Our annual Man Issue is here – and boy, is it a fun one!

For starters, we have someone really cool on the cover this month. If he doesn’t look familiar yet, maybe you recognize the maroon and gold in the background, or perhaps the pitchfork? Kenny Dillingham has returned home and is the new head coach of the the Arizona State Sun Devils football program. This one is especially cool for me since I attended Chaparral High School at the same time as Dillingham and have watched his career soar over the years. He talks all about the 15-year journey that brought him back to the Valley, his coaching style, and his plans for the football team on page 34.

Last year we took a little break from our Men of Style feature, but this year it’s back (page 38) and better than ever. Get to know some prominent guys (including local professional athletes, a nationally known wrestling announcer, a celebrity chef, and a major influencer) and learn how they create their chic ensembles, from brands to style rules. Brandon Bell, owner of Next Level Steel, is at the forefront of an industrial revolution

A second-generation steelworker, Brandon Bell is determined to disrupt the industry. Since getting his start in the family business over 20 years ago, he’s been committed to change in a big way.

“I was trying to figure out my life, I didn’t know what I was

going to do, but I got into my dad’s pool fence business and just fell in love,” Bell says. “I ended up telling him we should go into structural steel – because I saw the structural steel guys had nicer trucks!”

Bell’s idea to follow the demand – and by extension, the

money – was more fortuitous than he could’ve realized. Through tireless work and help from his dedicated team, he grew Bell Steel into the second-largest structural fabricator in Arizona. It took 15 years, but to Bell, it practically felt like overnight.

“I just loved it. All I did was talk about structural steel, think about structural steel, and hire the right people,” he says. “I taught myself how to estimate, how to project manage, everything about running a business. I had a passion for it – the challenge of learning something new and being a part of this growth and seeing our people grow with it.”

One of the keys to his success was his age. “I was the youngest person in the industry, this 20-year-old who was hungry and eager, and people fed off of that energy,” says Bell, who was watching closely as new technological advancements were beginning to take off. “The other guys were old-school, still doing everything by hand, while I was willing to spend money on automated equipment that streamlined fabrication. It really set us apart from the competition.”

The Dream Team

When it was time to branch out on his own, Bell knew from experience that he was only as strong as his team. In 2020, he bought a steel facility with eight employees and a yearly revenue

of $3 million. Now, Next Level Steel (www.nextlevelsteel.com) is on track to do $100 million with a team of 100.

For Bell, one of the best parts of the past three years has been seeing his work family flourish. “A lot of these people have worked for me for over 20 years. Seeing their enthusiasm, seeing them rise up the ranks, earn more responsibility, drive new vehicles and buy new homes – we’re all growing together. You just have to pinch yourself.”

A passionate leader plus a team that’s hungry for growth is a recipe for innovation. Being among the most successful players in the Valley’s steel industry isn’t enough – Bell wants to change the way things are done.

His newest steel fabrication facility, Castellated Structural Group (www.csgaz.com), specializes in castellated steel, which aims to replace the roof joists that have been the go-to for decades. To make a castellated beam, a traditional beam is cut lengthwise like a zipper, then welded together with the teeth offset to create a series of holes in the beam. With recent advancements like automated welding, castellated beams are now easier to produce than ever – plus they’re stronger, quicker to install, and span greater distances than traditional steel, all while enhancing a structure’s aesthetics.

So far this year, Bell has installed over 2 million square feet of castellated steel, with no signs of slowing down. “It’s all for our customers,” he says. “In the steel industry, everyone does a good job, so it becomes about providing the best experience for our customers. People like working with problem solvers, not problem creators.”

Sky’s the Limit

A man of many passions, Bell exemplifies the phrase “work hard, play hard.” Chief among those passions is aviation – once upon a time, he loved Top Gun so much that he even had plans to join the Navy.

“I moved to Phoenix and started working with my dad, so it never happened, but I always told myself, ‘One day I’ll learn how to fly.’” The time came almost a decade ago, when Bell made it his mission for the year to get his pilot’s license. But the obsession had just begun – next came his instrument rating, and now he’s working on his commercial rating.

Learning to fly means that indulging his other favorite hobby, spending time in nature, has never been easier – he can just pop the wife and kids into his Piper M600 and head to Telluride for hiking and mountain biking in the summer, or skiing in the winter. “Being raised in the desert, I was outside more than I was inside, even in the summer when it was 120 degrees. My boys, who are 9 and 6, are the same way.”

