Pam is dedicated to excellence, and obtained her Associate’s degree with Highest Honors from Scottsdale Community College. She assists the attorneys in drafting purchase contracts and leases, easements, shared-well agreements, promissory notes/deeds of trust, and other real estate documents. “Our team regularly works with real estate agents, title companies, surveyors, and other experts on a variety of real estate issues and are knowledgeable, experienced and motivated to help our clients in all aspects of real estate law,” she says.

Holly Ayala, Paralegal Holly graduated from Arizona State University (cum laude) with a Bachelor’s degree in social justice. Holly obtained her Advanced Certified Paralegal credentials in 2019. 2020 was, of necessity, all about low maintenance colors, but now it’s time to start having fun with your hair color once more. 2021’s hottest spring trends are all about leveling up your lockdown look, according to Rodney Gentry of Scottsdale’s Saachi Studios. “Spring’s hair colors are showing that it’s time to come out of hiding and start enjoying the world once more,” he says. “From rich, all-over color to fabulous tones for highlights and lowlights, it’s time for your color to be bright, bold and beautiful.” For all-over color, expect plenty of red tones this spring, as well as lighter browns that leave the darkness of winter behind and carry hints of the summer sunshine that’s yet to come. Social media has been awash with influencers framing their faces with bold streaks of color, also known as e-girl streaks. Reds, along with a whole spectrum of other colors, are expected to make an appearance in e-girl streaks this spring. This season, this trend will be taken further, with two-tone streaks and some dazzlingly bright colors. “While e-girl streaks look fabulous set against dark hair, they can also look stunning with blonde locks, making this a versatile and accessible style for everyone to experiment with this spring,” Gentry says. In terms of techniques, balayage will continue growing in popularity over the course of the spring. The hand-painted style produces beautiful, natural-looking color in all tones, while it’s also ideal for pastel colors, for a truly fresh spring look. More traditional coloring techniques also remain popular. “Both highlights and lowlights will continue to remain popular, even as a growing number of clients try out balayage,” Saachi Studio’s Gentry says. “What’s different this spring is that clients are going for brighter highlights and richer, deeper lowlights. 2021 really is the time to celebrate color in a wide range of ways.”

This firsthand experience imbued her with a passion for women’s empowerment that hasn’t wavered since. “I strongly believe that in a family, if mom is healthy, educated and happy, the family is,” Tesmer says. “It’s the same in our communities and in the rest of the world – women are the backbone of anything and everything.” Throughout her decadeslong career – which includes roles such as economic senator of the German Senate of Economy and president of the World Trade Point Federation of Hamburg, Germany – Tesmer has helped countless entrepreneurs bring their products and services to the global market.

A Powerful Path Tesmer’s love of humanitarianism took a front seat after her world turned on its axis when her mother developed cancer for the second time. “When I lost my mom after many years of battling cancer, I knew I wanted to do something completely different with my life moving forward,” says Tesmer, who fell in love with Arizona when their search for the best treatments brought them to the Valley. “Philanthropy has always been an integral part of my business life, but at that point, all I wanted to do were the things I loved. I didn’t want it to be business anymore – it just became my passion.” With plans to establish a wellness clinic of her own in Arizona, Tesmer connected with longtime friend Rolf Lohse, founder of ROLFS Salons and ROLFS Global (www.rolfssalon.com). When Lohse suggested that Tesmer’s devotion to both women and health made her a perfect fit for the beauty industry, she was initially skeptical. “I thought it was just superficial stuff, but Rolf shared with me how incredibly powerful this industry is,” she says. “It’s so much more than lipstick and haircuts. He told me that beauty and health are two sides of the same coin. When you transform someone’s look, you give them confidence, you support them.” Intrigued by the opportunity to get involved, Tesmer researched the beauty industry and found that there was much to be excited about – and much to improve upon. “In America alone, we have several million beauticians, hairdressers and makeup artists, but they don’t make much money, and there’s no prestige or place in the community.” After learning that most beauty professionals don’t even have college degrees, Tesmer resolved to make a change. Ever since becoming a partner of ROLFS Global and ROLFS Salons 11 years ago, she has been dedicated to developing a higher education program that would change the landscape of the industry.

