish is cubed and paired with shrimp. Together, they are marinated in a tart mixture of citrus juices – primarily with freshly squeezed lime juice. They are then tossed with spicy jalapenos, Fresno peppers, cilantro, and olive oil. $12. www.crutacos.com.


Papas Sucias

Vecina The literal English translation of papas sucias is “dirty potatoes.” These addictive, crispy fingerlings are mixed with tender pork neck that has been smoked for hours in green chiles until it bascially falls apart. Gambas al Ajillo

Talavera The Spanish steakhouse presents its take on shrimp with garlic, which is what “gambas al ajillo” translates to in English. The dish starts with whole, headed prawns, which make for quite the visual when they come to the table. They are cooked in copious amounts of garlic; plated with a rich Peruvian sauce made from rocoto peppers; and garnished with cordiander-crusted lime as well as mudica, which is a mixture of seasonings and Noble Bread bread crumbs. $26. www.talaverarestaurant.com.

Ahi Tuna Tostada Crispy Pork & Cola Lime Glaze

The Mission Both in Latin and Asian cultures, it is common to cook pork using cola. A play on this beloved technique, this dish contains juicy pork belly that has been braised in a sweet and spicy glaze made with cola, lime, spicy chiltepin peppers, and peanuts. The resulting sticky, sweet and savory carmelized bites are plated on iceberg lettuce and topped with pickled red onion. $15. www.themissionaz.com.

SumoMaya A showcase of the best in modern Mexican and Asian cuisines, the secret ingredient in this shareable starter is a dairy-free chipotle aioli. The creamy sauce is spooned onto individual homemade chips and topped with thinly sliced ahi. Chicken Pinchos

Mbar Pinchos are the Latin American version of kebobs or skewers. These have a particularly unique flavor profile as they are not simply wood fired or barbquequed. Instead, they are marinaded in chermoula, a glaze common in Algerian, Libyan, Moroccan and Tunisian cuisines made with cumin, garlic, peppers, and herbs. AZ Desert Elite Powersports offers epic tours across the Sonoran Desert

It’s only natural to dream about taking the road less traveled from time to time. Well, thanks to AZ Desert Elite Powersports – open now on the Fort McDowell Yavapai Nation just outside of Scottsdale – Valley residents can get their fix of wide-open spaces, the wind in their hair and outdoor exploration without ever leaving the state. The adventure tour company, which operates in partnership and as an extension of the tribal nation’s Fort McDowell Adventures, is the brainchild of Kenneth R. Salas who, until recently, worked in both the mortgage industry and in defense contracting, where he worked with Bombardier Recreational Products (BRP). Last year, Salas decided to make a midlife career change, applying for and being approved to become an authorized BRP rental outfitter in Arizona. “While that all sounds terribly complicated, it was step one in our journey to develop the adventure company of our dreams,” Salas says. “I, like so many of us, really wanted a career with less day-to-day stress as well as the chance to get out of an office 24/7.”

The authorization gave Salas the opportunity to build a fleet of tour vehicles, including: Can-Am Maverick X3, a high-performance side-by-side vehicle made to withstand sand, mud, rocks and major climbs; Can-Am Spyder, a three-wheeled motorcycle similar in layout to snowmobiles; Can-Am Outlander, a four-wheel all-terrain vehicle; and Sea-Doo, a personal watercraft. “With the vehicles in place, we developed tours made both to shock and awe but also to give guests a better understanding of the Arizona land, its native people and the animals who also call the area home,” Salas says. Currently, there are four tours available seven days a week, with plans to add more in 2022. Among them is a three-hour offroad tour across Sycamore Creek near Rio Verde including a trek up a path nicknamed Widow Maker, which is an area of eroded climbs in the high wall along the creek. The tour, which is led by a professional guide, features stops for snacks as well as photo opportunities, and the chance to see area wildlife including mustangs, javelina and deer. For those looking to get wet and wild, there is also a grand tour that – over the course of 4 1/2 hours – includes all of the same features as the three-hour tour plus two hours on Saguaro Lake with Sea-Doos. AZ Desert Elite Powersports is open from 7:30 a.m. to 7 p.m. seven days a week and is available for private group bookings. All drivers must be at least 18 years old and have a valid driver’s license. Drivers under the age of 18 are allowed in the vehicle with a parent or guardian behind the wheel. All off-road riders must wear the provided helmets as well as goggles or approved eye protection.