But when it comes to his boys following in his footsteps, there’s one place where Bell draws the line. “If they decide they want to get into the family business, I’m not making it easy for them – if they asked, I’d probably give them the worst job ever and they’d never want to come back!” he laughs. “I want them to aspire to be their own person and do their own thing. If that happens to be the steel industry, cool. If not, then good!”

DOING GOOD ON THE GREEN

Michael Diamond, founder of Fore the Kids, on starting his golf-inspired nonprofit

serves as the Western regional manager for contracting company Bentley Builders, but in his spare time, the young professional is committed to improving the lives of the next generation.

It was while he was earning his master’s in business and beginning his career in construction that Diamond felt the itch to start a passion project of his own.

“I’m blessed to have grown up in a fortunate family filled with love and support for others. Early in life I was taught that giving back to others less fortunate is very important,” says Diamond, who from a young age enjoyed volunteering with the Warner & Shirley Gabel Branch of the Boys & Girls Clubs of the Valley. And when the former college athlete had the idea for a charity golf tournament, he looked to his time at the Boys & Girls Clubs for inspiration.

With encouragement from the Gabel family and a whole lot of hard work, Fore the Kids was born. The nonprofit (www.forethekidsaz.com), composed of community leaders under 40, hosts fundraising golf tournaments and holiday parties to help kids overcome obstacles and reach their full potential. Since 2019, Fore the Kids has donated over half a million dollars to child development organizations like First Tee of Phoenix and the Jones-Gordon School in Paradise Valley.

“We’re working to set an example that it’s never too early to start giving back. Fore the Kids is more than just an organization – we’re a movement dedicated to promoting the values of sportsmanship, teamwork, dedication, and leadership.”

With the nonprofit’s annual golf tournament scheduled for this December and a tournament in partnership with The Terra Foundation coming up on June 24 in Prescott Valley, founder and president Diamond is grateful for more opportunities to build their network of supporters and beneficiaries, all while having fun on the green. And through it all, Diamond points to his family as the secret to his success.

“My father is my biggest inspiration in my life,” he says. “As a successful business owner, devoted husband, and role model to his children, he taught me the values of being a great, respectable man, showing me the difference between right and wrong while letting me learn from my mistakes. I can honestly say that everything good about me, I owe to him.”

Drew McFarland and Peter Johnson are revolutionizing golf tech with Rad Golf

For friends and business partners Drew McFarland and Peter Johnson, nothing beats a day out on the green. As the founders of Rad Golf, they’ve been able to leverage their backgrounds in the sports product industry to create devices that revolutionize the game that’s had them hooked from day one – more or less.

“It took me a while to get into golf, honestly,” McFarland confesses. “But as a competitive person, being terrible only fueled my drive to get better. I lived with five professional golfers when I moved to Phoenix, so getting a peek into that life gave me an appreciation for the sport.”

Johnson, a swimmer who picked up golf in high school, is a self-described “serial entrepreneur” who’s always on the lookout for the next big thing. And now, nearly 20 years after the two met through a common friend, the avid golfers have conceived of a way to take their game – and everyone else’s – to the next level.

From Sound+, a Bluetooth speaker that displays golfers’ yardage, complete with voice recording so they can easily store their scores on the app; to the Lazer Pro, a high-tech wireless rangefinder; to the Rad Watch, launching in July with shot tracking, green views, and GPS info from over 40,000 courses around the world, McFarland and Johnson’s goal is for their products to enhance the experience for golfers of all skills levels without serving as too much of a distraction.

It’s been the perfect fit for the two entrepreneurs, allowing McFarland to draw on the skills he’s gained during a rewarding career in sports marketing, including almost 10 years working for Wayne Gretzky, and Johnson to utilize his entrepreneurial experience, most notably as co-founder and CEO of Phat Scooters.

“For me, it’s about the challenge, making a product that you see out on the street, or when someone comes up to you and says, ‘I just used the Lazer Pro and I loved it,’” Johnson says. “That accolade that you brought enjoyment or value to somebody else’s life is the true payoff at the end of the day.”

Marshall Shore, known as “the Hip Historian” (@hip_historian on social media), is a man of many talents. He has developed a reputation for sharing interesting bits of history and curiosities through his events, tours and lectures. And while he is wellknown for his historical knowledge, his personal style is also worth exploring.

Shore’s personal style is artful, history-inspired, eclectic, and has a touch of humor or camp. He has developed a signature look with his use of plaid as a neutral, and is known for his ability to mix and match patterns and colors to create unique and visually stimulating outfits. “With my focus on Arizona, I try and incorporate some Arizona history in whatever I’m wearing,” he says

Over the years, Shore’s style has evolved as he gained a better understanding of himself and what he feels good in. He has moved away from following trends and toward a more personal, curated style.