The Future of Beauty Now, after over a decade of hard work, Tesmer and ROLFS Global have launched an accelerated degree program that allows licensed cosmetologists to pursue an Associate of Applied Science in beauty and wellness from Maricopa Community College (MCC) before applying to Arizona State University for a Bachelor of Applied Science in health, entrepreneurship and innovation with an emphasis on personal care.

The curriculum, which can be completed online or in person in just three years, equips students with the tools for success in everything from finance, business and marketing to leadership, ethics and evidence-based decision making. With the first 12 students – who were awarded full scholarships through ROLFS’ Third Space Institute, which supports over 3,000 different charities – graduating from MCC this upcoming May, Tesmer knows this is just the beginning of a worldwide movement to help beauty professionals secure the knowledge, respect and financial security they deserve. “If we empower them, they could be an amazing positive force in the world, at the forefront of lifting everyone up,” she says. As part of their mission to transform people’s lives through beauty and education, Tesmer and Lohse pioneered the world’s first Salon of the Future. Located at The Shops Gainey Village, the cutting-edge salon strikes the perfect balance between art, technology, compassion and sustainability, incorporating augmented reality and water- and energy-saving technologies alongside custom flooring made from paper and recycled wood. There’s even a monthly book club to further the personal and professional development of the internationally trained team of beauty professionals. To celebrate what women are capable of when provided with the tools to lift people up, Tesmer plans to open more Salons of the Future around the globe, in addition to rolling out the higher education program to 30 colleges and universities nationwide. “We plan to be at the forefront of something positive and inspiring, to tell people that you’re beautiful just the way you are, and you don’t need to look like someone else,” she says. “Beauty is about truth and authenticity. It’s a value as important as goodness, and now more than ever, it’s about innovation, inclusivity, championing important social matters and inspiring everyone to not only look their best, but to become better human beings.”

RIT for Foot & Ankle Pain BY GREER BANKS

I hate to hear that foot pain is keeping someone from their everyday life,” says Dr. Kerry Zang, podiatric medical director of CiC Foot & Ankle. Just because you’re on your feet all day or are getting older, doesn’t mean your feet should hurt. Another big reason why people live with chronic foot pain, is because they didn’t get relief from prior treatment and are not aware that there may be other options. “The thing that excites me most about being a doctor is finding new ways to help my patients. Regenerative medicine is the latest answer,” says Zang. “It doesn’t matter if you are suffering from arthritis, an old injury, Achilles tendonitis, heel pain or plantar fasciitis, pain after surgery, the list goes on and on. Regenerative medicine may be able to help.” Regenerative injection therapy (RIT) uses growth factors to help repair and restore tissue, ligaments, and joints. Until recently, anti-inflammatory medication and steroid injections, like cortisone offered the best chance for relief. But, these options just reduced the symptoms. “While cortisone stops the swelling and

pain, it can also interfere with the healing process and more damage can occur,” explains Zang.

RIT helps the body initiate its own healing response, where the body replaces, repairs, reprograms and renews diseased or injured cells. “Sometimes the body just needs a little boost to encourage the regenerative process. The growth factors in RIT do that,” says Zang. A recent patient of Dr. Zang’s has seen wonderful results from RIT. A patient had been suffering from ankle pain after an injury and surgery three years

ago. Cortisone injections, physical therapy and pain medications did not help. He needed to wear a brace because his ankle was unstable and painful. “I couldn’t recommend additional surgery because while it may have addressed his ankle problem, I believe it would have just transferred the pain further up his leg, and most likely affect his knee,” says Zang. “I felt his best option was a growth factor injection.” Dr. Zang recognized that the patient was skeptical, and explained, “I’ve seen excellent results with ongoing pain after prior surgeries, and believed he had on opportunity to benefit as well. I advised him it could take a bit of time, but it may offer the relief he needed.” A few months after the injection, the patient noticed the pain was nearly gone. Soon after, he realized, “I [haven’t] noticed any pain…this is an unbelievable outcome so far, and I thought this could never happen. SENTIMENTAL SCENTS Kelly Kussman bottles up memories with fragrance business, Cayla Gray

