Star Spangled Salad
Makes 4 SALAD 1 head green leaf lettuce ½ English cucumber, cut into star shapes ¾ cup blueberries ¾ cup sliced strawberries cup toasted pecans ½ cup feta cheese, cubed POPPY SEED DRESSING: 1 tsp dijon mustard 1 tbsp honey ¼ cup apple cider vinegar 1 tbsp 0% plain Greek yogurt 2 tsp poppy seeds 3 tbsp olive oil
Wash and pat dry lettuce then tear into bite-sized pieces and place in large salad bowl. Add fresh blueberries, strawberries, toasted pecans and feta cheese. Toss ingredients together and top with cucumber stars. For the poppy seed dressing, combine all ingredients in a bowl and whisk until thickened and smooth.