Shore is inspired by a range of sources, inlcuding red-carpet events like the Met Gala as well as fashion exhibits at Phoenix Art Museum, and people watching.

What is your most prized possession in your closet? Boots from Paul Bond in Nogales, Arizona. Arriving to Arizona, I knew cowboy boots would eventually make an appearance in my wardrobe. They are custom made to fit my feet, guided selections, with such a pedigree of Arizona, movie and music history. The Arizona flag in orange and blue creates eye-catching footwear.

What is your favorite store? Coach. Quality No. 1, I have Coach products that are still staples in my wardrobe for over 20 years. They have unique men’s/unisex bags, but also a unique perspective. They recently produced a line of troupe e’oeil clothing including a piece of menswear – think Blues Clues for adults.

What is your must-have item? Eyewear so I can clearly see the adventures ahead. I consider them jewelry for the face. They should be interesting, fun and functional.

Dubbed “The Best Dressed Plumber,” Garrison is co-owner of A.P.E.S. Air Conditioning and Plumbing and has evolved his style over the years.

“I come from a lower middle class, I wore jeans and a T-shirt most my life. And in the trades working 70 to 80 hours a week, you didn’t get dressed up often,” he says. “When I started growing my company, I started dressing better. Knocking off the muddy boots and ripped jeans, I found myself exploring more of the finer clothes. It made me feel good!”

Bold hues, such as black and blue, particularly combined with Gucci shoes, appear often in Garrison’s wardrobe.

“I like a good quality bespoke suit by Danish,” he says. “Add in some flashy shoes, a belt, a hat, a tie and don’t forget the jewelry. When I grab a whiskey glass, I love the sound of my rings chiming against the glass.”

Who influences your style? Growing up I spent a lot of time listening to music and watching TV. I’m inspired by people like Al Pacino, Marlon Brando, Dean Martin and, of course, Elvis Presley, Al Capone, and Frank Sinatra.

What are your favorite styles and trends? Bold! I want to stand out. And, of course, have great shoes. The shoes make the man. You can find me in the desert off-roading and still find me in trendy shoes. I am the only plumber I know that wears Gucci shoes. I find them comfortable and they fit my big feet.

What is your most prized possession in your closet? It’s the collection itself, being able to make an outfit different each time I wear it is what’s important. From the shoes, jackets, and ties, then topping my outfit off with rings and bling on a hat, every piece has its own place.

Kenny Dillingham returns to the Valley as Arizona State's new head football coach

Coaching football has taken Kenny Dillingham across the country, from Tennessee to Alabama, from Florida to Oregon. But now, 15 years into the career that’s had him hooked since day one, he’s finally home again – back in the Valley, where he grew up, sporting the colors of his alma mater as the Sun Devils’ 26th head coach.

Though maroon and gold have been a closet staple of his since childhood, the first jersey Dillingham wore on the field was for Scottsdale’s own Chaparral Firebirds. Sadly, his career as a football player was cut short – as the senior quarterback in 2007, Dillingham tore his ACL. But his coach, Charlie Ragle, was loath to see the passionate 17-year-old fade into the woodwork just because of an injury – so he made Dillingham his student assistant.

When Dillingham graduated and started attending Arizona State University – a no-brainer in a family full of fervent Sun Devils fans – his former coach told him that his career dreams were a whole different story. No matter what Dillingham chose to study, he’d be coming back after classes to help Ragle coach the Firebirds.

After earning his degree in interdisciplinary studies, Dillingham was appointed Chaparral’s offensive coordinator. By then, a fire had been lit under him, and he knew that if he stayed driven, he could do big things.

“Coaching high school football and seeing the impact you can make on kids, that was my moment of, ‘Woah, I really want to do this,’” Dillingham says.

While at ASU, he was determined to watch and learn, sitting in on Sun Devils’ practices for months. Coach Mike Norvell noticed Dillingham lingering in the stands and told him he couldn’t learn to coach from all the way up there – and the rest is history. Starting in 2014, he served as the Sun Devils offensive assistant and found himself learning on the job quicker than ever before.

“You don’t realize just how much time goes into collegiate coaching,” Dillingham says. “When you’re a high school coach you put in a ton of time, but there’s all the other stuff that goes into college coaching – administrative, meetings, recruiting visits, photo shoots. All of that was a learning curve."