Throughout her teenage years, Kelly Kussman immersed herself in beauty articles from magazines. Of all the beauty topics she read about, fragrance was her absolute favorite because of its incredible ability to transport the wearer to a specific moment in time. “I can’t tell you how many of my childhood memories are associated with scents. The smell of a tomato plant brings me back to my mother’s garden, and the perfume Lovely by Sarah Jessica Parker reminds me of my college days,” she says. After a 17-year career in retail, buying and sourcing fragrances for major department stores, Kussman wanted to create something of her own. So, she learned the art of perfumery from a master perfumer and, last November, launched her online fragrance business, Cayla Gray. “It wasn’t easy to launch a brand during a pandemic with so many raw material and packaging delays, but after almost losing my life in 2017, I realized life is short and I didn’t want to wait any longer,” Kussman says. Cayla Gray (www.caylagray.com) is Kussman’s way of honoring the children she tragically lost in two ectopic pregnancies. Cayla Gray is the namesake of Kussman and her husband’s first baby. “I get to create products that make memories for people,” she says. “These are memories that I was not able to make with my little ones, so it’s beautiful to see new moments captured in their honor through my products.” The product line includes perfumes and 100% soy-based, hand poured candles, both of which are available in the brand’s four scents that represent the seasons: Petals (spring), Water (summer), Cozy (fall), and Hearth (winter). In addition to these signature scents, Kussman plans to launch up to four limited-edition fragrances a year. All Cayla Gray products are made of premium-quality materials, are void of parabens and phthalates, and are cruelty-free. A storefront and full-time staff are some of Kussman’s long-term goals for Cayla Gray. The entrepreneur also has plans to launch a give back program, where a portion of sales will get donated to her customers’ charity of choice each quarter.

Dr. Stacie J. Stephenson always dreamed of becoming an Olympic figure skater. Hoping to realize this dream, she vigorously trained and competed from a young age until a skating injury forced her to permanently hang up her skates in her early 20s. During her recovery, Stephenson became disillusioned with conventional medicine and pharmaceuticals. So, she set out to pursue medical school, with the goal of doing better for future patients. “It wasn’t until my friends took me to see a lecture on functional medicine by Dr. Jeffrey Bland that I changed the course of my career,” she says. Today, Stephenson is a certified nutrition specialist, doctor of chiropractic medicine, a recognized physician, and a lecturer in functional and integrative medicine. Since moving to Arizona in 2013, she’s been the chair of functional medicine at Cancer Treatment Centers of America. “I call myself a lifestyle medicine doctor,” she says. “I have always championed a whole person approach to disease prevention and healing, with an emphasis on healthy lifestyle and natural medicine.” Hoping to spread her knowledge to prevent chronic disease through lifestyle changes beyond her patients, Stephenson launched a health and wellness media venture, VibrantDoc (www.vibrantdoc.com). She also released her first book, Vibrant, last month. From self-assessment tools to practical advice and meal plans with recipes, her book is a digestible program for readers who want to take control of their health and wellness. “Arizona is already a vibrant place, but I hope that [my book] can help to make it even more so,” she says. As well as influencing the Valley’s medical landscape, Stephenson and her husband are widely known for their philanthropic giving. They have supported several organizations and causes, including Celebrity Fight Night and the American Heart Association. Later this month, Stephenson will receive the prestigious Childhelp Woman of the World Award, which will put her in the company of past recipients Oprah Winfrey and Nancy Reagan.