When Norvell was hired as the head coach at the University of Memphis, Dillingham followed as his graduate assistant. There he continued his trend of impressing higher-ups with his work ethic, recruiting skills, and ability to connect and communicate with players before adding Auburn University, Florida State, and the University of Oregon to his impressive resume.

The Path to Success

Now with over 15 years of coaching experience at just 32 years old, Dillingham’s fire is still burning bright. And when ASU came knocking on his door in late 2022, he was more than ready to step up as the youngest head coach in the Football Bowl Subdivision – though to him, the thought does have some irony to it.

“There’s a lot of guys here that are older than me that are more ‘hip,’ more with the times than I am,” says Dillingham, who is now married to his high school sweetheart and became a father in 2022. “I’m a guy that goes to bed at 8:30 on a good night. I’m an old soul.”

Among his first acts as head coach was to bring on his first mentor, Charlie Ragle, as the Sun Devils' assistant head coach. It’s all part of Dillingham’s mission

to assemble a coaching team who cares as deeply about Arizona’s football community as he does. To him, that means much more than just knowing your players by name – it means building trust and having fun together, from playing video games and pingpong during downtime, to making time for dance breaks during practice.

“I’m a people person. That’s the most important thing – being able to relate to people and understand them, to communicate well,” he says. “I just want to have a team that’s all-in together, that’s committed to each other, a team that wants to compete in everything they do.”

Beyond competing, Dillingham says, the focus is on chasing success. But to

define success as simply “winning games” is far too narrow to fit the future he sees for the Sun Devils.

“Success is simple – it’s being the very best at whatever you’re doing right now,” he says. “There’s not a numerical value, there’s not a mountain to climb, there’s not a goal to reach. It’s being as good as we can be, whatever that looks like, and maximizing every ounce of every day.”

Dreaming Big

For as long as he can remember, Dillingham has been attending Sun Devils games with his family, decked out in kid-sized ASU jerseys and face paint, playing football in the parking lot between cars while the adults

hosted legendary tailgates out of a motor home. He knows better than anyone – not just as a coach, but as a lifelong fan – the importance of college sports. What really makes it special, he says, is the immediate connection to the community.

“The kids might have gone to high schools here. People know them, the Valley knows them. That’s the difference about collegiate sports – you have players on the roster that people know personally. They know their families, their aunts, uncles, and grandparents. They can really get behind them and support them.”

It’s this community that has made ASU feel like Dillingham’s home for so much of his life. Since his first experiences with

coaching, he knew he wanted to one day work for his alma mater, but to Dillingham, it wasn’t just a daydream, it was an inevitability. Fifteen years of tireless work, squeezing his way through open doors and not being afraid to admit what he doesn’t know, have landed him exactly where he’s always wanted to be.

“I’m a big dreamer, but I always believed I would be here. I’ve envisioned it, planned for it, worked for it,” says Dillingham, whose leadership style throughout the years has been focused on staying true to himself no matter what. “I tell our guys all the time that leadership comes in so many shapes and sizes. The moment you try to start leading outside of your personality is

the moment people think you’re fake. Not everybody is going to lead the same, so embrace who you are, play to your strengths and understand your weaknesses.”

At the end of the day, Dillingham credits coaches Ragle and Norvell for teaching him the importance of having a growth mindset. Now, he hopes he can serve as a similar example for his own players.

“One of our mottos is that we want to have more fun while working harder than anybody else in the country,” he says. “Life is hard, but you better learn to enjoy the hard times. I hope our players leave here understanding that if you work really hard and enjoy it, and if you strive to be a good person all the time, then you’re going to be successful.”

You wouldn’t be wrong to think that Clayton Keller – a three-time NHL AllStar who at just 24 years old has scored the sixth-most points in Arizona Coyotes history – spends most of his day on the ice or at the gym. But when it’s time to get dressed, he feels you can never go wrong with a staple pair of black jeans, the perfect blank canvas for a nice T-shirt and a zip-up jacket. His favorite local store is One51 AZ at Scottsdale Fashion Square, while Dior and Rolex serve as go-to brands for special occasions like dinner at Ocean 44 with family and friends. Though he describes his style as casual, there are two rules Keller always swears by – never wear cut-off shirts, and never pair gray with gray. For as long as he can remember, Keller’s father has served as one of his greatest style icons. “My dad was always big into shoes, which caught my eye at a young age and led me into fashion. He always liked to dress nice and look good.” Today, Keller most often reaches for his Air Jordan 1s, and turns to NBA players for further style inspiration, a firm believer that a great outfit on an athlete can draw even more eyes to the sport.

When your job is on TV, it’s important to look the part. To All Elite Wrestling host Justin Roberts, that means Mezlan dress shoes and custom threads from online retailer Hockerty – he opts for classic suits for the weekly show and tuxes for payper-view events. Known as the “Dapper Yapper,” Roberts has a general set of style rules – plain suits can pair with patterned shirts and ties, while a windowpane or striped suit should be toned down with a less busy shirt or tie. But one rule is non-negotiable – running every work outfit by a non-colorblind friend to ensure everything matches. “My hobby used to be watching pro wrestling – I grew up idolizing pro wrestlers who traveled in Zubaz pants, high tops, and fanny packs – but when that became my career, working out became my hobby.” His typical gym wear consists of cargo shorts, Reebok Pumps, and a ’90s-inspired T-shirt, and he’s rarely caught without his sleep-tracking Apple Watch and Oura Ring. Though he has a high-energy job, Roberts is an introvert at heart. His perfect day consists of plenty of time in the sun, followed by an early dinner and drinks at a local spot like Diego Pops that fulfills another of his must-haves – great live music.

Chef Angelo Sosa has noticed a big shift in his style since trading life in the Big Apple for the sunshine of the West Coast. Gravitating toward colorful pieces with clean lines and beautiful stitching, the Top Chef alum has a soft spot for items of clothing that are eclectic or elegant. Sandro Paris is his go-to for the former, Dries Van Noten for the latter. For Sosa, the best outfit strikes a balance between simple and unorthodox, elevated further with a splash or two of cologne – his favorite is Le Labo, but most days he wears multiple colognes to create a one-of-a-kind scent. Sosa opened his latest restaurant, Tia Carmen, at JW Marriott Phoenix Desert Ridge Resort & Spa in 2022 with the goal of honoring his aunt Carmen by serving thoughtfully crafted food made with locally-sourced ingredients. It’s another facet of his goal to touch people’s lives and make meaningful connections everywhere he goes. And while most days he’s typically found in an apron and chef’s coat, there’s one unexpected element of his kitchen ensemble. “I have a bad habit of wearing very expensive shoes in the kitchen, which encourages a new purchase.”

When it comes to his wardrobe, professional baseball player Lourdes Gurriel Jr. is all about comfort. In the same way that athletic talent runs in the family – his dad, Olympic medalist Lourdes Gurriel Sr., is a legend in the Cuban National Series, and Gurriel and his older brothers, Yulieski and Yunieski, have all pursued careers in baseball – an eye for fashion is something the Gurriels have in common. The Barn Door Store celebrates more than ten years in the industry, originally founded by Jeff King in 2012 as an offshoot of his residential remodeling business. Bite Nite returns to benefit The ALS Association Arizona Chapter

Prepare to sip and savor for a good cause at the annual Bite Nite. The event, which sells out every year, is one that Valley residents don’t want to miss.

The 14th annual event will take place at Chateau Luxe, beginning at 6 p.m. and wrapping up at 10 pm.

“Guests can expect unique dishes from top chefs across the Valley,” says Angie Tigges, director of development of The ALS Association Arizona Chapter.

Some vendors to look forward to include Bourbon & Bones, Maple & Ash, Ling & Louie’s, Heidi’s Events & Catering, Creations In Cuisine Catering, Cien Agaves, and Too Sweet Cakes, to name a few.

But, eating isn’t the only thing attendees will be doing – there will also be a silent auction, a live auction and merchandise for purchase.

“We have some awesome prizes from every category, but the golf, staycation packages, delicious dinners for 12, and trips are sure to go over well,” Tigges says.

And, if in the know, don’t forget to run to the mystery boxes – what some might say is what guests are most excited for each year.

“Everyone loves our mystery boxes. They are a very hot item at Bite Nite,” Tigges says. “Guests race to buy them and they sell out quick. Each box is $50 and has to have a value of $50. Some boxes have more value. People love the surprise.”

In addition to a full bar with wine, spirits, Champagne, and beer, there will also be a few exciting treats for guests to wash all those bites down with.

“Returning we have our brewed OHSO beer again this year. We are very excited about our signature drink as well! It is an espresso martini compliments of Black Rock Coffee Bar and Titos vodka,” Tigges says.

and Larry Gaydos. Along with the auction, the event will recognize and honor many individuals for their impact.