As the market director of Market by Modern Nest, the retail store of local custom home company Modern Nest, Derek Ong is surrounded by design on a daily basis. His taste in home accents translates to his fashion sense and he favors minimal, sleek silhouettes. An Arizona native, Ong is a pro at dressing for his desert surroundings. At any point in the year, you’ll typically find him in jeans and a T-shirt paired with a great pair of shoes. “Yes, it is something simple, but it can easily be elevated depending on how you style it,” Ong says of his go-to look. Ong is an avid international traveler, and always carves out time to shop while on a trip. In fact, his two favorite brands – Comme des Garçons and Homme Plissé Issey Miyake – are rarely found in Arizona. “Traveling has influenced my style tremendously and I find myself more inspired by street style and how culture influences the trends,” he says. When it comes to color, Ong prefers a palette of neutrals and limits the amount of patterns. Ong’s finishing touch for any ensemble is a spritz of one of his favorite scents. “It’s something that is not seen, but it completes the look. My current favorite is Hwyl by Aesop,” he says. What is your No. 1 style tip? Confidence is my number one style tip. I never want my clothes to wear me. When you feel good and wear something with confidence, it radiates to the people you encounter. If you love something, do not allow others to determine what you wear. Embrace your personal style, that’s what makes everyone unique. What is your most prized possession in your closet? My Homme Plissé Issey Miyake jacket. I purchased it in Japan and every time I wear it, I remember that trip. What is your favorite store and why? My favorite store would be Now or Never here in Downtown Phoenix. Ivy Ciolli is always on the go. In addition to co-founding Grimaldi’s Pizzeria with her husband, Joey, she’s a busy mom of two and a philanthropist. As such, her wardrobe is casual chic to fit with whatever the day brings her. “My philanthropic meetings allow me to dress casually or throw on a cute dress,” says Ciolli, who has been fundraising for no kill shelters and rescues for cats and dogs in the Valley for almost 20 years. She has also been chairing and hosting fundraisers for Healing Hearts and Childhelp for the past eight years Ciolli is no stranger to fashion. In the past, she owned her own jewelry line and an organic, eco-friendly boutique. These days, the Scottsdale native’s go-to look includes Moussy jeans with a graphic T-shirt, a pair of Golden Goose sneakers and her favorite Celine sunglasses. She favors brands Zimmermann and Love Shack Fancy for their feminine styles and Stella McCartney for her commitment to cruelty-free, sustainable and organic fashion. “I don’t have style icons; I just follow the brands I like on my favorite shopping sites,” says Ciolli, who also turns to her friends for style inspiration.

What are your favorite colors, patterns, and trends? I love pale pinks, navy, black and white. I don’t do many patterns but love anything feminine and soft cotton materials. I stay away from trends and get timeless pieces. Have you decided on a dress for the upcoming Childhelp Drive the Dream Gala? I have not chosen a gown, as we are still navigating whether it will be an indoor or outdoor gala. If it is outdoor we will shift to cocktail attire. My dress will be the theme colors of midnight blue, gold, silver, and lavender. What is your most prized possession in your closet and why? Usually my latest purchase. My most recent was my Alaia heels. I love a great heel that makes a statement and completes my outfit.

Laura Spalding Best skillfully transforms the landscape of modern art through her work at SMoCA and beyond BY LYNETTE CARRINGTON

The lens through which people view contemporary art changes consistently. It takes a savvy artistic mind to navigate the art scene, and an intrepid personality to translate and present contemporary art in a thought-provoking way to an audience. Laura Spalding Best, an accomplished artist in her own right, is consistently transforming the art landscape at Scottsdale Museum of Contemporary Art (SMoCA) as its celebrated exhibitions manager. “Truthfully, I didn't even know a job like mine existed when I first stepped into the museum as a temporary preparator,” she says. “It was an awakening, and it felt like my calling right from the beginning.” Best began as an assistant preparator at SMoCA in 2006, and quickly graduated into her current position as exhibitions manager, where she has managed thousands of exhibits with the work of local, national and international artists. She empties and refills the museum three times per year, keeping the pace with contemporary art. Through this task, she measures and hangs artwork, installs audio and visual components, packs, ships, demolishes, cleans, and even does carpentry and fabrication as part of the art display life cycle. “In the past fifteen years I am tempted to say I have seen it all, but contemporary art is always unpredictable and surprising, and I've learned numerous unique skills along the way,” says Best, noting some of those varied skills include everything from growing algae farms and sustaining an indoor butterfly garden, to maintaining a pyramid of thousands of fresh oranges and building an architectural structure only to burn it down on purpose. As an artist herself, Best is able to understand the objectives of SMoCA artists, and work closely and effectively with them. “It's really important to have trust when someone else is carrying out the installation of your artwork, so my knowledge of the artist's work and their intent help me to convey their meaning through the logistical layout of the museum space,” she says. Best’s artistic pursuits began at age 10 when she began drawing, making still lifes around the house and sketching portraits of family and friends. Upon graduating from Arizona State University with a degree in painting in 2003, she immersed herself in the local art scene. Today, she paints interpreted scenery, inspired by the urban landscape, with oil on “found objects,” such as teacups and ironing boards. Her painting style ranges from straightforward interpretation to a swirled, dreamlike imagery. Best’s work will be on display at Phoenix Art Museum in June and she has plans for a solo exhibition at Walter Art Gallery in November. THE PANDEMIC TREND IS SHIFTING INTO PERSONAL CAR OWNERSHIP Industry professional Shahe Koulloukian, owner of Mazvo Auto Car Care Center, weighs in on the changing faces of public and private transportation.