“The ALS Association Arizona Chapter is dedicated to serving and empowering people living with ALS and their families. We provide free support, resources, and education to Arizonans impacted by ALS, allowing them to endure their diagnosis with dignity, quality of life, and hope for a world without ALS,” Tigges says.

The night will wrap up with live music and dancing from Voyager and Iconic.

Those who aren’t able to snag a ticket to the event can create a team and participate in one of the nonprofit’s upcoming walks this fall. The Scottsdale walk will take place on Nov. 4 at Salt River Fields, while the Tucson Walk will take place on Oct. 21 at Reid Park.

THE HEALING POWER OF ART

Ray Goodluck shares his culture and passion through painting

Looking at Ray Goodluck’s paintings, you may be drawn to the vibrant colors, or to the realism of his portraits. If it were up to Goodluck, however, it would be the imagery, titles, or the energy of his work that draws you to it.

His paintings – mostly portraits and wildlife that tell the stories of his life and culture – are designed to bridge generations. They tell the stories of what he has been through and what he has been told by his family and community.

Growing up in the Navajo Nation, Goodluck was surrounded by art. Three generations of his family were silversmiths; his mother wove rugs and did beadwork. But he took another path, becoming an ironworker, learning from experienced tradesmen in Albuquerque, and eventually moving to New York where he became the first and only Navajo member of New York City’s Local 40 union. Ironwork was lucrative, and a few years later, he went to Las Vegas, Nevada, to work on the new Las Vegas Raiders stadium. That’s when his life took a turn.

After falling from a ladder and tearing the ligaments in his knee, Goodluck became a wheelchair user. Disheartened, he spent the first month after his injury watching television, frustrated with his situation and his inability to work.

After sensing this frustration, his girlfriend pulled out a canvas and paint set, and Goodluck began painting – a horse, an eagle, a portrait. As he tells it, the first efforts looked like a little kid’s artwork.

“I sat at that table for hours, thinking about the challenges that come with painting,” he says. “I thought, ‘creating art is tough for a reason. If it wasn’t, everyone would do it.’”

So, he studied by reading books about artists and color and light. And he began painting with acrylic every day, sometimes for up to 10 hours. He paints whatever crosses his mind and feels that this direct approach imbues his art with honesty and energy that draw people to it.

“It’s like flowing water. You just go with it,” he says. “Everything I paint is how I feel. The colors I use are chosen without looking at them. I reach in and see what feels right and go with that.”

While his accident could have been a tragic turn, Goodluck has a different view.

“Every step you take in your life is a blessing,” he says. “Everybody is put in your path to teach you and help spread the message. And some people teach you without saying a word.”

IS THERE SUCH A THING AS A SAFE SUNTAN?

With summer comes barbecues, baseball, golfing, swimming, biking and lots more outdoor activities that expose your skin to the sun. Some people purposely lounge by a pool or at the beach to get the “healthy” glow of tan skin.

But can you get a suntan safely without exposing your skin to the damage that may lead to skin cancer? The short answer: No.

“If you’re exposed to the sun, there’s potential for damage,” says Stephen Lynch, MD, Vice Chief of Staff at City of Hope Phoenix.

But you can take certain steps to prevent burns and protect your skin from excessive damage, he says.

Skin tans when cells just below the surface, called melanocytes, are exposed to ultraviolet (UV) light and produce melanin, a pigment that darkens the skin. Melanin absorbs UV light and helps protect the skin from burning.

But too much UV light may do serious damage. It penetrates the skin deeply and may cause:

• Premature aging, including dark spots, wrinkles and a “leathered” look to skin

• Eye damage that may impair vision in both the short and long term

• Harm to skin cells’ DNA that may lead to basal cell carcinomas or squamous cell carcinomas, the two most common types of skin cancer

• Damage to melanocytes in the skin, which may develop into melanoma, the deadliest type of cancer (Melanoma accounts for only 1 percent of all skin cancers, but about 75 percent of skin cancer deaths.)

Ultraviolet rays are difficult to avoid. They bounce off water, snow and sand and penetrate windows, windshields and some types of clothing. Children, young adults and people with fair skin are at greater risk of cell damage from UV light.

“In general, the lighter your skin, the more likely you are to burn,” Dr. Lynch says. “Melanin, which causes darker skin tones, has a protective effect. Having darker skin, however, has been shown to lead to delayed diagnoses in some types of skin cancer. So, everyone needs to reduce skin damage from the sun.”

Contrary to popular belief, getting a tan will not protect your skin from sunburn or further skin damage. The extra melanin in tanned skin provides a sun protection factor (SPF) of about 2 to 4, which is far below the minimum SPF of 30 recommended by the American Academy of Dermatology (AAD).

While it’s true people with darker skin don’t burn as easily as those with light-colored skin, extended sun exposure still leads to skin damage and skin cancer. In fact, African Americans are 1.5 times more likely to

die from melanoma than Caucasians, according to a study published in the journal, Medicine.

One reason for the disparity appears to be that skin cancer in people with darker skin is more likely to be diagnosed at a more advanced stage, when the disease is more difficult to treat. In a study published in the Archives of Dermatology that analyzed 1,690 melanoma cases, researchers found that 26 percent of cancers diagnosed in Hispanics and 52 percent of those in African Americans were advanced, compared to 16 percent of Caucasians.

The AAD recommends that everyone, no matter his or her skin tone, wear sunscreen because anyone can get skin cancer, regardless of age, gender or race.

Remember, it’s never too late to start protecting your skin from the sun. As soon as you do, your body starts to repair some of the damage caused by its UV rays.

Here are some tips that may help you enjoy a safe and active summer:

• Use sunscreen with an SPF of 30 or higher if you plan to be outside longer than 20 minutes. Sunscreen should be water resistant and protect against UVA and UVB rays. Reapply regularly (about every two hours) and again after sweating or getting out of the water.

• Protect yourself from sun damage between 10 a.m. and 4 p.m., when the sun is the strongest. Stay inside or seek shade when you can.

• Cover up with a wide-brimmed hat, UV-blocking sunglasses and long sleeves and pants. For more protection, choose clothing with an ultraviolet protection factor (UPF) number on the label.

• Don’t burn. Sunburns have been linked to an increased risk of melanoma.

• Avoid tanning booths and beds—all use damaging ultraviolet light.

• Examine your skin for suspicious spots every month and see a dermatologist for a full-body skin check once a year.

Even though tans aren’t safe, that shouldn’t stop you from enjoying the outdoors this summer. Outdoor activities are fun ways to get exercise, which helps reduce the risk of cancer and other illnesses.

“There’s lots to do outdoors—just try to be safe about the way you enjoy it,” Dr. Lynch says. “Don’t be fooled by cloudy or cooler days. You can still get burned. Also, be careful of times when you may be in the shade, but UV rays are being reflected toward you.”

This past spring, Fratelli La Bufala opened its doors in Scottsdale, marking the popular Southern Italian brand’s (with more 70 locations throughout Italy, London, Dubai, and Saudi Arabia) second location in the United States. Sourcing many of its ingredients from Italy, the brand especially excels at Neapolitan-style pizza. Native to Naples, Neapolitan pizzas are cooked in a wood-fired oven and known for their airy crusts. There are 13 Neapolitan pizzas on the menu, including the mouthwatering Delicata ($19). Its base is a lean dough made from flour, water, salt, and yeast. The dough is topped with provolone and fresh mozzarella before being baked for about 10 minutes. Pour Decisions Patio & Kitchen brings sweet heat with The Picky Ricky

When Pour Decisions Patio & Kitchen opened this past spring, it became one of the only rooftop bars in Old Town Scottsdale that was not directly connected to a hotel or resort.

“Given we are quite literally elevated, we believe our cocktail program should be as well,” says Mikey Brissa, general manager of Pour Decisions. “We have been telling people the word ‘well’ does not exist here, which means we do not have any of those headache-inducing recipes made with lower-cost ingredients to increase our profit margin. The only ‘well’ we do is well made.”

Among the most popular well-made menu offerings is The Picky Ricky ($16).

It starts with Western Son Cucumber Vodka, a gluten-free craft spirit from Texas chosen for its light, earthy aromatics and cool, vegetal flavor notes.

“We also love that a portion of proceeds from each bottle benefits the Peter Burks Unsung Hero Fund, which collects and delivers care packages to deployed military,” Brissa says.

The vodka is combined with Ancho Reyes Verde Liqueur, which is made from fire-roasted green poblanos to ensure they are equal parts spicy, smokey and sweet on the palate, as well as fresh lime juice for acidity, Liquid Alchemist Blood Orange Syrup for added bite and color, and agave nectar for balance.

The contents are given a shake with ice and strained into a rocks glass with the guest’s choice of regular ice cubes or a singular artisanal cube. “We garnish with a slice of cucumber that we hand-cut into a chic serpentine shape to add visual dimension, a juxtaposing color, and a refreshing finish to each sip,” Brissa says.