THERE IS NO question that almost everyone has had to change their daily mobility habits during the pandemic. Although the amount of travel has been reduced significantly for many people during the crisis, those who require transportation in some way or another have found themselves using their own cars more frequently as opposed to opting for public transportation. This is especially the case when children or older parents are involved who require doctor visits, or rides to and from child care centers or school. In light of Covid19, personal transportation just seems less risky. Prior to the pandemic, the auto industry was bracing itself for an anticipated slowdown of personal car ownership with the success of ride share companies and public light rail transit convenience. But Shahe Koulloukian, owner of Mazvo Auto Car Care Center, tells us that the trend has shifted. “Right now, all of the data I see is really indicating in the opposite direction, where cars are more relied upon,” he says. It makes sense; recent research shows that more than 40% of people planning to buy cars are looking to avoid ride sharing, and almost 50% of them say they want to decrease or stop public transit use. And as a longtime professional, Shahe is more than familiar with

the ups and downs of his field: “Having been in the auto industry for almost 40 years, I have witnessed previous trends come and go — like in 2008, when people started buying small, fuel-efficient cars. That only lasted a short time, and then people went back to buying a vehicle that suited their wants, not necessarily their needs.” With so much mobile technology that is integrated with modern vehicles’ onboard use, it has become an important part of the solution to car consumers’ desires and requirements. Vehicles that bring their owners safely and efficiently to their destination seem to bring the peace of mind and intelligent solution they are looking for. And because these attractive technological features combined with the safety considerations of the pandemic are leading to greater personal mobility, they’re also contributing to a further increase in traffic density — a potential change that Shahe says we all should be aware of. “Thinking strictly about our beautiful state of Arizona and its rapid growth, we as Arizonians need to be open to a shift back in the near future,” he advises. “With so much growth in Phoenix and its surrounding cities, traffic will accelerate, and we do not have enough open and connecting highways to handle daily traffic jams.” Thus, he says, our

communities could possibly see the trend revert back to public transit, as it will look more convenient once parking and traffic become tough; then the shine might once again fade away from private car ownership. Let’s be clear — there were benefits of owning a car before the coronavirus changed our lives, and there are certainly benefits now. Each day, we work to navigate life amid the pandemic. As we see the uncertainty of changes that include mask-wearing and social distancing, and the back and forth of closures and ever-evolving mandates, it’s very understandable to see fewer people rely on public transportation and ride sharing and prefer the safety and comfort of their own vehicles. One major thing the pandemic has brought to light is the importance of car ownership, and now more than ever it’s important to ensure that your vehicle is reliably maintained. As for Shahe, nothing about his mission has changed. Industry trends will come and go, especially when there’s a pandemic throwing a proverbial wrench in the way we do things. Cooper’s Hawk Winery & Restaurant opens its first Western location at Scottsdale Promenade

If a snowbird or Midwest native, the name Cooper’s Hawk likely needs no introduction. That’s because when the original Cooper’s Hawk opened in a Chicago suburb in 2005, it was the first venue in Illinois to have both a winery and restaurant under the same roof. Its success quickly led to locations throughout the Midwest – including Michigan, Indiana, Missouri, Wisconsin, and Ohio – as well as expansion to the Northeast and Southeast. Today, Cooper’s Hawk produces more than 700,000 cases of wine each year. Its winemakers source grapes from across California and the Pacific Northwest and then blend and age each wine in Illinois for use at its locations to fulfill its wine club orders. According to the ownership team, in recent years, Arizona residents – perhaps due to the high number of Midwest transplants – started to make up more and more of the brand’s wine club membership. So much so, it only made sense to bring the full concept to the Valley. Open since late 2020 at Scottsdale Promenade, Cooper’s Hawk marks the brand’s first expansion into the Western