In the kitchen with Danny Ocampo of Z’Tejas

Danny Ocampo is the executive chef/ corporate chef of Z’Tejas, where he uses bold ingredients to create twists on dishes inspired by the Sonoran Desert and Texas.

Did you always know you would be a chef?

I never expected to cook professionally, but I grew up on a ranch in Sonora, Mexico, milking cows, riding horses, and even crafting cheeses and sour creams to sell at the local market. During this time, I also discovered my love for cooking, which was nurtured by the countless hours spent in the kitchen, experimenting with new recipes and flavors. The entire ranch experience cultivated my deep appreciation for food.

What brought you to Arizona?

Not to sound cliché, but the American dream. I ventured to Arizona in the early 1990s at 14. I came by myself, seeking to build life on my own terms. I found a place to live, enrolled in high school, and took on two jobs to support myself, one in housekeeping and one in the kitchen at Bistecca, a now-closed Scottsdale steakhouse.

Tell us about your culinary journey. At Bistecca, I discovered my love for grilling and quickly realized my talent for it. I would also hone my craft at The Capital Grille for a few years before joining Z’Tejas in 2001. Over the past 22 years, I have had the opportunity to work in every role in the Z kitchen, including traveling with the brand to help open locations nationwide. Recently, I accepted my biggest challenge yet as a corporate chef, a true honor.

What are some standout menu items?

The Adobo Chorizo Meatloaf with roasted poblano mashed potatoes is my personal recipe as is the seasonal Mango Salad. I am also quite proud of our old-school dishes that date back decades, including the Catfish Beignets, Z’Queso with chipotle and pico de gallo, and Shrimp Tostada Bites with cilantro pesto, agave dressing, guacamole, and cotija.

What would readers be surprised to know about you?

When I was 17, I took up bull riding, eventually traveling across the Southwest to compete. I retired from competing at 21 with a host of scars to prove it. While I no longer ride bulls, I have four horses and still love to saddle up and hit the trails when I can.

The bubbling cauldron of ingredients comes together thanks to its lava-like sauce, made with guajillo, pasilla, and ancho peppers as well as chipotle pepper blend, garlic, and cumin. Notably, the ahi is dressed with a combination of Sambal, which is a piquant Indonesian chili pepper paste, and togarashi, a small, hot red Japanese chili known for its lingering heat. It is finished with scallions and sesame oil before being plated on a bed of soft, sticky rice that is molded, deep-fried and dusted with togarashi. Guests may enjoy the menu in the golf bays, in the traditional dining area, on the dog-friendly and misty patio, or at the plush bar, which has a bright, light blue hue and multiple flat-screen televisions with the day’s top sports games playing on each screen.

At the new Trevor’s Liquor at the Scottsdale 101 Shopping Center – the locally owned brand’s second Scottsdale location to date – guests are invited to do far more than simply shop for a their favorite libations to enjoy at home.

The 15,000-square-foot space features a large retail store with local, regional and imported beer, wine and spirits. Beyond the shop, however, Trevor’s boasts an expansive cigar store complete with a walk-in humidor and accompanying lounge that allows for puffing indoors at a safe distance from patrons who prefer to be far away from smoke. There are also two private golf simulation bays that can be rented by the hour. Each has seating for eight guests and state-of-the-art TrackMan golf simulators, offering realistic courses and challenges for all levels of play. There are also clubs for rent starting at $10.

Trevor’s features a full-service kitchen offering charcuterie boards, pizza, sandwiches, and salads from the mind of executive chef Parker Rosbrook, a 15-year veteran of kitchens across the Valley including Elements at Sanctuary Resort, Virtu Honest Craft, Mora Italian, and The Americano. Of

Jordan Chandler, an award-winning mixologist who has competed on both the local and national level at events such as Margarita Wars, Phoenix Knife Fight and World Class, serves as the venue’s beverage director and recently released his first seasonal drink menu. The ambitious, dazzling list of 25 signature cocktails is divided into four sections: stirred, shaken, spritz, and barrel-aged. Some early favorites include Whisky Apples, with whiskey, apple brandy, sherry, cinnamon, and tiki bitters ($17); Jeff’s Pink Lemonade, with gin, rhubarb-infused ginger, strawberry, lime, hibiscus, and Centr CBD Water ($15); and Scottsdale Spritz, with Japanese vodka, sparkling wine, blood orange, and lemon ($15).

Chandler is also working to host complimentary tasting events several times a week with brands such as Whiskey Del Bac, Mother Road Brewing, Jim Beam, Buffalo Trace, Natural Wine Co., and Rabbit Hole.