Among the most popular branded wine offerings are the Cooper’s Hawk Lux Chardonnay, which is full-bodied with notes of lemon, nuts and butterscotch; Cooper’s Hawk Lux Pinot Noir, which is bursting with ripe red fruit, vanilla and spices; and Cooper’s Hawk Lux Meritage, a full-bodied varietal with aromas of mixed berries and cassis and dark chocolate on the palate. 2021 LAND ROVER DEFENDER 110 The iconic off-roader is built for adventure BY JIM PRUETER

With large SUVs back in vogue, Land Rover recently brought the Defender – one of the world’s most iconic nameplates — back to the U.S. market after a 22-year hiatus. Introduced in 1948 as the Land Rover Series 1, the model was a simple, off-road capable, four-wheel drive vehicle. But it quickly became dated and, unable to keep up with changing tastes as well as safety standards, was discontinued for the U.S. market in 1998. For 2021, there are two versions — the four-door 110 (tested here) and the two-door 90 — and a choice of two engines: a turbocharged 296-horsepower 2.0-liter inline four cylinder, or a 3.0-liter turbocharged inline 395-horsepower six cylinder with mild hybrid assistance. Both pair with an eight-speed automatic transmission and have an impressive 8,200-pound towing capacity. When driving paved roads, it’s evident that the Defender is reminiscent of the Land Rover brand – smooth, quiet, and comfortable. Expect whatever doubts you may have about

the Defender’s off-road chops to be quickly dispelled, thanks in partial to the Terrain Response System which has settings like sand, rock crawl, and wade. Some Defender models also include an intelligent auto mode that picks the transmission, suspension, and traction settings. It has a reported maximum climbing angle of 45 degrees. Aesthetically speaking, the Defender has a retro yet modern exterior, with design elements that nod to past Land Rovers, like safari windows and an anachronistic rear swing tailgate. Inside, you’ll find outdoorsy durability: molded rubber mats, leather seats trimmed with strong canvas-denim like fabric, and exposed rivets. There are plenty of nooks and rubber-lined trays for items like headphones and GoPros. Overall, the Defender feels far more special than other SUVs, built to take on the wilds. There is a cost, given it carries the Land Rover badge, but considering its incredible standard equipment and go anywhere, do anything capability, it’s a reasonable price.

CANCER WON’T WAIT FOR COVID-19, THAT’S WHY GETTING YOUR REGULAR SCREENINGS NOW IS VITAL

I

t’s now officially been a year since the start of the COVID-19 pandemic which halted everything, including cancer screenings. According to an analysis by the Epic Health Research Network preventative cancer screenings dropped substantially nationwide in 2020. More specifically, cervical cancer screenings declined by 94 percent and colorectal cancer screenings were down 86 percent compared with the same time period in previous years. The data continues to reflect a persistent decline in cancer screenings, which may result in hundreds of thousands of missed screenings – or worse yet – finding late or advanced stage cancers because of a delayed screening. This is why it is imperative to resume routine screenings now. When to be screened for some cancers may depend on your risk. Below are recommendations from the American Cancer Society (ACS), the U.S. Preventive Services Task Force (USPSTF), and the American College of Obstetricians and Gynecologists (ACOG). BREAST CANCER: high risk individuals include those with a family history of breast/ ovarian cancer with two or more close relatives on the same side (especially when diagnosed before 50), inherited genetic mutations (BRCA1, BRCA2, CDH1, PALB2, PTEN or Tp53), or a breast biopsy showing atypical cells, lobular carcinoma in situ or atypical lobular hyperplasia. Women with dense breasts, family history in distant relatives, diagnosed in their fifties are considered at moderate risk. Most women in good health and no family history are considered to be at average risk.

Recommendations: USPSTF: women 40-49 make individual decision; mammograms every other year for women 50-74; and annual mammograms at 40 for high risk women. ACS recommends yearly mammograms for women 45-54; every other year for women 55+; and MRI and yearly mammogram for high risk women. ACOG: yearly mammograms for average risk women 40-75; women with BRCA1/BRCA 2 mutation, or one or more family members with the mutation: twice yearly clinical breast exams, annual mammograms, MRIs and regular breast self-exams. COLORECTAL CANCER: risk factors include patients 45+, obesity, type II diabetes, sedentary lifestyles, tobacco use, moderate to heavy alcohol use, personal history of colorectal polyps, family history of colorectal cancer, African American or Ashkenazi Jewish heritage, history of inflammatory bowel disease (IBD), colitis or Crohn’s disease, and Lynch syndrome or other inherited gene mutations. Recommendations: ACS: screening colonoscopies at 45 and every 10 years after if no polyps are found. Those with a family history: 10 years before the youngest case in the immediate family, and every five years after. Lynch syndrome patients: between 20—25, or 10 years before the youngest case in the immediate family, followed by every 1—2 years. IBD, ulcerative colitis or Crohn’s disease patients: every 1—2 years. CERVICAL CANCER: risk factors include smoking, multiple sexual partners, three+ childbirths, five+ years of birth control pills, HPV, HIV or another condition that compromises the immune system. Recommendations: USPSTF: women

21—65: Pap smears every three years, or women 30—65: a combination of a Pap smear and HPV testing every five years. LUNG CANCER: high risk: 30+ packyear smokers age 50—80; 30+ pack-year smokers who quit fewer than 15 years ago, age 50—80; or 20 pack-year smokers, age 50+ with additional risk factors (e.g. radon exposure, prior radiation treatment (particularly head and neck cancer/lymphoma). Moderate risk: 20 pack-year smoker age 50+. Low risk: those younger than 50 who smoked fewer than 20 pack years. Recommendations: USPSTF: low-dose CT scans for current smokers 55—80 with a 30 pack-year smoking history and former smokers who quit within the past 15 years. PROSTATE CANCER: risk factors include African Americans, advanced age, highfat diet, sedentary lifestyle, immediate blood relative with prostate cancer, exposed to Agent Orange, and BRCA1 or BRCA2 mutation. Recommendation: ACS: discuss risks and benefits of prostate specific antigen (PSA) blood tests and/or a digital rectal exam (DRE) at age 50 for average risk men. All eyes are on Oregon this spring. On April 1, Bravo’s Top Chef debuted its 18th season which is focused in the Beaver State and was primarily filmed in its biggest city: Portland. Named among the best culinary cities in America – both for affordable eats, thanks to thousands of food trucks, as well as more elevated epicurean exploration by internationally lauded chefs – Portland should be on any food lover’s travel to-do list.

Chow Down So, what should be atop the gastronomic bucket list when one arrives? That’s easy. Start with 13-time James Beard Awardnominated (and two-time winning) chef Gabriel Rucker and both his fine dining institution, Le Pigeon, and its sister concept, Canard. Often called a master of “haute comfort cuisine,” Rucker’s ability to marry a five-star dining experience one would expect in New York City with a more laid-back vibe and rustic ingredients of the Pacific Northwest (such as at Le Pigeon), as well as his love of inventing new ways to serve foie gras, has earned him culinary legend status in the region (and likely beyond). are mobile and always in a different locale. There are four pods in downtown Portland alone, including one right at the courthouse square.

Embracing Nature Beyond making delicious discoveries around every turn in Portland, the city will also find a special place in nature lovers’ hearts. Nicknamed the “City of Roses,” Portland is home to the International Rose Test Garden, the oldest official continuously operated public rose test garden in the United States. There are well over 10,000 roses on property as well as stunning views of Mt. Hood in the distance. Both the Portland Japanese Garden and Lan Su Chinese Garden are also well worth the visit. The Japanese garden features 5.5 acres of tranquil streams and an authentic tea house, while the Chinese garden was built by Suzhou artisans as an homage to their treasured Ming dynasty style gardens and takes up an entire city block in historic Chinatown with its human-made lake, mediation areas, bridges and rich landscaping. And then there are the waterfalls. Located just outside of Portland, the Columbia River Gorge boasts the highest concentration of waterfalls in North America. There are 90 in total, and at 620 feet, Multnomah Falls is the largest. Among the best ways to explore as many as possible in one day is via a guided bike tour, some of which leave directly from downtown Portland, including Pedal Bike Tours, which also boasts an energetic Portland bike tour and a local brewery bike tour worth checking out. Or, if seeking a less exercise-intensive way to explore, hop on the Portland Aerial Tram, which travels 3,300 linear feet at 22 miles per hour and offers sky-high views of the entire city and surrounding waterways. There are also some excellent afternoon and sunset cruises offered along Portland’s Willamette River, notably the Portland Spirit, which offers picturesque views of the city skyline as well as impressive dinner and bar service. In the Salt River Pima-Maricopa Indian Community’s O’odham language, Tash – pronounced th-o-sh – translates to “sun” or “day.” Talking Stick Resort chose this name for its newest eatery in homage to the tribal community and to best describe the venue, boasting floor-to-ceiling windows and an expansive patio, both providing stunning views of the sun setting against Camelback Mountain. Among its signature dishes is the Paella Mixta ($29). Bomba rice, imported directly from Spain, and saffron are simmered with chicken stock, garlic, piquillo peppers, onion, Campari tomatoes and spices. Butter, shrimp, littleneck clams, chicken and Spanish chorizo sausage are then added, and the mixture gets simmered once more. The paella is garnished with olive oil, sliced lemons and parsley, and the pan is presented tableside. MORNING MAGIC Snooze’s Abri-ca-lav-ra Mimosa showcases fresh flavors

Since 2015, Snooze, an A.M. Eatery has been waking up residents across the Valley with its modern take on brunch. “Our CEO also often says that while we didn’t invent day drinking, through our cocktail menu we think we’ve perfected it,” says Becky Fairchild, senior brand manager of Snooze. From coffee-infused cocktails to bold takes on bloody marys, the bright and welcoming eatery’s drink menu is anything but a snooze, especially when it comes to the mimosas. Among its most popular takes on the sparkling sipper is the Abri-ca-lav-ra Mimosa ($10.50). “To make, we start with Giffard Abricot Du Roussillon Liqueur, which is delightfully aromatic and delicately sweet,” Fairchild says. To open up the bouquet and add a bit more sweetness, both honey and lavender-infused simple syrup are added to liqueur. “Lavender is also naturally relaxing, something we all need these days,” Fairchild says. After a quick shake with ice, the ingredients are poured into a coupe glass that’s been rimmed with sugar. Then, the cocktail gets a healthy pour of Snooze Sparkling. “This is our proprietary prosecco, which we keep in kegs so we can avoid wasting up to 100,000 bottles each year between all of our locations nationwide,” Fairchild says. “Created by our founder Jon Schlegel and made for our restaurants, it is a blend of chardonnay, arneis and cortese grapes, and every sip bursts with apricot, lime and ripe apple notes.” Garnished with a fresh lavender sprig, this bubbly, aromatic and slightly sweet treat awakens all the senses no matter what time of day. As the chef de cuisine of Ember at We-Ko-Pa Casino Resort, Richard Pelz creates dishes featuring USDA prime and Angus wagyu beef, game and seafood from around the world.

What attracted you to cooking? I grew up around food and wine. My mother was a Francophile, so foie gras, caviar and the like were common at home, and my stepfather dabbled in making wines in the mountains of Santa Cruz. Then, after dropping out of college in 1990 to explore the world, I spent downtime in their home as an adult, often cooking for my dates. One day my mother said I should just cook for a living. I listened. Sort of. Sort of? I was accepted into The Culinary Institute of America (CIA) in Hyde Park to study hospitality management, focusing on the front of the house. It wasn’t until I saw professional kitchens firsthand that I realized it was my true home. So, I put on a chef’s apron there and didn’t look back. Tell us about your journey to Arizona. I graduated CIA in 1997 and have been lucky enough to work at restaurants around the world, including Restaurante Martin Berasategui in Spain, Citrine in Hollywood, Alinea in Chicago and both Bottega and Redd in Napa Valley. I also owned Goblin Market in New York City. How did you make your way to Ember? Pre-pandemic, I was consulting in Rancho Mirage and a friend asked me to be part of an Arizona concept he was planning. After COVID19 thwarted the restaurant, I met with leadership at We-Ko-Pa Casino Resort. When I heard what they envisioned for Ember, I knew I wanted to be part of it. What are the “must” items on the menu? I’d have to start with one of our filets or 16-ounce rib-eye steak. We get all our USDA prime and American wagyu meats from Meats by Linz out of Chicago and prepare them on a mesquite wood grill. Our Ujih Hot Stone appetizer is a big conversation piece and sells really well. And our Ember Flaming Liquid Chocolate Truffle dessert also has that “wow” factor. What would readers be surprised to know about you? I am a triathlete and have completed six Ironman races. I also eat almost 100% plant-based.
